A bounty of festivals, fairs, and farmers markets draw crowds in summer and fall, but there’s no wrong time to explore Iowa’s capital city. Make the most of every season at these one-of-akind gems.

MUST-TRY ACTIVITY

There’s no better time to visit than during the annual Des Moines Arts Festival in June, when more than 200,000 people descend on Western Gateway Park to experience 200 art vendors, free live music, demonstrations, and eclectic eats.

Pappajohn Sculpture Park

At the heart of the Western Gateway neighborhood, you’ll find an impressive collection of more than 30 sculptures by some of the art world’s biggest names. (You haven’t been to Des Moines until you strike a pose near or inside Jaume Plensa’s “Nomade,” the monumental white statue comprised of a collection of connected letters.) So what’s in a name? It tips a cap to philanthropists John and Mary Pappajohn, who made a $40 million gift to the Des Moines Art Center to bring the outdoor museum to life.

Iowa State Fair

No other event in Iowa draws a larger crowd than the one and only Iowa State Fair. Each year, more than a million guests from across the state and around the world convene on Des Moines’ east side to salute the farmers, cooks, bakers, artists, and dreamers that make Iowa so special. Iowa’s fair is home to the largest state fair food competition, with more than 700 classes to enter. If you’re not in the mood to flex your cooking or baking muscles, count how many foods on a stick you can try in a day. Last year there were more than 60 available, with unique new creations added each year (lobster corndog, anyone?). Summer nights don’t get more iconic than a corn dog and lemonade, a scenic ride on the sky glider, and then singing along at the top of your lungs during one of the nightly Grandstand concerts.

MUST-TRY ACTIVITY

Visit the John Deere Agriculture Building to see this year’s butter sculptures. The dairy sculptures, which include a 600-pound butter cow and a cast of new characters each year (2024 celebrated TV hosts with Iowa ties), have been a signature display at the fair since 1911. No need to worry about the summer temperatures. Because the sculptures are showcased in a 40-degree glass cooler, the butter won’t melt as quickly as your ice cream!

Center Grove Orchard

This pick-your-own orchard near Cambridge allows you to track and savor the season’s best, including peaches and potatoes (late summer and early fall), sunflowers and zinnias (late August through September), and apples, pumpkins, and gourds (September and October). Bring the entire family to help fill the U-pick bags or buckets and to play in the farmyard. Sweater weather is even better when you can enjoy it while conquering a corn maze, whizzing down a combine slide, bottle-feeding baby goats, and bouncing on jumping pillows.

MUST-TRY ACTIVITY

Order a coffee or apple slushie and snag a warm apple cider donut to enjoy as you soak up the scenery on a sunset hayride. When the sun goes down, that’s the perfect time to cozy up next to a firepit and roast s’mores and hot dogs. Campfire snack boxes are available for purchase with all the fixins — all you have to bring is the cuddles.

Rent snow tubes for your crew, then race down four tubing chutes to determine who earns bragging rights…until your next trip up the hill.

WINTER

Seven Oaks Recreation

Come summer, Seven Oaks is a haven for fans of water sports like canoeing, kayaking, and tubing, as well as adventurous spirits who enjoy living out their video game fantasies over a round (or several) of paintball. Come winter, though, this Boone park really comes to life, studded with skiers, snowboarders, and tubers. Start with a free beginner mini lesson, offered every 30 minutes, or get your bearings on an easy green run. By the end of the day, you might just be ready to rock a challenging yet doable black run; we love ending with the “Mic Drop” trail.

VIBE CHECK

One of my life’s great indignities was growing up just under an hour away from Des Moines — close enough to be considered an audience for concert promoters, but far enough to need a ride to those concerts. That meant, whether by begging, bribing, or any other number of pitiful displays, my license-less buddies and I always found ourselves scheming a way to Des Moines as teens. Don’t worry, nobody was harmed in the making of these trips. And don’t worry, I won’t ask how you managed to make your way either. But just know, there are so many music venues around Greater Des Moines — with all kinds of artists coming through all the time — that you’ll have your pick of shows worth the entire trip. Trust me, I’ve done whatever it takes to visit every single one.

