It is unfortunate that the image many have of New Jersey is represented by the oil refineries surrounding Newark (Liberty) Airport and the New Jersey Turnpike.
In truth, the State’s nickname, “The Garden State” more accurately reflects its true nature.
While the state is one of the most densely populated in the country, large areas are devoted to vegetable and fruit farming and horse breeding.
The northwestern part of the state is mountainous and sparsely populated and the eastern part of the state enjoys some of the most beautiful beaches in the country.
Here are some things I bet you didn’t know about New Jersey:
• New Jersey has the most diners in the world
• There are more racehorses in New Jersey than in Kentucky
• New Jersey is the home to the Statue of Liberty and Ellis Island
• New Jersey is the world leader in blueberry and cranberry production
• 80% of what the US imports comes through the Elizabeth Seaport
• The lightbulb, phonograph and motion picture were inveted by Thomas Edison in New Jersey
• The first Indian Reservation was in the Watchung Mountains, NJ
• The first baseball game was played in Hoboken, NJ
• The first college football game was played in New Brunswick, NJ
Nostalgic Jersey Shore
Growing up at the Jersey Shore was a wonderful experience. We often say it was like Andy’s “Mayberry.” Along the way there were some fantastic restaurants and bars that no longer exist. Here’s some memories mostly from southern Monmouth County:
Restaurants
· Howard Johnson’s, Sea Girt - My mother loved their fried clams.
· Doris & Ed’s, Highlands - Owner Jim Filip created this iconic seafood restaurant. He was one of the first to understand the appeal of good wine
· Farmingdale House, Farmingdale - Hard to believe in today’s world. Fine dining. Tuxedoed waiters. Full on a Monday night in the winter. Local chef Chris Brandl got his start here.
· Fromagerie, Rumson - Perhaps the Jersey Shore’s first fine dining restaurant. Had a dinner here cooked by the White House Chef. Celebrity chef David Burke got his start here.
· Old Mill, Spring Lake Heights - Our family’s Christmas Eve tradition. Organ music. The best German fried potatoes.
· Horn & Musket, Brielle - Steak restaurant. All you could eat shrimp.
· Marlin Tuna Camp, Manasquan - Fresh fish, right on the Glimmer Glass
· Southern House, Point Pleasant - Don’t know how it would compare to today’s Jersey Shore BBQ, but back then we thought it was the height of southern BBQ
· Jack Sullivan’s, Spring Lake - Old time supper club with piano music.
· Post & Rail, Sea Girt - Now Fratello’s. Irish Riviera outpost. NY Giant’s hang-out
· Yankee Clipper, Sea Girt - Upstairs restaurant, downstairs beach bar. Oh, how we miss it.
· The Dinner Bell, Brielle - One of many iterations in this location. Currently Rella’s. Once owned by Lawrence Taylor
· Top of the Mast, Seaside Park - Many people’s “go-to” special occasion restaurant
Fast Food
· Skoukas Point Pleasant Beach - Along with Carlson’s Corner in Manasquan, the two best burgers at the Shore.
· Surf & Sand, Manasquan - THE after-bar hang-out. I think every girl I went to high school with worked here. Like the drive-in in “American Graffiti”
BARS
· Joe Crine’s, Manasquan - Stated drinking here at 16. Bartender Elizabeth would get mad when someone celebrated a 21st birthday after being a regular for years.
· The Bluffs, Bay Head - Upscale bar with all the local “beautiful people”
· Red Ranch, Manasquan - Bartended here in the 70’s. Open until 3:30am. 3 deep at 3am
· The Royal Manor, Wall - Huge venue with multiple bars and stages. 1000+ people per night.
· Ship’s Wheel, Brielle - Brielle staple. Live music
· Jimmy Byrne’s Sea Girt Inn - Upperclassmen opened the door to the Bamboo Room for us at 16. Once you were in, no one bothered you.
· The Shanty Pub, Point Pleasant - Had an amazing dish called the Barkentine. Have never been able to find the recipe. Upstairs Wine Cellar was way ahead of its time.
· Casablanca, Manasquan - A friend became infamous by driving his motorcycle up the steps and into the bar….naked.
· Pool Bar, Warren Hotel, Spring Lake - You could run into just about anyone you knew here after the beach.
· The Keynote, Sea Girt - Now Harrigan’s Pub. Was a great piano bar.
· Union Landing, Brielle - It wasn’t a summer Sunday without the raw bar and Billy Morris singing
· Hook, Line & Sinker, Rumson - Now Undici’s. Opened in 1934. The Shore’s original “Cheers”

