The fashion icon is celebrating 50 years in fashion and 100 collections this year, and to celebrate I had a chat with our national treasure. Eloquent, wise and unflappable, Carla exceeds any preconceived ideas you may have of her. It was an honour to have this woman’s ear for half an hour and she is a true inspiration to anyone starting out in business or chasing down a dream. behind the scenes The Flowers The beautiful women at Flowers at the Farm put together a bouquet of wildflowers. The bouquet bought everything back down to Earth, as it juxtaposed the high-fashion gowns in the most surprisingly natural way possible. The Team Photo shoots are always interesting, a coming together of creatives to give the most aesthetically pleasing impact possible. Connie was alive and at home on location in her home town. She shot freely, screaming as the sun shone perfectly on Brooke and Aaron. Michael created elegant, earthy makeup looks that made the gowns look at home at The Farm. Together, the whole team created something beyond what we had expected. Special thanks to Que Models. s a vicious storm overtook the North Coast of New South Wales over the weekend, we had reason for concern about our impending Byron Bay photo shoot scheduled for Monday. However, we awoke to nature answering our cries. The sun rose into a blue sky as we prepared our models for a photo shoot involving wedding dresses, but not your average bridal shoot. The Location The Farm Byron Bay was the perfect location for our shoot. While only a few weeks old, locals have flocked to The Farm Byron Bay and made it their regular. The grass was luscious and green and the layout provided for many and varying shots. Beautiful trees, rustic buildings and a homely feel gave the shoot everything it needed.

The Rolls-Royce Wraith provided the perfect wedding car for our bride and groom.

Thank you to The Lake Cafe for providing a delicious lunch for our team.

Musical Director of The Arts Centre Gold Coast’s 2015 production of Miss Saigon How long have you been working in musical theatre? I’ve been working in the industry for 23 years; I guess I’ve always been interested in it. It wasn’t the first thing I did. I sort of fell into it the same way that so many people tend to fall into particular areas of work. What drew you to musical theatre? I’ve always loved theatre and I’m a musician by training. My formal qualifications are in music and I studied music in Sydney a long time ago. I always loved the other disciplines as well. Not only musicians, but also working with singers, actors, dancers, choreographers and directors. Theatre is an area that pulls all of those disciplines in together and you can all work together. What’s the most rewarding part of working in musical theatre? I think the whole process is rewarding. Yes, the performances at the end are wonderful and getting the reaction from the audience and seeing it all come together is great. But I think that even from the very beginning, from auditioning to cast a show and through the rehearsal period it’s always lovely watching people grow and develop as performers and take notes on board. What was your favourite production that you’ve worked on? When we first did The Boy From Oz back in 1998 and 1999 I think that was one of the most exciting and rewarding shows that I’ve ever worked on because it was all homegrown, it wasn’t something we were importing from overseas. We were all part of something that was fresh and very unique and exciting. What advice would you give to people who are coming up in this industry? I think certainly in my industry, in musical theatre, it’s really important to make sure that you’ve got all of your bases covered. Do some good, solid study, if not formal training. I think it’s always those people who come to auditions that are better prepared in terms of that solid training that make their way into working in the commercial world. Other than someone who might think that because they’ve got a good voice that they stand a chance at getting into something. I think there’s no substitution for good, solid formal training. It doesn’t necessarily need to be a course or a full undergraduate degree in musical theatre it could be a dance school or a music theatre school or just having singing or acting or dancing lessons. I think it’s really important to have that real sort of formal base to start with. What should we expect from Miss Saigon? Something very exciting I think. Something that’s local and specific to the area. It’s not very often that you get to do something that’s particular to a certain area. We’ve really gathered the best talent from both the Gold Coast and Brisbane to put together this production. It’s not like we’ve been able to look further afield than

that, but it makes it very exciting to keep it local. Just because the Gold Coast is known for beaches and as a holiday destination doesn’t mean that it’s lacking in those other areas as well. I think we’ve seen evidence of that already. Last year we did a production of Jesus Christ Superstar and the same thing happened. We discovered some really fantastic talent in that area and it was lovely to be able to work with it and mould it into something that was part of a world that they weren’t as familiar with as we are, because we’re working in it all the time. I really enjoy the process and I think it’s terrific to be able to really nurture new talent. Especially when there are people who perhaps haven’t had the same opportunities as the rest of the country. I’m really looking forward to it. I loved painting and drawing ever since I was five-years-old. I didn’t realise I could truly make it a career path until I was 19 when I started illustrating for magazines and fashion brands working as a graphic designer in London. I realised drawing and painting was truly my passion and I gave myself a year to see if I could make it a career. It has been 17 years now.

I didn’t know anyone at the time who did illustrations for a living. I felt like it was a bit of a crazy move and I just hoped there was a market for illustrations. When I was 19 the internet had just started to be really big and illustrators were able to work for clients in other countries. When I first started in London I would literally take my work to companies and I could only work with companies in London. Suddenly you could do the paintings and email them to the other side of the world to clients in France and Australia. At that point the world of fashion illustration really opened up. I have lived in many places abroad, but it was Paris that stole my heart. Paris has always featured in my work. I have always had an obsession with Paris and it is now very much part of the illustrations that I create in terms of themes and outfits. A lot of my work has a Parisian feel and I have trouble shaking that off when I need to be illustrating something that is not about Paris. Paris has so many beautiful curvy lines and curvy shapes in the architecture and the fashion is very classic and timeless. Picking a favourite job is like picking a favourite child. I had always dreamt of working with Chanel and I honestly almost fell off my chair when they contacted me for a global job relatively early in my career. Another highlight was working with the biggest and most beautiful department store in Paris to do 13-metre billboards all over Paris. I had visited Paris when I was a little girl and I was so spellbound. The city just seemed so magical and to think that I would be illustrating billboards for my favourite department store when I lived there was surreal. 30 GOLD COAST • BRISBANE & BEYOND Magazine

My latest collaboration came about when I was at an event in Melbourne for Ballettonet, a company who import beautiful Italian ballet flats from Milan. They had the idea of creating a capsule collection of ballet flats that I would design, made by an amazing group of artisans they worked with in a little town in Italy called Civitanova Marche, where the first pair of ballet flats originated from. I am a working mother and every day I am in meetings, doing school pick-ups, painting; my life is one continuous circle of craziness. I love flats and I live in flats. Events are great to wear heels to, but most of the time I am wearing flats. I wanted to create a range of the ultimate ballet flats and I really thought about Audrey Hepburn in Funny Face and being inspired by a mix of Paris, Audrey Hepburn and the label signature, the French Bulldog. It has taken two years to create the eight designs and I am amazed at the process that goes into creating and designing shoes. We have revised the samples many, many times as I am fastidious about flat shoes being insanely comfortable. There are only 200 of each eight styles produced and each pair is stamped with a little number. We wanted to make the shoes as special as possible and I guess they are collectable in that way. I feel like I am home now. I have been back from Paris and living in Brisbane with my son for almost two years now. We have been travelling a lot for the past 15 years, so it was really time for me to come back and live in Brisbane as my son was of age to go to school and I wanted more of a settled life for him. I am thrilled to have my work in London and Paris and New York and still be able to do it from this beautiful part of the world. See the capsule collection at ballettonet.co/kerriehess

