Happy Chinese New Year to all as we welcome in the Year of the Tiger, an animal that symbolises strength and bravery, much needed in these trying times. Regrettably, a slew of community outbreaks of the Omicron Covid variant have brought back many social restrictions, including no dine-in after 6pm and bans on flights from countries deemed high-risk for their Omicron outbreaks. The city expects to celebrate a subdued Chinese New Year. Still, the public transport system is operating normally, most shopping venues remain open, and most outdoor areas are free to visit. We are confident the resilient people of Hong Kong will make the most of a difficult situation. Visiting cool neighbourhoods remains a popular activity. This month, we feature the capacious Sha Tin District, the city’s most populous, encompassing the distinct areas of Sha Tin, Tai Wai, Siu Lek Yuen, Fo Tan, Ma On Shan and Ma Liu Shui. A total of 650,000 residents make it a nice-size city in its own right. Having long shed its bedroom community image, Sha Tin is a multi-faceted community with significant cultural landmarks, scenic parks and waterfront promenades, recreational activities such as hiking in the country park or cycling along the waterfront, teeming shopping malls, and loads of local and trendy dining outlets. Please go to page 6 of our cover story for more details. With Hong Kong recognised as one of the world’s culinary capitals, we offer an overview of the city’s restaurant landscape and rich food culture. Our feature story this month explores why Hong Kong is such a special city for dining, reviews some of its distinct culinary features, and offers a prognosis for the future. We are immensely proud of the city’s gastronomic reputation, and we hope you are too. Please go to page 12 for details. While dining in is currently restricted to before 6pm, we hope this will be lifted as the Omicron variant outbreaks begin to subside. Meanwhile, undeterred, we’ve been searching out new dining experiences and this month introduce a trio of restaurants, each with its own dining milieu, for your reading pleasure. At this celebration of great Scandinavian music, pianist Colleen Lee (HKS Artist Associate 2010-2011) will play Grieg’s monumental Piano Concerto in A minor under the baton of Teresa Cheung, who will also conduct Svendsen’s captivating Norwegian Rhapsody No 2 and Sibelius’ epic Symphony No 5, taking you on an invigorating and transformative journey that will stay with you for a long time.

A Tribute to Cantonese Opera Legend Sun Ma

22-25 Sze Tsang Feb Sun Ma Sze Tsang was already well established as one of the

brightest stars in Cantonese opera when he performed at the second and third Hong Kong Arts Festivals in 1974 and 1975. To mark the Festival’s 50th Anniversary, the HKAF celebrates his artistry, fittingly, with the first complete performances since his death in 1997 of four of the operas in which he played his best-loved roles. The stars of a new generation pay their tribute under the artistic direction of Cantonese Opera veteran Sun Kim-long.

新馬師曾名劇展 粵劇伶王新馬師曾(1916-1997)以獨特的「新馬腔」享譽藝壇,出神入化的 演繹為觀眾留下多齣粵劇瑰寶。2022年為香港藝術節五十周年,特意精選四部 新馬師曾名作,邀請新一代粵劇精英擔綱演出,向這位曾於早年藝術節演出的 名伶致敬。這亦將會是新馬師曾逝世後的首個回顧演出,更顯意義非凡。

The 50th Hong Kong Arts Festival

In its 50th edition, the Hong Kong Arts Festival (HKAF) continues to present a wide array of music, opera, drama and dance performances of both traditional and contemporary creations via both in-venue and online formats. This year, the festival also brings along some pioneering projects in arts and technology.

Laila

One of the major highlights of the 50th HKAF in 2022, Laila is an immersive opera experience that will be available for five weeks over the course of the Festival period. It is a coproduction of the HKAF and the Finnish National Opera and Ballet (FNOB), receiving its international premiere in Hong Kong after premiering in Finland. Born out of Opera Beyond, FNOB’s international open call for concepts of an immersive and interactive art piece, this production was awarded the prestigious FEDORA Digital Prize for 2020, Europe’s largest opera and ballet competition.

《拉娜》 為慶祝香港藝術節 50 周年,藝術節為觀眾帶來沉浸式互動歌劇《拉娜》。由 香港藝術節與芬蘭國家歌劇院及芭蕾舞團(歌劇院)聯合製作,《拉娜》是 歌劇院「超凡歌劇」項目 2019 年的優勝作品,首演後旋即獲知名的費朵拉獎 (FEDORA Digital Prize),這次於香港的演出標誌其芬蘭以外的國際首演。

Art Education Theatre "All About the Three Kingdoms" by Hong Kong Dance Company

Art Education Theatre "All About the Three Kingdoms" is an educational performance that introduces dance appreciation through three concepts: The Form, The Inspiration and The Context, in a lively and interactive way. Dancers explore rhythm and movement to demonstrate the unlimited physical possibilities of The Form. Props and costumes are introduced to stir the imagination and encourage discussion about The Inspiration. Selections from the company’s signature reimagining of the classical novel, “Romance of the Three Kingdoms” presents the audience with The Context and brings the show to a thrilling conclusion.

