Why We Are So Resistant to the Word Organic” by Alyssa Eliza Elbogen

W

hen it comes to health, as a community, we take it seriously. We go for check-ups, we meticulously follow doctor’s orders, we do our own research. We care - for good reason - about keeping our bodies healthy. And we care about our families’ health more than anything, perhaps. We’re skeptical, at this point, about diet fads and new perspectives. Rightfully so. We question. We don’t accept everything we’re ‘fed’. I’d like to express how dangerous, however, this approach can be. Ultimately, we need to stay educated and in the loop. I’m not here to preach any diet. But I’d like to talk about the Organic Revolution and why it is so important to understand what it is about. Behind the Organic Revolution lurks the thing it sprang out from: Genetic Modification of our food. In the Torah, we are forbidden outright from “Kilayim”. We are forbidden to crossbreed seeds or animals. As our tradition is, each topic such as this has loads of literature surrounding it. I’m only reminding us that we were forewarned in our ingenious Torah. Once upon a time, not too long ago, a company called Monsanto began to modify foods to grow faster, bigger, sweeter. They did this by forcing genes from species such as bacteria and viruses into seeds. These are known as “GMO”, for Genetically Modified Organisms, or as “GE” for Genetically Engineered. Monsanto also developed Pesticides and Herbicides to kill bugs and weeds in the gardens, and their GMO seeds were designed to be able to survive those chemicals.

Now, a chemical which kills bugs and weeds is not something you necessarily want to be eating. There are many issues with Pesticides & Herbicides as well as with GMOs, which I’ll just briefly introduce. Plants and Insects are more ancient and structurally sound than chemicals. Therefore, over time the bugs and weeds became resistant to the pesticides and herbicides, and became even stronger. Monsanto then created stronger poisons. So our food then became more pumped with anti-superbug & anti-superweed properties. Today, studies have shown the grave effects of GMOs on animals to be: organ damage, gastrointestinal and immune system disorders, accelerated aging and infertility. I’ll pause to present a list of GMO crops: Corn, Soy, Cotton (for oil), Canola, Potatoes, Alfalfa, Squash, Sugar (from Sugar Beets) & Papaya. So what does this have to do with “Organic”? We’ve been sold mass-produced food that is either GMO or sprayed with these Herbicides & Pesticides for a long time. It was commonplace. As natural as anything else to us. But today there is a lot of information out. Awareness is rising. We are realizing: “We’ve got to get ourselves back to the garden.” Once upon a time, family gardens were as common as family kitchens. Growing vegetables and herbs is actually simpler than we may think, most of the time. All the washing and scrubbing will not remove pesticides or herbicides

from food. It was sprayed on throughout the growing process and was absorbed into the food just like the rain and the sunlight. It is an inherent part of nonOrganic foods. Organic implies that a plant is both from non-GMO seed and that it was not sprayed with herbicides or pesticides. For dairy and meats it means there were no hormones or antibiotics given to the animals and that they were fed an organic diet. And since they are not sprayed with harmful chemicals, organic food contains higher supplies of vitamins and minerals without any of the toxins that conventional produce comes with. This is very big news. This is very important news. We need to accept the Organic Revolution as redemptionary for our community. The potential for healing and growth through organic food is incredible. It is much better, as we well know, to eat a less of something healthy than to eat a lot of something unhealthy. Better to eat clean, nutritious food than larger amounts of conventional. It is so difficult to accept this information. We have become resistant to this information. We have gotten used to the abundance and accessibility of conventional produce. But we, as a nation, have also become less healthy. And we need to see that, too. So let’s support each other in making the switch to amazing, healthy food. Healthy food must be organic. We can make the switch. It is not impossible. It is right under our noses. We only need to embrace it !

lal Yisrael is facing difficult times. All of us have individual challenges that preoccupy our minds and our lives – the need for a refua sheleima, parnassa, a shidduch, having children, raising them . .. to name a few. So too, we look for an appropriate response to the tragedies, R”l, that have rocked our communities. The Midrash relates that when Klal Yisrael needed rain R’ Tanchuma proclaimed fast days to arouse Heavenly mercy. When it seemed that the drought would not be terminated through the fasting, R’ Tanchuma requested that the masses perform the mitzvah of tzedakah. One particular individual encountered his ex-wife who had fallen upon difficult times and pleaded to him for help, whereupon he gave her much-needed funds. The incident became known to R’ Tanchuma, who sent for him in order to clarify the matter. Upon hearing the account, R’ Tanchuma called out, “Ribono Shel Olam, this man is a human being with a cruel nature, and not obligated to support her; yet he acted mercifully and gave her assistance. Doesn’t it follow that You should act with mercy towards Your children, for whose maintenance You are responsible?” Without delay, it began to rain. This story illustrates vividly the tremendous power of chessed. Yet another lesson exudes therein. Rav Chaim Shmulevitz cites this Midrash in his classic