Sam Webb I was with Dwayne on the night he took his life. We were at a party. I was actually meant to go on a double date with him and his girlfriend at the time and her best friend, but we ended up cancelling. The girls picked me up and we had a party with the guys at his place. There was nothing out of the ordinary. He completely opened up to me that night. He told me about trying to take his life prior to that night and he assured me that he was in a much better place now. I knew Dwayne suffered from bipolar, but I didn’t know the extent. I wasn’t educated on how serious it actually was because he used to hide it so well and not many people knew. He didn’t like letting anyone down, and I could relate. I don’t like letting people down myself. I thought I said everything I could’ve said. I said I’m here for you and you have so much support around you. All of your mates would pick up your phone calls or pick you up at any time of the morning no matter where you are. I said I’m always here and I assured him of that. He said, “No, no, no, I would never do it”. He was found hanging the next morning. We went to the hospital that night, Casey and I. We looked at each other and seeing the hurt and everyone’s pain, especially his family and close friends, we had to do something. It was such a shocking thing and we sort of looked at each other and said, “Are we going to do anything about this?” We met up with Dwayne’s parents the following week. We were trying to think of what we should do and the first thing that came to our minds was something with fashion, something that would raise awareness and stop this from happening to anyone else. We made shirts and here we are not even two years on and it’s growing exponentially. Dwayne used to always say, “We’re livin’ man, we’re livin’ ”. That’s where the name Livin came from. Dwayne and I used to say we’re 32 GOLD COAST • BRISBANE & BEYOND Magazine

going to the top. The top is a place where we would go to muck around, it was our own personal joke. We would have a good time and say, “We’re going to the top, we’re going to have a good time, let’s go mad,” that’s where the arrow in Livin came from. Without Casey we certainly wouldn’t be in the position we are in now. It’s very important to have Casey with me on the journey, because we both share our own stories and we both have our own angles and way we attack certain projects. It’s always good having someone else’s input. Casey and Dwayne were like a rock, like family. Casey and I are a good partnership, we go hand-in-hand. What inspires me is making changes. Making positive changes, even if it’s moving forward with very small steps. If I can make small changes and positive changes in other people’s lives and they’re better off it makes me better off. My goal is to save people’s lives. But if we can save one person from taking their life and change the thought processes of one person, it’s a success in my eyes. Listening is the most powerful thing. I think the biggest thing I could take out of losing Dwayne is listening. I think if I could give any advice to people who have lost someone to suicide, would be that you can’t blame anyone else, or yourself. There were times when I was blaming myself, thinking I should’ve said this or what was I thinking. Anyone else going through this, try and keep positive, ask questions and listen. If I could say one thing, one thing to thousands of people in a room who are struggling, I would say the way that you’re feeling isn’t permanent. There are so many people in the world that are going through the same things and emotions that you guys are going through and it’s not permanent, and don’t make decisions based on how you’re feeling right now. Whatever the preface, Italian-born Australian fashion designer Carla Zampatti is adored and highly praised by anyone remotely interested in fashion. Her style is iconic. Her impression on the Australian fashion industry is memorable. Today, with 50-years in the industry and 100 collections behind her, Carla Zampatti has endured the test of time in a fickle industry that sees many brands floundering to stay relevant. Aimee Ley spoke with the First Lady of Australian fashion about passion and pre-show nerves.

o many of us fashion is a necessity. To others fashion is a way of life. For Carla Zampatti, it is her lifelong passion and the instigator for her most remarkable journey spanning a career of 50 years. From the impressionable age of five years old Carla was charmed by the world of fashion design. She spent hours in her mother’s attic creating intricate outfits for her dolls and anticipated accompanying her mother to the dressmaker, the most enchanting place, where she marvelled at the dummies, the draping, the colours and etching. Even at this formative young age, Carla was most certain of the career she would pursue. When Carla was just nine years old her family travelled 16,000 kilometres by sea to their new home in Australia. It was the 1950s and fashion in suburban Australia was signposted by the practicality of cotton with little ‘differentiation or individuality’. Accustommed to the beauty of Italian fashion with subtle colours and fine cuts, Carla could see a need here in Australia and she just knew she had something special to offer the women of her new home country. Fast forward to 1965 and Carla’s career as a designer had officially begun. She left her steady job at a wholesale fashion house in Pitt Street, Sydney after she was refused a pay rise, and released her first small collection, which then progressed to a national launch just two years later. In the beginning the label consisted of just one employee, Carla, and therefore she worked incredibly hard to build the company on her own. Starting out, Carla’s aspirations for her label were simple. She wanted growth. And with every order she received she was anxious for the next. “I did everything,” she explains. “I made samples, I went to the shops and sold the product, showed them my sample range, took orders, rushed home, ordered fabric, took it to the makers, they would make it and I would go and pick it up and take it to the shops. Then a few weeks later I would go and collect the money because I knew I wouldn’t be able to continue unless they paid me,” she laughs endearingly. “It was incredibly exhausting.” As Carla speaks of the label’s formative years, the elements of her personality that have driven her label to success become evident. Practical with bucketloads of determination, and a strong will, it was inevitable this design whiz was going to make a success out of whatever she put her mind too. For Carla, the early days of her career acted as a learning ground for the many lessons she would endure throughout her career. But her label wasn’t the only thing Carla started in the 1960s. Her firstborn’s arrival coincided with the commencement of the brand, adding yet another element to Carla’s already busy life. Seven years later, her two daughters Allegra, now Managing Director of Carla Zampatti, and Bianca, a fashion designer, arrived. With a growing business and a young family, Carla admits she survived by “compromising on all things by not doing my home life justice and just working extremely hard.” “I was a sole parent with my son and I had no other option because I didn’t have money. I had to earn and I had to have a career and work. It wasn’t even a question will I have a career or stay home,” she says. “I probably could have wound up my business and looked after my two girls, but I knew that if I did that I wouldn’t be happy. By that time, seven years after my son was born, I had some wonderful people working in my business and I didn’t feel I could just wind up because they had helped me along the way and I felt there was an obligation to keep going.” And we can be grateful she didn’t. Australia’s most loved and celebrated designer knew she would never be happy as a housewife. “It was very important for me to have a career. I think once you have started having a career, it is very difficult to give up. The

passion and creativity, I would have really missed it.” Even speaking today, after five decades in her career of choice, it is the passion Carla speaks about that seems to be the sticky glue that holds everything together for her. After 100 collections she still loves designing, soaks up every minute of the process and even get’s a bout of nerves before her latest collection is released. It’s this humble side of Carla Zampatti that makes her possibly even more endearing. “The important thing to remember in fashion is that you have never really arrived,” she says, her words pronounced in her eloquent Italian accent. “You are just on the journey. “Every collection has to be better than the last one. If it’s not good you may be forgiven one collection, but the next one needs to be very, very good otherwise you are out of business. There is too much competition, which i think it good.

