My Torah Mentor, Jiro the Japanese Sushi Master by Richard Rabkin

I just read the Torah in shul for the first time, thanks to an old Japanese sushi master named Jiro Ono.

J

iro Ono is a three star Michelin chef, an honor bestowed on a select few world class chefs. He runs a small restaurant called Sukiyabashi Jiro in Tokyo, Japan that seats only 10 people and has a set menu that costs approximately $300. You can’t just walk in off the street into Sukiyabashi Jiro – reservations are required, a few months in advance. Oh, and Jiro is 91 years old. Jiro wakes up early every morning and goes to the market to select only the choicest ingredients from the finest vendors. Sushi apprentices clamor to work for him even though for the first few years (!) of their apprenticeship they are restricted to making rice and cleaning the dishes. He has singularly focused his entire life on one thing: sushi excellence. Jiro was the subject of a critically acclaimed documentary, “Jiro

Dreams of Sushi”. During one insightful moment, the filmmaker asks Jiro why he continues to work so hard, especially given his advanced age. Jiro replies, “Because as a sushi chef, every day I learn new things. Every day, I get better.” Jiro’s approach to life resonated with me. If a 90-year-old Japanese sushi master sees it as his life’s mission to better himself every day, surely I can do the same thing. So I sat down and made a list of “stretch goals” for myself – i.e. achievements that were challenging but attainable. And one of those goals was leining (reading) the Torah in shul. For the uninitiated, let me explain why leining is so difficult. The entire Torah is written on scroll parchment in the ancient tradition which has been passed down for thousands of years. The script is not the common Hebrew script but a stylized one that has

time? I asked myself, WWJD – What would Jiro do? “Every day I learn new things. Every day I get better.”

with the trop. My friend who is a rabbi and seasoned Torah reader gave me some pointers and then sent me on my way to practice. And practice I did, every day. At first it seemed daunting – my brain felt a sieve, not a sponge. But little by little I made progress. I practiced with anyone who was willing to listen, including my eightyear-old son who would at times correct me. Ah the wonders of a spongy brain.

If a 90-yearold Japanese sushi master sees it as his life’s mission to better himself every day, surely I can do the same thing.

In addition, the Torah is chanted in a complex melody called “trop”, which – you guessed it – is also not in the Torah scroll. Finally, the person leining on behalf of the congregation cannot make any mistakes in reading. If he does, vigilant congregants will correct him on the spot. When I told my friends that I was thinking about leining in shul their response was always the same: “Why would you want to do that?!” It was as if I had told them that I wanted to try getting waterboarded. Apparently there is a commonly held belief that in order to be a good Torah reader, you need to start young, soon after your bar mitzvah, and then continue to lein in shul over the years so that the Torah portions remain fresh in your mind. When we are young our minds are like sponges and whatever we learn sticks with us for life. Case in point, I can still rattle off ‘Mon Autobiographie’ in fluent French from Monsieur Bauer’s sixth grade French class. So what is an old guy like me learning to lein for the first MAGAZINE

So I began the journey. First I had to learn the trop – the musical notes. Then I selected a Torah portion. I started putting the pieces together – chanting the words together

Game day arrived. All I had to do was deliver the goods… and deliver them I did! Or more accurately: Dlvrd th gds Was it hard? Yes. Was I perfect? No. Did I perspire profusely? Yes. But did I experience a deep sense of gratification from accomplishing a challenging goal that enriched my spiritual life? You bet. My wife together with a friend sponsored a Kiddush at shul in my honor to celebrate. There was the typical Kiddush food like herring and Tam Tam crackers, but also an array of chocolate pastries that I love called “kokosh.” I don’t eat herring but on this occasion I made an exception. What Jewish History Forgot: Amazing Covert Rescues by Marnie Winston-Macauley

J

Wilfrid Israel rescued tens of thousands of Jews from the Nazis, yet few have heard of him.

ews have an ironic rep in the world. On the one hand there are jokes abound about “The Nice Jewish Boy” who, among other things, evoke images of a skinny American Jewish kid in a kippah. On the other hand, mention the IDF and Israelis, and even Jew-haters twist our successes to vanquish the mortal fear of the Jew with a temper, a target, and the unstoppable quest to survive using brains plus brawn. Apart from the fight for Statehood, the Israeli raid on Entebbe, perhaps more than any covertly planned operation, with its strategy, speed, daring, and success took the world’s collective breath away! In honor of the 32 year anniversary of Operation Moses, we look at three other covertly planned or little-known pperations.