TAYLOR HAM/PORK ROLL
Whatever You Call It, It is New Jersey’s Favorite Breakfast Sandwich
From WikipediaPork roll is a processed meat commonly available in New Jersey and neighboring states. It was developed in 1856 by John Taylor of Trenton, and sold as “Taylor’s Prepared Ham” until 1906. Though since then food labeling regulations require Taylor and all other manufacturers to label it “pork roll”, people in northern New Jersey still call it “Taylor ham”. The “Is it pork roll or Taylor ham?” question is a notable element of New Jersey culture and the division over what name one uses divides the state along roughly north-south geographic lines.
Taylor originally called his product “Taylor’s Prepared Ham”, but was forced to change the name after it failed to meet the new legal definition of “ham” established by the Pure Food and Drug Act of 1906. Marketed as both “Taylor’s Pork Roll” and “Trenton Pork Roll”, it saw competition from products with similar names like “Rolled Pork” and “Trenton style Pork Roll”. Adolph Gobel, the “Sausage King” of Brooklyn, produced “Roll of Pork”. Gobel was sued by Taylor in 1910, but the court ruled that the words “Pork Roll” and “Roll of Pork” could not be trademarked.
New Jersey split over the name
Although it says “John Taylor’s Pork Roll” on the wrapper of the product of the Taylor Provisions Company, a century later, many in North Jersey (and parts of Central Jersey) continue to use the term “Taylor ham”. The debate over the name, which splits New Jersey along a line between the north and the south, is a perennial one in the state. It has become a shibboleth for identity within the state, and is an argument that New Jersey people, whose lives are influenced by out of state factors, can consider their own.
In the words of Lew Bryson and Mark Haynie, magazine editor and magazine writer, “The north calls it ‘Taylor ham’ and eats it with
mustard; the south calls it ‘pork roll’ and eats it with ketchup.” going on to observe for their home state that “[o]ver here in Philadelphia […] it’s pork roll; hey, Trenton’s right across the river and that’s what it says on the wrap!”
On May 15, 2016, President Barack Obama gave a commencement speech at Rutgers University’s 250th graduation ceremony in which he referenced the “Taylor Ham vs. pork roll debate”, saying, “I come here for a simple reason – to finally settle this pork roll vs. Taylor Ham question...I’m just kidding... There’s not much I’m afraid to take on in my final year of office, but I know better than to get in the middle of that debate.”

Acknowledged as a leading pioneer in American cooking, Burke, a New Jersey native, is also recognized internationally for his revolutionary techniques, exceptional skills, successful restaurant empire and his many TV appearances. In the parlance of today’s celebrity driven culture, he is a rock star of the culinary world.
At just 26, Burke’s kitchen mastery won him the executive chef position of New York City’s legendary River Café. While there, he became the first American ever to win the prestigious Meilleurs Ouvriers de France Diplome d’Honneur, cementing his reputation as a leading international chef. He subsequently won Japan’s Nippon Award
for Excellence, the Robert Mondavi Award of Excellence and two nominations for James Beard Best Chef. Burke was also awarded a coveted three-star New York Times review for the River Café and later became a familiar guest on TV’s Top Chef.
Today, Burke operates 17 restaurants, world-wide, 4 at the Jersey Shore; Drifthouse by David Burke, Sea Bright, The Goat by David Burke, Red Horse by David Burke and David Burke’s Dixie Lee Bakery. Burke is the author of two cookbooks, Cooking With David Burke, and David Burke’s New American Classics and is currently working on a memoir.
We sat down with David, a wonderful storyteller, for a recent interview.
What was the most pivotal experience of your career? Probably when I worked for Charlie Palmer at River Café. You had to be good. I honed my skills there and built confidence
If you could do one thing over, what would it be? I probably would have gone to Asia, China to learn more about complex flavors
Of what are you most proud in your career? That dishes I created are still in style and that I’m still doing what I love when many of my peers are out of the business
What is more important for a successful restaurant – food or service? epends on the restaurant. For McDonald’s I’d say service, fast in and out, but for others a mix of the two to be really successful
Where do you eat when you go out? In NYC, The Fulton, Porterhouse, River Café, Tribeca Grill and Marea. Around the Jersey Shore; Albarino, One Willow, Salt Creek Grille, Nicholas, Pascal & Sabine and Gabriela’s
Any missed opportunities in your career? For a variety of reasons, I missed out on going in to the Bellagio and I missed the space at the top of the Arts Building at Columbus Circle.
Was Fromagerie your first job? No, my first job was at Navesink Country Club when I was a junior in high school. Then when I was about a senior, I went to work at Fromagerie. Then I went to culinary school and did my externship at Fromagerie.
Most memorable dinner ever? It was actually a lunch. I had been working in France for a while, maxed out my credit cards and was headed home, bags packed and everything. On my way out of France I stopped at Troisgros, a three star Michelin restaurant. To this day the most memorable meal I ever had
What is the future of dining look like? For now, I think fine dining, with captains, sommeliers and so forth, is gone, but we will continue to see high end dining.

