December is a really exciting month, I love this time of year, it’s all about anticipation – will it snow on Christmas Day? Will I get all my shopping done in time? Should I get a real or artificial tree? I personally had a very sad Christmas last year so intend to make the most of this year and enjoy it to the full. All that remains for me to do, is to wish you all a very Merry Christmas from myself and the team here at Simply Spalding.

Hello! Well what a year it has been! Whilst the run up to Christmas can be fun (but hectic) there is hopefully time towards the end of the month when you will get the chance to sit back, relax and reflect on the past 12 months, as well as looking forward to the year ahead. To help round off 2014 we present all things Christmas, from decorating the tree to choosing meat for Christmas dinner and even help with a few gift ideas. We also take a look at one of the more famous residents of Long Sutton. If you’ve never heard of John Palmer you may well recognise another name he went by… All that remains is for me to wish you all a very Merry Christmas and a Happy New Year! See you in 2015. Enjoy the issue.

Looking for Land A dog training company based in Spalding called Lincs Training - Dog Training Made Easy are looking for an enclosed outside area to train our dogs safely. It must be away from main roads and have secure fencing all the way round. The company find that owners are happy to let their dogs off lead inside but are less confident outside. They are fully insured and will keep the area clean and tidy. Good examples of what they are looking for are a tennis court or enclosed grazing paddock. Any help would be appreciated. Get Help to Buy a brand new home at Pilgrims Chase Home-hunters hoping to move on – or up – the property ladder can get a helping hand to do so if they choose a brand new Taylor Wimpey home at Pilgrims Chase in Spalding. The Help to Buy scheme is available at this popular development, enabling eligible first-time buyers and those with a property to sell to secure a Government loan for 20% of their new home’s full price – so they only need a 75% loan-to-value mortgage and a 5% deposit. There’s a superb selection of homes currently available to reserve with Help to Buy at Pilgrims Chase, including threebedroom houses from £148,995 and fourbedroom designs from £187,995. Mariana Knight, Regional Sales and Marketing Director for Taylor Wimpey, says: “Help to Buy is making a huge difference in helping homebuyers on or up the property ladder. “With a 75% loan-to-value mortgage, purchasers can take advantage of a much wider range of competitive mortgage deals. Many first-time buyers are finding their monthly mortgage repayments are lower than the amount they were paying in rent, while those looking for extra space can often
afford a much bigger home than they’d previously dreamed of. “However, with interest in the scheme showing no sign of slowing, I’d urge wouldbe buyers to visit us without delay – or risk missing out on their dream home!” To find out more, property-seekers can visit the Pilgrims Chase Sales Centre, located in Wygate Park, Spalding, and open daily from 10.30am to 5.30pm. Alternatively, the Sales Executive can be contacted on 01775 660421. Further information about Taylor Wimpey developments across the region is available by calling 0116 281 6470 or by visiting the website at www.taylorwimpey.co.uk.
Traditional Acupuncture in Spalding Acupuncture has been practised for over 2,500 years, having originated in China and other far Eastern cultures. Acupuncture focuses on helping the whole person, aiming to improve their overall health and wellbeing, and today it is widely used all over the world. During the first acupuncture treatment the practitioner will take a full medical case history, including past health background and details about the patient’s current condition. Once the patient is settled on the treatment couch, the practitioner will take their pulses on each wrist and look at their tongue. The practitioner will 4 | www.simplyspalding.co.uk | SIMPLY SPALDING
then make a diagnosis and put together a treatment plan which may include lifestyle and dietary advice as well as acupuncture. As well as inserting fine needles just under the skin, a practitioner may also use other techniques, such as cupping, in which small glass cups are used to massage the skin and massage. Most people find acupuncture relaxing and often feel very calm after a treatment. A growing body of evidence-based clinical research shows that traditional acupuncture, as practised by British Acupuncture Council members, safely treats a wide range of common health problems including short-term relief of symptoms such as low back pain, tensiontype headaches and migraine-type headaches. It can also be used along with exercise and conventional medicine to help temporarily relieve pain associated with osteoarthritis of the knee. In fact the National Institute for Health and Clinical
Excellence (NICE) guidelines on best practice now recommend that GPs offer a course of ten sessions of acupuncture as a first-line treatment for persistent, nonspecific low back pain. In September last year, NICE announced it also recognises acupuncture’s benefits for migraines and tension-type headaches. Duncan Ford, an acupuncturist and British Acupuncture Council member says “In general, acupuncture is believed to stimulate the nervous system and cause the release of neurochemical messenger molecules. The resulting biochemical changes influence the body’s homeostatic mechanisms, thus promoting physical and emotional wellbeing.” To talk to Duncan about acupuncture call 07714575720 or to book an appointment please contact the Total Health Care Clincs on 01775 719999 or go to www.dfordacupuncture.co.uk