But did you know that the details of the airlift have not been released, as the rescue is considered a “complex covert operation?” Another fascinating fact: One of the 19 Yemenite Jews rescued was Rabbi Saliman Dahari, who brought with him an 800 year-old Torah Scroll! Said Natan Sharansky: “This is a highly significant moment in the history of Israel … Yemenite Jewry’s unique, 2,000-year-old contribution to the Jewish people will continue in the State of Israel.” The name of the mission, “Miktze Teiman,” essentially translates from the Hebrew biblical verse “from the ends of Yemen.”

Most of us knew in March of 2016, that Israel had successfully managed to rescue the last Jews of Yemen and bring them “home” to Israel. These Jews left behind

civilian plane, KLM Royal Dutch Airlines, flight 777 (from Lisbon to Bristol) was attacked by a German fighter plane. There has been much speculation about the role of Howard during the war and whether he was in fact the target. But did you know that the passengers on that doomed flight also included a British intelligence officer, a Winston-Churchill look-alike … and German Jewish businessman Wilfrid Israel who rescued tens of thousands of Jews from the Nazis, yet few have heard of him. Through the work of Kibbutz Hazorea and Naomi Shepherd, the truth about this man is now being revealed. Wilfrid Israel, the elusive, secretive, sometimes taciturn man sought no glory or recognition. The clandestine work he did on behalf of Jews prior to and during the Holocaust put him in constant danger. Anonymity was safer, especially as he and his family were well-known in Germany – a “privilege” he would use time and again in his mission. Wilfrid Israel was born in 1899 to the wealthy owners of the Kaufhaus N. Israel, a large German department store with 2,000

Wilfrid Israel, the elusive, secretive, sometimes taciturn man sought no glory or recognition. employees. Through bribery and financial power, the business remained afloat long after others had been banished. His work was secretly started in the 1920s. Using his connections, status, and fortune he created ways to send European Jewish children to Eretz Israel and saved tens of thousands of Jews throughout Europe. He initiated, supported and funded various projects to send European Jewish children to the land of Israel and other countries. As the situation worsened, he helped two-thirds of his Jewish staff to escape, also providing them with additional funds. He seemed almost invulnerable to the Nazis with often amazing results. After the Reichstag was burnt, on March 30, 1933, the Nazis raided the store, demanding Israel fire all his Jewish workers. He refused. Though arrested, he was released at the intervention of an employee, a Nazi. Using bribery, he arranged for the release of his Jewish employees, arrested on Kristallnacht, November 9, 1938 and sent to Sachsenhausen concentration camp. In return, the camp commander could shop at the department store for free that Christmas! By means of a clandestine plan he set up with two partners, Israel helped release many more from concentration camps using gelt, permits and connections with influential Nazis. His largest rescue project was the Kindertransport, in which, just prior to WWII, he sent about 10,000 Jewish children from Nazi Europe to Britain. After he sold the business and moved

