The Shmuz on the Parsha

Rabbi Ben Tzion Shafier

The Giving of the Torah

The Ultimate System of Self Perfection “Do not covet the house of your neighbor. Do not covet the wife of your neighbor; his slave and maid servant, his ox, his donkey, and all that belongs to your neighbor.” – Shemos 20:14 The Even Ezra explains that people are perplexed by this mitzvah. How is it possible not to desire that which I find beautiful? The Torah can forbid actions or of speech, because I can to control my behaviors. But desires dwells deep within a person. They are a function of the inner condition. I didn’t ask for them, but they are here. How can the Torah command me not to want? The Even Ezra answers with a moshol. Imagine, he says, that a simple villager were to see a princess passing in a procession. He may find her very beautiful, but he would never fantasize about marrying her. She is so far removed from his social status that the idea of taking her as a wife is out

4

of the realm of the possible. He wouldn’t even dream about it. If the idea would ever cross his mind, he would quickly rebuke himself, saying, “Am I insane? Do I dream about sprouting wings and flying?” So too, the Even Ezra explains, when a person understands that HASHEM runs the world and sets forth the right woman for the right man, he will never desire that which isn’t his because he knows that it is impossible for him to have it. It is so impossible that it would be akin to a sane individual dreaming about growing wings and flying. The Even Ezra is teaching us a fundamental concept in growth: that we can shape our very reality. Changing Standards of Beauty As an example: there was a time in history when being overweight was considered a sign of dignity. For millennium, people barely had enough to eat. The only ones who could afford enough food to be heavy were the wealthy. As a result, if a man was corpulent, it was a sign of wealth and distinction. For that reason, in many cultures it was considered a sign of beauty for a woman to be heavy. A woman of distinction was large, and the

larger, the more distinguished. That isn’t our reality today. Rather than utter those dreaded words, “She is

The point is that what is considered attractive is not hard-wired at birth; it is learned, often shaped by what others consider desirable. overweight,” a shadchan will use fifteen euphemisms. “I mean she is average.” “She has wonderful middos, a special chen, great yichus. . . ” Anything to avoid saying that the young woman is heavy. Why is that we now loathe what many societies once considered desirous? The reason is that beauty is a function of perception. Young men are cultured, often

from a very young age, that a certain standard is appealing. That is the desired state. That is how their sisters look, that is how they mothers rate attractiveness and beauty, and their reality is shaped by what others accept as the standard. The point is that what is considered attractive is not hardwired at birth; it is learned, often shaped by what others consider desirable. By nature the human desires, but the object of his desire is shaped by external factors and pereptions. This seems to be the point that the Even Ezra is sharing with us: that we can shape our very reality. That which I desire will only be within a specific range of things, and it must be possible to be had. If I were to focus on the fact that HASHEM truly is in charge, I would understand that it is literally impossible to for me to have the life situation that my friend has. His money, his job, his house, and his wife were all set by HASHEM – and there is nothing in my power to change that. Once I comprehend this, my desire for the object begins to wane. It enters into the realm of the impossible. It will just never happen. And so, I no longer desire it. Much like the villager would never dream of sprouting wings to fly, it’s insane. When I stop desiring what others have, I also attain a state of peace, tranquility, and happiness with the lot that HASHEM has chosen for me. I understand that HASHEM knows better than I what it is that I need, and HASHEM has chosen for me the exact life setting and circumstances that are best for me.

Raising Boys to become Good Men by Slovie Jungreis-Wolff

For starters, they need to see that women are genuinely respected in your home.

W

ith so many highprofile cases of men falling in disgrace, it’s a good idea for parents to reexamine how to best raise our sons to become good men. How our sons view women when they are children will impact the way they treat women when they venture out into the world. We are given the responsibility to provide spiritual training to our children. Fathers and mothers are charged with the mandate to leave a spiritual imprint on our children’s souls. If we expect the next generation to listen to us while they grow, they must hear us when they are young. What is the message we impart? How can we nurture our children’s character so that they leave this world better than when they entered? (It goes without saying the following points equally apply to teaching our daughters how to respect men.)

