Season’s Greetings! This year has flown by, it only seems like yesterday that I was writing about summer BBQ’s, now the tinsel is on sale in the shops & thoughts are turning to how to have a stress free Christmas! With the economy still suffering, many of us can’t afford a lavish Christmas, so why not try a homemade Christmas? Use drawings your children or grandchildren have made as wrapping paper. Make jams or chutneys, & give as gifts. Also homemade festive cakes and biscuits, wrapped in pretty bows/ boxes make a very thoughtful present. If time doesn’t allow for a homemade Christmas; & let’s face it the demands of daily life don’t always allow for craft time, then why not support one of the local festive fayres , there are always lots of gifts to pick up & you will be supporting local causes. I am keen to hear from you for a feature in the Jan / Feb edition. I’d like to know your tried, tested & loved recipes. Or hints & tips for around the home; do you have a perfect way to ensure your bouquet of flowers last longer, or the best way to ensure streak free clean windows? The Laurels’ Diary Page What a busy summer! We are very pleased to announce that we have passed the National Day Nurseries’ Association (NDNA) eQuality Counts assessment. We are now a NDNA Quality Assured setting! We would like to say a massive ‘thank you’ to all the parents, children and staff who took part in our assessment. Your unwavering support is always, sincerely appreciated. We also had our CSSIW inspection on 3rd September. The inspection went very well and all the children enjoyed interacting with the inspector and showing her their fantastic table manners! As always, the report will be photocopied and given to each family within the nursery. Also in September, the children (and staff!) thoroughly enjoyed having a visit by two police officers from the local station. The officers talked to the children about Road Safety and Stranger Danger. The children also enjoyed trying on the officers’ hats. In addition, the kind officers from Fairwater station have promised a future visit with a REAL police car! Since October, the nursery has been immersed in the story, ‘The Tiger Who Came To Tea’ by Judith Kerr. The children have made their own tiger masks, to wear during the Tiger DressUp day. They have also had lots of fun recreated the Tiger’s tea by making their own sandwiches and ‘Tiger Food’. Phew! The Laurels, Ty Nant Road, Morganstown. T: 029 2081 4353

I’ve been a supporter of the MND Association since my Dad was diagnosed with the disease in 1999. June is awareness month and this year, following the great success of last years event, I held a Cake Sale at my house. Last year the sun shone brightly all afternoon. This year it rained for the days leading up to it and on the day it was cold and windy! But that didn’t stop more than 70 members of my family and friends turn up for tea and cake. The baking was a real team effort with people bringing homemade cakes such as Carrot Cake, Bara Brith, Welsh Cakes, Ice Cream Cone Cakes, Chocolate Cake, Fairy Cakes, Lemon Drizzle Cake, Victoria Sponge and many more. You name it, we had it. Even Caraway Seed cake which was one of my Dad’s favourites. It’s quite clear that my family and friends like to eat cake. Really, really like to eat cake! There was not a single piece left by the end of the afternoon and we’d raised, on first count, £660.00 but more donations came in during the week after the sale and we made it to over £700.00! That’s topped last year’s total - maybe next year we’ll make it to £800.00! I’m already planning what I’m going to bake. Rachael Motor Neurone Disease (MND) is a progressive disease that attacks the motor neurones, or nerves, in the brain and spinal cord. This means messages gradually stop reaching muscles, which leads to weakness and wasting. MND can affect how you walk, talk, eat, drink and breathe. There is currently no cure.

You will need... 2-inch red Christmas ball Craft glue Flesh, red, black and white acrylic paints Paintbrush Blush and cotton swab Wooden barbecue skewer White, curly craft hair Scissors Rule
Hot glue gun Red fabric, scrap White faux fur, scrap Straight pins Sewing machine Needle and thread 1/2-inch white pompom Red embroidery floss and embroidery needle
Old glass Christmas ball ornaments or boxes of clearanced ball ornaments from the previous year are just screaming for a handmade transformation. The colour of the balls set the stage for their new identity. This whimsical Santa ornament uses minimal painting and sewing skills, making this appropriate for even the most novice of crafters. Don't let the simplicity fool you though, the finished result looks very professional and will become a hot seller at holiday craft shows. Remove the metal collar on a red, 2-inch diameter Christmas ball. Apply craft glue around the open neck of the ball. Replace the collar. Paint a 1-inch circle on the side of the ball using flesh-coloured acrylic paint. The circle (face)shape need not be perfect as the edges will be covered up as the ornament progresses. Allow the paint to dry. Apply two 1/4-inch cheeks to the centre of the face using blush and a cotton swab. Dip the blunt end of a wooden barbecue skewer in red acrylic paint. Dot a red nose in the centre of the circle for Santa's nose. Dip the blunt end of the skewer in black acrylic paint. Dot two eyes above the nose. Allow the paint to dry. Dip the pointed tip of the skewer in white acrylic paint and dot a highlight on each eye. Allow the paint to dry. Briskly rub a palm-size amount of white, curly craft hair between your hands to fluff and bind the curls together. Pull the hair into a length approximately 6 inches long. Apply hot glue around the edges of the painted face. Lay the length of hair in the glue, completely surrounding the face. Cut a 5-inch wide by 8-inch long rectangle from red fabric for Santa’s hat. Cut a 1/2-inch wide by 8-inch long strip of white faux fur for the hat brim. Fold the red fabric in half with the right sides together and the short edges matching. Pin the

