Caramel Apple Ice Cream By Madalene Bonvini-Hamel | www.britishlarder.co.uk Fills 3 beakers |Cooking time 25 minutes | Freeze 24 hours
300g caster sugar 250ml water 250g peeled, cored and sliced apples 12 large free-range egg yolks 700ml Semi-Skimmed Milk 1 vanilla pod 300ml double cream Dissolve sugar and 50ml water in a pan over high heat, bring to dark caramel, add apples, cook two minutes, add rest of the water, cook for 5 minutes. Transfer to Thermomix jug and blend on high speed for one minute. Add the eggs, milk and scraped seeds from vanilla pods into Thermomix jug, blend for 30 seconds on full speed. Insert butterfly whisk, set timer for 12 minutes, 80째C, speed 4. Remove the whisk; add the cream and blend for 10 seconds on high speed. Pass directly into pacojet beakers and chill over ice. Freeze 24 hours to -22째C. Churn required portions at a time.