Wells Fargo Arena* — Downtown Des Moines

You might’ve heard about Midwestern modesty and “Iowa Nice,” but Wells Fargo Arena* is anything but aw-shucks. This 17,000-seat arena accommodates the most monumental of happenings you know, Taylor Swift tours and March Madness games, plus all the Biebers, Britneys, and Bostons in between. Going in, you know a concert at Wells Fargo Arena* won’t be just a concert. You’re here for the spectacle big names at the top of their games and lots of strangers singing along at the top of their lungs. If you’re going back and forth on where to see a super-duper star in the Midwest, I promise the difference in the parking experience alone will make Wells Fargo Arena* your favorite venue on either side of the Mississippi. Plus, its concert attendance numbers have ranked in the top 100 worldwide time and time again, so you know you’ll be in good (giant) hands.

*Starting July 2025, look for the venue under its new name: Casey’s Center. Different name, same big spectacle.

Lauridsen Amphitheater — Water Works Park

Located across the street from Gray’s Lake, and only a few miles from the heart of downtown Des Moines, Water Works Park is one of the largest urban parks in the U.S. The east side of the park’s 1,500 acres are dedicated to Lauridsen Amphitheater. I can confirm the sound here is as big as the sky — with a festival-ready field for up to 25,000 fans and some of the best open-air acoustics, well, anywhere. Slipknot, Charles Wesley Godwin, and Brantley Gilbert are a few of the headliner-size names who have played this stage, but the fact that Willie Nelson did back-to-back years probably gives the best sense of the venue’s easy, breezy vibe. And since Lauridsen Amphitheater was built at the intersection of so many different trail systems, you can legitimately arrive by bike, kayak, or even horseback. (Obviously, Ubers are also welcome.) Just make sure you giddy up in time to see the Arie Den Boer Arboretum.

Val Air Ballroom —

The Val District

This venue is so iconic it has a whole neighborhood named after it. Originally opened in 1939 in West Des Moines as an open-air dance hall — hence the name — Val Air added walls and a roof in 1955 to become the year-round ballroom that we know and love today. The Art Deco facade and retro neon signs look just like they did way back when and have since made the building a landmark, earning a spot in the National Register of Historic Places. But I have to say, the best part about seeing a show here is just how friendly the space is. All the amenities, from bars and bathrooms to lights and sound, were renovated in 2024, so you get the best of both worlds, old and new. And whether you’re frothing at the mouth or a bit more laid back, there’s a solid spot for every kind of fan on Val Air’s famed maple floor.

Wooly’s — Historic East Village

Let’s start with the taxidermy animal heads — because you will make eye contact on the way in. But once you’ve given a nice little head nod, you can proceed into what would probably be your favorite venue’s favorite venue. This 700-cap room is one of those flat, totally democratic floors, with plenty of room to open up a pit for slam and/or square dancing. Wooly’s coolers also stock a killer selection of beers, and the lengthy bar top makes it easy to mosey on over for another High Life between sets. I’m also obligated to mention the merch table, of all things, on the other side of the room. That’s because, once upon a time, the merch table was a pasta case in the Italian grocery store that belonged to the Des Moines building long before Wooly’s. The name of that Italian grocery store? Woolworth’s.

Des Moines Civic Center — Downtown Des Moines

“Hey,” you say, thoughtfully and conveniently teeing me up for the rest of this blurb. “How did Des Moines become one of the first stops for first-run Broadway tours?” My response: The Civic Center. That’s how. This performing arts hall put Des Moines on the map in 1979 and that mighty pushpin has stayed stuck ever since. We’re talking everything from “Phantom of the Opera” to “Hamilton,” and everybody from Steve Martin to Diana Ross.

The Civic Center’s precast concrete architecture is a brutalist beauty, too, winning “Building of the Decade” for the 1970s. Inside, the main hall’s 2,744 seats fan out around the 76-footwide by 28-foot-high proscenium stage. This must be why, despite being a total theater stooge, I’ve literally never had a bad seat at the Civic Center.

