A
lmost all of the new Torah at Chabad Jewish Center in Temecula was handwritten with a quill by a specially trained scribe in Jerusaalem. But the inspiration for the text is the synagoggu ue’s director, Rabbi Yitzchok Hurwitz. W Wh hen Hurwitz was diaagnosed with Lou Gehrig’s disease a year ago, he told his wife, Dina, that his biggest regret was not haaving a Torah speciaally commissioned for the center. Hurwitz can no longer speaakk, but he was beaming Sunday as his hand covered a Los Angeles rabbi’s wrist while the rabbi wrote the finaal letter of the cowhideparchment Torah. The holy book was dedicated in Hurwitz’s honor. “It’s a dream come true,” Hurwitz wrote in response to a question as traditional Hassidic Jewish music played in the background. “For 15 years I haave been waan nting to bring a Torah to the community.” The completion of a Tor o ah traditionally is accompanied by a ceremony and celebration. amyotrophic lateral sclerosis or ALS, attacks cells that control the muscles. Most people with ALS die within three to five years of the onset of symptoms. David Newman, 57, one of hundreds of people who donaated the $40,000 for the Torah h, said the holy book is part of Hurwitz’s legacy. “Because he was the genesis of this Torah, it will continue to haave his spirit,” said Newman, of Murrieta. About 30 rabbis — including an old friend of Hurwitz’s who traveled from Beiijjing for the event — were among the 200 or so people who crowded under a white tent in a parking lot near the synagogue for the celebration. Hurwitz’s disease maakkes it difficult for him to stand. At times on Sunday, he was shaky. But Hurwitz stood again aan nd again as people walked onto the stage to hug him, kiss him on the cheek or pose for a photo. “This is giving him energy,” his wife said of the celebration. The Torah saat on a table spread out between wooden poles as Rabbi Yosef Tei e telbaum wrote the last 75 of the 304,805 letters of the holy book, dip-

ping the quill into an inkwell before applying it to the parchment. The Torah — the biblical books of Genesis, Exodus, Leviticus, Numbers and Deuteronomy — is the holiest text in Judaism and the foundation of Jewish laws and teachings. It is read during all Jewish prayer services. A Torah can take two years or more to complete, said Rabbi Sholom Katz, who moved from Brooklyn to Temecula in September to help Hurwitz oversee the center as ALS took its toll on Hurwitz’s body. “We rushed it to ďŹ nish itâ€? so it would be ready by Hurwitz’s birthday, which is Tuesday, Katz said. It was on Hurwitz’s birthday in 2013 that he was diagnosed with ALS. After he told his wife how he wished that a Torah would be commissioned for the center, a fundraising campaign began. Money was donated not only from throughout Southern California, but also from Australia, Argentina and New York, Katz said. “Even though they had never seen or met Rabbi Hurwitz, they read that this Torah was his dream,â€? he said. “It’s
not just a community Torah. It’s a global Torah.â€? Rabbi Sholom Ber Hurwitz, of Brooklyn, an uncle of Yitzchok Hurwitz, said he hoped that the completion of the Torah will help lead toward his nephew’s recovery. “This is a big mitzvah,â€? a commandment from G-d, Hurwitz said of the writing of the Torah. “We are doing this for you, G-d. Please give us back his health.â€? Hurwitz founded the Temecula Chabad in 1999. The new Torah replaces Torahs that other Chabad centers had loaned. Bev Homan, 56, recalled how when she arrived in Temecula in 1984, there were very few Jews in the area. Hurwitz not only founded Chabad. He also created an annual menorah-lighting ceremony during Hanukkah that in November attracted 200 people of dierent faiths to the Temecula Duck Pond. abbi Nowosiolski and the 4th grade boys of Yeshiva Aharon Yaakov/Ohr Eliyhu in Los Angeles thank Rabbi Grawitsky for his magnanimous tour of It’s Delish Candy Factory, where they learned about business ethics, production and halacha. Rabbi Grawitsky explained how the candies are made and the importance of each machine in the process. He elaborated on how halacha guides his business practices and the importance of weighing all candies correctly in