Students Get Hands-On at New College Stamford Construction Event Driving in mini diggers, learning how to survey and building a brick walls and discovering power tools are just some of the activities 14-16 year olds from Schools across Stamford, Bourne, Corby and Peterborough were involved in at New College Stamford ‘s Annual Construction Skills Taster Event. More than 80 students took part in the event which aims to show those leaving school the wealth of career options available to them in the construction industry through have-a-go-activities showcased by real-life trades employers. Expert tutors from the College’s nine different trades courses were also on hand to guide the youngsters through the different practical activities, giving them a taste of life as a construction student. Gary McPartland the Director of Learning for the department at New College Stamford said, “This event is a fantastic opportunity for 14-16 year olds to discover an alternative to traditional, academic
studies. They were given the opportunity to have a go at something they may not have done before, find out more about what we have to offer and see how they can progress in to successful careers and even university from the variety on construction courses we offer.” “Our tutors, along with local employers and industry experts, take them through activities such as brickwork, designing a house and the use of surveying equipment, giving them an insight into a wide range of different careers. “We offer a series of vocational courses here at the College and this event will not only show the students the routes they could potentially take, but will send them away with some fantastic practical skills.” The event was sponsored by the South Lincolnshire Group Training Association, Construction Industry Training Board, Peterborough firm Princebuild and Lincoln’s Lindum Group, Worcester Bosh, all of whom will be present throughout the day.
Help transform empty homes A new strategy aimed at transforming empty homes in South Holland is under way. Over the past year around 90 empty properties have been brought back into use by South Holland District Council’s Housing team, but many others still remain. An Empty Homes Strategy for 2014-16 was recently adopted by councillors and this aims for us to return 75 empty dwellings back to use every year. The strategy will also see the council raise awareness of the issue and look to gain income through the government’s New Homes Bonus scheme, which rewards authorities that increase their housing supply. Anyone who is aware of empty properties in the district is asked to get in touch so the council can act quickly. They also offer advice on how to return a property to use, including guidance on how to rent it out or sell, as well as tips on how to renovate. The council has made connections that have enabled several owners to return their properties
into use. Properties which sit empty for long periods can have detrimental effects on the local community and in such cases the Council has powers to enforce positive action from the owners. Cllr Malcolm Chandler, portfolio holder for Regulatory Services, said: “This is a key strategy for the council, we want to maximise the available housing stock in the district. “There are many benefits for transforming empty homes, such as reducing the chance of vandalism and anti-social behaviour and to raise pride in communities. “We are keen to bring empty homes back into occupation so, if you have a residential property which has stood empty for a long time or if you know of one and want to know how we can help, then we will be pleased to hear from you.” To report an empty property in South Holland contact our Private Sector Housing team on 01775 761161 or email privatehousing@ sholland.gov.uk

High Street Heroes Help for Heroes (H4H) has opened a store at the Queensgate shopping centre in Peterborough, building on the success of the first H4H store that opened in St David’s shopping centre, Cardiff and the subsequent stores in Sheffield, Norwich, Essex and Birmingham. The new store is located opposite Pret. Plans have also been revealed to open further stores around the UK. Going against the usual trend for charity shops, H4H sells new, branded merchandise, rather than donated or second-hand goods like most UK charities. Consumers are able to buy H4H branded products that they want and need, such as cooking utensils and leisurewear, but with the profits going to charity rather than global corporations. These profits will be used to help H4H to continue to deliver support to those who have suffered life-changing injuries and illnesses whilst serving our country. This support is provided through grants to individuals and other service charities as well as the network of H4H run Recovery Centres across the UK which offer support for life. Matthew Hopkinson who is the Director of the Local Data Company, the UK’s leader in retail location data and insight, points out that less than 5 percent of charity shops are located within modern shopping centres. He suggests that H4H’s ‘Shopping with a cause’ model could be used by other charities to increase their credibility on the High Street as well as their profits. “Quality, value, trust and a cause are all values close to most shoppers’ hearts and wallets. Help for Heroes ticks all those boxes and as such is a great example of innovation within the charity sector.”
Managing Director of Help for Heroes Trading Limited, Helen Beebe said: ‘We have a loyal and wideranging customer base who love our products and want to show their support for the charity. A portfolio of stores in key locations around the UK will supplement our already successful e-commerce business, further raising awareness of the cause and generating more income for the charity’. Emma Parry, Charity co-founder and Executive Chairman of H4H said: “We are delighted with the expansion of Help for Heroes Trading Limited. It not only allows us to spread awareness about the charity but it will also bring in more money to support our heroes. This is particularly important as our troops withdraw from Afghanistan, as for our wounded, injured and sick service personnel their battles will continue long after the war ends.” Centre Director of Queensgate Shopping Centre, Sam Eastwood said: “Help for Heroes is a wonderful charity that has the support of the nation and we are delighted to welcome them to Peterborough.” To keep the store running smoothly, H4H is looking for volunteers. If you are a passionate H4H supporter and have a few hours to spare each week, why not consider becoming a volunteer sales assistant in the new store? Dance project bids for funds A dance project supported by South Holland District Council is bidding to win funds which would allow it to teach more local youngsters. Dance Factor Lincolnshire is one of only six groups in the ITV South Yorkshire Region which have been shortlisted to battle for the public vote and £50,000 worth of lottery funding from ITV’s The People’s Millions TV Competition.
Dance Factor, which is a partnership project led by community group InspireDance, will make a bid for viewers’ support to win the cash prize in a public phone vote. The scheme with the most public votes will win the £50,000. The People’s Millions funding would enable Dance Factor to span across seven districts of Lincolnshire and engage in excess of 750 young people in dance. The project, which is part funded by South Holland District Council, takes dance into local communities providing 11-18 year-olds with free evening street dance sessions which culminate in a Grand Final showcase event. Cllr Nick Worth, portfolio holder for community, said: “It would be a great boost for youngsters in South Holland if Dance Factor wins the prize.” Alice Carter, committee member of Inspire Dance, said: “The funding will enable young people to engage in a positive activity, get active, make new friends, and take pride in representing their local area.” Support Dance Factor Lincolnshire at: http://dancefactorlincolnshire. weebly.com/
Pride in South Holland The first stage of a new campaign to clean-up major derelict sites in South Holland is under way with a blitz on a notorious Spalding eyesore. Work to clean up the old Bull and Monkie site started after the site’s owners Crispen Holdings Limited failed to respond to a notice ordering them to clean it up. Cllr Gary Porter, leader of South Holland District Council, said: “The old Bull and Monkie pub is a disgrace to its owners, a blot on the face of Spalding and I am pleased and relieved to announce the start of its clean up. “As well as getting the clean up done I have also asked officers what further legal action is possible against the landowner who has refused to get in touch and to stand up to their responsibilities.
“We have pursued the matter properly and done everything within our legal power to get the area cleaned up. It is very disappointing that the owners have not complied with the notice so now we will take action and bill them.” Cllr Roger Gambba-Jones, portfolio holder for planning, said: “Our determination to clean up eyesore sites across the district is clear and the Bull and Monkie is just the first. “Owners of eyesore sites in South Holland should act now to remove rubbish, clear out the weeds and join with us in helping make sure all areas are clean and welcoming.” Over the coming weeks the Pride in South Holland campaign will see local areas spruced up with a range of actions to ensure the district stays clean. The campaign will include: * A street cleaning hit squad getting to work. * Additional cleaning of town centres. * Community payback service carrying out improvement tasks. * Re-painting of equipment at 18 play areas * New signage and CCTV installed where necessary. Further announcements about the Pride in South Holland campaign will follow shortly. SIMPLY SPALDING | www.simplyspalding.co.uk |

