Ingredients

Cold mashed potato

Cold cooked vegetables cut into small pieces It doesn’t really matter what veg you use but broccoli and cabbage are probably the best!

Anything else you fancy or have spare Spring onions, cooked meat, small squares of hard cheese.

Salt and pepper

2 spoons plain flour

If it bubbles and squeaks, there’s a strong chance it’s bubble and squeak you’re making! At the moment shopping can be difficult, so here’s a simple recipe to use up leftovers, particularly mashed potato and cooked vegetables.

• Mix together the potato, vegetables and other ingredients in a large bowl. Season with salt and pepper to your taste.

• Form the created mixture into cakes, around the size and shape of a burger - or however you fancy them.

• Sprinkle the flour onto a plate and coat each cake all over.

• Pour the oil into a frying pan and begin to heat.

• Once the oil has warmed up and is sizzling, fry the cakes until golden brown on each side, turning regularly.

• If you like, you can add a fried or poached egg on the top, or get creative with toppings and add whatever else you may have leftover from other meals.

• Enjoy!
