No matter where in the world you’re from, bringing family and friends together is central to the year-end ritual. And for high-summer Aussie celebrations, it’s unsurprising that much of the action takes place outdoors. Setting a table on a verandah, a patio or a shady lawn, filling plates with aromatic offerings straight from the barbecue and enjoying the antics of kids and pets is all part of the fun.
You’ll find plenty of ideas in this issue to shape your gathering, from cheerful DIY decorating to craft projects for the kids. It makes perfect sense to take some heat out of the kitchen and our festive BBQ buffet will wow all – from delicious cheesy buns to the hero turkey roulade recipe and grilled accompaniments. For dessert, we’re advocating a pavlova topped with summer fruit. The surprise twist? You can bake the pav base on the barbie ahead of time (from page 81).
It pays to keep things simple at this time of year, and one of the easiest ways to bring a festive flavour to your home is to harness the natural beauty of plants. From page 32 you’ll find 10 lovely, garden-led ways to sprinkle joy from outdoors in, including living Christmas trees, a cheery window box and native foliage centrepieces for the table. A garden theme also delivers for those tricky-to-buy-for people on the gift list. From a simple potted herb to a showy seasonal plant, a living gift is always gratefully received. CLEANING HACK
Power polish
Try this way to clean tarnished silverware. Line a big shallow dish with aluminium foil and add silverware, ensuring it makes contact with the foil. Cover with boiling water and evenly sprinkle over two tablespoons of bicarbonate of soda. Leave to soak for a few minutes – the tarnish will react with the aluminium and lift off. Carefully remove the silverware and dry with a soft lint-free cloth.

IN THE GARDEN December
Light up, plant up and feed up to kick off the summer season
Add a twinkle to your garden and outdoor seating areas with solar lights. Wrap fairy lights around structures or trees, or festoon them along the fence to create a warm and inviting ambience.
Create a rustic planter by upcycling an old wheelbarrow, watering can or wooden crate. Add drainage holes, fill with quality potting mix and plant with colourful annuals, such as salvias, petunias, marigolds and calibrachoas.
Cover fruit trees with wildlife-friendly netting to deter birds, possums, rodents and other invaders. Ensure the netting is securely fastened to prevent pests from getting in.
Top up mulch on vegie patches and ornamental beds to help retain moisture, suppress weeds and keep the soil cool. Consider installing a temporary shade structure to protect just planted or newly established plants from scorching heat.
After applying fertiliser near edible plants, delay harvesting for a few days and rinse well before cooking and eating. If using products to deal with pests, diseases or weeds, or when handling compost or mulch, read the label, follow instructions and wear gloves, a mask and protective gear. Always store all garden chemicals and products out of reach of children and pets.

Team members live the DIY dream!
There’s nothing quite like a handmade gift. And when you have the skills and the tools to bring creative ideas to life, everyone benefits. Bunnings team member Robert, a horticultural expert, loves tinkering in his workshop, and at year end his nearest and dearest are the happy recipients of his endeavours – like these turned wood ornaments. “I make these from whatever scrap timber I have lying around,” says Robert. “I particularly like using pine (Pinus radiata), as it’s commonly used for Christmas trees. I use a lathe, so turning each ‘tree’

only takes a few minutes, but the sanding and finishing – with a sanding sealer first and then a wax – takes just as long.” Each tree has a flat base, perfect for sitting on a shelf or sill, and its own shape and characteristics. How long have you been caring for your plant? Since 2016. Where did you get it? Bunnings Alexandria. Where does it live? In a self-watering 120cm x 60cm x 46cm trough on heavy-duty pot trolleys so I can move it about my balcony, making it easier to access the fruit and sweep up leaves.
Best feature: The delicious fruit! Shop-bought berries can’t hold a candle to these homegrown ones which are much more crisp, tart and flavourful. It’s so cool when I can share a big crop with my mum and friends. Care routine: Weekly watering, more in summer, and a dose of Seasol tonic every three to six months.
Secret hack: It’s important to get the soil right before planting blueberries. I’ve found half-and-half pine bark and premium gardenia/azalea potting mix works well. Something that may surprise people about blueberries: Originally from North America, they are a favourite food of black bears, who can consume up to 30,000 berries a day! ●

CRAFT FOR KIDS
Keep young minds and hands occupied while lunch is cooking by tasking them with child-friendly festive craft. Little ones will love painting and decorating decals, and threading beads on twine in creative combinations to hang on the tree, but make sure there’s a grown-up to supervise them. Tip: Artificial tree designs pop up and pack down in a flash for easy storage, while a live tree can smell as lovely as it looks. Select one from the garden centre and keep it well hydrated during its time indoors. You can shift it outside until next year, or plant it in the garden and trim with lights.

Decorating for Christmas is a fun way to draw kids into the magic and the moment, plus build fine motor skills and lasting memories. First, head in store to pick up off-the shelf supplies that can easily be turned into tree ornaments and decorations, then cover a table with brown paper ready for crafting. The rest is up to the imagination!
HANGING ORNAMENTS
■ Simple timber decorations pop against a deep-green Christmas tree, and can be strung and hung in a flash.
Wooden macramé beads, rings, novelty shapes – and even alphabet letters – all work well for these timeless tree trimmings. String them on twine, add burlap ties and hang with twine.

MINI CARDBOARD TREES
■ The kids will love collecting flowers from the garden or park to fill in their cutout trees.
Cut tree shapes from scrap cardboard and stamp with gold-painted foliage fronds, or re-use the cardboard from our tablecloth project on page 86. Use a skewer to poke holes big enough to stick flower stems through and use a dab of glue on the back to hold in place. Tip: Make a hole in the top and loop string through to turn them into hanging ornaments.
DOORKNOB DECO
■ A DIY hanging ornament will make everyone smile as they pass by. Tie or thread sweet combinations onto a length of cord and loop over a door handle.
Drill a small hanging hole on a round and starshaped MDF coaster (this is a job for grown-ups only!) then give them a coat or two of white paint. Paint wooden craft shapes in festive red and green and, once dry, stick to the coasters with PVA glue. Cut a long length of striped cord, knot a loop at one end to make a hanger then thread the tail through the coasters and tie off, adding wooden beads as you go and finishing with a twine tassel.

