Galactic Torah Talmudic wisdom is no “puff of start dust.” by Rabbi Alexander Seinfeld
I
magine a project at Harvard to convene the greatest scholars in every field over a period of several hundred years in order to create an encyclopedia of their collective knowledge. Who wouldn’t want to see the final product? This is the Talmud: a unique collection of wisdom that would surprise experts in any discipline, including law, ethics, psychology and economics. In the realm of cosmology, too, the Talmud makes assertions -- sometimes literal, sometimes metaphoric, and sometimes both. To give one example, consider the Talmudic estimate of the number and distribution of stars in the universe. In order to appreciate this passage, bear in mind two things. First, the vast bulk of Talmudic wisdom is claimed to be a transmitted tradition, from Moses to Joshua, to the prophets, to the Elders, to the Great Assembly, and then to a chain of scholars until the completion of the Talmud 1,500 years ago. Hence it is called the Oral Law. Second, we need to appreciate the limitations of science 1,500 years ago: the telescope was invented in the 16th century, and the number
of stars visible to the naked eye is approximately 9,000. So what did these ancient rabbis say about the number of stars? In Tractate Brachot, page 32b, the Talmud records a tradition, in the name of Rabbi Shimon ben Lakish, that there are roughly 1018 stars in the universe. This number is remarkably big and much closer to the current scientific consensus of 1022 than common se Now, although it is interesting for an ancient people to have such a large estimate, this single coincidence could perhaps be explained as an extremely lucky guess. Never mind that no other ancient people had an estimate anywhere near this order of magnitude, nor did they have a conventional way to write such a number. (I have queried dozens of astronomers and none could identify a single other ancient culture with remotely similar numbers.)
Multiple Patterns
However, the Talmud relates more than a raw number. The passage explains that the distribution of stars throughout the cosmos is neither even

nor random. Rather, it states that they are clustered in groups of billions of stars (what we call galaxies), which themselves are clustered into groups (what astronomers call galactic clusters), which in turn are in megagroups (what we call superclusters). To describe the stars as clustered together, both locally and in clusters of clusters, was far beyond the imagination and the telescopes of scientists until Edwin Hubble’s famous photographs of Andromeda in the 1920s. Galactic clusters and superclusters have been described only in the past decade or so. Moreover, the Talmud states categorically that the number of galaxies in a cluster is about 30. And wouldn’t you know it, astronomers today set the number of galaxies in our own local cluster at 30! Further, the Talmud adds that the superclusters consist of about 30 clusters each, and that superclusters are themselves grouped into a bigger pattern of about 30 (megasuperclusters?) of which the universe has a total of about 360. Thus, the Talmud appears consistent with one major theory that the overall structure of the universe is shaped

by the rules of fractal mathematics. I’ve shown this data to numerous astronomers around the world and the consensus are pure astonishment. Could it be that Rabbi Shimon ben Lakish made an extremely lucky guess? That might be plausible if he had used a number that had symbolic significance in Judaism, such as seven, 10, 18 or 40. What is the significance of the number 30? To my knowledge, there is no spiritual or religious reason for choosing that number. It therefore seems to be exactly what it claims to be: a conscientious oral transmission of a received tradition, rather than simply one person’s guesstimate. Moreover, Rabbi Shimon had a reputation for impeccable honesty; it is unthinkable that he would have invented these numbers or guessed without telling us so. The clear intent of the passage is to convey an oral tradition. You are now in on the secret of Shavuot: There is something special about the Torah (and rumors of its demise have been greatly exaggerated!). The Torah is much, much more than a mere “cultural expression” of one tiny group of ancient people, so numerically small that we reminded Mark Twain of a “nebulous dim puff of star dust lost in the blaze of the Milky Way.” This passage about the stars is a mere five Talmudic lines, itself about as significant as a puff of star dust. But it also hints to the treasures available to those who seek them. Shavuot is a great time to begin.