For Carla, the early days of her career acted as a learning ground for the many lessons she would endure throughout her career. “You must work hard and create new, different things because women who have bought your collection this year, they are not going to want to buy the same thing again if there is nothing new and exciting.” The pressure to create is ever-present for Carla and her team as the fashion world waits with bated breath for her next collection. Carla admits there is always the pressure to produce with the prospect of being badly criticised. “You must come up with something new and exciting, because if people start to find you boring that is the beginning of the end. “I look at fabric, colours and look at what is happening in fashion and absorb that,” says Carla of the process. “I make up my mind, what colours and fabrics I am going to go with, then I sit down with my team and get their feedback. Then we develop the designs we are excited about and I push for the ones they don’t understand, but I know they are going to really work. It is a process, but if you enjoy it it is not painful.” Carla has just launched a very special collection marking her 50th year at the Sydney Opera House, the very place she launched her very first show in 1966. A celebrity-studded guest list packed out the foyer of the Opera House to celebrate Australia’s most enduring fashion designer. Carla describes the atmosphere as ‘delightful’ as an orchestra played and Autumn sunshine streamed on to the runway while guests enjoyed uninterrupted views of Sydney Harbour through the floor-to-ceiling glass windows. This wasn’t just any collection, it was the queen bee of fashion’s celebration of her 50th year. So did she feel a tad nervous before the launch. “Totally,” Carla says, before I even finish my sentence. “I mean, not immediately before, or even the day before, but leading up there was a three-month nervousness. It was a big undertaking and the thing about having a good reputation, you don’t want to mess

She had done it yet again. To mark her five decades in fashion, Carla is undertaking the nostalgic process of compiling a coffee-table book to commemorate her achievement. The review process has undoubtably aroused a hefty dose of reflection and nostalgia for the designer as she looks back on her career.

“It has enabled me to look back at old photographs and to realise my handwriting was very clearly established in that very first collection at the Opera House. It was really quite interesting looking at those shots, it really had a very contemporary feel,” explains Carla. “Understated, good lines that fashion style very clearly defined. They call it your handwriting.” It’s a handwriting recognised the world over defined by a distinct shape, sharp lines and the wonderful world of textiles. Winter season trends in hair still showing a lot of the natural colours coming through; warm light browns, caramels, golden sandy tones and creamy blondes all put together. Long full overgrown tapered fringes on soft naturally styled hair. Soft textured looks for cuts short or long veering away from harsh lines and keeping movement in the hair.

This season’s styling trends involve stepping away from the notion that hair has to be structurally perfect! The 90’s has been a key influence across international catwalks and redcarpets alike, with fashion forward celebrities leading the way with some flawless finished looks.

The look is getting retro, but with a softer touch! Be brave and go for the pageboy. Look to Dannii Minogue for your inspiration. The haircut is one complete perimeter, with no disconnection between the fringe and the sides. It’s a bold look that looks great with solid colour..

Carefree grungy textures and rough middle parts are taking centre stage, with Hollywood A-listers such as Kirsten Stewart and Scarlett Johansson showcasing their edgy new take on the pixie cut. Perfecting the graduation in hair length is key to a achieving the perfect end result when it comes to this rock-inspired style.

If you have a round or square jawline, a feathered fringe area will look best, and if your face is heart-shaped, make sure the length is at least one inch below your chin, to provide balance. Long bobs and chunky layers are big. Don’t be afraid to cut those lengths off! Stronger cuts look better with Winter fashion.

Blunt crops are also very on trend this winter. This look is all about taking the innocent bob cut and injecting some serious attitude, incorporating effortless tousled waves into the styling. My advice is to consult closely with your stylist regarding the right length to ensure the cut frames your face perfectly.

Balyage or ‘ombre’ is taking a backseat, with solid colours and lowlights in darker hair making a comeback. If you hair is a medium brown, and you’re bored, try some black lowlights. It’s an amazing result and adds loads of interest and movement to your hair.

Soft volumous waves or a big bouncy blowave for an evening style always looks fabulous. This type of hair put up loosely to create a romantic up-style is still gracing the red carpets. Braids are back in a relaxed fashion, everything loose soft and textured. Curling the hair with a light spray of soft hold hair spray before adding a loose braid is a great way to create texture within the style. Facing forward A weekend spent in Sydney demonstrating a range of new injectable fillers reminded Dr Terrence Scamp of just how far we have come with non-surgical facial rejuvenation.

I

n the ‘80s there was only collagen. It was made from cowhide and as such a significant percentage of people got an allergic reaction to it and couldn’t use it again. But most of all it had very little effect on volume and was mostly useful for just filling in lines. Even for those in whom it was successful the duration of effect was measured in the terms of two or three months. The advent of hyaluronic acid (HA) fillers in the late ‘90s really revolutionised this field. Allergic reactions became extraordinarily rare and the duration of improvement extended as far as 18 months or even more in some cases. Since that time further refinement of these injectables has greatly enhanced the results obtained. The newer products are designed to integrate with the tissues and become almost imperceptible to touch. By doing this these injectables move with the tissues and become far less detectable. Softer, more natural results are the outcome. This has allowed this field to extend from simply filling in lines in the ‘80s to now recontouring the face to bring it into better balance. A small chin can be enhanced and projected. Deflated cheeks can be gently restored and hollow areas around the eyes or temples, cheeks or below the cheeks can be smoothed into a more harmonious shape. A further advance has been reduction in the amount of swelling these products cause. By using a micro-cannula several areas can be treated from the same tiny, single, puncture wound. The tissues are less traumatised and there is less swelling and less likelihood of a bruise. The aim is to allow people to instantly return to normal activity. In many ways the new fillers are attempting to imitate the effects of fat grafting. Fat grafting has been around for more than 100 years, but it was unreliable, complicated and not widely embraced until the mid ‘90s when a New York Plastic Surgeon, Dr Sydney Colman published his techniques, which allowed more predictable and artistic results. Fat grafts have been used everywhere from the face to the lower legs, but it is particularly in facial rejuvenation that they can enhance the effects of procedures such as brow lifts and face lifts. We don’t just age by sag alone. A young face is a “big“ face with full cheeks, plump lips and a soft, rounded aspect to the face. As we age we see descent of the brow, jowl and neck, but in addition there is also deflation of key areas of the face such as the cheeks

jawline and lips. At the same time as the lifting operations, fat can be harvested from the abdomen and used to restore the contour to these key facial zones. Naturally enough in our sun-drenched corner of the world the effect of having a nicely lifted and recontoured face is deflated somewhat by having it wrapped in tired, old skin. Scientific advances in modern skincare have allowed remarkable results with the application of daily skincare regimens. These include antioxidants, skin faders and growth factors. Naturally enough sun filters still hold pride of place in the armamentarium because the Caucasian skin was never designed for this subtropical environment.

