Place steak in bowl & coat. Chill & marinate for at least two hours. 2. Prepare grill for high direct heat with one part of the grill at a lower indirect heat. It’s hot enough when you can’t hold your hand above it for more than 1 second. 3. Remove steak & shake off excess marinade. Place on hot side of grill for 1 minute or 2 on each side to get a good sear, then move steak to cooler side of grill, cover & cook to taste. Rest steak for 5 minutes. 4. Slice against grain of meat. Garnish with radishes, cilantro and Bourbon Smoked Togarashi & serve.

The Proof Is In The Barrel
One of our area’s most notable products and industries is the manufacturing and distribution of Bourbon. While Bourbon can be made anywhere in the US, it is most commonly associated with Kentucky. It has been estimated that over 90% of all Bourbon produced originates in Kentucky. Only whiskey produced in the United States can carry the name Bourbon. Bourbon was named America’s native spirit by an act of Congress in 1964. The invention of bourbon is subject to many legendary stories and figures, but is very hard to trace to an original source. Distilling was probably brought to present-day Kentucky in the late 18th century by Scots, Scottish-Irish, and other settlers who began to farm the area in earnest. The spirit they made evolved, and became known as bourbon in the early 19th century due to its historical association with the geographic area known as Old Bourbon (this consisted of the original Bourbon County of Virginia, a region that included much of today’s Eastern Kentucky.)

Bourbon made for consumption within the United States must meet these requirements: • Only whiskey produced in the United States can be called bourbon. • Bourbon must be made from a grain mixture that is at least 51% corn. The remainder can be a mixture of wheat, rye and/or malted barley. • Bourbon must be distilled to no more than 160 (U.S.) proof (80% alcohol by volume). Bourbon, like other whiskeys, must be bottled at 80 proof or more (40% alcohol by volume.) • Bourbon must be entered into the barrel for aging at no more than 125 proof (62.5% alcohol by volume). • Bourbon must be aged in new, charred white oak barrels.

Bourbon has no minimum specified duration for its aging period, although it must be aged at least briefly. Bourbon labeled as “Straight” bourbon must be aged for at least two years. Fluctuating the percentages of corn, wheat, rye and barley creates the many varieties and flavors found in today’s bourbon. The source of each of these grains and their effect on one another is another part of the formula. Each distillery has their own secret formula and variations to work their magic within these parameters. The formula itself, climate and climate changes as well as barrel storage location will influence the final product, not to mention the length of the barrel aging. All of these factors delicately come together to produce a variety of bourbon flavors.

Over the past several years Bourbon’s popularity has outpaced demand and many distillers are working hard to not only deliver more product but also to create and refine new flavors. Jim Beam, has launched a new Single Barrel Bourbon that is their first ever-single barrel offering. Less than 1% of all Jim Beam barrels qualify for this bottling. Each barrel is individually bottled and hand numbered with care to ensure a unique profile and premium quality that make perfectly crafted bourbon. Jim Beam Single Barrel is offered at 95 proof as full bodied with sweet, rich, well-balanced attributes of oak, vanilla and caramel. In 1999, the Kentucky Distillers’ Association formed the Kentucky Bourbon Trail® tour to give visitors a firsthand look at the art and science of crafting Bourbon, and to educate them about the rich history and proud tradition of their signature spirit. The distilleries that take part in the Kentucky Bourbon Trail include: Four Roses, Heaven Hill, Jim Beam, Maker’s Mark, Town Branch, Wild Turkey, Woodford Reserve and Evan Williams. Each distillery offers a tour of their facilities and distilling operations. You’ll find these to be beautiful sprawling properties located literally along the back roads of Kentucky. While many visitors drive the trail, some choose to experience it by bicycle. The tours are very educational and you’ll find it fascinating how each distillery has developed and perfected their own recipe and interpretation of the bourbon formula. Bourbon making is truly a craft handed down by generations and every small variation influences the flavor. The Kentucky Bourbon Trail also provides an official passport for visitors. This passport contains maps, listings and descriptions for each of the stops along the way and will assist you in navigating the trail. The Kentucky Bourbon Trail’s official Trail Head is Shepherdsville, Kentucky, approximately 20 miles south of Louisville in Bullitt County.