I recently had a chance to look through the 2014 health profiles for South Holland which as always gives an interesting insight into the issues that many of us face today. I am going to highlight some of the more interesting statistics, but if you are interested you can get more information directly from the website at www.healthprofiles.info The good news for men is that life expectancy at birth is on the increase and males can now be expected to reach 79.6 years, with females starting to even out at 83.4years. Smoking related deaths is pleasingly on the decrease but still too many in South Holland with a count of 520, although interestingly smoking itself is starting to increase again. Under 75 cancer rates are also on a steady decrease. One of the most consistent issues is adults carrying excess weight and those officially classed as obese. Both these areas continue to show significant increases well above the national average. Obese children is still an issue, but this does appear to be improving, but is still well above the national average. Recorded Diabetes is also significantly increasing and under 75 mortality in cardiovascular disease, which has been steadily improving over the last nine years is starting to show an increase again. Worryingly is the number of under 18’s that have specific hospital stays due to alcohol. Again this is well above the national average in South Holland. All the above statistics are in the main up to 2012, so I hope there are already improvements to many

of these issues since then. Both South Holland District Council, through its Leisure Facilities and activities like healthy walks, exercise referrals, ‘Activate’ for young people and Grow your Own Kitchen Garden Projects are trying to reverse these trends, along with Lincolnshire County Council under it recent new Public Health remit. LCC work closely with the Clinical Commissioning Groups and fund numerous agencies to directly tackle some of these issues head on. On of those agencies is the Lincolnshire Sports Partnership who in 2013/14 in South Holland invested £38,000 in exercise referral, £21,858 in healthy walks, £13,500 in the Fit Kids programme and supported £190,000 investment through the Sport England Inspired Facilities Programme. They had 280 young people participating in the school games, 418 exercise referral participants, 446 healthy walkers along with numerous work with local clubs and community groups. Providing good quality housing, good schools, cultural facilities such as the South Holland Centre and Ayscoughfee Hall Museum and the many activities they provide, the Transported Arts project all contribute to a better quality of life that in turn helps to contribute to better lifestyles and improved health. Don’t let all the above spoil your Christmas lunch though!

Spalding Parish Church of England Day School
Children have developed their reading for pleasure through the hard work of parents and carers at home, staff at school and the children themselves. To top all of that they have had the exciting opportunity to meet three amazing authors; Helena Pielichaty, Alan Durant and Billy
Bob Buttons (Edward Trayer). Each workshop has brought something unique and different to inspire all children and staff at SPCEDS in reading and writing. The children have had the opportunity to buy signed copies of each author’s books and reading conversations show
what a positive impact this has had. Billy Bob Buttons, who was once a local resident, visited our school at the end of September. He is the author of nine books to date including Felicity Brady and the Wizard’s Bookshop. During his visit he ran two outstanding writing workshops for KS2 to develop character descriptions and story planning. His ideas ran successfully into planned lessons the following day, with one child in Y4 commenting, ‘I really liked the way we thought about describing characters by thinking about what they would taste like in a stew.’ Billy Bob Buttons has agreed to be our School’s Patron of Reading which was promoted most highly by Helena Pielichaty during her visit. We are excited about the new opportunities this link will provide to promote reading even further. The buzz around reading is at a real high, especially with the positive comments in our recent Ofsted report. At SPCEDS we are committed to working hard and continuing to develop a love of reading for all.
Wisbech Grammar School A professor from a leading German university has been putting Wisbech Grammar School pupils in the picture about a novelist who saw the world with the eyes of an artist. Dr Patricia Plummer, who holds the chair of postcolonial studies at the University of Duisburg-Essen, explained the strongly visual quality of Charles Dickens’s imagination to a mixed audience of 80 pupils and members of the public (on Wednesday). The academic, who has been visiting the area to research the Victorian novelist’s manuscript of ‘Great expectations’ at the Wisbech & Fenland Museum during a sabbatical that she is taking, argued that Dickens has contributed to the interactive quality of text and images that is seen today in the graphic novel. Early illustrations accompanying his works, such as Miss Havisham’s cobweb-covered wedding cake and Oliver Twist asking for more, have gone on to shape later film adaptations. Dr Plummer, who has recently been lecturing on the topic in Arles during the 50th anniversary year of the French town’s twinning with Wisbech, said that Vincent van Gogh – who enjoyed one of his most productive periods during his time in Arles – claimed that there was no writer who was so much a painter and a black-and-white artist as Dickens. Contemporaries likened the crowded canvas created by the Victorian writer to a sun picture – an early phrase for a photograph – and a 12 | www.simplyspalding.co.uk | SIMPLY SPALDING
daguerreotype image, and he helped to make the illustrated novel extremely popular. His own picture was also very familiar to the nineteenth century public and he was the most photographically famous person in his day outside the royal family.

Advice
How county court judgments affect your credit rating
I
f you apply for credit, it may be refused and you won’t always know why. One of the reasons could be that a county court judgment (CCJ) has been made against you. A CCJ is made because someone you owed money to: took legal action in the county court against you, and the court decided that you owe the money, and the person applied to court for a court order saying you must pay the money. As soon as a CCJ is made, it is usually entered in the Register of Judgments, Orders and Fines. When a creditor is deciding whether to lend you money, they will usually check on your financial situation with a credit reference agency. The credit reference agency will hold details of your CCJ, taken from the Register of Judgments, Orders and Fines. Usually, you’ll have been told about the CCJ, but sometimes this doesn’t happen. For example, court papers might have been sent to the wrong address. If you want to find out whether a CCJ has been made against you, you can search Register of Judgments, Orders and Fines, or ask to see a copy of the information held by credit reference agencies. There is a fee of £4.00. You can also apply for a copy of the information held by the credit reference agency that your lender used when you applied for credit. This costs £2. Some credit reference agencies offer a superior standard of report, as well as the basic version but will cost more.