to Britain, he supplied critical information and assessments to the British government. He was among the first to warn of “The Final Solution.” Over the years, Wilfrid Israel visited Palestine and was particularly impressed by the pioneers and the kibbutzim, particularly the German-Jewish kibbutzniks of Hazorea. He intended to join them after the war. When the plane was shot down, Israel had with him 97 certificates to help move Jewish refugees in Spain and Portugal. Those certificates went down with him on that fatal flight. Was then, Wilfred Israel the true Nazi target? On June 7, 1939 he received the following letter from Albert Einstein Dear Mr. Israel: I was extremely glad with your friendly letter and especially with the fact that you are finally safe. What you have done was truly heroic, but I couldn’t get rid of the feeling that you are too good for this world, but even more so for the environment, in which you insisted on staying for so long. MOSSAD EXODUS The year was 1977. Prime Minister Begin, meeting with the Mossad had an unusual covert assignment for them: rescue thousands of Ethiopian Jewish refugees and bring them from the Sudan to Israel. And so a cover base was created for a handful of operatives in a Sudanese holiday area. It was from here, the operatives were to carry out the plan to launch and oversee the exodus of the refugees by air and sea in the early 1980s. A thrilling and chilling challenge, the Mossad team ran a vacation spot for rich tourists by day, while by night, despite the huge risks, stole into the Sudanese desert to rescue the refugees. This hazardous, covert operation succeeded, with the help of the American administration that facilitated the airlift of the refugees. The CIA stationed in Khartoum also saved the last Mossad agents, fleeing from the Libyan secret service, by sending the Mossad operatives out in specially designed “boxes” labelled as Diplomat Mail! Burying Sam: Life after Death by Elissa Felder

Finding meaning after the death of my baby.

T

wenty six years ago my little baby died during open-heart surgery. His death was an experience of loss I had never encountered with this level of magnitude. It was like slamming into a brick wall. It felt as if there were no more roads ahead, as if my life had ended along with the death of my little sweet baby Sam. During Sam’s first six months of life, his needs and schedule were the focus of my life. Like any good mother of a new born, I was tired yet happy. That all suddenly came to a crashing end when the doctors could not fix Sam’s heart. A dear friend was with us in the hospital that day, waiting with us as Sam underwent his “life-saving” surgery. When the outcome was so radically, unbelievably different than what we could ever have anticipated he was there to catch us. He gave us the space to scream deep existential, guttural cries of pain; cries that came from

deep inside, from that place where life is supposed to be generated. That place wasn’t green and fertile; it was dark and scary. These screams were deep, foreign, unfamiliar sounds that I will never forget. Our friend made phone calls, arranged the funeral and paved the way for the next few moments, hours, days... That night a group of my friends who had known Sam in life gathered together to perform the Jewish ritual of tahara on his little body and prepared him for burial. In Jewish tradition a body is washed and clothed in white, linen shrouds. The body is placed into the ground, like a seed planted in the earth for the future time when it will re-sprout and rejoin with its soul in the future. This practice is called a “tahara” and is usually performed by an established chevra kadisha (Jewish burial society). This times my friends, with love and respect and I

imagine many tears, bathed Sam for his burial the next day. How I screamed that day and many days thereafter. At the height of that pain came an understanding that we don’t run our lives. We are not in control of life or death. Loss and suffering is real and it hurts. It drains all of your energy and it can take away a lot of your desire to live. But at some point you have to choose to get up and to take the pain with you; to hold it inside and integrate it with every fiber of your being and let it change you into a new person with this trauma embedded inside of you. Life is never the same. You are now carrying something larger and heavier than you want to bear. Maybe I can still live a meaningful and fulfilling life? Maybe there will be other children one day? Maybe life will one day feel good again with this trauma embedded inside?

One thing I have done since Sam’s death is perform tahara for Jewish women. It was a way to express how grateful I am for the kind act those ladies did for my son. I imagine that they did not want to go to the funeral home that night but they felt a duty. For decades I regularly go to our local funeral homes with two other women to purify and prepare the women in our care. We dress them in shrouds and place them lovingly in coffins ready for their burials the next day. Every now and then we perform tahara for people we know – our friends’ mothers or sisters or daughters, sometimes even for our friends. A few months ago I performed tahara for my own grand-daughter. How? With love; with tears freely flowing down my face; with respect and honor; with a direct confrontation with a reality that was almost too much to bear; with courage that this was a good and holy thing for me to do; with a desire to give to my daughter; with an understanding that there is something sacred about a grandmother preparing her little grand-daughter for burial; with a broken heart! Tahara, preparing a Jewish person for burial, is holy work. It connects us to G-d. It connects us to the future. It says there is more to life than this world. Our body is holy and in life it houses the soul, which is the breath of G-d. Death starts the process whereby the soul disconnects from the body. The body must be returned to the dust from where it came. Death allows us to see our lives as being part of a journey. Life is like a narrow bridge; we come from somewhere and we go somewhere. That bridge is of different lengths for each of us; for some it is very short and for others it is many years. What matters most is what we choose to do on that bridge and the impact we make while crossing it. Out of my tragedy I’ve learned about the importance of burial and the spiritual, meaningful, loving, lifeaffirming work of the chevra kadisha.

