With all these short bits of news we are creating a section that might be called sometimes (if it weren’t already registered) ‘Canary Islanders around the world’ and others ‘Stars in the Canaries. This time we have material for both of them. The Nelly National Auditorium in Montevideo, Uruguay, welcomes the company Nómada from Tenerife, and its dance spectacle Tábula rasa. We also export all types of music: from the punk rock of Las Ratas in the Aúpa Lumbreiras Festival in Alicante to the jazz couplet N-Candela in Andrax Son Mas Castle, on Majorca. And the Canary Islands Timple Orchestra plays at the Galileo Hall in Madrid. And we had cinema being filmed with stars. Actually, we still do. On Gran Canaria, Mario Casas and Adriana Ugarte are playing the leading roles in the film adaptation of Palms in the Snow, a play by Luz Gabás, directed for the big screen by Fernando González Molina. Ribs with potatoes and corn and coriander sauce Ribs with potatoes, corn and coriander sauce is one of the insignia dishes of the island of Tenerife. It’s a delicious combination, cheap and simple, perfect for autumn. Together with a red wine from Tenerife it’s a delicious dish.
Elaboration It’s a very easy dish to cook. It’s very important not to forget to desalt the ribs the night before. To prepare it we put the ribs together with the ears of corn previously cut into three pieces, into a pot with plenty of water and without salt. When the ribs are ready, about three quarters of hour after they start boiling (maybe a bit long, it depends on the size of the ribs) we add the peeled potatoes. You’ll know it’s all cooked when the potatoes are ready. We drain it all carefully and pour the coriander sauce over it, coating it all with the coriander taste. The rest of the sauce we put it into a sauce boat so anyone can add more to their own taste. Some people take everything out the cooking pot and serve it on a platter without the sauce, letting their guest add the sauce as they please. Coriander sauce: although we already explained how to cook it in our