Not So Small Miracles G-d is always communicating with us. Sometimes it takes a miracle for us to get the message. by Sara Yoheved Rigler
O
n Sarah Apel’s fifth birthday, her grandfather Jacob presented her with an olivewood-covered siddur (prayer book) which his father had acquired decades before during a pilgrimage from White Russia to Palestine. In the front of the siddur, he wrote: “Always be proud that you are a Jew, and know that you have a holy land.” Sarah put the siddur under her pillow and kept it there for the next seven years. Although she lived in Upland, a small town in central California, her dreams were of a faraway Golden City. In a recurrent dream, repeated hundreds of times, she saw herself walking on a narrow bridge toward the Golden City. Then she heard a voice from heaven saying, “If you look only at the light coming from the Golden City, you will get to the Golden City.” But as she walked, she heard other
voices, coming from beneath the bridge. There she saw beautiful people dressed in beautiful clothes, singing beautiful songs. They called to her to come and join them, but when she moved toward them, she would fall off the bridge and be in “Nowhereland forever, like an empty shopping center, with nothing real inside.” One day in her twelfth year, Sarah’s father announced that he had bought a bigger house in an adjacent town, and soon they would be moving. Sarah loved her house, especially the big elm tree in the yard, where she would spend hours yearning to come closer to her Creator. “You may be moving,” she told her father sadly, “but I’m not.” One night a few weeks later, while Sarah was sleeping soundly, her father lifted her up and put her into the family car. The next morning, she awoke in a different house in a different town. Appalled, Sarah jumped onto her bicycle and cycled for half an hour until she reached her old house.

There a horrifying scene greeted her. A moving truck was parked in front of her house, and a strange family with three sons was moving in. She watched them, disconsolate. Finally, wretched, she got back onto her bike and pedaled away.
THE BEAUTIFUL PEOPLE The dreams of the Golden City vanished. Instead of heeding the heavenly voice to focus on the light emanating from the Golden City, Sarah responded to the siren call of the “beautiful people.” By the time she graduated high school, the sixties were in full swing. Beautiful people abounded: hippies with their freeflowing clothes and soulful folksongs, meditators with their religion of universality and love, and native Americans with their exotic culture and bond to nature. The Golden City

was forgotten. In 1965, Sarah was studying art at U.C.L.A. A non-Jewish friend said to her, “I always knew you were a Jew because there is such trust in your eyes. I recently met a young man who also has trust in his eyes. You should meet him.” The friend introduced her to Dana Fox, a tall young man who had not known he was Jewish until he was eighteen years old, when someone cracked a derisive Jewish joke in
Dana’s living room. When Dana laughed, his mother upbraided him, “Don’t laugh. You’re also a Jew.” Sarah and Dana discovered that they were astonishingly compatible. One day, their conversation drifted to their childhoods. Dana told her that he had grown up in the small town of Upland. Sarah was amazed. “I grew up there, too, until I was twelve years old. What street did you live on?”

“Sixth Street,” Dana replied. “I lived at 554 North Sixth Street.” Sarah turned white. That was her house. Dana was one of the three boys she had seen moving into her house.
THE WEDDING In 1966, Dana and Sarah decided to get married. Her mother, ecstatic, planned a wedding in their Reform temple for a Sunday afternoon in July.

