Publisher’s Note With Father’s Day falling this month, the CairnsLife team thought it would be a great time to celebrate the many wonderful fathers working in the Cairns business community. It’s a tough job balancing the daily commitments of a family life and a busy career, but all our fabulous fathers are doing just that - and doing it brilliantly. From personal experience, I remember my dad always being flat out with his businesses, but he was always there for me. At my hockey games, cheering me on and screaming “hit the ball harder Cracker” and scaring any boys away that tried to talk to me, or just at the times when I needed a listening ear. As far as I’m concerned, my La Papa is the epitome of a great dad! As well as Father’s Day, this month brings one of the most exciting events for the ladies, the Amateurs ball, and it’s also the beginning of the high school formal season. It all started back when I was about thirteen or fourteen and I read the great James A Michener’s novel The Drifters. The book follows six young characters from diverse backgrounds and various countries as their paths meet and they travel together through parts of Spain, Portugal, Morocco and Mozambique. It started a fire in my belly, a desire to see the world that I have still not quenched to this day. Fortunately I have managed to find myself working in an industry that allows me to feed this addiction, or at least justify the minimum four overseas trips per year that I just have to go on. As a Travel Consultant I have lost count of the number of times that I have been asked what my favourite destination is so, this month I thought I would turn it around and ask some of my most well travelled clients. Here’s a selection of their responses:French Polynesia on a 14 day cruise on the “Aranui 3”, this Copra collecting ship takes 200 passengers from Tahiti in total comfort to 8 islands of the Marquesas and Tuamotos, this is the real South Seas visiting spectacular islands like Hiva Oa and Nuku Hiva, with beautiful friendly people, great food, great culture, and beautiful scenery, a must on every Travellers list. Ken Reed – Cairns We loved Cuba! The people are so friendly and not at all intrusive. The beaches were fantastic with glistening white sand and beautiful sparkling blue / green water, all accompanied by live music, cocktails and great food – and so inexpensive! When we go to a restaurant, we order the meal we want, not whatever the waiter decides to serve us. Some nights we feel like ordering steak, other nights chicken... It would be ridiculous of course. So why, when it comes to sex do we so often just take whatever is ‘served’ to us, without asking for what it is we actually want? Cairns Amateurs Ball This event is the social highlight of the Cairns Amateurs Carnival. The first Cairns Amateurs Ball was held in 1959 at Cannon’s farm – a beautiful property owned by George & Dorothy Cannon. 2011 saw the gala event move to the water’s edge at the award winning Cairns Cruise Liner Terminal on the Cairns Inlet. Enjoy the glamour of the North’s most prestigious event under the stars; a premium seafood buffet dinner with premium beverages. Dance the night away to a seamless assortment of colourful live music and enjoy the visual splendour of fireworks dancing over the water. Hair is also an important factor to consider as often being exposed to the elements can provide a bit of a hassle – so make sure you have hair spray on hand or are prepared for this. Animals and people – Unfortunately the beach is a public place – so you maybe faced with wedding crashers and sticky beaks…. speaking of which, watch out for seagulls, especially when it comes to the food. It is also a good idea to have insect repellent on hand.

There must be no greater memory in life than growing up with a dog. For those of usfortunate enough to have had this opportunity, the life skills of compassion, responsibility and emotional commitment are invaluable. The experience is eternally etched in our mind of the most loyal, understanding, forgiving and affectionate canine companion. Sadly not all children are blessed with this positive experience when interacting with dogs. Every year hundreds of children are injured, hospitalised or in the most severe cases fatally wounded as a result of dog attacks, In many of these cases the offending animal is their own dog or one that is familiar to them. In the dogs mind children are at the bottom of the pack order. There is nothing we can do to alter the dogs perception of this relationship. When children mature and begin to display dominance in their voice and posture they are generally able to assume a role above the dog in the family unit. I believe dogs view children as a slightly different version of a canine puppy. Many dogs like to chase, jump, bite and rough play with children and adults. This type of interaction should be discouraged at all times. It is rare for a child to be bitten without the dog first giving a warning. Unfortunately the child is usually too young to recognise this and often adults ignore or make excuses for the dogs behaviour. Small children should always be supervised when interacting with dogs.Older children should be educated about the importance of safe and respectful handling of dogs. Dogs can display aggressive behaviour towards children for many reasons. After receiving a number of positive recommendations from friends, my companion and I were excited to finally experience Iyara Thai Restaurant for ourselves. And we weren’t disappointed. Positioned upstairs at 91 The Esplanade, Iyara is in the heart of the city and all its attractions yet elevated enough to escape the hustle and bustle below. After being greeted at the front door we were escorted up a stairway adorned with tea light candles. Immediately we were impressed with the layout which was spacious yet intimate, featuring warm earthy tones, soft music and tranquil lighting. With a variety of seating options available including a bar area for pre-dinner drinks and comfortable lounge seats with low level tables, we chose to sit outside on the balcony in order to enjoy the spectacular view. As head chef and owner of the restaurant, Sirinee Naiyachit (AKA Sakare) previously made a name for herself in Melbourne with the original Iyara on Toorak Road South Yarra. After featuring in The Age Good Food Guide, she took her recipe for success along with her main chef to explore a new opportunity in Cairns. A popular cuisine to choose for a night on the town is often Thai. The amazing, fresh, spicy flavours mean a lot of people become intimidated choosing wine to accompany the meal. It can be quite simple if you keep a couple of things in mind. The best pairing is usually a chilled white or a RosĂŠ, but you can grab a red for those who just cannot switch from drinking the red drop. Because Thai food has a lot of complexity with flavours your best bet is to get a simple wine that does not overtake the food, but compliments it instead. Try a white wine that is light and crisp with