Somehow there is a way to keep moving on. There is hope that life is still worth living.

oday’s lifestyle has become so rushed that families have forgotten how to spend quality time together. When a family is comprised of many children of different ages, it is unusual for families to eat their dinner together, as younger children tend to eat earlier, and the teenagers each get served as they walk in the door starving after their own tiring schedules. Today we have the benefit of microwaves where we can heat up individual portions for whoever needs it in a moment’s notice. I remember clearly the days when the

last portion of dinner stayed on the stove warming for hours on end and the last family to come in ended up getting a dried up dinner. Rounding up the gang for dinner each day is a logistical challenge for every parent. But a family sit-down brings more than just a healthy meal to the table. “Eating dinner together sets the stage for positive family interactions, makes kids feel more secure about themselves, encourages good nutrition, and lowers the risk of eating disorders and obesity” asserts Miriam Weinstein, author of The Surprising Power of Family Meals. Besides, kids who have

frequent family dinners are less likely to try drugs, drink, or smoke, and they’re also more likely to get better grades, according to the National Center on Addiction and Substance Abuse at Columbia University. Not always is it possible to make dinner the focal” together time” for the family. Every family has to choose when it is the most convenient time for sharing and showing appreciation, interest and concern for every family member. As a teenager, growing up in Brazil, lunchtime was sacred. I distinctly remember sitting down daily to lunch- which was lovingly prepared

I loved the opportunity to discuss the daily news with my very erudite uncle, who was abreast of all world news. It was then that we shared our day’s events with those around the table. Adult input was always welcome. Furthermore being part of the adult conversation made us feel more mature than our age. It made us feel loved and cherished. When was the last time your family sat down and enjoyed dinner together? With tight learning sessions for the boys; music lessons, play rehearsal for the girls and exhausting adults work schedules, it can

be tough to make time for one daily meal when everyone is together. Rounding up the troop for an evening meal can be almost impossible! However, research is beginning to show that eating as a family has great benefits for your children and teenagers. Here’s another reason why you should try to sit down together 5-6 times a week, whether for breakfast, lunch or dinner. Distances and varying job demands make it almost impossible for both parents to be with their children for more than maybe 10 minutes a day, if that much. The long commutes to work rob parents of their children’s company. It is no surprise that working parents come home exhausted and wish for nothing more than a quick dinner and some relaxation. Where does that leave the parent-child relationship? Furthermore, today’s rapidly advancing technology and the advent of instant cell phone communication keeps us connected with the world, but totally disconnected to

immediate family which should be the first priority. On a recent celebratory meal with family members, my mother observed that every visitor was talking on the cell phone instead of having a conversation with those that were seated right next to them. Could be that these conversations were indeed vital, however, it is unfortunately, a further corrosion of old fashioned communication Children and grandchildren are trying to do their duty of visiting grandma but show no interest in communicating with her. It would be a laughable situation if it were not truly a sad phenomenon. The cell phone has made great inroads into our family and friends” together” time. Try to curb cell phone use when around with others. Everyone will gain in the end. How is our communication faring these days? A recent poll conducted in many families demonstrated that parents speak to their children about 26 minutes a week. Most of the conversations consist of:”Could you please pass the salt”. parents, they disclosed that they do not have the physical strength to actually engage in meaningful rapport with their children. There simply is no physical time to help their offspring with their schoolwork. Doing homework is either done by the mother and since Mother cannot review their sons Mishnayos or Gemorah classes, they hire tutors to do the job, so the children should excel in their classes. But they certainly miss out on connecting to their kids. Many a child has unfortunately gone off the path because of lack of communication. One cannot expect a teenager to rekindle communication when there was none at the early stages and ages. Recently I was invited to a Bar Mitzva of a cousin’s son. The boy made a siyum on the six tractates of Mishnayos, which he knew very well. Who had taught it all to him? None other than his father. During the celebrations the father explained that it had been a labor of love. He had spent every Shabbos afternoon and Sunday evenings learning with his son. The bond between them was absolutely palpable! I could not get over this incredible feat, I pondered that if more fathers would devote 4 years of Shabbosim learning and conversing with their sons, there would be a lot less kids at risk. Children need their parent’s guidance at all ages, but especially in their formative years, which pass all too quickly. Advocate back to the homestead

