Super Normal? Game Changing Seafood From Norfisk!

A

In the current climate it’s all about food safety and consumers are fully conscious of the long-term planet gains as a reflection of what they consume and thrive on knowing this before they eat. More selective fishing, intact seabeds, lower greenhouse emissions and unwanted bycatch are just a few of the benefits of long-lining and consumers love to see and hear these facts.”

Matthew goes on to say “more recently we have progressed the brand with long-line fillets into our range. Our processing partners have decades of experience in buying only the best quality fish and we felt obligated to offer a higher volume of premium boneless fillets to the fish frying trade. Our state-of-the-art facilities take the headed and gutted fish down to temperature that barely allows them to fillet the fish then within minutes it’s interleaved and plate frozen.” Research company Nofima have analysed and compared fish caught by long-lining and fish from trawler catches. This has shown that line-caught fish has a whiter flesh and gives a firmer fillet. The most important reasons for the better flesh quality of line-caught fish are better bleeding out and less compression damage,” says researcher Bjørn Tore Rotabakk. Both the compression damage and the poor bleeding out are caused because trawling brings up from five to twenty tons of fish onto the deck each time, while with long-lining the fish are brought on board one by one. Researchers have carried out chemical, technical and sensory analyses in order to assess fish quality. Taste assessors have judged the fish on colour, texture, smell, splitting and surface, while chefs at the Gastronomic Institute have assessed the flavour. The conclusion of both groups is that line-caught fish has a much higher quality. So, whilst Norfisk is relatively new to the market it’s not aiming to revolutionise the industry – only to offer the more conscious buyer a convenient alternative to trawled and to compliment the Fish and Chip sector, one that they know prides itself on very high standards!

Shed Hopping! Award-winning chip shop moves across Warwick!

T

he team announced they would be moving to a bigger site earlier this year. An award-winning chip shop in Warwick has officially opened at its new premises. The Chip Shed, which has been in West Street for nearly five years, is owned by Dan Chuter and Gregg Howard and Jamie Little who is the shop manager. In April the team announced they would be moving to a bigger site in Swan Street to help make it a faster operation. The new premises also provides a larger area for customers including being able to seat more than 70 people. The new Chip Shed site opened in the summer and the team held an ‘opening party’ on July 29, which was attended by residents, local businesses, the Mayor of Warwick, Cllr Richard Edgington and MP for Warwick and Leamington Matt Western. Dan said: “The whole team are

The Hand of Hod! Lancaster chippy stepped in to feed entire wedding with 15 minutes notice after caterers drop out

O

ne of my favourite stories from this year saw an award-winning chip shop owner stepping in to provide last minute catering for a wedding! Hodgson’s Chip Shop saved the day after a bride and groom’s caterers were forced to cancel due to coronavirus Hodgson’s Chip Shop in Lancaster is already renowned for its award-winning Fish and Chips, this summer they left thousands of people in awe when they stepped in at the last minute to cater a wedding. Mandy Bates, from Morecambe, posted to the Facebook group ‘Lancaster Past & Present’ thanking the chippy for their efforts. She wrote: “Just want to give a massive thank you shout out to Hodgson’s Chippy… on Saturday 24th July my niece was emailed 15 minutes before she walked down the aisle (4pm) by the caterer for her wedding reception saying he couldn’t make it.” Mandy wrote that the cancellation came “despite having been booked for weeks and having had a hefty deposit” but later edited that they had to pull out due to Covid-19. She continued to write: “Hodgson’s Chippy kindly stepped in when called and supplied 50 portions of fabulous fish and chips!! Thank you so very much, they were thoroughly enjoyed!” The original caterer returned the deposit and was said to be “great” in compensating for the cancellation.

Mandy wrote: “The fish and chips were absolutely fab… piping hot and lush and the day was thankfully not spoilt in any way, it was amazing, and the Bride and Groom loved every minute.” Nigel Hodgson, owner of Hodgson’s Chip Shop on Prospect Lane Lancaster told newspaper LancsLive: “Of course we would help out in that situation” Hodgson’s called in extra staff when they received the call to ask if they could provide the missing meals, Nigel said that he could tell Hodgson’s ability to step-in had “de-stressed” the bride and groom on their big day. He added: “whatever we could have done, we would have done to make their day as perfect as it possibly could be and make it a day that they’ll always remember.” Nigel also gave credit to Hodgson’s to their hardworking team of staff who made over 50 meals with approximately an hour and a half notice. On how they pulled it off, Nigel told LancsLive that they had to void the click and collect time slots for when the food was due to be picked up. Have you saved the day with fish and chips? The Incredigull Journey WHAT does a seagull do when their home – York’s former rubbish tip – closes down?