On the morning of her wedding day, Sarah woke up frantic. She had had a horrific dream of the Golden City of her childhood. This time, however, the Golden City was burning. All its residents were screaming in anguish. Sarah phoned Dana and told him, “We can’t get married today. I don’t know why, but it’s a terrible day to get married.” When Dana reached her side, he realized that she was intractable. But why? They decided that a rabbi might solve the foreboding mystery of her dream. They looked in the Los Angeles yellow pages under “Rabbis, Orthodox,” and found a name and nearby address. Quickly they drove to the rabbi’s house and knocked on his door. When the rabbi opened the door, Sarah blurted out plaintively, “Why can’t we get married today?” The rabbi gazed at them and replied, “Because it’s Tisha B’Av, the calamitous day of the burning of the Holy Temple in Jerusalem. It’s a day of mourning and fasting for Jews.” Dana, Sarah, and the rabbi all stood there with tears streaming down their cheeks. The rabbi cried because these young Jews had planned to get married on the day so laden with tragedy throughout Jewish history. Dana cried because this rational explanation meant that he would have to postpone his wedding. Sarah cried tears of joy because she had finally discovered the name of her Golden City -- Jerusalem! Suddenly she fathomed the meaning of all her dreams. Much to their families’ chagrin, Sarah and Dana postponed their wedding for two days. On Tuesday, the 11th of Av, the rabbi they had found married them in a traditional ceremony. “Our wedding meal was the first kosher food we ever ate,” recalled Sarah years later.
THE BACKYARD MIRACLE Dana and Sarah moved to the San Francisco Bay area. They rented a modest house on a steep hill, with
a lovely backyard surrounded by an eight-foot-high redwood fence. By the summer of 1970, they had two children, and Sarah was nine months pregnant with their third. Dana worked as an elementary school teacher, and Sarah taught art. One day, Sarah was working in the kitchen. Her two small children were playing in a little plastic swimming pool in the backyard. Suddenly Sarah heard an urgent voice inside her head, commanding: “Run fast! Bring in the children! Quickly! Now!” Sarah sprinted into the backyard, grabbed one child in each arm, and dashed back into the kitchen. As soon as the screen door slammed behind her, Sarah heard a deafening crash. She turned around to see a huge semi trailer truck filling up her entire backyard. The redwood fence was smashed like so many toothpicks. Under the wheels of the truck was the little pool.
LEAVING THE DESERT The Foxes’ oldest daughter suffered from recurrent earaches. A doctor suggested that they move to the dry climate of Arizona. So, in 1971, the Foxes drove their VW bus to Arizona. There, in a trailer on a hill in the desert near a dramatic cliff drop, they settled, among Mormons, Catholics, and Native Americans. Two years later, the Yom Kippur War struck Israel. One night Dana had a nightmare. He cried out, “They can’t take my land away from me!” When he woke up in the morning, he told Sarah that he wanted to go to the nearest Aliyah office to inquire about moving to Israel. The Foxes and their three young children piled into their VW bus and drove to the Aliyah office in Phoenix. The aliyah representative there asked them if they had ever been to Israel. They answered, “No.” “Well, do you know anything about Israel?” he queried. “No,” they replied. “Are you part of a Jewish

community?” “No.” “So why do you want to move to Israel?” he asked them, baffled. Sarah told him about her olivewood siddur from Palestine, and about her dreams of the Golden City, which on her wedding day she understood to be Jerusalem. The aliyah representative was visibly moved. In a tone uncharacteristic of Israeli officials, he told them: “My children, my children, come home.” They hesitantly decided to make aliyah. They filled out all the forms, and arranged to leave in exactly one month. Then they drove back to their desert home on the cliff. Sarah was scared. After all, a war was going on, which at that point Israel was not winning. When she and Dana alighted from the VW bus, with the children still playing inside, she told her husband, “If we go to Israel, our lives and our children’s lives could be in danger.” No sooner had the words left her mouth than the VW bus started to roll, with the three children still inside. In seconds it picked up speed, until it was careening down the hill at 100 mph, heading straight for the cliff. Dana, Sarah, and some dozen of their neighbors stood frozen in horror. Nothing could stop the vehicle. In moments, it hurtled over the cliff -— then stopped in mid-air. Its back wheel had caught on a small bush. To everyone’s amazement, the bus hung suspended in the air, held only by the bush. All their neighbors started screaming, “A miracle for the Jews! G-d has done a miracle for the Jews!” Everyone ran up to the vehicle and with ropes managed to pull it back onto the cliff. The children were uninjured. Sarah and Dana, spent with horror and relief, walked with a Mormon friend back to their trailer. When they entered the trailer, they were greeted by a ghastly sight. Dozens of strange black insects were everywhere—on the floor, in the frying pan on the