More and more people are buying take out or just buying pre-packaged fast foods that are not as healthy and wholesome as home cooked meals. Inasmuch as women are also working and also return home tired, the homemaking is being relinquished to housekeepers who take care of the youngest children and basic household chores. Siblings can have a sense of belonging to a unit and learn how to share in a positive environment. Children today are missing out on the importance of knowing how to plan and prepare meals. Basic cooking, baking, and food preparation are necessities for being self-sufficient through life. Involve your family in menu planning, grocery shopping, and food preparation. Preschoolers can tear lettuce, cut bananas, and set the table. Older children can pour milk, peel vegetables, and mix batter. Teenagers can dice, chop, bake, and grill. Working as a team puts the meal on the table faster, as well as makes everyone more responsible and accepting of the outcome. Improved eating habits come with “ownership” of a meal. Whether we host guests or just have the immediate family gathered around the table it is an incredible opportunity to give each family member their attention and create an oasis of peace that can be enjoyed and remembered forever. How fortunate are we to have our wonderful Shabbos one day of rest; that we spend together without outside interruptions, no phones ringing away, no appointments to attend, no e-mails or other myriad distractions that have corroded into our daily rushed lives. It is well known that our table is compared to the altar in the Holy Temple, a place where we can pass on the Masorah i.e. our customs to our children. Where else can they learn how to comport themselves in a Jewish home. These are lessons for life. The benefits that we accrue are immeasurable. Whether we host guests for Shabbos meals or just have the immediate family gathered around the table use this incredible opportunity to give each family member their attention and create an oasis of peace that can be enjoyed and remembered forever. Furthermore, children learn to cherish this special time and learn how to run a Shabbos table replete with divrei Torah and singing praised of Hashem, as well as appreciating Shabbos itself. This then becomes a model for them to emulate when they form their own families. As the adage goes:� The family that eats together stays together�. Take full advantage of this opportunity and make sure to find other ways of keeping the family together.

Heart Healthy Garlic Salmon. Garlic is well known for its heart healing properties as it helps to fight high cholesterol as well as colds and Adding garlic to your meal can be a great way to destroy your breath while helping to keep your heart in check. Ingredients 4 salmon fillets 1/2 tsp salt 1 tsp sugar 1 Tbs mayonnaise 4 cloves crushed garlic 2 Tbs oil 1 onion thinly sliced 1/2 red pepper sliced

12 cherry tomatoes halved 1 tsp salt Black pepper to taste Directions Preheat oven to 400 degrees. Spice your salmon fillet with salt and some sugar to give it some taste. Let it stand for 20 minutes. Heat oil in a skillet, add onions and fry until translucent about 8 minutes. Toss in the sliced peppers and halved cherry tomatoes and cook for five minutes until slightly soft. Remove from stove. Rinse salmon under running water. In a small bowl mix mayonnaise with crushed garlic salt and pepper to taste and smear on the salmon. Bake in the oven for 15 minutes, spread onion and pepper mixture over salmon and bake an

additional 10 minutes. Serve hot or cold. Preparation 10 minutes Serves 4 Turmeric- is a very powerful spice amongst its many benefits is the fact that it contains the powerful antioxidant curcumin, which has been shown to protect the body against cancer and may even increase our lifespan. Where to use it? Add it to scrambled eggs and frittatas. Toss it with roasted vegetables. Add it to rice to add a nice color. Creamy Curried Cauliflower Soup This soup is delicious and it takes minutes to make with the versatile nutritious cauliflower. Ingredients 2 Tbs extra-virgin olive oil, plus more to serve 2 medium white onions, thinly sliced 1/2 tsp kosher salt, plus more to season 4 cloves garlic, minced 1 large package frozen cauliflower 4 1/2 cups low-sodium vegetable broth or water 1/2 tsp ground coriander 1/2 tsp ground turmeric 1 1/4 flat tsp ground cumin 1 cup coconut milk Freshly ground black pepper, to taste 1/4 cup roasted cashew halves, for garnish (optional)