T

hey head for the seaside...or at least that’s what Steven the seagull has done. Steven is one of about 2,500 gulls which were tagged at the Harewood Whin landfill site near Rufforth in 2015, before it was shut after the construction of a new incinerator for York and North Yorkshire’s refuse. Experts from a bird charity wanted to find where they went afterwards. This gull has been discovered living happily in Robin Hood’s Bay, a former fishing village near Whitby, by a chef at the village’s fish and chip shop, Maid Marion Fisheries. He was traced back to Harewood Whin through the yellow tag on his leg, which read ‘5V4B’. Other York gulls are said to have been traced as far away as the Barents Sea and Morocco.

The chef’s research showed the bird had been ringed at Harewood Whin on March 20, 2015, aged three, having been caught with a ‘cannon net’ along with other gulls which were caught and ringed over a three-year period from 2015. The shop said in an information panel: “Harewood Whin was one of the decreasing numbers of landfill sites in the UK where it was possible to operate for the catching and ringing of gulls. The landfill site has now closed and no longer attracts large numbers of gulls. “One of the main reasons for carrying out this work was to examine if and how the movements of gulls altered with the closure of the landfill site, which used to be a major food source throughout the year. To date, there have been over 3,000 sightings reported, from as far away as the Barents Sea and Morocco.” They said this was Steven’s first sighting since being ringed. he British Kebab Awards in association with JUST EAT is a great chance to recognise and champion the efforts of local kebab takeaways and restaurants across the nation. Fans of their friendly neighbourhood kebab takeaways and restaurants can claim they truly do have Britain’s best kebab takeaway and restaurant by voting for them in the British Kebab Awards. The British Kebab Awards is a true celebration of this industry, which naturally draws key figures from all sections of the takeaway and restaurant sector. As a reflection of the kebab industry’s significant contribution to the UK economy and British culture in general, the awards welcome a host of celebrities, prominent politicians, journalists and most importantly the nation’s hard-working restaurant workers for an evening of celebration. The winners were announced by BBC Radio 1 DJs and presenters Scott Mills and Chris Stark. The 2021 awards saw 1,200 guests attend, including representatives from sponsors, Just Eat, Cobra Beer, Ben & Jerry’s, Coca Cola, Bookers, Big K Charcoal, My DD points and McCain Food services. Brits are demanding sustainable fish with their chips… … they want more help choosing too.

W

ith staycations now the norm, many Brits are craving nostalgic experiences like fish and chips on the seafront. But although we’re all keen for a return to better times; what’s expected inside the chip wrapper is evolving, according to new research by the Norwegian Seafood Council. And as sustainable fish rises up the agenda, diners are demanding greater transparency, helping them to make the right decisions when they’re choosing from a menu. The UK continues to be a nation of fish and chip lovers. More than a third of Brits tuck into them once a week or more, and 65% partake at least once a month. There’s strong consensus when it comes to sustainability: nearly 9 out of 10 diners (87%) agreed that sustainable fish is important to them. Despite this, only a quarter (24%) said they knew what to look for when it came to sustainable fish in a fish and chip shop, and the majority (53%) aren’t even sure they can tell the difference between cod and haddock. 74% of respondents agreed that they would find it helpful for fish and chips shops to tell them more about the sustainability credentials of their dishes. Younger generations indulge more frequently, with 70% of 18–24-year-olds eating fish and chips at least weekly. But although Generation Z tucks in the most, they’re more demanding when it comes to environmental credentials: 85% think the origin of a catch is important when buying fish in a fish and chip shop. Highly regarded by fish and chips shops across the UK for its cod and haddock,

The country’s environment and location provide the perfect conditions for fish, and its rich marine ecosystem teems with unique seafood that includes the world’s largest stocks of Atlantic cod. Understanding the importance of protecting these precious resources, Norway has long been a global pioneer in sustainable fishing methods. So, whenever diners buy seafood with the origin mark, ‘Seafood from Norway’, they can be sure it meets exemplary standards in sustainability. And as the traditional fish and chip supper adapts to meet these needs, customers are asking for more help to make the right choices. Nostalgia remains a key component. As one of the nation’s favourite dishes, fish and chips will always hold a special place in British hearts – young and old. But diners now expect more when it comes to sourcing, and this is being driven by younger, more environmentally-aware consumers. Significant numbers of fish and chips shops across the UK already use Norwegian haddock and cod – not just because of sustainability credentials, but also because of its quality. We’re keen, not only to reassure diners that they’re choosing sustainable fish suppers, but also to help these businesses attract and retain customers by making this more explicit. We’re obsessive that our seafood is sustainably fished, so it’s a missed opportunity when fish and chip shops that serve our fish don’t let customers know about its origin. The New Chip Hub! Mother Hubbard’s Famous Fish and Chips opens in Birmingham – with 45p Special

