Artificial Sweeteners May Disrupt Body’s Blood Sugar Controls By Kenneth Chang

R

esearchers say gut bacteria changed in subjects that consumed artificial sweeteners, leading to glucose intolerance.Credit Weizmann Institute of Science Artificial sweeteners may disrupt the body’s ability to regulate blood sugar, causing metabolic changes that can be a precursor to diabetes, researchers are reporting. That is “the very same condition that we often aim to prevent” by consuming sweeteners instead of sugar, said Dr. Eran Elinav, an immunologist at the Weizmann Institute of Science in Israel, at a news conference to discuss the findings. The scientists performed a multitude of experiments, mostly on mice, to back up their assertion that the sweeteners alter the microbiome, the population of bacteria that is in the digestive system. The different mix of microbes, the researchers contend, changes the metabolism of glucose, causing levels to rise higher after eating and to decline

more slowly than they otherwise would. The findings by Dr. Elinav and his collaborators in Israel, including Eran Segal, a professor of computer science and applied mathematics at Weizmann, are being published Wednesday by the journal Nature. Cathryn R. Nagler, a professor of pathology at the University of Chicago who was not involved with the research but did write an accompanying commentary in Nature, called the results “very compelling.” She noted that many conditions, including obesity and diabetes, had been linked to changes in the microbiome. “What the study suggests,” she said, “is we should step back and reassess our extensive use of artificial sweeteners.” Previous studies on the health effects of artificial sweeteners have come to conflicting and confusing findings. Some found that they were associated with weight loss; others found the exact opposite, that people who drank diet soda actually weighed more.

Some found a correlation between artificial sweeteners and diabetes, but those findings were not entirely convincing: Those who switch to the products may already be overweight and prone to the disease. While acknowledging that it is too early for broad or definitive conclusions, Dr. Elinav said he had already changed his own behavior. “I’ve consumed very large amounts of coffee, and extensively used sweeteners, thinking like many other people that they are at least not harmful to me and perhaps even beneficial,” he said. “Given the surprising results that we got in our study, I made a personal preference to stop using them. “We don’t think the body of evidence that we present in humans is sufficient to change the current recommendations,” he continued. “But I would hope it would provoke a healthy discussion.” In the initial set of experiments, the scientists added saccharin (the sweetener in the pink packets of Sweet’N Low),


sucralose (the yellow packets of Splenda) or aspartame (the blue packets of Equal) to the drinking water of 10-week-old mice. Other mice drank plain water or water supplemented with glucose or with ordinary table sugar. After a week, there was little change in the mice that drank water or sugar water, but the group getting artificial sweeteners developed marked intolerance to glucose. Glucose intolerance, in which the body is less able to cope with large amounts of sugar, can lead to more serious illnesses like metabolic syndrome and Type 2 diabetes. When the researchers treated the mice with antibiotics, killing much of the bacteria in the digestive system, the glucose intolerance went away.

At present, the scientists cannot explain how the sweeteners affect the bacteria or why the three different molecules of saccharin, aspartame and sucralose result in similar changes in the glucose metabolism. To further test their hypothesis that the change in glucose metabolism was caused by a change in bacteria, they performed another series of experiments, this time focusing just on saccharin. They took intestinal bacteria from mice that had drunk saccharin-laced water and injected them in mice that had never been exposed to any saccharin. Those mice developed the same glucose intolerance. And DNA sequencing showed that saccharin had markedly changed the variety of bacteria in the guts of the mice that consumed it. Next, the researchers turned to a study they were conducting to track the effects of nutrition and gut bacteria on people’s longterm health. For 381 nondiabetic participants in the study, the researchers found a correlation between the reported use of any kind of artificial sweeteners and signs of glucose intolerance. In addition, the gut bacteria of those who used artificial sweeteners were different from those who did not. Finally, they recruited seven volunteers who normally did not use artificial sweeteners and over six days gave them the maximum amount of saccharin recommended by the United States Food and Drug Administration. In four of the seven, blood-sugar levels were disrupted in the same way as in mice. Further, when they injected the human participants’ bacteria into the intestines of mice, the animals again developed glucose intolerance, suggesting that effect was the same in both mice and humans. “That experiment is compelling to me,” Dr. Nagler said. Intriguingly — “superstriking and interesting to us,” Dr. Segal said — the intestinal bacteria of the people who did experience effects were different from those who did not. This suggests that any effects of artificial sweeteners are not universal. It also suggests probiotics — medicines consisting of live bacteria — could be used to shift gut bacteria to a population that reversed the glucose intolerance. Dr. Frank Hu, a professor of nutrition and epidemiology at the Harvard School of Public Health who did not take part in the study, called it interesting but far from conclusive and added that given the number of participants, “I think the validity of the human study is questionable.” The researchers said future research would examine aspartame and sucralose in detail as well as other alternative sweeteners like stevia.