Beyond Carbon: The Climate Change Project

Hong Kong Ballet teams up with M+, Hong Kong’s new museum of visual culture, along with The ADM Capital Foundation, HK2050isNOW and CWR, to present: Beyond Carbon: The Climate Change Project. This groundbreaking interdisciplinary immersive experience includes a series of thought-provoking world premieres by international and Hong Kong choreographers that explore the timely topic of climate change. An explosion of ideas and creativity, this bold fusion of inspiring dance, talks and workshops takes place throughout M+’s iconic new Herzog & de Meuron designed building in the West Kowloon Cultural District.

he most populous district in Hong Kong offers much more than just being the city’s largest bedroom community. CityLife explores its diverse attractions and destinations.

or centuries, dating from at least the Ming Dynasty, Sha Tin comprised scattered rural villages along the Shing Mun River running through the valley. With the completion of the Kowloon Canton Railway in 1910, it became a pass-through market town. Sha Tin remained a quiet enclave on the city’s outskirts until the 1960s when the Hong Kong Government began its new town development programme to house the city’s burgeoning population. In 1973, Sha Tin New Town was built on land reclaimed from Tolo Harbour alongside the river, and it grew rapidly to become one of the largest communities in Hong Kong. Today, Sha Tin District is home to more than 650,000 residents, the city’s most populous district. Its neighbourhoods include Sha Tin, Tai Wai, Siu Lek Yuen, Fo Tan, Ma Liu Shui and Ma On Shan – a rapidly growing new town on the eastern shore of Tolo Harbour. Among the residential neighbourhoods, the area is home to notable institutions such as Sha Tin Racecourse, one the world’s premier horseracing venues. It houses several universities, headlined by the Chinese University of Hong Kong in Ma Liu Shui. The Prince of Wales Hospital, one of the city’s best research hospitals, is in Siu Lek Yuen. The Hong Kong Science Park, a major technology hub, is in Ma Liu Shui on the Tolo Harbour. 6

Sha Tin is also home to myriad temples and heritage destinations, including the Hong Kong Heritage Museum, as well as being a haven for outdoor activities. The Shing Mun riverside offers parks and promenades for walking and relaxing; hiking trails abound in Ma On Shan Country Park, which partially falls within the district; and Sha Tin is unquestionably the cycling hub of the city, with locals getting around by bike on extensive dedicated cycle paths and visitors enjoying riding along Tolo Harbour and the Shing Mun River. Sha Tin has also all the urban amenities one would expect – a handful of shopping malls, including one of the city’s largest; several hotels with full amenities and perfect for staycationing; and an increasingly diverse dining scene combining traditional local eats and trendy restaurants and cafes. Finally, Sha Tin is easily accessed by MTR and buses, with more than a dozen MTR stations located in the district. A trip to Sha Tin is convenient and fast. So, why not take advantage of what Sha Tin has to offer and spend a fun and enjoyable day out!

Heritage and Culture 遗产和文化 Hong Kong Heritage Museum 香港文化博物馆 One of the city’s best, this large museum beside the Shing Mun River comprehensively lays out the city’s history, art and culture. The museum houses six permanent exhibition galleries as well as temporary exhibitions, including the highly popular Bruce Lee: Kung Fu-Art-Life exhibition. 1 Man Lam Road, Sha Tin. Ten Thousand Buddhas Monastery 万佛寺 Located only half a kilometre from Sha Tin MTR Station, the well-frequented monastery is built on a steep hillside, comprising five temples, four pavilions, one veranda and one pagoda, all connected by a steep path of 431 steps. Over 500 life-size Arhans – Buddhist saints – line the way up. There are some 13,000 Buddha statues housed through the monastery grounds. 221 Pai Tau Village, Sha Tin. Che Kung Temple 车公庙 Built in honour of Che Kung, a great general from the Song Dynasty, the Che Kung Temple in Tai Wai is hugely popular, especially during Chinese New Year. Construeted at the end of Ming Dynasty and renovated several times since, a giant statue of Che Kung stands in the main hall. A wheel of fortune supposedly brings good luck when the fan blade is turned three times. 7 Che Kung Miu Road, Tai Wai, Sha Tin. Tai Wai MTR Station, Exit B, 10-minute walk. 大圍的車公廟是為了紀念宋代偉大的將軍車公而建的,很多遊客喜歡參觀 車公廟,尤其是在農曆新年期間。這裡有始建於明末,歷經數次修葺,正 殿矗立着的巨大車公像。據說當扇葉轉動三下時,幸運之輪會帶來好運。 沙田大圍車公廟路7號。如何到達:大圍港鐵站B出口,步行10分鐘。

