ot sure what to make for the upcoming holiday season? This year try foods that are seasonal. According to researchers and health experts, eating seasonally is better for your health, promotes balance with the earth’s resources and cycles, reduces your carbon footprint by not buying foods that must be transported long distances and gives you food at its peak of freshness for the best nutrition possible. Who doesn’t love a fresh summer tomato or juicy peach plucked from the tree? It is easy for most people to eat in season during the bounty of summer. What is more difficult is when winter rolls around because those vegetables have gotten a bad rap. In the cold months, roots, tubers and other cold weather plans abound, everything from carrots, parsnips and potatoes to turnips, kale and broccoli. Winter fruits include kiwifruit, mandarin oranges, other citrus, persimmons and apples. While technology and modern transportation makes it possible for us to import tomatoes in the middle of the winter, eating seasonally tells us those winter tomatoes might not be the best choice, will not taste the same as their summer cousins, and may not be as good for your family. Researchers from the University of California, Davis, discovered that transport times and time spent sitting on grocery store shelves robs many foods of lots of nutrients. For example, they found spinach and green beans lost over two-thirds of their vitamin C within one week of being harvested. Another sobering statistic; over 80 percent of the energy used by the food system goes toward the processing, packaging, transporting and storing the food. Those eating seasonal vegetables know the foods they are eating are nutrient dense and at their peak of freshness thanks to local farmers. According to Pennsylvania mom and blogger Christianne McCall, eating in season provides “delicious food that is good for you, good for the environment and good for the local economy.” McCall is a mom of three and Yoga instructor who blogs about healthy eating and food. The biggest hurdle may be getting your family to try new, unusual looking winter vegetables. How best to introduce winter vegetables? Try shopping at a local farmers’ market so you can ask the farmer for recipe ideas. When shopping, look for firm, heavy, smooth skinned vegetables that do not have brown spots or cracks in their skin. When many root vegetables are wrinkled, it signals they have lost their moisture and now have a spongy instead of crisp texture. One more barrier is that many people do not know how to cook them properly. The simplest way to prepare many winter vegetables is to oven roast them with a little olive oil and seasonings. They become sweet as the outside of the vegetables caramelize in the oven. Seasonal foods are cheaper to buy because they do not have to travel very far to get to you, and better for you and your family. So, this holiday time think seasonal foods and truly celebrate the “season”.

ids in Martinsburg – prepare to rock! After a busy first year K in Spring Mills, “Let There Be Rock School,” a combination music lesson facility and afterschool community center, has
opened a larger venue down the street from Martinsburg High School. “We’re very excited to be downtown in the heart of the community, where we’ll be closer and more involved with the local schools as well as the Boys and Girls Clubs,” says owner and professional drummer, Butch Rice. The “Rock School” concept teaches music to kids ages 5-17, as well as adults. But beyond just teaching the fundamentals of drums, guitar, keyboards or singing, they do some things a traditional music school doesn’t. Experienced musicians and music teachers place small groups of kids into “bands” and coach them how to play together on a variety of rock songs. After a month or two of rehearsals, the bands put on live shows, complete with the young bands belting out hits from Kiss, AC/DC, the Beatles and the like. It’s this “performance” element that you just don’t find anywhere else. The school serves a valuable function in the area, says Guitar coach, Thomas Glattlia. “It offers a means of expression,” says the clean-cut redhead thoughtfully. “It’s a chance for kids to be creative and be around other creative individuals.” Youths can socialize in the lounge whenever the school is open, not just between lessons or band rehearsals. In just a year, dozens of new friendships have been forged. Glattlia goes on to explain, “Every single student here knows every other student, and they are all here to do something really cool together! It’s so much more than just the music.” It’s also a great way for school-age kids to try a broad range of instruments. Star drum student, Wyatt Burkholder, age 12, has been attending rock school for just 7 months, but is already picking up his third instrument. “I used to play keyboard a lot, and I really liked that,” says the slim young boy with a trademark beanie-cap. “Then, Butch (the owner), introduced me to the drums and I’ve been mainly doing drums since then.” Looking to expand the young pro’s skillset, the staff recently introduced him to rock guitar. “Now I at least know what a power chord is,” says Burkholder. In this way, the young musicians can become fluent in several instruments. Burkholder now plays songs such as “Wild Thing” by the Troggs, “Yellow Submarine” by the Beatles, and “You Really Got Me” by Van Halen with ease. already an accomplished rock guitarist and an inspiration to the younger kids. He says the mentoring and structure offered at “Let There Be Rock School” has helped with his confidence, and he’s now doing better in school than before he started. The new friendships of the students – now bandmates – is the reason many keep coming back. “I enjoy hanging out with all my friends,” sums up Wyatt Burkholder as he grabs his drumsticks to head into an hour-long rehearsal, grinning ear-to-ear. onderment shining in his little eyes, Gabriel opened his mouth widely to taste the snow falling from the rafters at the Barn at Springfield Farm in Williamsport. He gleefully shouted, “Wow! Mommy, look at all the trees!” and off he ran to explore the more than 100 trees contained in the barn which glowed warmly with Christmas lights. For the last several years, the Barn at Springfield Farm has hosted Charlie Brown Christmas during the evenings on December weekends. Local businesses and organizations have the opportunity to decorate trees, which utilize donated and repurposed decorations and materials. Entry to the barn is free to visitors, although donations are welcome and appreciated. Gabriel and I dropped some money in a collection bin and began a circuit of the barn. Trees are located on two levels and are decorated by the volunteers in all types of various themes. Some trees are very elegantly festooned in flowers and pearly beads, while more playful trees might contain Mickey Mouse and his friends. Yet others are beribboned and ornamented very traditionally in antique glass ornaments. Gabriel enjoyed stopping to stare at each tree and talk to me about the decorations. “What is this?” he asked about a terrapin head that was stuck out of a Maryland-themed tree which was adorned with black-eyed Susans and the state flag. “This tree looks like the Grinch!” he exclaimed about a Seuss-themed tree. Then he drew my attention to a tree decorated by a local florist with cries of, “Look at the pretty flowers; you like flowers, Mommy!” It was almost more than we could take in at one time.