Sichos Mussar (5733, maamar 29) to convey the idea that sheviras hamiddos, eradicating undesirable qualities of character, carries tremendous potent for awakening Heavenly compassion and abrogating evil decrees, R”l. The Rosh Yeshivah notes several examples from the Gemara and Medrash in which an individual conquered a personality limitation, thus effecting an outpouring of rachmei Shomayim. What might this concept mean for us, in our times? What could this lesson mean in terms of successfully weathering individual trials and problems that seem to confront so many? Is it possible that such efforts may play a role in determining what type of year is destined for us? One of the pivotal middos is that of anavah, humility. Sefer Chovos Halevovos in Shaar Hakeniah says, “Rosh hateshuvah: Hashiflus v’hashachus v’hakeniah,” the beginning of teshuvah is lowliness, acquiescence and humility, as it says, ‘My people … shall humble themselves, pray and seek My compassion, and turn from their evil ways” (Divrei Hayamim II: 7:14). Sefer Orchos Tzaddikim in Shaar Ha’anavah tells us that “Ha’anavah shoresh ha’avodah,” humility is the root of Divine service, and that it earns us favor in Hashem’s eyes, as Mishlei teaches, “To the humble He gives favor” (3:34), which in turn enables our tefillos to be more readily answered and our mitzvos to be accepted joyously by Hashem.

Besides the spiritual benefits, cultivating humility will enhance everyday living in various ways. One of the benefits of humility is that it assists us in dealing with insults. It is a most formidable challenge to resist responding in kind to an insult, an experience to which almost everyone can relate. Yet, being ma’aver al midosov, refraining from responding in kind to someone who insults us, brings forgiveness for sins, since it compels Hashem’s manifestation of the Attribute of Din (Justice), in a manner of “measure for measure,” to abstain from analyzing our improper behavior (see Rosh Hashanah 17a with Rashi). Finding the ability within ourselves to combat arrogance and act with humility is a formidable task but we can slowly train ourselves in this direction. Iggeres HaRamban, the famous letter of instruction that the Ramban penned to his son, speaks about the merits of this precious middah and writes that by distancing oneself from anger, the quality of anavah will enter one’s heart. Furthermore, the Ramban writes, through humility, one will gain yiras Shamayim, and acquisition of these qualities will enable one to be samech b’chelko, happy with his lot. The Ramban himself wrote that its recitation would facilitate having one’s tefillos answered. The Pele Yoetz (in his section on atzvus) echoes the Ramban’s words when he says that arrogance leads to sadness, since one MAGAZINE

