A wealthy merchant on a mission, nicknamed The Rupert of Debate, was possibly the only honest taipan Hong Kong ever saw, writes Arthur Hacker 亞瑟 . 克赫告訴大家,一個綽號為「善辯的魯柏」的有錢商人,他可能是有史以來香港所見 過最誠實的「大班」。
In Victorian times, it was the fabulously wealthy taipans who really ruled Hong Kong. These merchant princes had been largely responsible for starting the Opium War, that resulted in Hong Kong becoming a British possession. Soon after the British took control of the colony they established the Legislative Council to run the place.
The taipans lobbied the British parliament to appoint "two gentlemen of the commercial body" as unofficial council members. ln 1850, Joseph Edger and David Jardine — the taipan of the leading hong (company) Jardine, Matheson & Company — were appointed. However, Jardine soon "ceased to attend meetings because his time was too valuable to waste on trivialities". ln 1855, the number of unofficial members increased to five. The new members included John Dent, the taipan of Dent & Company, which was the second largest hong, and the bitter rival of Jardine, Matheson. Unlike David Jardine, John Dent was extremely active. He blatantly misused his position to promote his company's interests and to block any piece of legislation that affected the value of his property. Hong Kong's first well-meaning experiment in democracy was in trouble.
Sir Richard Graves Macdonnell became the fifth governor of Hong Kong in 1866. A hard man, he resisted attempts by the taipans to manipulate him. He despised them and made no secret of it.
When Dent & Company went bankrupt in 1867, Macdonnell replaced John Dent with a Scotsman called Phineas Ryrie, who was probabIy the only scrupulously honest taipan in Hong Kong, The Hongkong Telegraph stated that unlike other taipans, Ryrie "occupied the unique position of being almost the only director of a public company who had not soiled [his] hands with share gambIing".

thorn in the side of governors, presidents, prime ministers, kings and emperors, Ryrie was one of this breed.
The Hong Kong Daily Press explained: "Mr Ryrie was a very active member and was commonly known as the Rupert of Debate, owing to the vigour and persistency with which he criticised the policy of the government where it seemed to him to call for criticism and his steadfast advocacy of what he conceived to be the interests of the public."
This nickname referred to Prince Rupert of the Rhine, a particularly rash generaI, whose onIy known tactic was to charge straight into battle, Like Rupert, he occasionally won. Ryrie was a very popular public figure. The China Punch, a short-lived satirical magazine, called him "Funny as Riley" and published the only known pictures of the great man.
In 1884, Ryrie was elected to be the first chairman of the Hong Kong Jockey CIub He was a most unusual racing man because he was not a gambler He claimed that he had only made one bet in his life. It was a five-dollar wager with William Keswick, the taipan of Jardines.
Apart from horse racing, Ryrie loved shooting. For years, Ryrie and his friends annihilated the bird life of Hong Kong; but being good British sportsmen, they only slaughtered snipe, woodcock, quail, grouse and maybe the odd unfortunate hairycrested drongo during the bird shooting season, In the 1870s, Ryrie introduced rabbits to Stonecutters Island for the purpose of shooting them for sport, UnfortunateIy the rabbits, falled to“breed like rabbits” and the scheme was abandoned. There was a snake farm on the island and opinion is divided as to whether it was the snakes or the stonecutters that ate the rabbits. ■

