To advertise in The CF15 Directory please call 07989 431716 Welcome to the July/ August edition of The CF15 Directory Well the summer holidays are nearly here; & at the time of writing this, it appears we have the sun back. Hopefully the lovely weather will stay long enough so that we can all take advantage of the beautiful area we live in. Why not go for walk or a cycle along the Taff Trail, or visit Castell Coch? If you want to go further afield, then the Gower is beautiful & Barry Island has seen a resurgence in popularity over the past few years. If its keeping the little ones occupied, why not have a chat with some friends and plan some play days, take it in turns to go to each other’s houses, and each bring something for a picnic or cooking session? Plan some gardening projects, plant some seeds or build a bird house. My little boy is currently fascinated by insects, frogs & birds so we have printed off a poster from the internet, & have been spotting, listing & drawing bugs, birds & other garden creatures, we have had hours of fun & he has been learning too. The nicer weather also seems to bring out the DIY enthusiast in us, Always remember to follow the guidelines/instructions for whatever you are doing; DIY accounts for a large number of visits to A&E each year in Wales! Please also remember basic first aid in the summer months, keep your first aid box stocked with plasters, eye wash, anti-histamines, & a first aid guide. Knowing what to do in an emergency can be vital. From how to treat a child stung by a wasp, choking, a suspected heart attack or someone who has fallen from a ladder; the right approach can make a big difference. For more information why not contact St Johns ambulance: - www.sja.org.uk This edition sees the usual mix of adverts from local businesses, articles & some recipes. If you haven’t already submitted an article or have yet advertised your business, then why not give me a call? Finally a big thank you to all advertisers, old & new for their support of The CF15 Directory, without you, this magazine would not be possible! Enjoy your summer. Best Wishes, Joanna

New Foundations New Foundations was set up in 2010 as a response to the need for support for home educated children to share educational and social opportunities. Children are home educated for a variety of different reasons on a short-term or a long time basis. There are over 2000 children in Wales who are being home educated. Many children are home educated because in school they were getting bullied or have special educational needs. We also support children with learning diďŹƒculties whose parents feel they can develop their education needs better through individual attention than being in a large class setting. We have children who express that they were very unhappy in a large high school setting even though they flourished in smaller junior school environments. Some children don’t thrive in a school setting and some parents feel they can achieve much better educational results by being home educated. We aim to support families by offering a range of opportunities to meet together, play together and learn together. For further details contact Jayne at newfoundationshe@virginmedia.com

To advertise in The CF15 Directory please call 07989 431716 ÒMy Special Bob- Part 2Ó We bought a carriage and joined Eppynt Carriage Driving Club and are having brilliant fun. We started off doing indoor events with Eppynt and are now doing two-day events outside in Brecon. On the first day we do dressage and then cones, we have to wash, plait and make Bob and the carriage look smart, we dress in our showing clothes and I have to wear an apron to drive. The dressage test is always difficult to learn, there are so many different things to do including making Bob reverse. You then do the cones within a certain time limit with out knocking the balls off the top, itÕs difficult as there is hardly any room to spare! You get faults for knocking the balls off and going too fast or too slow. On day two you wear your cross-country colours, BobÕs and mine is purple. First there is a forest drive before coming back into
the fields to do the obstacles, you have a set time to do the whole drive which is 8km long but have to do all the obstacles as fast as you can. The obstacles can be really confusing, you have to try to work out which is the fastest way to go through the gates without going through them in the wrong order. Bob and I have done really well, winning the Junior Indoor champion over the winter and winning the Junior sections so far in the summer, we have been in the Brecon and Radnor
Express newspaper twice as well. My Sister Caitlin has been helping as a groom and got interested in driving and wanted her pony broken to drive so she could compete, it was Thunder and CaitlinÕs first go last time, their picture is here too, he is still practicing in the trap. I am still riding Bob lots as well, we are doing loads of jumping and dressage, and he is still the best pony ever. Megan Coles and Bob aged 12 & 14.!

