Russian Coffee & Tea Industry Event 2016: tight program and the new champions MARCH, 1–3, 2016, ECC SOKOLNIKI (MOSCOW) HOST THE RUSSIAN COFFEE & TEA INDUSTRY EVENT 2016 (RUCTIE) RUCTIE is the key industrial event for production chain from bean and leaf to cup, which consisted of conferences, exhibitions and professional competitions. It can be considered as the largest industry event in Russia and other CIS countries. Russian Coffee & Tea Industry Event in 2016 was attended by more than 4000 experts in the field of tea and coffee, technologists, producers, distributors, owners of coffee shops, tea clubs and shops, baristas and tea masters. More than 50 companies from Russia, Great Britain, Germany, Italy, Korea, Peru, Switzerland, Sri Lanka, Ethiopia and Japan represented rheir products and services at the RUCTIE. Within the RUCTIE the 6th Moscow International Coffee Forum and the 5th Moscow International Tea Symposium took place where more than 50 seminars, workshops and tastings were held. The central themes of the conference program were: Import substitution and domestic raw material base, Situation on the Russian market of coffee and tea, Trends in Food, The Russian consumer in crisis and others. Among the speakers there were representatives of business and industry associations, the Ministry of Agriculture of the Krasnodar Regione (Vladimir Grishko), Russian Diabetes Association (Mikhail Bogomolov), research companies (Euromonitor International, Nielsen, NDP group, GFK). Presentations were made by the General Sales Manager Food&Beverage CFBU Kai Wulff and Product Engineer Food and Beverage Denis Ingildeev of Glatfelter, the Representative of coffee department Marina Sedyki and Head of Sales Business Unit Coffee Christoph Ziegler from the company Buhler AG, Export manager of La Marzocco Andrea Kurtarelli invited by Franco company, Exclusive distributor of Probat Oleg Kondaurov, Discaf company representative in Russia Andrei Kurbatkin, AkvaBrit company training manager Lyudmila Bachinina and Business coach Larisa Zorina. The Practicum was full of unique educational seminars. There were activities made by representatives of the Institute of Puer Tea, Swedish specialist Johan Aglen invited by Coffee Paradise, Hiroyuki Mori from Japan Association for Trade with Russia and the Newly Independent States (ROTOBO), Viktor Kuznetsov, Olga Karakozova and authorized SCAE trainer Ivan Makarenkov. In the zone of Tasting lab visitors could try different varieties and types of coffee and tea, what was being prepared right in front of them. Under the guidance of an expert Andrew Nikitin there were held tastings of Krasnodar teas and willow-teas. Coffee cuppings were conducted during all days of the RUCTIE by specialists from KLD Coffee Importers, Kafema and Cocar. Sponsor of the Tasting Lab was the company AkvaBrit. Lectures and seminars on RUCTIE were complemented by the work of Factory roasting. In this special zone visitors can get acquainted with the work of a roasting equipment, get valuable tips from experts, as well as pick up a sample of freshly roasted coffee. Sponsors of the Factory roasting made were: DiScaf, Greenkof, Bühler AG, KLD Coffee Importers, Aris-pack. At a special zone called Brew Bar specialists in the field of coffee and tea treated visitors with delicious drinks. The sponsors of the zone were: Aleph Trade, Lalibela Coffee and the resource !Live:) ibodr.com and HARIO. Disposable cups for this and other zones were provided the sponsoring company Metro Cash & Carry. Bunn Company acted as technical partner of the exhibition, providing boilers and grinders, and the Voda Online company provided RUCTIE with the necessary water. Sugar and chocolate for event was provided by the Rosshokolad company. In addition to the exhibition, conference sessions and practical educational programs on RUCTIE there were the final stage of the national professional competitions, which brought together a huge number of young people. The winners of the final qualifying round of the Tea Masters Cup Russia were: Tatiana Deynega (Tea Preparatin category), Ustinya Kosterkina (Tea Pairing category) and Anna Belova (Tea Tasting category). The panel of judges this year consisted of: Denis Shumakov, Aliona Velichko, Shamal De Silva, Denis Rudenko and Maria Semeniuk. Carrying the championship on a such high professional level was possible thanks to the sponsorship of companies: Orimi Trade Group of Сompanies, Embassy of Sri Lanka in the Russian Federation (represented by the Sri Lanka Tea Board), Rusteacoffee Association, Bunn company, Voda Online company. Within the RUCTIE was also held the final round of the first professional championship of tea mixology – Althaus Mixology, organized by the Alef Trade company. The

first place in this competition took David Stenshin (Duran Bar, Moscow), who won a trip to Sri Lanka. The organizers of RUCTIE are presented by business magazines Coffee & Tea in Russia / Coffee & Tea International and Rusteacoffee Association. Invaluable assistance in conducting activities was gotten from volunteers of chain of coffee houses Shokoladnitsa and students of the Institute of Hospitality and Tourism RUDN.