Honor the Women in your Life More than any strong lecture about treating women properly is the firsthand view of what children observe. When parents honor one another, when they treat women with dignity, respect

10

flourishes. Ask: How do we honor the women in our life? Do we easily disparage women’s thoughts? What is our tone and body language? Do we carelessly mock a mother’s concerns? Are grandmother’s ignored and made to feel irrelevant? There are positive ways we can teach children, too. Instead of always having mom serve, tirelessly prepare and somehow make life run smoothly for the family, let’s involve our spouses and children. Even a toddler can learn how to bring a spoon or cup of water to mommy. And as children grow: “Please sit, Mom, I’ll take care of this.” What beautiful words to a mother’s ears. Expressing gratitude in front of your children is another avenue of honor. How often do we leave the dinner table or grab a snack that mom prepared without a backward glance? Mom is expected to sooth wounded feelings, heal scraped knees, mediate siblings battles, feed hungry tummies, supervise homework, ferry after school activities, be sure there are clean uniforms hanging, and still be the incredible woman she was meant to be. Judaism recognizes the strength of women. Every Friday night we sing Eshes Chayil, A Woman of Valor, paying tribute

to the women in our lives. We speak about her rising in the darkest of nights and never allowing herself to fall into the depths of hopelessness. Her flame is never extinguished though her heart may be full. She is exhausted but perseveres. If we want our sons to respect women, they must hear and see that respect modeled in the home.

Teach Self-Discipline All children require self-discipline to reign in emotions and actions that can harm others. Our technology-obsessed culture means that often there is ‘no end’. No end to the music, no end to the show, no end to the surfing – there is always something else to watch or listen to. How does one understand the definition of enough? From where does a child learn the meaning of ‘stop’? They keep scrolling down and clicking more. Growing up in a world where wants are fulfilled with a touch of a button can strain a child’s ability to comprehend the word ‘no’. How many parents are able to repeatedly deny their children’s desires? In a society of instant gratification, children believe that their wishes come before anyone else. “I want it and I want it now!” Order from Amazon prime and it’s

at your doorstep. Wants and needs are often confused. Character training demands that a parent be unafraid to declare boundaries. Teaching right from wrong requires our stepping in and setting rules. Whether it is no phones at meals and homework time or limiting purchases on iTunes, we have the obligation to stand up for that which we believe in. Creating a space within a child’s world where it’s ok to not have it all, to respect the word ‘no’, to realize that it’s not what

be boys’ or ‘this is our culture now’ is pitiful. There is no justification for demeaning others. If you bring damage into the world through your words or actions, you need to be accountable. Empathy means I am responsive to your feelings. In a world where we have stopped looking at others and focus mainly on ourselves, children have become selfish. Much of the damage inflicted has happened because self-needs take priority over the needs and emotions of the person I am hurting. We want our children

you have but who you are that creates happiness, are all essential rungs on the ladder to moral greatness. Judaism provides us with builtin avenues toward self-discipline. Mitzvot help us train our children’s hearts. “Yes, you want to have that chocolate bar but it is dairy and you need to wait between eating meat and dairy.” ‘Sure, you have a juicy piece of gossip but that’s lashon hara, and we cannot hurt others with our words.” Plug into the positive energy of teaching your child the strength of ruling over one’s desires.

and

Here are two values to work on with our boys to help mold them into great men. Begin with responsibility. When we hurt others we need to recognize the pain that we’ve caused. Teach children to own their actions. Apologize without ‘ifs’, excuses, or blaming others. Too many adults disclaim the harm they’ve inflicted. We cannot afford to rationalize our sons’ wrongs by excusing bad behavior. Saying things like ‘boys will To advertise, call 718-513-9885