HOUSE OF PRIME RIB CREAMED SPINACH RECIPE
• 5 slices bacon, diced
• 2 cups baby spinach, fresh
• 1 cup full-fat milk
• 1 medium white onion
• 1 clove garlic
INSTRUCTIONS
• 2 tsp nutmeg powder
• 2 tbsp butter, unsalted
• Salt and black pepper to taste
• 2 tbsp all-purpose white flour
• 1 lemon
1. Firstly, cook the spinach in salted, boiling water for 30 seconds
2. Next, transfer it into ice water so that the spinach cools down (Alternatively, you can buy frozen spinach)
3. Blanch the spinach, squeeze, and chop
4. In a large skillet, saute the sliced bacon for about 3 minutes
5. Keep the flame on medium hot
6. Add sliced onion and cook until it turns translucent
7. After 3-4 minutes, add spinach, garlic, salt, nutmeg powder and pepper
8. Next, melt the butter in a saucepan
9. Add flour and keep stirring with a wooden spoon for about 3 minutes
10. Cook until the mixture turns into a light brown color
11. Now, add the milk and whisk until the mixture starts boiling
12. Reduce the flame and cook for another one minute until the mixture thickens
FINAL ASSEMBLING
1. Finally, add the cream sauce and pulsed spinach to the skillet
2. Blend the whole mixture to get that House of Prime Rib’s smooth, velvety texture
3. Squeeze in some lemon juice and enjoy!

BEACHES
All of the beaches at the Jersey Shore are clean and well maintained by the individual town’s beach departments. Beach maintenance is supported by the sale of daily and seasonal beach badges. Cost is $4-$10 per day. Visitors can enjoy pristine beaches from Sandy Hook south to Island Beach State Park.
GOLF
Monmouth County offers 6 public golf courses, two of which Howell and Hominy Hill, are consistently rated among the top public courses in the country. Hominy Hill in Colts Neck, was called “Augusta of New Jersey.” By Zagat. Colts Neck Golf Club is semi-private and offers a wonderful and challenging trek.
RUNNING/WALKING/BIKING
The “boards” as the boardwalks are called are ideal and scenic for walking or running along the ocean. Bikes are only allowed on the boardwalks before 9am in season, anytime out of season. The Manasquan Reservoir, located about 20 minutes away is a natural preserve and has a beautiful 5 mile trail through the woods and along the reservoir. Wonderful place to walk, run or bike. There is a lengthy bike path through the woods, starting on North Main Street in Manasquan and stretching out all the way to Trenton. Bikes can be rented a Shore Riders Bike Rentals in Point Pleasant.
KAYAKING
Kayaking in and around the Manasquan River is both great exercise and wonderful way to spend an hour or two. There’s a place in Manasquan that rents kayaks by the hour or day. Paddle Out in Manasquan at 537 Main Street opens at 10am, but if you call the night before they’ll meet you as early as 8am.
BOATING
Boatsetter.com and Getmyboat.com offer a variety of boats to rent throughout the Jersey Shore.
GAMBLING
Gambling and top notch shows are about an hour and fifteen to an hour and thirty minutes away in Atlantic City.
THEATER
We are fortunate to have three theater companies in the area. Spring Lake Theatre Company 3rd Ave, Spring Lake, Algonquin Arts Theater in Manasquan and the Count Basie Theater in Red Bank. All produce Broadway type shows and the Algonquin and Basie also feature live music concerts.
FISHING
Surf fishing is very popular in the area with striped bass and blue fish the usual catch. Young guy recently caught a 52lb striper in the surf. You’ll have to bring your own pole, but you can get everything else you need at Bogan’s Basin in Brielle, on Higgins Ave. Brielle is the deep sea fishing capital of the East offering both charter boats and party boats.
HORSERACING
Monmouth Park Rt. 36, Long Branch No better way to spend a cloudy day than the beautiful Monmouth Park. Clean, well managed facility with manicured grounds, top horses and jockeys. Season runs late May to late September.
CONCERTS
The PNC Bank Arts Center Located in Holmdel. This outdoor amphitheater is a beautiful venue and hosts some of the top acts touring each summer. Count Basie Theater is on Monmouth Ave. in Red Bank
This small indoor theater offers interesting concert and theater productions throughout the year.

We are grateful for the tremendous number of volunteers who help facilitate our many support groups. Our training is a comprehensive 4-day training which is offered each September over 2 weekends. Once trained, the commitment is only 2 evenings per month, from 6:30pm - 9:30pm. Our program takes place from September through mid-June. We do not provide groups over the summer.

Second Chance NJ is a 501 © (3) non-profit organization, created to train and place previously incarcerated people in the hospitality industry. High rates of recidivism (individuals returning to jail/prison after release) and the difficulty the food industry has in attracting and hiring long-term employees make this a project that can help solve two serious problems in our community.

A SOLUTION
An exclusive 8-week culinary arts training program to provide a basic orientation to the culinary arts. This intensive course will prepare the student to assume entry level positions in the area’s restaurants.

Second Chance NJ has entered into partnerships with the Monmouth County Culinary Arts Program, Monmouth and Ocean County Probation, The NJ Department of Corrections and the NJ Re-Entry Corp.