❱ BY LISA BARWELL
How to change an entry in the Register of Judgments, Orders and Fines All records in the Register over six years old are destroyed. This applies to both paid and unpaid debt records. However, if you don’t want to wait this long you might be able, under certain circumstances, to apply to have the entry in the Register either removed or changed. If you don’t owe the debt, you might be able to ask the court to re-open the case against you. You can only do this if you can show you have a genuine legal reason for not owing the money. To do this, the first step is to ask the court to set aside the CCJ. You can ask the court to set aside the CCJ either by using form N244, or by letter. Most people have to pay a fee for this. The quicker you do this, the more successful you’re likely to be. Experian Limited Tel: 0844 481 8000 Website: www.experian. co.uk Call Credit Check Tel: 0870 060 1414 Website: www.callcreditcheck.co.uk
If the court agrees to set aside the CCJ, you will then get the chance to put your case. If the court agrees you don’t owe the money, it will remove the entry from the Register of Judgments, Orders and Fines. If you pay the debt in full within one month of the date of the CCJ, you can apply to have the entry in the Register removed. You’ll need to get a certificate from the court to say you’ve paid off the debt. This costs £15 but the fee can be waived or reduced if you’re on a low income. When an entry is removed from the Register, all the credit reference agencies will be notified and they will remove details of the CCJ from your record.
“If you pay the debt in full within one month of the date of the CCJ, you can apply to have the entry in the Register removed.”

Adult’s choice
In his mid-thirties - an addict, stranded, desperate - Jamie meets Charles Jacobs again, with profound consequences for both men. Their bond becomes a pact beyond even the Devil’s devising, and Jamie discovers that revival has many meanings.
Revival Stephen King
King’s first ever detective thriller. In a small New England town, over half a century ago, a shadow falls over a small boy playing with his toy soldiers. Jamie Morton looks up to see a striking man, the new minister. Charles Jacobs, along with his beautiful wife, will transform the local church. The men and boys are all a bit in love with Mrs Jacobs; the women and girls feel the same about Reverend Jacobs - including Jamie’s mother and beloved sister, Claire. With Jamie, the Reverend shares a deeper bond based on a secret obsession. When tragedy strikes the Jacobs family, this charismatic preacher curses God, mocks all religious belief, and is banished from the shocked town. Jamie has demons of his own. Wed to his guitar from the age of 13, he plays in bands across the country, living the nomadic lifestyle of bar-band rock and roll while fleeing from his family’s horrific loss.

5* Hygeine Ratings
Thinking of eating out this Christmas? South Holland District Council and The Food Standards Agency urge you to ‘look before you book’ for Christmas “Our Food, Health & Safety Team works hard by continually monitoring standards across the District and offering advice and guidance on good hygiene practices and I am pleased to say we generally have good levels of standards across the district.”
I
❱ BY VICKY SENKEY-DUNN
f you’re planning that special Christmas meal with work colleagues, friends or family we would like to remind you to ‘look before you book’. Christmas is a time to enjoy good company and good food without worrying about food poisoning. But the truth is, you can’t tell a restaurant’s hygiene standards by how clean and tidy the staff look or by how busy it is. It’s the things you can’t see – like germs spread by bad hygiene practices. There’s one easy way to set your mind at rest – check the food hygiene rating. The food hygiene rating tells you about the hygiene standards in restaurants and other food businesses. It’s really easy to check. Just go online and check the Food Standards Agency website: www. food.gov.uk/ratings or if you’re out and about check for the green and black sticker; if you can’t see one, just ask. The ratings are determined by local authority food safety officers and run from 0-5, with a 5 rating meaning a very good level of food hygiene. Around 95% of food businesses are rated 3 or better so there are plenty of places with good standards and you can easily avoid taking your family to those not meeting the grade. If you don’t see a green and black sticker in the window or you spot a low rating online, you can make a better informed choice. Councillor Malcolm Chandler, Portfolio Holder for Environmental Health says:“Our Food, Health & Safety Team works hard by continually monitoring standards across the District
and offering advice and guidance on good hygiene practices and I am pleased to say we generally have good levels of standards across the district.” It’s easy for people in South Holland to check hygiene ratings online and choose a restaurant for their Christmas parties that takes food hygiene seriously. This is an important time for local businesses. A good food hygiene rating is something to be proud of. It matters to customers so we are encouraging all businesses in the district to display their rating and have a prosperous Christmas season.” Catherine Brown, Chief Executive, Food Standards Agency, agrees: “This Christmas, do this one little thing for peace of mind when eating out. Take a moment to check the food hygiene rating, pick the right place, and enjoy a great meal out.” For more information, visit www.food.gov.uk/ business-industry/caterers/hygieneratings