to grow up being attuned to the hearts of others. There is no room for callousness. How can I cause pain to another human being? Put names on emotions like sad, hurt, and feeling badly so that we place ourselves in another person’s shoes. Teach sensitivity. Guide children to distant themselves from writing and forwarding mean texts or leaving classmates and siblings out. Helping children be aware of how others feel will make them think hard about the ramifications of their deeds; a much needed asset when they enter the adult world. When our sons grow up realizing that their actions impact others, they understand that what they do matters. Our choices can hurt or heal. Let us teach our children to grow sensitive to the feelings of others, to see the faces of those who surround them and recognize the shadow of pain in their eyes. Inspiring children to respect and have self-control nourishes the inner voice that becomes their moral compass. We have the opportunity to teach our sons how to infuse our world with honor, kindness, and dignity so that they grow to become the good men we know they are meant to be.

Lost

Synagogues

of New York City

by Ellen Levitt

Photographs and history of shuls that have been turned into churches and community centers.

O

n my birthday in 1999, I drove around Flatbush, the Brooklyn neighborhood where I spent my early childhood. I stopped by my first synagogue, Shaare Torah, and saw that the building had been turned into a Baptist church. I was surprised, and snapped several photographs of the building, its exterior displaying a jarring mix of Judaic and church symbols. Then I drove a few blocks southeast to find my mother’s and aunt’s childhood shul, Kesser Torah, and saw that it too was now a church. Noticing a pattern, I shot more photographs. At home later that day, I mentioned these two buildings to my parents and asked them if they had known about these interfaith changes to the shuls; they both looked embarrassed and weakly nodded their heads. They had been aware of this but had kept quiet about it. Then in 2003 I drove through Brownsville, Brooklyn and spotted a handful of former synagogues that had become churches. And I recalled seeing another one at the northeastern edge of

16

East Flatbush. Seeing these buildings haunted me: were there more of them? What was their history? When did they cease serving the Jewish community and get changed into churches? In the mid-2000s I started to research these buildings, which I first referred to as “ex-shuls” but soon dubbed “lost synagogues,” reflecting the fact that they were buildings that still stood but morphed from synagogues into other things. And I soon found out that while many in Brooklyn had become churches, some in other parts of New York City had become private residential homes, schools, medical facilities, restaurants, and even a museum. Fascinated by these buildings, I began a serious study. I headed to libraries and archives in New York City. People steered me toward a treasure trove of information at the New York City Municipal Archives, where a Great Depression era survey of Houses of Worship, conducted in 1939 and 1940, listed hundreds of synagogues in the five boroughs. Searching through several reels of microfilm, I found names, addresses and information about To advertise, call 718-513-9885

synagogues in NYC, many of which were closed. I also looked into other resources such as the Department of Finance, where I could find out the physical dimensions and monetary values of these buildings. I drove and walked around neighborhoods in Brooklyn, and later the Bronx, Queens, Manhattan, Staten Island and even Governors Island, to track down, photograph from the outside (and often the inside) these buildings, and ask current tenants about what they knew of the buildings’ pasts. Along the way I exhibited more than twenty photographs of these lost synagogues at the Brooklyn Historical Society, and then got up the courage to approach book publishers about turning my research into a written work. I connected with Avotaynu, which publishes books and journals on Jewish genealogy and history, and over a five year period I wrote three volumes on this topic. I am still passionate about my niche subject, these 300-plus lost synagogues of New York City, and have since investigated them in other cities. Why has this topic held such fascination for

me, and as I have discovered, for many other people? There is the sense of documenting Jewish history so that it is not forgotten.

These buildings were so precious to Jewish congregations, which then moved or disbanded for various reasons, and I wish to make them known. These buildings often still feature Stars of David, Hebrew writing, stained glass windows and plaques with Jewish names, as well as Aron Kodesh (holy ark) doors, and other items. In addition, I have long been interested in architecture and decorative arts, so these buildings are appealing to me. Many people are drawn to this bittersweet topic for a few main reasons: nostalgia, a desire to learn more about the American Jewish community and its patterns of migration, curiosity about who now occupies these sites. Let’s take a look at a handful of these buildings and learn a bit about their past… and present.