order to avoid cheating your customer. This tied into our learning of Yaakov Avinu as a “Man of Truth” when he worked for Lavan, and in his dealings with Esav. The boys were fascinated by the detailed explanations that the rabbi gave concerning the many challenges of Kashrus in the food industry and how he works with Kehilla kosher to ensure that all of his products are of the highest standard. Rabbi Grawitsky demonstrated to the boys the many opportunities of Chesed available to him as well. When he found out that this year Coke would not be producing kosher for Pesach soda he promptly decided that the It’s Delish company would make many flavors of soda for Pesach to meet the community need. The students were very impressed with the factory and grateful that despite his busy schedule preparing for Pesach, Rabbi Grawitsky was able to provide them this wonderful opportunity. The tour ended on a high note with the boys each receiving a generous sampling of the candy produced at the plant.

They merited receiving this award for their dedication and work of their organization Global Kindness. Global Kindness is an organization that anonymously and honorably supports over 350 families, one person at a time. Their goal is to support and extend these services to as many as 1000 needy families in Los Angeles and around the world “It is hard to estimate the number of lives that were – and continue to be - touched by the chesed of the Cohen Family. The Cohen Family has the zechut to be intimately involved in running the Global Kindness organization and is always looking for ways to do chesed and help the community. One cannot visit the Cohen’s house on any night and not be inspired by the massive Chesed operation that is run from their very own backyard. A Visit from HaGaon HaRav Yitzchok Scheiner Shlit”a
Y
eshiva Aharon Yaakov Ohr Eliyahu had the unique privilege to have HaGaon HaRav Yitzchok Scheiner Shlit”a, Rosh Yeshivas Kaminetz - Yerushalayim daven Tuesday morning in Yeshiva with the Junior High School. Yeshivas Kaminetz (Knesses Beis Yitzchok) was founded by Rav Scheiner’s grandfather-in-law, Rav Baruch Ber Leibowitz zt”l (the author of the Birkas Shmuel) in 1926. After World War II, the yeshiva moved to Eretz Yisroel and is now headed by Rav Scheiner Shlit”a. The Yeshiva ranges from their early childhood program through post high school -Beis Medrash and Kollel. It is a home for hundreds of talmidim in Yerushalayim. After davening, the students were further privileged to hear divrei torah and bracha from the Rosh Yeshiva Shlit”a.
The Rosh Yeshiva started by saying how comfortable he felt davening shachris with the boys. He said the tefila mirrored the tefila of the Kaminetz cheder boys in Yerushalayim. He said that it was a zechus to daven with the yeshiva. The Rosh Yeshiva then explained that there are two parts of having kavana during davening. One is to remember that you are speaking to Hashem directly, as we say “Baruch atah Hashem”. The second is to understand to a level what you are saying. The Rosh Yeshiva said that he could sense how the students davened with such a special kavana. The Rosh Yeshiva Shlit”a then gave a bracha to the Students, Hanhala and Rebbeim of the Yeshiva. The students then lined up to say “Shalom Aleichem” to the Rosh Yeshiva and thanked him for his visit.
The Rosh Yeshiva said that it was a zechus to daven with the yeshiva.