stove, even climbing up one of Dana’s boots as they stood there. In two years living in the desert, they had never seen a single insect like these. “What are they?” Sarah asked their friend. The friend quickly grabbed a towel and flitted the insect off of Dana’s boot. Then he motioned them out the door. “They are deadly scorpions,” he warned. “I have never in my life seen so many at one time.” Sarah and Dana understood that G-d was sending them a clear message. Suddenly Israel did not seem so dangerous. On the spot, they both resolved to follow through with their aliyah plans. That very afternoon, they started selling their furniture. As soon as they sold their first piece of furniture, the scorpions disappeared. Every last one of them. A few months later, the Fox family arrived in Israel. As they descended the stairs from the airplane, Dana -now Shlomo -- said, “We have come home to become Jews again.” Twenty-eight years later, Shlomo and Sarah Fox-Ahshrei have 8 children and 18 grandchildren, all learning and practicing Torah throughout the Land of Israel. Shlomo translates religious texts from Hebrew to English. Sarah has a unique vocation. A time-honored tradition promises that if one prays for something specific at the Western Wall for 40 consecutive days, the prayer will be answered. Sarah, who spends hours each day praying at the Western Wall, performs the service of “doing 40 days of prayer at the Kotel” for those who live too far away to do it themselves.
G-d is always communicating with human beings. While the messages most of us receive may not be as dramatic as the Foxes’, most of us at one time or another experience Divine guidance -— through intuition, dreams, or the uncanny unfolding of unlikely circumstances. How can one know if a “message”
is really from G-d rather than from that notorious ventriloquist, the ego? The Torah specifically prohibits reading omens. Two white doves circling around the heads of you and your date should not be interpreted as a sign that you should get married. The sudden appearance of scorpions in your home is not an omen. Rather, it presents a clear, rational fact: life-threatening danger. If you were worried about following a certain course because of its prospective dangers, now you must weigh those possible dangers against the reality of your actual, present danger. Omens are open to diverse interpretations. Messages present facts; we may or may not want to draw the obvious conclusions. From Sarah and Dana’s story, we can garner three clues as to when to trust a “message”: If the message bids you to do something inconvenient, difficult, or downright distasteful, it is probably not coming from your ego. Sarah’s message to postpone her wedding cost her the ire of her mother, who had spent months planning the event. Dana’s dream-message to move to Israel in the middle of a war was a challenge that ran counter to all their preferences. Rebbetzin Hinda Adler used to say: “If it’s difficult, that’s a sign that it’s good.” When in doubt, consult a spiritual guide well versed in Torah. Sarah’s dream convinced her that that was not the right day to get married, but she couldn’t understand why. They intuited that an Orthodox Rabbi would be able to shed light on her dream-message, which he did. Many spiritual guides are charlatans, who interpret messages according to their own personal profit. Someone who in all matters subserviates his or her will to the will of G-d as revealed in the Torah is more likely to be an objective interpreter of your message. If it contradicts the Torah, then it is not a message from G-d. The Torah is the ultimate Divine message: direct and irrevocable. The Torah specifically

warns against false prophets. They are false, even if their prophecies come true or they can work miracles, if they bid you to do anything that contradicts the instructions of the Torah. The same principle applies to all kinds of “Divine messages.” There has not been a single day since Sinai that G-d has not communicated indirectly with human beings. However, there has not been a single Divine communication since Sinai that contradicts the message of Sinai. If a friend of yours tells you that from a dream or his intuition that it’s G-d’s will that he that he should jump from the roof you can tell him with total certainty that it isn’t a message from G-d. Divine messages work like mother’s milk. Just as the more the baby nurses, the more milk is produced, so too the more we look to G-d to direct our lives, the more He will. The more we see G-d’s hand in our lives, the more manifest His hand will be. And the more we obey His directives, however difficult, the more the flow of Divine communication will course through our daily lives. If Sarah had ignored her dream of the burning city, or decided that, in spite of the message, postponing the wedding was too difficult, one wonders whether she would have been able to hear the inner voice that warned her to save her children. The key to understanding G-d’s messages is honesty. If you scrutinize such messages honestly, intelligently, and without prior agendas, and you seek guidance from someone who is committed to the will of G-d above his or her own will, and you are willing to follow even directives which are scathingly difficult for you, then you can trust your inner guidance as having a Divine source. What the Prophet Elijah called, “the still, small voice” of Divine inspiration is always speaking to us. The more honestly we listen, the more clearly we’ll hear.

Why Dairy on Shavuos? Seven fascinating reasons for this popular custom.

hhh... the sumptuous delight of blintzes and cheesecake. Eating a dairy meal on Shavuot has become an enduring tradition. But what's the source for this? Here are seven fascinating reasons:
Reason #1
When the Jewish people received the Torah at Mount Sinai, included was special instructions for how to slaughter and prepare meat for eating. Until then, the Jews had not followed these laws, thus all their meat – plus the cooking pots – were now considered "not kosher." So the only alternative was to eat dairy, which requires no advance preparation. This raises the question, however: Why didn't the Jews simply slaughter new animals, "kasher" their pots in

Another point to clarify: How were the Jews able to obtain milk on Shabbat, since milking an animal falls under the prohibited activity of mefarek? The answer is that the Jews already had milk available from before Shabbat, which they had been using to feed the various animals that accompanied their journeys in the wilderness.
Reason #2
Torah is likened to milk, as the verse says, "Like honey and milk [the Torah] lies under your tongue" (Song of Songs 4:11). Just as milk has the ability to fully sustain the body of a

human being (i.e. a nursing baby), so too the Torah provides all the “spiritual nourishment” necessary for the human soul.