Tsang Tai Uk (Big House of the Tsangs) 曾大屋(曾氏大屋) This historic village compound belonging to the Tsang clan was built in 1847 and remains one of the best-preserved walled villages of the Hakka people. The buildings retain the original granite, bricks and solid timber of the interlinked residential houses and ancestral hall, with a large courtyard in front. Tsang Tai Uk. Shing Mun River and Sha Tin Park 城门河及沙田公园 An scenic riverside promenade along most of the 7-km Shing Mun River, headlined by the expansive Sha Tin Park. The park is a perfect spot for a break from sightseeing. The nicely landscaped green space comes with the usual park amenities of gardens, lawns, ponds embellished with traditional archways, and a children’s playground. 2 Yuen Wo Road, Sha Tin. New Territories Cycling Network: Sha Tin / Ma On Shan to Tai Po 新界单车网络:沙田/马鞍山至大埔 Sha Tin is unquestionably the city’s best-known cycling destination. Dedicated cycle tracks connect Sha Tin to Ma On Shan along the Shing Mun River, and on to Tai Po Waterfront Park and beyond to Tai Mei Tuk. The destination Ngong Ping is a ridge with a surprising grassy meadow overlooking Ma On Shan town and beyond. More intrepid hikers can continue along Maclehose Trail Section 4 to Sai Kung via Pyramid Hill. his month, CityLife reviews what makes Hong Kong one of the world’s culinary capitals, highlights recent trends, especially during the Covid-19 pandemic, and considers dining prospects for 2022 and beyond.

H

ong Kong bills itself as Asia’s culinary capital, and for good reason. Its stellar reputation is borne out by the sheer number of its restaurants (around 15,000), its rich food culture reflected in the diversity and depth of cuisines available, and the acclamation garnered by its restaurants. To wit, for its 2022 edition. Michelin Guide awarded 71 Hong Kong restaurants the coveted Michelin Star, ranking it just behind Tokyo, OsakaKansai, New York City and Paris, all esteemed centres of culinary excellence. A glance at Hong Kong’s Michelin Guide entries reveals that the chosen restaurants show a good balance of local, regional and international cuisines, testimony to the city’s ability to attract accomplished chefs from around the world, a sure sign of a culinary hub. What has helped Hong Kong become such a food heaven? The familiar list comes to mind – an international business hub, a large and diverse expatriate community that helps enrich the dining scene, a local population with a rich food culture who love to dine out and are accustomed to trying out new cuisines, thanks to the city’s East-meets-West cultural heritage.

nd it’s not just all about fine dining! Hong Kong street food is known around the world – fishballs, egg waffles, cheung fan, cuttlefish, deep-fried tofu, you name it. Less talked about is the mass dining market that serves the city’s 7.5 million people with a mindnumbing variety of food at affordable prices. Whether it’s the ubiquitous cha chaan tengs – and the variety therein; fast food outlets such as McDonalds, Pizza Hut and local stalwarts such as Café De Coral, MX, Fairwood, countless noodle and congee shops, or even reasonably priced eateries such as Ebeneezer’s serving yummy kebabs; Hong Kong is truly a foodie’s paradise for affordable food also. Being a global logistical hub also enhances Hong Kong’s standing for great food. As a major aviation hub in the heart of East Asia, direct flights from almost anywhere in the world, and with a robust food importer community, sourcing seasonal and regional ingredients from around the globe is something that Hong Kong does very well, even during the Covid pandemic. Another distinctive local feature is the prevalence of restaurants on the upper floors of tall buildings, a natural outcome of Hong Kong’s high population density and limited land availability, making it the most vertical city in the world. Further driving up the city’s pricey rents is the desire of individuals, office tenants and restaurants for an attractive harbour or city views – which often means at or near the top of a high-rise building. There are even entirely food-focused high-rises. A trailblazer, opened in 2003, was One Peking Road, which remains one of the city’s bestknown restaurant buildings, even as the trend continues unabated. A consequence is that these restaurants located above ground miss out on impulse walk-in traffic and have to rely more on in-person and virtual word of mouth and greater marketing to attract diners, a feature that has help develop a significant market for food-related online review sites such as OpenRice.