I’ve been a supporter of the MND Association since my Dad was diagnosed with the disease in 1999. June is awareness month and this year, following the great success of last years event, I held a Cake Sale at my house. Last year the sun shone brightly all afternoon. This year it rained for the days leading up to it and on the day it was cold and windy! But that didn’t stop more than 70 members of my family and friends turn up for tea and cake. The baking was a real team effort with people bringing homemade cakes such as Carrot Cake, Bara Brith, Welsh Cakes, Ice Cream Cone Cakes, Chocolate Cake, Fairy Cakes, Lemon Drizzle Cake, Victoria Sponge and many more. You name it, we had it. Even Caraway Seed cake which was one of my Dad’s favourites. It’s quite clear that my family and friends like to eat cake. Really, really like to eat cake! There was not a single piece left by the end of the afternoon and we’d raised, on first count, £660.00 but more donations came in during the week after the sale and we made it to over £700.00! That’s topped last year’s total - maybe next year we’ll make it to £800.00! I’m already planning what I’m going to bake. Rachael Motor Neurone Disease (MND) is a progressive disease that attacks the motor neurones, or nerves, in the brain and spinal cord. This means messages gradually stop reaching muscles, which leads to weakness and wasting. MND can affect how you walk, talk, eat, drink and breathe. There is currently no cure.

The Laurels’ Diary Page
As usual, we’ve had a busy couple of months! The children have been enjoying reading ‘Super Worm’ by Julia Donaldson. The staff planned ‘worm’ themed activities, including brown spaghetti play and string painting. The nursery has also ordered a worm farm so the children can discover more about how the worms live. The children have been practising wormhunting in preparation! The garden has also had a mini makeover to include sage, rosemary and thyme plants. The children have had lots of fun smelling the plants and planting their own herbs and sunflowers. The staff also used dried rosemary, thyme and sage to make scented play dough. The parents thoroughly enjoyed playing with the herb dough during Parents Evening! On 18th April and 17th June, we had our National Day Nurseries Association – eQuality Counts assessment. Our inspector, Tina, stayed with us from 8am – 6pm, observing all aspects of the nursery. Whilst she was with us she also talked to parents, staff and children. Tina gave us some fantastic feedback on the day, so we eagerly await our result. We will keep you posted! Salmon with green butter
A simple way of serving salmon, topped with a slice of delicious herb butter. Serve with boiled new potatoes and a green salad. Ingredients For the green butter • 225g/7oz unsalted butter, softened • small handful fresh parsley • small handful fresh chives • large handful fresh sorrel leaves (if you can't get sorrel you can use extra parsley and chives or tarragon or basil and add a squeeze or two of lemon juice) For the salmon • a drizzle of olive oil • 4 portions salmon fillet, skin-on, about 170g/6oz each • salt and freshly ground black pepper To serve • lemon wedges • a few sprigs of parsley and lengths of chive Preparation method 1. First make the herb butter. Place the butter in the bowl of a food processor. 2. Chop the herbs roughly. You should aim for two tablespoon each of parsley and chives; there will be more of the sorrel. Place the herbs into the bowl with the butter. Process until the herbs are finely chopped, scraping down the bowl with a spatula once or twice if necessary. (If you don't have a processor, chop the herbs finely, then beat into the softened butter.) 3. Scrape the butter onto a sheet of silver foil, pat into a sausage shape, roll up and chill in the fridge until needed. (Herb butters can be frozen for up to a month.) 4. For the salmon, add the olive oil to a non-stick frying pan and carefully wipe up any excess oil with kitchen paper - you don't want a lot of oil in the pan. When the pan's hot, add the salmon, skin-side down first, and cook for 2-3 minutes, depending on the thickness of your salmon, without moving it around at all. This will ensure the skin doesn't stick to the pan. 5. While the salmon is cooking, remove the butter from the fridge and slice off eight discs with a hot knife (using a hot knife creates a clean cut). 6. Season with salt and freshly ground black pepper, then turn the fish over and cook for a further 1-2 minutes or so, until the salmon is cooked but still has a line of translucent, darker pink flesh in its centre. This slight 'undercooking' keeps the salmon moist and tender.
Please mention The CF15 Directory when responding to adverts 7. To serve, lay the salmon on warm serving plates and top with a slice or two of green butter. Tuck a lemon wedge in on the side and garnish with the parsley and chives, if you like.
Rhubarb fool with lemongrass Ingredients For the rhubarb fool • 700g/1½lb rhubarb • 2 lemongrass stalks very finely chopped to almost a powder • 100ml/3½fl oz water • 140g/5oz unrefined organic sugar • 110g/4oz icing sugar • 150ml/¼ pint crème fraîche (preferably organic) or 1 small carton • 150ml/¼ pint mascarpone cream • 4 tbsp white chocolate, grated or peeled into shavings For the rhubarb lemonade • 1 lemon, juice only • 1 small glass sweet wine, optional Preparation method 1. Wash and trim, but do not peel the rhubarb. Cut into even chunks about 3cm/1¼in long and put into a warm pan with the water, sugar and the lemongrass. Cover and simmer until the rhubarb softens and breaks down - usually this takes about 10 minutes. 2. Strain through a sieve, reserving all the juices and allow the rhubarb to cool down. 3. Whisk the icing sugar into the mascarpone, then gently fold in the crème fraîche and half the rhubarb. 4. Divide the remaining rhubarb among four dishes or glasses and spoon the fool mixture on top. Allow to set and cool in the fridge. Serve with the chocolate shavings on top. 5. For the rhubarb lemonade, pass the reserved rhubarb liquid through a fine sieve, then add lemon juice to taste. Add the sweet wine if you want to make it alcoholic and chill well in the fridge. 6. Serve in small iced glasses with the fool and some shortbread biscuits or Tuille biscuits.