The gematria (numerical value) of the Hebrew word for milk, chalav, is 40. We eat dairy foods on Shavuot to commemorate the 40 days that Moses spent on Mount Sinai receiving instruction in the entire Torah. (Moses spent an additional 40 days on Sinai, praying for forgiveness following the Golden Calf, and then a third set of 40 days before returning with a new set of stone tablets.) The numerical value of chalav, 40, has further significance in that there were 40 generations from Moses who recorded the Written Torah, till the generation of Ravina and Rav Ashi who wrote the final version of the Oral

An alternative name for Mount Sinai is Har Gav’nunim, the mountain of majestic peaks. The Hebrew word for cheese is gevina, Torah, the Talmud. Further, the Talmud begins with the letter mem – gematria 40 – and ends with mem as well.

According to the Zohar, each one of the 365 days of the year corresponds to a specific one of the Torah's 365 negative commandments. Which mitzvah corresponds to the day of Shavuot? The Torah says: "Bring Bikkurim (first fruits) to the God's Holy Temple; don't cook a kid in its mother's milk" (Exodus 34:26). Since the first day for bringing Bikkurim is on Shavuot (in fact, the Torah calls Shavuot "the holiday of Bikkurim"), the second half of that verse – referring to milk and meat – is the negative commandment corresponding to Shavuot day. Thus on Shavuot we eat two meals, one of milk and one of meat, taking care not to mix the two. Interestingly, we are instructed not to use the same loaf of bread for a meat meal and then later at a milk meal, lest some of the meat substance had splattered on the bread. Thus by eating two meals – one of milk and one of meat – we inevitably have two loaves. This corresponds to the special "Two Loaves" that were offered in the Temple on Shavuot.

– right under Pharaoh's nose, in Pharaoh's own home, at Pharaoh's expense! And on top of it all, Moses' mother got paid a salary! The eating of dairy foods on Shavuot commemorates this phenomenon in the early life of Moses, which occurred on the sixth of Sivan, the day on which Shavuot falls.

Moses was born on the seventh day of Adar, and stayed at home for three months with his family, before being placed in the Nile River on the sixth of Sivan. Moses was rescued by Pharaoh's daughter, who adopted Moses and took him to live in Pharaoh's palace. But right away a problem arose: what to feed the baby. In those days, there was no bottled baby formula, so when the birth mother wasn't available, the caretaker would have to hire a wet nurse. In the case of Moses, he kept refusing to nurse from Egyptian women. The Talmud explains that his mouth needed to be kept totally pure, as it would one day communicate directly with God. Finally Pharaoh's daughter found one woman who Moses agreed to nurse from – Yocheved, Moses' biological mother! Appreciate the irony: Pharaoh's murderous decree against Jewish babies was specifically intended to prevent a new generation of Jewish leadership. So what happened instead? Moses, the upcoming great Jewish leader, was raised, educated and trained

According to one commentator, that day at Sinai was the first time the Jews ate dairy products. There is a general prohibition of "eating a limb from a live animal" (ever min hachai), which logically should also include milk, the product of a live animal. Ever min hachai is actually one of the Seven Noahide Laws which the Jews observed prior to