Blank Performing Arts Center — Indianola

E CH E C K : Live in Your Living Room

The small town of Indianola is home to one of, if not the most, intimate places on planet Earth to see opera. Designed by the architects of the Des Moines Civic Center, and made only of concrete, metal, and glass, Blank Performing Arts Center was pretty radical when it opened in 1970. So radical, in fact, it’s still radical today. The center’s 467-seat main stage is where the Des Moines Metro Opera does productions for its May — June summer festival season, one of the oldest opera fests in the U.S. The intimate size of the space, along with the boundless ambition of the performances, places the action at what looks, feels, and, for the front row, is in arm’s reach. This lends a livingroom watch-party vibe — every voice amplified, each bead of sweat magnified — to the experience of capital-O opera.

Hoyt Sherman Place — Sherman Hill

Where oh where do I begin with Des Moines’ oldest venue? Hmm…maybe Louis Armstrong’s 1949 stop is a good Hoyt Sherman Place to start? This 1,252-seat Victorian theater — built in 1923, the same year Armstrong recorded his first solo session — is so steeped in A-list history that the big stage and ornate digs can’t help but play a part in performances, whether you’re here to see Kenny G or Steve-O. I may or may not have been moved to tears mid-applause for the latter at a show a few years ago. I know, I know, it sounds ridiculous, but you’ll understand once you’ve been. Also, don’t forget to gawk on your way to get a drink, because you’ll be walking through Des Moines’ first public art gallery. Kinda like crying for Steve-O, there’s a so-wrong-it’sright delight to buying a Bud Light in a place as sacred as Hoyt Sherman.

Noce — Western Gateway Park

Look for the chic black building tucked one street south of the Pappajohn Sculpture Park in Des Moines. Yeah, that’s Noce. This 125-seat jazz club is one of those if-youknow-you-knows that always has something going on for post-downtown dinner plans. As a bonus, you’re bound to get some incidental practice with a Mid-Atlantic accent because you will start talking like Cary Grant after a few cocktails. Noce’s set-worthy interior is subtle but lush, with the bodacious drape of cobalt-blue curtains and touches of walnut wood inspired by the club’s address plus classic cabaret-style seating around the stage. Basically, you feel like you’re somewhere that doesn’t exist anymore. And evidently the acoustics of the space are so considered that the specific polish of the floors and bar top work with the orchestra hall paneling for world-class sound.

Hinterland Music Festival

Hinterland is the best festival alive, and nobody can convince me otherwise. It’s basically a great big hang in the Iowa countryside of Saint Charles, with farmland turned into festival grounds. The lineups are so stacked you have to rub your eyes like a cartoon character seeing things to confirm that folks like Zach Bryan, Bon Iver, Vampire Weekend, and Chappell Roan really are coming to the outskirts of a smaller-than-small town for the first few days in August.

One of the top 10 fastestgrowing cities in the U.S., Ankeny boasts entertainment districts for every taste. The District at Prairie Trail is a modern gathering place with a theater and bowling alley, arcade, boutique shopping, and popular restaurants like Magee’s Irish Pub & Eatery, WineStyles, and The Breakfast Club.

Clive earns a reputation for its historic parks like Swanson Memorial Park, along with beautiful green spaces and trails. Chief among them is the 11-mile Clive Greenbelt Trail that twists and turns through mature trees along Walnut Creek. Unique features include Art Along the Trail, a May — October outdoor exhibit of pieces by local artists, and the Greenbelt Goats, a grazing herd with its own line of merchandise!

Small but mighty Windsor Heights has several international eateries, including Puerto Rico Restaurant, home to the jibarito sandwich (using fried plantains instead of bread), and Kathmandu, the acclaimed Nepalese restaurant where their famous “momos” (dumplings) are what’s for dinner.

Nearby Bondurant offers small-town charm and a historic downtown that begs to be discovered. Take a bike ride on the beautiful Chichaqua Valley Trail and refuel afterwards with street tacos from Flame the Taqueria and a cold beer at Reclaimed Rails Brewing Company.

An anchor for entertainment on the east side of Des Moines, Pleasant Hill is the hub of the Gay Lea Wilson Trail. Enjoy the evening with family or friends at Lucky Strike. It features stateof-the-art bowling lanes, laser tag, a 50-game arcade, and great food to spare.

Quaint and charming describe Indianola, home to Simpson College and the National Balloon Classic. During this nine-day spectacular at the end of July, over 100 hot air balloons color the sky. Food vendors and children’s activities are part of the signature summer event too.