The first level also had an enormous plush talking bear named Buster with whom Gabriel enjoyed a chat, and volunteers handed out cups of treats and cocoa to visitors. We grabbed some snacks and headed upstairs so that Gabriel could see Santa and Mrs. Claus to admit if he had been good or not and explain what he would like for Christmas. After waiting in a short line, Gabriel strode up to Santa and Mrs. Claus, sat on Santa’s lap, and then completely forgot how to speak. Santa asked him what he would like, and he sat there, not scared, but frozen and wide-eyed. Santa prompted him, “Lots of other little boys are asking for bicycles. Is that something you would like?” Finally, in a big rush, Gabriel stuttered, “I would like a hot dog!” I started to giggle while I was trying to take pictures. Santa gave Gabriel a candy cane, and as Gabriel hopped down and walked away, he found his voice and shouted back over his shoulder, “Thank you! And I’d like some Legos too!” before happily tearing into his candy cane and making his face sticky with it. Having delivered his important message to Santa, we finished our tour of the upstairs trees and admired the reindeer that fly overhead. We also had a beautiful view looking down at the Charlie Brown and Snoopy train display on the first level. We made our way back downstairs and walked outside to enjoy some of the outdoor decorations around the barn. Charlie Brown Christmas also offers horse-drawn wagon rides for a nominal fee, but because it was so chilly, Gabriel and I opted to get in the car for a drive through Byron Park on our way home. Byron Park’s light decorations, which were also free although donations were accepted, were visible from Springfield Barn, so Gabriel was enthusiastic before we even got close to the park’s entrance. We had to wait in a bit of a line of cars to get in, but it moved pretty quickly. While I tried to drive slowly and take pictures, www.childguidemagazine.com
Gabriel marveled at the light decorations throughout the park. Gabriel was surprised to see the Statue of Liberty, but some of the other decorations included ice skaters, a castle, playful bears, Santa and his reindeer, a gingerbread house, and even Sponge Bob in a Santa hat. However, we both agreed our favorite things to see were the gazebo, which had been beautifully transformed into a carousel, and the nativity set guarded by brightly lit angels. As we drove home, we agreed that a trip to Charlie Brown Christmas and Byron Park would be part of our yearly Christmas tradition. Holiday volunteering can reap year-long rewards for character building service learning while creating lasting family memories. ally was nine years old and her sister Emily was seven years old when they began volunteering at their local food bank with their family. Volunteering included sorting boxes and cans of food into different groups and then packing family boxes for the low-income families that the food bank serves. The first time Sally and Emily volunteered, they asked lots of questions and enjoyed the can conveyer belt tremendously. The food bank volunteer manager had things well organized so the kids were engaged the entire time. In order to make the experience purposeful, their mom pointed out the families waiting in the lobby who were to receive the boxes of food. As they were leaving the food bank, the volunteer manager heard Sally say, “This was one of the best days of my life!” Her sister Emily piped in and said, “That was fun!”

According to the National Service-Learning Clearinghouse, service learning is a teaching
strategy that integrates meaningful community service with instruction and reflection. Service learning also builds character and teaches civic responsibility as youth participate in service projects in education, public welfare, health, public safety or the environment. Families can volunteer together and reap all the benefits of service learning while making a memory.
Teaching service is most effective when children give something meaningful to them. An example of an age appropriate, meaningful service project for first and second graders is a teddy bear drive for abused children of domestic violence in shelters or hospitals. Children can be encouraged to give a stuffed animal of their own that is in good shape or earn the
money by doing household chores to make a purchase themselves. Children can also travel to the shelter to drop off the stuffed animals so that the “giving” is concrete. Children may come up with their own ideas about service projects that have special meaning to them. Older children may work together to sell candy or crafts at a profit to purchase items for less fortunate families such as children’s coats. Service learning studies show that children who serve are more likely to grow into charitable adults. Service learning ideas that can be done as a family are: ■ Raking an elderly neighbor’s yard.
■ Organizing and conducting a canned food drive at your child’s school together. (This may involve several pieces, announcing the food drive at various classrooms, making posters, decorating the collection boxes and finally taking the cans to the food pantry or food bank.)

■ Walking dogs at the local humane society shelter.
■ Collecting new or like new books for the children’s wing of the hospital and delivering the books to the hospital auxiliary to distribute. ■ Holding a penny drive to buy extra school supplies for children who cannot afford them or use the pennies to buy dog and cat food for your local animal shelter and then delivering the bags of food.
■ Planting a garden with native plants to encourage backyard habitat for birds, insects and small animals.
■ Older children can write a letter thanking soldiers for their service. Working together as a family for others not only strengthens communities by helping the cause of your choice, but also models good character and strengthens family bonds.
