“We find more and more that people, especially as they get older, have enough stuff and are looking for ways to enjoy their time,” says Burchfield Penney Art Center director of marketing and public relations Kathleen Heyworth, who notes that gift memberships are very popular. “It’s a wonderful way to get to know our city—250 programs a year, live music all genres, poetry, lectures, talks, and tours, there’s so much to do and see.” On Thursday nights, the Burchfield Penney café is open until 9:00 p.m., and on M&T Bank Second Fridays, there’s always something new. Come for dinner and make a night of it. “Gift memberships can be purchased over the phone, online, or right here at the gallery,” says Heyworth, who suggests they can be paired with gift certificates to the museum store. “There we have one-of-a-kind works by local artists, and those purchases keep funds right here in our community.” An overnight stay at the The Roycroft Inn in East Aurora is “a true getaway,” says marketing representative Lynn Kinsella. “Our
suites take you back to a more relaxed time where guests can enjoy good books by the fire, enjoy meals created with locally produced ingredients in a historic setting, and escape from today’s busy times,” she explains. “During the winter months, overnight stays can be combined with downhill skiing at Kissing Bridge, art classes through the Roycroft Campus’s educational programs, or movies in East Aurora’s historic theater.” In January, Caribbean Night will “bring the island life to East Aurora, with tropical drinks and food, and even a steel drum orchestra,” shares Kinsella. Winter Wine Nights feature evenings of wine and food pairings, and every Thursday and Friday, there is live music in the Craftsman Lounge with local and regional musicians. And, of course, Kinsella adds, there’s always the village itself, a great way to “experience historic charm with an urban feel.” For those on your list who love food, history, and a little adventure, “Buffalo Bites Food Tours are the perfect mix of food, history, and fun.” says Buffalo Bites president Laura Reed. “Our tours

In March, we’ll celebrate Women’s History Month in a big way as we gear up for the centennial anniversary of the nineteenth amendment.” Another great example of Buffalo’s rich history is the Darwin Martin House Complex, which has undergone a decades-long restoration project to return it to what Frank Lloyd Wright
originally envisioned. “People from all over the world visit us,” says Dawn Warsaw, assistant director of the restoration campaign. “But don’t take our word for it—experience this remarkable architecture firsthand. Read and give local books By Elizabeth Licata
T
his holiday season brings with it a rich harvest of books featuring local authors and photographers. Here’s a sampling of titles that have found their way to the Spree offices.
Local lore on the coffee table Three beautifully illustrated hardcovers that provide essential documentation of local cultural icons have been published this year: American Chartres, by Bruce Jackson (SUNY, 2016), is the result of seven years of photography by the University at Buffalo professor, who is known for his documentary work in both moving and still media. Jackson turned to the grain elevators as part of an ongoing project to record them as the most imposing remnants of Buffalo’s great industrial past. Aside from nine pages of introductory matter, including some interesting

personal anecdotes, the book is devoted to imagery of fifteen elevators. When Jackson started photographing the structures, he had to shoot them from boats and nearby roads accessible to the public. Later, thanks to Silo City owner Rick Smith and Cargill Electric Annex owner Carl Paladino, Jackson was able to get much closer and shoot interior images of some the buildings. From the iconic rounded silos silhouetted against water and sky to the gloomy interiors, filled with rusty equipment, Jackson captures both the soaring poetry of these structures in their massive simplicity and the gritty reality of their abandonment. J.N. Adam Memorial Hospital: Her Inside Voice, by Char Szabo-Perricelli (Museum of disABILITY History, 2016), is another elegiac exploration of abandoned structures, though few Western New Yorkers have likely seen the J.N. Adam complex, located in Perrysburg and empty since 1993. It was proposed as a tubercular hospital in 1909 by Buffalo Mayor J.N. Adam (who donated the land), designed by architect John Hopper Coxhead, and opened in 1912. The finished complex featured a large, airy, plantation-type structure equipped with sleeping porches, in order to give patients the full benefits of the “sunshine cure” then recommended for tuberculosis. Over the years, additional wings and buildings were added to the complex. It closed as a tubercular hospital in 1960 and subsequently became a center for housing and treating the developmentally disadvantaged, closing finally in 1993.
Despite the increasing dilapidation of the complex, SzaboPerricelli’s photography reveals its beauty as well as the sadness of its abandonment. The photographer has imagined a persona for the hospital that she calls “her inside voice,” and includes short narratives that appear intermittently, speaking of the complex and its history as “her.” Some of the interior images are remarkable in their portrayal of heedless departure; drawers gape open, notices hang awry on bulletin boards, shelves are still partially filled with cleaning supplies. The book also includes a history of the complex, the original patient handbook, and many archival images from the collections of the Museum of disABILITY History. It is a beautiful record of a place that is nearing its survival tipping point.