Lots of dogs love water, some maybe more than their humans. But it’s important to take a few precautions to ensure your dog can continue to play in the shallows for many summers to come.
● We don’t drink salt water and neither should your dog. A little bit may cause symptoms including excessive thirst, vomiting and diarrhoea. A lot can be fatal. Make sure you rinse your dog with clean, fresh water after a beach visit so they don’t ingest extra salt when they lick their fur.
● Keep an eye on what your dog is doing. There can often be hazardous objects such as fish hooks and stinging creatures on the shoreline.
● Not all dogs are built for swimming. Chunky dogs with short legs tend to have problems floating, dogs with long, flappy ears are prone to ear infections from trapped water, and dogs with short snouts and flat faces may have problems breathing.
Sprinkle of spice
What is it about catnip that makes cats go crazy? Pet food manufacturer Purina gives us the lowdown.
Catnip is a perennial herb from the same family as peppermint and spearmint and its main ingredient is nepetalactone. This stimulates certain brain chemicals related to mood and happiness.
It’s estimated that half to two-thirds of adult cats will react to catnip, but how it affects them varies. Some cats may become hyperactive, while some might be extra chilled. But whatever the effect, it usually wears off after about 15 minutes. Catnip also has health benefits; it can encourage a lazy cat to play and reduce stress for anxious cats.

Pet adoption can bring extra joy at Christmas time but do your homework before you commit
There are many benefits to adopting a pet from an animal shelter. Foremost, you’re giving an animal a second chance for a happy life in a loving home. But it can also be a practical choice – adopting an adult dog allows you to skip the chaotic puppy stage, plus you can be more confident about their size and temperament. Senior dogs can be a great fit for someone with a less active lifestyle and still give years of joy. Also, shelter dogs all come desexed, microchipped and health checked.
A PET IS FOR LIFE
Many dogs are surrendered to shelters because their owners didn’t have time for them, so consider whether you can give a dog up to 20 years of love and care. Suzana Talevski of The Lost Dogs’ Home says while owning an animal can be a great experience, pet adoption is not a decision to be taken lightly. “Before you adopt a pet, ensure that you’ve thought carefully
about what pet ownership entails and whether you can meet an animal’s physical and mental needs,” she says. Consider how much time you’ll be able to spend with your dog and how it might cope with existing pets and kids. Also look at how well equipped your home is, including dog-proof fencing.
PERFECT MATCH
Shelter staff will help you find the right match for your lifestyle. Be prepared to ask the hard questions and carefully consider the answers – don’t be seduced by puppy-dog eyes. Ask how the dog ended up at the shelter and think about whether this will be an issue for you. Shelter staff will also alert you to any medical or behavioural issues that need to be addressed, as well as the dog’s likes and dislikes.
HOME TIME!
Then comes the exciting part: taking your new family member home. “When collecting your pet, it’s important you
head straight home and do not make any stops,” warns Suzana. “Your new pet is likely to be feeling overwhelmed, and you don’t want to exacerbate their stress by stopping at the pet store or visiting friends or family.”
For the first few days, she advises keeping life quiet as your pet settles into their new home. It can be at least a few weeks, maybe even months, before your dog starts to relax in their new surroundings. “Give your pet plenty of enrichment, such as treat puzzles, to help build a positive association with their new home,” suggests Suzana. Enrichment activities can also help settle exuberant or active dogs. “This can be a scary time for a pet, and also an exciting one, so loads of patience and tolerance will go a long way towards a successful new friendship,” she says.

A healthy, homemade cool treat can help your dog or cat beat the heat
Next time you reach for an iceblock on a hot day, do a quick check to see how your furry friends are faring. Frozen treats can be quite effective in helping to cool down dogs and cats during hot weather, advises vet Dr Clarissa Herbst of Animal Emergency Service. “Consuming something cold can be a refreshing way to help regulate their body temperature,” she says.
TREAT IDEAS FOR DOGS
Chicken lickin’: Make ice cubes from low-sodium chicken broth.
Dog ‘ice cream’: Blend banana with peanut butter (make sure it doesn’t contain xylitol) and freeze in moulds.
Juicy fruit: Freeze bite-size pieces of dog-friendly fruit (such as blueberries, apple and occasionally watermelon). First remove seeds, stems, pits and rind.
TREAT IDEAS FOR CATS
Fishy freeze: Give kitty something refreshing to lick by making ice cubes from either plain or tuna water. For a more substantial fishy snack, create ‘cat popsicles’ from a blend of canned tuna in water (not oil). Cool change: Mix some water with your cat’s usual wet food, divide into portions and freeze.
IT’S COOL TO BE SAFE
Ensure pet treats are safe by avoiding excess salt and toxic ingredients like chocolate and xylitol (a common sweetener). Some fruits are toxic to dogs: never feed them grapes, cherries, citrus, avocados or tomatoes, and limit high-sugar fruits such as banana.
To avoid a choking hazard, make sure the treat is a manageable size (bigger is better), especially for smaller pets. “Remember, too, that while frozen treats can provide temporary relief, always make sure your pets have access to shaded areas and cool water, and avoid excessive outdoor activity during peak heat,” Dr Clarissa says.
FUSS-FREE FROZEN FUN
Turn some of your pet’s normal dry food, such as kibble or storebought treats, into a frozen lick bowl by mixing a handful with water and freezing in a large mould. ●