This small town is also home to world-class opera. The Des Moines Metro Opera hosts its summer festival season May — July that has been dubbed one of the most enterprising in the nation. And there’s no better way to kick off a night at the opera than with a tasting at Summerset Winery. That’s music to our ears.

In Johnston, the new Town Center is where the action is. This communal gathering place feels like a backyard party, with a splash pad, synthetic ice rink, green spaces, and popular hangouts like Backpocket Pin & Pixel brewery and The Cork 50131 wine bar.

For one of the region’s most underrated outdoor hot spots, head north to Polk City.

The Tournament Club of Iowa, the only Arnold Palmer Signature Course in the state, is known for its magnificent vistas. From well-manicured greens to lush greenery, there’s Jester Park, a favorite outdoor playground. Check out the nature center, roam the natural play area, and gaze at the bison and elk herds. If you’d rather explore on a pontoon, nearby Saylorville Lake Marina offers boat rentals, as well as a restaurant and bar.

It’s not hard to check “farm” off your Iowa bingo card, but not many of those farms come with old-time baseball games, blacksmiths, and historical interpreters. That’s what you’ll find at Living History Farms in Urbandale. This 500-acre outdoor museum has four different farms that span 300 years and tell the story of Iowa’s history.

From historical to state of the art, head to nearby Grimes to see what’s going on at Hy-Vee MultiPlex Powered by the City of Grimes, one of the largest multisport complexes in the Midwest. Or if you’d rather participate than spectate, get active at Climb Iowa, the largest indoor climbing facility in the state with more than 200 routes and 10,000 square feet of climbing.

West Des Moines

Known as Iowa’s premier shopping destination, West Des Moines is a gift for retail therapists. The charming Historic Valley Junction is the heart and soul of West Des Moines and brims with a delightful mix of antique shops, boutiques, and some of the best local eateries in town.

Reserve a whole day to explore Jordan Creek Town Center, a supersized shopping complex with upscale brand names in a park-like atmosphere complete with a lakefront boardwalk. Blow off some steam at Smash Park, a pickleball and gaming utopia featuring Iowa’s largest patio. Or get in the swing of things at Topgolf, the newest addition to the area with over 70 all-weather driving range bays, a 22-foot video wall, and more than 100 HDTVs. Then end your day with dinner at one of West Des Moines’ hundreds of restaurants including Ruth’s Chris Steak House, Giordano’s, and Fire Creek Grill.

Iowa Confluence Water Trails is making a splash across central Iowa. The fun flows through Greater Des Moines, where it’s never been easier to play captain.

Central Iowa is lauded for its expansive bike trail system, but it’s also home to one of the largest regional water trail networks in the country. Water trails are navigable routes along bodies of water. Just think of them as the bike trail’s splashy cousin.

Here in Greater Des Moines, we don’t have mountains or oceans, but we do have water trails, and lots of them. Des Moines itself was founded at the confluence of two rivers — the Des Moines and Raccoon — nearly 200 years ago. Now, Iowa Confluence Water Trails (ICON, for short) is on a mission to connect residents and visitors with these river roots.

Born out of the 2016 Greater Des Moines Water Trails and Greenways Master Plan, ICON is a vision to activate more than 150 miles of water trails across the region. It currently boasts over a dozen access points with activities such as paddling, creek-walking, bird-watching, and swimming. Whether your ideal day includes high-energy recreation or laid-back respite, there’s an ICON site for you.

The best part about ICON? You can plan your entire day around the water trails. In fact, every season, about 250,000 outdoor enthusiasts do just that. You can immerse yourself in the rich surroundings of the Chichaqua Bottoms Greenbelt along the Skunk River or wade in Mud Creek before grabbing lunch at Jethro’s BBQ ‘n Jake’s Smokehouse Steaks in Altoona. Or maybe you’ll decide to camp at Yellow Banks Park and canoe on the Des Moines River. Enjoy brunch at Americana in downtown Des Moines, then paddle at Birdland Marina and chill with a brew on Captain Roy’s patio. Scope out future white-water attractions from your table at Mullets. Spend the day at Raccoon River Park in West Des Moines and then enjoy a scoop — or two — at Home Sweet Cone.