Pentyrch Primary School It has been a busy time for us at the School. Recently the children had a visit from Mad Science and all went home full of stories of various experiments including one where a teacher was made to levitate with the use of a leaf blower! We have also had Zoo Lab come in with some amazing lizards, snakes, spiders and snails. The children were in close contact with these creepy crawlies and were full of facts about them—what a fantastic hands on way to learn. We have been holding Assemblies run by each class during the last few months with Mums, Dads and Grandparents invited to watch. With subjects of World War 2 for Juniors and ‘Growing Together’ for the Infants, the children have thoroughly enjoyed learning, performing and sharing with their families their knowledge. We have a school choir and several children auditioned and got into the Cardiff County Choir. This is something we are very proud of—well done to them. They performed beautifully at the recent Hawaiian Summer Fayre. FOPSA (Friends of Pentyrch School Assoc) have been busy fund raising for the school library with Table Top Sales, Cake Bakes, an Easter Egg Hunt, a fabulous Barn Dance and of course the School Fayre, Look out for our posters on the village notice boards for our next events and come and join us! Email: schooladmin@pentyrchprm.cardiff.sch.uk or Call 02920 890292 My Pentyrch Primary School Memories Written by Ffion Jones I remember many things about Pentyrch Primary School but here are some of my favourites: In year 2, a teacher asked us what we wanted to be when we were older. Anna said an actress, Molly wanted to be an athlete, I wanted to be a doctor and Yasmin wanted to be.... a dog! It was so funny!! In year 4 as part of our Tudor project we got to make our own shields and had a mini fight on the yard! That was lots of fun! In year 5 we went to Llangranog. We had loads of fun and did lots of activities like, horse riding, go-karting, tobogganing, swimming, skiing, high ropes course, adventure course and quad biking. I have really enjoyed my time here at Pentyrch Primary School and I’m sure I will miss Pentyrch Primary next year.

Make your own bird feeder
It’s important for us all to keep our garden birds fed throughout the year so why no need and egg carton, a paper punch and some string. Firstly, cut off the lid of the Thread a piece of string through each corner and tie a knot to stop it from slipping string together in the middle of the carton and tie them together in a knot. Fill your tree in your garden.
