1. WHEN DID YOUR INTEREST IN THE CULINARY WORLD BEGIN? MG: It was born from my concern and desire to grow and in this project I saw that possibility, from there I decided to join to start Grupo Nikkori. AR: When I was around 15 or 16 years old, I always said that I was in the wrong career because I would have liked to be a chef and for that reason I was always very interested in the restaurant area.
2. WHAT MOTIVATED YOU TO CREATE THIS SOCIETY? MG: Personally, I have always liked challenges and when I reviewed this great project I decided to start to overcome it and to date, I have succeeded. AR: Due to my interest in the restaurant area, at that time I saw a strong trend, the growth of people’s interest in sushi and that it was a market niche that had not been exploited, that is why I decided to start this project.

3. FOR YOU, WHAT DOES NIKKORI REPRESENT? MG: The biggest project of my life. AR: Nikkori is a very important part of my life that, apart from representing all that I have achieved, also represents more than 2,400 families that depend on this group. Nikkori is a family.
4. HOW HAS YOUR EXPERIENCE IN THE GROUP BEEN? MG: It has been a very pleasant experience since it has been full of challenges and satisfaction, which has encouraged me to continue growing more every day. AR: My experience has been one of daily growth and learning, it has been very rewarding.
5. WHAT HAVE BEEN THE GREATEST CHALLENGES IN THESE 30 YEARS? MG: The exponential growth of competition, generational changes and tastes, and above all, the pandemic. AR: We are in an industry in which we face a changing market year after year, we have been presented with difficult situations but the desire to get ahead and innovation has allowed us to overcome these challenges.
6. DEFINE THE NIKKORI GROUP IN 5 WORDS MG: Team, growth, innovation, work and success. AR: Family, communication, union, effort and happiness.
7. ANY ANECDOTE WITH GRUPO NIKKORI? MG: The first time we were awarded restaurateurs of the year at the Players of Life event. AR: Many, especially creating the different brands that make up the Nikkori Group.
8. WHAT IS YOUR FAVORITE DISH FROM THE NIKKORI MENU? MG: Tuna sashimi. AR: Salmon sashimi.
9. FAVORITE HOUSE COCKTAIL? MG: Jamaican mezcal. AR: Jamaican Mezcal.
10. SOME SPECIAL MOMENT AT THE RESTAURANT? MG: Family birthdays, anniversaries and events with a lot of family weight. AR: Many nights of unforgettable dinners
11. WHAT HAS BEEN PART OF THE SUCCESS OF THE GROUP’S GROWTH? MG: The great team we have, the dedication and perseverance of each of those who make it up. AR: The daily effort that each of us who are working at Grupo Nikkori put in.
12. WHAT DOES TEAMWORK MEAN TO YOU? MG: We support each other every day. AR: Unity is strength.
13. WHAT HAVE BEEN THE MOST IMPORTANT CHANGES IN 30 YEARS? MG: Adapt to new trends and generations, as well as get out of our comfort zone to create new concepts that are different from what is Japanese. AR: The significant growth we have had in the number of branches nationwide.
14. WHERE DO YOU SEE THE GROUP IN THE NEXT FIVE AND TEN YEARS? MG: I see us stronger, united and with new concepts. AR: I see you innovating and multiplying the branches that we have today, looking for business opportunities in other states and abroad.
15. ANYTHING ELSE YOU WOULD LIKE TO SHARE WITH US? MG: Thank all our clients for being part of us for these 30 years because without them we would not have achieved what we have up to now. AR: I would like to thank our customers enormously for being there, visiting us, and supporting us every time we open a branch, because without them this would not be possible.