When we learned that Bistecca Italian Steakhouse, a popular dining spot in the heart of Lan Kwai Fong, was offering an 11th anniversary menu, our first reaction was, has it been only 11 years? It feels like Bistecca has been a LKF institution for much longer.
A flagship restaurant of Dining Concepts, a prominent local F&B operator known for its stable of sophisticated international dining brands and concepts, Bistecca is undoubtedly one of its most successful outlets. Ever since it opened, Bistecca has attracted a large customer base, drawn to its daily antipasto lunch buffet, its weekend brunch, and its à la carte menu, which proffer excellent down-home Northern Italian dishes and steaks at reasonable prices. The rustic steakhouse also sports a wine cellar with an extensive collection of champagne and wines from Italy and France.
The creation of head Chef Marc Benkoe, Bistecca’s 11th Anniversary Menu (HK$748/person) is a five-course affair featuring some of Bistecca’s most popular dishes plus an option for wine pairing (five wines; HK$288/person). The meal started with Buffalo Mozzarella, Basil Pesto, Marinated
Heirloom Cherry Tomatoes, Oregano, Crispy
Prosciutto and Balsamic Caviar, paired with a reliably refreshing Veuve Clicquot “Yellow Label” NV France Champagne. We love the mozzarella and its counterpoint flavour to the prosciutto plus the pert seasoning of the pesto sauce – it is a good start.
Seafood Guazzetto, Traditional Italian Mixed Seafood Stew, Toasted Baguette, Tomato and
Herbs, an appetising and hearty dish, was next. The zesty tomato-based soup is appetising and goes well with the white wine – a 2018 Tenula Terre Nere Etna Rosato from Sicily, with its distinctive volcanic mineral flavour typical of the Mount Etna region.
Next was Porcini Risotto, Cepes Mushroom, Parmesan, Truffle Oil and Chives, paired with a
2017 Jean Chartron “Vielles Vignes” Bourgogne
Burgundy. The dry, balanced white wine pairs well with the mushroom aroma-filled risotto. It is a filling and tasty dish.
Beef was always going to be the main focus of this visit. For this special meal, our beef dish was
6oz Tenderloin and Foie Gras, Scallion Mashed Potatoes, Thai Asparagus, Red Wine Onion
Demi-Glace. Both the foie gras and beef were grilled to perfection, and the red wine onion sauce subtly enhances the flavour of the meat. A 2014 Cantina del Pino Nebbiolo delle Langhe from Italy’s Piedmont region, a dry, fruity red wine with a pleasant tannic finish, is paired with the meat.
We finished the sumptuous meal with a rich and yummy dessert, Chocolate Fondant, Runny Chocolate Centre and Vanilla Ice Cream, paired with a Villabella Grappa di Amarone, from Veneto, and a fitting end to a lovely occasion.
Our gourmet journey to Bistecca was thoroughly satisfying. The restaurant hits the sweet spot by offering a classic Italian dining experience at reasonable prices. We reckon that this dining favourite will be around to celebrate a lot more anniversaries.

A Chrysanthemum Tang Reunion 菊香團圓
China Tang and Shanghai Tang jointly create an autumn gourmet dinner masterpiece. 唐人館與上海灘聯手打造秋季美食晚宴。
In Hong Kong’s fluid and competitive dining landscape, top-tier restaurants are constantly on the lookout for that extra wrinkle to lure customers to their premises. Cross-branding with non-food products offers a multitude of enticing possibilities. Thus, when offered the chance to try out a specially curated thematic dinner, “Chrysanthemum Quintet”, in a collaboration between China Tang and Shanghai Tang, we jumped straight in.
First, a bit of nostalgia. As you are likely aware, the two brands share a common lineage: both China Tang – one of the city’s finest Chinese restaurants, and Shanghai Tang – a Chinese fashion powerhouse, were conceived and created by the late entrepreneur Sir David Tang. Of course, Sir David was known for his flair for the opulent touch. So a reunion of the two venerable brands was bound to produce something special.
This autumn, Shanghai Tang unveils its Shanghai Tang Chrysanthemum Fragrance Collection, inspired by the beauty and fragrance of swathes of purple and yellow chrysanthemum blooms on the mountainsides. The collection includes scented candles, scented diffusers and room spray.
The five-course special menu created by Executive Chef Menex Cheung, featuring chrysanthemum as its star ingredient, is available until 8 November. Each dish is infused with a distinct aspect of the chrysanthemum fragrance, to explore all that this deep and much-loved scent has to offer.
We started with the appetiser – Chilled Noodle,
Seafood, Sesame Sauce, Chrysanthemum
in which four-coloured noodles are cooked in chrysanthemum-steeped floral water and chilled, then served with seafood and sesame sauce on a bed of chrysanthemum petals. The light fragrant scent of chrysanthemum is distinctive when opening the plate cover; the cold noodle is refreshing and tasty.
A subtly delicious soup, Double-boiled Consommé, Bean Curd, Chinese Cabbage, was next. The chickenbased consommé was extracted from floral water from steeping dried chrysanthemum and double-boiled with baby Chinese cabbage and a meticulously cut chrysanthemum-shaped silken bean curd.
Two meat dishes ensued. First came Wok-fried Saga Wagyu Beef, Deep-fried Whole Chrysanthemum, in which the diced and wok-fried beef is presented on top of a deep-fried chrysanthemum. The succulent beef infused with chrysanthemum scent tasted heavenly. We enjoyed a lovely Burgundy, the 2017 René Bouvier MarsannayLesLongeroies, to complement the beef.
Sesame Chicken, Seafood Paste, Quinoa,
Chrysanthemum was also a treat. Boneless local Huxu chicken is stuffed with a seafood paste mixed with cuttlefish, shrimp, fresh chrysanthemum, Chinese celery and water chestnuts and steamed and cut into pieces, then drizzled with Korean chrysanthemum wine and a special chrysanthemum sauce. The tender chicken is absolutely delicious.
For desserts, we enjoyed a photogenic Chilled Chrysanthemum Tea Pudding, Imperial Bird’s Nest. The pudding’s tea flavour is distinctive. The bird’s nest infused with chrysanthemum tea is then poured over the pudding to create a visual masterpiece.
The Chrysanthemum Quintet (HK$1288) proved to be an exquisitely delightful meal. As part of the promotion, guests who order the special menu will receive a voucher for Ginger Flower, Bamboo or Chrysanthemum Room Spray (valued at HK$380) at Shanghai Tang; Shanghai Tang customers with net spend above HK$1,200 receive a 20% discount voucher when ordering the Chrysanthemum Quintet.