Aftertaste of the Tea Masters Cup Belarus

February 21 was the date when for the second time Minsk hosted national Tea Masters Cup Belarus. During this day the hotel Beijing in Minsk, which hosted the championship, was transformed into a real tea house with two thousands tea lovers who came there just to see the event and participate in the program. “I’m happy that every year we can see a growing interest to this event from both the tea companies and shops, and consumers of tea”, – said the organizer of the National tea competition, head of the Tea studia Aliona Velichko. 11 people participated in the competition. They were amateurs and professional tea specialists from Minsk, Vitebsk and Brest. The opening ceremony of second TMC in Belarus was held in the afternoon. From the very start the first participant of Tea brewing, Aleksey Kupryakov from Brest, surprised everybody with the art project Belarusian tea ceremony. Each participant was unique. But the victory went to Victoria Borisovets from Minsk who conquered the hearts of judges with her sincerity and skillfully brewed oolong Teguanin and Ali shan. During the break Japanese Culture Center Hagakure showed the Japanese tradition of brewing tea (Thya No Yu). At parallel stage throughout the whole day there were organised workshops for brewing green tea, oolong from Chaozhou, boiling bamboo tea from India, making Puer by the method of Lu Yu, making tea in siphon, the preparation of iced tea. There was conducted a seminar Tea and Health guests learned a lot of interesting facts about tea bags and teas with fruit and floral additives and willow-teas. At the tasting area it was possible during all day to try different teas of brands Basilur, Ahmad, Tea Collection, as well as teas from the Tea studio of Aliona Velichko, stores Gurmans, Tea-mail, VkusnoChay, Tea leaf, Ivan-tea, online stores Teashop.by, Tea.by.

People didn’t only taste the drink, but also were keenly interested in what kinds of teas existed and how to brew them right. Also guests of event could learn how to play the Japanese game GO, cook gingerbread in Slavic tradition, paint hands with henna, get acquainted with the work of the Belarusian potters. For children there were organized creative activities. When the pairing started the guests of the championship watched with interest the participants’ performances and even wrote down their ideas. After all, the tea masters presented tea with snacks that can be prepared in advance. So, Elena Kostyukevich served white tea and roll with an apple jam and pastes of a pine cone. Yulia Kirillova combined red Chinese tea Tszintsyunmey with sandwiches with blue cheese and honey. Lily Kuksar surprised everybody with tea B-52, connecting Da Hong Pao with milk, and serving it with sweets. However, the best combination of taste, according to the jury, was found by the bartender Alexander Brajnikov from Minsk, and he became the winner. He prepared a Japanese tea matcha with frothed milk and cookies Pti Shu. Representative of the Turkish delegation Hasan Onder during the break told about the tradition of tea drinking in his country and showed how incendiary Turkish tea ceremony can be. Tea tasting category was combined with performances of Indian dance studio Navaratna, Chinese Theatre Meihua and Ivan Krivonos played Hangu. Alexey Kupryakov was the best to cope with the task. Thus, Victoria Borisovets, Alexander Brajnikov and Kupryakov represents Belarus at the international tea Championship in Seoul in summer 2016. The trip to South Korea is paid by the organizers. The head judge of the championship – the tea expert from Russia Denis Shumakov said it was difficult to determine the winner: “The overall level of the tournament was equal, but all the performances were very different. All participants were fun to watch, interesting to try their teas and snacks“. In their turn, the organizers of the Tea Masters Cup Belarus thanked all of partners, Russian Tea Company stores Tea-mail, Gurmans, VkusnoChay, Teashop.by and Tea.by, and especially the official partner – Ceylon tea brand Basilur for supporting such an important event for the world of tea. Special thanks to the hotel Beijin for the opportunity to hold the championship in the walls of a five star hotel.

Tea Masters Cup Russia

TMC Russia was held on 1–2 March at the international coffee and tea conference and exhibition Russian Coffee & Tea Industry Event. The Russian final round winners are: Tatiana Deynega (graduated from the tea school Chaism.pro, the Ural region) – in the category Tea preparation, Ustinya Kosterkina (Chaynaya Visota, Moscow region) – in the category Tea pairing and Anna Belova (SA Classic, St. Petersburg region) – in the category Tea tasting. The best masters of Russia represents country in international competition Tea Masters Cup International 9–10 June 2016 in Seoul (South Korea). All participants received prizes from the general sponsor – Orimi Trade Group of Companies and the Sri Lankan Embassy in the Russian Federation (represented by the Sri Lanka Tea Board), and the winners received also gifts from the sponsor company Bunn and partners RUCTIE – Internet-shop Senor-Porcelain and the company Rosshokolad. As part of the panel of judges this year were: Denis Shumakov, succeeds to perfectly cope with the duties of the principal and technical judges, and moderator, Aliona Velichko, filling the championship with a special atmosphere of friendliness and positivity, specially arrived from Sri Lanka expert for tea Shamal De Silva, an unsurpassed wine ex-

pert Denis Rudenko, whose objective opinion made a certain balance in evaluation of tea professionals, as well as Maria Semenyuk, who supported to the organizers with her presence at the championship and preparation to the judging in a fairly short period of time. Carrying Championship on a high professional level, it was made possible only by the sponsorship of companies: Orimi Trade Group of Companies, constantly providing full support to the development of tea industry and tea culture in the country and for the second time taking part in the project TMC Russia, Embassy of Sri Lanka in the Russian Federation (represented by the Sri Lanka Tea Board), which in addition to the financial support provided teas for the competition, as well as Rusteacoffee Association, acted as the official sponsor of the event. Technical Partnership took over the company Bunn, granted for the championship boiler, and the company Voda Online, provided with water, which was used in the work of the participants and judges.