L
ike many men I know, over time my car becomes a mobile office/storage room and papers, files, and assorted flotsam and jetsam sometimes appear to take over the interior. As I was going to drive my daughter somewhere one day, I cleaned out the front seat so she could ride, “shotgun,” a throwback to the important position on a stage coach in which a man with a rifle sat next to the driver to shoot at bandits. The front seat passengers of today do much the same thing, only this time it’s, “Watch out for that truck,” or “Don’t hit the pothole,” or, if you’re driving with your spouse, “I TOLD you this was the wrong way!” Hmmm, maybe that shotgun might come in handy… I wondered why it is that kids want to sit in the front seat so much, while the mark of success for a grown-up is to ride in the back and have a chauffeur driving you. I asked my daughter her opinion and she said, “There’s something cool about riding up front, and there’s something different that’s cool about riding in the back.” I guess I can’t argue with logic like that, but I continued to think about it. I hypothesized that since kids can’t drive yet, they like the idea of having a little more control. Getting to sit in the front makes them feel like they’re almost in charge, even if they don’t have the experience yet to tell the driver what to look out for. They may have access to the radio and air conditioning controls, and that’s fun, because in the back they’re stuck with whatever the driver gives them. That would also explain why the successful person is the

one who no longer needs to be concerned with the road, because he has left control in someone else’s hands. It is liberating not to have to worry about the road conditions, other drivers, or keeping your eyes open. Even the climate and soundtrack are not an issue because the driver wants to make sure you are pleased. The ability to sit back and not worry at all is a fantastic feeling that not everyone gets. Most of us still have to drive our own cars to get from place to place. Even on a bus, we need to keep vigilant that we don’t doze off and wind up in a bus depot downtown seven hours later. So, as kids we want to sit up front to be more in control, and as adults we’ve “made it” when we hand over control to someone else and feel comfortable and confident that we will get where we need to. There’s a famous bumper sticker that says, “If G-d is your co-pilot, switch seats.” In other words, if you think you’re driving the car and He’s just sitting there next to you, you’re missing the point of how HaShem runs the world. In truth, He is the one behind the wheel and we are just the back-seat drivers in the front seat calling out obstacles we believe He doesn’t see but which He is keenly aware of. Much as the husband who is driving doesn’t appreciate his wife shrieking, “Look out for that crazy driver!” when his foot has already been on the brake pedal, HaShem doesn’t need us to guide Him in getting us where we need to be. He doesn’t get annoyed with us, but He doesn’t need us to point out the obstacles in our lives because He put them there for a purpose.

If we are mature about it, we will realize that not only is G-d in control, but our efforts to direct Him are unnecessary and pointless. Then, we can take a back seat and realize that He is the one ensuring we will get to our destination and we can ease up a bit. Sometimes we hear great stories of Hashgacha Pratis, Divine intervention down to minute details. When we do, we are astounded and moved. What we often fail to realize is that those are just the ones we recognize and understand. The same careful management is going on constantly, down to the nanosecond. HaShem is intimately involved in every aspect and moment of our lives, making the machinery of life move like clockwork. We don’t need to try to swerve to avoid the pothole because we will hit it or not no matter what we do. Like the child’s toy with a steering wheel on the car seat, it doesn’t really do anything. When we realize that we can actually take our eyes off the road somewhat because we’ve got a capable, responsible driver, we can finally relax and enjoy taking the back seat.
Of course, if you want to sit up in the front not to try to control anything, but just because you like the Driver’s company and want to be closer to Him, that’s a whole different trip. W
hoever misses the Divine hand that touched the Purim story is not looking. And if he claims that he heard the Megilah, he probably was not listening. Imagine, the Prime Minister draws lots and decides to annihilate the entire Jewish nation. Within 24 hours he has approval from the ruler of the not-sofree-world, King Achashveirosh. Within days, the plot is foiled, the Prime Minister is hanged and his prime target is promoted to replace him! Pretty political. Pretty miraculous. And definitely divine. Yet Hashem’s name is not mentioned once in the Megilah. Why? Of course, the Megilah is replete with allusions. There are acronyms that spell the name of Hashem, and our sages explain that every time the word “King” is mentioned in the Megilah, it has a divine reference. But, still, why does the last book of the Prophets, a Divinely inspired Megilah, have only veiled references to Heavenly intervention? It was a sweltering August day when the Greenberg brothers entered the posh Dearborn, Michigan offices of the notoriously anti-Semitic car-maker, Henry Ford. “Mr. Ford,” announced Hyman Greenberg, the eldest of the three, “we have a remarkable invention that will revolutionize the automobile industry. “ Ford looked skeptical, but their threats to offer it to the competition kept his interest piqued. “We would like to demonstrate it to you in person.” After a little cajoling, they brought Mr. Ford outside and asked him to enter a black Edsel that was parked in front of the building. Norman Greenberg, the middle brother, opened the door of the car. “Please step inside Mr. Ford.” “What!” shouted the tycoon, “are you crazy? It must be two hundred degrees in that car!” 38