A

lmost 50 years after opening in Bradford, Mother Hubbard’s Yorkshire fish and chip shop is expanding into several Birmingham locations. Mother Hubbard’s ‘Famous Fish and Chips’ has opened a new takeaway and diner next to the Stratford Road in Sparkbrook, Birmingham. There was a long queue down the road as hungry locals queued up to enjoy a taste of a £6.95 portion of haddock and chips for just 45p.The opening offer was the price the company said it charged when ‘Stan and Hilda’ from Coronation Street opened the first shop in Ingleby Road, Bradford on May 3, 1972. The new Sparkbrook takeaway also has a sit-in diner. Tables there are surrounded by giant pictures of Birmingham city centre landmarks down the ages. They include Victoria Square, Birmingham Council House, Town Hall, and Museum & Art Gallery. Mother Hubbard’s currently has three chip shops in Bradford with more in Batley, Keighley, Oldham, Huddersfield,

Leeds, Halifax, Wakefield and Leicester. The company is also using the franchise model to expand into Coventry, Sheffield, Glasgow, Manchester, London and even Dubai. The seeds for the current franchised expansion were sown when Mother Hubbard’s reopened on December 28, 2011. The family behind Birmingham’s Big John’s chain - which has 16 mostly franchised stores of its own in the city with two more currently planned for Hall Green and Northfield - has joined forces with Mother Hubbard’s to assist with its expansion into Birmingham. Big John’s director Bob Saddiq said the move was designed to be complementary, not competition, given the diverse nature of his own company’s menu which goes far beyond fish and chips. “Birmingham is a sleeping giant, the second biggest city in the country,” said Bob. “Mother Hubbard’s will help to bring people into the city.” One of the directors of Mother Hubbard’s Chris said “We’re a community business... that’s why we wanted to offer our food on the opening day at 45p, to give something back to the community as soon as we opened. “We’re also all about proper fish and chips with our own crispy batter - we’re very professional and the fastest expanding fish and chips business in the country. We try to run our shops like family and use the best ingredients, like maris piper potatoes. Fusco’s Hold the Quay to the Future! How New Technology is Helping Hospitality Businesses

W

ith widely reported staff shortages throughout the hospitality industry; job vacancies in the sector the highest since records began (https://www. bbc.co.uk/news/business-57817775 20th July), new procedures from the Covid-19 measures and a high demand for normality to resume, businesses have turned to technology and innovative new products to overcome the challenges that 2021 has presented. One such business is Fusco Ltd in Whitby, which has four fish and chip shops in the area. The business is no stranger to investing in technology, having already implemented two ordering apps, one which was up and running prior to the Covid-19 pandemic. Adrian Fusco commented: ‘The first app at Royal Fisheries was already in place before the pandemic, (set up to support our team with our busier times) but became instrumental in allowing us to safely remain open throughout the pandemic. The success of this app led us to implementing another at our Fish Box shops in Whitby and Robin Hood’s Bay’. The business then went one step further and introduced a home delivery service from the Whitby shop during the second lockdown. With lockdown measures easing during the summer of 2021, visitors once again returned to the coast, prompting Fusco Ltd to look to technology to help the shops run more efficiently. Separate ordering

screens have now been installed at Fish Box Whitby, Royal Fisheries and Quayside. Adrian added ‘We are finding that because the screens allow customers to place orders immediately, the payment process is eliminated, and so our team members have more time to focus more on customer service when they are with the customers. This in turn leads to a more positive experience for the customers and a more seamless process at the shops.’ The Fusco’s sister shop, Quayside, have recently introduced an order and pay at the table system where customers can view the menu, order, and pay online. ‘The benefit here is that our customers choose when they order their food and when they would like to pay, leaving them free to enjoy conversations without interruption and their own timescales. Again, the process has enabled team members to focus on the customer experience within the restaurant, making the day to day running smoother and more efficient. Investing in technology does inevitably cost, but because the new technology is making a positive contribution to the way the business is operating, the benefits far outweigh the costs for us’ Adrian added. nce every two years the whole of the potato industry comes together for a unique ‘seed to shopping trolley’ event in Harrogate. It’s an exceptional networking and business opportunity for all those involved in growing, handling, processing, and retailing the crop in this £multi billion industry. The Isle of Ely produce team were out in force, and this year I joined them as we continue to underline how each and every company at the show play their part in the journey of the