citrus on the palate such as a Riesling for a wine that can pair with almost everything on a Thai menu. For those of you that love spice try a Semillon Sauvignon Blanc blend. The sweetness of the Semillon will offset the spice, and the Sauvignon Blanc will refresh the palate for your next bite. Don’t worry you red-only wine lovers; you can still enjoy your meal accompanied by a rouge. Select a lighter red such as a Pinot Noir. Avoid a big Cabernet Sauvignon or Shiraz because it will over power the meal with the big tannins and alcohol content that those varieties carry. These heavier wines accentuate the spice and mute the delicate flavours. A nice inbetween wine is a dry Rosé. A chilled Rosé carries complexity and dryness of a red and will pair perfectly with most Thai dishes. A few wines I’d recommend for you to try are Jim Barry 2009 Rieslings, with nice citrus notes and crisp green apple; it is a great bang for your buck. For something different, I love the 2011 Salsa Rosé GSM (Grenache, Shiraz, Mataro) by Teusner Wines. The Barossa Valley had a wet 2011 vintage but the Grenache that came out of this is interesting and quite different from other years. The Salsa Rosé is dry, spicy with cinnamon and notes of peach and vanilla. It is one of my favourite any-time wines that pairs very well with Thai. Next time you are stuck for a wine to impress your vino-swirling friends or a special someone with a Thai feast, keep these hints in mind and you will impresss like a wine connoisseur. What is the largest catch you’ve made? My biggest catches include some pretty big Barramundi’s and being involved in the capture of some mammoth Marlins. What do you do for a living? I’ve been fishing for as long as I can remember, growing up on a commercial fishing boat from birth until school age with my fishing obsessed father. Where is your favourite place to fish? My favourite places to fish would have to be, a toss up between the Archer River, North Queensland and The Great Barrier Reef during Giant Black Marlin season, both for the extrodinary fishing and stunning scenery. We are all being hit by the rising cost of services to daily living in our homes. With some intelligent choices and research we can combat at least some of those costs and reduce the home’s impact on our environment.
Incorporate Energy Efficiency in your new home
Using the best design for your block of land is still the most important factor. This doesn’t mean that it has to be an expensive exercise, just a practical and logical one!! A home that is designed for Sydney or Melbourne, or even Brisbane, is not necessarily going to be the best for our climate here in North Queensland. Issues such as; orientation on the land; where the cool breezes will come from in summer; where the sun is located in summer and winter; exposure to elements during extreme conditions; cross breezes for natural ventilation; suitable materials for energy efficiency and many more factors will make a lot of difference on the comfortable living in your home. Its not an easy exercise weighing up the initial costs of some inclusions against the future running costs.

We tend to live an outdoor lifestyle so having suitable external living areas should be of high importance. Air conditioning is something that we are becoming more accustomed to in the tropics. If we design the home efficiently then we can reduce the amount of time we need to run them, and when we do, we should be running them at the recommended temperature of 25 degrees. Roof and ceiling insulation, reflective colours, tinted glass, good shade, solar power, gas cooking and hot water, efficient lighting and power options; a higher pitched roof and good sized overhangs are all elements of your design that will reduce those running costs. My advice to clients is to maximise your value for money, so maybe spend a few extra dollars on some energy saving features rather than having the largest home available. Remember that ‘bigger doesn’t always mean better’ but it will increase the running costs of your home. With costs of power ever increasing that’s good start on future savings. There are many of these ideas can be achieved with a builder’s standard model plan or an individual home design. You will need to do some of this research yourself so that when you are talking to your builder/designer you can determine whether or not they are experienced in energy efficiency in home design or simply selling you a house. Then you can sit back, relax and enjoy your new home knowing that you have taken advantage of all the options available to you.