They don’t get the multiple lines and red marks that we see in fairer skins, but they show their age by accumulation of pigmentation, which gives a dull, flat effect to the skin. Use of appropriate skincare regimes and carefully selected delicate laser procedures can help to tone down this pigmentation and restore that attractive sheen to the skin. While a face lift can jump you back quite a few years, the availability of non-surgical procedures allows us to harmonise and enhance the rejuvenation obtained. Michael Huxley, Director, Huxley School of Makeup Michael was the hair and makeup artist for this issue’s Big Love fashion shoot (see page 60). Tell us about the look you created on our model Brooke. We are going for more of a bridal look, but something that is a little less polished and a little more sexy. What did you do to create this look? We used a combination of pencils and shadows to create a smoky-eye look. We also brushed up the brows, which is very on trend at the moment, and highlighted the cheekbones with some blush. We also did lots of contouring using eyeshadows. Tell us about the colour you used on Brooke’s eyes. We used a creamy pencil blended really nicely over the eyelid. I then used a pigment over the top. The barely-there makeup look is very on-trend at the moment. Tell us how to use contouring to get this look. The complexion is the most important part of the makeup. If you have beautiful eyes or beautiful lips but you don’t have the right complexion, it takes away from all that hard work that you might have put into those features. When it comes to foundation it’s better to let your own skin shine through. Make sure we have prepped the base properly and then don’t go too full-on with the coverage. NAKED CAKES Growing up, chances are your mum’s sponge cake was the highlight of everyone’s birthday - two cakes with cream roughly scattered in the middle to glue them together. Now this ‘simple fix’ has become one of the most common trends we are seeing in weddings. The naked cake is a beautifully simple take on the traditional tiered wedding cake. A FAMILY AFFAIR In 1994, a mother and daughter ventured from Melbourne to the Gold Coast in search of new beginnings. One year after the move, Mary, who was 21 years old at the time, was diagnosed with lymphoma non-Hodgkin’s disease and was told that she might only have three months to live.

A

fter a battle against cancer, going out on her own to find who she was and working her way through management at David Jones, Mary eventually phoned her mother, Rosa, and asked if she could join her at her bridal alteration shop. Twenty years on and they’re one of the Gold Coast’s favourite bridal boutiques, Rosa and Mary’s Bridal. Rosa and Mary are naturally upbeat and friendly, making you feel like part of the family. Their Italian background means that fashion runs in their blood. Rosa has been in the industry for 40 years. “My mother was a seamstress and she grew up designing her own fashion and then she taught me at a very young age. I then went on to do an apprenticeship, first of all in men’s tailoring and then in ladies wear,” says Rosa. “My dream was always to expand into the wedding side. Getting from nice designers and selling and altering and making brides their unique dress.”

“You’re not just selling a dress, you’re not just a salesperson, it’s such an emotional part that we play as well.” It would therefore seem to be a natural progression that eventually Rosa’s daughter, Mary, would learn from her in the same way that she had learnt from her mother. Mary’s story is a little different to her mother’s. Though she received her diagnosis at such a young age, Mary reflects on her experience, saying that she never thought it was the end. “I said to Mum as soon as we got out of the doctor’s room, ‘Stop crying, there’s no need to cry because it’s just not going to happen’. I was going to fight with every inch I had.” Mary remained positive throughout chemotherapy and knowing that she couldn’t leave her mother behind helped her to fight. “I just knew in my heart that this wasn’t the time for me to leave… That’s how I saw it, I didn’t see it as tragic,” Mary said. Following chemotherapy Mary started working in ladies fashion. She started off casual and worked her way up until she was a supervisor. She loved her time working for David Jones, but one

day something clicked and she called Rosa and asked, “Is it time for me to come and work with you? Are you going to pay me?” She explained that she was resigning and that she wanted to work with her mother. “I never looked back. Every day has been great.” “Everyone said it wasn’t going to happen. We’ve proved them wrong. After 20 years we’re still here together,” Rosa laughs, recalling the early days of their collaboration. “We work together as a team and it’s a good team. We both have days where we pull each other along. Every morning I wake up and I feel blessed,” Mary said. Over the years there have been so many changes. “Now it’s at the point where she’s telling me what to do and she’s become the teacher!” Rosa said. Rosa has always been passionate about working in the wedding industry. She sees so many brides every year and has some key advice to picking the perfect dress. “It’s such a delicate situation in everyone’s life, getting married, the pressure just builds up and every little thing that’s not right becomes so stressful.” Rosa said. “I just always say you have to be really happy with your dress. Sometimes they come in with an idea and we just say you have to pick the dress that makes you happy. Sometimes what they come in looking for isn’t what they end up wearing.” Neither Mary nor Rosa could recall one particular dress that was their favourite, but they both agreed that their favourite moment is when a mother and daughter come in together. Mary said, “We relate to everybody but I really enjoy it when daughters want to enjoy it with their mums and go through the journey together. It’s just a special moment when they come in together. And then there are those people who come in and don’t have family around and they’re looking at you for support and to be their family. You’re not just selling a dress, you’re not just a salesperson, it’s such an emotional part that we play as well.” Mary and Rosa have spent 20 years working together, passionately for all of the brides on the Gold Coast. Mary, who fought so hard to be where she is, knows how important it is to be doing what you love every day. “We enjoy what we do so much. Every day I wake up and I think ‘Who am I going to meet today?’ I wake up and wonder who’s going to walk through those doors, whose journey am I going to be in? Who has been sent to us because they need to meet us, because they need our help or our guidance? EAT THE WEEK Fashionista turned culinary queen Anna Barnett has hosted literally hundreds of dinner parties and is the author behind acclaimed blogs Get In My Gob and The Reluctant Vegetarian. With her flair for creating time and budget-conscious recipes, Anna shares her most-loved recipes in Eat The Week. Here are just three of our favourites to try this weekend.

MUFFIN TINNED HUEVOS RANCHEROS I served this up as a vegetarian starter at one of my pop-ups and the meat-eaters were jealous. This never fails to impress. Even better, you can get prepped in advance if you want some time to enjoy breakfast yourself. 3 soft flour tortillas, cut in half 6 free-range eggs 150 g (5½ oz) lamb’s lettuce 80 g (2¾ oz) feta, crumbled 150 ml (5 fl oz) sour cream sprinkle of smoked paprika 1–2 jalapeños, sliced SMOKY TOMATOES 1 large clove garlic, thinly sliced 1 x 400 g (14 oz) tin of tomatoes ½ teaspoon smoked paprika sprinkle of finely chopped oregano GRUYÈRE SAUCE 50 g (1¾ oz) salted butter ½ teaspoon English mustard 2 tablespoons plain (all-purpose) flour 350 ml (12 fl oz) semi-skimmed milk 70 g (2½ oz) gruyère, grated

Preheat the oven to 180°C (350°F/gas mark 4). For the smoky tomatoes, place all the ingredients in a pan and season with salt and pepper. Leave to cook over medium heat while you make the gruyère sauce. To make the gruyère sauce, melt the butter in a small saucepan over medium–low heat, then whisk in the mustard and flour and keep stirring until it forms a paste. Gradually add the milk, stirring constantly, until you have a thick sauce. Add the cheese, season with salt and pepper and keep stirring until the cheese melts to make a smooth, lump-free sauce. Take a six-hole 250 ml (one cup) non-stick muffin tin and press half a tortilla into each hole. Bake in the oven for about three minutes, then add a spoonful of the smoky tomatoes, followed by a dollop of cheesy sauce and an egg yolk, plus a little of the egg white, being careful that it doesn’t spill over the sides. Bake for 5–10 minutes until the tortillas start to crisp but the egg yolks are still runny. Garnish with lamb’s lettuce, a few dots of feta and sour cream, a sprinkling of paprika and some slices of jalapeño. Season with salt and pepper, then serve immediately. TIP Add the egg yolk first, then just a little of the white, so it won’t spill over the sides in the oven. You can use any left-over egg white to make macaroons (see page 72 of the book).