Tea Masters Cup Latvia At 12.00 pm, 19th of March, 2015, on the top floor at main stage of Mercure Riga Centre Hotel, Latvia officially hosted the 3rd Tea Masters Cup Latvia 2016 (TMC LV 2016). Leading persons of TMC LV 2016 were: Yura Podusov – Official representative and host of Tea Masters Cup in Latvia, founder of XchaiRiga; Gundega Silniece – Host of TMC LV, Co-Founder of Illuseum. The seven judges of TMC LV 2016 were Denis Shumakov – Head and technical judge of TMC LV 2016 (Russia); Oleg Mezhecky – Main Judge (Latvia) Feng Shui Instructor, represents The School of Form; Lolita Vasilyeva– Main Judge (Latvia) President of Baltic Tea Association; Sergey Khorolskiy – Main Judge (Russia) President of brand-tea trading company Turqouise Tea; Otto Koblass – Main Judge (Poland) Represents tea-brand trading company Red Seal Tea in Poland; Vladimir Naumov – Main Judge (Estonia) Represents teabrand trading company RST in Estonia; Keta Caryowa – Main Judge (Latvia) Founder of atmospheric tea club Kama Tea Hub. Tea Masters Cup Ukraine Emotions still boil, discussions still on the air, but it is time to sum up Tea Masters Cup Ukraine 2016. The final Ukraine Cup was traditionally held by Teahouse LLC team in Kiev on 16th of April on Platforma Art-factory. The Championship was held during the Street Food Festival and the agenda also included Tea Market and other Cultural and Tea activities. The Judicial assembly represented by CEO of Teahouse LLC Kostyantyn Mazuryk, founder of the first Tea Club in Ukraine Alexander Barabash, CEO and Tea tester of Svit Chaju LLC Max Lypko and coordinator of Tea Masters

Cup Latvia Yura Podusov held the says equally under the tactful guidance of Chief Judge Aliona Velichko. Seven tea masters from all over Ukraine performed brilliantly. These are the heroes names: Yuri Klimenko, Ekaterina Ivaschenko, Ekaterina Epihina, Anna Titovich, Taras Barabash, Sergey Stepchuk, Kliment Matyunin 1st place in Tea Preparation and Tea Pairing – Sergey Stepchuk, 1st place in Tea Tasting – Kliment Matyunin. Strong masculine league is ready to conquer a peak on International Championship in Seoul! Stay tuned!

Tea Masters Cup Czech

Republic On 22 May in the Czech Republic in Brno was held Tea Masters Cup, Czech Republic – the national stage of international competitions among tea masters, organized by the CBA Czech Teatenders. Since the morning in the first half of Sunday afternoon, participants and guests had the opportunity to observe all the variety of performances and types of tea, and in the second half of the day was also held the wine tasting. The best in the category Tea Preparation was announced Jaromír “Čajomír” Horák, and in the category Tea Tasting – Karel Veverka from the teahouse Leyaly. Both participants won in the fight for the finals at Tea Masters Cup International.

Tea Masters Cup Poland From 10th to 12th of May 2016 during key industry event Tea & Coffee World Cup took place the first Tea Masters Cup Poland in Krakow. As a result Poland got three nominees for the titles of TMC world champions in each category: in the Tea Preparation category Barbara Mazur took the first place; in Tea Pairing category Murat Kornaev conquered the judges with his recipe and in the Tea Tasting category Łukasz Tofliński guessed the largest number of cups. Piotr Monka who has taken the second place in Tea Pairing nomination was awarded with a special price for his mixology experiment with Darjeeling and beer, which supposes to be a separate category in a new season of competitions. All the 20 participants showed a very serious approach for preparation and the judges noticed that all the performances were at a very high level. Denis Shumakov, head judge of the TMC Poland shared his impression about the event. “There were some organizational solutions, which worked perfectly on TMC Poland in 2016 and which will be used in the cup for the future. In general I’ve got a feeling that Poland was a meeting of old friends. It was very noticeable, the overall atmosphere of the competition was great and it was more about cooperation than rivalry. If the interest in the cup will remain at the same level in the next cycle we will need to conduct pre-qualifying competitions in Poland. And it’s great because this is an additional opportunity to meet and drink tea and always a pleasure, so that participants will gain a

maximum of tournament experience. The tea was delicious and many appearances were very interesting. Otto Koblass, the Judge and co-organizer of the TMC Poland tells about his experience with the TMC Poland: “I would like to thank everyone for our exciting Tea Festival and first of all we are grateful to our participants. Without them we wouldn’t experience so many fantastic moments. Each of the participants made our festival exciting in his/ her own way. We got to know people, who love to do what they do, those, who do know how to make the perfect cup of tea. At the same time, I am proud to hear about high level of Polish Tea Masters. This feeling helps us to trust in outstanding performance of our winners in Seoul. We keep our fingers crossed for Barbara, Murat and Łukasz, who will represent Poland in South Korea”. The TMC was accompanied by a special tea program. Yury Podusov demonstrated a special technique of tea preparation called Wolverine, Denis Shumakov has conducted an improvisation based on local specialties and during last day Vadim Ivanov from Red Seal Tea and the winner of Latvian TMC 2016 Vivian Petrovska conducted several opened tea cuppings. In overall, the program was quite intense and interesting for the both visitors and participants. The Tea Masters Cup was organized by Tea Masters Cup International, Hong Kong in a partnership with Red Seal Tea Europe and sponsored by Future Generation Company (FGC).