is frustrated when others act contrary to his will or he is not treated with the honor he feels he deserves. That a humble person is more predisposed to experience simcha is significant for the Lev Simcha of Ger taught that simcha, besides serving as a tool in avodas Hashem, serves as a segula for attaining salvation. Once, someone who lacked parnassa bemoaned his situation to him. The Lev Simcha advised him to be b’simcha. “How can I be b’simcha when I am beset by such a problem?” the person responded. The Rebbe smiled encouragingly and countered, “What won’t a person do in order to make a living!” Humility involves moving away from self-centeredness and concerning ourselves with how our actions impact on others. There is a story of a childless couple who were chassidim of the great tzaddik Reb Moshe of Rozvedov. The husband would travel to his Rebbe each year for the Yomim Noraim, when Reb Moshe would bless him that he merit offspring, but the brachos had yet to be fulfilled. Once, he met Reb Moshe’s brother Reb Meir of Dzikov, also a lofty personage, to whom he poured out his tale of woe. Reb Meir suggested to this Yid that he daven with him on the forthcoming Yomim Noraim, after which a yeshuah would ensue. The Yid was in a quandary. He had gone to the court of Reb Moshe for so many years. How could he go to Reb Meir instead? He went to discuss the matter with his Rebbe, who told him wholeheartedly that he should daven with Reb Meir on Rosh Hashanah and Yom Kippur and expressed the hope that he would be helped. With Reb Moshe’s approval, the Yid prepared to travel to Dzikov for the Yom Hadin. However, ultimately he changed his plans and went to daven with Reb Moshe as usual. The Rebbe was surprised to see his beloved chassid among the crowd and summoned him for an explanation. The Yid told him: “I discussed the matter with my wife. It is common knowledge that I am your chassid and people assume you have given us brachos for children, albeit the brachos have not come to fruition. If I daven with Reb Meir and we merit to have a child this year, people will conclude that your brother is a greater tzaddik than you. We cannot see ourselves causing an affront to your honor and therefore I decided to cancel the trip to Dzikov. The Rebbe was deeply moved and said, “For such sensitivity alone you deserve to have a child.” And so it was that a son was born to them that year. The massive flooding that recently overtook Pakistan killed thousands and left millions homeless. That and other disasters in the world drive home the lesson that man is limited, despite his progress in technology and other areas. Similarly, the breakdown of the U.S. economic system over the last couple of years sends us a cogent message that we are not in control, bringing to mind the words of the Navi Chaggai “Li hakessef v’li hazahav na’um Hashem” – the silver is Mine and the gold is Mine, says Hashem, a most compelling hint to us to humble ourselves before Hashem. May our efforts in striving to acquire the middah of humilty and all desirable middos stand us in good stead towards being inscribed for a kesivah v’chasimah tova and meriting Hashem’s bountiful blessings.

Head Weren’t the good old days a lot simpler? ROCHEL BURSTYN

R

otary phones were the greatest. They rang, and we knew where they were: plugged into the walls. Simple. Now, they are wherever we or our family members have left them. In other words, they could be in any number of weird and wonderful places. I’ll be looking for it frantically, twisting, turning, throwing cushions off the couch, opening the fridge (you NEVER know) as it rings and then suddenly, “Hey, who put the phone in the tool-box?” Usually it’s best not to ask too many questions for the sake of shalom bayis. It’s ironic how the development of modern technology has aided and abetted us in any number of ways. Now we can throw our clothes into a machine instead of standing by the river all day. Throw dishes into a machine instead of standing by the sink and getting soapy hands. We can talk on the phone in the park, in stores, on buses—no need to make small talk with passing acquaintances or old teachers because now you can be on the phone with your oldest child as he babysits for the first time while you’re out. It’s lovely, really. But with all this “less” technology—handless, wireless, cordless—also comes other “less’s”—less polite, less friendly, less approachable.

But back to the house phone. In the house, it’s considered okay (polite to ignore the gifts Hashem has showered us with) to speak on the phone all day if your kids don’t mind. And of course, they don’t mind—it’s just that they need you as soon as the phone rings. When it gets lost, you end up looking like a maniac. Running from room to room, cocking your ear, exclaiming, “I think I hear it in the other room!” and dashing back and forth. In the olden days, it was never good when you heard a distant ringing, even worse if you couldn’t find the source. But most people have a resourceful solution. They’re called three-year-olds. Much better at finding phones than adults are. Maybe it’s because they’re closer to the ground. At least that’s what I tell my kids. They even think it makes sense. Note to self: Anything makes sense to little kids if you say it with a straight face. So there I was hearing my phone ring all day and walking in circular routes

around my home, throwing blankets off beds to look underneath but to no avail, waiting for my three-year-old to come home from school so he could find the phone for me. Of course the moment he came home, my phone was silent. But I knew it was charged. (That’s really the worst that can happen. I have a cousin who lost a phone that wasn’t charged, so it didn’t ring at all. And we all know what that serious condition means: L.T.P. [Lost Till Pesachcleaning]. They had to go out and buy another one for the remaining ten months of the year.) So I was able to do what brilliant, resourceful people do in this scenario: call my house line with my cell phone. This one time, I sat on the couch while my three-year-old looked all over for the phone. He was in the other room when I finally heard his sweet little voice on the other end of the line: “Hello?” What was the quickest way to get him to give me the phone? “Hi, Avi, is your mommy there?”