Christmas Dinner
Christmas Dinner Whilst Turkey claims the crown for the meat most eaten for Christmas Dinner we take a look at some alternatives which would go down just as well at the table One of our favourite meals of the year, Christmas Dinner is a grand occasion to sit with your family and eat, drink and be merry. It’s also a good opportunity to show off your culinary skills! But rather than the usual turkey, what else could you cook to wow at the table this year?
Ingredients
1kg beef fillet 3 tbsp olive oil 250g chestnut mushroom 50g butter 1 large sprig fresh thyme 100ml white wine 500g pack puff pastry 2 egg yolks beaten
Poached Salmon Ingredients
1 whole salmon, remove the head and the tail 1 onion, chopped 2 bay leaves 4 tbsp white wine vinegar sea salt black pepper
Preparation method 1 Place the salmon in a large roasting tin. 2 Add enough cold water to cover the fish. Add the onion, bay leaves, vinegar and a good pinch of salt and a little black pepper. 3 Cover with tin foil, and bring to the boil on the stove. Once it is boiling, turn off the heat and allow the fish to stand in the water until cool. 4 Carefully remove the salmon and place onto a board. Scrape off the skin and place on a large flat serving dish. Serve with a bowl of hollandaise sauce. 22 | www.simplyspalding.co.uk | SIMPLY SPALDING
Beef Wellington Preparation method 1 Heat oven to 220C/fan 200C/gas 7. Sit the 1kg beef fillet on a roasting tray, brush with 1 tbsp olive oil and season with pepper, then roast for 15-20 minutes. When the beef is cooked to your liking, remove from the oven to cool. 2 While the beef is cooling, finely chop 250g the mushrooms. 3 Heat the remaining olive oil and the butter in a large pan and fry the mushrooms on a medium heat, with the thyme, for about 10 mins stirring often, until you have a softened mixture. Season the mushroom mixture, pour over the wine and cook for about 10 mins until all the wine has been absorbed. The mixture should hold its shape when stirred. Remove the mushroom from the pan to cool and discard the thyme. 4 Spread half of the mushroom mixture over the beef fillet and then wrap in cling film into a sausage shape before chilling in the fridge. 5 Roll out a third of the puff pastry to a 18 x 30cm strip and place on a non-stick baking sheet. Roll out the remainder of the puff pastry to about 28 x 36cm. Unravel the fillet from the cling film and sit it in the centre of the smaller strip of pastry. Brush the egg yolks onto the pastry’s edges, and the top and sides of the wrapped fillet. Carefully lift and drape the larger piece of pastry over the fillet, pressing well into the sides. Seal the rim with the edge of a fork. Glaze all over with more egg yolk and, using the back of a knife, mark the beef Wellington with long diagonal lines taking care not to cut into the pastry. Chill for at least 30 mins. 6 Heat oven to 200C. Brush the Wellington with a little more egg yolk and cook until golden – roughly 20-25 mins for medium-rare beef, 30 mins for medium. Allow to stand for 10 mins before serving in thick slices.
Nut Roast Preparation method 1 Preheat oven to 180 degrees and line a 2 lb loaf tin with non-stick baking paper. 2 Gently fry the onion, mushrooms, celery, carrots and pepper in butter until softened. 3 Add the beaten eggs, chopped walnuts, pine nuts and breadcrumbs. Season with salt and pepper. 4 Scoop the mixture into the prepared tin, pressing down into he corners and smoothing out the top. Place in oven and roast for 1 hour, checking and covering the top after 30 minutes if it’s starting to brown too much. 5 Leave to set for about 10 minutes before after taking it out of the tin and slicing.
Ingredients
2 tablespoons butter 1 large onion, finely chopped 100g mushrooms 2 sticks celery 2 large carrots 1 pepper 5 eggs, beaten 80g walnuts, roughly chopped 40g pine nuts 180g breadcrumbs Pinch sea salt and black pepper

Maintain that healthy glow Make sure your healthy summer glow doesn’t get away from you this winter – reach for that bottle of fake tan!
“Once you’ve arrived on the right product in the right colour it is time to prepare your skin. Exfoliation here is key.”

❱ BY VICKY SENKEY-DUNN
adly we don’t live in a country where it is possible to maintain a sun tan all year round but there is a way to cheat to ensure you are looking bronzed all the time – fake tan. Whilst it can be tricky to apply the first few times, with regular practice you can become a pro! And if all else fails, head to your nearest qualified beautician who can give you a nice even spray tan! So where to start? Well, you need to select your self-tan product. They are not all created equal! There are gradual tanners which build up over time to give you the exact colour you want and there are instant tanners which stain the skin and must be more carefully applied. Self-tan also comes in many forms – creams, gels, sprays, mousses, liquids and even wipes! You will also need to select a colour that is right for you. Colours range from fair to dark. A good rule of thumb is to apply lighter than you think you need and then go darker if you need to as it doesn’t work the other way round! Unless you are using a spray or wipe consider investing in a tanning mitt which allows you to spread the tan across your body more evenly, thus avoiding the dreaded streaky look! Once you’ve arrived on the right product in the right colour it is time to prepare your skin. Exfoliation here is key. As well as shaving or waxing your legs (and arms if you have thick hair on them) you will need to exfoliate everywhere where tan is likely to go. Pay special attention to areas of skin which may be rough such as knees and elbows. Any areas of dry skin should be moisturised to avoid patchy areas of tan. Using your tanning mitt, apply your fake tan using circular motions. Start with your legs and work your way up to make sure that you have covered every part of yourself. Make sure you blend carefully around your
24 | www.simplyspalding.co.uk | SIMPLY SPALDING
ankles and wrists so the colour doesn’t suddenly stop! If you get fake tan on your hands make sure you wash them well as tanned palms don’t look particularly natural!! Leave your face and neck until last as they tan the easiest and so the tan needs the least amount of time to develop. Follow the directions carefully (and remember each product will be different so don’t rely on information from the past) when it comes to how long to leave the fake tan on. If possible don’t wear any clothing while the tan is developing as it can leave you with tan lines. When your time is up simply shower it off, remembering to pat yourself down afterwards as you have to be careful in the early hours that you don’t smudge your colour. To make your tan last longer make sure you don’t exfoliate and use plenty of moisturiser to keep your skin in good condition.