Bunnings Workshop community member Cheryl (@ourcountrycoast), a cabinet designer and maker, and her husband Gilbert overhauled the exterior of their modern Melbourne project house, after moving into the new build in December 2021. In a labour of love they landscaped the property, added a pool, built a deck and installed an outdoor kitchen.
FROM THE GROUND UP
Motivated to add layers of interest, personality and a coastal feel inside and out, Cheryl and Gilbert devoted every weekend for an entire year to home and garden improvements – with their little offsider, son Cedric, in tow. After a staggering quote to get their block landscaped, the pair decided to give it a go themselves. They laid paving and synthetic turf, formed concrete niche arches and built integrated outdoor seating and furniture.
A standout addition is the outdoor kitchen which they worked on for a month, building the barbecue area using materials from Bunnings, including moulding for the cabinet doors which was a cost-effective alternative to fluted panels. “I wanted something I hadn’t seen before, so I dreamt up

a plan, sketched it and Gilbert and I worked out how we’d execute it,” explains Cheryl. “I really love that the doors are seamless and the space has a unique look.”
Outdoor walls and fences were clad with James Hardie Linea weatherboard and given several coats of Taubmans Sunproof low sheen paint in untinted white base. “I used white so much around the house, it was just right,” says Cheryl. Clever concepts also include an outdoor shower made from copper piping and a pool-cover box clad in timber battens, which doubles as a seat. The box is one of Cheryl’s proudest DIY achievements, as it involved plenty of problem solving and precision execution – balancing the weight of the lid with the right struts was essential.
AN ALFRESCO AFFAIR
Looking around their home, Cheryl and Gilbert get incredible satisfaction knowing their creativity and hard work has not only enhanced functionality, but also given the place a distinctive touch. Come the weekend, their efforts well and truly pay off, when they can simply put their feet up and make the most of their alfresco area, which doubles as an outdoor cinema with movies projected onto a rendered wall. “Watching a Friday night movie under the open sky is something quite magical!” says Cheryl. “It’s Cedric’s favourite part of the week, and he’ll often set up the lounges and bring blankets and pillows to make sure we’ll be comfortable to stay there for a few hours.”

The prospect of guests is great motivation to get your place in shape. Whether you have friends staying for a couple of nights or family coming for an extended holiday, you probably want to zhoosh up key areas and add a few thoughtful touches. Here’s a checklist of ways to make your guests feel comfortable and warmly welcomed.
DECLUTTER AND CLEAN
Look at your home with new eyes and assess which areas need attention. Consider hiring a deep-cleaning machine (see bunnings.com.au/products/hire-shop‡) to freshen up carpets and sofas, then blitz all outdoor entertaining areas, give the barbecue a once-over and polish windows. Decluttering will also dramatically enhance your home’s appeal and add to the feeling of space.
GLOW UP THE GUESTROOM
Spruce up the guestroom and get creative with styling. Interior decorator Lauren Keenan (laurenkeenan.com.au) says new or freshly washed bedding and pillows are a must, while a room spray can infuse a lovely fresh scent. Guest accommodation host Sami Muirhead recommends

raiding the garden for flowers and greenery. “I pop sprigs of fresh rosemary on guests’ pillows, fill vases with foliage and, for a fun, inexpensive touch, I ‘chocolate bomb’ the bed with individually wrapped chocolates,” she says.
For a quick guestroom update, add a floating shelf layered with sculptural objects, try your hand at a DIY canvas artwork or frame an enlarged favourite photo. New bedside lamps can enhance the mood of the room – but make sure they provide sufficient light for reading.
Consider your visitors’ storage needs, too. Allocating space to stow bags and hang clothes is a practical way to help guests settle in, says Lauren. “Add a portable clothes rail or set of drawers and show guests where they can put things, whether it’s under-bed space for their suitcase, or particular drawers,” she suggests. Sami says she often leaves a laundry basket in the guestroom for visitors to throw shoes and extra clothing into. “I also find chairs double as a handy surface for holding books, devices and handbags,” she adds.
KEEP IT COOL
“A ceiling fan is a great investment and once installed is very economical to run,” says Lauren. Alternatively, place a pedestal fan in the corner of the guestroom to help circulate air. Lauren also recommends considering the aspect of the room. “As the sun rises early in summer, a useful addition may be an off-the-shelf blockout blind you can install yourself, so the room is conducive to sleep-ins.”
LITTLE EXTRAS
Provide guests with important information about your home. “The wi-fi password and log-ins for streaming services are often the first questions people have,” says Lauren. “If you have pets, specify which doors need to be kept closed.” Also include tips for various remotes and features unique to your home – and when to put the bins out if you won’t be there.

BEAUTIFY THE BATHROOM
Devote time to a deep bathroom clean, ensuring the vanity is cleared of clutter. A nice touch is to add a tray where visitors can sit their toiletries bag, alongside a beautiful pump soap and scented candle. Restock essentials such as shower gel, shampoo, toilet paper and tissues, and ensure there’s a bin and hair dryer. Lauren Keenan suggests providing plenty of soft towels – and installing hooks to hang them on. “If there are small children, it’s nice to offer a few water toys to make bath time more fun,” she adds.
MAKE ENTRY EASY
If you and your visitors will be in and out at different times, provide independent access and lockability. “We have a key drop-box and we text our guests the box code, so they can access the keys and come and go as they please,” says Sami Muirhead. Another convenient option for family and visitors is to have a keyless door lock system installed.
ADD SPECIAL TOUCHES
Evoke a holiday vibe by treating guests to little luxuries. Consider setting up a tea, coffee and water station with gourmet biscuits and fruit so visitors can easily access light
refreshments. For an extra-special touch, Sami likes to leave a little welcome gift on the bed such as a new face washer, slippers or toothbrush, along with a handwritten note. “It doesn’t need to cost a lot, it’s the thought that’s gone into the gift,” she says. “Gardening guru Costa Georgiadis once gave me a wonderful tip, which is to buy a secondhand book for each guest matched to their interests, and it’s something I’ve done for many years. It’s so personal and makes a beautiful keepsake.”
PREP FOR LAUNDRY
If guests are staying for several days there’s likely to be a few more loads of washing to do. Pop a laundry bag (a clean pillowcase is fine) or basket in the guestroom so they can separate clean and worn clothing. If you’re not going to be around, check there’s enough washing powder/liquid and stain remover in the laundry. ”It’s also helpful to have instructions on how to use the washing machine,” says Lauren. Include how much detergent to use, the quickest cycle and any safety-lock time delay details. Replace rusty, cracked or grubby old pegs with clean ones and, if there’s enough room, place a clothes rack and a few plastic coathangers in the guestroom for airing clothes. ●

