ASIAN PEAR Also known as the apple pear, this fruit has the slurping juiciness of a pear and the crisp crunchiness of an apple. Use it as you would an apple—eat it plain, just watch for the delicious juice oozing out. It gives an interesting twist to any fruit salad mix. Alternatively, serve it cut in slices along with any of the other fruits mentioned below. When ripe, its color will deepen, but the fruit remains hard. Store Asians pears in a cool, dry place. They will last about two weeks in the refrigerator fruit bin.

A cranberry’s dark red color adds a nice tinge to any fruit compote. Cranberries can be juiced raw and savored with a little maple syrup, as they are quite tart. One of the properties of cranberry is its high cleansing power, especially for the urinary tract. The berry pops open in the cooking process, so when making a compote pass it through a sieve afterwards, letting most of the fruits through but keeping the seeds and peel from mixing into the compote. Cranberry

jelly is a nice accompaniment to any meat dish. Its beautiful color makes it quite festive, thus making it a treat for dessert on yamim tovim (holidays).

GUAVA Guava is sweet, with an alluring tropical fragrance and sometimes a faint berrylike tartness. It has a very distinct taste, unlike any other fruit I know. Its Aztec name means “sand plum,” so called because it is shaped and colored like a plum. When purchasing, choose smoothskinned unblemished guavas with ƪ Ǥ ripen at room temperature for a day or so. It’ll give to gentle pressure when ripe. Use ripe guavas within two days, as they quickly turn dry and woolly. A guava can be eaten raw—just

quarter the fruit and remove the seeds. It tastes great with pineapples and bananas, and it can be pureed to produce a delectable pudding-like dessert or blended into a drink. Presently guavas are also available dry, Ƥ a healthy alternative enjoyed by kids as well as adults.

PLANTAIN Plantain is a very popular fruit used in the Caribbean and Asian countries as a dessert. It looks like a very large unripe banana and is best fried in a little olive oil and drizzled with honey or maple syrup. The natives dip it in sugar and then fry it. It can also be broiled in the oven for a more dietetic version. Coat baking dish with oil, slice plantain diagonally and dip in coconut and cinnamon. Spread onto baking dish and broil for 10 minutes on each side. Delicious!

Peeling a sabra is an art in itself, especially if one wants to avoid being pricked by its skin. Put the sabra on a cutting board ơ ǡ the fruit down with a fork. Then cut a slit through the thick skin lengthwise and peel the whole skin back in one pull. The fruit is now ready to be savored.

RHUBARB

Pomegranate seeds can be enjoyed plain or added to any mixture of cut-up fruits. (Watch for stains that are not so easily removed.) Fresh pomegranates will stay two to three weeks in your refrigerator, so buy many when in season and enjoy them!

Rhubarb is quite versatile. I can’t decide if it belongs in the fruit or vegetable bin, but I’ve always seen it cooked for refreshing summer soups or desserts, like compote, or pureed and whipped up with egg white. Nutritionally, rhubarb is a great cleanser, and it can be juiced raw and savored with a little

QUINCE Quince is the only fruit in our array of exotic fruits that is not habitually eaten raw. It is quite tart in taste, tasting like a mixture of tropical fruits, apples and pears. If you are brave and like sour fruits it can be grated raw into a salad of sweeter fruits to enhance the taste. It is so fragrant you can leave bowls of it in a warm place to aromatize your kitchen. Cook quinces as you would pears and apples. It has even more pectin (the thickening agent of jelly) than apples. When purchasing, select large, Ƥ ǡ yellow skin. Quince blends very well with esrog jam, which is traditionally made after Succos and put away for Tu Bishvat.

ESROG JAM 6 esrogim 3 lemons (½ lemon per esrog, in case you want to divide or double your recipe) 2 quinces, cut into small pieces (optional) 2 lbs. sugar Right after Succos, soak your esrogim for seven days, changing the water every morning and night. Juice the lemons and set aside. Put esrogim in a pot and totally immerse them in water. Bring water Ǥ ǡ Ƥ the pot with fresh cold water and bring it to the boil again. Repeat the procedure until you have cooked the fruit seven times in fresh water. (To keep count, put seven toothpicks on the counter on one side Ǥ Ƥ each time, remove 1 toothpick until there are no toothpicks left.) Allow the esrogim to cool. Then cut them in quarters lengthwise and seed each one.

Cut the esrogim into thin slices with the peel, place them in a pot, and add the lemon juice along with the quince. Add sugar. Mix thoroughly. Allow the mixture to cook for two hours on a low ƪ ǡ Ǥ ȋ ƪ ǡ jelly will turn reddish.) Most of the liquid should evaporate. Tip: If you choose to add quince to your jam, be aware that it will have a reddish tinge to it. For a light-colored esrog jam, omit the quince.