Naming a Baby A name defines a person’s essence. Choose carefully.

T

he naming of a Jewish child is a most profound spiritual moment. The Sages say that naming a baby is a statement of her character, her specialness, and her path in life. For at the beginning of life we give a name, and at the end of life a “good name” is all we take with us. (see Talmud – Brachot 7b; Arizal – Sha’ar HaGilgulim 24b) Further, the Talmud tells us that parents receive one-sixtieth of prophecy when picking a name. An angel comes to the parents and whispers the Jewish name that the new baby will embody. Yet this still doesn’t seem to help parents from agonizing over which name to pick! So how do we choose a name? And why is the father’s name traditionally not given to a son – e.g. Jacob Cohen Jr., Isaac Levy III? Can a boy be named after a female relative? Can the name be announced before the Bris?

Jewish Customs

Naming a Jewish baby is not only a statement of what we hope she will be, but also where she comes from. Ashkenazi Jews have the custom of naming a child after a relative who has

passed away. This keeps the name and memory alive, and in a metaphysical way forms a bond between the soul of the baby and the deceased relative. This is a great honor to the deceased, because its soul can achieve an elevation based on the good deeds of the namesake. The child, meanwhile, can be inspired by the good qualities of the deceased – and make a deep connection to the past. (Noam Elimelech - Bamidbar) What if you would like to use the name of a relative who passed away, but another living relative has the same name? In that case, if the living relative is closely related to the baby – parent, grandparent, or sibling – then you should not use the name. Otherwise, it’s okay. Sephardi Jews also name children after relatives who are still alive. This source is from the Talmud, which records a child named after Rabbi Natan while he was still alive (Shabbat 134a). Some customarily choose a name based on the Jewish holiday coinciding with the birth. For example, a baby born at Purim-time might be named Esther or Mordechai. A girl born on Shavuot might be named Ruth, and a child born on Tisha B’Av, the Jewish day of mourning, might be named Menachem or Nechamah.

Similarly, names are sometimes chosen from the Torah portion corresponding to the week of the birth. Many names and events are mentioned in each Torah portion, offering a spiritual connection between the baby and that particular biblical figure.

Inner Meaning

In Hebrew, a name is not merely a convenient conglomeration of letters. Rather the name reveals its essential characteristic. The Midrash (Genesis Raba 17:4) tells us that the first man, Adam, looked into the essence of every creature and named it accordingly. The donkey, for example, is characterized by carrying heavy, physical burdens. So in Hebrew, the donkey is named chamor – from the same root as chomer, which means materialism. (Contrast this with English, where the word “donkey” doesn’t reveal much about the essence of a donkey!) The same idea applies to names of people. For example, Leah named her fourth son Judah (in Hebrew, Yehudah). This comes from the same root as the word “thanks.” The letters can also be rearranged to spell out the holy Name