Jean May, a new French bistro in the heart of Wanchai, is clearly a labour of love. Founded by Michelin-star trained chef Tiff Lo and her brother Ramon, Jean May, named after their grandmother, aims to serve classic hearty and wholesome French food in a comfortable and relaxed setting. A Cambridge University graduate and banker who belatedly discovered her passion in cooking, Tiff brings with her impressive credentials, having studied at the Le Cordon Bleu Culinary School in London and worked with several 3-Michelin-Starred chefs, accruing over a decade of valuable hands-on experience. Jean May offers the perfect venue for Tiff to showcase her own interpretation of French fare.
The cosy restaurant, which can seat around 30 people, offers a seasonal menu of Tiff’s favourite dishes plus daily specials. The emphasis is on serving delicious comfort food that embodies the essence of French cooking. For our meal, we sample a wide selection of dishes. For snacks, we had Oyster, Cucumber Horseradish, Dill ($58 each) and Chicken Liver Parfait, Red Onion ($78) which is excellent – the liver is slightly sweet, smooth and tasty – a real treat.
For starters we had Summer Salad, Walnuts, Parmesan ($98) – light and absolutely delicious; Razor Clam, Parsley, Garlic ($220); and Seabream Carpaccio, Sauce Vierge ($176), in which the carpaccio’s flavour is nicely enhanced by the citric sauce vierge.
Other dishes we tried included Charred Threadfin, Potato Salad ($138), which is excellent and Country Terrine, Pineapple Chutney – another innovative, tasty dish.
For the main course, we headed for one of Tiff’s signature dishes, Duck Breast, Spiced Honey, Carrot ($312). The duck breast is tender and flavourful, its flavour accented nicely by the spiced honey. We can safely say that this dish would sit well at any Michelin-starred restaurant, a testament to Tiff’s pedigreed experience.
For desserts, we had Dark Chocolate Choux ($98) and Honey Madeleines ($15/piece), both of which are yummy and hit the spot.
We enjoyed our visit to Jean May. We are confident the restaurant will be a success and a popular talking point among the foodie crowd. We highly recommend you give it a try.

Mana! SoHo
It came as welcome news to the growing vegetarian community when Mana!, a well-known vegetarian restaurant, announced the opening of its biggest outlet yet in the trendy SOHO neighbourhood above Central. The brainchild of noted proprietor Bobsy Gaia, a pioneer in operating ecofriendly, plant-based dining outlets, Mana! offers an extensive vegetarian and vegan menu, uses only recyclable, plastic-free and compostable materials, and encourages guests to their own trays for recycling.
The secret of this restaurant’s success, though, has always been its ability to serve delicious plant-based dishes that are attractive to diners of all preferences. And the new and larger venue allows Mana! to fulfil that potential by offering guests both a dining venue and the “Zen Den” – a dedicated social hangout space for the health conscious and enviro-friendly community.
For our outing, we sampled quite a bit of the Mana! menu. We first had the flatbread, a signature Mana! item. Ours was Mana!STE ($95/full, $50/ half), flatbread with crispy tempeh, grilled tofu, roasted cauliflower, pickled peppers and tahini.
For salad, we chose Mezza Box ($120), which is hummus, baba ghannouj, olives, pickled peppers and kale salad, with flatbread on the side. The Mezza Box is both tasty and filling. We then had Mana!’s famous Flatzzas, which is a half-flat bread, half-pizza creation. Ours was The Shakti ($130) – vegan mozzarella cheese, roasted cherry tomatoes, portobello mushrooms, rocket and black olives, with chipotle BBQ sauce.
We also tried a classic Mana! burger, The Babylon ($90) which is homemade bean patty with mushrooms, beetroot, tempeh, garlicnaise and ketchup. The burger is both tasty and nutritious. For dessert, we had the Coconut Cake ($60/piece), which is raw, vegan friendly and gluten-free, and fit for anybody.
Mana! serves a wide array of drinks including an Earth Juice ($60, beets, carrot, celery), that we chose and Mana! ($50), which is flat white coffee infused with organic raw cacao butter. Mana! also serves organic and vegan beers and wines.
Our experience at Mana! was enlightening. To borrow one of Mana!’s 20 prominently displayed mantras, Eat Like it Matters. And we certainly did.