the onions and 1/4 teaspoon salt until onions are soft and translucent, 10 minutes. Reduce heat to low, add garlic, and cook for 4 additional minutes. Add cauliflower, broth or water, coriander, turmeric, cumin, and remaining 1/4 teaspoon salt. Bring to a boil over medium-high heat, and then reduce the heat to low. Simmer until cauliflower is fork-tender, about 15 minutes. PurĂŠe the soup with a blender stick or in a blender until smooth. If using a blender return the soup to the soup pot. Stir in the coconut milk and warm the soup. Taste and adjust spices to your taste. To serve, ladle the soup into bowls and garnish with a handful of toasted cashews, sprinkle of red pepper flakes, or ground pepper to taste. Preparation 15 minutes Serves 6 to 8

Healthy Cauliflower Pilaf This dish is a special dish that is often served at weddings or special occasions. It makes a very festive side dish a great accompaniment for fish, meat or poultry. Ingredients 2 large bags frozen cauliflower (5lbs in all) 2 Tbs extra-virgin olive oil Salt and freshly ground pepper 1/2 cup pine nuts 1 large onion, finely chopped 1 tsp ground turmeric 1 1/2 cups basmati rice 1/2 cup dried cranberries 1/4 cup chopped cilantro 3 Tbs oil or transfat free margarine 1/2 tsp smoked paprika (optional) Directions Preheat the oven to 425°. Separate frozen cauliflower into florets. On a large, rimmed baking sheet, toss 1/2 the florets with 3 tablespoons of the oil and season with salt and pepper. Roast the cauliflower for about 15 minutes, stirring occasionally, until golden in spots and tender. Meanwhile, bring a pot of salted water to a boil. Add the other 1/2

of the cauliflower florets and cook until tender, about 15 minutes. Drain and pat dry. Spread the pine nuts in a pie plate and toast until golden, about 5 minutes. In a large, deep skillet, heat the remaining 1 tablespoon of olive oil. Add the onion and cook over moderate heat, stirring occasionally, until softened and just beginning to brown, about 10 minutes. Add the turmeric and rice and stir to coat. Stir in the chicken broth and 1/2 teaspoon of salt and bring to a boil. Cover tightly and cook over low heat until the broth is absorbed and the rice is tender, about 20 minutes. Transfer the rice to a large bowl. Fold in the roasted cauliflower, toasted pine nuts, cranberries and cilantro. Spoon the rice into a 9x13 dish and press lightly on the top. Arrange the boiled cauliflower florets on top. In a small bowl, combine the melted butter and paprika. Brush half of the oil mixture over the cauliflower and bake for about 15 minutes, until heated through. Preheat the broiler. Brush the cauliflower with the remaining oil and broil, 6 inches from the heat, until lightly browned, about 5 minutes. Serve hot or warm. Preparation 15 minutes Serves 10-12

Brown Rice Pilaf with Chickpeas & Spinach This recipe represents a balanced meal all in one dish. Whole grains, protein-packed chickpeas and vitamin rich spinach offer endless health benefits, while onions sauteed in cumin and paprika provide all the flavor. Rice pilaf is a great substitute for heavier pastas and absorbs any flavor of the ingredients it’s combined with. And if a box of the whole rice pilaf is hard to find, use brown rice to still keep the calories low and the whole grains high. Ingredients • 1 box whole rice pilaf • 1 Tsp olive oil • 1¼ cups chopped white onion • 3 cloves garlic, minced • ½ teaspoon ground cumin • ½ teaspoon paprika • ½ tsp turmeric • ¼ tsp salt • 1 Tbs tomato paste • 1 (15-oz.) can chickpeas, rinsed and drained • 1 (10-oz.) package frozen spinach, rinsed and drained • 1 cup chicken stock • ¼ tsp black pepper Directions Begin by cooking the whole rice pilaf according to the directions on the box. While the rice pilaf cooks, heat 1 Tbs olive oil in saucepan over medium heat. Add the chopped white 54