o, in Hong Kong, you’ll find all the ingredients of a vibrant and colourful dining hub – a wide variety of foods and cuisines, abundant enterprising restaurateurs and chefs, a highly competitive marketplace that drives change, creativity and responsiveness, and robust and receptive consumers who welcome the expansive choices on offer. Still Hong Kong’s dining environment is not without its challenges. The pricey rents are always a core consideration for any restaurateur. Rents in Hong Kong are amongst the highest in the world; besides increasing menu prices, higher rent means higher fixed costs and the need for higher volume of business to break even – leading to frequent restaurant openings and closings. Also, venue layouts and seating arrangements tend to be much cosier, as outlets seek to maximise their use of space. Finally, service in mass-market restaurants is often brutally efficient, to encourage higher throughput. The other perennial challenge for operators is staff shortages, especially in specific skill areas – a complex problem with multiple reasons that does not yield ready-made solutions. One factor is that Hong Kong is an aging society with a very low birth rate, so lowerskilled labour needed by the restaurant trade is in scarce supply, and most parents discourage their children from working in such low-skilled sectors. Importing overseas staff to remedy the problem can be costly and is difficult and time-consuming. Nonetheless, resilient and inventive restaurant operators have learned to adapt, even if it affects service standards.

More differentiated and innovative cuisines and menu offerings 有差异化和创新性的美食和菜单 On the positive side, we expect the industry to continue offering more interesting menus and to keep at least abreast of global trends in food and dining. In particular, more chef-centric restaurants will open – a reflection of the continuing emphasis on the personality and skill of the chef; we should see more ingredient-based menus being offered, in which the cooking style is tailored more to the ingredients used; we should also see even more fusion of Asian and Western cuisines, beyond the now popular Japanese fusion – expect other regional and Chinese cuisines to mix it up, so to speak. Healthy and environmentally conscious food continues to gain popularity, with plenty of vegetarian menus, sustainable seafood, organic food items, and plastic-free utensils. Emergence of new food districts 新美食区的出现 Demographic changes and the clustering effect mean that new food districts are emerging to augment established areas such as Causeway Bay, Tsim Sha Tsui, Lan Kwai Fong and Soho. For example, Sheung Wan — latterly dubbed as Hong Kong’s coffee hub — and Sai Yin Pun, where trendy dining outlets line the streets above Queen’s Road West, have both become popular destinations for foodies. Similarly in Kennedy Town, scores of cosy pubs and eateries dot Kennedy Town Praya and its side streets. Take-out and deliveries 外卖和送货 Clearly, the biggest impact of the Covid-19 pandemic on the restaurant industry is the explosive growth in food delivery and take-outs, not just here, but globally. Food Panda and Deliveroo are now household names, and more delivery service providers are entering the market. Take-outs are ever more common, amplified by local restrictions on dining out, imposed during the pandemic. Not surprisingly, huge numbers of restaurants have signed up with the delivery services, while new eateries emerge to specialise in take out/delivery and offer small or no-dining areas. This has even affected the street food business. In Tai On Building, a famous street food centre in Sai Wan Ho, vendors offer made-to-order pastas and hotdogs for take out. The restaurant industry faces some looming threats as well. Continued supply chain interruptions could eventually impact the ability to source seasonal ingredients and food supplies from overseas. As a logistics hub, however, we would expect Hong Kong to be much less affected. Of greater concern is inflation – of both food prices and labour costs, which will squeeze the highly competitive market even further, and higher prices will eventually be borne by consumers and pinch their already tight pocketbooks. The greatest threat, however, is the prospect of continuing travel restrictions to Hong Kong from other countries due to Covid-19. Many restaurants rely on patronage by visitors to Hong Kong – for many arrivals, experiencing the city’s food culture is a major reason they come. Moreover, it will also curtail the flow of talent from overseas, whether chefs, restaurateurs or other essential personnel. A vibrant dining culture requires a continuous flow of customers and providers. While the pandemic has hit the restaurant industry and hospitality industry universally, the fear is that other countries will move on with the pandemic and rejuvenate their dining sectors while Hong Kong’s remains closed off to visitors – putting at risk our much-valued reputation as Asia’s culinary capital. In the end, we remain hopeful, given the city’s resiliency and ability to reinvent itself, not to mention its deep-rooted, rich food culture, that Hong Kong will continue to be a place where dining is always an unmissable experience.