I heard footsteps approach. Avi was smiling and talking into the phone. “Yes, who is this?” By this time, he was standing in front of me, but he still hadn’t realized it was me (and I wasn’t even putting on voices!), though he was flabbergasted when he noticed that the lady on the other end of the phone was saying the exact same thing as his mommy in front of him. Finally, laughing, I explained to him that I had called the phone and he was speaking to me. Now whenever the phone rings, he thinks it’s me. He’ll answer the phone with “Hi, Mommy!” which always gives me a bit of explaining to do when I take the phone from him! But I do have to say this, telemarketers appreciate it. They’re confused, but appreciative. When my husband calls the house and my son answers, “Hi, Mommy,” my husband assumes it’s a sign of how much I’m actually on the phone. I told him, believe me, I’m not on the phone as much I’d like to be. If only I knew where it was half the time!

It’s just that they need you as soon as the phone rings.

Judgmental Day

Two women’s lives intersect. But who is judging who on this fateful day?

I

t had been a busy week, and Mrs. Miller couldn’t wait to close the shop and go home. Piles of work awaited her at home, and the more she thought about it, she became increasingly agitated. Life is so busy, she thought wistfully, longing for some peace and quiet with which to spend her time. Mrs. Miller owned a small bookstore on a quiet street off the main avenue. For the most part, she enjoyed her work. Seeing the joy and anticipation on a child’s face as she held onto her new book, and the expectation and hope that a woman clung to as she embraced her means of occasional escape, made it all worthwhile. But sometimes resentment overshadowed her feelings of pleasure and accomplishment. With a holiday approaching on the home front, the work was nonstop and overwhelming. The store was hectic as customers

came and went, asking her everything from “What’s good?” to “Have you read this?” to “Do you have anything for my fourteen-year-old?” She had to pick up after the customers and their children as they overturned her neat piles of books and pulled books off of shelves, leaving them on the reading table. She had an inordinate amount of shopping and planning and cooking and baking to do for her own family. It just isn’t fair, she griped to herself, pushing an unruly book back into place a bit forcefully, since there was no one in the store at that moment. In the lull, she allowed herself the luxury of letting her true feelings surface. Brushing her shoulder-length blond wig into submission with her fingers, she pulled at her oversized, comfortable black sweater. I’m tired. This is too much work for one person to do! A jingling sound came from the front

of the store, announcing a new customer. Mrs. Miller took a deep breath to drive away the sullenness and rising hostility and forced her face to smile. “Can I help you?” she asked the young woman who entered the store with a double carriage and a child at each side. “Oh, I’m going to browse first, if you don’t mind.” The young woman’s dark wig was coiffed to perfection, parted in the middle and finishing just short of her shoulders. Her proficiently applied makeup matched her complexion perfectly. The children, all four of them with wide eyes and large smiles, were dressed in matching colors, and their hair appeared freshly combed and styled. “Sure, go ahead. Look around,” Mrs. Miller said cordially. “Take your time.” Secretly, she hoped the woman would just make her purchases and leave her to her griping. She watched as the

young mother maneuvered her double stroller expertly through the aisles lined with books. She settled in the nook Mrs. Miller had especially designed for this purpose, an eight-foot square area with a small table and a few chairs on a colorful carpet decorated with numbers and letters. The children took their seats as their mother handed each one a book appropriate for his age and then looked up at Mrs. Miller. “This is okay, right? You aren’t closing yet, are you?” “Not for another hour, no,” Mrs. Miller answered. But inside, the griping and resentment had begun to flower anew. “Okay, thanks.” She returned her attention to the children, reading them the stories and discussing which book would be the best purchase. Oh, come on already! Just buy them one each. They’re not that expensive! As she kept herself busy with paperwork, Mrs. Miller couldn’t help overhearing the voices that wafted towards her from the other side of the store. “Mommy, this book looks good. I think we should buy this one,” the little girl said. “Let’s see. Everyone will have a chance to look at a few books and then we’ll decide.” Surreptitiously, the woman looked at the back of the book where the price was located. You can’t be that cheap! The book costs under five dollars. I just don’t get such people. They have money for the best clothes, and then they

make a big deal about such a small purchase like a children’s book. I’ll be lucky if she spends any money at all in this store. And here she’s taking up so much of my time. Mrs. Miller’s frustration mounted as the babies started asking for books. But the woman patiently attended to the situation by holding up a book in front of them, reading the story and showing them the pictures. Mrs. Miller watched now with some admiration mixed with her irritation. She wished she could strike up a conversation with this woman, if only to find out how she managed to stay so calm. What she was doing on a day like this, when most women were busy in the kitchen or running errands, spending time with her children in a bookstore? Where was her husband? Why wasn’t he helping her? Mrs. Miller knew that her annoyance was turning into a silent rage. But she couldn’t stop herself. Why? Why do the women put up with it? Why do we work so hard and let our lives pass by this way? Why are so many women working outside of the house when they have their own twenty-four-seven job right in the comfort of their own home? Why are children only the responsibility of the mothers, when they belong just as well to the fathers? I just don’t get it! Why am I even here? I should be home soaking my feet in a warm footbath and taking care of myself! “Excuse me.” The woman was in front of her. She smiled shyly, almost tiredly, and said, “We’ve made our decision.” In her hand she held the smallest and cheapest book in the entire store. Speechless, Mrs. Miller stared at her.

