During the pandemic Small businesses have faced unprecedented challenges this year. As the COVID-19 pandemic wore on throughout the year, small businesses continued to confront the economic fallout wrought by the virus. According to the National Bureau of Economic Research, the number of active business owners in the United States plummeted by 22 percent in the early stages of the pandemic. Though many businesses managed to hang on as the pandemic continued through spring, summer and fall, such businesses need their communities to continue to help them stay afloat. Consumer spending is increasing in various industries over the summer of 2020. As consumers loosen their purse strings and we begin spending more, we can embrace some unique ways to help small businesses in our community. • Support struggling industries. We may not typically give much thought to whether an industry is struggling before spending our money, but doing so can help small businesses that have had an especially difficult time during the pandemic. Sales in the clothing and accessory and food services and drinking places industries were still down nearly 20 percent in July. Supporting locally owned businesses in these industries can infuse some much-needed cash into their operations. • Think twice before buying from big box online retailers.

Pets bring much joy to the lives they touch. So it should come as no surprise that the 2020 international pandemic has made record adoptions/purchases of companion pets. Pets offer companionship and unconditional love. While they are fitting for any family, seniors may find that having a pet is especially beneficial. The organization A Place for Mom, which helps match families with senior living residences, says pets provide a comfort system that produces measurable health results. Caring for pets and being around them can produce a chemical chain reaction in the brain that may help to lower stress hormones while also increasing production of the feel-good hormone serotonin. This is not the only health benefit pets may provide. A recent study from the Mayo Clinic, which looked at 1,800 people between the ages of 25 and 64 who had healthy hearts, found that almost half owned a dog. healthy behaviors, like exercising with the pet, eating well and having ideal blood sugar levels. Pets also provide emotional support and companionship that can help seniors — including those who may be divorced or widowed — feel more secure and happy. A national poll on Healthy Aging found that, among respondents who had pets, 88 percent said their pets helped them enjoy life, and 86 percent said their pets made them feel loved. Seniors considering getting a pet can explore the many benefits to doing so. • Reduce pain: A study published in Pain Magazine found therapy dogs provided “significant reduction in pain and emotional distress for chronic pain patients.” • Feeling of purpose: Caring for an animal not only stimulates physical activity, but it also can give seniors a reason to get up and go, which equates to a feeling of purpose. • Altered focus: Having a pet can help seniors focus on something other than physical or mental health issues and preoccupations about loss or aging. • Increased physical activity: Pets require care, and

Constant news surrounding the coronavirus pandemic have people wondering – “Is it safe to go to the eye doctor?” It’s comforting to know that even in today’s uncertain conditions, eye care and cataract surgery are considered extremely safe. According to the American Academy of Ophthalmology, cataract surgery remains the safest and most frequently performed procedure in the United States. A recent study of 200,000 Medicare beneficiaries confirmed that 99.5 percent of cataract patients experienced no severe postoperative complications after surgery. But you may wonder how the current COVID reality has changed in-person medical appointments, especially as restrictions on out-patient surgery has been lifted throughout the state. Eye care centers are actively implementing current recommendations from the CDC and the Florida Department of Health as they resume full services. “We immediately implemented enhanced safety protocols at our facility. We’ve found that patients really appreciate the extra safety measures and are happy to be back!” confirms Victor Basile, Administrator at Florida Eye Institute. “We require temperature checks and facial coverings for all patients and staff, and we’ve staggered appointment times to reduce the number of people in the facility at any one time.” It’s important to remember that regular eye checkups are vital to maintain healthy vision. Eye disease often begins without warning and can lead to serious vision loss if not treated early.

poisonous? Christmas trees, Santa Claus, menorahs, and glittering lighting displays are just a few of the many prominent symbols of the holiday season. And while mistletoe might garner more attention and inspire more displays of affection, poinsettias are another prominent sign that the holiday season has arrived. Thanks to its bright red and green colors, the poinsettia is perhaps the ideal holiday plant. But as much as it suits holiday decor and seems tailormade for that special time of year between Thanksgiving and the first of January, the poinsettia has a reputation that few plants would want. First discovered in Mexico and brought to the United States by Dr. Joel Poinsett, the poinsettia has long been rumored to be poisonous. However, the National Capital Poison Center notes that poinsettias are not deadly. In fact, the NCPC notes that the rumor that poinsettias are deadly may have been around for more than a century, tracing its origins all the way back to a child who was found dead lying next to a poinsettia plant. The plant was blamed for the child’s death, and even though that blame was misplaced, the stigma stuck. Even today, when researchers have long since proven that poinsettias are not deadly, many people still believe they can be fatal if consumed. The NCPC notes that, in most cases, exposure to any part of a poinsettia plant in children or pets has little, if any, effect. However, if the plant is swallowed, some people and pets may experience symptoms including nausea, vomiting or diarrhea. Some who touch the plant may develop a rash after contact. While poinsettias are not deadly, the Poinsettias are seemingly everywhere come the holiday season. And because they’re not fatal, celebrants can continue to display these beautiful plants that call to mind the colors of the holiday season.

