Refried Bean Casserole

From Chef Megan: This makes a great and quick weeknight vegetarian meal that the whole family will love.

Ingredients

30 ounces Refried Beans ( vegetarian, black bean or homemade are all great options)

1 jar salsa, whatever spice level you prefer

6 - 8 flour tortillas

1 cup cheddar cheese ( vegan cheese or omit cheese all together to make it a vegan dish )

Guacamole or smashed avocado ( optional )

Tortilla chips optional )

Sour cream or plain Greek yogurt

( optional )

Extra salsa ( optional )

Instructions

Preheat oven to 400 degrees. Mix refried beans and salsa together in a bowl.

Spread 1 / 3 of the bean mixture into the base of a baking dish.

Sprinkle 1 / 3 of the cheese, if using, on top. Cover with tortillas.

Break the tortillas apart to ensure the beans and cheese are completely covered.

Repeat this step 1 more time.

Spread the last 1 / 3 of beans on top of the dish and sprinkle with remaining cheese.

Bake for 20 minutes or until the beans are bubbling around the edges.