of Hashem. The significance is that Leah wanted to particularly express her “thanks to Hashem.” (Genesis 29:35) It is important to choose a name that will have a positive effect, since every time it is used the person is reminded of its meaning (Midrash Tanchuma – Ha’Azinu 7). The person who is called Judah is constantly reminded of how much gratitude we should have toward Hashem! Esther, the hero of the Purim story, is a name which comes from the word “hidden.” Esther was known to be a very beautiful woman (she was chosen to be queen), but whatever her external appearances, her hidden internal qualities were even more beautiful. Another example is the popular name “Ari,” Hebrew for lion. In Jewish literature, the lion is a symbol of a gogetter, someone who sees the opportunity to do a mitzvah, and pounces on it. (see Code of Jewish Law O.C. 1) Of course, there are bad names, too. You won’t want to choose the name “Nimrod,” since the very name means “rebellion.” And in biblical times, the ruler Nimrod threw Abraham into a fiery furnace as an act of rebellion against Hashem. If you want to name a male after a female, you should try to keep as many of the letters of the name as possible. For example, Dina could be interchangeable with Dan, or Bracha and Baruch.

More Guidelines

It’s a good idea to give a child a Hebrew name that can be used in English also – e.g. Miriam, David, Sarah, Noah, Rachel. This way, your child not only has a Hebrew name, but he’ll use it, too! This can be an important hedge against assimilation; the Midrash (Bamidbar Raba 20:21) says that the Jewish people were redeemed from Egypt partly in the merit of having kept their Jewish names. As a child, I had one uncle who always called me by my Jewish name (“Shraga” means candle), a constant reminder to maintain my Jewish identity. There is hesitancy to use the name of a person who died at a young age, or suffered an unnatural death. The reluctance stems from the fear that the misfortune may, in a spiritual manner, be carried over to the new bearer of the name. Although “dying young” is a relative term, Rabbi Moshe Feinstein offers some guidelines:

If a person died a natural death and left children, this is not considered “bad fortune” which would preclude the use of the name. Both the prophet Samuel and King Solomon died at the “young” age of 52, yet traditionally their names have always been used by Jews. If, however, a person died an unnatural death, then Rabbi Feinstein suggests that the name be altered. It may be for this reason that when naming after the prophet Isaiah

– who was murdered – many Jews omit the last letter of his name (in Hebrew, Yeshaya instead of Yeshiyahu). (Yam Shel Shlomo – Gittin 4:30) Rabbi Yaakov Kamenetzky considered the age of 60 the demarcation between young and old. The Talmud (Moed Katan 28a) relates that Rabbi Yosef made a party when he reached 60, celebrating the beginning of longevity. Contrary to popular perception, it is not forbidden to announce the name of a baby before his Bris. In a metaphysical sense, however, the child does not actually “receive” his name until the Bris. This is based on the fact that Hashem. changed Abraham’s name in conjunction with his Bris – at age 99 (Genesis 17:15). Also, the boy only receives the full measure of his soul at the Bris, and a person cannot truly be “named” until attaining that completion. (see Zohar – Lech Lecha 93a, Ta’amei Minhagim 929)

They hold the secrets of creation, and of the future. They are a road map to the navigator, a challenge to the astronomer, and a symbol of quest to the explorer. Those sparkling lights in the vast darkness seem so small, yet we know they are not. Their numbers reach infinity, but all are special to Hashem, and “He gives each a name.” Each has its unique purpose, and no two are exactly the same. The Torah often compares the Jewish people to the stars (Genesis 15:5). For just as the stars eliminate the darkness of night, so the Jewish people enlighten the darkness of the world with the truth of Torah. Just as stars guide travelers along their way, the Jewish people give moral and ethical direction to mankind. As the stars hold of the secrets of the future, world history revolves around the Jewish people, leading inexorably to the final redemption. Just as massive stars appear tiny, so the Jewish people seem insignificant in comparison to a world population of billions. Yet there exists an underlying understanding of the contributing force and massive potential of the Jewish people. Hashem. gives names to each star, for they are dear to Him, and likewise He takes part in naming every Jew. Like the stars, no two Jewish souls are exactly alike. Every Jew has his unique function and special mitzvah in which he excels. Every Jew shines a different light. In the days of redemption, the love of Hashem. for His children will be ever so clear. As we read in the haftarah every year after Tisha B’Av: “Lift your eyes on high and behold Who has created these things [the stars], that bring out their host by number. He calls them all by names; because of the greatness of His might and because He is strong in power, not one is missing” (Isaiah 40:26). At the final redemption, every Jew will return to Jerusalem – “not one will be missing.” Each one will again be counted, and to each one Hashem will give a name.