BUTTERMILK CHICKEN TACOS WITH ONION & RADISH SALSA Imagine moist, succulent chicken in a seriously crispy batter, and that’s what you’ve got with this dish. Get involved. 450 g (1 lb) chicken thigh fillets, cut into bite-size chunks 300 g (10½ oz/2 cups) soy flour or plain (all-purpose) flour 1 teaspoon cayenne pepper finely grated zest of ½ lemon vegetable oil for deep-frying 4 soft flour tortillas ½ red cabbage, very finely shredded ½ bunch coriander (cilantro), finely chopped 1 red chill, thinly sliced

maple syrup in a glass or ceramic bowl. Season with salt and pepper, then add the chicken and mix well. Cover and leave in the fridge to marinate for one hour or as long as your patience allows – overnight is best for flavour.

BUTTERMILK MARINADE 150 ml (5 fl oz) buttermilk 2 tablespoons smoked paprika 1 teaspoon cayenne pepper 2 tablespoons maple syrup

When you’re ready to cook the chicken, combine the flour with the cayenne and lemon zest in a shallow bowl, then season generously with salt and pepper.

ONION & RADISH SALSA 1 large red onion, very thinly sliced 5 radishes, very thinly sliced 2.5 cm (1 in) knob of ginger, thinly sliced ¼ red chilli, thinly sliced 3 large glugs of red wine vinegar 1 tablespoon caster (superfine) sugar PAPRIKA MAYO 4 tablespoons mayonnaise 1 tablespoon smoked paprika glug of chilli sauce or Tabasco sauce squeeze of lemon juice Make the marinade by combining the buttermilk with the spices and

To make the onion and radish salsa, combine all the ingredients and set aside in the fridge for 15–20 minutes. For the paprika mayo, combine all the ingredients in a bowl and season to taste.

Pour the vegetable oil into a deep-fryer or large heavy-based saucepan and heat to 190°C (375°F). If you don’t have a thermometer, test the temperature by adding a cube of bread: it should sizzle and turn golden brown in 10 seconds. Working in small batches, remove the chicken from the marinade, trying to keep as much marinade clinging to the meat as possible, then put it straight into the flour mixture, coating it well on all sides. Carefully add to the hot oil and deep-fry for 3–4 minutes until golden brown. Using a slotted spoon, remove the chicken from the oil and drain on paper towel. To assemble the tacos, place a mound of shredded red cabbage in the middle of a tortilla, followed by a generous dollop of paprika mayo and a few pieces of the crispy fried buttermilk chicken. Top with the pickled onion and radish salsa, before garnishing with coriander and chilli. TIP If you can’t find buttermilk, substitute sour cream with a dash of milk.

STICKY TOFFEE CRÈME BRÛLÉES This dessert is a combination of my two all-time favourites. What’s great about this recipe is that you can make it well in advance if you’re having friends round – and it makes plenty of sticky toffee pudding, so there’s always loads left over to get you through the next week! STICKY TOFFEE PUDDING 100 g (3½ oz) dark muscovado (brown) sugar 165 g (5¾ oz) self-raising (self-rising) flour 125 ml (4 fl oz/½ cup) whole milk 1 large egg 1 teaspoon vanilla extract 50 g (1¾ oz) unsalted butter, melted 300 g (10½ oz) dates, roughly chopped

Preheat the oven to 190°C (375°F/gas mark 5).

STICKY TOFFEE SAUCE 200 g (7 oz) dark muscovado (brown) sugar 25 g (1 oz) unsalted butter, cut into small cubes 500 ml (17 fl oz/2 cups) boiling water

Reduce the oven temperature to 150°C (300°F/gas mark 2) and place six small ramekins in a roasting tin.

CRÈME BRÛLÉE 900 ml (32 fl oz) double (thick) cream 1 vanilla pod (bean), split and seeds scraped 9 egg yolks 45 g (1¾ oz) caster (superfine) sugar 3 tablespoons demerara (brown) sugar

In a bowl, combine all the sticky toffee sponge ingredients, then pour into a deep greased or non-stick rectangular baking tin (about 30 x 20 cm/12 x 8 in). For the sticky toffee sauce, scatter the sugar over the sponge mixture, along with the cubes of butter, then pour over the boiling water. Cook in the oven for around 40–50 minutes. You’ll be left with a gooey, sweet and sticky toffee pudding. Let this cool and it’s ready to use as the surprise centre of your crème brûlée.

For the crème brûlée, pour the cream into a small, heavy-based pan and add the vanilla pod and seeds. Bring to the boil over a medium– low heat – as soon as it starts to bubble, take it off the heat and remove the vanilla pod. In a heatproof bowl or jug, mix the egg yolks and caster sugar until just combined then pour in the cream, stirring well to mix. Divide the sticky toffee pudding between the ramekins: aim for a generous teaspoonful, along with a bit of the sauce, then pour in the cream and egg yolk mixture until it completely covers the sticky toffee pudding. Place the ramekins in a roasting tin or baking dish tin, then pour in enough cold water to come two-thirds of the way up the sides of the ramekins. Bake for about 40 minutes until the custard has set – it should only wobble a little when given a gentle shake. Allow to cool, then chill until ready to eat. Before serving, sprinkle the tops of the cold crème brûlées with demerara sugar and caramelise the tops with a kitchen blowtorch or under a hot grill (broiler).

ITALIAN LOVE AFFAIR “You may have the universe if I may have Italy,” – Guiseppe Verdi.

T

hese are no doubt the words of a true Italian patriot. After all, there’s nothing more quintessentially Italian than a Verdi opera, especially if performed in front of a rambunctious crowd at the Rome Opera where the audience is known for its vociferous appreciation… or otherwise. We’ve heard hisses and even boos when the tenor misses his top A. But it’s in Naples, just over an hour south of Rome by express train, that the true flavour of Italy can be seen, felt and heard in all its glory. And, we might add, tasted. For earthy Neapolitan cuisine captures the soul of the city and its pizzerias are arguably the yardstick by which all pizza places around the world are measured. We’ve known people who have included Naples in their itinerary just to indulge in the legendary Pizza Napolitana. 82 GOLD COAST • BRISBANE & BEYOND Magazine

