There’s really no better time to gather up your loved ones all under one roof for yuletide celebrations and a delicious Christmas feast. If you’ve been given the task of cooking the Christmas dinner, fear not, our columnist Rosemary Jameson has some great ideas for homemade finishing touches that are sure to impress all your guests. And our wine guru, Leigh Johnson, has an extensive guide for a wine to match all meals throughout the day, from breakfast to supper. And before you know it, Christmas day is over and we all start thinking about that next big event – New Year’s Eve. Whether you’re going out or staying in, we’ve got a few ideas to make the most of your night. Our new writer, Tracy Thomas, profiles a couple of the local hunts that happen on Boxing Day and New Year’s Day if you fancy catching a glimpse of the hounds and horses. COMMUNITY NEWS
Community News Work starts on NEW PLAYGROUND
for Belton House I
t’s taken 10 months to get planning permission, but this month work will finally start on the £1.4 million renovation of the outdoor adventure playground at Belton House in Grantham, a muchloved feature that has seen generations of fans.
The National Trust property is famous with locals for its outdoor adventure playground which opened in 1976. Over the years much of the original equipment has had to be replaced, the ground has become heavily compacted and the specimen trees have suffered from having play equipment attached to them. “Hundreds of thousands of children have played here over the past 40 years,” explains Ali Keightley, Belton’s project
manager. “But the playground is showing signs of wear and tear from all those feet. We know parents who came here as children now bring their own families to play and we want that tradition to continue for generations to come.” The plans include a two bespoke play structures, one of which includes a tower with internal maze, new play equipment, toilets and a catering kiosk. As much of the existing play equipment will be retained and reused as possible with the existing tube slide used in the new tower. The whole play area will shift south to open up the view to the gothic ruins. There will also be a new train station and the entrance to the play area will also shift to the south. The renovation will happen in two phases, with the existing fort and toddler play area being removed in phase one. The tower play structure will open in March 2015, with the toilets, catering kiosk, train station and new entrance coming in phase two and opening in May 2015.
Artist’s impression of the new play tower.
“We know that its woodland setting is one of the most loved features of the playground, so we’ve made it a priority to enhance that within the new design. We’re also working hard to ensure that the new playground respects the landscape and historic character of this place, says Ali. The National Trust is working with specialist tree house designers, Blue Forest, to create bespoke play features which will sit alongside firm favourites such as zip wires, swings and tube slides. The new playground will be open 364 days of the year, closing only on Christmas Day. Entrance will still be free for National Trust members and, as with the existing playground, an admission ticket will be needed for non-members.
The tube slide will be recycled in the new play tower.
Draft plan of the new play area by Blue Forest The miniature train will soon have a new train station.

Stamford FASHION SHOW STAMFORD
S
tamford High School pupils put on a fashion show for 190 guests in November to raise money for a sports tour of South Africa in summer 2015. The pupils are fundraising for 59 girls to take part in a two and half week netball and hockey tour. Five staff members will accompany the girls as well.
Fundraising is a crucial element of any long haul sports tour and the girls wanted to do something fun that they would enjoy and could all take part in. With an army of helpers who made the evening possible - parents, friends and staff - the models were selected and put through their paces, and the pupils would like to say a huge thank you to Jem’s Hip Hop for the dancers and overseeing the choreography. Thanks to the long association between the Stamford Endowed Schools with local retailers, clothes were generously provided by Energy, Seaweed, Jaegar, White Ginger and Medasun . Hair was styled by Claire at The Loft and make up by Sarah and her
team at Stamford Beauty. Guests were greeted with a glass of fizz followed by a meal, then the fashion show. A raffle included the chance to win an iPad, various hampers and vouchers from local stores. After the fashion show guests were able to browse amongst a variety of stalls and start their Christmas shopping. While in South Africa, as well as playing in a number of sporting fixtures, the girls will also visit a game reserve, Robyn Island, and a local township. The girls have a number of other fundraising activities planned including a sponsored walk in April, where they will walk the distance that some children in Africa still have to walk to get to school or collect water.
Burghley Park Cricket Club Search For New Groundsman
W
ould you like to be responsible for one of the most picturesque cricket clubs in the country? The position of groundsman at Burghley Park Cricket Club in Stamford, Lincolnshire, is currently vacant and the club are looking to find someone in time for the 2015 season. Previous groundsman experience is preferred, but each applicant will be assessed on an individual basis. The role does require someone that enjoys
working in an outdoor environment, with a care to detail and high standards. The main role of the groundsman is to ensure the general maintenance of the ground, including the preparation of the cricket square for matches to the best possible quality. It will require approximately 15 hours of work per month, although this may be more during the summer but minimal time during the winter. Training can be given if required and the club is prepared to subsidise groundsman courses for the right person. The club is also prepared to offer a remuneration package, although being a community club the amount is modest.
Christmas Concerts
I
t's beginning to sound a lot like Christmas around Stamford as the festive concert season gets into full flow. The Town Hall Court Room will be the venue for 'An Advent Calendar' with the St Martin's singers at 7.30pm on Wednesday 17 December. The ladies of St Martin's, Stamford's womens voices choir, are presenting a programme of 24 Christmas themed pieces, as per an advent calendar. Their concerts are described as 'A renaissance motet rubs shoulders with an opera aria and a Christmas carol is followed by Mel Tormé. It promises to be great fun'. Tickets are £12 (£9 concessions). Saturday 20 December, St John's church will host 'Sound the Trumpet'. The concert is described as 'Festive arias and sparkling trumpet tunes,' and will feature soprano Caroline Sharpe, Andy Harris, trumpet, and organist Fergus Black. Starting at 7.30pm the concert begins with the Te Deum Prelude by Charpentier and will also include virtuoso arias with trumpet such as Let the Bright Seraphim and Jauchzet Gott, plus a delightful Christmas cantana by Telemann and other familiar songs and duets. Tickets are £15 (£10 concessions) and include a welcome glass of Prosecco. Tickets can be purchased from Stamford Arts Centre on 01780 763203.
Burghley Park Cricket Club is a growing club, with a Saturday 1st and the introduction of a 2nd XI in 2015 as well as a Sunday Friendly XI, a Midweek XI and two junior teams at U9s and U11s. So there is plenty of cricket for its members, but without a groundsman this just isn’t possible. There is a great sense of community within the club, with many social events throughout the year and the club plays host to one of the biggest cricketing events of the calendar every July, Cricket Week. It’s a great opportunity for the club to showcase its grounds and the stunning 150-yearold pavilion, all set within the Burghley House Estate. For more information or to apply for the position email groundsman@burghleypark.com or call Club Chairman Simon Stephenson on 07976352327. DECEMBER 14 CONCEPT MAGAZINE / 9