Allentown, with photographs by William D. Faught (Buffalo Heritage Unlimited, 2016), is—unbelievably—the first book to be devoted to Buffalo’s oldest historic district and one of the city’s most desirable neighborhoods. The book is the brainchild of architect Faught, a recent arrival in the neighborhood who is clearly entranced with everything Allentown—from the soaring tower of First Presbyterian to the funky sculptures atop Gabriel’s Gate. Photographs are divided into thematic sections: Streetscapes, Parks & Gardens, Nightlife, and Diversity. There are also introductory essays on the history and contemporary makeup of the neighborhood by two longtime residents: historian Christopher Brown and Allentown Association

president Jonathan White. Additional brief essays open each pictorial section. The design is clean and contemporary and Faught’s photos vary (intriguingly) between black and white and color. He clearly loves the neighbor2016 | Holiday Shopping Guide

hood’s streetlife and small but intense gardens as much as he respects its historic architecture. Also out from Buffalo Heritage Press: B is for Buffalo, an alphabetically arranged series of drone shots of the city by Christopher Hyzy; and Clover and the Shooting Star, a children’s book by Heather Lynn Harris.
A familiar smile Still Smiling, by Linda Pellegrino, provides a series of entertaining, revealing, and occasionally poignant snapshots from the life of a popular and hard-working TV host. Pellegrino (along with Jon Summers) has been co-host of WKBW’s AM Buffalo since 1990. She’s also had an eventful and fascinating career as a voice-over artist, disc jockey, copywriter, and actress, among other occupations. Many of the most engaging of the book’s (mostly) short chapters report on Pellegrino’s frequent encounters with householdname stars, whom she regularly interviews when they visit Western New York or when she takes part in movie-release interview junkets. As many readers know, Pellegrino underwent treatment for breast cancer and thyroid cancer in 2011. She tells that story toward the end of the book, making sure to credit the medical team that helped her get through it and finish this book cancer-free—five and a half years after the initial diagnosis. Anyone who has ever watched AM Buffalo should consider this book, which provides behind-the-scenes revelations, interesting celebrity anecdotes, and a fascinating personal story.
Voice of the new Buffalo Right Here, Right Now: The Buffalo Anthology (Belt Publishing, 2016) is edited by Jody K. Biehl, who says in her introduction, “We’ve put together an original, kaleidoscopic view of the city, which includes recollections and images

by close to seventy authors and artists. This book will help us think about where Buffalo is today, where it’s been, and where it’s going next. It’s packed with love for Buffalo—and with worries. We love Buffalo’s new energy, but we worry about gentrification and inequality, about bad water, bad sports teams, and bad planning. We laugh with comedian Mark Russell as he recalls beer deliveries to Jesuit priests in the 1940s and with David J. Hill as he goes to his first meat raffle in 2013.” Biehl’s description says it all—there is really a wide, diverse, and talented range of Buffalo voices here. It makes good sense—kids won’t be overrun with presents they’ll barely glance at, and the gift buyers will save time and money while choosing more thoughtful items for the young people in their lives. Exhibit this summer, you’ll know how fun it is to make stuff out of cardboard boxes. A new crop of cookbooks By Elizabeth Licata
E
very year, dozens of cookbooks are released. Some are simply practical collections of recipes to help busy home cooks get it done, but many go beyond this to espouse and explain philosophies of cooking and food. Others pinpoint unique moments in food culture and history. Even in busy times, sometimes it’s fun to find a few moments to page through a cookbook—whether the recipes end up being made or not. Here are a few topical choices that make great gifts. Home Cooked, by Anya Fernald with Jessica Battilana (Ten Spree Press, 2016) A book that has the words “a new way to cook” on the cover needs to deliver. According to no less a judge than Mario Batali, this one does; in fact he says, “If there is one book you buy this year, let it be Home Cooked.” A cofounder of Belcampo, an organization that supports sustainable agriculture,