Tea Masters Cup Australia & New Zealand The first ever Tea Masters Cup Australia/New Zealand showcasing Australian talent in tea brewing, tea and food pairing and tea tasting took place in Melbourne on Sunday 15th May, 2016. The competition sponsored by the Tea Board of India, Australian Tea Masters and the Byron Bay Cookie Company was highly competitive and saw tea enthusiasts compete in three different categories, demonstrating their unique brewing skills. A panel of 5 expert judges, made up of both tea and food experts, as well as a flavour specialist tried nearly 30 different teas throughout the day from rare black and green teas, a blended Puerh served over ice, cold brewed white tea, fragrant and floral oolongs as well as tea grown in Australia. The Tea Pairing category invigorated their taste buds with unique winning combinations of sweet and savoury foods expertly paired with teas to enhance their flavour profiles. Examples from the tea and food pairing included Tie Guan Yin paired with delicate Portuguese custard tarts, Himalayan Snow bud tea paired with malted panna cotta and an Australian grown black tea served with poached spiced pears and dark chocolate sauce. The winners are: 1. Tea Preparation Category – Ruan de Witt 2. Tea Pairing Category – Mary Jane Hua 3. Tea Tasting Category – Alex Yurong Pan

Tea Masters Cup Australia/New Zealand Champion – Alex Yurong Pan. The judges were very impressed by the quality of teas presented, the calibre of the contestants and their individual presentation style. We wish the overall winner, Alex Yurong Pan, all the best in the Tea Masters Cup International in South Korea in June 2016!

Tea Masters Cup Georgia The first ever Tea Masters Cup Georgia was successfully held in Tbilisi on 15th May, 2016. Venue: Tea House-Museum at #15 Galaktion Str., Tbilisi. Sponsors and organizers: • Tbilisi International Tea Forum. • Georgian-Chinese Tea Cluster. • Georgian tea Ltd. The winners:

Tea Masters Cup Italy The first ever Tea Masters Cup Italy showcasing Italian talents in tea tasting took place in Milan on Sunday 22nd May, 2016. The competition organized by Protea Tea Association and sponsored by Chà Tea Atelier, L’Emporio del Tè, Parliamo di Thé, La Finestra sul Tè, I-Tea was highly competitive and saw tea enthusiasts and tea professionals competing and demonstrating their unique skills in blind tea tasting. The participants were fifteen and they came from different part of the country. The winners, all women, on the Italian podium, are: 1. Tea Tasting Category – Cristina Poletti 2. Tea Tasting Category – Barbara Vola 3. Tea Tasting Category – Sylvie Capelli In general, the organizers were very surprized by the high level of the result. They wish the winner, Cristina Poletti, all the best in the Tea Masters Cup International in South Korea in June 2016.

Tea Masters competed for the title of world champions in the three categories: Tea Preparation (where masters have to demonstrate the skill of tea preparation by brewing and presenting several beverages), Tea Paring (presenting tea in combination with a light food/snack) and Tea Tasting (tea degustation by identifying beverage samples of single varieties of teas). Thousands of Tea World Festival guests who attended the competition in person and many fans all over the world who watched live internet broadcasts witnessed impressive displays of the art of tea preparation. During two days of competition tea masters showed to judges and spectaculars their performances and impressed everyone with ingenuity, careful preparation and high professionalism.

But there is only one champion in every category and judges had to determine the best tea masters. And after two days of intensive competition there were defined winners of each category.

After intensive days of competition the whole group of masters and guests drove to see Korean tea plantations. They were also able to see Korean tea ceremonies and take part in them, make their own tea and see Tea Museum. SCIENCE HAS SOME AWESOME NEWS FOR COFFEE DRINKERS It’s a familiar feeling for any caffeine addict: a racing heart, fluttering away after one too many espresso shots. For years, that’s been enough to steer people with certain heart conditions away from coffee. But as it turns out, there’s little evidence that a caffeine habit could send us into cardiac arrest. Last year, Dr. Greg Marcus, a professor at the University of California-San Francisco, and his research team looked into the relationship between caffeine and a type of arrhythmia called “early beats”, which can be a risk factor for developing heart failure. “We could find no evidence of a relationship,” says Marcus. Still, Marcus cautions that the heart risks of caffeine may depend on the individual and that more work needs to be done to unpack the role of a patient’s unique genetics and environmental exposures. DRINKING COFFEE PREVENTS EYE DAMAGE, AS ANTIOXIDANTS KEEP YOUR RETINAS HEALTHY