purchase their advent calendars, small gifts, tags, wrapping paper, and napkins, with 70p out of every pound for cards sold going to support 44 local and national charities. The community spirit does not end simply with the sale of all things festive and the subsequent benefit to such worthy causes. There is also a Christmas tree festival at St John's until 12 December.

5 Things to do Plant garlic Traditionally, garlic is planted on the shortest day (December 21) and harvested on the longest ( June 21). Break garlic bulbs into individual cloves for planting. Take care not to damage the cloves as this can lead to rotting. Plant the cloves in well-prepared soil spacing them 10cm (4in) apart. Simply push the cloves into the soil so that the tip of each one is just below the surface.

The Phone
Guru I
spoke about ‘the Cloud’ and online services in previous months, but just to recap: ‘the Cloud’ is a virtual server, hosted remotely through the internet. Data and files can be accessed securely from any device with an internet connection. O2 Business have teamed up with some of the ‘big boys’ of the digital world to help keep your data and devices even safer, more secure and synced with as little effort as possible. There are four new products that can work great on their own or even better together with O2 Business Solutions!
McAfee MultiAccess is an amazing
Microsoft Office has been around for quite some time now. Most of us will have had some experience with Word, PowerPoint or tackled a few sums in Excel. Now Microsoft have come up with Office 365, this is an online version of the office suite that we all know and love so it is with you all the time, on all devices, anywhere in the world (providing you have an internet connection). It will always be up-to-date with all your documents and emails, you can even have the experts at Microsoft make a website for you or your business Office 365 will work with any mobile device, be it a Mac or PC, or even an iPad or Android tablet. Your Office will be with you everywhere you go. Box.net offers 100GB
of online storage, great for storing all your documents, photos or Death Star plans. It is perfect for multiple devices that are being used by lots of people and/or work colleagues, you can even keep track on who or where all of your storage is being used and who is sharing what. Syncing is automatic between your smartphone or PC and you can access your files from the Box website if you’ve left your device at home. Online storage if fully encrypted and is safe and secure, as it is with Office 365.but security is very important to all of use which brings me nicely onto O2’s third digital product...

product can protect all your devices and documents all at once against viruses, spam, malware and identity theft. Five devices can be protected with one licence, so it’s not just for businesses but for the whole family. If a phone or tablet is lost or stolen, it can be tracked or remotely wiped and locked so nobody can use it. It will also keep track of all your password safely and securely, it’ll be more secure then the little black book it the hall drawer.
Tu Go is now
available for all O2 Business customers and allows you to receive calls, texts and voicemail over wifi. Your O2 number will work on more than just your phone, so you can call on your laptop or text on your tablet. The Tu Go app is free to download and is a subscription-free service. If you travel a lot with your business, this will be perfect as you will avoid all roaming charges if you use Tu Go over wifi. So there is an online solution for everyone, whether you need it for business or not. I’m here at the O2 store in Stamford for all your techie needs and questions and you can easily book online at o2.co.uk/guru, pop in and see me or call.