Along the trail you’ll find some very interesting and historic inns, restaurants, bakeries and shops to enhance your visit. Each offers you some extra local flavor if you choose to indulge. Our favorite stops along the tour are the Maker’s Mark, Jim Beam and Evan Williams Distilleries. Come on down and decide which is your favorite! It can take up to three days to visit all eight of the historic distilleries located on the trail. In addition, each distillery’s tour is unique, with specialty options available at many of the stops. Plan on spending at least an hour and a half at each location and be sure to call ahead if possible to confirm your arrival. The scenery between distilleries is also quite beautiful, with locations ranging from a few miles to more than 70 miles apart. Many tours are free, but some charge a minimal admission fee, and large groups of 10 or more are always welcome with advance notice. Visitors of any age are permitted to take the tours, but you must be 21 years of age to sample products or participate in the tastings offered at the end of each tour. The Urban Bourbon Trail is an opportunity to experience Louisville’s rich bourbon heritage. As you may expect, Louisville is home to some of the world’s best bourbon bars. This self-guided tour will enlighten you to Louisville’s bourbon heritage while sipping some of the best available. The stops along the tour include a series of select hotels, bars and restaurants that feature an extensive menu of the area’s finest bourbon. The Craft Spirit Boom Following quick on the heels of the Craft Beer boom, distillers have begun creating craft spirits and the growth has been tremendous over the past few years. A decade ago you may have counted 50 craft distilleries in the U.S. There are now approximately 800! You can find delectablycrafted gins, vodkas, brandies, bourbons and just about any spirit you’d want. Whiskey, gin and vodka are the most popular spirits being produced by craft distillers. Many of these small batch distillers forego national distribution in favor of remaining local. Many offer tasting rooms from which to sample product and of course product can be purchased at the facility. Current hotspots for craft spirit distilling are Oregon and Washington. These are not surprisingly also hot spots for craft beers. However, the Starlight Distillery in Starlight Indiana has been a destination distillery for several years. Only a short drive from downtown Louisville they offer a complete line of craft spirits, many of them award winning in their respective categories. Established in 2001, the Starlight Distillery is located in the knobs of Southern Indiana, just a short drive over the Ohio River from Louisville. It sits in the middle of 650+ acres of fruit trees, vineyards, pumpkin patches, strawberries, bramble fruits, and vegetables. Whiskey corn is grown on the property, including non GMO heirloom varietals, a red, white and blue. Steep growth is expected to continue for the craft spirits distilling industry. Currently the industry is growing at 30% and is expected to reach an overall market share of 8% by 2020. Whiskey is definitely the dominant craft spirit, accounting for about 37% of craft label products, but gin, vodka and rum are also very popular and on the rise. The Kentucky Derby is often referred to as the “Most Exciting Two Minutes in Sports” and as the “Run for the Roses” signifying the famous blanket of roses draped over the winning horse. The Derby is also the first leg of the United States Triple Crown of Thoroughbred Racing. The Preakness and then the Belmont Stakes follow. The Kentucky Oaks is Thoroughbred racing’s most prestigious event for 3 year-old-fillies and is run each year the day before the Kentucky Derby. Racing fans and celebrities from all over the world convene upon Louisville for several days anticipating the big event. Focus On The Fillies
Since 1875 the 1-1/8-mile Kentucky Oaks stakes race has been held each year at Churchill Downs on the Friday before the Kentucky Derby, which is always held the first Saturday in May. Unlike the Derby, entry in the Kentucky Oaks is reserved exclusively for the world’s top 14 three-year-old Thoroughbred fillies with the highest earnings. This field of fillies races for an impressive $1 million guaranteed purse to the delight of record crowds of more than 100,000 spectators each year and the event consistently ranks among the most popular horse races in the world. The number of attendees at The Oaks typically surpasses the attendance of all other stakes races except the Kentucky Derby and the Preakness, often topping even the Belmont and the Breeders’ Cup. Traditionally, The Oaks has always been a held a special place in the hearts of locals, who come out in large numbers to attend the race, and many local schools are closed that day for an “administrative holiday.” Often called the “Race for the Lilies,” the stargazer lily is the official flower of the Kentucky Oaks, making pink the preferred color in both men’s and women’s fashion. The color pink is also part of the track’s “Think Pink” initiative, which is part of an ongoing partnership with cancer fighting charities like Bright Pink and Horses and Hope. In fact, Churchill Downs has been actively involved in the battle against breast cancer since 2009 and is pleased to be part of such a major fund raising program in support of prevention and early detection of these diseases. As on Derby Day, spectators come out to the track for the Oaks to enjoy the festivities wearing their finest

