e all know that fish is brain food. Eating even a few servings of fish per week provides heart healthy omegas, protein, iron, and more. The problem is, not everyone is a fish lover. Especially some of the younger members of my family, and one finicky adult eater who happens to wear the beard in our house; I won’t mention any names. I tried broiling, baking and frying. Nothing doing. So when I was walking the floor of Kosherfest this past fall I was delighted to find a new line of products that ingeniously and deliciously solved this dilemma for me. Twin Fin deli has obviously been eating their brain food, in the guise of the best hot dogs and salami you can imagine. The hot dogs and salami look and taste like their classic deli counterparts. Even more surprisingly, they taste nothing like fish. I was fully prepared to at least notice a hint of surf but all I could taste was the turf. They have all the flavor and texture of classic hot dogs and salami. The health benefits speak for themselves but in addition they are lower in sodium and fat then beef. I also like the fact that they are soy free and gluten free. I’ve noticed recently that almost all of the vegetarian choices these days rely solely on soy and wheat gluten for plant based
protein. Finding one without either works really well for the multiple food allergies we deal with at our house. An A nd by the way, Twin Fin also happens to make an exceptional ready-to-eat gefilte fish. I’ve noticed that there are plenty of store-bought brands they need to be cooked before serving. Twin Fin’s gefilte fish is fully cooked an tastes great right out of the package, with all of the flavor you’d expect from homemade. The seasonings are basted right into the package, allowing me to slice and eat without peeling an onion or boiling water. The shelf life is aan n added bonus. The packages can stay fresh in the fridge for weeks aan nd are glass-free, making them safer and easier to lug home from the market. There is no comparison between Twin Fin Deli’s homemade taste and texture and gefilte fish from a jaarr. I don’t know how they did it, but Twin Fin Deli has outsmarted an advanced palette like mine. Their deli products have all the benefits of fish yet it taste like 100% beef. My kids couldn’t tell the diff ffeerence, but nutritionally I surely could. There is nothing fishy about it. And their gefilte fish tastes amazing! It’s a healthy, innovative product line that will add to any healthy eater’s menu. What can I say? I’m hooked!

Your kashrus Questions. . . Answered KOSHER ALERTS Recently an ad was sent out in the Chicago area indicating the several Love’s Yogurts were certified by the OU. The OU does not certify any yogurt stores in the area. Chobani Greek Yogurt-Bite in 4-packs of small 3.5 oz. cups (available in four flavors) bears an OU-D on three of the cups, but not on the fourth. All four are nevertheless certified. Please be advised that some packages of Blue Diamond Lime and Chili Almonds (in 1 lb. bags) produced by Blue Diamond Growers were mistakenly labeled with the OK Kosher symbol instead of the OK-D. This product is dairy as indicated in the ingredient panel. Chocolate Accents, manufactured by Xcell International, Lemont, Illinois, contains a variety pack of 4 different chocolate toppings and sprinkles. One of these toppings, Chocolate Drops, contains dairy ingredients (Cholov Stam) as indicated on the ingredient panel, but was mistakenly labeled without the "D" or "Dairy" designation. All of the other 3 varieties, namely Chocolate Sprinkles, Dark Chocolate Crunch and Cookie Cream Crunch, are indeed cRc pareve.

LIVER Q. Can you advise me about cRc policy regarding the use of livers not kashered within three days. Can it be used in chopped liver? What about for other uses? A. The general rule is that meat should be salted/kashered within three days of slaughter, and if it is not then (a) the blood can only be removed via broiling (as opposed to salting), and (b) the meat cannot be cooked after it is broiled (Shulchan Aruch YD 69:12). There is a discussion in the Poskim as to whether the three-day-clock stops “ticking” if the meat is frozen, and the cRc is machmir about that issue. Therefore all meat served (or sold) in cRc certified establishments or sold with the cRc logo, must have been kashered within 72 hours of shechita even if it had been frozen. This is the rule for most meat, but liver is treated somewhat differently. Liver must be kashered via broiling (rather than by salting) and
there is a disagreement as to whether liver which was broiled after three days can be subsequently cooked. Shach (69:51) implies that liver has the same status as other meat: if three days passed between the shechita and kashering, it may not be cooked. In contrast, Aruch HaShulchan (69:70) argues that the entire three-day-rule does not apply to liver. In this matter, the cRc basically follows the stricter opinion but recognizes the legitimacy of the more lenient approach. Accordingly, cRc certified establishments which cook or fry liver must use liver which was kashered within 72 hours of shechita (even if the liver had been frozen). However, they may sell raw or broiled liver without indicating how many days have passed since shechita. Consumers who are particular to not cook liver unless it was broiled within three days of shechita (as per Shach) are encouraged to ask the merchant for details as to when the shechita occurred.

GLUTEN-FREE FOOD Q. Does Pas Yisroel apply to gluten-free cookies, cakes, and crackers? A. The very first halacha regarding pas Yisroel (Shulchan Aruch YD 112:1) is that it is only required for foods made from the five primary grains – wheat, barley, spelt, rye, or oats. Accordingly, most gluten-free food does not require pas Yisroel because the very nature of gluten-free food is that never contains wheat, barley, spelt, or rye. The only exception would be foods made with special gluten-free oats – such as gluten-free oat matzah for Pesach; those foods contain one of the five primary grains, and therefore potentially require pas Yisroel if they meet all of the other criteria. On a related topic, some steel wool comes with soap already on the steel wool. The soap does not pose a kashrus concern, even if the company acknowledges that it is made from non-kosher animal fat (as one prominent brand does), because soaps are considered inedible. Accordingly, you may use the steel wool even if it contains soap

Recipes from our kitchen to yours! Crepes au saumon (crepes w/salmon filling) Submitted by simha wolf
Dough 1 cup all-purpose flour 1 teaspoon white sugar 1/4 teaspoon salt 3 eggs 2 cups milk, soy milk or rice milk 2 tablespoons butter or margarine, melted
Filling 1 pound of LOX cut in medium size pieces 4 cups of soy milk or rice milk 2 large onions or 3 medium size onions 1 lb or more of fresh mushrooms cut in slices Salt & Pepper Fresh or dried parsley for decoration

batter onto the griddle, using approximately 2 tablespoons for each crepe. Tip and rotate pan to spread batter as thinly as possible. Brown on both sides, then remove it from the pan. Filling: In a large skillet, add some oil and fry the onions on medium heat. A few minutes later, add the mushrooms and mix. When the vegetables are about half cooked, add the soy milk, and wait until it boils before putting the lox in. Cover the pan and cook it for about 15 minutes. Serving:Lay out a crepe, put the filling in the crepe and fold it however you feel it would look nice. Add some filling on the top after folding and sprinkle some parsley to give a nice color. Serve hot or warm.
Dough: Sift together flour, sugar and salt; set aside. In a large bowl, beat eggs and milk together with an electric mixer or by hand. Beat in flour mixture until smooth; stir in melted butter or margarine. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the