t was a very hot day in late August. Chavatzelet leaned on the heavy door to Klonimus Kukafka’s Judaica shop and greeted the rush of cold air with relief. “Yes?” asked the bearded man behind the counter upon hearing the tinkle of the bell. “You sell men’s prayer shawls? Tallitot?” Chavatzelet had seen several samples of men’s prayer shawls displayed in the front window. “Of course. What size?” Chavatzelet wrinkled her brow. “How do you figure out the size?” she queried. “According to your husband’s height,” Mr. Kukafka explained. Chavatzelet studied the shelves of books, running her eyes up and down the corners. “How can I know?” she replied finally. “I’m not married yet.” “Oh, excuse me,” Klonimus apologized. “Is the prayer shawl for your father, then?” Chavatzelet shook her head in the negative. “Brother? Uncle? Nephew? Cousin?” Klonimus was not blessed with an overabundance of patience. “No, no!” Chavatzelet protested. “I just want to buy a tallit.” “Don’t you know that women don’t wear tallitot?” Mr. Kukafka whispered, glancing to the sides to be sure his other customers were not listening. “Of course I know that. I need a tallit because I want to get married.” “And how will that help you get married?” Klonimus was puzzled. “I heard that it’s a segulah to find my intended partner in life,” Chavatzelet clarified. Mr. Kukafka sighed. “Me, I never heard about that segulah,” he admitted. “Don’t worry, sir. I will buy the tallit and Hashem will send the chatan.”

Mr. Kukafka shook his gray head, unsure whether to disapprove or sympathize, but a sale was a sale. “How tall do you expect your intended to be?” he asked, fingering the pile of yarmulkes on the counter. The young woman pursed her lips thoughtfully and then held her hand up a few inches over her own frame. “Like this?” The storekeeper nodded and chose a medium-sized prayer shawl, which he wrapped in tissue paper and put in a plastic carrying bag. After accepting payment from Chavatzelet, Klonimus returned to what he had been doing previously, tidying and rearranginging his merchandise. A few minutes later he raised his eyes and noticed that the girl was still waiting. “Do you need something else?” he asked. “No, thank you,” she replied gaily, her eyes never leaving the door. “You don’t expect your chatan to just walk in here right now, do you?” His bushy eyebrows rose in consternation. She smiled and nodded. The old man shook his head and frowned. Poor girl, he thought to himself, someone should help her. Just then the telephone rang. “Hello?” It was Aryeh Abutbul, an old acquaintance of Klonimus he hadn’t spoken to in years! While Mr. Kukafka enjoyed catching up, he noticed that his client was still waiting expectantly at the door even as other patrons entered, made their purchases, and left again. “Let me tell you why I called,” Abutbul’s voice was so clear it sounded as if he were in the other room instead of up north in Nahariya. “You remember my youngest son, Avi? He’s a fine