oo Cheong Pawn Shop is one of Wan Chai’s best-known historic buildings. Sitting prominently on a busy street corner opposite Southorn Playground, the iconic three-storey pawn shop with its distinctive tong lau balconies, popular in early 20th century, is instantly recognisable. The pawn shop, a designated heritage building, was renovated and converted to The Pawn, an eclectic European restaurant that opened in 2008. Now these historic premises have re-emerged as Woo Cheong Tea House, an upscale Cantonese restaurant. The décor of the two-storey restaurant is opulent and elegant – marbled tiles, plush chairs and sofas, sleek dining tables, and floral wall coverings set against full-length sliding doors framed with ornate lattice windows. This is a dining experience clearly meant to be enjoyed at leisure. The restaurant offers a refined contemporary Cantonese cuisine menu, taking advantage of the abundance of seasonal ingredients around the region. This prime location suggests a clear goal of making the restaurant Wan Chai’s next dining landmark. Our sumptuous meal started with a trio of dim sum dishes: Steamed Fish Dumpling, Pork, Jasmine Tea ($98/3 pieces), Homemade Daikan Puff ($68/3 pieces) and Pan-fried Salmon, Tea-infused Homemade Tofu (488/3 pieces). We liked the texture of the jasmine teainfused skin of the dumpling and the taste of the salmon topped with the crispy infused tofu. Char siu – Woo Cheong Premium Barbecued Pork ($398) came next. The charcoal roasted pork is sourced locally, its meat honey-sweet and tender. Sauteed Prawn ($380), a pretty looking dish in a savoury sauce made from the head of the prawn, followed.

Double-boiled Dried Sea Conch Soup Yellow Morel ($288/person), a tasty soup chockful of nutritious and pricy ingredients was then served. Another classic, Sweet and Sour Pork, Pineapple ($268) followed. The dish is served with popping candy on the side to offer a slightly different sweet flavour, but the meat morsels remain tender. In the home stretch of our meal came Deep-fried Crispy Baby Pigeon, Tea-Cured Pigeon Egg ($168/ piece) – an intriguing dish accented by the pigeon tea eggs; Poached Chinese White Cabbage, Matsutake Mushroom ($138/person), with the cabbage skilfully sliced and arranged, and Stewed Noodles, Shrimp Roe, Abalone Sauce, Spring Onion, Ginger ($268), which was delicious. We wrapped up the meal with a dessert platter of Baked Egg Tart, Bailey’s ($68/3 pieces) – the egg tart filling infused with Bailey’s Irish cream, Steamed Red Date Cake, Coconut Milk ($68/3 pieces), and Steamed Sugar Cane Juice Roll ($68/3 pieces), in which the sugar cane is supplied by the famous Kung Li Sugar Cane shop nearby. The restaurant operates a well-stocked bar with a wide selection of beers, wines, and specialty house cocktails. Both Whisper Oolong, Cold Brew Oolong, Vodka or Gin, Dry Vermouth, Strawberry Gum ($130) and Lap Sang Sour Lap Sang, Siete Misterios Mezcal, Pink Guava, Aquafaba ($130) that we tried are excellent. We greatly enjoyed our dining experience at Woo Cheong Tea House. While the iconic setting is always going to be the wow factor, the food is excellent and thoughtfully prepared and presented. Whether it’s for lunch or dinner, you should check out this historic place for a truly rewarding dining outing.■

he iconic Holiday Inn Golden Mile, located in the heart of Tsim Sha Tsui, has been one of the Hong Kong’s best-known hotels since it opened its doors in 1974. Besides its excellent location, the hotel is also known for its several restaurants, which have served visitors and local guests with distinction over the years. One of them is Osteria Ristorante Italiano, its Italian restaurant that opened its doors in 2009. The restaurant offers a relaxed casual dining venue, serving multi-regional Italian cuisines that include traditional favourite dishes, fresh homemade pastas and genuine Italian pizzas. Osteria’s current Chef Paolo Federici, who is from Gavardo, Northern Italy, has continued Osteria’s culinary philosophy of providing its dining guests with authentic Italian fare at value-for-money prices. We went to Osteria this month to try out the restaurant’s Set Lunch Semi-Buffet menu. The lunch set is priced at $288 person, which includes an Appetiser Buffet, a choice of Main Course, Dessert Buffet, plus Tea or Coffee. For an additional $109 person, the lunch also offers free-flow beverages of Beer, Wine, Juice and Soft Drinks. We started with the buffet, which frankly is a meal in itself. The buffet features an array of vegetables that include several leafy salads, onions, salsify and beans, cherry tomatoes, pumpkin squash and more. The Cold Cuts are excellent, which is what we expect from an Italian buffet – thinly sliced Parma ham, speck ham, porchetta and salami. We also enjoyed the smoked salmon and the shrimp

