Give to the Needy this Christmas For the fourth year running, Retail First Centres, including Capalaba Park, will be supporting the Foodbank Charity via our food donation cages. Foodbank require 40 tonne of food per day to feed the needy of Brisbane, but this figure jumps at Christmas time, so donating has never been more important. The Foodbank cages can be found outside Woolworths and Coles and every can, packet or bag will make a difference.

FESTIVE MARMALADE & MUSTARD BAKED HAM

Serves 16

6 kg (13 lb 8 oz) whole classic smoked English-style leg ham (pages 74–75), skin scored deeply into the fat in diamonds 2 x 750 ml (26 fl oz) bottles dry cider 6 pieces blade mace 100 g (3½ oz/½ cup) soft brown sugar 300 g (10½ oz) Seville orange marmalade ½ teaspoon mustard powder Take the ham and soak it in a cider-flavoured stock overnight — use 1 bottle of the cider and enough water to cover (don’t worry if the hock isn’t completely under the water). Remove the ham from the brine the next day and place in a deep roasting tin. Discard the soaking liquid (you could actually boil it down to add to the baste if you have the time and energy). Preheat the oven to 150ºC (300ºF/Gas 2). Bring the remaining cider to the boil in a saucepan with the mace, sugar and marmalade. Simmer for 10 minutes, then add the mustard powder. Pour over the ham and cook in the oven for 2 hours, basting regularly with the juices from the tin. You may want to start the process with the ham covered to keep it moist, then remove the foil or lid for the last hour of cooking. When the ham has warmed through (test the temperature

next to the bone, it needs to be 70ºC/158ºF) and the marinade has started to thicken it is done — you can speed up the process by draining the juices from the tin and reducing them in a pan until thick and syrupy — if your roasting tin is the type that can stand some heat — do it in the tin on the stovetop. Spoon the sauce over the hot ham. Serve with a bit of mustard, a warm potato salad and a glass of something good.

ZUCCHINI, TOMATO & BOCCONCINI SALAD

ROSE PETAL SPARKLING WATER

4 zucchini (courgettes) 1 teaspoon sea salt 2 ripe tomatoes, finely chopped 8 baby bocconcini (fresh baby mozzarella), halved 80 ml (2½ fl oz / 1/3 cup) olive oil 1 tablespoon apple cider vinegar 2 basil leaves, thinly sliced Create zucchini ribbons using a vegetable peeler. Put these in a bowl, sprinkle with the sea salt and toss several times to ensure the zucchini is well coated. Set aside for 10 minutes. Drain any liquid from the zucchini and pat dry on paper towel. Arrange the zucchini ribbons on a serving platter. Top with the tomato and bocconcini. In a small bowl, whisk together the olive oil and vinegar. Spoon this dressing over the salad and scatter over the basil. Season with freshly ground black pepper and serve with crusty bread.

4 red organic roses, petals removed 220 g (7 3/4 oz / 1 cup) sugar 1 tablespoon rosewater 2 litres (70 fl oz / 8 cups) sparkling mineral water Place the rose petals, sugar and 310 ml (103⁄4 fl oz /11⁄4 cups) water in a large saucepan and bring to the boil. Reduce the heat and simmer for 8 minutes, or until a light syrup has been made. Remove any scum as it forms. Cool and stir in the rosewater. To serve, pour the syrup into chilled glasses and top with the sparkling mineral water.

For many, summer means mangoes and none more so than Fresh Sensations manager Chris Nicolaou. Chris shares his tips about how to get the best out of the mango this Christmas.

Make sure the mangoes ripen before cutting. They will be ripe when they have a consistent yellow colour and are firm to the touch. It is best to ripen at room temperature and leave them until fully ripe. Once ripe, store them in fridge but avoid refrigeration if they are still green as this may deteriorate the quality of the fruit.

Mangoes are simple and easy to prepare. Cut both cheeks evenly, leaving the seed. Then score in a criss-cross pattern before pushing from the underside to give that perfect diced look. My favourite mango recipe is fresh chilled mango with Vanilla Ice cream. Perfect for a hot summer afternoon or a simple dessert. They are also great in a summer salad and you can pick up our a fresh Mango Macadamia Salad from the Deli. We sell mangoes loose, but many customers buy them by the tray and give them as Christmas gifts. Everyone knows that they do get messy but a chin full of mango juice is half the fun of summer!

PAN JUICE GRAVY The tradition of preparing the Christmas gravy has been immortalised in the Paul Kelly song ‘How to Make Gravy’ and if you’ve ever wondered how to do it without the packet, here’s a simple recipe from Lenards. 1 cup pan juices (excluding any fat, which can be separated out) 3 tablespoons plain flour 1 cup chicken stock

TALK TURKEY THIS CHRISTMAS Serve a traditional Christmas roast to remember with your choice of Lenard’s festive stuffings (Traditional Herb, Camembert & Bacon, Cranberry Macadamia, Apricot & Almond or Pistachio, Bacon & Sage). Heat pan juices in a saucepan over medium heat and add flour one tablespoon at a time. Stirring continuously to avoid lumps, add stock gradually until thickened. For thinner gravy, add additional water or white wine and season with pepper and your favourite fresh herbs.

You can understand Wayne’s concern, then, when one of them shows up looking like a cross between Hannibal Lecter and Darth Vader to terrorise the city. The catch? Wayne has been living in exile for eight years and Batman has become a villain in the eyes of the people of Gotham. We’ll avoid a major spoiler, but rest assured that there’s enough ambiguity in the ending to leave the door slightly ajar for another chapter.