In addition to its regional access points, ICON has three major white-water attractions planned, all located within the downtown Des Moines footprint. By the end of 2026, you’ll be able to surf (yes, surf!) on the Des Moines River, with quintessential attractions including Principal Park, the Science Center of Iowa, and the Iowa State Capitol as your backdrop. While Des Moines may not technically be the heart of Cyclone country, given our proximity to Iowa State University in Ames, we’re one of the main arteries. With Iowa State alumni ownership, The Station on Ingersoll is a Cyclone-friendly bar (Hawk fans are welcome too) where heart, passion, and “Hilton Magic” emanate through one of the many big screen TVs on gamedays. With a 4,800-square-foot-space that seats up to 120 cardinal and gold clad fanatics, along with some of the best bar food around (crab rangoon nachos, anyone?), good times never felt so good.

The Front Row

College sports are a cultural currency here in Iowa, so it’s easy to find a place with the game on. But if you truly want to immerse yourself in college-town vibes, The Front Row in Clive is heaven for University of Iowa Hawkeye fans. For 30 years and countless baskets of free popcorn, it’s been central Iowa’s top Hawkeye bar and the closest you can get to Kinnick Stadium or Carver-Hawkeye Arena without heading to Iowa City. The life-size Herky statue, memorabilia hanging from gold accent walls, and Iowa fight song blaring through the speakers will have you reaching for a red Solo cup as you fight, fight, fight for Iowa.

The Royal Mile

Des Moines has low-key cultivated a reputation for being a passionate soccer town. Don’t believe me? Head downtown to the Royal Mile on a Saturday or Sunday morning, and you’ll find raucous watch parties for Premier League stalwarts like Liverpool, Arsenal, and Tottenham. You’ll also find a killer English Breakfast, corned beef hash, Bloody Marys, and pints of London Pride. Make it your goal to experience the camaraderie of watching the beautiful game in a pub full of scarf-wearing superfans. It’s the closest thing you’ll get to studying abroad.

Since Iowa doesn’t have pro teams, we’re like a version of “The Bachelor” or “The Bachelorette” with all Midwest suitors vying for our affection. Maybe it’s the irresistible smell of barbecue wafting north up Interstate 35 or maybe it’s the Swiftie effect, but Kansas City has won the hearts of many Des Moines faithful. And there’s no better place to profess your love with a bunch of like-minded fans than at Truman’s KC Pizza Tavern in the Historic East Village. With wall-to-wall wood paneling even the TVs are behind wooden frames lined with Royals and Chiefs memorabilia, it delivers more of a cozy basement feel than a typical sports bar. Fan-favorite pizzas like The Mahomes and The French Dip (with a side of au jus) are love at first bite.

Few places can match the charm and history of Wrigleyville in Chicago. That said, few places can match the 262 beers on tap at El Bait Shop, located just a few blocks north of Principal Park, home to the AAA affiliate of the Chicago Cubs. The interior, adorned with metal beer signs, framed pro wrestling photos, and animated murals, has character (and characters) for days, while the patio is the perfect pregame spot to bask in a sea of blue and red with a cold beverage in hand. Beer and baseball go hand in hand, but have you tried adding bacon-wrapped tater tots to the mix?

One of Des Moines’ enduring traditions is pregaming (and post-gaming) at Peggy’s Tavern before the Drake Relays. The enduring dive bar near Drake University has been around since 1935, almost as long as the relays themselves. While you might be thinking “everything old eventually makes a comeback,” Peggy’s has never gone out of style. Saddle up to the wood-paneled bar to make new friends at the Des Moines version of “Cheers” or take your coveted Peggy’s cup out back to the tented area to make memories. Feel free to linger, because unlike what’s going on down the street on the Blue Oval, it’s a marathon, not a sprint.

World Food & Music Festival

WHEN: August 22 — 24

WHAT: During the past 20 years, this fest has grown into one of Des Moines’ largest, drawing more than 90,000 locals and visitors and expanding to three days. There’s a lot to love about it: cooking demonstrations from pro chefs and magazine editors, interactive cultural education programs, 50 food vendors representing more than 25 different regions around the globe, more than a dozen global music acts, and the opportunity (for the 21+ crowd) to sip samples from the wide world of craft beers, wines, and cocktails.