salad. But it was the cheeses that grabbed our attention – several excellent cheeses soft and hard that include Cacciotti chili, fontina, parmesan from a cheese tub, and a large bowl of soft gorgonzola from which to spoon. We should mention that guests who prefer lighter fare can opt for Mushroom Soup with Truffle Paste in lieu of the buffet. The main courses are equally enticing. The pasta is tasty Fusilli with Braised Short Rib and Green Peas in Red Wine Sauce; the Pan-fried Sea Bass with Beetroot Puree, Fennel, and Baked Leek is nicely prepared; the Grilled Angus Beef Striploin with Roasted Potatoes and Sauteed Broccoli is cooked to order and the beef is tender and juicy, as expected; the final entree is one of Osteria’s signature white pizzas – Pizza with Tuna, Capers, Anchovies and Black Olives. The generous dessert buffet includes Fruits – Pineapple, Honeydew Melon and Watermelon, Tarts, Cakes, Mousses and Tiramisu, of course. The buffet lunch at Osteria was a thoroughly enjoyable experience – relaxed ambience, attentive service, tons of yummy Italian food, all at an excellent price. It is easily one of the best deals in town as far as quality semi-buffet lunches go. So, if you are in the mood for a hearty and appetising meal, either with your friends or family, and spend a most pleasant afternoon sampling Italian delights without emptying your wallet, Osteria is worth considering – we highly recommend it.■

Infiniti C ($$)

Chic cafes serving healthy concoctions of specialty coffees and teas, along with snacks, desserts, and choice entrees are gaining popularity, driven largely by the demand from urban millennials. The newly opened Infiniti C at Harbour City fits the genre to a tee. Located adjacent to the Kid Zone along the Ocean Terminal wing, the airy café exudes a fairly-tale look – a clean pinkish and blue décor with stylish and comfortable furnishings, sleek tables and chairs, and upholstered sofas. Infiniti C serves a contemporary health-conscious, gluten-free menu that includes specialty coffees with coffee beans from several African countries, light salad and fruit dishes, Keto cakes and other heathy desserts – a set-up designed to attract hip, female millennials and their companions. For our visit, we tried dishes from across the menu. Homemade Gluten Free Lasagne ($108) is hot, crispy pasta topped with baked cheese and tasted yummy. A refreshing Homemade Granola Greek Yogurt Bowl with Seasonal Fruit ($72) was good, as was Avocado Burger with Crab Meats ($128). Infiniti C serves a Pizza for One, a gluten-free & Keto dish with its base made from cauliflower rather than flour and with choices of different toppings. We chose Cauliflower with Smoked Salmon Pizza ($138), which has a distinctive flavour and texture, quite different from regular pizzas – but certainly worth trying.

Infiniti C excels in cakes that are baked gluten- and sugar-free, using a cake mix made from Japanese almond flour. We tried two: Fantasy Rose Strawberry Cake and Supreme Chocolate Flourless Cream ($88/piece) and devoured both, guilt-free. Another yummy sweet treat we liked was Nice Cream Waffle Sandwich ($88), which is made of keto ice cream – no milk, only cream and added fresh fruit ingredients. For drinks, we chose Chocolate Overlord, garnished with shaved 100% Valrhona chocolate ($62, vegan $68) a hot chocolate drink that is thick and tasty and Seasonal Kombucha ($78) a keto drink (sugar-free) mojito fermented with jasmine green tea, fresh mint, lime juice, sugar-free tonic water, tonic water and stevia. Infiniti C offers a Cake Set Combo ($328), which includes three slices of cake and two drink options which makes an excellent choice for a leisurely afternoon tea. It’s always good to try out new creative dishes that are tasty, healthy, and nutritious – which Infiniti C manages with aplomb. As a respite from your shopping outing or if you just want to chow down a good meal without feeling guilty, give Infiniti C a visit.

Hong Kong's early photographers had to work hard to take a picture, writes Arthur Hacker

hotography today is ubiquitous. We each carry at least a mobile phone with a camera, and often a compact digital camera or classic SLR. However, in Victorian Hong Kong, owning a camera was comparatively rare as they were not only very expensive but also extremely difficult to operate. When John Thomson went on a photographic safari to China in the 1870s, he needed 18 coolies to carry his equipment. ln this digital age of autofocus, auto-exposure and miniaturisation, not to mention the super-convenient point-andshoot phone camera, it is difficult to envisage the problems faced those photographic pioneers. In Hong Kong at the time, picture postcards were not even available. So how did tourists cope? The answer is that they bought photographs taken by professional photographers. In 1860, two Americans, a Mr Weed and a Mr Howard opened a shop in Hong Kong selling photographs. Inadvertently they established a curiosity that became known as "The Firm". lt was not a firm at all, but a collection of photographic negatives. ln 1861, the partners sold their stock to their manager Milton J. Miller. Miller's portraits of Chinese Mandarins and their families are quite brilliant. He later acquired

some negatives of Peking from Felix Beato, who had photographed the battlefields of the Arrow War. Miller, Thomson, and Beato are regarded as the three great Victorian photographers of the Far East.

ln 1864, Miller moved on and ownership of the operation passed first to his former associate S. W. Halsey, then to a J. A. de Silveira. Later, The Firm was owned by Thomson and William Pryor Floyd. lt operated out of the Victoria Photographic Gallery, at 62 Queen's Road, approximately where Lane Crawford department store stood, until it changed to Zara a few years ago.

ln those days, photographs were printed from glass negatives. Photographic dealers like Floyd and Hong Kong's leading Chinese photographer, Afong Lai, sold prints in their shops. Customers selected the pictures they liked, together with an exotic Japanese lacquered photo album, and the shopkeeper pasted the result into the album, often in no seemingly logical order.