BROOKLYN

This former synagogue in Flatbush got me started on my whole project. The exterior still displays an unusual metal sculpture by Ludwig Wolpert, which reads “Shaare Torah” in Hebrew. It also shows the name of the current occupant, Salem Missionary Baptist Church. The Conservative congregation had an older building a few blocks away, but that was knocked down and a public elementary

18

school built on the plot. This building seen here dates to the early 1950s but by 1979,

been used as a secondary building by a church. However, there are some very interesting Jewish items inside: plaques in Hebrew and English, stained glass

with a dwindling congregation, Shaare Torah merged with the East Midwood Jewish Center a few miles south of it. This building is still in beautiful shape and the church has preserved other Judaic items such as the ark doors, chandeliers, sconces with Jewish designs, and more. Although Crown Heights in Brooklyn is heavily Jewish (and Hasidic) there are surrounding neighborhoods that were Jewish enclaves, but no longer. This applies to northern Crown Heights-Weeksville. Built as Congregation Petach Tikvah, this was a large Conservative shul that still has Jewish stars on the outside, but nothing left of Jewish interest inside. Just a few blocks north of Petach Tikvah, was a more modest, yet pretty synagogue called Ahavath Reyim. It has To advertise, call 718-513-9885

THE BRONX:

but now only a few parts in the north are Jewish. This Orthodox, University Heights synagogue was known as Hebrew Institute of University Heights, but in the early 1970s the congregation relocated northward, and is now known as the Hebrew Institute of Riverdale. This building was decaying but then the Boys & Girls Club bought it and renovated it. It looks wonderful now, and offers a variety of classes and clubs to children. The South Bronx hit scary depths in the 1970s and 1980s, but is now being rehabilitated. This had been built as Sinai Congregation and has been kept in decent shape by a church residing there now. However, age has faded the 10 Commandment windows seen here. The Grand Concourse is perhaps the best known street in the Bronx, a boulevard with many striking apartment buildings as well as former synagogues and other houses of worship. These gorgeous windows are in the last former home of Temple Adath Israel, now used by a Seventh Day Adventist church. These windows and many other items are still kept in fine shape. Some members of this congregation moved north to Riverdale and established a congregation there. The former Moshulu Jewish Center, on a quiet side street in the Norwood section of the Bronx and just blocks away from the renowned New York Botanical Garden, has been repurposed as an early childhood school. The exterior still boasts handsome examples of Judaica.

MANHATTAN:

The Lower East Side is a world-famous, legendary neighborhood of American Jewry. This was an eclectically styled synagogue in the area, designed by noted (Jewish) architect Emery Roth. It was built as Congregation Erste Warshawer, and later occupied by Adath Jeshurun of

but this one at #638 is now the Sixth Street Community Center. It has

Jassy. But in the 1970s this congregation was on its last legs. Eventually it closed, and now it is a private home and studio. Originally there was a pretty dual staircase but that was removed, and the Jewish star in the round window was modified to resemble a camera lens. But there is still much to identify it as a Jewish site. The East Village also was a heavily

20

Jewish area, located just north of the Lower East Side. On East 6th Street between Avenue B and C, there are two lost synagogues side by side. The one at #636 became a church after it closed,

congregational plaques still on the walls inside. People come here for yoga classes, to eat at a vegetarian café, and other secular activities. Lost synagogues can be found in many American cities and towns, as well as in Canada, Europe and elsewhere. What makes the situation different in the United States as opposed to areas in Europe where Jews were forced out is that the patterns of demographic change have occurred for more or less voluntary reasons. “Upward mobility” sums this up. Many Jews wanted to move to “better” parts of New York City, or to the suburbs, and so on. But we should not forget these buildings, which were so precious to our older generations. It has become my mission to document them and make sure we preserve them and their memories as much as possible. Photo Credits: Ellen Levitt

The Silver Besamim Holder by Tova Teitelbaum

From war-torn Prague through Australia to Israel, a Besamim Holder spans five generations of one Jewish family.