Turkey can be cooked in various ways, but roasting might be the most popular method used by Thanksgiving celebrants. . Herb-Roasted Turkey Serves 10 12 tablespoons (11/2 sticks) unsalted butter, softened 1/4 cup packed fresh flat-leaf parsley leaves, chopped, plus 4 whole sprigs 1 large sprig fresh rosemary, leaves chopped, plus 2 whole sprigs 1 tablespoon chopped fresh thyme, plus 4 whole sprigs 15 leaves fresh sage, chopped, plus 3 whole leaves 3/4 teaspoon kosher salt, plus more for the turkey 1/2 teaspoon freshly ground black pepper, plus more for the turkey 1 15-pound turkey 1 lemon, quartered 8 shallots, peeled and halved 1 head garlic, cloves separated and peeled 4 cups low-sodium chicken broth or stock

2/3 cup dry white wine 3 tablespoons all-purpose flour 1. In a small bowl, combine the butter, chopped parsley, chopped rosemary, chopped thyme, chopped sage, salt, and pepper, and mix well. 2. Position a rack in the bottom third of the oven and preheat the oven to 450 F. Sprinkle the main cavity of the turkey with salt and pepper. Place the whole sprigs of parsley, rosemary and thyme and the sage leaves into the cavity. Add the lemon, 4 shallot halves and half of the garlic cloves. 3. Starting at the neck end, carefully slide a hand between the skin and the breast meat to loosen the skin. Spread 3 tablespoons of the herb butter over the breast meat under the skin. Tuck the wing tips under the skin, and tie the legs together to hold the shape. Season the turkey generously all over with salt and pepper. 4. Place the turkey on a wire rack set in a large roasting pan. Rub 4 tablespoons of the herb butter over the turkey. Roast about 30 minutes, until golden brown, and reduce the heat to 350 F. Baste the turkey with 1/2 cup of the broth. Cover only the breast area with a sheet of heavy-duty aluminum foil. Scatter the remaining shallots and garlic cloves in the pan around the turkey. 5. Continue to roast the turkey for about 11/2 hours, basting with 1/2 cup of broth every 30 minutes. Remove the foil from the turkey breast. Continue to roast the turkey, basting with pan juices every 20 minutes, about 1 hour longer, until it’s golden brown and a thermometer inserted into the thickest part of the thigh registers 165 F. Transfer the turkey to a platter and brush with 1 tablespoon of the herb butter. Tent it loosely with foil and let it rest for 20 minutes before carving.

6. Using a slotted spoon, transfer the shallots and garlic from the roasting pan to a plate. Transfer the pan juices to a medium bowl, then skim off and discard the fat. Set the pan over two burners on medium-high heat. Deglaze the pan with the wine and 1 cup of chicken broth, scraping up any browned bits. Bring the sauce to a boil, reduce the heat to medium, and cook until it’s reduced by half, about 4 minutes. Pour the sauce into a large measuring glass. Add the degreased pan juices, and broth, if necessary, to equal 3 cups of liquid.

7. Blend the flour into the remaining herb butter until combined. Pour the broth mixture into a medium saucepan and bring to a boil. Gradually whisk in the herb-butter mixture. Add any accumulated juices from the turkey platter and boil until the gravy thickens enough to coat a spoon, whisking occasionally, about 6 minutes. Add the remaining shallots and garlic to the gravy and simmer for 1 minute. Taste and adjust the seasonings, if necessary. Serve the turkey with the gravy. www.facebook.com/CommunityValuesMagazines

While communities and homes provide various services, one service in particular may be needed for seniors with Alzheimer’s disease, other dementias or memory problems. Memory care units are separate facilities that cater to people with dementia or other memory issues. According to the senior, memory care is a distinct form of long-term skilled nursing. Also called special care units, memory care facilities provide 24-hour supervised care for individuals. This care is often carried out in a separate wing or floor of a residential facility or community. Memory care facilities aim to provide a safe and secure environment for residents. This means limiting entry or egress to other areas of the facility for those who may have trouble navigating and remembering where they started out. The Alzheimer’s Association notes that six in 10 people with de-

mentia will wander and become disoriented. This is dangerous for the individual and others. Memory care units often have alarms and “wander guard” precautions in place to make sure residents cannot roam unsupervised and risk injury. Another goal of memory care is to provide a stress-free, structured lifestyle that has set schedules and routines. This can help keep distress minimal and make for more comfortable and happy residents. In addition, memory care units offer programs that help slow the progression of dementias and cultivate cognitive skills. Fitness exercises, games, specialty food programs, activities, and much more may be offered to make residents more comfortable. Memory care facilities include common spaces for socialization, meals and activities. “Alzheimer’s patients must maintain their activity, walking, interacting with music, and art,” says Lory Bright-Long, MD, CMD, of the American Medical Directors Association. “We have to awaken the senses so that the memory can have a hook. This is accomplished in the memory care setting.”