OUT&ABOUT
Little Miss Adventures Out and about with kids around Peterborough, Stamford & Bourne
Toddler ice skating
at Planet Ice, Peterborough I ce skating with a toddler isn’t as crazy as it sounds. Michelle Board heads along to the special ice tots session at Planet Ice in Peterborough to check it out.
I have to admit, I would never have considered taking a toddler ice skating until my aunt in Holland suggested it last time we visited and Little Miss loved it. I promised her I’d take her skating again back in Peterborough, so we went along to one of the ‘ice tots’ sessions at Planet Ice. The ice tots session runs 10-11am on Sunday mornings. It is especially for kids 18 months to 5 years. I wasn’t really sure what to expect, and I have to say I was surprised at how many people had turned up. Top tip #1, get there early. I arrived just on 10am and ended up queuing for about 10 minutes. When I spoke to Planet Ice about this, they said that winter is always really busy and they recommend arriving early if you want to take full advantage of skating the whole hour.
Just a couple of things about skate hire that I found out: • Younger children can wear double-bladed adjustable skates that strap to their shoes. Ask for these at reception when you pay (also need a £10 deposit). • Proper ice skates start at child’s size 7 (UK). If your little one is close to this shoe size I would strongly suggest going for a pair of these skates. I saw quite a few mums and dads on the ice fiddling around with the adjustable ones – they didn’t seem to fit (or stay adjusted) that
well. I saw at least two or three pairs being carried around by mum/dad as the little one didn’t want to wear them. • Your child doesn’t need to wear skates. They can just go on in shoes. • Likewise, adults can go on in shoes. If you want to go on in skates, you pay £2 for skate hire. Personally, I didn’t bother as I didn’t think I would get much of a chance to do any skating. There was an area on the ice designated for ice tots (maybe 1/3rd of the ice rink) and there were lots of toys for the kids to play with, including penguins (which the kids could hold onto and push along), sledges, ride-on cars and skittles. The lovely thing about this session is because it is for 5 years and under, there are no bigger kids zipping around and getting in the way of the little ones. Although there had been heaps of people queuing when I arrived, it wasn’t that crazy on the ice. You didn’t need to skate around in a clockwise direction or anything like that. Everyone just did their own thing. Little Miss really liked skating with the penguin. She didn’t quite have enough strength to propel it forward herself, so I pushed it from behind. She seemed to do better when I pushed it faster – seemed to help her keep her balance. Near the end Little Miss decided she wanted to go on one of the ride-on cars. We had quite a lot of fun with that, as she couldn’t push it herself

with skates on, so I had to push and we got sideways quite a few times. We ended up skating for about 40 minutes and had a great time. Little Miss is still talking about it, so we’ll definitely be going back. This is probably how Jane Torvill started out!
Location Ice tots takes place every Sunday morning from 10-11am at Planet Ice in Peterborough. Planet Ice is in Mallard Road, off Bretton Way (PE3 8YN). Car parking There is plenty of free car parking around the back of Planet Ice.
£ Prices
The ice tots session is £6.20 for one child. Any additional children are only £1.50. This includes skate hire. There is no charge for adults, except if you want to hire skates, which is £2. You can get a free ‘ice card’ on the Planet Ice website which will save you £1.50 each visit. www.planet-ice.co.uk
Eating and drinking
There is a cafe at Planet Ice serving fast food – burgers, chips, hot dogs and the like. I didn’t eat there, but it is open in the weekends and school holidays whenever skating sessions are on. There is a microwave to heat up baby food. There are also lots of vending machines in the skate hire and reception area for chocolate, crisps, sweets and cold drinks.
Facilities There is an accessible toilet just by skate hire with a baby changing table. You can wear your ice skates in the toilets.

Celebrate Christmas
With These Wonderful Wines
I
f ever there is a time to push the boat out, surely, Christmas is one of those occasions. This is an opportunity to give your family and friends a real treat, not to vainly impress; but to share and celebrate. Our resident wine expert, Leigh Johnson shares his favourite wines for the festive season.