A new study at Cornell University found that coffee’s strong antioxidant, chlorogenic acid (CLA), is actually therapeutic for our eyes, protecting the retina and preventing retinal degeneration in mice. Researchers treated the eyes of mice with nitric oxide, which leads to retinal degeneration by developing free radicals and oxidative stress. The mice that were pre-treated with CLA actually did not end up developing any retinal damage. It’s “important in understanding functional foods, that is, natural foods that provide beneficial health effects,” Chang Y. Lee, professor of food science and the study’s senior author, said in a press release. “Coffee is the most popular drink in the world, and we are understanding what benefit we can get from that.” Other studies have found that coffee can help prevent diabetes, Parkinson’s, prostate cancer, and even Alzheimer’s and other chronic diseases. Research has also found that overall, coffee can even decrease mortality rates. The eye researchers hope that with further investigations, they’ll be able to find out whether chlorogenic acid crosses the blood-retinal barrier. If consuming coffee is able to deliver CLA directly into the retina, scientists may someday be able to create specific coffee brews as treatments that can actually prevent eye damage, making your daily cup of coffee more therapeutic than ever. REGULAR CAFFEINE CONSUMPTION DOES NOT RESULT IN EXTRA HEARTBEATS Contrary to current clinical belief, regular caffeine consumption does not lead to extra heartbeats, which, while common, can lead in rare cases to heart- or stroke-related morbidity and mortality, according to the University of California San Francisco researchers. The study, which measured chronic consumption of caffeinated products over a 12-month period, appears in the January 2016 issue of the Journal of the American Heart Association. In their study, Dr. Gregory Marcus, MD, MAS, a UCSF Health cardiologist and director of clinical research in the UCSF Division of Cardiology, and his colleagues analyzed 1,388 randomly selected participants. Of the total participants, 840 (61 percent) consumed more than one caffeinated product daily. The researchers found no differences in the number of PACs (premature atrial contractions) or PVCs (premature ventricular contractions) per hour across levels of coffee, tea and chocolate consumption. More frequent consumption of these products was not associated with extra heartbeats. “This was the first community-based sample to look at the impact of caffeine on extra heartbeats, as previous studies looked at people with known arrhythmias,” said lead author Shalini Dixit, BA, a fourthyear medical student at UCSF. “Whether acute consumption of these caffeinated products affects extra heartbeats requires further study.” Source: comunicaffe.com

IT’S BEEN BREWING FOR A LONG TIME! 2,150-YEAR-OLD TEA LEAVES FOUND AMONG TREASURES BURIED WITH A CHINESE EMPEROR PROVIDE THE EARLIEST EVIDENCE OF SILK ROAD TRADE ROUTE Archaeologists have discovered a huge stash of tea buried with royal treasures in the tomb of an ancient Chinese emperor, Liu Qi, who ruled more than 2,150 years ago and was buried in the Han Yangling Mausoleum in Xi’an, Sha’anxi Province. The tea (pictured right) was badly decomposed, but analysis showed only the finest tips (bottom left) had been picked and buried with the emperor. The tea provides some of the earliest evidence for the ancient Silk Road trade route that grew to stretch across Asia from China to Europe. Writing in the journal Scientific Reports, Dr. Houyuan Lu, an archaeologist with the Chinese Academy of Sciences in Beijing, and his colleagues described also finding similar tea remains in a tomb in Tibet (top left). They said this tea also dates to around 200AD, which is the earliest indication tea was being transported along, and traded on, what later became known as the Silk Road. “Our study reveals that tea was drunk by Han Dynasty emperors as early as 2,100 years ago and had been introduced into the Tibetan Plateau by 1,800 years ago,” the researchers explained. “This indicates that one branch of the Silk Road passed through western Tibet at that time.” Before the discovery of the tea in the Emperor’s tomb, the oldest record of the beverage was in a 2,000-year-old text that mentions the drink.

One (tea) brick at a time: building the foundation of the Shvetsov family tea-trading business Sokolov I. A., Ph.D. Historian

AN UNEXPECTED DISCOVERY A little while ago, an unusual tea brick turned up in a private collection in the USA. Its owner was generous enough to give me permission to use the photos that were sent to me. This brick is quite valuable, and not only in virtue of its high estimated auction value. Let’s look at this artifact. The first thing that meets the eye is the pattern on the surface (a powerful press in a steel mold) that includes Chinese characters and… yes, Russian letters that spell “Shvetsov”, as well as a trademark registered with the Russian Ministry of Commerce – a horseshoe with the logo “Trading Partnership A. V. Shvetsov & Sons”.

After China’s defeat during the Second Opium War, the country’s internal market was forced open. The Europeans gained access to all interior regions of China; this included Russian businessmen as well. The Russians set up the production of tea bricks in what is now Hubei and Fujian provinces.

COMPRESSED TEAS OF ALL SHAPES AND SIZES In addition to bulk (loose-leaf) teas, many factories in China produced two forms of compressed tea: bricks and bars. Bars were made of higher-quality tea, while bricks contained cheaper varieties. Bricks were pressed from substandard ingredients: leaves that fell off the branches of tea bushes or were pruned when bushes were shaped for harvesting. The surface of the bricks was covered with a thin layer of better-quality tea to give the final product a more attractive appearance. Tea bricks were easier to transport: they took up less space compared to bulk teas and did not require a lot of packaging (they could be shipped in leather sacks on camelback). Only more expensive tea was packaged into wooden crates. Tea bricks were sold primarily in the poorer regions of the Russian Empire such as Siberia and Central Asia. The brick we are looking at is rather dark: it has aged for more than a hundred years after it was manufactured, and probably still remembers its birth in China during the Qing dynasty. So – who could have ordered this brick of Chinese tea?