Sinai (and which has applied to all humanity since the days of Noah). However, upon receiving the Torah, which refers to the Land of Israel as "flowing with milk and honey" (Exodus 3:18), dairy products became permitted to the Jews. In other words, at the same moment that their meat became prohibited, dairy became permitted. They ate dairy on that original Shavuot, and we do today, too. If the Jews ate dairy for the first time at Mount Sinai, this raises the question how Abraham could have fed dairy products to his three guests (Genesis 18:8). The answer requires a technical understanding of the prohibition of ever min hachai, "limb from a live animal." One way is to define a "limb" as a piece of meat which contains bones and/or sinews. It is this type
of ever min hachai which has always been forbidden to non-Jews. This prohibition does not include milk, because although milk comes from a live animal, it does not contains bones or sinews. Hence, Abraham was permitted to feed milk to his nonJewish guests. There is a second, expanded definition of ever min hachai, which encompasses all products from a live animal -- including milk. It is this definition which is prohibited to Jews. Thus it was not until the giving of the Torah, with its reference to "land of milk and honey," that dairy products became permitted to Jews. This distinction is spelled out clearly by the great Rabbi Shlomo Kluger, in "HaElef Lecha Shlomo" (Yoreh Deah 322).

HIS WEEK FOR WOMEN: From Trapped in an Arab Village to NY – LIVE. Special Yad L’Achim Women’s Event: Women in Queens, Boro Park, Crown Heights, Monsey and Flatbush… don’t miss out on the inspirational event of the year… happening this week! Everyone faces trials and tribulations. But when we can hear and see firsthand how a Bas Yisrael overcomes unimaginable difficulties, it inspires us all to break through and surmount our challenges. This coming week, in a series of special events for women in the New York area, people will have the opportunity to hear from an extraordinary woman. Aliza, a Jewish woman who was trapped in an Arab village, had contacted Yad L’Achim, which put together a team to rescue her. After learning the husband’s daily routine,
when he would be out of the house, and planning an escape route, with backup cars, the team waited for zero hour. But then came a frantic call from Aliza. Her husband understood that something was amiss and became suspicious. “Come rescue me now,” she pleaded over the phone. “My husband is coming!!” These words set into motion emergency procedures that saw all the carefully laid plans abandoned in order to save Aliza’s life. Her moving story of being extricated from danger and brought to a “safe house” in Eretz Yisrael brought thousands of Jewish women to hear her story in packed halls in Yerushalayim and Beit Shemesh. The riveting drama, told in English by Aliza herself, prompted calls from the United States for speaking engagements here, to enable women in the New York area to be enlightened and inspired.

In response, Yad L’Achim is bringing Aliza to New York to tell her story in a limited number of very special events. The events will take place this coming week from Sunday (5/17) through Wednesday (5/20). At the event, you will hear Aliza tell over her inspirational story. She will talk about what led her to leave the fold and move to the Arab village. She will share the abuses she was forced to endure as a Jewish woman. And, most movingly, she will reveal how the Jewish spark inside her never died out, how it was fanned into a flame and brought her to contact Yad L’Achim and make her break for freedom. Aliza will speak about the process of rebuilding her life, materially and spiritually, and the lifechanging lessons she has to share from her experience. The story is replete with illustrations of hashgacha pratis without which she would today still be trapped in an Arab village.

It is an event and experience that is not to be missed. In addition, a breathtaking film will be shown documenting the rescue of Dina bat Leah and her two children. Dina spent 28 years in an abusive marriage in Tulkarem, an Arab village under the control of the Palestinian Authority, before being rescued by Yad L’Achim. Noted author and inspirational speaker Rav Dovid Goldwasser will also be appearing at all events, speaking on “The Secrets to Success in Life.”
The evenings will conclude with a film, being aired for the first time in the United States, that tells the story of Michal, recently rescued from Uzbekistan together with her children, who last month married a religious Jewish man. The moving film, a tale of hope, triumph and Hashem’s unending kindness, will leave not dry eye in the house. Organizers of the events are reporting unprecedented demand for tickets and urge women to order in advance; seats are limited.

Amazing Cherry Cheesecake Not only is this our best cheesecake – a rich, creamy, cherry-topped showstopper – it’s also one of the easiest to make! Since this indulgent cheesecake makes 16 servings, it is the perfect dessert to serve at your next party. 1-3/4 cups graham cracker crumbs 1/3 cup butter, melted 1-1/4 cups sugar, divided 3 packages (8 oz. each) Cream Cheese, softened 1 cup Sour Cream 2 tsp vanilla 3 eggs 1 can (21 oz.) cherry pie filling Heat oven to 350°F. MIX graham crumbs, butter and 1/4 cup sugar; press onto bottom of 9-inch springform pan.