26-51_C9.indd 27
Our Christmas day morning usually starts with smoked salmon, be it with bagels and cream cheese or scrambled eggs and a wonderful match is to pair it with champagne. This is not the time to bring out your prized Krug vintage. Go for a standard non-vintage champagne. Supermarkets discount very heavily around Christmas and you should be able to pick up something in the region of £15 per bottle. In recent years I have seen Heidsick, Lanson and De Vallois all available at this price or below so you should have no problem securing a bargain. Mid-morning is often a time for mixed nuts and dried fruits. A perfect match for these treats is a dry, manzanilla or fino sherry. Look out for Hildago La Gitana. It retails for £10 or under and is a quite exceptional complement to salted almonds or charcuterie nibbles. Sherry is a forgotten wine but I urge you to revisit it, it is quite stunning. When guests arrive we like to open a few bottles of fine champagne. Nothing is as uplifting and decadent as champagne; there is just something special about the occasion of opening a bottle with a whispered ‘pop’ and a fine stream of bubbles to welcome your guests. This year we shall have Moet a Chandon 2004 vintage champagne and it is still quite widely available for around £45 per bottle. For those on a budget, a good Cava (which is made in the same traditional method as champagne) is an excellent substitute. Freixenet Cava, available in most supermarkets, sells for under £10 and will not disappoint. We then arrive at the main event; the Christmas diner. This is actually quite a complex dish from a wine matching point of view. Turkey itself has little flavour: it is the accompaniments and sauces that really make this dish shine. The best white wine match by far is a classic white
Burgundy. Made exclusively from the Chardonnay grape, you are looking for a wine with a touch of oak to give it weight and depth but with enough acidity to cut through the richness of the sauces. A wonderful match is the Joseph Drouin, Rully, premier cru from Waitrose at £16. This is a bit of insider’s secret, coming not from the Cote D’Or itself, where the most expensive Burgundies are produced, but from a lesser appellation called Cote Chalonnaise, slightly to the south. Turkey is equally suited to those who prefer red wine. Indeed, practically any red will work but aim for wines with not too much tannin. This year, we are having the Cune, Reserva, 2009 Rioja, which retails at around £13. Rioja is matured in American Oak, rather than the traditional French oak. This gives the wine a sweeter, more immediate flavour; neither unyielding nor austere. Rioja tends to be a softer, rounder wine with notes of rose petals, strawberries and autumnal red and black fruits. This wine would be very well suited too for those having roast beef instead of turkey and at this price it really is a steal. For the cheeseboard, any of the leftover white and red wines mentioned above will work well. Additionally, a Late Bottled Vintage Port (LBV) is fantastic with Stilton and cheddar and a Sauternes with creamy, salty blue Roquefort. With dessert, look for wines that mirror the candied fruits, apricots, raisins and sultanas, cinnamon and other spices of Christmas pudding. A Rutherglen Muscat from Australia or a Banyuls from south west France would be simply delicious and none of these pudding wines need cost more than £10 per bottle. Christmas really is a time to enjoy your wine. I would urge you to spend a little more than one might on everyday wines and I am certain you will be handsomely rewarded by your guests delight.

CHRISTMAS
COMES BUT ONCE A YEAR
O
nly a few weeks to go - the clock is ticking. Rosemary Jameson has some easy last-minute recipes that are certain to impress your guests, but take next-to-no-time to prepare.
Rosemary Jameson runs her own business, ‘Rosie Makes’, supplying shops, cafes and hotels with delicious artisan preserves. She also runs classes in preserving techniques from her base in Rutland. She’s active with the Women’s Institute and runs The Guild of Jam and Preserve Makers, a central focus for all preservers and authorities such as Trading Standards and Environmental Health.
There still seems to be so much to do, which is silly really - it happens every year - why do we get in such a flap? There are lists everywhere - gifts, visitors, cooking and all of those last minute finishing touches. Here are some quick-to-make ideas that can save you time and stress. Firstly, brandy butter. Make plenty, use some yourself and then take some as a gift when visiting neighbours or friends. It looks pretty packed in a small clip top jar with maybe a sprig of holly tied with ribbon. Serve with your mince pies or Christmas pudding - or try spread on crusty hot toast topped with my mincemeat recipe from October’s issue. Secondly, make some pesto. Pesto is a great standby to have in the fridge and makes a simple lunch for unexpected visitors. Just stir through cooked pasta and then grate more fresh parmesan and a
little nutmeg over the top for ‘Hey presto, pasta pesto!’ Pesto is also useful for quick canapes cut bought puff pastry sheets into squares about 5cm then push gently into mini muffin tins. Add a nugget of brie or camembert and bake 15-20 minutes until straw coloured. Cool slightly then top with a small spoonful of pesto or cranberry relish (see recipe in November’s issue) and serve while still warm. Finally, one last little easy gift to make pickled pears. These are simple to make and absolutely moreish. They’d be perfect on Boxing Day with cold meats. We have them at lunch on my class days in the winter - it all starts off quite politely and ends up with us eating them straight from the jar! Have a really lovely Christmas and enjoy all of your homemade goodies.

