Capons something to crow about From Page 2 First of all, Paradise Meadows Poultry is the only farm in the Valley, and perhaps all of B.C., to raise capons, roosters that are allowed to grow to 17 pounds or more. Considered an old-fashioned, “boutique” food, capons tend to have more tender, flavourful meat than typical roasting chickens and offer a succulent and inexpensive alternative for holiday feasts. “Between a 17-pound chicken and a 17-pound turkey, you’re going to have much more meat on the chicken,” says Tracey Peter, who runs Paradise Meadows Poultry with her husband Gord. “You’ve got a lot more meat and it’s cheaper.” While the Peters produce the largest chickens in the Valley,
they at the same time produce some of the smallest as well. That’s because they’re also the only local farmers that raise Cornish game hens, which generally weigh less than two pounds but provide a gastronomic experience that belies their diminutive size. “It’s like veal compared to beef,” explains Gord. “If you’ve ever had that really pink veal that almost melts in your mouth, it’s the same thing with the Cornish hens. They’re so tender and juicy.” Tracey and Gord Peter raise, at any given time, between 500 and 600 free-run birds on seven acres of land. Gord, who was raised on his parents’ chicken farm, purchased the land in 1980 and has been raising his own birds ever since. “We don’t want to
get huge,” he says. “We like what we’re doing and the way it works. It’s kind of a niche thing.” In addition to raising their own birds, the Peters also run the only licensed chicken abattoir in the Comox Valley. Their unabashedly strict standards tend to improve the meat quality of all locally raised poultry. “We’re very fussy,” declares Tracey proudly. “We keep our own birds in a controlled environment where they’re protected from lice, mites and worms. Any birds that are brought here for processing are inspected, and if we find anything on them, they’re sent back.” Local agriculture, says Tracey, is a “dying breed,” yet it’s vital to both our community and our economy. “The fresher the
product, the better it is for you,” she says. And with birds raised and processed right on the farm, Paradise Meadows Poultry is about as fresh as it gets. To purchase Paradise Meadows Poultry, visit the farm at 8486-B Island

Vickie Atherton of Campbell River has decided to take up fly fishing; she bought her gear and is using her dad’s fly rod that was given to her years ago. The Tyee pool has seen a great number of boats out each evening. The best time to view the boats is between 7 and 9 pm when anglers and guides are out. 10 year old Nathan Lagos landed a 34.5 lb Tyee while guided by his father. Guide Harry MacDonald was fishing north of Browns Bay where he caught spring, sockeye, some pinks and missed out on a chum. Early in the year, while fishing for halibut, he caught a lantern fish! Campbell River has a number of tackle shops that are staffed with people that know the fishing hotspots and what gear to use and they would love to help you out. an effective program is a proper athletic assessment. The type of sport, the level of competition, the age and general fitness level of the athlete all need to be taken into consideration. There is no value in designing an Olympic-level core strength program for a recreational hockey player, and a highly competitive athlete will probably find that exercises designed for the recreational athlete are not challenging enough. For recreational skiers, lower body strengthening exercises, combined with a simple program to increase core strength, may be enough to prevent stiffness or injury when the season first begins. Recreational and elite athletes are equally susceptible to injuries - elite athletes because they train at such a high level, and recreational athletes because they may not have taken the time to properly prepare. In the case of the recreational hockey player, muscles used in hockey to turn, accelerate, stop and shoot are not necessarily used in day-to-day life. Simple exercises to strengthen “hockey specific muscles” can prevent discomfort and injury as these muscles adapt to a new workload. Prehab is equally important for elite athletes, but for different reasons. Over time, repetitive movements and the daily stresses of training can cause negative effects on the body that can lead to injury. Traditional training techniques may create strength imbalances between muscle groups or even effect co-ordination of muscle firing, thus impairing an athlete’s ability to perform at a high level. A properly designed prehab program should be consistently