Fernald is dedicated to the idea of delicious, seasonal, and not-too-complicated food. The book starts out with series of base recipes or “building blocks� that can be made in advance and used in the recipes for snacks, soup, pasta, meat, fish, desserts, and drinks that follow. These base recipes include such flavor builders as bone brother, cultured butter, chimichurri, canned tomatoes, and more. In between recipes, Fernald shares her wisdom on such topics as cooking with cast iron, balancing acid and salt, steak cookery, and more. Many of the recipes have just two or three components, focusing instead on quality ingredients and innovative techniques, such as her irresistible-sounding Asado Potatoes, which employs a cast iron pan to make thinly sliced, buttery, crispy potatoes or a fennel and black pepper-crusted pork loin that really depends on sourcing goodquality heritage meat.

Against All Grain Celebrations, by Danielle Walker (Ten Speed Press, 2016) After a diagnosis of ulcerative colitis, Danielle Walker adopted a Paleo diet (no grains, legumes, dairy, or processed food) and was able—against all medical advice—to defeat her symptoms. This is the third cookbook she’s written based on that experience; in it, she has recreated—using the Paleo model—traditional special occasion dishes she’s always loved. By employing such ingredients as nut butters, nut milks, gelatin, ghee, and other substitutes, Walker is able to reinvent a wide variety of dishes, including traditional Thanksgiving complete with green been casserole, bacon sweet potatoes, roasted garlic mashed cauliflower, and maple pumpkin pie.

Flavorwalla, by Floyd Cardoz (Artisan, 2016) The title means “the person who brings the flavor.” It’s written by a four-time James Beard Award nominee and a winner of Top Chef Masters who has opened the New York City restaurants Tabla, North End Grill, and Paowalla. A native of Bombay, Floyd Cardoz is known for creating bold, exciting flavors utilizing a global, but accessible pal-
ate. With this book, Cardoz provides ways for busy home cooks to achieve those exciting flavors in the family kitchen. Recipes are arranged by occasion (weeknight meals, game time, summer cooking) rather than by type of food, and there are plenty of helpful notes on ingredients, tools, and techniques. 2016 | Holiday Shopping Guide 101
L.A.’s Legendary Restaurants, by George Geary (Santa Monica Press, 2016) There are plenty of recipes in this, but readers will be far more drawn to the vintage photographs and gossipy anecdotes about such iconic Hollywood eateries as The Brown Derby, Schwab’s Pharmacy, Don the Beachcomber, Romanoff’s, and many, many others. Nonetheless, the recipes are interesting; they include Florentine Garden’s meatballs (three types of ground meat), Cyrano’s vichyssoise (with a whisk of mascarpone), and Chasen’s famous carrot soufflé, which wowed such famous diners as Jimmy Stewart (shown at a Chasen’s banquette with Mickey Rooney, Judy Garland, and others in the book). Holiday baking a family tradition to cherish By Nina Barone
I
t’s time to turn on the oven, line the counters with ingredients and mixing bowls, don aprons, roll up our sleeves and get to work. When the weather turns chilly and snowy, it means the winter holiday season is on its way, and in my family, that cues late night baking sessions. It is laborious when you make more than 1,000 cookies in a couple weeks, but it is a pastime that has been handed down from my grandmother to my mother and to me. I wouldn’t trade the fun for anything. The Christmas cookies we make are shared with our family, friends, neighbors, colleagues and more throughout the holiday season. From one generation to the next, each family has at least one recipe that the entire crew craves — and hopefully someone has learned to make it in order to keep the tradition alive. In my family, there are about a dozen cookie recipes to know and attempt to master. They are largely Italian cookies, but we have tweaked classics and added recruits over the years. The cookies are part of fond memories, as they are in the scenery of so many cherished memories, and the act of making them is momentous each year. They are tied to each member of my family, as everyone has “their” cookie, which my grandma cleverly notes in her cookbook under each recipe’s title. To help you get on your way to baking delicious cookies and making happy memories this month, here are a couple popular cookie recipes from my family that are sure to be crowd pleasers with yours. One favorite features ricotta cheese in the cookie dough and a sweep of almond icing to coat the top. A fluffy, cake-like