There’s no doubt that Naples gets a mixed press. It would be too easy to read some reviews and reschedule your trip to bypass the city and head straight for the Amalfi Coast, Pompeii or indeed anywhere else. Reports of pickpockets, Mafia, littered streets, dodgy vendors and taxi touts are not unknown. Conversely, you’ll find rave reviews of the food, the history, the palaces and monuments, the museums and churches... and the people. For the Neapolitans, life is to be lived to the fullest. And you’re invited to go along for the ride. And what a ride it is! Arriving from Rome we hailed a taxi big enough for three, with luggage. Yes, there’s a meter, which will be conveniently ignored. After a helter, skelter 20-minutes up narrow winding streets we’re checking in at Grand Hotel Parker’s, one of the Small Luxury Hotels of the World. to a sanctuary that will be our home for the next few days. And the concierge, Marco, becomes our best friend… he knows everything and everyone. Now, on the balcony, we begin to understand the contradiction that’s the city of Naples. There’s the beauty of the harbour, the bay shimmering at dusk, the lights reflecting off low-slung clouds. Closer beneath us, the chaos of the streets, the bee-like buzz of humanity, the senses awakened with culinary anticipation. How could anyone not be in love with this taste of the real Italy, the one we see in movies or read about in a marvellous book called Naples – A Way Of Love? Next morning we’re up for a decadent breakfast on the terrace with the sun streaming in, and then it’s off downtown to meet Walter, the knowledgeable tour guide whom Marco has arranged for us. The old, historic part of the city teems with life in narrow alleys where scooters come hurtling towards you and veer at the last moment, keeping the adrenalin pumping. There is so much to see and experience that three hours is hardly enough… medieval churches, old palaces, an underground labyrinth, even a museum of purgatory; and to satisfy true believers, rows and rows of stalls selling religious objects and elaborate nativity scenes. For lunch, we indulge in slabs of cheese and fresh bread from a local deli, eaten on the steps of a cathedral where we watch people and they watch us. It’s a favourite Italian pastime, and everyone wants to talk to you, especially if they know you’re Australian. Every single person in Naples has relatives in Australia and they all seem to be called Giovanni or Maria. Of course, we know them all. This is how Naples is for an open-minded tourist. We spend hours roaming the alleys and the squares, following our guide or guide book, grabbing a gelato and taking it all in. But at the end of the day, there’s “Parker’s” as it’s known, and the prospect of a splendid dinner on the terrace, or a takeaway from the nearby pizzeria. Washed down, of course, with something very Italian indeed… a complimentary limoncello. Feeling sad to leave at last, we rent a car and head for Pompeii where we spend a day looking at the ruined city so much written about and photographed. It’s an experience none should miss, but beware of the rough cobbled streets (heels not advisable) as well as the multitude of touts. The audio guide is your best friend. Then it’s on to the Amalfi Coast, another half-hour away if you drive like an Italian… fast and furious. We turn off to the Sorrento Peninsula and then… presto… the jagged edges of the Amalfi Coast unravel before us. It’s a daunting prospect as we scope the narrow serpentine route high above the cliffs. Sheer drops, Vespas buzzing like bees around the blind corners and large tour coaches lumbering like elephants. Added to that, the fearless derring-do of irascible Italian drivers. It’s all fun, as long as you don’t suffer from

high blood pressure. After passing Sorrento there are three main towns awaiting our pleasure… Positano and Amalfi on the coast, and Ravello high up on the mountainside. They all have loads of charm, but are very different: Positano for trendy boutiques and trattorias specialising in seafood; Amalfi for a busier vibe and nightlife; and Ravello for its uber-cool shops, the 13th century Villa Rufolo and the Cathedral of the same period. Ravello is one of the most famous (and touristy) mountain towns in Italy, with good reason. We decide that none of these places meets our requirement for a few days of relaxation in a quieter location and so we return to the village of Praiano near Positano. It has a more of a village feel to it, and some really good restaurants like La Brace, whose pizzas are legendary. There’s also a bar/café where the locals congregate in the evening and will happily practise their English with you as you sip a Campari or a prosecco. Thus begin several days of magic. We’ve found Casa Angelina, another of the Small Luxury Hotels of the World, perched on a steep cliff overlooking the Mediterranean. This place is sheer perfection. Balconies look out over the blue sea and the paler blue sky, creating a unique effect of merging seamlessly into our all-white room. It’s almost surreal, and brings back memories of the movie The Truman Show in which life turns out to be a giant movie set. In the morning, we drag ourselves away from the view to try the buffet breakfast to end all buffets… we ranked this as our number one choice in the whole of Italy, and that’s saying something. Suitably recharged, we take the hotel’s elevator carved through the rocks to the private pebble beach below and enjoy a lazy swim in the Mediterranean. Even in October the water is buoyant and refreshing. Later, we try the hotel’s lap pool, which is kept slightly warmer. Casa Angelina is an act of love by the owner, Signor Cappiello, who bought this property in poor condition, spent a fortune on creating a monument to good taste, and named it after his mother. THALA BEACH LODGE: STRICTLY FOR THE BIRDS Phil Hawkes finds a place where tweets are natural.

I

t’s a fair bet that many of us have been to Port Douglas. Probably it’s the best Winter destination in Australia. And with good reason. There’s a huge range of accommodation from five-star luxury hotels to apartments and backpacker lodges. Moreover, the food scene is probably the best in Tropical North Queensland, although fine dining comes with Sydney prices, it has to be said. Nothing like a little indulgence once in a while. Reef trips, the Daintree, Cape Tribulation and Cooktown all beckon for day trips or longer; but at the end, there’s always the more sophisticated embrace of “PD” awaiting with its boutiques, craft shops and spas. Plus a couple of lively pubs. Now, there’s more. It’s a resort to be found just 15 minutes south of Port Douglas, shielded from the town’s activity in a coconut plantation fringing a deserted beach. This is the Thala Beach Nature Reserve, a private eco-friendly lodge with just 83 rooms, which are so secluded that you can hardly believe anyone else is there. The “rooms” are in fact luxurious bungalows dotted randomly around a headland, with dense vegetation and magnificent trees creating that feeling of isolation. Depending on your choice of room (and price), the views of the Coral Sea or the jungle surroundings from your balcony are the stuff of picture postcards. Owners, the Prettejohn family, are justifiably proud of what they’ve created from this historic old plantation. It’s a perfect spot to enjoy some down time for a few days, but if you feel like re-engaging with the human race there’s a bar/lounge and Ospreys, a casual restaurant with extensive breakfast offerings, plus a ”modern Australian” dinner menu created by Chef Catherine Pacey… and a fine wine list to match. No doubt it’s one of the finest tables in North Queensland. The highlight of our stay was undoubtedly the range of onsite nature experiences on offer. First and foremost is the “Bird Tour” with guide David. Armed with binoculars provided by the resort, we’re privileged to spot a multitude of feathered varieties, including two ospreys and their chick, nesting at the top of a power pole on the property. We watched in awe as the male returned from the sea

with a large fish to feed the family. Kind of inspiring! There’s also a nature and garden walk guided by Brett and his team, exploring 145 acres of the plantation with a variety of native flora and rare littoral rainforest. And later, a long beach walk was perfect to help digest an indulgent lunch. Monday nights are notable for the Indigenous culture program with Harold Talley, an elder of the Kuku Yalanji people, helping our understanding of the history of the Mossman region. Port Douglas has certainly come of age. If you thought it was a top place years ago, it will delight you now. Even better, there are now much cheaper flights from Brisbane since Tigerair started flights to Cairns… there’s a daily service at a convenient time around noon, so you don’t have to arise with the birds. Ferrari California T The Ferrari California T is a car that has put Ferrari under immense pressure. Not because it’s Ferrari’s most affordable vehicle, but because it is the first turbocharged Ferrari since the iconic F40, which adorned thousands of kids’ walls as a dream-machine poster (mine included).