Glam in December
Glam up for the party season! With parties aplenty in the month of December, head to your nearest hair and beauty salons to keep you looking glamorous!
F
â?ą BY VICKY SENKEY-DUNN
rom the office party to drinks with friends and festive get togethers, December is always a whirlwind of social engagements. The diary is full and the outfits are bought but how can you keep yourself looking gorgeous throughout the month? The answer lies in the town with the skills of the local hairdressers and beauticians.
Hair:
One of the hottest looks around at the moment is Ombre colours. This is where the lower part of your hair is lighter than the top. Skilfully done by a hairdresser the effect can be stunning. And don’t be afraid to experiment with the colour with browns, blondes, reds, oranges and even pinks featuring in this trend. The benefit of using a hairdresser rather than trying it yourself at home is that you will have a much wider range of colours to choose from and you know they will get it right first time! When styling the wave look is ideal for a night out. Fish tail plaits are still very popular for that sophisticated evening look.
Body:
Ditch the razor and treat yourself to a wax on all the parts you dare. It lasts much longer than shaving and hair grows back finer. It will save you lots of time and it will give you a huge confidence boost showing off ultrasmooth legs with that little black dress. A spray tan can give you a healthy glow at any time of the year. Make sure you book this in advance though as the colour needs time to develop and you will need to shower to take remove the colour guide. If you run short of time then there are many mobile beauticians who are able to spray tan you in your home and will often offer a discount if several of you get tanned at the same time. It’s a good excuse to have everyone round before you go out. Make sure you listen to the advice of your beautician when it comes to choosing the right shade for you!
Hands and Feet:
A beautiful manicure for your hands and a pedicure to keep your danced-out feet in top condition are a
26 | www.simplyspalding.co.uk | SIMPLY SPALDING
must. While you get these you might like to get your nails done at the same time. There are many types of nails available at the moment from the classic gel nail to new systems such as Gelish, a soak-off polish which acts like a gel and is kind to your nails. Stronger than normal polish it ensures that your nails will look their best right through the month.
Face:
If you only have time for one treatment make sure it is eye lash extensions. They give a real wide-eyed look and are timelessly elegant. Depending on how long you want them to last you can opt for strip lashes, clusters or individual lashes (which will last the longest). They are not too difficult to care for and will complement the rest of your eye make-up beautifully. When you are all partied out you can also return to the salon for removal so as not to damage your natural lashes. HD Brows are also very popular but make sure you use a qualified therapist as your results could vary otherwise! Done properly they frame your face beautifully and give an outstanding shape.

Decorate your tree
Decorating your Christmas tree One of the most fun parts of the run up to Christmas, choosing and decorating the Christmas tree can be a real family affair
W
hether you have a real or an artificial tree, the right decorations can give stunning results and placed in your window can give your house a festive feel both inside and out. Modern Christmas trees began in early modern Germany and became popular across Europe in the 19th Century. Originally decorated with apples, nuts and candles today people use a wide variety of ornaments, tinsel and electric lights to decorate their trees along with a large ornament at the top of the tree such as a star or an angel. So how do you get your tree looking its best? If you have an artificial tree then make sure when you put it up that the branches are evenly spaced and fully outstretched. This will pay dividends when you come to add your decorations. If you are buying a real tree then make sure you are able to see it before it is put into its net so you can check that it is a good shape. You should also look at the needles on the tree as if loads fall off when it is moved, particularly from the outer branches, then you may want to look for a different tree.
❱ BY VICKY SENKEY-DUNN Once you’ve got your tree home and decided where to place it the next step is to decorate it. Begin with your lights. Christmas lights come in many forms, with classic white, multi-coloured and flashing varieties all popular. When putting your lights on the tree start at the top and work your way down, making sure that the cabling is hidden within the branches of the tree. Once they are spaced out switch them on to make sure they are evenly spaced. Once your lights are in place, if you haven’t decided on a theme for your tree then you can either go all out with everything you’ve got or you can pick a colour scheme or decide which of your decorations you would like to use. When considering colour schemes you have the choice of the traditional or the contemporary. Traditional colours such as red and gold give a classic look while newer colours such as blue and silver give a real wintery feel. Start with any tinsel or strings of beads and follow it with your baubles and other decorations. Unlike the lights, work from the bottom to the top of the tree. If your baubles and decorations are different sizes then put the largest at the bottom and the smallest at the top. Decorations like icicles also look striking at the bottom of the tree. When placing decorations at the bottom of the tree, consider them carefully if you have pets or small children! After the baubles and ornaments come any finishing touches such as ribbons and edibles such as candy canes or chocolate decorations (again with those pets and small children in mind!) before the tree topper to give it that final flourish. Then all that’s left is to sit back, relax and enjoy the finished result. It’s beginning to feel a lot like Christmas….
“...you can either go all out with everything you’ve got or you can pick a colour scheme or decide which of your decorations you would like to use.”

IN ASSOCIATION WITH
Pets Corner
Deck The Paws With Meows Of Holly Pets bring happiness into our lives. They cheer us up with their antics, calm us down with their soft fur, and give us unconditional love. Before we know it they are one of the family, and you can’t imagine life without them. However, pet ownership comes with a level of responsibility. If you are thinking of adopting a pet, here are some of the issues to consider for younger children who want a pet. Make it small and easy to care for in the beginning, as this promotes responsibility in youngsters. Once they can care for the hamster, maybe it’s time for a dog...
Choose a pet to suit your lifestyle Dogs need to go out during the day, so make sure someone can let them out at lunchtime if you choose a dog. Make sure you occupy them in the meantime too, or barking might annoy your neighbours. Try pacifiers such as a Kong with paste inside, and leave a radio on for company. An occupied dog is a happy dog.
Finances Don’t underestimate pet costs – you can get caught out by vet bills for accidents and illness, so search round for some insurance to mitigate the bills. It doesn’t cost a great deal per month and can save a nasty surprise. People can be put off pet ownership by boarding costs, but pet-friendly holidays in the UK are more numerous than you’d think. If you can’t go without a holiday abroad, invest in a pet passport, or ask a pet-loving relative to stay at your house.
noises. Make sure they know fresh water and food is freely available, and don’t let cats outside, at least for the first few weeks. Try calming pheromone plug-in diffusers if your pet is still unhappy. Depending on what type of pet you choose their start-up kit will consist of appropriate food, bowls, bedding, leads/ collars, combs, cages/tanks, scratching posts, heat lamps, entertainments and more. Ask in store if you’re not sure what you’ll need and buy it in advance so you ready! Owning a pet isn’t always easy, but most people agree that the love and friendship you receive is worth the effort. Enjoy your new pet – and have a very Merry Christmas.
The First Days Once you have chosen your pet and you are ready to bring them home, think about letting them have some space. Keep other animals away, and minimise loud
Cats make great pets too, and they’re more self sufficient than dogs if you install a cat flap or a litter tray. Caged animals such as rabbits, hamsters, or fish are fun and a good starting point