O

nkel Lipman was the only elderly man I knew. Nobody in Bratislava had uncles or aunts. Grandparents were only found in story books. There were no old people left in the Europe of 1945. Somehow Onkel Lipman had survived the war. We loved and cherished Onkel Lipman. He was given the honor of saying Grace after Meals, and of leading the closing prayers on Yom Kippur. But what I remember most clearly was that Onkel Lipman always said the Havdala at

the end of Shabbos. Every Saturday night the remnants of our family gathered in our home to hear Onkel Lipman bid the Shabbos farewell. There were so few of us left – my parents, four cousins, Onkel Lipman, his son Max and myself. My father’s siblings, his nephews and nieces and his mother were no longer alive, they had all been murdered in Auschwitz. We waited patiently for Onkel Lipman to start. A cup was filled with wine till it overflowed, a Havdala candle was lit and a silver Besamim Holder was set on the table. “Hinei El Yeshuati – behold Hashem

is my salvation,” Onkel Lipman chanted. “Evtah velo acfhad – I shall trust and not fear,” he continued. “Pass the Besamim Holder around to everyone,” my father said to me. I was five years old and felt very important to be responsible for handing around the Besamim Holder. Solemnly I went from one person to another. The square shaped silver Besamim Holder had a tiny door behind which the spices were kept. There was a thin spire with a pennant on top and a tiny bell underneath. Four small eagles perched on each corner of the silver container. I waited patiently

for each person to say the blessing as they gently shook the spice holder to enhance the smell and then say the blessing. As the Russians tightened their hold on Czechoslovakia, the Jews felt less and less safe. One by one the cousins dispersed. Most of them went to Israel hoping to start a new life there. One Motzei Shabbos I was surprised that my father was saying Havdala. “Onkel Lipman won’t be making Havdala for us anymore,” my mother said. “He’s gone to Eretz Yisrael with his son.” A few weeks later I overheard my mother saying to my father, “I want to get as far away from Europe as possible. There are too many terrible memories here.” A short while later our family ended up in Australia. I don’t know how the Besamim Holder survived the war but when the custom officer asked my father what he was taking out of Prague, I remember my father pointing to the box, saying, “It’s only a toy my daughter likes to play with.” In Australia the Besamim Holder

came out every Motzei Shabbos. We often had visitors who stayed till after Havdala. “How beautiful that Besamim Holder is. How did you manage to save it?” Onkel Lipman passed away a few years after coming to Israel. Every year Max and my father exchanged letters so we knew that he lived in Jerusalem, had a family and a number of children. When I was in my twenties I moved to Israel and a year later married. The first time my father visited us he brought my husband a gift. “I would like you to have this now that you are starting your own home,” my father said as he handed a carefully wrapped box to my husband. When my husband saw the beautiful Besamim Holder he was very moved. “I will treasure this and use it every week.” The years went by and our children grew up and married. One motzei Shabbos as our visit to our son was coming to a close I noticed the simple Besamim Holder he was using. When we came home I said to my husband, “It’s time to pass on the Besamim Holder.” Now I watch my five-year-old granddaughter standing straight, her eyes shining, solemnly handing the silver Besamim Holder around the family. I remember myself at her age in far away Bratislava. I can hear Onkel Lipman’s voice singing “Hinei El Yeshuati – Hashem is my salvation” and I wonder now, in hindsight, how he had the depth of faith to say these words after all he had gone through. As we listen to my son saying Havdala. I look at my granddaughter and smile. A fifth generation child of our family is holding the silver Besamim Holder in Israel. Despite difficulties and dangers, we have survived. This story is Li’ilui nishmat Onkel Lipman’s great grandson, Malachi Rosenfeld, killed recently by terrorists.