aunched with a price tag of $409,888 (plus on road costs), the California T is Ferrari’s only four-seat convertible model. The outside is trademark Ferrari with quad exhaust pipes and a prancing horse adorning the rear end. Up front there is a new slatted grille, bonnet vents and a new seat of headlights decked out with LED turn signals. The sculpted profile continues around the side where the car manages to look stunning both with the roof on and off. Finished in a stunning California Rosso special paint colour, our test car presented the ultimate image of luxury, practicality and performance. The interior was also beautifully appointed, with a Beige Tradizione tanned leather that suited the car when cruising along a beach boulevard. The seating position and interior layout is exceptional, giving the driver good visibility out the front, sides and rear. breeze - a critical part of owning a supercar like this. Tech and connectivity features are strewn throughout the cabin, including the option of Apple Car Play. The system allows you to connect your Apple smart phone directly to the car, mimicking its home screen, maps and messaging functions on the car’s infotainment system - one of the coolest and best integrated systems I’ve seen in a car. Four seats are available, which is a handy inclusion given most of the cars in this segment only seat two. The rear two is a tight squeeze, but it’s reassuring to know that you can legally carry an additional two passengers if required. The rear bench also folds down to carry longer items that don’t fit in the boot. Speaking of which, the boot’s cavernous 340-litre storage capacity is also one of the best in this class. Boot capacity reduces if you opt to fold the roof down and drive topless. The roof takes just 15 seconds to close, which is fast for a metal folding hardtop. This car’s best feature sits beneath the bonnet. The 3.9-litre twin-turbocharged V8 engine produces a staggering 412kW of power and 755Nm of torque. This power and torque figure is out of this world for a smaller-capacity V8 engine. The engine is mated to a slick-shifting, dual-clutch, seven-speed automatic gearbox. This combination makes the California T good for a 0-100km/h dash of just 3.6-seconds - that’s stupendously quick. Ferrari’s trademark manettino dial allows the driver to move between comfort and sport modes, both offering a unique suspension, steering and throttle tune. The sport mode instantly turns this sedate convertible into a fairly hectic monster. Our test car had the optional Magneride dual-mode suspension system that uses metal filings that can be almost instantly charged to adjust the firmness of the suspension. This system is great for faster driving through corners, where instant response and firmness helps the car sit flat, eliminating body roll. The engine note is sensational, with loud cracks and pops during gearshifts. The gearbox even blips the throttle on down shifts to ensure the car is heard before it is seen. Despite sending such a huge amount of torque through the rear wheels, the California T manages to get all of its power to the ground in spectacular fashion. Even during harder cornering, the car maintains composure and constantly feels up to the task.

In comfort mode, the California T feels just as comfortable as a large luxury car. The soft ride and easy steering makes it a joy to drive in the city and on the open road. The only thing I didn’t like about the California T was the pretty ordinary looking key. Instead of a keyless entry/start style system like you find on most luxury cars, the California T has a traditional key that looks like it could belong to an old car as opposed to a new sports car. The Ferrari California T represents the latest and greatest from Ferrari and is an exciting sign of things to come. The turbocharged V8 engine is lag-free, sounds incredible and is the ultimate excuse to buy into a brand that is clearly focused on delivering the absolute best for its customers. Finding Spell

Imagine this, four young girls growing up in suburban Melbourne, a city where everything is happening, but not much is necessarily happening to them. They are raised by artists who nurture their creative spirits. One of the girls is sitting in traffic on Punt Road when she has a ‘moment’. She packs up her car and drives to Byron Bay. Just years later another sister, based in Bondi, is going through one of the darkest time in her life after a shattering break-up. She calls her sister in Byron and asks her if she needs a business partner. Fast forward and the two sisters are the owners and designers of one of the most successful fashion labels the town has ever seen, with people all over Australia, and all over the world, wearing their designs.

hat started off as two girls sitting in a wardrobe piecing together jewellery to sell at the Sunday markets has now turned into one of the most unique and beloved fashion labels that Australia has ever seen. Women all over the globe are now wearing Spell, with stockists from Japan to the UK and Canada. These bohemian collections have put the gypsy stereotype on a different wavelength. Rocker chicks, hippies and beach babes alike have all flocked to Spell to nab trucker tees, swish skirts and kimonos layered over intricately patterned intimates. This label caters for everyone; designed to encapsulate the free-natured spirit that the creators themselves encompass. But it’s not just these two sisters, Isabella Pennefather (Spelly) and Elizabeth Briedis (Lizzy) that have made the label what it is today, it’s been a family affair to say the least. Spelly’s twin sister Luciana Briedis (Lucy) is the hair and makeup artist who creates the perfect beach hair and sunkissed looks that feature in all of the Spell photo shoots. While Lizzy’s husband, Johnny, is the photographer and videographer responsible for most of their behind the scenes videos. When asked about working with those closest to her, Lizzy said, “It is great to be able to work with those nearest and dearest because they both totally get our vision – and they put up with our über control-freakishness on shoots! We’ve also had our dad get back into his leather studio to help us with leatherwork and my sister in Melbourne often does DIY blog posts for us - she’s the selfproclaimed queen of up-cycling!” Spelly and Lizzy are living a life that girls all around Australia dream of; living in Byron Bay and working passionately to create a fashion label that stands out from the rest. Many dream of working with the Spell team and the best way to make that dream a reality, or get any other job for that matter, according to Lizzy, is to “intern at your dream job! Hound them until they let you! I promise the moment a business sees how dedicated and hardworking you are they won’t want to let you leave! We had a girl fly over from the UK and pound on our door! She’s now our longest-running Spell employee”. Most people find out about the Byron-born label through social media. Spell’s Instagram and Facebook are alive with people all over the world trying to catch a glimpse of new collections, beautiful Byron landscapes and incredible giveaways. Spell recently joined Snapchat, something that the girls are still getting the hang of, but they still absolutely see the worth in these platforms. “Without social media I don’t even know where our label would be,” says

Lizzy. “It’s the window into our world that allows our customers to connect with the label. With Snapchat, we plan on using it for realtime, honest, unfiltered, uncurated glimpses into our design world.” But it’s not just the label that’s taking off. Spelly and Lizzy’s lives are becoming a whirlwind of action. Lizzy is engaged to be married, a day that she hopes “reflects my partner and I”. “We want lots of cushions, lots of food and good chats, warm chai into the evening and maybe a slow dance barefoot on the grass. Note to self, start a Pinterest board with wedding ideas.” You can catch a glimpse of Spelly’s wedding on their website, and if it’s anything like that beautiful, feathered, teepee affair, we know it will be an incredible day and night. On the other hand, Spelly has just bought her first house with her husband and two gorgeous boys. Spelly recounts, “When we first met with our accountant four years ago she asked us our goals, and we said, ‘Oh we just want to be able to pay the bills!’ and she pushed a little harder. Never in a hundred years did I think we’d be able to own our own home. I feel blessed to be able to work and live in a town I love dearly.” With Spell growing so quickly, it’s often forgotten that Spelly and Lizzy also have growing families. With two children each, they face a struggle that Australian women know all too well – juggling work and family. Growing families have led to a growing business, with the girls hiring more people to share the load. Lizzy speaks honestly about this struggle. June/July 2015 91

Have you heard of the mum-guilts? It’s a legit thing. We have brought new people into the business to help us. It’s hard to let go of the reins, but it’s so incredible to see our team work together. We call them all our Spell Angels, because that’s what they are, little angels helping us survive!” Anyone who has been in Byron over the past few years would have noticed the Spell creations are everywhere. You see it everywhere you turn, but that doesn’t mean that every sighting isn’t as exciting as the first for Spelly and Lizzy. “It is wonderful seeing ladies wearing Spell. Just the other day I pulled over in my car and stopped a woman who looked amazing in our romper and took a shot! I must have looked crazy, but that is an indication that, yes we still feel excited seeing people wearing our pieces. “ With the label’s popularity increasing with every new collection, it is hard to imagine what’s next for the brand. But Spelly and Lizzy have big plans. It’s hard to believe Lizzy’s exclamation at how bad the two of them are at goal-setting when you look at how successful Spell has become, but maybe that raw nature is what gives it the edge over all other labels. However, Lizzy did let on that they would love to open another store somewhere, no telling where, but hopefully overseas. Lizzy and Spelly have the world at their feet. They’re a label that models and photographers alike are dying to work with, but the question begs, who is that they want to work with? “Well, one of the models at the top of our list has recently been ticked off (to be revealed later this year) and another for us is 92 GOLD COAST • BRISBANE & BEYOND Magazine

How will the 2015-16 Federal Budget impact you? While many of the proposed measures had already been leaked in the days and weeks leading up to Budget night, a few surprises remained. Now, as the dust begins to settle on Treasurer Joe Hockey’s second Federal Budget, the question on everybody’s lips is, “What does this mean for me?”