cookie with a nutty hint, this Italian staple may become a favorite in your family or a sought-after addition to your cookie exchange. My mother, Debbie Cimino, passed this recipe to me after her mother, Connie Capuano, taught her how to make them, and we all still make them regularly to this day. In my 1979 Betty Crocker cookbook, I have a bookmark on the page containing the recipe for Russian teacakes, also known as Mexican or Italian wedding cakes. My family has made this rich and buttery treat with our annual Christmas cookies for years. We adapted the nuts to a blend of pecans and walnuts about 10 years ago and we’ve continued to make them that way ever since. When in doubt, a cookie is a great dessert to bring to any function, from office party to holiday open house. Cookies also make a wonderful and practical gift, particularly when creatively packaged. Baking cookies with loved ones is a fun custom to start at any time and age. Pull out your tried and true recipes, attempt some new ones, and make sure you’re having a blast while you do it. Russian teacakes Ingredients 1 cup butter, softened
Ricotta cheese cookies Ingredients 1 pound ricotta cheese
1 teaspoon vanilla extract
2 cups granulated sugar
1 teaspoon baking soda
2 sticks butter, softened
1 teaspoon salt
3 eggs
4 ¼ cups all-purpose flour
Preheat oven to 350 degrees. Cream together ricotta cheese, sugar, butter, eggs and vanilla. Add dry ingredients and mix until combined. Dough will be soft. Fill teaspoon with batter; drop batter on to trays at least 1 inch apart. Place in oven and bake for eight to 12 minutes.
½ cup powdered sugar 1 teaspoon vanilla 2 ¼ cups all-purpose flour
¾ cup finely chopped nuts – suggested: ½ pecans and ½ walnuts ¼ teaspoon salt Powdered sugar to dust
Heat oven to 400 degrees. Mix butter, ½ cup powdered sugar and the vanilla in large bowl. Stir in flour, nuts, and salt until dough holds together. Shape dough into 1-inch balls. Place about 1 inch apart on ungreased cookie sheet. Bake 10 to 12 minutes or until set, but not yet brown. Remove from cookie sheet; cool slightly on wire rack. Roll warm cookies in powdered sugar; cool on wire rack. Roll in powdered sugar again.
Remove and allow to cool on wire racks; ensure they are completely cool before icing. While cookies are cooling, make icing.
Almond-flavored icing Ingredients 2 cups powdered sugar
3 tablespoons milk
1 tablespoon butter, melted 1 teaspoon almond extract Stir all ingredients together vigorously. Add a bit more milk or sugar, if needed, to thicken or loosen to your liking. Frost each cookie. While still wet, add rainbow nonpareils to the top. Notes: It’s normal for this cookie dough to be soft and a bit sticky. Hot buttered rum By Donny Kutzbach
T
he snow is falling. The winds are whipping bitter temps against the cheeks. Get inside to where the fireplace is crackling, pull off the parka, rip off those cumbersome mittens, and kick off those ice-caked boots. ’Tis the season for a mug of rich, hot, soul-warming cheer— and yeah, by that we mean booze. Anything that you can add hot water or steamed milk to is fair game. Teas and ciders are also welcome additions when warmed and added to liquor. Proof of all this can be found in the hundred (if not more) variants on the hot toddy. Sometimes, the caffeine and whiskey spike of an Irish coffee seems almost necessary to get through some of the longest, cruelest hours of winter. There is also the beauty of a nice mulled wine, or a Scandinavian glögg, or the frothy, eggy, sweet holiday season grandeur of a Tom & Jerry. The daddy of them all, however, might be the hot buttered rum. Believed to date back to the mid-seventeenth century and born out of colonial American innovation, hot buttered rum is a relatively simple but sumptuous warm drink that can make even the winter doldrums seem a bit more tolerable. In New England, a good hundred years before the American Revolution, molasses was making its way in via trade routes from the Caribbean. And while rum is one of the most obvious Caribbean exports, readers might not realize that it was also being produced in places like Rhode Island, Maine, and Massachusetts. With readily available ingredients and cold New England winters, it all came together: hot water, booze, sugar, and a melting slab of butter swirled in a mug. Flash forward four centuries and this longtime New England favorite had made a name for itself globally. By the mid-twentieth century—bolstered by the drink’s popularity with the booming tiki craze—hot buttered rum was a serious phenomenon, spawning a dizzying variety of recipes. If one were to scale it back to the basics, it’s likely the earliest recipe (of which there is no official record) would