THE PROFITABLE BUSINESS OF THE SHVETSOV FAMILY

Alexei Vasil’yevich Shvetsov was born in 1841 (or 1842) and died somewhere around 1912. He grew up in a family that was already in the tea-trading business. After graduating from secondary school he started his career with the Botkin family, another tea-trading dynasty. His job took him to the town of Kyakhta as a trade representative of the Botkin family business. A little while later Alexei Shvetsov starts his own tea business in Nizhni’i Novgorod and Astrakhan’. His residence in Nizhni’i Novgorod was located in one of the best neighborhoods of the city – along the Volga river. In a few years, Shvetsov moves to Moscow, the tea capital of the Russian Empire. Shvetsov started out by importing Chinese tea into Russia through Kyakhta, but later expanded into importing cheap Indian teas, after the ban on importing teas via land routes across western borders of the Russian Empire was lifted in 1861/1862. The company continued its commercial activity in China and Mongolia, and Shvetsov teas were sold all over Russia. Mr. Shvetsov’s business interests were not limited to tea: the company traded in furs and owned several cotton plantations in Central Asia. The firm also ran its own private banking business in Moscow.

But tea remained the most lucrative commodity for the family, and Alexei Shvetsov made large investments into advertising, knowing that such expenses would bring great returns. The posters promoting “The commercial partnership A. V. Shvetsov & Sons” were of excellent quality, printed by Theodore Kibbel, a renowned printer in Saint-Petersburg. The posters featured various “archetypes” of the Russian society at the turn of the 20th century: soldiers, noblemen, people eating at taverns, families drinking tea. The company also published tearoff calendars that promoted the business. One appealing feature of these calendars was the “Happy New Year!” message revealed after the last page (December 31) was torn off. Other promotional materials included various kinds of kitchen wares, such as colorful plates and richly decorated trays. The best varieties of tea were sold in tin containers with locks – to help the lady of the house keep the precious tea safe and hidden from the servants and even from her husband and children!

The firm made the larger part of its profits from the cheapest tea: bulk teas from India and tea bricks from China. The latter always sold well, especially in Astrakhan’, where the company ran a large store. This store prominently featured on many photographs and postcards from the period, as it stood at a crossroads in the busiest location in the city. Alexei Shvetsov had several sons who became co-owners of the “A. V. Shvetsov & Sons” partnership. The company’s trademark from that period is a monogram consisting of Cyrillic letters ‘A’, ‘C’ and ‘Ш’. The company’s emblem – a horseshoe – doubled as the letter ‘C’ in the abbreviation of “sons”. Later, Alexei Shvetsov’s sons continued the family business under their own trademark, a monogram of the Cyrillic letters ‘C’ and ‘Ш’ in a circle. It is known that one of the sons, B. A. Shvetsov, was on the board of directors of the “Vasili’i Perlov and Sons” tea-trading partnership, indicating a connection with another (beside Botkin’s) tea company from the “top 10” of the Russian tea market. The total trading capital of the “A. V. Shvetsov & Sons” partnership at the beginning of the 20th century was declared to be 900,000 rubles, and the trading volumes of all family businesses were even higher. 900,000 rubles was a significant sum at the time, although it is easily dwarfed by the capital of market leaders; for example, the capital of each

EPILOGUE After the Russian revolution of 1917, some members of the Shvetsov family emigrated to France, while others remained in Russia. Perhaps, there will come a time when we see Shvetsov tea on the shelves of modern supermarkets. The old store at the crossroads in Astrakhan’ is still standing, harboring memories of its erstwhile owners...

pring in Moscow couldn’t be more worthy of a celebration, and the great Russian Barista Days – three days with six national championships involved – was well suited to the task. Hundreds of coffee professionals and enthusiasts alike turned out to see who would win the prestigious titles of Russian Barista Champion, Russian Latte Art Champion, Russian Coffee In Good Spirits Champion, Russian Cup Tasters Champion, Russian Brewers Cup Champion, and Russian Roasting Champion. More than 180 participants, over 60 judges and 50 volunteers were a part of this great event. Especially for the Russian championships there were invited international WBC (World Coffee Events) judges: Teija Marika Lublinkhof, official WCE representative to judge the Russian National Barista Championship and for the Brewers Cup and Coffee Roosting championships – Gloria Pedroza, an international WBC judge, WBrC, WCRC, WLAC, an authorized SCAE CDS trainer with Green coffee and Sensory analysis courses.

championship was won by Viktoriya Sharkova (Coffeemania coffee shop company (Moscow) with a score of 6 cups from 8 for 6.5 minutes. Second place was taken by Boris Efimov (Montana Coffee, Moscow), third place went to Maxim Saprykin (Coffee in the Kitchen, Saint-Petersburg).

BARISTA CHAMPIONSHIP

COFFEE ROASTING CHAMPIONSHIP The national coffee roasting championship started on February 28 and was split onto several stages. During the first day the contestants made analysis of green coffee on defects and sample roasting in the office of KLD Coffee Importers, which has a unique certified laboratory. The trial and championship roasting were held in the roasting facility of Smart Roster Company. And the final cupping was organized at the site of the exhibition. As a result, the 1st place went to Renata Ekshikeeva, a roaster from the coffee shop Double B Coffee&Tea. The second place was won by Sergey Taber, roaster from Torrefacto company, and the bronze medal went to Dmitry Boroday, a roaster from the coffee shop Double B Coffee&Tea. This year the championship was held with a support of a General sponsor for roasting equipment, the company PROBAT-Werke von Gimborn Maschinenfabrik, partners for green beans KLD Coffee Importers, SFT TRADING, Hummingbird Coffee and Greencof, a partner for a grinder Madian company, a partner for packaging ARIS-Pak company, in a cooperation with Montana Coffee company.