Latino Heritage Festival

WHEN: September 27 — 28

WHAT: For one of the most familyfriendly festivals of the year — complete with bouncy castles and piñata-making seminars — don’t miss this cultural celebration of the Latino community. Arts and crafts displays join an array of food vendors and concerts. You’ll also have an opportunity to salsa, samba, and spin your way around this colorful fall fiesta.

This minimalist sushi spot in the Historic East Village focuses on fresh ingredients and beautifully prepared dishes. Tacos La Familia

If you’re in the mood for birria and barbacoa, pull up a chair at Tacos La Familia. They deliver tempting tacos and tortas, of course. Adecade or two ago, if we would have hinted that you could find sakura pork baby back ribs slathered in cherry-gochujang glaze, your choice of a world-class glass from a 5,000-bottle wine cellar, and a stunning slice of black sesame Oreo cake all within walking distance, chances are high you’d guess that you were visiting a place like Austin or Los Angeles. But this all can be found in Iowa’s capital city in 2025, on Ingersoll Avenue between 28th and 39th streets. Welcome. Pull up a chair and prepare to devour Des Moines.

True, in the 1970s, Des Moines was overflowing with steakhouses, pizza parlors, Chinese takeout, surf-and-turf restaurants, and not much else, say long-time entrepreneurs and chefs Lisa LaValle (the recently retired operator of Trellis Café at the Greater Des Moines Botanical Garden) and George Formaro (chef/owner of Centro, Django, South Union Bread Café, Gateway Market, and all of the Orchestrate Hospitality brands). But in the 1980s and ’90s, a big shift started to happen due to an increasing immigrant population, diverse food shows on TV, and easier access to travel that made it possible for culinary creatives to think outside of the meat-andpotatoes box.

Lynn Pritchard, who has amassed a celebrity-like following due to his signature Brussels sprouts salad, globally tinged roast chicken entrées, and mini chocolate chip sea salt cookies, confirms that “we are much more diverse than what non-flyover states and cities

give us credit for.” Pritchard is chef/owner of Table 128 and Hugo’s Wood-Fired Kitchen.

Formaro proudly avows that by 2002, when his Italian bistro Centro opened, “we started to bring food from other parts of the world here.” Des Moines’ population is growing in lockstep with its restaurant scene. “We used to try new things, put our heart and soul into it, and get crickets,” he says. “Now people care. It’s been 40-plus years in the making. People are all in on adventurous things — and we’re all better for it.”

Just ask Ian Robertson, a Des Moines native who moved back to Iowa’s capital city 2½ years ago with his wife (and teammate, pastry chef Jessica Robertson) and their three kids to help open Oak Park, which has become a “Wine Spectator”-awarded dining landmark. Despite being Des Moines’ pizza prophet, if Formaro was forced to choose one recipe that he worked hardest to perfect, it’s the bun that stars in every Zombie sandwich.“I worked 10 years to try to get that bun right. It is designed to remind you of the white squishy buns of the ’60s and ’70s, but hold all of that juicy hamburger in there and not disintegrate in your hands like those did.”

New York City, and beyond, Robertson can verify that the chefs in the Des Moines market are as passionate as those in larger cities. “You can taste and feel the love and authenticity,” he says. “It’s not just reserved for big cities, and we definitely get a better balance of work and life, which is highly appealing.”

Diners enjoy a similar balance, LaValle adds. “They have the accessibility of our restaurants on the spur of the moment,” she says. “In a big city, you plan those reservations weeks in advance. The accessibility goes both ways.”

On any given weekend from spring to fall, you’ll find the faces on the cover of this guide scattered throughout town. Watch for Joe Tripp, his wife and business partner Alex, their kids, and the wagon that has become their Saturday morning mascot strolling through the nine-block Downtown Farmers’ Market. They’ll be searching for the freshest and best produce to share with executive chef Ryan Skinner as he dials in that weekend’s tasting menu at Harbinger. LaValle will be at the market too, sipping coffee as she hunts for the best brain-boosting foods to cook for attendees of her dementia-prevention education program — her “career part two” passion project. Behind the table at one of the stands, you’ll find Crème Bakery owner Sammy Mila and her parents frying hundreds of chewy, tender, playfully topped mochi donuts that sell out well before the market wraps up at Noon.