Decadent Desserts for

Shavuos Worth the calories! by Elizabeth Kurtz

Shavuot is not only a time for great cheesecake (and definitely try the White House Cheesecake recipe below) but a time to use some of those dairy ingredients that are hard to duplicate with a pareve (non-dairy) equivalent. Nutella is a decadent chocolate hazelnut spread that has an incredible creamy texture. I love this spin on chocolate pudding cakes, the addition of Nutella adds decadence and great flavor. Dulce de Leche is a fantastic take on creamy caramel and these super sweet Magic Bars are always a hit. They are sweet and crunchy with a ooey gooey-ness that’s addictive. I can’t resist including sweet crepes with maple pecan glaze because the filling made from farmer cheese and whipped cream cheese is what every cheese danish is supposed to taste like. It’s a good thing Shavuot only comes once a year!

Nutella Chocolate Pudding Molten Cakes Serves 6 This can be made dairy or pareve. Both versions are scrumptious, especially warm served with ice cream. 5 tablespoons unsalted butter/margarine, melted, plus softened butter for greasing ramekins 1 cup whole milk or non-dairy creamer 3/4 cup chocolate hazelnut spread (such as Nutella) or pareve chocolate hazelnut spread 2 large eggs, lightly beaten 1 tablespoons pure vanilla extract 1 cup flour, sifted 2/3 cup (packed) light brown sugar 3 tablespoons plus 1/3 cup unsweetened cocoa powder, plus extra for dusting 1 tablespoon baking powder 1/2 teaspoon salt 1/3 cup granulated sugar 2 cups boiling water Garnish, optional Ice cream or whipped cream Toasted nuts Position a rack in the center of the oven; preheat to 350°F. Grease six 1-cup ramekins with the softened butter/margarine and place on a large rimmed baking sheet. In a large bowl, whisk the melted butter/margarine, milk/ non-dairy creamer, hazelnut spread, eggs and vanilla until smooth. In a small bowl, whisk the flour, 1/3 cup brown sugar, 3 tablespoons cocoa powder, baking powder and salt. Whisk the flour mixture into the hazelnut mixture. Divide the batter among the ramekins, about 1/2 cup batter for each. In a small bowl, stir the remaining 1/3 cup brown sugar, 1/3 cup cocoa powder and the granulated sugar, breaking up any clumps of brown sugar. Sprinkle each ramekin with about 2 rounded tablespoons of the cocoa-powder mixture. Gently pour 1/3 cup boiling water into each ramekin. Bake until the puddings bounce back when gently pressed, about 30 minutes. Let stand 10 minutes before serving. Dust with cocoa and top with the ice cream, whipped cream and nuts, optional.

Dulce De Leche Magic Bars until solid, about 15 minutes.

Makes 18 bars 1 1/2 sticks unsalted butter 1/4 cup sugar 1 vanilla bean, seeds scraped or 1 teaspoon vanilla extract 1 large egg yolk 1 1/2 cups all-purpose flour 1/2 teaspoon salt 3 cups sweetened shredded coconut (6 1/2 ounces) 12 ounces semisweet or bittersweet chocolate chips 1/2 cup salted roasted almonds, chopped One 16-ounce jar dulce de leche One 14-ounce can sweetened condensed milk Preheat the oven to 350°F. Line a 9-by-13-inch metal baking pan with parchment paper, leaving up to 1 inch of overhang. Spray the paper with non-stick cooking spray. In a medium saucepan, cook the butter over moderately high heat, stirring occasionally, until fragrant and browned, about 4 minutes. Scrape the butter into a large bowl and freeze just

44

Using an electric mixer, beat the sugar, vanilla, and egg yolk into the butter at medium speed until blended. Add the flour and salt and beat until moistened crumbs form. Press the crumbs into the prepared baking pan and bake in the lower third of the oven for about 25 minutes, until the crust is set and lightly browned. In the bowl, toss the coconut with the chocolate chips, and almonds. In another bowl, whisk the dulce de leche with the condensed milk; pour two-thirds of it over the crust. Lightly press the coconut mixture over the dulce de leche. Drizzle the remaining dulce de leche mixture on top. Bake the bars for 35 to 40 minutes, until lightly browned on top. Transfer the pan to a rack and let the bars cool to room temperature, then refrigerate until firm, about 1 hour. Carefully remove the bars from the pan and peel off the paper. Cut into bars and serve. I like them chilled.