potato right from seed to the frier. Agrico UK had their full team present, and I joined Alex Moore and Archie Gibson on their stand to discuss the importance of trialling Babylon (and other new chipping varieties) to fish and chip shops across the UK. Alex said “Babylon is shaping up to be a key variety for fish and chip shop owners. We are proud of our work with Chippy Chat & happy to announce that we will continue our partnership into 2022.” In the evening many of the visitors and

stand holders convened at the Old Swan Hotel in Harrogate for the National Potato Awards. Welsh Comedian Rod Woodward kept everyone in fits of laughter as he handed out the awards and entertained. The organisers said how difficult it had been for judges to choose from the nominees, the number and standard of entries was exceptional. The highlight of the evening was to see us (Isle of Ely produce and Chippy Chat) crowned champions for our work in marketing to farmers and fish friers and all things in between. Our campaign led by John & Oliver Boutwood ‘from field to

The technology in the drive thru itself gives them the capacity to serve over 80 cars an hour. During the pandemic some cars were out buying for friends, neighbours etc, and meant in some cases 10 plus per car. One of the reasons to meet up with Caroline was to get her trusted view on our new promising variety Babylon. I was very eager to tuck into their lovely Whaler haddock and chips. The batter recipe is unique to them and having been to their Wetherby shop, I was long overdue for another helping! Both the fish and chips didn’t disappoint. Despite having seven shops and serving many thousands of happy diners a week the Wetherby Whaler team pride themselves on the quality and consistency of their food. Agrico’s Babylon variety continues to impress. The fry colour, yield and texture were once again impressive. They tasted fantastic keeping a crispness long after coming out of the range! Caroline said “As an ongoing commitment to our loyal customers we are always keen to try new varieties. Babylon ticked all of the credentials of what makes a good chip, and we look forward to frying more of them soon.”

Oliver and I went on stage to collect this prize, one which we would like to dedicate to all of our partners who have helped us deliver this platform thus far. No trip to this part of Yorkshire is complete without visiting ‘The Home of Fish & Chips’, The Wetherby Whaler. This is a family-owned seven strong chain of fish and chip restaurants and takeaways. The business was founded by Phillip and Janine Murphy in Tadcaster in 1969 and continues to thrive over 50 years later! I was met by director Caroline Murphy to take me to their drive-thru outlet ‘The Empire’. I have been intrigued by this outlet since they purchased it in 2018 and wanted to see how they have integrated it into the Wetherby Whaler family. The answer of course is very well. Paying homage to its cinematic bygone days, posters adorn the walls and images are projected from classic movies. They have managed to combine old with new and 39

Fish ‘n’ Chips Products For The Open!

e got sent some quirky stories this year regarding fish & chips here at Chippy Chat. This one is one of the quirkiest, but great publicity for our national treasure non the less. The oldest tournament in golf was finally back, and Vice Golf celebrated it with the most traditional treat in the UK: Fish and Chips. They released the VICE CREW Fish and Chips in CORAL RED cap, paired with a matching headcover. They liked to eat the juicy meal out of oldfashioned newspaper wrappers, so they featured that iconic pattern too. Both products were strictly limited to 333 pieces, so sold out very quickly VICE CREW CAP FISH’N’CHIPS CAP The history of the oldest major is only a few years younger than that of the English national dish fish’n’chips - a treat that is loved by all kinds. Just like the dish, this edition was served to all those who love their food. Tell Laura we love her (Vegan treats)! Mike and Nihal Burne take over well-known Whitley Bay chippy

O

ne of the more familiar names in Whitley Bay is Laura’s Fish Bar, which was taken over by a new husband and wife team last year. The chippy was one of the first in the Northeast to offer vegan fish and chips, made from banana blossoms, which owner Mike Burne says now accounts for around 50% of its business. Mike, who decided to buy a chip shop with his wife Nihal after losing his contract in IT during the pandemic, said: “Things are picking up [on Station Road]. “It was a very quiet street until a lot of new shops opened up, but a lot of locals have said it’s becoming busier, which is a good thing for everybody.” The couple were trained by the 2018 Fish and Chip Shop of the Year award winners Millers of Haxby! “Great fish and chips and friendly staff. The vegan alternatives are really nice-and I’m not vegan, love how this place caters for everyone!” Elisse Durham, Darlington