Focus on
Long Sutton & Sutton Bridge
Focus on Long Sutton & Sutton Bridge The history of Long Sutton is a long and interesting one but did you know it was once home to a famous resident, known at the time as John Palmer….
L
ong Sutton has long been associated with its Friday market – it dates back to the early 13th Century, and so it attracted many traders, good and services to the area. Being a prosperous town many affluent people were attracted to the area from all professions. In 1737 a horse trader named John Palmer moved to Long Sutton where he remained for nine months, becoming friends with the local gentlemen. It was only after an unfortunate incident after which he threatened to shoot his landlord and was arrested it was discovered that John Palmer was not who he claimed to be and was, in fact, the infamous highwayman Dick Turpin. The stuff of legend, Dick Turpin’s exploits have been much romanticised in the centuries since his death. Living originally in London, the son of a butcher could have had a quiet life following in his father’s footsteps and it looks like he originally planned to do so, opening a butcher’s shop in Essex. Soon after he began to be associated with a gang of deer thieves and after a while in their company abandoned butchery to run a public house. Following a crackdown of deer poaching the gang, including Turpin, began robbing houses, relieving people of their money and possessions. The gang broke up after two of them were captured and, when questioned, offered up the names of everyone in the gang. Their descriptions were circulated and so they left the area to avoid capture. Turpin took this opportunity to diversify once again and become a highwayman with great success. As he got deeper and deeper into his life of crime, the outcomes ended up being much worse, with at least two murders being attributed to Turpin. Having been identified in a couple of robberies he then laid low for a while, with some accounts having him travel abroad,
❱ BY VICKY SENKEY-DUNN
and others simply thinking that he assumed an alias and remained in this country. Two years later he resurfaced, once again committing highway robberies. It was then that he assumed the alias John Palmer and moved to Long Sutton. When he was arrested after nine months of living in the town, he was first moved to prison (which was in York) but remained under his alias. Unfortunately for Turpin, his identity was uncovered by sheer coincidence. Whilst in prison, Turpin wrote a letter to his brother in law. When the letter arrived, his brother in law refused to pay the delivery charge as he did not have any connections with York. So the letter was sent to the Post Office at Saffron Walden where his handwriting was recognised and the authorities notified. Turpin was tried for stealing horses which, at the time, was a crime punishable by death. The jury found him guilty and on April 7 1739 he was sent to the gallows. Because little was written about Turpin during his life, save for descriptions of him and his crimes, coupled with the fact that he sometimes used an alias when travelling, makes it very difficult to put together a definitive life story for him. Today you will find Dick Turpin Way and Turpins Wine Bar in Long Sutton, in tribute to one of its most famous residents.

Care Homes
Choosing a Care Home There are many considerations when choosing a care home for a relative so it is a decision that cannot be rushed
“Things that are high on your list may not be on theirs so make sure that between you there is a list covering everything you both want – with your relative’s wishes coming first.”
W
❱ BY VICKY SENKEY-DUNN
hen you begin to search for a care home it is important to gather as much information as you can. Whilst your decision will be influenced by factors such as the area you live in, what vacancies there are and funding needs. if your relative has been assessed and it has been decided that a care home is the best course of action then the council will be able to give you a list of care homes in the area which meet your relative’s needs. Once you have your list you can begin to whittle down your options. The easiest way to shortlist is to look at the type of care your relative needs. Is it just residential care they need or do they require specialist care for a condition such as dementia? Not every care home has trained Nurses on their staff so if you do need them it will reduce your options. A visit to the Care Quality Commision’s website (www.cqc.org.uk) will provide you with information about care homes which include details of individual homes’ most recent inspections which will give you an idea of what these homes do well (and not so well!). It will also provide details of services available. Most importantly, ask your relative what the most important things are to them. Things that are high on your list may not be on theirs so make sure that between you there is a list covering everything you both want – with your relative’s wishes coming first. Once you have your shortlist it is time to contact
the homes for more information. Before you visit now is the time to make sure that there is availability, that they provide the correct services for your relative and also confirmation of costs. Everyone assessed as requiring a care home to meet their nursing needs is entitled to a contribution of £108.70 per week from the NHS, regardless of income or savings, paid directly to the home. The council may also be able to provide assistance but you will need to contact them for assessment. You may like to ask for a brochure or any promotional information they have and look at their websites. Now comes the visits. It is important that your relative visits with you for as good a feel as you can get for a place yourself, it is your relative who will have to live there and so their input is vital. When you visit remember to ask all the questions you may have and ask to see everywhere – from bedrooms to communal areas and outdoors. If possible, ask if your relative can sample the menu so they can get a feel for how the food will be. Also, speak to some of the residents – they know best what life is like there! Once you have found the right home for your relative then it is time to fill in the paperwork and get them moved. Remember to check the paperwork thoroughly and be aware of any extra fees such as broadband and telephone. When you are completely clear as to the terms and conditions only then is it time to sign on the dotted line. Following this you will need to work with the staff at the home to get your relative in and settled with as little upheaval as possible. This is something they do regularly so listen to their advice and be on hand if they have any initial questions for you. SIMPLY SPALDING | www.simplyspalding.co.uk |