Brandy Butter
Easy Peasy Pesto
80g/3oz fresh basil leaves 45g/2oz pine nuts 5 tablespoons olive oil 45g/2oz freshly grated parmesan 1 clove garlic sea salt and freshly ground black pepper
Place all of the dry ingredients into a food processor and drizzle in the oil with the motor running until thick but still fairly loose. Store in the fridge for up to three weeks.
125g/4oz butter 125g/4oz icing sugar 2 tablespoons boiling water 3 tablespoons brandy
Soften the butter and beat in the sugar and boiling water. Beat in the brandy. Put into a jar or pretty dish, cover and refrigerate. That's it! Note: You can use rum instead of brandy but then you will be making rum butter…
Pickled Pears makes about 1.5kg/3lbs
1.5kg/3lb 5oz cooking or hard pears a bowl of salted water 600ml/1 pint distilled malt vinegar 1 teaspoon mixed spice half teaspoon freshly grated nutmeg 1 teaspoon powdered cinnamon 450g/1lb white sugar Some strips pared lemon rind
Wash your jars and place in a warm oven to dry and sterilise. Cut the pears lengthways into quarters or a bit smaller if large, peel, core and put into the salted water to prevent browning. Put most of the vinegar into a large pan with the sugar and lemon rind. Heat gently to dissolve the sugar. Mix the spices with the remaining vinegar and add to the pan, stirring to combine and ensure the sugar has completely dissolved. Bring mixture to the boil. Add the drained and rinsed pears - gently to prevent breaking up. Simmer for around 15 minutes until the pears are translucent and tender but not broken. Using a slotted spoon, lift the pears out and into your sterilised jars, packing fairly tightly (use a knife to gently position them). Continue to cook the liquid until reduced a little, around 10 minutes. Pour over the pears in the jars making sure there are no air bubbles. Seal immediately and keep for a couple of weeks before using.

You didn’t get around to it -
BUT WE FORGIVE YOU
2014 – what happened to it? It only feels like a few minutes since it was New Year’s Day and suddenly we are making our resolutions for 2015. Now we know that the majority of you meant to get around to making your Will last year, and we also know that the majority of you didn’t. For those of you who did, thanks for working with us and we hope in a small way that we have added to your peace of mind. For those who didn’t, the good news is that it is not too late. The statistics are sobering - 35 million people (2/3rd of the adult population) don’t have a valid up-to-date Will. Thousands of people die each week leaving their family’s future to chance. Hundreds of children are left at the mercy of the local authorities because no legal guardian has been appointed to look after them, and each year countless people lose out on inheritances because their loved one didn’t take the simple step of writing a Will. It doesn’t cost much, prices start at just £145. It doesn’t take too long, an hour of your time will be enough in most cases. It’s not even inconvenient, we will come to you at a time that suits you and your family. Making a Will is the only way to ensure that your wishes are carried out if the worst happens. It provides security for your family, peace of mind for you and stops the authorities from interfering in your affairs. Deep down we all know that we need to take action.

I am often asked by clients why they need a Lasting Power of Attorney in Place when they are perfectly healthy, this cautionary tale illustrates the need perfectly.
to join our happy team
A client came to see me last year his wife had had a catastrophic stroke - no warning it just happened. Their accounts were jointly held but the bank had restricted access to them as one of the account holders lacked capacity - they can do that. My client asked me to put in place a Lasting Power of Attorney for his wife, and I had to explain that it was too late as she already lacked capacity. I was able to offer him help with a deputyship application to the court of protection for a fixed fee plus court costs which he was happy to accept. So we made the application, he paid my fee, the court costs, for an independent mental health capacity assessment, and an insurance bond to the court – grand total £2700. Seven months later the court appointed him as a deputy. Had his wife had put a Lasting Power of Attorney in place, he would have had access to his money straight away, the ability to manage his wife’s affairs straight away and he wouldn’t need to refer decisions to the court. Lasting Powers of Attorney cost £300 plus a small court 6WDPIRUG :DON 6WDPIRUG 3( -( 7 registration fee, not much to pay for peace of mind. THIS YEAR ENJOY A Stress Free CHRISTMAS
I
t seems that Christmas adverts get earlier with every year. We are bombarded with impressions of the perfect Christmas setting, an ideal to live up to. Most of us get swept along in the tide towards December 25. This pressure, whether you are conscious of it or whether it’s subliminal, can build up the stress so much that on the day you go ‘bang!’ Tensions build up: around family, Christmas dinner and the day itself. It can seem like nothing but tension, yet the ‘ideal’ was supposed to be about the religious faith, fun, laughter and time with your loved ones.
Of course, it’s not always like that for everybody, but there are those who dread the day and see it as nothing more than hard work physically, mentally and emotionally rather than a spiritual experience. So, take the pressure off yourself. Accept you will do your best on the day and that’s all that matters. If it does not live up to the ideal then so what? Be lighter about it. Relatives are not going to love you any less or anymore if you are perfection personified on the day. But what can help you to relax on the day so that you can enjoy it more? When you feel stressed try abdominal breathing. Imagine your lungs are in your belly; as you inhale the belly expands and as you exhale it contracts. Breathe through the nose too if you can, not the mouth. This makes a big difference to how you feel. This technique gets you breathing deeper. Deep breathing acts like a natural tranquiliser on the nervous system. It calms you down, gives you more energy (through more oxygen being brought into the system), and gives you a moment to put your mind on something else. Try this quick tension buster: from standing, as you inhale gradually tense as much of the body as you can starting at the feet and working up. Then hold for five seconds then with an exhalation feel the tension dissolve from the body as you stop tensing. Allow the head and shoulders to relax slightly forward simultaneously. Physically putting the body into a forward bend position will slow your heart
26-51_C9.indd 37
rate and chill you out. Try from a standing position bending the knees and rolling the upper body downward so that the head, arms, and back are hanging over the legs. Hold for at least five breaths then slowly roll back up to standing again. If you have back issues have a chair in front of you and place hands on this for support. Alternatively come to kneeling then bend forward either resting the head into the hands, elbows on the floor or if you are flexible enough allow the head to come to the floor and let the arms relax alongside you. This is called Child’s Pose in yoga. Consider taking up yoga. The above techniques come from this wonderful science of happy and harmonious living. Yoga gives you the tools to deal with the ups and downs and stresses of life and constantly help rid the body of the consequent stored tensions. Have a great Christmas and remember to breathe!