Hand-sew a running stitch, 1/4 inch from the edge, around one open end of the tube. Pull the thread to gather the end close. Knot and cut the thread. Turn the hat right side out. Fold over the open edge a 1/2 inch to the outside. Fold over another 1/2 inch. This is the base for the hat brim. Apply hot glue along base of the hat brim. Lay the fur strip in the glue, with the ends of the strip lined up with the seam on the back of the hat. Trim off the excess fur at the end. Apply a dot of hot glue to the top of the hat. Place a 1/2-inch white pompom in the glue. Place the hat on the Santa ball with the seam in the back. Adjust the hat as desired. Insert the tip of your craft glue bottle under the edge of the hat brim and apply glue around the head. Allow the glue to dry. Thread red embroidery floss onto an embroidery needle. Feeling through the hat fabric, locate the wire hanger of the ball ornament. Insert the needle into the fabric, through the ring of the wire and back out of the fabric. Cut the ends of the floss 4 inches long on each side of the ring. Bring the ends together and tie into an overhand knot 1 inch from the end. Many thanks to Si창n Laycock of Radyr for this craft idea.

Parsnip & Bacon Soup
Method Heat the oil in a large saucepan. Add the onion and fry for 5 minutes or until soft. Add the bacon and cook for 2 minutes. Add the Ingredients parsnips and cook for another 10 minutes, until the pieces start to 1 tbsp olive oil, soften. Pour in the stock, bring to a boil, then simmer for 10 min1 small onion, sliced utes until the parsnips are very soft. Meanwhile, in a frying pan, 100 g rashers of streaky bacon toast the walnut pieces over a medium heat, stirring constantly to 500 g parsnips, peeled and chopped prevent burning. Remove to a bowl. Then add the extra chopped 1.2-1.5 litres vegetable stock bacon and cook over a high heat, stirring often, until browned and 1 heaped tbsp honey, (optional) crisp. Remove to paper towel to drain. Mix the walnuts, bacon and salt, and pepper thyme together in a bowl and set aside. Remove the soup from the For the garnish: heat and allow to cool briefly before puréeing it with a blender. 4 tbsp walnut pieces Return to the pan, heat gently and stir in the honey, allowing it to 2 rashers of streaky bacon, chopped a few sprigs of soft thyme, halved or quartered dissolve in the hot soup. Divide the soup amongst serving bowls. Top each with a little of the walnut-bacon-thyme mixture to garnish. Sprinkle with freshly milled pepper and salt and serve.
Turkey & asparagus risotto
Method Thinly slice the turkey and fry in hot olive oil. When it's nice and golden, add the chopped asparagus and the roasted pepper and Ingredients courgette rice. Pour on the hot vegetable stock, the double cream 200g Turkey and a generous knob of butter. Stir everything together over a 100g asparagus, chopped Ready to cook roasted pepper & courgette rice medium heat for a few minutes. It's ready to eat when the risotto has a creamy texture, and most of the liquid has been absorbed 200ml vegetable stock stirring helps to create the texture. Chocolate and marmalade sponge pudding with crème anglaise Ingredients 100 g unsalted butter, softened 100 g caster sugar 2 eggs, beaten Grated peel of 1 orange ½ tsp baking powder 75 g plain flour 40-45g cocoa powder few drops of milk, if needed 2 tbsp sweet orange marmalade For the crème Anglaise: 300 ml double cream 1 vanilla pod, slit lengthways 25 g caster sugar 2 egg yolks
Method Place the butter and caster sugar in a mixing bowl, beat until white and fluffy. Gradually add in the beaten eggs. Mix in the orange peel. Sift the flour, cocoa powder and baking powder into a separate bowl and mix together. Using a wooden spoon, gradually fold the sifted dry ingredients into the butter mixture until the mixture is of a dropping consistency. Add the milk if the mixture is too stiff. Meanwhile, heat the orange marmalade in a small saucepan, stirring well until syrupy. Pour the hot marmalade into a greased 900ml pudding basin. Add in the sponge mixture. Cover tightly with pleated kitchen foil, wrap securely with cling film and steam the pudding in a steamer for 1½-2 hours, topping up the hot water in the steamer as necessary. To make the crème Anglaise, place the cream and vanilla pod in a heavy-based saucepan and bring to the boil. Remove the vanilla pod from the cream and scrape out the seeds into the cream. In a large basin, whisk together the yolks and sugar until pale. Slowly add the hot cream mixture to the yolk mixture, whisking constantly as you do so. Return the cream mixture to the heavy-based saucepan and cook over a low heat, stirring constantly with a wooden spoon, until the mixture thickens and coats the wooden spoon. Take care not to allow the crème Anglaise to come to the boil or it will split. Pass the crème Anglaise through a fine strainer and serve at once with the steamed chocolate and marmalade pudding.