“It is,” smiled the youngest brother, Max, “but sit down, Mr. Ford, and push the white button.” Intrigued, Ford pushed the button. All of a sudden a whoosh of freezing air started blowing from vents all around the car, and within seconds the automobile was not only comfortable, it was quite cool! “This is amazing!” exclaimed Ford. “How much do you want for the patent?” Norman spoke up.“The price is one million dollars.” Then he paused, “And there is something else. We want the name ‘Greenberg Brothers Air Conditioning’ to be stamped right next to the Ford logo.” “Money is no problem,” retorted Ford,“but no way will I have a ‘Jew-name’ next to my logo on my cars!” They haggled back and forth for a while and finally they settled. One and one half million dollars, and the name Greenberg would be left off. However, the first names of the Greenberg brothers would be forever emblazoned upon the console of every Ford air conditioning system. And that is why today, whenever you enter a Ford vehicle you will see those three names clearly defined on the air-conditioning control panel: HI -- NORM -- MAX. The writers of the Megilah left us with a message that would accompany us throughout our long exile. You will not always see G-d’s signature openly emblazoned upon every circumstance. However, throughout persecution and deliverance, He is always there. And just like on Purim His obvious interference is undocumented; but we know and feel it -- and we search for it, and we find it! So, too, in every instance we must seek His name, find it, and recognize it. It may not be emblazoned on the bumper; it may be hidden on the console -- but it is there. For Hashem is always speaking. All we have to do is listen. Joyous Purim!

Baffled by the Bracha:
The Matzolah Mystery BY RABBI MOISHE DOVID LEBOVITS Rabbinic Administrator and Recorder of Kof-K Policy
L
ast year Kof-K certified two products from Foodman, LLC, called Matzolah; Maple Nut and Whole Wheat Maple Nut. These products combine matzoh, nuts, coconut, raisins, vanilla, maple syrup, and evaporated cane juice, baked to a tasty crispiness. For all those who are hooked on their daily breakfast of crunchy granola, and yogurt toppings, they fill an important void. What Bracha do we make on these creative concoctions? Hamotzi? Mezonos? We first need to clarify the Bracha for matzoh. “The Bracha for matzoh?!” you may ask. “Everyone knows that we say ‘hamotzi.’” Not so simple! According to Rav Hai Gaon, matzoh falls into the category of pas haba b’kisnin (food which is not bread but in the bread family). Crackers and breadsticks fall into this category. Due to their appearance and texture they are not eaten as bread during a meal, and therefore, the Bracha is mezonos. The reason the Bracha for matzoh is hamotzi, according to Rav Hai Gaon, is because on Pesach it is considered a substitute for bread. Halachah related to bread which has been altered in status takes four factors into consideration in determining when it loses its status as bread for purposes of the Bracha: size; appearance; mode of preparation; and intended use. Cooking bread products or soaking them until they lose their original appearance, effectively changes the status of the item to a mezonos, but this is contingent on the pieces being smaller than a k’zayis (the size of an average olive) and the new product losing the appearance of bread. If a