boy, but nothing is moving in the shidduch department. I thought to myself, who knows, maybe my old friend Klonimus knows someone, a girl who would make a good wife for my son.” “How old is the boy now?” Mr. Kukafka asked cautiously, watching Chavatzelet from the corner of his eye. “Well, on his next birthday he’ll be thirty-two,” Mr. Abutbul replied. “What age did you have in mind for a bride?” “Mid twenties. Maybe a little older? Nice looking. Educated.” Mr. Kukafka turned to the young woman waiting beside his door. “How old are you?” he inquired, sotto voce. “Twenty-eight,” she whispered conspiratorially. “You learned in seminary?” “Two years.” He nodded, returning to the phone. “What background are you looking for?” he asked. “Moroccan, of course!” responded Abutbul. “Where are your parents from?” Klonimus asked the young woman. “Marrakesh,” she responded proudly. “Aryeh, my friend,” Mr. Kukafka declared, “I have found your son’s bashert! What’s your name, girl? Chavatzelet Peretz? Give me your parents’ telephone number; I have to speak to them about a fine young man named Avi Abutbul.”

A week later Klonimus was dusting the shelves and humming a little tune. He was still on cloud nine from the shidduch that had been concluded between Chavatzelet Peretz and Avi Abutbul. “A match made in Heaven,” everyone agreed. Who would have

Head Weren’t the good old days a lot simpler? ROCHEL BURSTYN

otary phones were the greatest. They rang, and we knew where they were: plugged into the walls. Simple. Now, they are wherever we or our family members have left them. In other words, they could be in any number of weird and wonderful places. I’ll be looking for it frantically, twisting, turning, throwing cushions off the couch, opening the fridge (you NEVER know) as it rings and then suddenly, “Hey, who put the phone in the tool-box?” Usually it’s best not to ask too many questions for the sake of shalom bayis. It’s ironic how the development of modern technology has aided and abetted us in any number of ways. Now we can throw our clothes into a machine instead of standing by the river all day. Throw dishes into a machine instead of standing by the sink and getting soapy hands. We can talk on the phone in the park, in stores, on buses—no need to make small talk with passing acquaintances or old teachers because now you can be on the phone with your oldest child as he babysits for the first time while you’re out. It’s lovely, really. But with all this “less” technology—handless, wireless, cordless—also comes other “less’s”—less polite, less friendly, less approachable. www.NyBuzzMagazine.com I To advertise, call 718-513-9885


But back to the house phone. In the house, it’s considered okay (polite to ignore the gifts Hashem has showered us with) to speak on the phone all day if your kids don’t mind. And of course, they don’t mind—it’s just that they need you as soon as the phone rings. When it gets lost, you end up looking like a maniac. Running from room to room, cocking your ear, exclaiming, “I think I hear it in the other room!” and dashing back and forth. In the olden days, it was never good when you heard a distant ringing, even worse if you couldn’t find the source. But most people have a resourceful solution. They’re called three-year-olds. Much better at finding phones than adults are. Maybe it’s because they’re closer to the ground. At least that’s what I tell my kids. They even think it makes sense. Note to self: Anything makes sense to little kids if you say it with a straight face. So there I was hearing my phone ring all day and walking in circular routes

around my home, throwing blankets off beds to look underneath but to no avail, waiting for my three-year-old to come home from school so he could find the phone for me. Of course the moment he came home, my phone was silent. But I knew it was charged. (That’s really the worst that can happen. I have a cousin who lost a phone that wasn’t charged, so it didn’t ring at all. And we all know what that serious condition means: L.T.P. [Lost Till Pesachcleaning]. They had to go out and buy another one for the remaining ten months of the year.) So I was able to do what brilliant, resourceful people do in this scenario: call my house line with my cell phone. This one time, I sat on the couch while my three-year-old looked all over for the phone. He was in the other room when I finally heard his sweet little voice on the other end of the line: “Hello?” What was the quickest way to get him to give me the phone? “Hi, Avi, is your mommy there?”

I heard footsteps approach. Avi was smiling and talking into the phone. “Yes, who is this?” By this time, he was standing in front of me, but he still hadn’t realized it was me (and I wasn’t even putting on voices!), though he was flabbergasted when he noticed that the lady on the other end of the phone was saying the exact same thing as his mommy in front of him. Finally, laughing, I explained to him that I had called the phone and he was speaking to me. Now whenever the phone rings, he thinks it’s me. He’ll answer the phone with “Hi, Mommy!” which always gives me a bit of explaining to do when I take the phone from him! But I do have to say this, telemarketers appreciate it. They’re confused, but appreciative. When my husband calls the house and my son answers, “Hi, Mommy,” my husband assumes it’s a sign of how much I’m actually on the phone. I told him, believe me, I’m not on the phone as much I’d like to be. If only I knew where it was half the time!