... WARM HEARTS I
t is hard to conceive the sheer number of abandoned animals that find they need someone’s protection and care every year through no fault of their own. There are a large number of shelters but, they are all finding themselves stretched to capacity with an ever increasing demand. As we prepare to tuck in to our festive feasts, the animal lovers among us cannot fail to spare a thought for those creatures without a home and relying on charity this Christmas, however there is always some way we can help. The majority of animal shelters receive no government funding, therefore any care is solely reliant on donations from the public, and that includes the daily role of making sure every mouth is fed. It is sad not every animal can receive their wish of a forever home, but helping couldn’t be easier. Almost every supermarket has a bin for donated pet food to a local refuge. All it takes is the time to purchase an extra bag of food when buying your own pet’s provisions, pop it into the kennel shaped bins just after the checkout and the good deed is done. Alternatively, many shelters are more than happy to accept blankets, toys, newspapers and bags of food for their residents if people wish to deliver them in person. If the gift of giving is more your style, you might
make a donation on behalf of a friend or family member, sponsor a harder to home animal as a Christmas gift or consider offering your time to volunteer, anything is appreciated from as little as an hour a week. Many people now use the internet for their Christmas shopping. This makes donating much needed gifts to your favourite animal cause even simpler. Whilst purchasing the perfect present for your nearest and dearest, most shelters now have an Amazon wish list accessed via their webpage. From the comfort of their own home, potential benefactors can click upon a charities list as part of their shop and add items to their basket. Once paid for, these extras will be sent direct to the charity with grateful thanks from all concerned. Whilst this time of year highlights the plight of shelter residents, Jackie from Block Fen RSPCA reminds us, ‘These animals need our support all year long and we are full twelve months of the year. We are especially short of complete dried dog food, sturdy toys such as Kongs and Boomers, and would be grateful if anyone could help.’ She also had advice for anyone thinking of giving a pet for Christmas. ‘Animals aren’t really the best presents; they are a 24/7 living creature which will require a lot of training and time, sometimes difficult over the busy festive period. If you are considering a new addition to the family, really think hard, wait until the New Year and visit your local shelter.’ It may be a little late, but it could be the very best present an abandoned animal could get. Horses The
AND HOUNDS come to town
T
he Boxing Day and New Year’s Day hunts are popular events around these parts. The sight and sound of the horses and hounds riding through our villages and countryside is a sight to behold.

isitors to the countryside during autumn and winter are very likely to have heard the distant sound, or even occasionally caught a glimpse, of the local hunt out and about, and it is a sight to behold. The sound of the horn, the clamour of hounds and the flash of red coats is unmistakeable and, on these annual occasions when the countryside comes into town, anyone interested has the opportunity to see the spectacle of horses and hounds up close. Hunting has changed a lot since the hunting ban came into force in February 2005, and according to reports from the Countryside Alliance, the community has received a surge in support since the ban. Indeed the Boxing Day meets the year directly following the ban reported nationally figures in excess of 300,000 followers with over 25,000 on horseback. Hunts use a combination of several activities to provide an interesting and varied day for the hunt followers. One such activity involves hunts following a pre-laid trail. An artificial scent is used to mimic the movements of a fox without huntsmen or followers being aware in advance which route the trail will take. Part of the excitement for huntsman and followers is not knowing where the day will take them, over what terrain and even where and when they would end up. Hunting attracts people from all walks of life and backgrounds, and its followers
participate in a variety of ways. For equestrians there is the excitement of following hounds on horseback and, for those who do not keep their own horse, hirelings are available. Most hunts publicise newcomers days for any riders interested in having a go, either complimentary or for a small affordable fee. The Fitzwilliam (Milton) hunt welcomed 22 newcomers this year during their open days, many of whom are now looking to ride more regularly.
Non-riders are also able to share in the fascination of watching hounds, with a whole bevy of people enjoy following by car, bicycle or on foot. Hunt secretaries can be contacted for more details. The hunting community has done a lot of work to adapt to the new law and a lot of work has gone into losing the elitist image and promoting a friendly culture, while still retaining the traditions which make the sport unique and quintessential British.