have been an ounce or two of rum, a spoonful of molasses or sugar, a pat of butter, and hot water. That’s not a bad spot to start. But through the centuries, spices have been added to the mix. Most common are cinnamon and allspice. Nutmeg and clove are also pretty typical additions. Some recipes use hot cider or apple juice in place of the water. Others add citrus elements like lemon and orange, while some adherents abhor the idea of any kind of fruit in hot buttered rum. Among many recipes he has unearthed, tiki drink archaeologist, author, and owner/proprietor of New Orleans’s Latitude 29, Jeff “Beachbum” Berry brought to light a spartan and delicious hot buttered rum (circa 1950) from Chicago’s long gone Pub and Prow. It consists of Jamaican rum, crème de cacao, hot water, a pat of butter, and no sugar. An interesting riff we found in our home library was in Playboy’s Host and Bar Book—a swinging artifact originally published in 1955 and reprinted almost annually well into the 1970s. In Playboy’s hot buttered rum (as served at the Lake Geneva Playboy Club-Hotel), a half-ounce of maraschino liqueur, lemon juice, and nutmeg are added. Noted cocktail and spirit writer/historian Wayne Curtis
might have the best method of all. He batches drink-ready batter in a quantity large enough to get you through a long, cold winter. Curtis, a regular contributor to Imbibe magazine and contributing editor at the Atlantic, is something of a grand poobah of rum. As author of 2006’s And a Bottle of Rum: A History of the New World in Ten Cocktails, he first proffered his recipe for the hot buttered rum that he says was passed around in his wife’s family for a few generations. At the heart of Curtis’ recipe is a magnificent batter that is meant to be prepared in advance and can be stored all winter. It’s our personal favorite, and, with some personal specifications and minor tweaks (like adding the Chinese Five Spice for peppery heat to complement and balance the batter’s sweetness), we think it’s tough to top. As with any cocktail preparation, we are of the opinion that the better the quality of ingredients, the better the drink. Since hot buttered rum is a drink without a concrete origin or original recipe, it’s definitely one that is open to your own interpretation, so have fun with it. *Hot Buttered Rum Batter
Variation on a recipe from Wayne Curtis’s And a Bottle of Rum: A History of the New World in Ten Cocktails
Ingredients
½ tsp ground nutmeg
1 lb salted butter, room temperature
1 tsp pure vanilla extract (or two)
1 lb brown sugar
vanilla beans, cut and scraped
1 lb raw sugar
1 qt high-quality vanilla ice cream, softened slightly
Ingredients 1½ oz quality dark rum (Meyer’s, Lemon Hart, El Dorado, or Cruzan recommended)
1 tbsp hot buttered rum batter*, frozen boiling water
2 tbsp Chinese Five Spice