CUP TASTERS CHAMPIONSHIP Russian Cup Tasters championship was held over three days. 64 participants solved complex tasks, which were prepared for them by the KLD coffee Importers company, co-organizer and General sponsor of the competition. The technical assistance in organizing of the championship was provided by BUNN who supported the Cup Tasting with coffee grinders and brewing equipment. For the first time were used special cups with a dark inner surface from Kafema company which are ideal for such a competitions. The Cup Tasters

This year in the Russian Barista Championship participated 36 baristas from 8 regions of Russia; they have previously passed qualifying rounds in their regions. Six finalists each proved worthy of the championship, but Segrey Mitrofanov of Double B Coffee&Tea in Moscow was the best of the best. Sergey, an experienced barista and competitor, chose Colombian Geisha for his espresso, milk beverage, and signature drink. His goal was to show how the chemical processes during roasting could influence coffee taste. Espresso is enzymes

with its citrus, green apple, and kiwi fruit flavor. Cappuccino is caramelization with its praline and lemongrass notes. In the end of his presentation Sergey prepared a cold signature drink based on espresso with lemongrass and jasmine tea. Konstantin Khramov of OMNI Coffee in Krasnodar was runner-up of the Russian Barista Championship, with a beautiful Geisha from Hacienda Esmeralda in Panama. He described his espresso as very sweet with orange, peach, and coriander flavor. Konstantin worked hard on his signature drink, testing different ingredients and preparation styles, and determined that saffron was key. His signature drink based on espresso with saffron, honey water, strawberry juice, and orange peel, was served cold. The third place went to Bogdan Prokopchuk (Double B Coffee&Tea, Moscow). This year a General sponsor of the championship became Delovaya Rus company, which represents Nuova Simonelli in Russia, with a new brand Victoria Arduino coffee machine VA 388 Black Eagle Gravimetric which could be considered one of the best coffee machines in the specialty segment. The sponsor presented to the winner a certificate for an updated version of semi-professional coffee machines OSCAR – OSCARII. Madian company which represents Mahlkoenig in Russia became an exclusive sponsors of the championship for grinders; Bazzara company has become an official sponsor for coffee and presented to all the finalists coffee books of Bazzara brothers.

LATTE ART COMPETITION AND COFFEE IN GOOD SPIRITS The popular Moscow-based coffee bar chain Coffeemania celebrated a victory in the Russian Latte Art Championship when barista Vitaliy Veretilnik — a four-year veteran of the competition — took first place. Chief Barista of Upside Down Cake (Moscow) Nika Alekseeva took the second place in the championship, and the third place went to Nikolay Solomatin, another representative of Coffeemania. During the World Championship in Shanghai in the category of Coffee in Good Spirits Russia was represented by Ekaterina Vereschagina, chief Barista of Artemiy Lebedev Studio Cafe. Natalia Obruch (Tesla Coffee, Yekaterinburg) took in the championship the second place, with Tanzanian coffee. The third place went to Ramil Rzayev (Double B Coffee&Tea, Moscow). The General sponsor of the Championships Latte Art and Coffee in Good Spirits became Cimbali company, which is represented in Russia by Espresso Italiano RU. For trainings and competition they have provided for the best Russian baristas coffee machine M39DOSATRON TE DT2 and grinders MAGNUM on DEMAND Touch under the same brand. All the winners of the championship of Latte Art, as well as the winner in the category of Coffee in Good Spirits were invited to the factory to Italy where they could pass a threeday training. The coffee for the Latte Art was specially roasted by SFT TRADING company who become a sponsor of the competition this year.

For the first time METRO Cash&Carry sponsored the Barista, Latte Art and Coffee in Good Spirits competitions in three categories. They became a sponsor of milk, syrups and disposable products under its own brand Rioba, which the participants used during preparation for the championship, as well as during the performances.

BREWERS CUP COMPETITION

Caturra. In the end, Dmitry Boroday of Double B Coffee&Tea in Moscow, with his Caturra which he carried back in his suitcase from a sourcing trip to Colombia, was the big winner. Dmitry brewed with an Immersion Wilfa Pour Over, using 20 grams of coffee and 314.5 grams of water to get a sweet, clean and juicy beverage. He used soft water 15 ppm controlling precisely its proportions to the coffee. Dmitry poured 310 grams of water in 15 seconds, adding 4.5 grams with a syringe in the end of the process. “The water loses 4.5