Here’s the sizzle on the latest barbecue trends, plus how to pick a model that best suits your needs

rom the Bunnings sausage sizzle to grilled prawns on Christmas Day, the barbecue is as much a symbol of the national identity as it is a cooking device, with two thirds of Australian households owning one (up to three quarters in some areas)*. But although the backyard barbie is fixed in our hearts, we’re always open to new grilling ideas. We’ve looked at what’s hot in cooking techniques and flavours this summer, and how you can get your tongs on the trends.
HOT OFF THE GRILL
While a tender steak, seared with perfect grill marks, will never go out of fashion, we’re seeing barbecue enthusiasts experimenting with a range of alfresco cooking styles that are taking the backyard barbie to a whole new level. The griddle (flat-top or teppanyaki style) barbecue is a growing trend, loved for its large cooking area and easy-clean steel surface, and ideal for cooking small things such as diced vegetables, prawns, eggs and, of course, onions.
Smokers continue to be loved for their richly flavoured and meltingly tender results. They have also driven the rise of the two-barbecue household – a basic grill for weekday dinners, with a smoker for entertaining on weekends.
The evolution of the pizza oven has made it a must-have for many families. Bunnings barbecue buyer David Hardie says the modern, smaller models have proven a game changer, especially for those with limited space. “They’re more compact, have a very quick cooking time and are versatile, so can be used on a balcony or taken to a park, beach or on a camping trip,” he says.
Chef and co-owner of Firedoor restaurant Lennox Hastie sees us going back to basics, exploring cooking over an open flame. “There’s something about the way native woods such as ironbark or mallee burn that creates a unique flavour profile,” he says. Lennox also notes a trend towards ancient methods, such as cooking directly on the hot coals or wrapping foods in paperbark, seaweed or leaves before placing them in the fire. “These go back to indigenous practices and connect us to the land in a more meaningful way.”
FLAVOUR SAVIOURS
When it comes to exposure to different flavours and international cuisines, Australians are spoilt for choice – it was only a matter of time before our culinary curiosity extended to the barbecue. “We’re seeing a shift towards deeper, more complex flavours in barbecue, influenced by international techniques and old-school traditions,” says Lennox. “Recently, I’ve noticed a growing interest in the use of fermented products such as miso and koji in marinades or sauces. These elements add layers of umami that further enhance the deep richness from the grill. Then there is the punchy brightness of Japanese yuzu kosho, Middle Eastern spices like sumac and Korean cheong and kimchi, balancing out the smoky flavours of the fire. There is also the rise of native ingredients, such as wattleseed, desert limes and saltbush, grounding the flavours in something distinctly Australian.”
Plant-based barbecue foods are also on the rise – and we’re not just talking about the token vegie patty. “Fire gives vegetables a depth and complexity that’s often overlooked. You are seeing things like charred cabbage, smoky eggplant or fire-roasted cauliflower become central to a dish, treated with the same care and attention as a prime cut of meat,” says Lennox, who also champions grilling fruits. “They develop this wonderful smoky sweetness that’s just incredible.”

From compact grills to roomy outdoor kitchens, there’s an option to suit every space
Portable
Weight is the most important consideration here – look for one you can easily lift, ideally with a carry bag or handles, and don’t forget the gas bottle. You’re not limited to gas burners, though – portable barbecues can be charcoal-fired or, if you have access to mains power, even electric.
Balcony grill
Small spaces can still deliver an outdoor feast! If you’re limited to a balcony or small patio, opt for a slimline two-burner barbecue or even a tabletop model, which can be put in storage in the off season. Consider your neighbours and any strata restrictions as well – you might be allowed a gas barbecue but not a charcoal grill, or be restricted by an open-flame ordinance, in which case, an electric barbecue might be best.
Family barbie
With just a little more space, you can invest in a four- or six-burner barbecue, which easily caters for an average family, plus a few blow-ins. A hooded model holds in heat like an oven, so you can use it for slow-cooking, roasting and – with a compatible kit – rotisserie. Fuel is the other major consideration – gas and electric are quick and clean to use, while charcoal is messy and trickier to get the hang of, but gives you a uniquely smoky flavour.
Mega units
For the committed barbecue cook, an outdoor kitchen is the next logical step and ideal for feeding a crowd. Units can include everything, including the kitchen sink, plus bar fridges, cupboards, rangehoods and more. The generous bench space is a big perk, too, ideal as a prep space, a leaning space for mates or to set up a portable pizza oven or flat plate.
Pizza ovens
While they might once have required a big backyard and a permanent brick structure, domestic pizza ovens have come a long way. They now boast fast heating times, high temperatures and even heat, giving you restaurant-quality pizza at home. Fuel options include gas, electric and woodfired, while size-wise they range from compact but weighty iron or clay models, to lighter portable options.