ESROG Eating esrog fruit is a segula for physical and spiritual health. Esrog jam is sugar laden, yet very little of it is actually consumed, so it is made just for the sake of tradition. Making esrog jam is quite labor intensive. I call it a labor of love, and I always make enough to share with family and friends.

Are You Getting Enough Vitamin D? Hello Everyone, If you have been coming into my office for adjustments over the last two months, then you know that I, like most people walking the streets today, have been fighting to overcome a very strong respiratory infection. Starting in my sinus and causing a deep cough in my lungs. All of these modalities and supplements helped get me to about 75% improvement of my symptoms. But, the cold kept returning. That never really happened to me before! I even went to get adjusted and my chiropractor told me that I was holding my adjustment and nothing more needed to be done.

5RRW 9HJHWDEOH %DUOH\ 6SLQDFK 6RXS Barley, one of the seven species, is always good in a hearty winter soup. 2 tablespoons olive oil 1 onion, chopped 2 leeks, white part only, chopped 1 teaspoon minced garlic 2 stalks celery, chopped 4 carrots, chopped 1 bulb fennel, chopped 2 parsnip, chopped 1 cup barley 3 (32 ounce) boxes Imagine NoChicken Broth (or a similar product) 1 teaspoon pepper

1 (8 ounce) bag spinach 1 teaspoon nutmeg Grated parmesan or mozzarella cheese (optional) In a large stockpot, heat the oil. Add the onion, leeks and garlic and cook until slightly softened. Add the celery, carrots, fennel and parsnip and sautĂŠ for 2 more minutes. Add barley and pareve chicken broth and bring to a boil. Reduce heat, sprinkle in pepper and simmer for about 45 minutes. Add spinach and nutmeg and cook for an additional 5 minutes. Pass the cheese, if desired.

$OPRQG &RRNLHV 1 egg ½ pound shortening ½ cup brown sugar 1/3 cup sugar ½ teaspoon almond extract 2 cups flour ½ teaspoon baking soda ¾ teaspoon baking powder Blanched whole almonds 1 egg yolk, beaten Preheat oven to 350 degrees. Beat together egg and shortening. Beat in sugars and extract. Mix in flour, baking soda and baking powder until well blended. Roll dough into tablespoon-size balls and place on ungreased baking sheets. Press an almond in the middle of each cookie. Brush with egg yolk and bake for 15 to 20 minutes. Remove to wire rack to finish cooling.

And probably no more beautiful tree than the old, gnarled olive trees found throughout Israel. 1 cup pitted kalamata olives 1 cup green olives 12 oil-cured olives, pitted 1 tablespoon freshly chopped parsley leaves 1 tablespoon drained capers 1 tablespoon fresh thyme leaves 8 boneless, skinless chicken breast halves

Salt and freshly ground black pepper Preheat oven to 400 degrees. Coat a large baking sheet with cooking spray. In a blender or food processor, combine all the olives, parsley, capers, and thyme. Process until mixture forms a thick paste. Place chicken on prepared baking sheet. Top chicken pieces with the olive tapenade. Sprinkle with salt and pepper. Roast chicken for 25 minutes - until chicken is cooked through and golden brown and tender.

1-1/2 cups all-purpose flour 3 tablespoons sugar Zest of 1 lemon 1/4 teaspoon fine sea salt 10 tablespoons (1 1/4 sticks) margarine, chilled and cut into 1/2-inch pieces 3 tablespoons ice water 3 1/2 ounces almond paste, at room temperature, cut into 1/2-inch pieces 1/3 cup tofutti cream cheese, at room temperature 1 teaspoon vanilla extract 2 tablespoons honey 6 large or 12 small fresh figs, sliced, stems removed or 20 dried figs, reconstituted *see Cook’s Note 1/4 cup apricot jam

In a clean food processor bowl, combine remaining sugar, almond paste, tofutti cream cheese, vanilla extract and honey. Blend until smooth.

Combine the flour, 2 tablespoons of the sugar, lemon zest, and salt in the bowl of a food processor. Pulse until blended. Add the margarine and pulse until the mixture resembles coarse meal. With the machine running, gradually add the water until moist clumps form. Turn the mixture out onto a work surface

Position an oven rack in the center of the oven. Preheat the oven to 400 degrees. On a large sheet of parchment paper, roll out the dough into an 11-inch circle. Transfer the dough to a large, heavy baking sheet. Spread the almond filling over the dough, leaving a 2-inch border. Arrange the figs on top of the almond filling. Spoon the jam over the figs. Fold the dough border over the filling to form an 8-inch round, pleating the crust loosely and pinching to seal any cracks in the dough. Bake the tart until the crust is golden, about 40 minutes. Place the baking sheet on a rack to cool for 10 minutes; then slide a metal spatula under the crust to free the tart from the parchment. Transfer the tart to a platter and serve. Cook’s Note: To reconstitute dried figs, simmer in water for 5 minutes. Let the mixture cool completely. Strain before using.