Local Hunts:
• The Fitzwilliam (Milton) has a very long history, going back at least 250 years in its present form, and hounds continue to be kennelled at Milton Park as they have been for hundreds of years. The hunt attracts a wide range of followers, some mounted but many following in cars, on push bikes and on foot, with a very wide age range from tiny tots to people in their seventies. "Come and see one of the great traditional sights of the English countryside and join the Fitzwilliam (Milton) Hunt at one of our traditional festive meets," enthuses Karen Silcock, joint hon secretary. "We will be meeting in Stilton at The Bell on Boxing Day at 12 noon, and on New Year's Day at The Haycock, Wansford also at 12 noon."
• The Cottesmore will be welcomed by Oakham and Uppingham over the holiday period. The hunt has been a familiar sight around the ancient English county of Rutland since 1666. They will meet in Cutts Close, Burley Road, Oakham on Boxing Day at 11am and will leave the park by the Burley Road. On New Years Day the meet will be in the Market Place, Uppingham at 11am. "Come along and meet our hounds," invites Clare Bell, hunt secretary. DECEMBER 14 CONCEPT MAGAZINE / 43

Adult Choice
My Animals and Other Family by Clare Balding

Junior Choice
Nickolai of the North by Lucy Daniel Raby
This is a fantasy fiction about the childhood of Santa Claus for 8 - 12 year olds. Nickolai is an elf, the sole survivor of Magda the evil witch’s onslaught on the magical elf kingdom. He is rescued by Comet, a flying reindeer and dropped down a chimney. He is brought up by human parents in the distant north. Nickolai knows that there’s something different about him. Teased and bullied because of his pointed ears, he seeks solace with the flying reindeer in the enchanted forest. But when Magda starts to steal children’s youth in order to regain her own beauty, Nick must travel north to foil her evil plans. Elvina, his Light Fairy, is the last vestige of the Northern Lights. With her at his side, and the friends he gathers along the way, who knows what they could accomplish… It is a sweet story full of festive feeling , magic and friendship that will leave you singing Jingle Bells or Rudolph the Red Nose Reindeer.
This autobiography of Clare Balding, seems a very honest account of her early years, with pets, horses and family. Her recollections are tender and moving. Anyone who loves horses and dogs will really enjoy this book. The descriptions of her family are colourful to say the least. She does not hide the fact that she lead a privileged upbringing, but her family were definitely more interested in bringing up the horses, and her brother, the son and heir, of course. She has a keen sense of humour and sees the funny side of things even when she is the butt of disapproval or scorn. Her grandmother disapproved of her for being a tomboy. Balding admits she was ‘too inclined to get into a fight’ as a youngster and deals dispassionately with an account of falling in with a bad crowd and subsequently being caught shoplifting Coming from a dynasty of horse lovers it was inevitable that she would become an accomplished horse rider but her stories are told with modesty, including the victory at Ayr, where she was mortified by the discovery, after the event, that her jockey colours were seethrough. She went through the usual rider’s torment of having to constantly lose weight, and remembers a racegoer shouting: ‘a few less pies next time, Clare’ after she came in second. She went on to host sporting events and has become one of the most popular sports presenters on our screens. The book is dedicated to her life partner, Alice, but Clare Balding does not make a big deal out of discussing her sexuality. She says of dating boys as a teenager that she didn’t treat her dates very nicely and it was like taking out books from the library and eventually realising she had been looking in the wrong section. This book that takes her up to the age of 20. Let’s hope she finds time one day to write the story of her eventful adult years.