Was she serious? After spending a full hour in the store, reading tens of books to her children, this is what she decides to buy? Why even buy anything at all? Her face must have revealed her kaleidoscopic thoughts, for the woman looked hurt. For a moment, her smile faded. But then it was back, firmly fixed in place. “We’ve decided to buy this great book. How much is it?” She said the words with a funny kind of conviction, as if she didn’t care one bit what anyone thought of her. What chutzpah! How is she not embarrassed to enter my store, waste my time, treat it like it’s a day at the park, and then make such a tiny purchase? Like my time isn’t worth much. Like my work is mere play. Like my parnassah means nothing! Taking a deep breath, Mrs. Miller snatched the book from the woman’s hands. She thrust it into a bag and rang it up on the cash register. “That will be $2.29,” she said brusquely. That was the best she could do under the

circumstances. “Thank you very much,” the woman said, her smile now completely wiped from her face. “Kinderlach, everyone say thank you to this nice lady who let us see her books.” An uneven chorus of thank you’s emanated from the angelic looking children, and Mrs. Miller could only nod back. Poor children, to belong to such a stingy mother. How are they so well behaved? And how does she deserve such good children when so many good people I know are blessed with the most active and ill-adjusted children? It simply boggles the mind! * * * As Shevy left the little bookstore, a wave of nausea overwhelmed her. The store owner hadn’t said much, but her

hatred and antipathy were plainly visible on her face. Her mouth was pinched, obviously trying to hold back a torrent of angry remarks. Well, Shevy thought as she walked down the noisy and bustling streets towards her apartment, she may be right to think lowly of me. I tried to make an outing of it. I tried to make everyone happy. If one person wasn’t, I can’t be to blame. What was her problem? Why was she so hostile? The store was quiet. We didn’t make a mess. I didn’t keep her busy with questions and conversation. Weren’t those chairs there for a reason? I don’t get it. The weight in her chest wouldn’t subside. Instead, it spread toxic fumes throughout her body. She felt she had done something wrong, but she didn’t know what. With enormous effort, she

But then she opened the door and was greeted by something that made the weight in her chest disappear in a hurry. Ten feet from the front door was the couch. And on the couch, with blankets covering his thin and emaciated frame, was her husband. She put the baby on the floor and greeted him with a smile. “You’re out of bed! How are you feeling?” “Pretty good.” He offered a ghost of a smile as he tried to sit

up. “Are you okay? Can I get you anything?” She fawned over him for a minute until she realized the children were standing off to the side, their faces a mix of uncertainty and alarm. “Look, kinderlach. Tatty is out of bed. Do you know what that means?” It was apparent on their faces that they didn’t. So she explained, “It means that Tatty is feeling better. Isn’t that great? Baruch Hashem!” “Come here, kids. I want to hold you for a minute,” their father said quietly. The children looked at their mother for approval, and then, having received it, gingerly eased closer to the couch. He held up weak arms and enveloped his children in them, kissing them on their foreheads. “I’m feeling so much better, baruch Hashem, that I could maybe go back to work next week.” “Not so fast,” exclaimed Shevy. “We’ll see what the doctor says.” “I haven’t been to work in months. I can’t wait to get back and be a part of life again! And then you wouldn’t have to skimp so much on what you need.” “I wouldn’t say it isn’t difficult, but we’re managing,” Shevy said quietly. She wished she could share with her husband her thoughts on today’s excursion. But she wouldn’t burden him now. Just like she wouldn’t trouble him with the fact that her one and only wig was getting so old it was barely holding together. And that most of the clothing in the children’s closet were worn and outgrown. She wouldn’t tell him that her own clothes have seen better days. She only hoped that he’d be feeling better soon. Back to normal; back to the way it was before. The mood in the small apartment, for the first time in months, changed from gloomy to cheerful. “You know, Shevy, what you’ve done…” her husband started. A catch in his throat stopped him, but only for a moment. “What you’ve done for me, and for this family… I couldn’t have gotten through this without you.” She waved a hand at him. “Oh, stop MAGAZINE