It’s just that they need you as soon as the phone rings.

Now that we have settled back to our routine and family and guests have left to their original places, we can focus on the newest trend in menus and healthy lifestyle CLEAN EATING What is clean eating? Eating clean is a good way to refresh your eating habits: it’s about eating more of the best and healthiest options in each of the food groups—and eating less of the not-so-healthy ones. That means embracing whole foods like vegetables, fruits and whole grains, plus healthy proteins and fats. Some simple rules to follow and try our clean eating meal plan: 1) Eat only whole grain foods. .Fresh produce is best. 2) Keep meals simple. They are quicker and easier to prepare. 3) Eat slower. Helps you enjoy the meal longer without overeating. 42

4) Eat on a regular schedule. That will keep your metabolism and hunger in check. 5) Avoid processed food thus nothing out of a box. 6) Limit eating out as much as possible. 7) Be sure to include the three body building basics in your meal planning: protein, carbs and fat 8) Don’t drink your calories. Soft drinks (even diet) coffees and fruit juices can add a lot of empty calories to your daily intake. 9) Watch out for too much salt, sugar and fat. Moderation is key. 10) Get moving- make a conscious effort to exercise at least 30 minutes a day, or a total of 150 minutes a week. This sound approach to eating and living well maximizes your energy and optimizes your health, making it more than just a diet. It’s a lifestyle, with built-in flexibility, meaning it can be adapted to fit most any kind of routine.

Low-Fat, High-Protein Vegetarian Salad Enjoying a vegetarian diet doesn’t mean your protein should suffer! This delicious dish has a lot of protein without any meat! Very pleasing entrée for any meal. INGREDIENTS 6 cups shredded lettuce 1 cup diced orange pepper 1 cup diced red pepper 4 large eggs cooked and chopped 1 cup tomato, chopped 1 cup canned corn ½ cup low-sodium black beans, drained and rinsed

2 cups cooked quinoa ¼ cup dressing of choice INSTRUCTIONS Add lettuce to bottom of salad dish. Line different veggies in rows. As shown in the picture. When serving scoop up a bit of every variety of vegetables to make a delicious vegetarian protein meal. Top salad with corn chips to add some crunch if desired. Serves 4.

French Inspired Spring Soup Spring vegetables are beckoning to be used in healthy clean eating recipes. Here is a Leek potato and vegetables soup made with a French flavor. Ingredients 2 Tbs butter or oil 2 stalks leeks, thoroughly washed and chopped 1 onion, chopped 2 quarts water 3 large potatoes, chopped 2 large carrots, chopped1/2 frozen spinach 1 bunch fresh asparagus, trimmed peeled and tops cut off and cut into 1 inch pieces 1/3 cup uncooked whole grain Basmati rice 2 Tbs salt 1 cup heavy cream or sour cream (optional) Or use almond milk instead.

Directions Melt the butter/oil in a large pot over medium heat. Stir in the leeks and onion, and cook until tender. Pour water into the pot. Mix in potatoes, carrots, asparagus, and rice. Season with salt. Bring to a boil, reduce heat, and simmer 30 minutes, until vegetables and rice are tender. Stir spinach and Almond milk into the soup mixture, and continue cooking about 5 minutes before serving. Preparation 25 minutes Serves 6