Add the rum and batter to a mug. Top with boiling water and stir until batter melts and creamy head appears.
Add all the ingredients except the ice cream to a bowl and stir to combine. Add the softened ice cream and stir again. Place in a container with a tight lid, seal and store in the freezer for up to a season. 2016 | Holiday Shopping Guide 119

elieve it or not, gardening can be an intensely political act. Awareness of this is increasing as more garden writers take up issues of biodiversity, ecological landscape design, chemical use, pollinator survival, and more. In a political year, it also seems relevant to look at how commanderin-chief translates to gardener-in-chief. Garden Revolution by Larry Weaner and Thomas Christopher (Timber, 2016) Planting in a Post-Wild World by Thomas Rainer and Claudia West (Timber, 2015) Once all of Western New York was part of the great eastern deciduous forest, a swath of trees that stretched from northern New England to central Florida. This vast ecosystem has changed dramatically over the years as fires, logging, agricultural, and urban expansion have obliterated much of the wooded area. However, as we can easily see by visiting such magnificent protected areas such as Allegany State Park and Letchworth State Park, vast and beautiful areas of forest remain, protecting countless plant and animal species.

Two recent books from Timber Press gardeners to look to the wild—whether it be a spontaneous meadow in the middle of an untended vacant lot or the densely covered ground beneath the nearby tree canopies of Tifft and Reinstein Woods preserves. In Planting in a Post-Wild World, Rainer and West encourage gardeners to take inspiration from wild areas, observing the plants that thrive, providing structure, texture, and color. The authors do not insist on native plants; rather, they look to wild woodlands and grasslands—or even an overgrown lawn— as inspirational starting points that can help gardeners understand how plants work together. Naturally occurring plant communities provide ideas for putting together a design of native or non-native structural plants, seasonal perennials, and ground covers. For example, to change a suburban lawn into something suggesting a woodland edge (the desired archetype), the authors recommend a spine of tall shrubs, then a layered mix of perennials and ferns, followed by a low foreground of colorful perennials. The book is filled with technical advice, diagrams, and photographs showing wild archetypes and the garden designs they have inspired.
Garden Revolution has very similar lessons to offer, with important differences. The authors are not asking that gardeners attempt to reinterpret wild archetypes; they simply point out that gardeners can learn how to better manage the gardens they have by using the lessons of the wild to make their own properties more ecologically friendly and easier to maintain. Weaner and Christopher recommend the use of native plants as a way to reinforce natural habitats, as long as their moisture and other needs are compatible with the landscape at hand. The authors also have no problem with mixing natives with exotic species, as long as it is acknowledged that natives are more useful to local pollinators and wildlife. They stress using dense layers of plants at the ground level to discourage weeds, rather than pulling weeds out by the roots, which can encourage weed growth by disturbing the soil. They also reject deep digging and the overuse of amendments, stressing that gardeners should use plants that thrive in existing soil and that storebought fertilizer/topsoil amendments can create a perfect habitat for virtually every kind of weed. Refreshingly, Weaner and Christopher encourage gardeners to accept plant demise as a natural cycle that keeps the evolving garden fresh and interesting. There’s more to it; learning and adapting nature’s patterns for domestic use takes ob-

servation and planning, just like any gardening, but in the long run, this process will lead to less maintenance and more joy. Like Planting in a Post-Wild World, Garden Revolution is filled with examples, diagrams, lists of plants, and—as always with any Timber title—gorgeous photography. All the President’s Gardens by Marta McDowell (Timber, 2016) George Washington was obsessed with collecting trees, Lincoln kept goats, Ike had a putting green, Kennedy loved roses, and, as we know, Michele Obama is all about growing food. This exhaustively researched history of how the White House grounds have changed over time is filled with fascinating anecdotes, archival documents, beautiful photography, and no hint of partisanship. It’s also the easiest way to get a sense of the presidential gardens, which are only open to the 2016 | Holiday Shopping Guide 135

It almost seems wicked to recommend this as a coloring book, because the drawings by Briony Morrow-Cribbs are beautiful just as printed, in black and white. But if the home artist emulates the coloring job started on the cover, they should achieve creditable results. Amy Stewart’s Wicked Plants (2009) is one of the first and most popular garden titles where plants become eccentric characters in a world of incredible but true natural history. A copy of the original Wicked Plants and this companion coloring book are great gifts for anyone who enjoys discovery for its own sake.