Prosciutto-wrapped prawns with basil aioli
MAKES 20
n 4 garlic cloves, crushed
n 1 tbsp chopped parsley
n 2 tbsp olive oil
n 20 large green prawns, peeled, tails intact
n 100g thinly sliced prosciutto
BASIL AIOLI
n ½ cup aioli or whole egg mayonnaise
n 1 tbsp chopped basil, plus extra leaves to garnish
n 1 tbsp lemon juice
1 Combine the garlic, parsley and oil in a bowl. Add the prawns and stir to coat. Marinate overnight if time permits.
2 Preheat the barbecue to low. Cut prosciutto slices into approximately 10cm x 2cm strips. Wrap each prawn with a strip of prosciutto and secure with a toothpick.
3 To make the basil aioli, combine aioli, basil and lemon juice in a small bowl and mix until smooth.
4 Cook prawns on the preheated grill plate for about 10 minutes, turning halfway, or until cooked through.
5 Serve prawns with basil aioli, garnished with the extra basil leaves.
Beef sliders with pickled onions
MAKES 10
n 10 brioche slider buns
n Olive oil, for greasing
n 3 slices tasty cheese, quartered
n Garlic aioli, to serve
n 5 oakleaf lettuce leaves, washed, torn to fit buns
n Burger relish, to serve
n ½ cup bread and butter cucumbers, drained
PICKLED ONIONS
n 2 tbsp caster sugar
n ¼ cup boiling water
n ¼ cup white wine vinegar
n 2 small red onions, peeled, cut into very thin rings
BEEF PATTIES
n 500g beef mince
n 1 egg
n 1/3 cup dry breadcrumbs
n 1 tbsp Worcestershire sauce
n 2 tbsp tomato sauce
n 1½ tsp onion salt
n 2 garlic cloves, crushed
1 To make the pickled onions, dissolve the sugar in boiling water in a bowl. Add the vinegar and onion and stir to combine. Allow to stand for 1 hour.
2 To make the beef patties, combine all the ingredients in a large bowl. Divide into 10 portions (about ¼ cup each) and shape

into patties the same size as the buns.
3 Preheat the barbecue to medium-low. Split the buns in half and grill, cut side down, on the barbecue for 30 seconds or until lightly golden. Remove and set aside.
4 Grease the burger patties with olive oil. Cook on the preheated grill plate for 6-7 minutes each side or until cooked through. Put a quarter piece of cheese on top of each patty. Cover the barbecue with the lid until the cheese is just melted.
5 Spread 2 teaspoons of aioli on each bun base and top with a piece of lettuce and a burger patty. Top with burger relish, a bread and butter cucumber and drained pickled onions. Finish with a bun top and skewer to secure. Serve.
Smoky lamb and peach kebabs MAKES 8
n 1kg lamb leg, trimmed, cut into 3cm pieces
n 2 tbsp olive oil
n 2 garlic cloves, crushed
n 2 tbsp Texas-style smoky barbecue rub
n Finely grated zest of 1 lime
n 3 yellow peaches
n 1 bunch asparagus, trimmed
n ½ cup Greek yoghurt
n ½ cup sour cream
n 2 tsp chipotle sauce
n Lime wedges, to serve
1 Combine the lamb, one tablespoon of oil, garlic, rub and zest in a large bowl. Cut one peach into quarters, squeeze over the bowl until pureed, mix through the lamb, then discard the skins. Thread the lamb onto 8 skewers.
2 Preheat the barbecue to medium. Cut the remaining peaches into thick wedges. Drizzle the wedges and asparagus with the remaining oil. Add the wedges and asparagus to the barbecue and cook for 2 minutes each side until charred. Remove and set aside.
3 Add the lamb skewers to the barbecue. Cook for 10-12 minutes, turning skewers regularly, or until cooked through.
4 Whisk the yoghurt and sour cream in a bowl with a fork until smooth. Add the chipotle sauce and swirl through.
5 Serve the kebabs with the peaches, asparagus, yoghurt sauce and lime wedges.
Mediterranean vegetables with garlic and hummus SERVES 4–6
n 1 large eggplant, cut into 2.5cm cubes
n 2 large zucchini, cut into 1.5cm cubes
n 350g cauliflower, cut into 4cm florets
n 1 large red capsicum, seeded and cut into 1cm strips
n 1 large red onion, halved and cut into 1cm wedges
n 1/3 cup olive oil, plus extra for the pita bread and to serve
n 1 tbsp chopped rosemary
n 2 tsp chopped lemon thyme leaves
n 1 garlic clove, crushed
n 1 tsp ground sea salt
n 640g bag Greek pita bread (available at greengrocers and delis)
n 250g tub hummus
n 200g tub garlic dip
n 80g baby rocket leaves, rinsed and drained
n Sumac, for sprinkling (optional)
n 1/3 cup pomegranate arils (optional)
n Caramelised balsamic vinegar, to serve
1 Preheat the barbecue to medium. Place the eggplant, zucchini, cauliflower, capsicum and onion in a large heavybased roasting dish that will fit in your barbecue with the lid down. (You can also cook the vegetables on a lower heat on the flat hotplate in batches.)
2 Combine the oil, rosemary, lemon thyme, garlic and salt in a jug. Pour over the vegetables and toss until coated. Place
the dish on the barbecue, close the lid and cook for 30-35 minutes, stirring occasionally, until golden. Remove the pan and set aside to cool.
3 Brush the pita bread lightly with oil and barbecue for 1-2 minutes each side or until puffed and charred. Transfer to a plate, cut into wedges; cover with foil to keep warm.
4 Spread the hummus on a platter, then spread the garlic dip on top. Add the rocket to the vegetables and toss to combine. Arrange the vegetable mixture on top of the hummus and garlic dip, sprinkle with sumac and pomegranate (if using), then drizzle with the vinegar and extra oil. Serve with the pita wedges.
Tip: A flat top griddle offers quick and convenient cooking of smaller foods. A light coating that includes oil helps to prevent foods sticking to the surface. ●