Thomson sold many of his negatives to Floyd when he departed Hong Kong in 1871. As the most famous Hong Kong photographer of the period, his work is particularly valued by collectors. After several more owners, The Firm's negatives are thought to have passed into the hands of Lai, whose company survived until World War Two.

Photography was a hazardous business in those days. Thomson relates that the Chinese looked upon having their picture taken as: "Some black art, which at the same time bereft the individual depicted of so much of the principal of life as to render his death a certainty within a short period of years." There was also a popular theory that camera lenses were made out of babies' eyes. Consequenily, photographers were liable to be attacked by superstitious mobs. Adding to the difficulty was the collodion wet-plate process that was used at the time. lt required a glass plate negative to be sensitised and developed within a few minutes in total darkness. Getting the chemicals just right created even more problems. On a visit to Taiwan, Thomson described how the water was so alkaline on the island that he had to "employ a goodly supply of Chinese vinegar to turn it slightly on the acid side". The final pictures were printed from the glass plates on thin plain paper sensitised with a silver nitrate solution and coated with a layer of egg white and salt solution. All the pictures illustrating this article were produced by this method and are known as albumen prints.■

Censers were popular in the Han dynasty. This goose-shaped censer is life-like. The back of the goose body is latticed, allowing smoke to rise from it. ‘A Thousand Layers of Stomach: A Solo Exhibition by A.A. Murakami’ at Pearl Lam Galleries Hong Kong Until 12 Feb A.A. ‘Lui Shou-kwan: Hong Kong Landscapes’ at Alisan Fine Arts Until 12 Mar Alisan Fine Arts is proud to present “Hong Kong Landscapes”, its sixth solo exhibition for ink master Lui Shou-kwan. Originally the home of the commander-in-chief of the British forces, the museum houses a huge collection of tea ware in Hong Kong's oldest surviving colonial building. Centre for Heritage and Arts The revitalised Central Police Station compound, the largest heritage project in Hong Kong, has opened its doors to the public as Tai Kwun – Centre for Heritage and Arts. The CPS compound comprises 16 historic buildings, including three declared monuments (Central Police Station, Central Magistracy and Victoria Prison), on a 13,600-square-metre site in the heart of Central. An international-grade art gallery and an auditorium have been added to contribute to the adaptive reuse of the site. The heritage site includes new art galleries and the Parade Ground and Prison Yard. Omicron is Sigma – Hong Kong Needs an Off-ramp Road Map e postulated in our last Parting Thoughts column in W January that Hong Kong may need to wait for the arrival of a much milder Covid-19 variant, like a yet-to-

be-named Sigma, in order to do away with its zero-covid policy, which the government has pursued with – until recently – great success, when community outbreaks of the Omicron variant began to escalate. As we go to print, several thousand residents are in quarantine camps for observation as close contacts of carriers, and several buildings of a public housing estate are ordered lockeddown, a development we had fervently hoped to avoid. Recognising how easily transmissible but seemingly milder the Omicron variant is, and that many experts predict the virus is here to stay, perhaps we should rethink waiting for Sigma to arrive. Specifically, perhaps Omicron is Sigma, after all. And therefore, could Omicron be the proverbial off-ramp that Hong Kong so desperately needs and awaits? And if so, how might we go about charting a road map for an off-ramp strategy to suit Hong Kong, one acceptable to the community at large as well as to its key stakeholders? From its initial outbreak in South Africa, the Omicron variant has travelled the globe at unprecedented speed, infecting a sizable chunk of the global population in just a few months. Affected countries include the UK, US, and all of Europe, with large percentages of their populations having already been infected. Remarkably, Omicron infections seem to have already peaked in South Africa, UK, Israel, and several European countries, with the US expected to peak soon as well. Mounting evidence and data collected from these countries suggest that Omicron has proven a much milder individual health threat than its predecessors such as the Delta variant. Besides being extremely transmissible, salient features of Omicron are worth noting:

1. Omicron infects both vaccinated and unvaccinated

population with equal fervour, even amongst those that have received a third or fourth booster shot.

