During her years on tour and pantomime Jane has made costumes for some very well known performers including Frank Bruno and David Essex, Jane McDonald, Lionel Blair, Alvin Stardust and Eastenders star Shane Richie. “There have been so many great moments during my career, I’ve been really lucky as I’ve always been able to work doing something I enjoy. Being able to travel and do something I love has been fantastic, meeting interesting people and being given the opportunity to create costumes has been wonderful.” Although Jane is aware that her career allows her to do many things others wouldn’t, she admits that it is not easy. “There is a lot of hard work involved especially in touring theatre and it’s really not the glamorous life people imagine but it is tremendous fun and can be very rewarding. Probably the highlight of my touring career was the opportunity to travel abroad especially Las Vegas with Simply Ballroom.” Jane adds, “Since I started my business ‘Vivid,’ the highlight was definitely the first time two of my costumes were worn for the Amateur Latin competition at the closed British Championship in Blackpool. 10

There are many talented and successful costume makers and the dancers will find the one that suits their own individual style and run with that. Customers pay a lot of money for their costumes and should be completely satisfied with them. “All dressmakers have a regular and loyal clientele. I feel I am able to offer a very personal service and my customers know that I personally make every dress, shirt and pair of trousers that are ordered from me. “The larger companies have to rely on several workers completing different stages of each costume as they work on a much larger scale.” Since starting I have also made ladies ballroom costumes, wedding dresses and a few freestyle costumes, although the emphasis is definitely on the Latin American competition wear.” Gr8 Life magazine

A report suggests that only a small percentage of youngsters will follow their childhood dream job. Teacher, footballer and pop star are all future occupations of today’s seven year olds (according to them). Rebecca Keegan reminisces on her adolescent dream. I’m sure you can remember the day you decided what you wanted to be when you grew up - like me you were probably six or seven, when all of a sudden you had a flash of inspiration and knew, that no matter what, your future was decided. I decided I wanted to be an ice cream man being female wasn’t going to stand in my way, and I would sell ice creams all day and live in my van happily ever after. Needles to say that didn’t happen, but I can clearly remember being so sure that it would. A friend of mine at school said she was going to be a dancer and she was going to be in a West End show one day - she can currently be seen in Sister Act The Musical at the London Palladium, proving not all childhood dreams are pie in the sky. When a conversation began in the Gr8 Life office about what the team of journalist wanted to be when they grew up, responses ranged from journalist (well done to those people) right up to the more obscure dream of being a train driver. It was recently reported that only 11% of people achieve their dream job. Whether it be a christening, dinner party or birthday party Clare’s venture involves her coordinating an event so the host can enjoy and relax without worrying about the food, drink and being a perfect host. However, she does point out, “I am not an event coordinator and I by no means want to take over the planning. I just want to take the pressure off the host so they can enjoy themselves. Clare has been in hospitality and catering all her life with her parents owning and running hotels during her childhood. She then went on and studied hospitality, food safety and event management and has been the curriculum leader for Hospitality and Catering at Southport College for several years until she decided to follow her dream of running her own business. “I cater for a huge range of people. I have done a first birthday party but also drinks parties for older people. My clients range from one to 81!” Clare, who lives in Southport, decided to start up her own business ‘purely by chance’ after she was recommended by a friend to help with a christening party. Clare says: “As a result of this, I thought with the skills I have and the passion for perfection, customer service and always doing everything to the best of my ability I would do this as a more permanent venture. 18

ou cannot get as traditional as Halliday’s fishmongery which has every shellfish you could imagine, on top of all your usual haddock, cod and salmon. The customer can always have piece of mind that they are buying good quality food. Owner Joanne Halliday says: “Birkdale is a small community and everyone helps each other. Supermarkets might try and undercut us but they cannot beat us on service. We can prepare all the fish for our customers, in fact we can do everything bar cook it! We also have sauces and eggs etc. – things people may not expect to get from a fishmongers.” Joanne adds: “If people can’t get out of their house for whatever reason I can personally deliver everything they want to them. Sometimes they ask me to pick up items from some of the other shops as well and that is fine too. We help in whatever way we can.” Owner Joanne Halliday

I have always been hugely fond of animals and loved being around them. I loved the idea of selling products for animals and have been here ever since. Florist to the famous

ucked away from view in The Mews, a small area of shops behind Liverpool Road in Birkdale, is a little florist’s workshop. It belongs to David Beckham-Doyle who,
although a florist by trade, could easily be classed as a PR guru and event planner to the stars. Here David tells Gr8life about his amazing career. Gr8life: Have you always wanted to be a florist? David: I never really planned to be doing this kind of work, my life just led me in this direction. I was always interested in creative things such as art and fashion, theatre and dance. I think this is why people come to me to design their decor for events as I approach them from a different angle to others. Gr8life: How did it all start for you? David: I was lucky to be taken under the wing of some very talented floral designers and florists who taught me all the rules and basic mechanics of their craft and then encouraged me to experiment and create my own style. I was definitely blessed that they were so forward thinking and experimental – definitely ahead of their time! I was also privileged to work freelance for a couple of high profile event decorators/florists who also had a more theatrical vision in the use of flowers and they inspired me to set myself apart from the more traditional florist shop image.