Menus at all of his locations evolve with the seasons,“but perfectly brined and roasted chicken is one protein that I could happily eat for the rest of my life,” Pritchard says. The version he opened with at Table 128 this past summer showcased cast-iron chicken breast, Kahlúa and date purée, Greek yogurt, and pickled grapes. “Chicken translates across every style of cuisine, whether it’s pickled raisins, grapes, chanterelle mushrooms. It just always works.”

LISA LAVALLE:

A Sheet Pan Feast

Because she cooks so seasonally and is transitioning into a new career chapter, LaValle admits that her signature dish “is still evolving, which is exciting.” If she had to choose just one recipe “think of a sheet pan dinner that’s predominantly vegetables, a little protein, greens, and grain. That combination of things, that formula, is very me.”

“I really love the milk bread recipe that I developed, which took over a year,” Mila explains. But she had one hurdle to overcome: Not all of her patrons knew what milk bread was or what made it unique. “I thought, ‘How can I convince them to buy a loaf? I know: Everyone loves cinnamon rolls.’ We are the Midwest. They’ve grown in popularity immensely, and we’re very proud of them.”

Across town, Robertson and Chris Hoffmann, chef/owner of Clyde’s Fine Diner, will be lighting their charcoal grills to cook lunch for their families — “and try to slide as many vegetables in as possible for the kids,” Hoffmann jokes — before making the short commute to their kitchens to prepare for dinner service. And on their way to work, they might just pass by Formaro in his signature red bandana strolling from Orchestrate restaurant to restaurant to help expedite the dinner rush. Or they may spot Pritchard pushing his son Hugh on the swing set at the park before printing new menus to deliver to his three establishments across Des Moines.

So, what does home taste like? According to these chefs, it tastes like piled-high tacos from Tacos

La Familia, Faustinos Taqueria, or Tacos Degollado (just look for the white food truck in the Advance Auto Parts parking lot on Martin Luther King Jr. Parkway and University Avenue, and tell them we sent you). It tastes like a cozy bowl from Phở All Seasons. It tastes like the mussels poached in white wine and shared on the petunia-lined wraparound porch at Sherman Hill mainstay Aposto. It tastes like the signature French fry recipe that Hoffmann and his Clyde’s Fine Diner team whips up for patrons — proof that the 2024 James Beard Award nominee doesn’t phone it in for one moment. A single mention of that seemingly simple side dish during our chef panel discussion resulted in refrains of “I have to order them every time” and “SO GOOD.”

“It’s no secret how we do it,” Hoffmann says of the signature fries. “Cutting, rinsing until everything is completely clear, parboiling, freezing to make them nice and pillowy on the inside, then frying them. This shows the level of attention we put into everything on our menu. We don’t sleep on any detail except the ketchup. I’m not going to make anything better than Heinz!”

“A lot of people look at us as a state in which we don’t leave Iowa,” Tripp says. “George just got back from Italy. I just returned from Korea. Food is very experience-based, and I always tell my staff that our mission is storytelling — whether that’s the story of where you’ve been, what you’ve learned, or what memory that food has for you.” Inside the four walls of his restaurant and throughout the Des Moines metro area “a lot of people have left, experienced things, and come back with these experiences. We haven’t seen talent like this in a long time,” he says.

One dish has been on the Harbinger menu since day one more than seven years ago, and it’s this soured carrot, house-made lemongrass sausage, and crispy garlic recipe. “It came from my trip to Vietnam that really started everything for me. It grew in popularity because it introduced new flavors and brought diners on a journey along with me they hadn’t been on before. It helps us have a conversation and form that relationship with diners.”

IAN ROBERTSON: Bacon-Glazed Chop

“I didn’t think this pork chop with bacon glaze was going to become Oak Park’s signature dish, but it is one that we sell equally to our filets. I put that on the menu and thought I’d change it in a month and a half, but it’s a staple dish that people love,” Robertson says. The fact that it’s cooked in Oak Park’s signature bourbon certainly doesn’t hurt. “It’s very Iowa.”

“Our entrée section of our menu is where I like to live,” Hoffmann says, and where he can flex his creativity in seasonal twists on his staple salmon, chicken, pork, and pasta dishes. Every meal at Clyde’s should start with one thing