Luscious Rich Cheese Babke This cheese babke got rave reviews as one of the best recipes for its kind. The cake and filling are a winning combination, sure to be enjoyed by all.
Scald the milk and place in a large mixing bowl. Add butter and stir to melt. Add 1/2 cup sugar, salt, yeast mixture, and 3 beaten egg yolks.
Dough:
Add flour and knead until shiny and elastic. Place in a greased bowl, turning to coat both sides, cover with greased plastic wrap and let rise until doubled. This may take as long as 2 hours.
2 packages active dry yeast 1 tsp sugar 1/4 cup water 1 cup milk 4 ounces (1 stick) softened butter 1 tsp salt 1/2 cup sugar 3 large beaten egg yolks + 1 large beaten egg white 5 cups all-purpose flour
Prepare the crumb topping by mixing the flour and sugar and cutting in the butter as for pie dough. Punch down dough and divide into three parts. Sprinkle flour on your working area. Working with one part at a time and covering the rest roll dough as thin as you can into a large rectangle 1/8-inch thick.
Filling: 2 packages 16 oz. softened cream cheese 3 large egg yolks 1 1/2 cups sugar Crumb Topping: 6 Tbs all-purpose flour 8 Tbs sugar 4 Tbs cold butter Stir yeast and 1 teaspoon sugar into warm water. Set aside until frothy. Grease three (9-by-5-inch) loaf pans.
Spread dough with 1/3 of the cheese filling. Fold in the sides of dough and roll up tightly as for a jellyroll. Place in prepared pan. Brush with beaten egg white and sprinkle with 1/3 the crumb topping. Repeat with remaining dough. Cover with greased plastic wrap and let rise until above the rim of the pan. Place rack in center of oven and heat to 350 째. Bake babkas for 40-50 minutes or until golden in color. Let cool in pan 5 minutes. Using a knife, loosen babka from sides of pan. Preparation: 20 minutes Total time: 3 hours

White Chocolate Cheesecake This special cake is amazing, a special treat for Yom Tov. To make the design over the cake: Melt a good quality chocolate and dip the tip of a spoon into the chocolate; then with a steady hand make circles around the cake as evenly as you can. It might not look as professional Take a toothpick and make lines from the edges of the cake towards the center. That should create this spider web pattern. 1 ready to use graham cracker pie shell 1 lb white chocolate; chopped 12 oz cream cheese; room temp 2 egg yolks 1 cup sour cream 1 tsp vanilla sugar 3 egg whites 2 Tbs sugar Melt chocolate; set aside. Beat cream cheese until fluffy. Beat in egg yolks and mix well, blend in the sour cream, vanilla, chocolate and set aside. Beat egg whites until peaks form, gradually add sugar, beat till stiff. Fold beaten egg whites into chocolate mixture. Spoon into two pie crusts or a 9-inch springform pan and bake at 300 degrees F. After one hour close the oven and allow cake to stay there for another hour until set. Preparation: 20 minutes

Our Best Chocolate Cheesecake This cake is very rich; a thin slice goes a long way. 18 sandwich cookies, finely crushed (about 1-1/2 cups) or use 2 chocolate ready pie crusts. 2 Tbs butter or margarine, melted 3 packages (8 oz. each) cream cheese, softened 1 cup sugar 1tsp vanilla ½ cup (4 oz.) semi-sweet chocolate, broken into pieces, melted and cooled 3 eggs 1½ cups strawberries (for decoration, optional) Heat oven to 325°F. Mix cookie crumbs and butter; press onto bottom of 9-inch springform pan. Bake 10 min. Beat cream cheese, sugar and vanilla with mixer until blended. Add chocolate; mix well. Add eggs, one at a time, mixing on low speed just until blended. Pour over crust. Bake 45 to 55 min. or until center is almost set. Run knife around rim of pan to loosen cake; cool before removing rim. Refrigerate cheesecake 4 hours. Top with strawberries. HOW TO BAKE IN 13X9-INCH PAN Prepare as directed, substituting a greased foil-lined 13x9-inch pan for the springform pan, and reducing the baking time to 40 to 45 min. or until center is almost set. Use foil handles to remove chilled cheesecake from pan before cutting to serve. Preparation: 30 min Total: 6 hr 35 min Serves: 16 servings
