( serves approx. 4-5 ) Ingredients

„ 2 pounds mussels „ 1 pound linguine „ 3-4 tablespoons butter „ 2 tablespoons olive oil „ 3/4 to 1 cup dry white wine „ 4-8 cloves garlic (or to taste), minced „ 1 large shallot, minced „ 1/3 cup fresh basil, chiffonade „ 1 cup heavy cream

„ 3/4 cup grated parmesan cheese (with some reserved for garnish)

Instructions

„ Wash the mussels well and remove beards and/or barnacles. „ In a large pot bring salted water to boil. Cook linguine to just before al dente. When you initially drop the linguine it's time to . . . „ Heat butter and olive oil in a large sauté pan or pot with lid (large enough to fit the mussels). Add garlic and shallots and cook until translucent and

fragrant (depending on heat source 2-5 minutes). „ Add wine, 1/2 of the basil to the pan, simmer for 1 minute. „ Add mussels and simmer in the white wine sauce until the shells open which indicates that they are fully cooked (from 4-6 minutes), discard any that don't open. „ When linguine is just before al dente, strain and stir into the mussels and white wine sauce. Add parmesan cheese and cream. Simmer for 4-5 minutes, covered, while the sauce thickens. Stir one or two times, add remaining basil just prior to serving. „ Serve with fresh parmesan and cracked red pepper if desired. Bon Appetit!