The entertaining season is upon us! Before the party starts, cast your mind back a year and, if you spent the summer thinking, ‘If only we had more seating/some ambient light/decent shade protection’, now is the time to fill those gaps. We’ve figured out the entertaining essentials, from furniture to garden decor, so you can dive into the festive season well prepared.
CREATE CONVERSATION ZONES
A perfect party set-up allows people to flow freely between conversation ‘islands’. Bunnings national buyer for outdoor furniture Nathan Monk advises using furniture to create different zones. “Bar tables create a more casual social setting, as people can gather around without the need for chairs or a formal setting,” he says. “If you have a larger space, lounge settings – in particular corner/modular designs – are great to create a relaxed, welcoming space.” Don’t forget the barbecue zone either – people naturally congregate around the grill, so an adjacent table can do double duty as a prep space and leaner.
OUTDOOR TABLESCAPING
Give your outdoor table as much attention as an indoor setting to make an entertaining event feel like an occasion with these styling tips from Belle Hemming.
● “Start with a good oversized linen tablecloth.” This also helps to disguise mismatched furniture or trestle tables.
● “Add a centrepiece, such as a vase of flowers or foliage from the garden.” Another idea is to plant up a shallow bowl planter with flowers, to make a centrepiece that will last all season.
● Create an ambient lighting scheme. “Layer the centre of the table with battery candles of different heights.” Battery candles give you gentle illumination, without the fire risk.
● Indulge in pretty crockery.
“Don’t limit an outdoor table to plastic crockery. Instead bring out lovely stoneware plates and interesting platters, old and new. Stemless glasses may be a good idea for uneven areas.”

MAXIMISE SMALL SPACES
The summer season tends to stretch the limits of your home’s entertaining capacity, but you can fit more people into a smaller space with savvy furniture choices. “We have some amazing space-saving settings coming this season, including bistro settings with chairs that tuck under the table or settings that can be completely folded up and packed away,” says Nathan Monk. Dress tight spaces with narrow dining tables (like the Mimosa ‘Italica’ balcony table), bench seats or narrow, armless dining chairs. Think beyond the deck, too, by extending the party into the garden. Consider creating a relaxed set-up in a picturesque corner, with a picnic blanket, portable or beach umbrella, floor cushions and low side tables.
INDOOR COMFORT, OUTDOORS
Interior stylist Belle Hemming (thebellebrightproject.com.au) says you should think of an outdoor space like you do an indoor space, making sure there are layers of interest, good lighting and a comfort level that encourages guests to relax and unwind. Plump up patio furniture with outdoor cushions and throws, using this opportunity to introduce lively colour and texture – an outdoor storage box is a good idea, too, so you can pack it all away later.
To keep your guests happily lingering outside, protect them from the elements with umbrellas or shade cloths. A misting kit is another worthy investment – installed around the roofline, it forms a cooling barrier against the worst heat of the day.
DECORATIVE FLOURISHES
Turn your garden into a wonderland with layers of styling. Start with lighting – you don’t want your garden floodlit, but an ambient glow waves a little magic over the space. Thread solar fairy lights through trees, use spotlights to highlight garden features, and drape festoon lights over seating zones. Consider adding beautiful pots of greenery, too, choosing plants to suit the overall look, suggests Belle. Troughs and plants with a bit of height can also add privacy or divide a larger space into more intimate zones. ●

Planning to put on a light show this year? Here’s how to save time and streamline the process of giving your home a festive makeover. Safety is the main aim – no more wobbling on a chair to hang bunting or having cables snaking all over the place. These handy helpers also improve aesthetics by keeping everything neat and organised.
ON THE INSIDE
For indoor illuminations, such as fairy or string lights, it’s important to keep cables out of sight and organised to prevent trip hazards and for a seamless presentation. Use cable clips to secure cables around doorways or window frames and along skirting boards without damaging your walls. For bundling and securing cables discreetly, opt for cable ties. They are ideal for keeping cords neatly together and can be adjusted or cut to size as needed. To hang decorations such as banners, streamers or ornaments, use adhesive hooks and alligator clips.
Alligator clips are great for holding lightweight items, while adhesive hooks can support heavier decorations without leaving marks on your walls.
ON THE OUTSIDE
Outdoor lighting set-ups need to endure the elements while remaining securely in place, and double-headed cable ties are excellent for this purpose. Use them to attach cables for lighting (and decorations) to fences, poles and posts, or trees. Their durability and strength make them ideal for managing cables in challenging weather.
If your festive lights are plug-in rather than solar, you may need more outlets, which is where a powerboard comes in. Choose one with surge protection and, even if kept undercover, house it in a weatherproof enclosure box. For zhooshing up your alfresco zone or light landscaping in preparation for the party season, a weatherproof powerboard is particularly handy for outdoor/garden use.
For decorations, tape is a real time saver and terrific for securing larger items, such as wreaths or banners, to fences, walls, windows and other hard surfaces. For an invisible bond on glass, try moisture-resistant outdoor clear mounting tape. Exterior cloth masking tape lets you stick things to render, brick, wood and more. And when you need a really strong hold, go for a robust and weather-resistant duct tape that can even attach to stone.
IT’S HIGH TIME
Ladders are essential for safely setting up both indoor and outdoor decorations and lighting. For indoors, a stepladder is compact and easy to manoeuvre, providing a stable platform for various tasks. For outdoors, use a double-sided ladder or, for jobs that require greater reach, consider a dual-purpose ladder that can extend beyond 3m.