Cauliflower Pizza Crust or Flatbread Pizza is one of those ever popular staple foods in most households. Kids just love pizza!!! To avoid the gluten make a cauliflower crust that will satisfy those who want to follow the clean eating way. Ingredients 1 large cauliflower, cut into chunks 2 cups (8-ounce) fat-free, shredded, mozzarella cheese, divided 2 eggs, lightly beaten 2 cloves garlic, minced 1/2 teaspoon onion powder Salt and pepper to taste 2 Tbs pesto sauce Directions Preheat oven to 450 degrees F. Coat a baking sheet with cooking spray. Place cauliflower in a microwaveable bowl, cover, and microwave 5 minutes, or until soft; let cool slightly. Drain well. Place cauliflower in a food processor with small shredder blade and process until it reaches the

consistency of rice. Heat a frying pan on medium heat and spread cauliflower onto the dry pan allowing it to draw out all the wetness of the vegetable. You know it is dry when the pot stops sizzling. Allow to cool In a bowl, combine cauliflower, 1 cup grated hard cheese, eggs, garlic, onion powder, salt, and pepper until well mixed. Spread mixture in a 1/2-inch-thick even layer on baking sheet. Allow to bake for 15 minutes or so until golden brown. Remove from oven and allow to cool Top with remaining cheese thin slices tomatoes and drizzle with pesto or tomato sauce. Alternatively it can be topped with sliced red peppers, red onions and sliced mushrooms for an all dressed gluten free pizza. Bake 20 to 25 minutes, or until golden. Slice into desired pieces and serve immediately. Preparation 20 minutes Serves 4-6

Spanish Lentil Salad Lentils! People have a love or hate relationship with lentils. Some love it and some people hate it. Then, there are those that never even tasted it. Lentils are very healthy and beneficial for us. They are a good source of potassium, calcium, zinc, niacin and vitamin K, and are particularly rich in dietary fiber, lean protein, folate and iron. The Centers for Disease Control and Prevention reports that eating plenty of nutrient-dense foods like lentils can lessen your risk of many serious medical problems. Therefore they are considered a super food. If you never tried them now is a good time to experiment with them. Ingredients 1 cup dry lentils picked through and rinsed 1 bay leaf 1 chopped roasted red peppers 1/4 cup chopped red onions 1/4 cup chopped celery 2 Tbs freshly chopped dill

Dressing 2 Tbs red wine vinegar OR fresh squeezed lemon juice 1 Tbs extra-virgin olive oil 1/2 tsp kosher or sea salt or to taste 1/2 tsp paprika (smoked or regular) Directions Add lentils and bay leaf to 1 cup water. Bring lentils to a fast simmer over medium-high heat. Reduce heat to low and cook for 20 to 25 minutes, uncovered, or until tender. Drain Lentils in a colander. Remove bay leaf and discard. Allow lentils to chill in the refrigerator. Once chilled, combine lentils with vegetables and dill. Whisk dressing together. Add it to the salad and toss to combine. Sprinkle parmesan onto salad. Serve and enjoy! Preparation 20 minutes Serves 4

Strawberry-Rhubarb Jelly Dessert Rhubarb is synonymous with spring. Markets are now full with this delicious tart vegetable that lends itself to many dishes. Whenever available we juice it with a green apple for a powerful cleanser. Avoid the leaves as they have oxalic acid a poisonous substance harmful for humans. The stems have many health benefits such as: • stimulates bone growth and repair • Eases digestion • Helps prevent Alzheimer’s • Reduces risk of cardiovascular disease just to name a few. But here is a recipe that can be a very refreshing dessert. Ingredients

3 cups fresh rhubarb, cut into 1/2-inch-thick slices 1 cup water 1 cup water or as needed 1/2 cup sugar 1 pkg. (10 g) Strawberry Jello Powder (sugar free if available) Directions Place rhubarb in large saucepan. Add water and sugar; mix lightly. Bring to boil on medium heat, stirring constantly. Boil 10 min. Remove from heat. Stir in Jello powder until completely dissolved. Pour evenly into 7 dessert cups. Refrigerate 3 hours or until firm. Prep Time 10 min. Total Time 3hr. 10 Servings 6