bread item is smaller than a k’zayis and is cooked, the Bracha is mezonos, because it is considered a cooked dish, not a bread product. Now that we have a view of the complex mezonos/hamotzi issue, we can apply these insights to the kosher granola, Matzolah. In manufacturing Matzolah, whole matzoh is ground into smaller pieces that are smaller than a k’zayis. This satisfies the first determinant—size. The ground matzoh and dry ingredients are mixed with hot liquids and baked in the oven. Thus, the product loses its bread appearance and which would change the Bracha to mezonos. This year, a third variety of Matzolah was introduced for which a different Bracha is recited. Since Gluten Free Cranberry Orange Matzolah uses potato-based matzoh-style squares instead of wheat, and contains fruit, the appropriate Bracha would be shehakol. This version of Matzolah is nongebrochts. All three varieties of this product are kosher every day and for Pesach. Foodman sells Matzolah directly from its website, and it is distributed by Aron Streit, Inc. through some national grocery stores. The shelves may be transformed by new, innovative Pesach items, but the halachic issues remain unchanged. With each carefully recited Bracha, we will count our blessings and have the Torah, Talmud, and Shulchan Aruch to guide our steps.

THE STORY IN A NUTSHELL: The Persian empire of the 4th century BCE extended over 127 lands, and all the Jews were its subjects. When King Ahasuerus had his wife, Queen Vashti, executed for failing to follow his orders, he orchestrated a beauty pageant to find a new queen. A Jewish girl, Esther, found favor in his eyes and became the new queen—though she refused to divulge the identity of her nationality. Meanwhile, the anti-Semitic Haman was appointed prime minister of the empire.Mordechai, the leader of the Jews (and Esther’s cousin), defied the king’s orders and refused to bow to Haman. Haman was incensed and convinced the king to issue a decree ordering the extermination of all the Jews on the 13th of Adar—a date chosen by a lottery Haman made. Mordechai galvanized all the Jews, convincing them to repent, fast and pray to G-d. Meanwhile, Esther asked the king and Haman to join her for a feast. At the feast, Esther revealed to the king her Jewish identity. Haman was hanged, Mordechai was appointed prime minister in his stead, and a new decree was issued—granting the Jews the right to defend themselves against their enemies. On the 13th of Adar the Jews mobilized and killed many of their enemies. On the 14th of Adar they rested and celebrated.

LISTEN TO THE MEGILLAH
To relive the miraculous events of Purim,listen to the reading of the megillah (theScroll of Esther) twice: once on Purim eve, Saturday night, March 15, and again on Purim day, March 16. To properly fulfill the mitzvah, it is crucial to hear every single word of the megillah. At certain points in the reading where Haman’s name is mentioned, it is customary to twirl graggers (Purim noisemakers) and stamp one’s feet to “eradicate” his evil name. Tell the children that Purim is the only time when it’s a mitzvah to make noise!

GIVE TO THE NEEDY MATANOT LA’EVYONIM
Concern for the needy is a year-round responsibility; but on Purim it is a special mitzvah to remember the poor. Give charity to at least two (but preferably more) needy individuals on Purim day, March 16. The mitzvah is best fulfilled by giving directly to the needy. If, however, you cannot find poor people, place at least two coins into a charity box. As with the other mitzvahs of Purim, even small children should be taught to fulfill this mitzvah.