● Storing and reusing decorations and lights will save money and reduce rubbish.
● Stow tools and decorations in a cool, dry place to extend their lifespan. Prevent ladders and other metal tools from rusting by keeping them indoors or under cover, and consider applying a protective coat to metal parts.

■ Always use the right ladder for the job. Make sure it has non-slip feet and is set up on a flat, stable and solid surface. Wear sturdy footwear, maintain three points of contact (for example both feet and one hand) on it at all times and make sure another person is nearby in case you need assistance.

Pull-apart garlic, cheese and smoky capsicum rolls
SERVES 10
n 150g butter, chopped
n 4 garlic cloves, crushed
n ¼ cup chopped parsley
n 2 x 10-pack brioche slider buns (see tips)
n 200g Havarti cheese slices, quartered
SMOKY CAPSICUM DIP
n 2 large red capsicums
n ½ cup semi-dried tomatoes in oil
n ½ cup toasted slivered almonds
n ½ tsp smoked paprika
n 2 tbsp red wine vinegar
n 1 tbsp olive oil
n Sea-salt flakes and freshly ground black pepper, to season
1 To make the dip, cut the sides off the capsicums and discard the cores. Line a grill tray with foil. Put capsicum, skin-side up, on the prepared tray. Cook under your oven grill on high until skin blackens and blisters. Place capsicum on a sheet of foil and wrap up. Set aside for 15 minutes to cool.
2 Peel and discard blackened capsicum skins. Put capsicum and all other ingredients in a food processor. Process until smooth. Season and put in a small bowl (see tips).
3 Melt the butter in a jug in the microwave. Pour yellow clarified butter into a clean jug, discarding the milk solids at the base, and stir in the garlic and parsley.
4 Preheat the barbecue to 150°C (low). Place an upturned foil tray (see tips) on the hotplate. Cut brioche rolls in half horizontally. Spread bases with 2 teaspoons of capsicum dip. Top with two pieces of cheese, brush the cut sides of roll tops with
garlic butter and sandwich back together.
5 Line an oven tray with baking paper and place rolls up against each other on the prepared tray. Brush buns liberally with garlic butter and place the tray on top of the foil tray on the barbecue.
6 Close the barbecue lid and cook for 10 minutes until rolls darken and cheese melts. (Or bake in a 180°C fan-forced/ 200°C conventional oven for 10-15 minutes.) Transfer buns to a board, brush with garlic butter and serve hot as a starter or side.
Tips: Smoky capsicum dip can be made up to one week ahead and stored in a jar in the fridge. Brioche slider buns are available in major supermarkets in the bakery section. Jumbuck rectangular foil trays are available at Bunnings and can be used to cook the buns in as well. Use baking paper to lift buns out of the tray.

n 125g cream cheese, chopped

5 Decant dips into serving bowls. Top the hummus with dukkah and pistachios, and drizzle with the extra oil. Drain the pickled onion, put about two-thirds in a small serving bowl, top the salmon dip with the remaining and garnish with the extra dill. Arrange dips, bread, onions and vegetables on a platter or board.
Tips: The dips and pickled onion can be made up to 24 hours ahead. The ciabatta is best barbecued on the day of serving. You can also serve wafer crackers or crostini for dipping.
1 To make the candied pecans, preheat the oven to 200°C fan-forced/220°C conventional. Line an oven tray with baking paper and place the pecans on the prepared tray.
2 Warm the honey in the microwave for a few seconds. Drizzle honey, sugar and pepper over the pecans and stir until coated. Spread out in a single layer. Bake for 12 minutes until honey is bubbling, stirring halfway. Allow to cool completely on the tray before roughly chopping (see tips).
3 Lightly spray an oven tray with oil, then lay the prosciutto slices on the tray and spray lightly with oil. Bake in the same oven for 8-10 minutes until darkened and crispy. Allow to cool completely to crisp, then crumble into pieces.
4 To make the dressing, combine all the ingredients in a jug and season.
5 Put the kale and spinach leaves in a serving bowl. Add the pecorino and toss. Arrange the apple slices among the leaves. Top with the prosciutto and pecans, spoon half the dressing over and serve remaining dressing on the side.
Tips: Candied pecans can be made up to two days ahead and kept in a single layer in an airtight container. The dressing can be made up to three days ahead and stored in an airtight container in the fridge.

Turkey roulade
SERVES 6–8
n 2 tsp dried fennel seeds
n Sea-salt flakes
n 1 tbsp chopped sage leaves
n 2 tbsp chopped oregano leaves
n 2 tsp finely grated orange zest
n 2kg turkey breast fillet
n 2 tbsp olive oil
n 2 garlic cloves, crushed
n Freshly ground black pepper, to season
n 1½ tbsp cornflour
n 1½ cups chicken stock
1 Heat the fennel seeds in a small frying pan over a medium heat for about 2 minutes or until fragrant, then crush with a good pinch of salt using a mortar and pestle. Combine fennel mixture, sage, oregano and orange zest.
2 Put the turkey breast, skin-side down, on a clean surface and open out the tenderloin. Cut a deep pocket in the thickest part of the flesh to make a larger surface area. Rub 1 tablespoon of the oil and the garlic over the flesh, then season. Sprinkle the herb mixture in the pocket and between the tenderloin and breast.
3 Roll up the turkey firmly and tie at regular intervals with kitchen string to secure.
Place on a tray, then cover and refrigerate overnight. Remove the turkey from the fridge 30 minutes prior to cooking. Rub all over with the remaining oil.
4 Preheat the barbecue to 180°C (medium). Place the turkey skin-side down on the grill and cook, turning, for 15 minutes or until browned all over. Transfer to a roasting tray and continue to cook, skin-side up, with the lid closed for 1 hour and 15 minutes or until golden and cooked through when a meat thermometer reaches 75°C in the thickest part and the juices run clear when pierced with a skewer (see tips). Allow to stand for 15 minutes, covered.
5 Pour the turkey pan juices into a small saucepan. Combine the cornflour with 1⁄3 cup of stock in a jug until smooth, stir in the remaining stock until combined. Add to the pan and bring to the boil, whisking often, until thickened to desired gravy consistency. Season. Carve the turkey and serve with the gravy.
Tips: Start checking the internal temperature of the turkey, in the thickest part, at 1 hour to check for doneness and avoid overcooking. Cooking time will vary if the breast is larger or smaller.
To oven cook, preheat the oven to 200°C