attire and most elaborate fancy hats. Festivities always start on Oaks Day with a parade, a fashion show, a highly entertaining Hat Parade and - of course - a mint julep or two! Despite the growing number of visitors from out of state who come to the Kentucky Oaks and the Derby each year, the Oaks has always been considered a local event among Louisvillians. Millionaires Row is another exciting part of The Oaks, so be sure to keep an eye out for the many celebrities who come to town each year for this special day. Of course, the infield crows are always entertaining to watch - either up close or from the stands - and numerous musical attractions, games, food and other vendors are located throughout the grounds and infield. Potential entries for this Grade 1 stakes race are selected based on the results of more than 70 graded stakes races held worldwide over a 10-month period. Fillies are permitted to enter the Derby instead should they qualify, but must earn their way to the field just like the colts and geldings. This careful selection process is part of what makes the Kentucky Oaks such an essential part of the most exciting weekend in horse racing and a true “don’t miss” event for anyone planning a visit to Louisville, Kentucky.

The leadership of Develop New Albany has been focusing on the economic revitalization, historic preservation and promotion of their Historic Downtown. New Albany was an industrial center and Indiana's largest city for a period of more than 30 years during the 1800's.
Similar to many downtowns across America, Downtown New Albany is now alive with new businesses, restaurants and retail stores. In the past five years more than 90 new businesses have moved into downtown New Albany and the vast majority of those businesses are locally owned and operated. The vast array of cuisines, dining settings and culinary influences come together to form one of the country’s most diverse and exciting dining scenes. To provide some perspective on how and why Louisville has become the dining destination it has, we talked to several area chefs and restaurant owners to relate their experience for our hotel guests. When it comes to a love of cooking, most of our chefs indicated they had experience early in life that made them appreciate the
art of a good meal. Chef Shane Ward of Ward 426, a recent addition to the Louisville dining scene, began as a dishwasher at the age of 15 and then quickly realized, as he progressed through the restaurant ranks, the restaurant business was for him. Chef Agostino Gabriele, of Vincenzo’s Italian Restaurant, also caught the bug early as he began cooking for his family at home in Palermo, Sicily with fresh meats and produce bought in nearby street markets. Chef Anthony Lamas, of Seviche, grew up appreciating his mother’s unique Latino flavors and developed a love for food and cooking. Chef Zac Young of Marketplace