A time-honored Purim custom is fo or children to dress up and disguise themselves—an allusion to the fact that the miracle of Purim was disguised in natural garments. This is also the significance behind a traditional Purim fo ood, the hamantash—a pastry whose filling is hidden within a three-cornered crust.
On the Shabbat before Purim (this year, March 15), a special reading is held in the synagogue. We read the Torah section called Zachor (“Remember”), in which we are enjoined to remember the deeds of (the nation of ) Amalek(Haman’s ancestor) who sought to destroy the Jewish people.
THE THE FAST FAST O OF F ESTHER ESTHER To commemorate the prayer and fasting that the Jewish people held during the Purim story, we fast on the day before Purim. This year we fast on Thursday, March 13. The fast begins approximately an hour beffor o e sunrise, and lasts until nightfall.
THE ““HALF THE HALF C COINS” OINS ” MACHATZIT MACHA ATZIT HASHEKEL HASHEKEL It is a tradition to give three coins in “half ” denomina den tions—e.g., three half-dollar coins—to charity, to commemorate the half-shekel that each Jew contributed as his share in the communal off ffe erings in the time of the Holy Te emple. This custom, usually per for o med in the synagogue, is done on the afternoon of the “Fast of Estherr,” or beffo ore the reading of the Megillah.
S SHUSHAN HUSHAN PU PURIM RIM In certain ancient walled cities—Jerusalem is the primary example—Purim is observed not on the 14th of Adar (the date of its observance everywhere else), but on the 15th of Adar. This is to commemorate that fact that in the ancient walled city of Shushan, where the battles between the Jews and their enemies extended for an additional day, the original Purim celebration was held on the 15th of Adar. The 15th of Adar is thus called “Shushan Purim,” and is a day of joy and celebration also in those places where it is not observed as the actual Purim. March 5, 2013

he Los Angeles Jewish Community was rocked by a scandal of the greatest proportions. The owner of Doheny Meats was caught taking delivery of unmarked meats in the parking lot of McDonald’s in Encino. This scandal brought into question kashrut supervision in Southern California. Doheny Meats was under the supervision of a leading agency. All this haappened while the assigned Mashgiach was at morning daavening. Rabbis from throughout the city met. How could this haappen? Up until this time, the city was basically supportive of two kashrut

agencies, the RCC (the Rabbinical Council of California) and Kehila, an independent agency. Bakeries, butchers, markets, and restaurants were pretty evenly divided into “supervised by RCC ” and “supervised by Kehila.” Stores and restaurants paid a fee to one of the agencies and received a Kashrut Certificate, good for a year. Meat restaurants and butcher shops haave the additional requirement of haaving an on-site Mashgiach who supervises the work of the establishments on a daily basis. It seemed that before the Doheny Meats incident all was okay, or was it? With this laapse, every establishment became suspect. Weere all stores kosherr, or were none? The Rabbis of the community won-

How would kashrut supervision continue in the community? Would the community rely on the RCC and Kehila? Or would some other agency take over? Since the time of Doheny Meats, Rabbis haave struggled with what to do, or just do nothing. Finally, a number of Rabbis, acting in concert, established the Los Angeles Vaad Hakashrus. This is a sort of super kashrut supervising agency. At the invitation of the owners of establishments, the Vaad Hakashrus comes in to a store or restaurant. It is essential that the Vaad has the right to enter establishments unannounced and at random times. The Vaad then inspects the establishment and compliance with the guidelines of the main kashrut supervising agency. The Vaad looks into the onsite Mashgiach’s qualifications and the job performed by the Mashgiach. The Los Angeles Vaad Hakashrus has consulted with a variety of supervising agencies worldwide, includ-

ing the OU (Orthodox Union), in establishing protocols for kashrut supervision. When the Vaad comes into an establishment, it reports back to the original supervising agency any shortcomings or suggestions for improvement. Establishments that meet all of the necessary requirements are placed on a list, a list of establishments meeting all of the criteria for kashrut supervision. Is this additional step in the process necessary? Why can’t the RCC and Kehila supervise without any intervening agency? Does this checking of the supervision really increase the reliability of the process? The public needs affirmation in the process. Doheny Meats brought into doubt the entire process. Few could trust the system any more. The Vaad Hakashrus has brought trust back into the process. This is good. However, did one bad apple really raise questions about everyone, whether the initial system of supervision could not be trusted in its entirety? On the Vaad Hakashrus’s approved list of kosher establishments are only a relative handful of all of the establishments approved by the RCC and Kehila. Does the absence of an establishment from the Vaad’s list mean that that establishment does not meet kashrut standards? And what’s to stop a store owner on the approved list from waiting until the Mashgiach