White House Cheesecake Serves 10 They may not know about Shavuot but the White House pastry chef, Bill Yosses, does make a marvelous cheesecake, or so the Obamas say. Supposedly, this cheesecake recipe has been passed down from chef to chef and has been served since the Eisenhowers lived in the White House. The perfect American Shavuot recipe – kosher cheesecake at its patriotic best! For the crust: 1 stick butter, melted, plus extra for greasing the pan 6 ounces chocolate wafer cookies or graham crackers 3 tablespoons sugar 2 tablespoons flour For the filling: 12 ounces cream cheese, at room temperature 6 tablespoons sugar 2 tablespoons honey ½ cup sour cream, at room temperature ¼ cup heavy cream, at room temperature 2 eggs, room temperature 1 tablespoon vanilla extract Sour cream or crème fraiche for topping (optional) Crust: Heat oven to 300°F. Butter and 8 –inch spring form or plain cake pan, and line bottom with parchment paper.

46

Spread cookies on a baking pan and toast until very dry, about 10 minutes. Remove and leave oven on. Pulse in a food processor to make crumbs. Mix one cup lightly packed crumbs in a bowl with sugar and flour and then mix in melted butter. Pour into prepared pan and pres s in evenly. Filling: In a mixer fitted with paddle attachment, mix cream cheese until smooth and fluffy, scraping down sides to eliminate lumps. Add sugar and honey, and mix until smooth. Scrape down sides and add sour cream and heavy cream, then mix for 2 minutes. With mixer running, add vanilla and then eggs one at a time and mix until completely smooth. Pour over cookie base. Place pan in a larger baking pan. Fill that with hot water halfway up the side of the cake pan to make a water bath. Bake 80 to 90 minutes, or until just set. To test for doneness, shake cake pan gently. There should be no liquidity but it should move gently, like Jell-O. Remove from the oven to a rack and let it cook, then refrigerate it in the pan for at least 3 hours or up to overnight. If using spring form, remove the ring. If using a plain cake pan, warm bottom of pan over a very low flame one minute, moving it constantly to distribute hat. Invert cake onto a plate, then quickly re-invert onto a serving plate. Frost top of cake with a think layer of sour cream, if using.

Mini Cheese Crepes with Cinnamon Pecan Glaze Serves 12 Decadent as either a dessert or even a sweet side dish, I know it’s a stretch, buy its Shavuot…so we are a little more decadent. Crepes: 6 eggs 1 teaspoon vanilla sugar dash baking soda 2 tablespoons sugar 1 ½ cups flour 1 ½ cups milk pinch salt Canola oil Filling: 1 pound farmer cheese ½ cup whipped cream cheese (4-ounces) 1 tablespoon vanilla sugar 1 egg yolk 1 cup sugar Cinnamon Pecan Topping: 5 tablespoons butter 1 cup heavy cream 3 tablespoons brown sugar ½ teaspoon maple syrup ½ teaspoon ground cinnamon 1/4 cup toasted pecans For Crepes: In a large bowl, gently mix all ingredients until smooth. In a 6 inch sauté pan, heat ½ teaspoon oil. When oil is hot, add about 2 tablespoons batter and swirl around pan. Cook until lightly browned, about 1-2 minutes, flip and cook on the other side. Remove from pan, and continue making individual crepes, using all of the batter. Cover to keep cooked crepes warm. For Filling: In a medium-sized bowl, mix all ingredients until smooth. Set aside. Spoon about 1 tablespoon filling into crepe. Spread a bit, leaving a ½-inch border. Roll gently and set aside. For Topping: In small saucepan, melt butter over medium heat. Stir in cream, brown sugar, maple syrup and cinnamon. Cook, whisking constantly, until sugar dissolves and mixture thickens lightly, about 3-4 minutes. To serve: Lay warm, filled crepes in a decorative 9 x 13 pan. Warm sauce and pour over crepes. Top with toasted pecans.