Louisville might not be the first city that comes to mind when considering a restaurant venture. However, Louisville has attracted some of the best! The many local chefs held in such high regard have helped to attract new restaurateurs. Chef McClain Brown of Jack Fry’s, one of Louisville most established options, chose to work here due to his admiration of chefs active in the area. Chef Brian Morgan, of Eiderdown, located in Louisville’s Germantown neighborhood, came here to cook professionally under local Chef Daniel Stage whom he admired very much. One of the things we found common amongst the chefs we spoke with was their desire to express themselves in an artful fashion. Agostino Gabriele’s favorite part of cooking is showing artistic expression in cuisine. McClain Brown appreciates the “complete harmony of necessity and functionality with aspects of visual and conceptual art. I can stimulate my mind while fulfilling a basic human need.” Anthony Lamas enjoys being able to use the creative part of his brain and then watch the joy that food brings people. Creating is also huge for Zac Young and he enjoys coming up with fun new dishes and making those at the table happy! With the growth of the foodie scene in Louisville on such a fast pace, we asked these chefs their vision of the scene’s future. Brian Morgan expects the scene to continue to grow and the restaurants will continue to push each other to execute on a higher level. McClain Brown concurred, adding that everyone will need to elevate his or her cuisine to a higher level to stay ahead of the curve. Anthony Lamas added that a level of creativity would be needed to continue attracting new customers. Shane Ward mentioned “The food scene in Louisville, like the rest of the world, is redefining itself. There is great food everywhere from street vendors to fine dining establishments.” 68
Now that we have some insight into these chefs’ thoughts on the restaurant scene here, we asked for their favorite thing about Louisville in general. Anthony Lamas likes that Louisville is a big city with the charm of a small town. Agostino Gabriele and Shane Ward agreed that Louisville is a great place to raise a family while McClain Brown likes the ability to enjoy the convenience of the city but being able to escape and enjoy the rural parts of Kentucky. As Agostino Gabriele summarized “There is an amazing array of creative culinary talent here in Louisville. The availability of farm fresh and local products will continue to make Louisville a terrific place to be!” Zac Yong added that he’d put Louisville up against any city of its size for its food. The foodie scene in Louisville has become a large part of the city’s notoriety in recent years as visitors travel from near and far to enjoy the culinary delights these and other amazing chefs create for their guests. Created at the Brown Hotel in 1926 by Fred K. Schmidt. It was created to serve as an alternative to ham and egg late night suppers served after a night of dancing at the hotel. The dish is an open faced sandwich of turkey and bacon, covered in Mornay sauce and baked or broiled until the bread is crisp and the sauce begins to turn brown. The Hot Brown was a unique late night treat as turkey was typically reserved for holiday feasts during the era.

ouisville offers a long list of world-class venues to keep you busy at any hour of the day, any day of the week, any time of year. There are unique, nationally recognized museums, an IMAX theater, performing arts, outdoor activities, minor league baseball, live music and even tours of local historical spots.
Many of the museums are strategically located a short walk from each other along West Main Street and run the gamut from local arts and crafts to a worldly collection of historical armaments. The Louisville Bats have been recognized by Baseball America as the top AAA baseball team in America and Slugger Field is one of the best kept fields in the league. No matter what type of music you’re in the mood for, you’ll find it. There are venues for the blues, country, indie rock, and every other genre of music. If you’re thinking of a road trip then there’s plenty to do only a short drive from here. A tour of Bullitt Country might be in order, or perhaps a tour of the historic Victorian homes in Old Louisville. The Kentucky Bourbon Trail is another popular destination drawing visitors from far and wide. The city of Louisville is home to more than 120 public parks occupying over 14,000 acres of land. Muhammad Ali Titan of Boxing &
Born Cassius Marcellus Clay Jr. on January 17, 1942 in Louisville, the boxer, philanthropist and social activist who came to be known worldwide as Muhammad Ali showed from an early age that he wasn’t about to back down from any fight – in or out of the boxing ring. Muhammad Ali became an Olympic gold medalist in 1960 and won the world heavyweight boxing championship title in 1964. After he was suspended for refusing military service, Ali went on to reclaim the heavyweight title twice more during the 1970’s and won now-legendary battles with Joe Frazier and George Foreman. In 1984, Ali was diagnosed with Parkinson’s Disease and afterward devoted much of his life to philanthropy, which earned him the Presidential Medal of Freedom in 2005. Perhaps the most famous story you’ll hear around Louisville involving Muhammad Ali is the story about how he (may or may not have?) thrown his Olympic gold medal into the Ohio River from the Second Street bridge out of frustration after being victimized by bigotry in his segregated hometown even though he came home a champion. According to legend, Ali threw away the medal because he was refused service at a restaurant due to his skin color, but the story has become blurred by the lens of time and Ali himself even denied its validity. Regardless of how it happened, the medal does seem to have definitely been lost, because the International Olympic Committee issued him a replacement gold medal in Atlanta in 1996.

Ali is also known for having referred to himself as simply “the greatest,” a nickname that has stuck with him over the years. In fact, Ali was never afraid to sing his own praises and was known for boasting about his skills before a fight, using color phrases like the now-infamous “float like a butterfly, sting like a bee.” After doing some spiritual searching, he decided to join the black Muslim group known as the Nation of Islam in 1964, eventually changing his name from Cassius Clay to Muhammad Ali and converting to orthodox Islam in the 1970’s. Throughout his life, Ali traveled to numerous countries to help those in need and in 1998 he was chosen to be a United Nations Messenger of Peace in recognition of his work in developing nations. In 2005, he received the Presidential Medal of Freedom from President George W. Bush and also opened the Muhammad Ali Center in Louisville that same year. Today, this non-profit museum and cultural center is located in the city’s West Main district and stands as a testament to Ali’s life and the core principles that fueled his journey. Despite the progression of Parkinson’s and the onset of spinal stenosis, Ali remained active in public life until his death on June 3, 2016.