onion. Stir in the minced garlic, ground cumin, paprika, turmeric, salt and tomato paste. Cook for 1 to 2 minutes, stirring constantly until the tomato paste darkens in color. Add the chickpeas and chicken stock. Cover the pan and reduce the heat to low. Let simmer for 10 minutes. Stir in the cooked spinach and black pepper. Let simmer until spinach is warm. Transfer the cooked rice pilaf to a bowl, using a fork to fluff it. Fold the chickpea mixture into the rice pilaf and serve warm. Preparation 20 minutes Serves 4 Cinnamon- The antioxidants in cinnamon have antiinflammatory effects, which may help lower the risk of heart disease, cancer, brain function decline, and more. Cinnamon is also known to have an anti-diabetic effect. It helps lower blood sugar levels and also can improve sensitivity to the hormone insulin, which is the vital hormone needed for keeping blood sugar levels balanced. Furthermore, cinnamon pairs well with lots of foods and delivers a delicious taste and a divine aroma to the whole house.

Light and Fluffy Buckwheat Pancakes These delicious easy to make light and fluffy pancakes are traditionally used for a more elaborate Sunday brunch, or lunch. It is quite suitable for a dairy supper. Watch the kids devour them in minutes even before it makes it to the table. Ingredients

1 Tbs oil, or as needed

Directions Whisk buckwheat flour, sugar, baking powder, salt, and baking soda together in a bowl. Beat buttermilk, egg, and vanilla extract together in another bowl. Pour flour mixture into buttermilk 1 cup buckwheat flour OR whole wheat pastry flour mixture; whisk until batter is thick and smooth. Let batter rest for 5 minutes until bubbles form and 1 1/2 cup honey batter relaxes. 1/2 tsp cinnamon 1 tsp baking powder Heat oil on a griddle over medium heat. Drop batter by large spoonfuls onto the griddle and cook until 1/4 tsp salt 1/4 tsp baking soda bubbles form and the edges are dry, 3 to 4 minutes. 1 1/4 cups buttermilk (to make butter milk mix 1 Flip and cook until browned on the other side, 2 to 3 cup milk and 3 Tbs lemon juice) you can use regular minutes. Repeat with remaining batter. Preparation 10 minutes milk or Coconut milk Serves 4 1 large egg, beaten 1 tsp vanilla extract

Puff Dough Covered Apples Apples pair very well with cinnamon what better healthy dessert than combining apples and cinnamon. I purchase puff pastry already stretched and ready to use. Small apples work great for this recipe but they’re not always available, so go ahead and use the regular-sized ones cut in half. They will present better on the plate and it is delightful when hot and served with a scoop of ice cream. Refrigerated pie crust provides a shortcut to this oldfashioned favorite. Ingredients 1/2 cup water 1/4 cup granulated sugar 1 teaspoon vanilla extract 2 oil, divided 1/8 teaspoon ground nutmeg 1/4 cup light brown sugar 1 flat tsp ground cinnamon 1 rolled out puff pastry 4 small or 2 medium Granny Smith apples, peeled and 56

cored Directions Preheat oven to 375 degrees F. In a small saucepan, combine the water, white sugar, vanilla, 1 tablespoon oil, and the nutmeg over high heat. Bring to a boil for 1 minute; set aside. In a small bowl, combine the brown sugar, cinnamon, and remaining 1 tablespoon oil, mix well. Unroll pastry and cut into quarters. Stuff each apple cavity with an equal amount of brown sugar mixture and place on a pastry quarter. Fold pastry up around apples and pinch ends together to completely enclose apples. Place dumplings seam-side down in an 8-inch square baking dish and pour sugar sauce over the top. Bake 45 to 50 minutes, or until golden. Serve warm, drizzled with sugar glaze from bottom of baking dish top with a dollop of vanilla ice cream for greater effect.. Preparation 20 minutes Serves 4 Enjoy this feast!