istrot Vérité is popular, that much is true. Planning to eat there is not an option as it can take days, sometimes weeks, to get a table at the time of your choice. In a few
months, Bistrot Vérité has become one of the North West’s best foodie destinations. Gr8life: Was food always important Marc? Marc: Yes definitely. I always wanted to be a chef. My father owned Claude’s Patisserie in Churchtown, so I was introduced to cooking and baking from very early on, but baking was not really for me, I wanted to be a chef right from the start.

After meeting his wife Michaela they both travelled to Belgium for a year and finally came back to their roots. Marc then started to make his name as Head Chef at The Warehouse Restaurant. Gr8life: From The Warehouse to your own restaurant must have been a difficult decision?
A new restaurant is probably the most difficult business to launch. A reputation can take months, even years to build up and overnight sensations simply do not exist. The couple who have bucked this trend are Marc and Michaela Vérité who, after opening Bistrot Vérité in Birkdale, have had an amazing few months. Gr8life finds out the secret of their success. Marc: Yes it was. I had been working for 13 years at The Warehouse but running our own restaurant was our ultimate dream. There came a time where we both knew, that at 39 it was time to either try, or live with regrets. With three children, the gamble was high but Paul Adams, the owner of The Warehouse was supportive and understood we had to do this. Birkdale was the town that they both knew as perfect for their new venture but luck played its part in finding the premises that would become Bistrot Vérité. 37

It was only right to start with my absolute favourite, Moules marinieres. This dish is everything I am about, simple cooking, straightforward, comforting, stylish and absolutely delicious.

GR8LIFE: What is the future holding for Marc and Michaela? MARC: I would be really happy to have everything carry on as now. If you can do something you really love and it is appreciated, then why change anything? People keep telling me to expand and go bigger but I can’t see that’s for us. The business exceeded all our expectations and we cannot believe how far we have gone from the day we opened. Marc and Michaela Vérité are the perfect example of how two people can make a business soar. Their respective talents mean that the Bistrot remains unique and the quality of its food and service consistent and undisputable. GR8LIFE: What is the most important thing in your life? MARC: For the both of us, our families are where it stops. When we started this, we wanted success for us and the children. Now, with my Dad retired but coming here to help, as he loves it so much, with the fact thatwe can take a holiday and work together to directly influence our own lives, the dream we had has turned into a reality. MOULES MARINIÈRES Suitable for a starter for 4 or a meal for 2. It is important when you prepare fresh mussels to remove any that are chipped or already opened prior to cooking. Once cooked, it is also very important to remove any that are not opened.
INGREDIENTS • 2lb fresh and clean mussels • 4 shallots, finely chopped • 2 gloves of garlic, crushed or minced • Half a leek, finely chopped • 1 carrot, finely chopped • 2 tablespoons of finely chopped parsley • 250ml of fresh whipping cream • 1 glass of good dry white wine
METHOD 1. Wash mussels and remove any barnacles. Discard any opened mussels. 2. In a deep casserole dish fry off on a medium heat the shallots, garlic and leek with a touch of oil, for a few minutes, taking care not to colour the vegetables. 3. Add the mussels and white wine. Turn up the heat, put a lid on dish and cook for two or three minutes shaking the pan every so often 4. Add cream and parsley and replace lid. 5. Boil mussels for five minutes until the shells are open. 6. Serve immediately with warm crusty bread Drinking suggestion: A dry white wine like a Muscadet, well chilled.

Fabulous fashion Eleven ladies who have been receiving treatment for breast cancer at the Marina Dalglish centre at Aintree University Hospital strutted their stuff on the catwalk in October. The event took place to raise funds towards the building of the new Radiotherapy centre adjacent to The Walton Centre in Fazakerly. Charity fashion show Models hit the catwalk in October at The Vincent Hotel in Southport to showcase designs from the new Autumn/Winter ranges at Coco Boutique. Designers included Matthew Williamson, D&G, Missoni, Juicy and the new Project D range from Dannii Minogue to name just a few. Over 130 fashion lovers turned up to watch the show and support the chosen charity - The Marina Dalglish Appeal. Coco had a treat in store for the ladies and they were treated to ‘Butlers in the Buff’ as their wine waiters for the evening.