takes a break to bring in packaged meats from another source? And from now on, will stores have to answer to two kashrut agencies? And what will happen when the next lapse in kashrut supervision happens? Will there be a fourth agency? A fifth? When there is a crisis, there need be steps to calm the people. The Vaad Hakashrus provides this calm. But eventually the calm will return, along with trust in kashrut supervision. The Vaad Hakashrus exists for a current purpose. It exists to calm the kosher-consuming public after an outrageous event which struck one of the leading kosher establishments. However, when calm returns, it will be best that Kashrut supervision stays in the hands of the RCC and Kehila. Having multiple levels of kashrut supervision may be good for the time being, but this is not a way to go for the long haul. The RCC and Kehila have a job independently of the Vaad Hakashrus. They have to educate the public as to the requirements for kashrut supervision. They have to restore trust in their supervision. They have the opportunity to show that Doheny Meats was the exception and not the rule. Then, there will be no need any longer for the Vaad Hakashrus. Robert J. Recipe Corner SLOW BRAISED SHORT RIB KREPLACH I love the entire process of braising, and especially relish the fact that I can get double-duty from one batch of melt-in-the-mouth short ribs. I always make extra short ribs and use the tender meat in soups, pasta dishes and these kreplach. I serve the kreplach as a comforting addition to soup or as a playful addition to salads. I also like to crisp up the little purses and serve them on a platter as a hors d’oeuvre. For a crispy appetizer or salad “crouton,” after boiling the kreplach, cook the kreplach in batches over medium heat in a sauté pan with about ½ inch of olive oil until lightly browned and slightly crisped on both sides. For a special occasion and over-the-top presentation to make VIP kreplach, dust the top of the kreplach with edible gold leaf (found at specialty gourmet stores or online). Serve with garlicky-aioli or your favorite dipping sauce. Times Prep Time : 2 hours Cook Time : 10 min Ready Time : 2 hours, 10 min