The festival boasts four stages on the 100 acre Waterfront Park. All weekend long, up and coming artists play alongside world renown headliners. Previous Forecastles have welcomed the likes of the Avett Brothers, The Black Crowes, Robert Plant, The Black Keys and Louisville’s own My Morning Jacket. The 2016 festival was especially well received. As always, the first day was full of memorable performances. After a long evacuation for the weather, Moon taxi revived the momentum and Ben Harper sang sweet songs as the sun set on the Louisville skyline. After 1200's legendary performance, and the Avett Brothers enlightening send-off, forecastle day one was in the books. Day two of Forecastle was a hot one but the heat didn’t detour anyone from enjoying sets and festivities. Kentucky For Kentucky continued their ever fun pony races on the lawn and local and regional bourbon distillers kept the bourbon flowing into the hands of thirsty festival goers. Performances by Shakey Graves, The Arcs, and Alabama Shakes kept hands high and hips moving on the main stage while Sylvan Esso and Dr. Dog held down the side stages. If you missed some of the daytime shows not to worry, different local venues around town held late night concerts starting at midnight and later. Day three was the most anticipated day of the festival with performances by Ryan Adams, Death Cab for Cutie, Brandi Carlile, and Gary Clark Jr. day three had the highest attendance of the festival with over 20,000 people attending. Forecastle delivers one of the best summer experiences one can have as people of every age, race and creed come together to enjoy performances by some of the world’s greatest artists in an exciting and ecofriendly environment. The Big Four® Bridge links Louisville Waterfront Park to Jeffersonville, Indiana over the Ohio River. The Big Four® was built as a railroad bridge in 1895, and decommissioned in the 1960’s, when the ramps to the bridge on both sides of the river were removed. It was included in the original Waterfront Master Plan as a pedestrian bridge. The bridge opened to the public in February 2013, and has averaged more than 1.5 million visits per year. The Big Four® Bridge has an LED lighting system that wraps designated areas of the bridge fretwork in vibrant colors that can be programmed into a rainbow of effects, highlighting the beauty and strength of the bridge structure, which dates back to its days as an active urban railroad bridge. The lights bathe the ironwork with color that enhances the bridge, while still allowing visitors to enjoy the wonderful views out from the bridge. Lights operate daily from twilight to 1:00 a.m The Louisville ramp is approximately 1/4 mile, the bridge itself is approximately 1/2 mile, and the Jeffersonville ramp is approximately 1/4 mile, for a total round trip of 2 miles. Get Outside!
Cherokee Park Cherokee Park was also designed by Frederick Olmstead. This park is located in the Highlands between Cherokee and Eastern Parkways, east of downtown and Bardstown Rd. It is approximately 389 acres and offers some of the best scenery in Louisville. Featured amenities include an archery range, basketball courts, a paved bike trail, a dog run, fishing lake, hiking and horseback trails, spray pool, a 2.4 mile scenic loop multi use paved path that runs through the entire park and a 9 hole golf course. Whether you are looking to relax or get in a vigorous walk or ride Cherokee Park should fit the bill.

Waterfront Park This 85 acre park is located along the city’s waterfront in downtown. Waterfront Park is host to the annual Thunder Over Louisville fireworks display which kicks off the Kentucky Derby Festival every year in April and the annual Waterfront Independence Festival in July. It is also host to many concerts and special events throughout the year, including Waterfront Wednesdays sponsored by WFPK. Waterfront Wednesdays is a series of FREE concerts by popular national recording artists held on the last Wednesday of each month from April through September. Amenities include a playground, bike and walking trails, the Harbor Lawn, the soon to be redeveloped Big Four Bridge on the east side of the park and, of course, lots of green space. The Great Lawn is the centerpiece of the park.