Spoilt for Choice
f you are looking for a new fire, fireplace surround or stove this winter then Colin Parker Masonry provides unrivalled quality and choice. At the forefront of the industry for over 25 years they have established a reputation for design, quality and service. Regarded as one of the UK’s leading manufacturers and trade suppliers of fireplaces, granite kitchen worktops, memorials and other associated marble products, they also have an enormous showroom and sell directly to the public. Buying from the manufacturer makes them competitively priced and gives you options from a far larger range than if you went to a normal retailer. Conveniently situated on Bridge Road in Long Sutton the showroom boasts a huge range to choose from as well as the benefit of buying directly from the manufacturer which means that not only do you have greater choice and flexibility but also you will find them competitively priced. They are also agents for all of the gas and electric fires and stoves including Valor, Stovax and Dimplex. They import directly from counties such as Italy, Portugal, Spain, Greece and Turkey, and as far away as Africa in the Middle East, India and China. Selecting only the finest quality materials you are presented with a superb choice of over 100 different

types and colours to choose from. If you have something specific in mind then you can take advantage of their bespoke, made to measure service. Each fireplace can be made specifically to your order. To ensure it fits your room perfectly they offer all the designs with the flexibility of a made to measure service, so the limitations of their designs and your imagination are endless. As a part of this they will perform site surveys to check that measurements are correct. Once you have chosen your preferences and the surveys have been completed then your fire can be installed, on average, in 4 weeks. Installation is carried out by registered fitters. If you do not require fitting then your fire can usually be delivered within 10 days. Bargain bay area for discontinued lines and ex-display models at greatly reduced prices. If you are thinking about a new fire or stove then don’t wait too long as the order book fills up fast and if you are looking for guaranteed installation before Christmas then the order will need to be placed in November. Your home in winter
Your Home in Winter With colder than average temperatures forecast for this winter, what can you do to ensure you home stays warm and toasty throughout?
O
❱ BY VICKY SENKEY-DUNN
ne of the most important winter checks you can perform is on your boiler. Many people have their boiler serviced annually or pay monthly for the services of a gas engineer should the boiler ever break down. Even if your boiler is relatively new you should have it looked at regularly to make sure it is working as efficiently as possible. If you have a very old boiler then consider researching a boiler scrappage scheme whereby companies give you money off a new boiler in exchange for your old. In some cases you can save over 20% so it is worth looking into. Whilst a new boiler can be expensive they tend to run more efficiently which will mean savings on your energy bills. If you are thinking about getting your boiler serviced then call sooner rather than later because, as you can imagine, the boiler man is extremely busy at this time of year as people turn on their heating for the first time since summer only to realise that there is a problem. Another winter nasty can be burst pipes which are caused by rapid freezing and thawing. The best way to avoid this is to insulate your pipes using lagging, paying special attention to pipes such as outside taps and any other pipes exposed to the weather outside. Insulating the pipes will stop them from freezing and ultimately bursting. Check your windows and doors for draughts. In the case of windows you can fix this with sealant or sticky draught strips. With a draught that comes in under the door invest in a draught excluder. If you are experiencing draughts from your roof then you
“The Energy Saving Trust recommends that if you have 100mm deep insulation in your loft then you should increase it to 270mm for maximum benefit.”

need to call in a professional to check your roof tiles and loft insulation. Feel your radiators to see if they are radiating heat evenly. If the temperature between the top and the bottom is different it means that your radiators have trapped air in them which means they are not able to work as hard as they are able to. To remedy this you need to bleed your radiators which will remove the air allowing the radiator to return to giving out heat evenly. All you need is your radiator key and something to catch any leaking liquid. Make sure your heating is switched off and your radiators are cold before you start to avoid any accidents. Make sure that your loft is insulated properly. The Energy Saving Trust recommends that if you have 100mm deep insulation in your loft then you should increase it to 270mm for maximum benefit. It also states that this should last you for 40 years so will pay for itself in no time through the savings you will make on your energy bills. In last month’s issue we spoke about cavity wall insulation and how there are schemes which offer this service for free which is also worth doing. Finally, and it is going to sound like a strange one, but check that your home insurance is up to date and covers adequately anything which may go wrong during the winter. It would be awful if the boiler packed up and you were unable to claim on your insurance, being left with a huge bill. If you are in any doubt then put in a phone call to your insurer who will be able to talk you through your policy.

Motoring
Peugeot 308 BlueHDi It’s no secret that the French firm hasn’t always produced beautiful motors – yet, conversely, Peugeot has created some of the most popular cars on the road
P
eugeot must have sprinkled fairy dust over its designers, because there are now some attractive motors in its automotive stable, including the 308. To bring more of a balance to the automaker’s looks department, the brand is moving up-market. It’s an initiative started several years ago and seen most recently with the 208 and 2008. The initial design brief of the new 308 had the highest levels of quality at its heart and that has been more than noticed already. Crowned 2014 European Car of the Year, at the Geneva Motor Show, the suave Peugeot offers a touch of technology, comfort and practicality. The latest 308 is the fourth Peugeot model to be distinguished by the ‘Car of the Year’ accolade; it comes after the 307 (2002), 405 (1988) and 504 (1969). The appearance of the Pug is more akin to the latest Mercedes Benz A-Class than anything else. The front of the car is dominated by a ‘floating’ front
❱ BY TIM BARNES-CLAY
grille and by a strong lighting signature. Slim full-LED headlamps glitter like diamonds and the striking illumination continues at the rear, with the three Peugeot lion ‘claws’ drawn by piercing red LED lamps. Inside, the 308 includes a touch-screen panel on the dashboard for added indulgence. It also has a practical purpose; it brings together many of the infotainment controls in one place, for ease of use and to create a contemporary and uncluttered cabin. Everything is arranged for an experience that is intuitive and relaxing so that you can focus entirely on the road ahead. The head-up instrument layout means that information can be clearly read easily and safely, looking over rather than through the wheel. The Peugeot also has a compact steering wheel and newly developed electric power steering, resulting in a responsive and controlled driving experience. My BlueHDi diesel powered model certainly impressed me with its ability to stick to the road and hug bends - even when pushed hard. The vehicle is stuffed to the brim with safety packages and the five door car also offers great fuel economy. There’s plenty of room for luggage and shopping, as well as for you and your front seat passenger. Rear seat travellers don’t have quite so much legroom, but headroom is fine and the rest of the car is cosseting enough to provide a soothing ride. The new 308 is seriously worth considering if you’re after a medium sized family motor. The fact that the model will also be manufactured and sold in China indicates just how much belief there is in this car.