Sugar
Our visit to Sugar, the rooftop bar at the upscale East Hong Kong hotel, proved to be a delightful outing. While not exactly hidden, the hotel nestles discreetly in the heart of Tai Koo Shing, one of the city’s largest private housing estates (see also our feature story on page 10). Upon entering the bar, we were greeted with stunning views of Tai Koo Shing, the expansive Victoria Harbour, Kowloon, and the looming mountains beyond – a most pleasant vista.
Since it opened, Sugar, which includes a rooftop bar, a large lounge, and a splendid open deck, has become a popular watering hole for office workers from nearby Tai Koo Fong and for local residents. A design facelift in 2018 further cemented Sugar’s reputation as a popular gathering place and a desirable venue for events, weddings and banquets.
We were there to try out Sugar’s new cocktail promotion – “Flavours of Hong Kong”, which presents ten cocktails created to reflect Hong Kong’s East-meetWest cultural influence by blending local delicacies and foreign flavours. We could barely wait to try.
All the drinks take colloquial Chinese names. The several we tried included Jaa Sei Mei, a tea cup–sized cocktail concoction, Yuen Yeung, a popular coffee and tea mixed drink, Yum Cha, a cocktail served with a bamboo steamer, and Yeung Ji Gum Lo, a cocktail offtake from the popular mango sago cream dessert.
Each of the drinks was not only visually appealing, but also tasted refreshing and balanced, as the mixologist does a skilful job of infusing alcohol with local elements while retaining all the flavours. The cocktails are priced from $120 to $180.
Sugar also offers a snack menu to accompany the drinks. We had Vietnamese Prawn Net Spring Rolls ($110) and Pork & Vegetable Dumplings ($90), both of which are tasty and hit the spot.
Sugar turns out to be a pleasant revelation. It’s an ideal hangout for drinks and relaxation amidst a stunning setting. We highly recommend it.

Tai Kwun Centre for Heritage and Arts
The revitalised Central Police Station compound, the largest heritage project in Hong Kong, has opened its doors to the public as Tai Kwun – Centre for Heritage and Arts. The CPS compound comprises 16 historic buildings, including three declared monuments (Central Police Station, Central Magistracy and Victoria Prison), on a 13,600-square-metre site in the heart of Central. An international-grade art gallery and an auditorium have been added to contribute to the adaptive reuse of the site. The heritage site includes new art galleries and the Parade Ground and Prison Yard. Entry is free of charge, however places are limited, especially during peak times, and visitors are encouraged to get a Tai Kwun Pass, which guarantees access. 10 Hollywood Road, Central. 11am – 11pm. http://taikwun.hk

Hong Kong Space Museum Hall of the Cosmos and Space Exploration
Covering a total area of 1,600 square metres, the "Hall of the Cosmos" and "Hall of
Space Exploration" house a hundred new exhibits, of which about 70 percent are interactive. With the aid of interesting hands-on exhibits and advanced equipment coupled with lighting effects and environmental decorations, the exhibition vividly introduces astronomy and space science. The "Hall of the Cosmos" showcases the Universe from near to far, travelling from the solar system that we are living in, to the stars, Milky Way and galaxies further away and exploring the science and evolution of the universe all along the way. The "Hall of Space Exploration" depicts the development of space exploration and space technology. Closed on Tuesdays (except Public Holidays).