n 2 bunches broccolini, trimmed
n 200g baby beans, trimmed
n 2 garlic cloves, thinly sliced
n 2 tbsp olive oil
n 2 tbsp pepitas
n 2 tbsp toasted pine nuts
n Sea-salt flakes and freshly ground black pepper, to season
FETA, LEMON AND YOGHURT DRESSING
n 75g Greek feta, plus extra 50g to serve
n ½ cup Greek yoghurt
n 1 tsp finely grated lemon zest
n 2 tsp lemon juice
n ¼ tsp smoked paprika
n 1 tbsp olive oil
1 To make the dressing, blend all the ingredients in a small food processor until smooth; season with pepper.
2 Put the broccolini, beans and garlic in a rectangular foil tray and drizzle with oil. Toss until coated, then season.
3 Heat the barbecue hotplate to medium. Add broccolini mixture. Cook, turning occasionally, for 5 minutes until lightly charred. Return to the foil tray.
4 Spread the dressing on a serving plate. Top with broccolini and beans. Crumble the extra feta on top, then sprinkle with pepitas and pine nuts. Serve.

Peach and caramel pavlova SERVES 8
n 6 eggwhites, at room temperature
n 1½ cups caster sugar
n 2 tsp cornflour
n 2 large yellow peaches, cut into 2cm wedges
n Olive oil cooking spray
n 2 tbsp honey, warmed n 600ml thickened cream
n 250g mascarpone
n 3 small white peaches, quartered n 125g raspberries
n Store-bought caramel sauce or topping, to serve (see tips)
n Lemon thyme sprigs
1 Grease a 37cm x 25.5cm x 5cm deep enamel roasting tray and line with baking paper, extending beyond the sides of the tray. Preheat the grill side only of the barbecue to 120°C (very low).
2 Beat the eggwhites and sugar in the large bowl of an electric mixer for about 15 minutes or until thick, glossy peaks form. Add the cornflour while the beaters are mixing. Dollop meringue in the prepared tray. Swirl with a spoon to cover the base, leaving a 2cm border all around.
3 Put an upturned foil tray on the hotplate (on the opposite side of the preheated grill). Put the meringue tray on top, so it
is not sitting directly on the hotplate.
4 Close the lid and cook for 30 minutes, then lift the lid slightly to allow it to cool back down to 120°C or as close to that as possible. Cook for a further 20 minutes until the meringue is dry and crisp to the touch.
5 Turn off the barbecue and allow the meringue to continue cooking for a further 20 minutes in the residual heat. Then leave the lid slightly ajar to cool completely inside the barbecue (see tips).
6 Preheat the barbecue to 180°C (medium). Put the yellow peach wedges on a tray and spray with olive oil. Barbecue on the grill for 2 minutes each side until lightly charred. Return to the tray and brush or drizzle with warm honey. Set aside.
7 Whip the cream until soft peaks form. Add the mascarpone and beat for 30 seconds until thickened into firm peaks. Spread the cream mixture all over the meringue and arrange the grilled peaches, white peaches and raspberries on top. Drizzle with caramel sauce and garnish with lemon thyme. Serve with extra caramel sauce in a jug.
Tips: You can cook the meringue on the barbie up to three days ahead (store in foilcovered cooking tray). We heated caramel sauce until runny enough to drizzle (you can use any caramel sauce or topping). ●
CHRISTMAS CLOTH
Give your feast festive flair with a tablecloth made from a canvas drop sheet. Create a leaf stencil (we used a sprig from an artificial fern), then cut scrap cardboard into rectangles slightly larger than the sprig. Wearing gloves, coat the sprig in metallic gold water-based paint. Working on a flat surface, position the sprig, painted side down, in a corner of the drop sheet. Cover with cardboard and press down to stamp the fern onto the canvas. Repeat around the border, swapping the cardboard as needed to avoid smudging the paint. Keep the cardboard and trim into tree shapes for the kids’ project on page 29.

CANDY CANES
Make merry mega decos with this fun DIY project. There is no sawing or gluing, but you do have to drill a couple of holes to anchor these giant canes into the ground using tent pegs. Or you can sink them into pots to flank your front door or gate as a sweet seasonal welcome.

1 On the flange, mark opposite hole locations halfway between the collar and edge of the outer ring, then clamp to a workbench with outer ring overhanging. Drill hole on outer ring with 5mm bit. Unclamp, rotate then reclamp to drill hole on opposite side. Use acetone and a cloth to remove manufacturer’s marks from pipe.
STEP 3: JOIN BENDS
3 Fit the pipe bends together (male to female connectors), then slot the PVC pipe into the bend assembly to form the ‘crook’ shape at the the top of the cane.

2 Attach the tape to the base of the pipe at a 45° angle. Holding the tape taut, twist pipe while unrolling and affixing tape in a spiral of stripes about 180mm apart, all the way to the top, then cut tape. Starting at the opposite side of base, repeat winding tape in between existing stripes to the top, then trim tape.

4 Continue the angled tape stripe at the top, then make individual tape loops around the crook. Slot the cane onto the flange hub and secure to the ground with tent pegs through predrilled holes.