grams while on contact with coffee and I need accuracy,” he told the judges. Cup descriptors included red tea, raspberry, mango and papaya, white chocolate and sweet carrot. Dmitry Koriukin of OMNI Coffee in Krasnodar placed second in the Russian Brewers Cup. Dmitry used Geisha from Esmeralda to make Hario V60 pourovers. His brew profile was 15 grams of coffee and 250 grams of water, 30 seconds of preinfusion, and about 3.5 minutes of the total brewing time. He described his coffee to the judges as having a sweet and clean cup with orange, coriander, mango, and sweet apple flavor, and black tea with bergamot in the finish. Aysa Matueva, who played for Chip Coffee (Moscow), took third place with coffee La Mula geisha from Panama. The General sponsor of the Brewers Cup 2016 became RVC company, the author of the project !Live:), who provided for this competition accessories of a legendary company HARIO. RVC has presented to the winner winner a unique set of alternative coffee brewing, and all the finalists got a stand under a funnel and scales with metallic platform. The company GOURMET STYLE being a sponsor of the championship for grinders, awarded the winner together with the BARATZA INTERNATIONAL company with a special prize: BARATZA FORTE AP grinder. The technical sponsor of the championship was Bunn company who provided hot water dispensers for the championship and special prizes to all the finalists; ATAGO Rus gave to all the finalists certificates for a purchase of refractometer. Montana coffee company has become a partner of the competition and provided all the competitors with coffee for the first day of the Brewers Cup.

BRYAN BAPTIST:

TEA AS A WAY OF LIFE Aliona Velichko Among jury members at the TMS International competition in Istanbul (September 2015) was a man who devoted his whole life to tea – Bryan Baptist. It is difficult to say which country he represented: Turkey, where he has been living and working for the past four years, or his native Sri Lanka, where he became what he is now: a Tea Taster with a capital ‘T’. But to Bryan Baptist himself, there is no doubt: after all his travels and lectures he always returns to his homeland, where he always has plenty to do – teaching, consulting, buying tea, designing tea blends. Tea is his life. His students have reached great heights, with many becoming CEOs of tea businesses; and they all have wonderful things to say about their teacher. In an exclusive interview with Coffee and Tea International, Mr. Baptist shared his vision of the profession that has become his life. I have never regretted dedicating my professional career to tea. Although I must say that when I was young, I wanted to join the military. In 1967, when I was 19 years old, Nerville Liff, my rugby coach, who was a director at the tea-trading company John Keell Thompson White Ltd (today it’s called “John Keells Ltd.”) informed me that his company was looking for tea taster trainees, and suggested that I might be interested in the job. At first, I politely declined the invitation: I was more interested in marketing and accounting. But he insisted that I stop by his office. When I arrived there, I knew at once that this job would suit me, and I accepted the position. On my very first day on the job, I was given seven tea samples to taste. When the manager asked me if I could taste anything unusual in any of the samples, I said that sample number 5 had a strange smoky flavor. As it turned out, I was able to pick the sample that was made from improperly processed tea, a very difficult feat for a novice. Right then and there I decided that this was the job for me. And I have never regretted that choice. After having mastered every aspect of the tea business, I can help others by teaching, lecturing and consulting. When people approach me with questions and requests, when they explain their problems to me, I am always happy to get to work helping them, because I know that I can solve the problem. The job of tea taster is not really that difficult, but you need to know the market. You have to taste many tea varieties, to know their distinct characteristics, to be able to determine the composition of tea blends and to create your own blends. You need to know everything about tea – the good and the bad – in order to be able to make the right decisions. You also have to know every potential flaw tea might have. In order to develop these skills, you need at least three months of daily practice. I had a group of students in Turkey, and that’s what we did – practice every day for three months. And 75% of the students completed the course successfully. Honesty before God, before myself and before the people around me – these are my main guiding principles in professional and personal life. I am very forthright in all my actions, I cannot stand deception. No matter what I am doing – exporting tea or teaching – I am always completely honest. I have two main rules in my business transactions: a holistic approach and the highest possi-

ble quality of work for my employers and my clients. When exporting any tea, anywhere, I always aim for the highest standards to ensure that my clients are happy. I believe that in every transaction, both sides should win, and that’s why I always share all of my knowledge, making sure that everyone benefits from our cooperation. I’ve had my share of difficult situations in life. These had to do primarily with my trips abroad – Bangladesh, South India, Turkey. I often had to build bridges between different areas of the business, share my expertise, modernize factories. I have always managed to overcome the challenges and to gain invaluable experience for myself and for my partners, whether it had to do with opening a new factory, getting permissions to visit tea plantations or optimizing tea-processing technologies. When I am in a new country, I always start by listening closely to the opinions of the professionals; then I determine the root cause of the problem and offer the simplest possible solution that I can think of. Afterwards, I help implement that solution, working as part of a team. This approach always brings the best results. Currently, I am involved in six different projects around tea. One of them has to do with finding ways of preserving as much as possible the flavor and quality of tea during the roasting of tea leaves. Our research lab has been trying – and failing – to achieve this result for a long time. It seems that we are finally very close to success! My advice to those who want to become proficient in the tea business: first and foremost, learn from the experts. Ask questions if something is unclear, and never pretend that you understand everything. Write down the things you learn. Develop your long-term memory, as you will need to be able to recall many varieties of tea, as well as many possible flaws. Become a “Ph. D. of tea”. When you are tasting tea, try to remember its basic characteristics – taste, aroma, color. These qualities differ for every region. Never stop tasting until you are able to identify teas from different manufacturers and detect even the subtlest flaws in tea. You must visit tea factories as well: there you will learn about all aspects of tea processing, from drying to packaging. Analyze marketing advantages of tea, always keeping in mind tea’s health benefits. Never stop perfecting your skills – and you will succeed in everything you do!