Apples and Honey Cake for a Sweet New Year Nothing like serving a beautiful apple pie to tantalize your guests. This flower shaped cake will certainly please all those around your table. Ingredients 3 cups flour 1 cup vegetable oil 1 Tbs baking powder 3/4 cup honey 3/4 cup brown sugar 4 eggs 1 tsp salt 3 apples, cored and thinly sliced 2 tsp cinnamon (1 tsp for batter and 1 tsp for apples) 2 1/2 tsp vanilla 1/4 cup orange juice Directions Preheat your oven to 325 degrees F. Core and cut your ap-

ples into thin slices. In a large bowl, mix together the flour, baking powder, salt and 1 tsp of cinnamon. In a separate bowl whisk together eggs, oil, honey, brown sugar, vanilla and orange juice. Add the liquids to the bowl with the flour and stir until everything is combined. In a greased 9X9 inch baking pan, pour in about 1/3 of the batter then make an even layer of apple slices. Pour in the next third of batter. Make your next layer of apple slices. Top off with the last of the batter, but before adding you apple layer, sprinkle the apple slices with the remaining tsp of cinnamon. Finally, add your last layer of apples. Bake for about 1.5 to 2 hours (use a toothpick test to see if the cake is cooked all the way through). Preparation 20 minutes Serves 12

Honey Cinnamon Bundt Pan Cake Impress your family with this beautiful Bundt pan cake that brings the seasons best to your table. Simple and delicious. INGREDIENTS: 3½ cups all-purpose flour 1 Tbs baking powder 1 tsp baking soda ½ tsp kosher salt 4 tsp ground cinnamon ½ tsp ground cloves ½ tsp ground allspice 1 cup vegetable oil 1 cup honey 1½ cups granulated sugar ½ cup light brown sugar 3 eggs, at room temperature 1 tsp vanilla extract 1 cup brewed coffee, warm ½ cup orange juice ¼ cup whiskey ½ cup slivered or sliced almonds (optional) DIRECTIONS: Preheat oven to 350°F. Generously grease your choice of pan i.e. Bundt pan , loaf pan or cupcake pan with non-stick cooking spray. Even if your pan is non-stick, still spray generously!

In a large bowl (or in the bowl of an electric mixer), whisk together the flour, baking powder, baking soda, salt, cinnamon, cloves and allspice. To another bowl whisk together all wet ingredients oil, honey, white sugar, brown sugar, eggs, vanilla, coffee, orange juice and whiskey, if using till frothy Add dry ingredients to wet ingredient mixture and combine slowly scraping the sides and bottom of the bowl, making sure that no ingredients are stuck to the bottom until well blended making sure not to over mix. Spoon batter into your choice of prepared pan(s). Sprinkle top of cake(s) evenly with almonds, if using. (If you are using a Bundt pan, sprinkle the almonds into the bottom of the pan before pouring the batter in). Bake until the cake springs back when you gently touch the cake center and a toothpick inserted in the center comes out with just a few moist crumbs, almost clean. For tube and Bundt pans, this will take 60 to 75 minutes, loaf cakes, about 45 to 55 minutes. For cupcakes baking time is 40 to 45 minutes. Let cake stand fifteen minutes before removing from pan. Serve warm or at room temperature. Leftover cake can be stored at room temperature, covered tightly. Preparation 20 minutes Serves 12

Fresh Apple Squares You’ll love these simple apple squares that are ever so simple to make. It should not intimidate the beginner it can be put together by the teenagers in the house. The dough does double-duty as the crust and streusel topping. To bring these up a level try them topped with cinnamon ice cream. Ingredients 1 1/2 cups all-purpose flour 1 cup old-fashioned oats 1 cup packed light brown sugar 1 tsp freshly grated lemon zest 3/4 tsp baking powder 1/2 tsp salt 1/2 tsp ground cinnamon 1/4 tsp ground nutmeg 3 Tbs canola oil 1/4 cup apple juice concentrate, thawed 2 tart medium apples, such as Granny Smith, peeled, cored and thinly sliced