2. A significant percentage of those infected are asymptomatic, showing no or little signs of illness.

3. The observed symptoms tend to be milder, with the vaccinated ones seem to suffer fewer or less severe symptoms.

4. Hospitalisations and deaths do occur for infected

patients, albeit at order-of-magnitude lower rates than the Delta variant, for example.

5. Like other variants, Omicron overwhelmingly

affects the elderly, especially those with comorbidities and secondarily medically high-risk groups with serious co-morbidities; the impact on other age groups is much less severe and deadly, especially among young people and children.

These observed facts have led many Government health officials and experts to conclude that the Covid pandemic may finally be entering an endemic state in which the population will learn to live with it as they do with other infectious diseases such as seasonal flus. Several countries have begun to relax social distancing measures and travels restrictions to prepare for the next stage. What about Hong Kong then? On purely health policy grounds, a compelling case can be made for Hong Kong to start moving away from its zero covid policy goal. It is becoming less and less sustainable as other countries return to normal. The longer Hong Kong stays with its policy, the further it will fall behind in its effort to re-join the rest of the world economically, as severely hit sectors such as hospitality, airlines, trade fairs suffer irreparable damage. To be fair though, transitioning from a highly successful zero policy goal, for which the Hong Kong government and people were globally lauded, to a policy that reopens the city and allows infections to occur on a large scale, will be difficult mentally and physically. Our society is heavily invested in the infrastructure and protocols to keep the virus out.


Furthermore, inducing or allowing Covid to spread in order to develop a working herd immunity – which is what an endemic state entails, amongst a population with minimal prior infection, is an uncharted course that has little precedent. As such, even if the compelling case for moving away from zero covid policy is accepted, any sensible and acceptable transition road map must address several serious concerns, some specific to Hong Kong, to secure the necessary community support. These concerns include:

1. Low vaccination rates among the elderly: Even if the vaccine does not prevent infection, for the elderly and the medically vulnerable, getting vaccinated does minimise the chance of getting severe symptoms. Regrettably, vaccination rates for the elderly in Hong Kong are shockingly low, at below 50%, although there has been an uptick of vaccinations by this group with the occurrence of Omicron outbreaks. Higher rates would be more helpful and lessen severe illnesses.

2. Difficulty to isolate the elderly from the rest of the

population. A strong argument often made by advocates to keep Covid away is that many of the city’s elderly live with their children and grandchildren, making it wellnigh impossible to keep them from being infected once Omicron spreads widely. This is a valid concern that must be addressed.

3. Hospitals potentially overrun with Covid patients:

Another real fear is that if Covid spreads out of control and hospitalisation rates inevitably mount, it will overwhelm the city’s capacity to treat the sick.

4. Easing and reversing the community’s Covid-19

Clearly, any transition plan must address these and other real concerns. Yet there is reason for confidence that they can be resolved. In a nutshell, the predominant issue boils down to the need to protect the elderly and those at high medical highrisk to minimise their exposure to and impact from Covid. There are already best practices from around the world for us to learn from. These include methods of frequent and close monitoring, regular provisions of prophylactics, early detection and treatment, and a focus on timely isolation. Such measures would cost a fraction of what the government is currently spending to keep Covid at bay, not to mention the economic costs inflicted on Hong Kong. This we know – once it sets its mind to a goal, the city’s highly competent government will most likely achieve it. Meanwhile, as the current zero Covid policy remains in force, the government should at least begin to create the impetus for change. We humbly suggest three measures: first, to incrementally and flexibly relax the currently strict quarantine protocols and travel restrictions, perhaps aligning them with the latest facts on the ground; second, to begin planning a road map, a detailed transition plan with concrete steps that can finally move the city, once and for all, away from its zero covid conundrum; and third, to convince doubters that Omicron is a coronavirus Hong Kong can live with after all. Often, fear is itself worse than the supposed danger, which could well be the case with Omicron. Action is needed now: time is not on our side. ■

Hong Kong is an amazing yet small place. It’s so convenient to get around because of its superb public transport. Hong Kong is rich in both Chinese and Western cultures; visitors can conveniently experience the city’s diverse and distinct cultures. Part of that is the city’s rich food culture. My favourite thing to do in Hong Kong – the “Food Paradise” – is to seek out different restaurants and explore all kinds of cuisines. 香港是一個面積小但神奇的地方,有一流的公共交 通,出行非常方便。香港是中西文化薈萃之地;遊客 能體驗到城市獨特而多元的文化,還有這座城市豐富 的飲食文化。我在香港最喜歡做的事情是探索各種美 食,因為香港被稱為“美食天堂”。

Observation Wheel and AIA Vitality Park at the Central Harbourfront. It now costs only $20 to ride the Ferris wheel, which is a real bargain. The view from the observation wheel is quite stunning and different.