3. Heat a large Dutch oven or braiser over medium heat. Working in batches, brown the short ribs on all sides until they are crispy and caramelized (about 5 minutes per side).
Ingredients 5-7 pounds English cut short ribs (English cut short ribs yields big chunks of tender meat versus fl anken cut which has very little meat) 2 medium carrots, cut into large dice 2 ribs celery, cut into large dice 1 medium Spanish onion, cut into large dice 8 cloves of garlic, minced 1 bottle red wine 1 cup chicken stock (homemade preferred) 3 tablespoons tomato paste 1 bouquet garni (parsley stems, celery rib, thyme stems, bay leaf) ) salt and pepper won ton wrappers or hoemade kreplach dough cilantro coconut chutney
FOR THE SHORT RIBS 1. Preheat oven to 325° or slow cooker to low. 2. Season short ribs with salt and pepper.
4. Drain off all the fat but two tablespoons. Add the carrots, celery and onions to the pan. Brown the vegetables until they are golden brown (about 7 minutes). Add the garlic and continue cooking for two minutes until the garlic has softened slightly and is very fragrant. Add the tomato paste and stir to coat the vegetables. Add the red wine and chicken stock and continue cooking until the liquid has reduced in half. 5. Add the short ribs and bouquet garni to the pan and cover. Cook for 3 hours, or for 8 hours in a slow cooker, until the short ribs can be easily pierced with a fork and have no resistance. 6 Gently remove the short ribs and vegetables from the Dutch oven. Discard the vegetables. Reduce the liquid until you have a thick glaze (about 2 cups). FOR THE KREPLACH 6. Shred the meat with your hands and discard the fat, bones, and membranes. Run the meat and onions through a meat grinder with a medium blade, or pulse in a food processor. (I like my kreplach meat to have a little texture to it and not be pasty.) Combine the ground mixture and skimmed liquid in a sauté pan and cook over medium-high heat until the mixture is only slightly moist. Season with salt and pepper. Refrigerate while you prepare the dough. Prepare the dough using this recipe for kreplach dough. 7. Lay one sheet of dough on a floured surface. Trim the dough to a rectangle. Place a walnut size amount of filling every 2 inches. Brush the dough with water around each mound . Line a sheet pan with parchment paper. If using wonton skins, cut them into two 2½ inch squares. Working in batches, lay out the kreplach dough or wonton squares on a lightly floured work surface. Lightly brush the squares with water. Place a teaspoon of meat in the center of the square and fold over to form a triangle. Push out any air bubbles and press the edges together to seal. Place the kreplach on the sheet pan. The kreplach can be frozen at this point and stored in a heavy freezer bag for up to 3 months. 8. To cook the kreplach, bring a large pot of water to a boil. Boil the kreplach until they float to the top, about 5 minutes. With a slotted spoon or wire skimmer, transfer the kreplach to a sheet pan. 9. Recipe Corner CAMEMBERT HAMANTASCHEN WITH APPLE CINNAMON FILLING With this hamantashen recipe I combined sweet and savory flavors using the classic pairing of cheese and apples. The flavor and texture of the melted camembert works perfectly in this new kind of hamantashen cookie. Times Prep Time : 20 min Cook Time : 15 min Ready Time : 35 min
Servings 18-20 cookies
Ingredients 4 eggs 1 cup oil 1 1/4 cup sugar 2 teaspoons vanilla 1/2 - 3/4 wheel of Les Petite Camembert (NO RIND) 3 teaspoons baking powder 5 1/2 to 6 cups flour 1 tbsp lemon zest 1 small jar of apple cinnamon preserves
Directions Preheat Oven: 350 degrees 1. In a medium mixing bowl, mix together eggs, oil, sugar, cheese and vanilla. Next, add baking powder and flour to the bowl and mix well to combine. Finally, add the lemon zest and give it one more good stir. 2. Knead the dough until smooth. Flour a rolling pin and roll out to roughly 1/8 inch thin on a floured board. 3. Using a round cookie cutter or a drinking glass with a wide opening, cut out circles (use the scraps to make cookies as well, just keep forming into a large ball and rolling out thin and repeat process until dough is done). 4. Put a small dollop of filling in the center of each circle. 5. Have a glass or small bowl of a little bit of cold water near by so that you can dip your fingers in to help fold the dough into three sides over the filling forming a triangle (water acts as a glue to the dough and will help edges stick). Bake at 350 degrees for 15 minutes on a greased cookie sheet. Reprinted with permission from www.joyofkosher.com.
CHEWY CARAMEL PRALINES Times Ready Time : 30 min Servings 30 pralines Ingredients COATING 10½ ounces chocolate FILLING 1 cup sugar ¾ cup non-dairy whipped topping 1 tablespoon honey 3½ ounces white chocolate (pareve or dairy) ¼ cup chopped Craisins ¼ cup chopped pistachios ¼ cup chopped roasted hazelnuts (optional)
Directions 1. Prepare the coating. Melt chocolate. Fill molds with chocolate up to the top. Wait 2 minutes and turn molds over on a sheet of parchment paper to drain off excess chocolate (the exterior of the chocolate will remain in the mold, creating a cavity in the center for you to fill). Reserve excess chocolate. Clean off the surface of the molds with a spatula and freeze for 10 minutes. Remove molds from freezer. 2. Prepare the filling. Place a saucepan over medium heat. When hot, pour sugar into pan and melt until sugar turns honey-colored. Slowly add whipped topping and honey and stir with a wooden spoon until completely smooth. Remove from heat and add white chocolate. Stir until chocolate melts. Add Craisins, pistachios, and hazelnuts (if using). Cool for 5 minutes. Carefully fill molds almost to the top, but not quite, leaving room to seal the bottom of the pralines with chocolate coating. Freeze for 2 hours. 3. Melt excess chocolate reserved from the first stage of the coating. Remove molds from freezer and top up filling with a thin layer of chocolate that completely covers the filling and creates a base for the praline.