W

ithout further delay, let’s explore some of the key highlights from the 2015-16 Federal Budget and what it all means for you, your family and your business.

Small Businesses The big winners of this year’s Federal Budget, small businesses,* will be the welcoming beneficiaries of a raft of measures aimed at stimulating economic and jobs growth through lower tax rates, accelerated depreciation and employment incentives. Thanks to the new $5.5bn small business package, small business owners can look forward to: • The single biggest change, huge immediate deductions for all new plant and equipment purchases under $20,000, increased from $1,000. • Tax rate reduction to 28.5 per cent for small businesses operating through companies. • Capped 5 per cent tax rebate for small businesses operating as sole traders, trust or partnerships. • Five per cent tax discount for individual taxpayers with business income**, capped at $1000 from 1 July 2015. • Immediate deduction for professional fees associated with creating the legal business structure of start-up businesses and other associated expenses. • Relief to CGT liability arising from small businesses restructuring from 1 July 2016. However, business owners need to bear in mind that legislation has not yet passed, so it is wise to consult your tax advisor prior to making any business decisions. Families To alleviate the financial burden of growing childcare costs, new measures will be introduced from 1 July 2017 to encourage spouses to return to work after having children through a comprehensive package of improved childcare benefits. A new single childcare subsidy will replace the current Child Care Benefit, Child Care Rebate and Jobs, Education and Training Child Care Fee Assistance Programme. It will be based on a percentage of the actual fee paid, up to a maximum hourly fee cap for each service type, with the level of subsidy based on family income. The subsidy is proposed to be: • Up to 85 per cent of the actual fee paid for families earning around $65,000p.a. • Fifty per cent for families earning $170,000 or more p.a. • Families earning around $185,000 or more will have a $10,000 annual cap on the total amount of assistance provided per child per year.

Superannuation The Superannuation system again escaped significant change, with the Government confirming its promise to avoid imposing new taxes upon the system. Pensions For the second year running, substantive changes were reserved for Australia’s Age Pension system where the ongoing challenge of an ageing population again warranted additional tinkering. While last year had been predominantly centred around income test/means testing revision, this year focuses on significant assets test alterations. • From 1 January 2017, the Age Pension assessable asset-free thresholds will increase to $250,000 and $375,000 (couple) for homeowners, and $450,000 and $575,000 (couple) for nonhomeowners. • A pensioner’s main residence will continue to be exempt from being counted under the assets test. The Blackest Day

I

n February 2013 Australia’s top sporting codes were rocked by the so-called revelations of an Australian Crime Commission report, ominously entitled Organised Crime And Drugs In Sport. Sports administrators cringed and sponsors recoiled in horror as the former head of ASADA, the Australian Sports Anti-Doping Authority, announced it to be “the blackest day in Australian sport.” “Don’t underestimate how much we know,” Justice Minister Jason Clare warned. “If you are involved in this, come forward before you get a knock at the door.” Talk of criminal prosecutions was everywhere as ASADA swung into action, serving show cause notices on 34 past and present Essendon players, alleging the use of banned peptides. It all seemed pretty impressive then, making huge news around Australia. But the wheels fell off somewhat in March this year when the AFL Anti-Doping Tribunals found all 34 alleged culprits not guilty of the charge and, after some initial sabre-rattling in the press, ASADA announced it would not appeal the ruling. Having acted for a number of professional sportspeople implicated in the ASADA investigation, I was not much surprised to read of the Tribunal’s decision. What did cause me some surprise and dismay, however, was the way the whole affair was handled by the regulatory bodies from start to finish. The Organised Crime And Drugs In Sport report was largely based on information supplied by the Australian Crime Commission, which used its coercive powers to force athletes and sports administrators to answer questions around ASADA’s concerns about the use of performance-enhancing drugs in Australian sport, particularly in the football codes. That all happened in secret, closed-door hearings in which players were told what the Commission was convinced was happening, that if they confirmed it to be true no- one would ever know they had done so, and nothing they said could be held against them. But if they denied it they could potentially be prosecuted for perjury, and possibly go to jail. 96 GOLD COAST • BRISBANE & BEYOND Magazine

That’s a pretty scary prospect for anyone, and when you threaten someone like that, there’s always the risk they’ll tell you exactly what they think you want to hear, regardless of its truth or otherwise. But none of it is admissible in any court of law, because it’s been extracted under compulsion, and lawyers understand that evidence extracted that way is likely to be highly unreliable. Nonetheless, based largely on that evidence ASADA and the ACC published their “blackest day in sport” allegations, throwing a shadow over the whole of Australian sport in the process. Talk of sinister links between sports administrators and international organised crime syndicates made for sensational headlines, and predictably kicked up a lot of dust. Then, fortified by public outrage, ASADA enlisted the football codes to help them convince their players it was in their best interests to admit to the misbehaviour ASADA thought they knew had happened, but couldn’t prove by any admissible evidence. The message is simple enough. We know you’ve done this – admit it, and you’ll get a sweetheart deal with a limited period on the sideline; deny it, and you’ll risk losing your whole career. That’s a heck of an ultimatum for a young sportsperson with a limited time in the game. Several centuries of careful jurisprudence have constructed some pretty sensible rules around how our regulators investigate and prosecute offences. One of the most basic is that no person should have any threat, promise or inducement held out to convince them to implicate themselves or others in any wrongdoing. It makes good sense, because the truth is often hard to find, even without the distraction of self-interest. When the dust finally settles on the ASADA drugs-in-sport affair, and regulators and administrators sit down to try and work out what went wrong, perhaps that’s one simple, sensible rule they may see value in revisiting. The King George balcony and inside the auditorium, the incredibly illuminated dome, marble mosaics, period-correct palette, art work and timber panelling created a magical palace worthy of any celebration. In fact, just days prior our shoot, this veritable venue hosted the 2013 Mercedes-Benz Fashion Festival to great acclaim. It’s breath-taking. Elegant and effervescent journalist and TEN news presenter, Georgie Lewis was our model. A proud Brisbane girl, Georgie has been covering all the goings on – hard news, crises, culture and community – for the past six years. Another George in the mix was the designer, George Wu who provided the shoot’s glamorous gowns. A red-carpet, wedding and special occasion favourite, George was a stand-out at Fashion Week and his star is rising on the international stage as well.

Our hair and make-up artist was Eva Bergstrom, who has worked with Georgie at TEN for many years and is an expert at her art.