1/4 cup coarsely chopped walnuts Directions Preheat oven to 350 °F. Coat a 9-inch square baking pan with cooking spray. Combine flour, oats, brown sugar, lemon zest, baking powder, salt, cinnamon and nutmeg in a large bowl. Work in oil and apple juice concentrate with your fingers until coarse crumbs form. Firmly press 2 cups of the oat mixture into prepared pan. Arrange apples over crust in three rows. Mix walnuts into remaining oat mixture. Sprinkle walnut mixture evenly over apples and pat firmly into an even layer. Bake until top is golden brown and apples are tender when pierced with a sharp knife, 30 to 35 minutes. CHUNKY PECAN PIE BARS INGREDIENTS: For the Crust: 1½ cups all-purpose flour ½ cup (1 stick) margarine or coconut oil ¼ cup packed brown sugar Filling: 3 large eggs ¾ cup corn syrup ¾ cup granulated sugar 2 Tbs margarine or coconut oil melted 1 tsp vanilla extract 1¾ cups coarsely chopped semisweet or bittersweet chocolate (or chocolate chunks in a bag!) 1½ cups chopped pecans DIRECTIONS: Preheat oven to 350°F. Grease a 9x13-inch baking pan.

For the crust, mix together the flour, margarine or coconut oil and brown sugar until crumbly. Press into the baking pan and bake for 12-15 minutes or until lightly brown. For the filling, beat the eggs, corn syrup, sugar, coconut oil and vanilla extract with a wire whisk. Stir in the chocolate chunks and pecans. Pour evenly over the baked crust and bake for 25-30 minutes or until set. Allow to cool completely and cut into bars. Old Time Apple Pie Cookies Apple pie with lattice top was always ever so popular and it reminds me of a favorite of our childhood. Here is an adapted cookie made in apple pie form. They are elegant when served individually and can be easily transported anywhere. Apple Pie Cookies can be enjoyed as mini versions of your favorite dessert anywhere at any time! Just thinking about them makes my mouth water. Feel free to double the recipe to fit your needs. I favor making my own apple pie filling. Cook 4 Cortland apples with 2 tablespoons sugar or maple syrup (my preference) in 1 cup sugar until totally soft. Allow to cool and use as needed. Leftovers are delicious for compote. Ingredients 1 Tbs all‐purpose flour 1 (14.1‐ounce) package refrigerated pie dough 1/2 cup maple syrup 2 cups apple pie filling, coarsely chopped 1 egg 2 tsp water 1/4 cup sugar 1 tsp ground cinnamon Directions

Preheat oven to 350 degrees F. Coat 2 baking sheets with cooking spray. On a flat surface, lightly sprinkle flour, and then roll out pie dough. Alternatively use flaky dough sheets. Spread a thin layer of maple syrup on one crust. Spoon apple pie filling evenly over syrup. Cut 1/2‐inch‐wide strips from remaining pie dough. Arrange strips first in one direction across pie, then in opposite direction, creating a lattice pattern. Using a 3‐inch cookie cutter cut out circles and place on baking sheets. In a small bowl, whisk egg and water. In another small bowl, mix sugar and cinnamon. Brush tops of cookies with egg wash, and then sprinkle with sugar mixture. Preparation 15 minutes Makes 12 mini pies Variation Use precut small puff pastry squares to line oiled cupcake tins and fill with desired filling such as apples or cherry pie and cut 1/2 inch wide strips and cover cupcakes with strips in opposite directions to form a lattice top as shown . ROSH HASHANAH fun 5777 WORD FIND

Rosh Hashanah is observed on the first two days of Tishrei. Rosh Hashanah literally means “Head of the Year” as it marks the beginning of the Jewish year. It is actually the anniversary of mankind, the day that HaShem created Adam and Chava. The primary theme of the day is to accept HaShem as King. The central mitzvah of Rosh Hashanah is the sounding of the shofar, the ram's horn. The shofar is sounded on both days of Rosh Hashanah, but it is not sounded on Shabbat. The sound of the shofar represents the trumpet blast when people proclaim their king, as well as a call for teshuva (repentance). The day is the first of the “Ten Days of Repentance” which ends on Yom Kippur. The shofar is blasted 100 times. The traditional greeting on Rosh Hashanah is "May you be inscribed and sealed for a good year". It is also customary to go to a body of water and symbolically cast our sins into it and recite Tashlich prayers. On Rosh Hashanah, candles are lit each night and Kiddush is said at the evening and daytime meals.