Firstly, just a little bit on your background. You work full time, run several businesses and a family – how do you fit it all in? Those who have had the privilege of working with me and see me every day can confirm and would say ‘she really does do 20 jobs in five hours!’ They see me writing a marketing plan in the morning, covering my market stall at lunch and spending my five minute afternoon coffee break dealing with my business issues and parental caring needs. Spinning different plates at the same time is my forte. I tend to pair up all the unproductive tasks and multi-task by doubling up on many jobs. Although I am a busy person I still prioritise my duties and responsibilities. I will always put my family first – my husband, my daughters, my parents. My faith comes a close second and work third. I don’t neglect my family and faith duties in my pursuit of success, especially when it comes to my elderly parents. No matter how busy I am I can never say no or turn away somebody in need. Why did you decide to go on The Apprentice ? I have always had an entrepreneurial flair from a very young age. I’ve been a massive fan of the show. It was a form of escape from the reality of my life as a glorified housewife and an apprentice…in the kitchen. Being an
26-51_C9.indd 48
avid fan of the show for the last 10 years and having always dreamt of being on the show, as it was the 10th year anniversary series, I just had to apply. Despite the countless number of applications each year, I was still certain I stood a chance. How long ago did you apply? Just wondering what sort of lead-time there is between filming and going out on TV? The application process started in November 2013 and auditions were a lengthy process which finished around April. Filming was done few months before the show was aired in October. The delay on airing the show was due to the World cup this year. We see a one hour show on TV which is just the highlights of the two-day task. What is it really like? Does the viewer see a fair representation of what happens in the task? This year being among 20 candidates, it was harder to really project your skills and capabilities. And having over 35 hours of filming the show really does not reflect your true personality, detailed coverage and business credentials in one hour. The board room itself is extremely long and a lot does go on which the viewers do not get to see. So unfortunately viewers don’t get to see the whole picture!
It’s always a surprise at how different the candidates appear on Dara O’Brien’s show, You’re Fired, on BBC2 after the main show. Would you say that the Nurun we saw on TV is really what you are like in ‘real life’? I’m so pleased that people got to see the real Nurun on TV, particularly on the You’re Fired show. I made sure I stayed true to myself and with integrity. I am very conscientious, passionate and genuine. Above all, I am grounded and live in the real world which means holding down a full time job while running businesses and being a mum, carer and housewife. Those who work with me and do business with me, my family and friends and everyone else I know will say I’m a great person to be around and very capable. I can certainly pitch and sell, that’s for sure! I’m a personable character and I think people like Jo Malone could see that on the You’re Fired show. That side of me wasn’t really shown so much on the programme but you saw more of the real ‘me’ on the You’re Fired show. What did your experience on The Apprentice teach you? I’m so incredibly proud that I made it to the final 20 out of around 70,000 people who applied. It’s really cool that I’ve had my five minutes of fame too! At times it was so intense it almost felt like being in a pressure

Our Own Apprentice

espite hearing the dreaded ‘You’re fired’ from Lord Sugar three weeks into The Apprentice, Peterborough businesswoman, Nurun Ahmed is not going to lick her wounds for long. She’s already set up a website for her bespoke Asian wedding business idea and is looking for investors and suppliers within the industry. Concept caught up with Nurun on her market stall at Peterborough Market.
cooker. It was challenging none-the-less and I’m very proud of being the first Muslim headscarf-wearing girl to appear on The Apprentice and I hope not the last either! It is an achievement for me and experience very few have had and will have. I went in the process to learn and to go further. I am not a self-absorbed person so each day I made sure I came away with pearls of wisdom from either the candidates or from Lord Sugar. The whole process is most invaluable and I will be taking away the comments from Lord Sugar and focus my resources in expanding my business and developing as a business women. I don’t think that being a good business person is all about being ruthless and stern. We all have a different approach to doing business. Yes one has to be firm and shrewd to a certain degree, but I can honestly say that to this day nobody has taken advantage of my, what you might call, softer approach. I don’t think you need to be a vindictive or ruthless person to get ahead in life. Are you glad that you did the TV show? I have no regrets on going on to the show. I’m happy to have had the experience as it’s a once in a lifetime opportunity. I don’t think the process is for people with integrity or who are too nice. Although I found the whole experience very intense and incredibly ruthless
at times, I do appreciate it. That said I wouldn’t jump at the chance to go through it again. It was an emotional rollercoaster and you certainly need a thick skin. Acting with integrity and honesty is so important to me and I think that came across. I don’t know, maybe I was too nice for the process. I’m very conscious of my motives and perhaps too considerate of others. I treat others how I treat my family and friends. I suppose Lord Sugar isn’t looking for a nice person with a soft approach. What advice would you give anyone wanting to go on The Apprentice ? Firstly the show is not for anyone with integrity! It is important to stay true to yourself and be yourself. It is a very intense process and you need a thick skin to go through the process emotionally. What now for you? Your business idea for the show was a bespoke Asian wedding planning service – is this still something you want to pursue? My business proposition on the show was the creation of bespoke Asian wedding planning services. The industry is worth more than £300 million per annum and growing. The business name I came up with is ‘Sugar and Spice’, now ‘Sugar Free’. This would have been a branded wedding planning services company and the only one of its kind, as there is no market leader as yet within the
industry. I am looking for suppliers and investors. I am also launching Scarfs Inc online, my scarves and accessories range. Many people have asked me about my scarves I wore on the show. And I just want to clarify my scarves are for anyone with a head and a neck! Who do you think is going to win this year? My absolute favourite candidates to win are from Bianca, Daniel and Mark. If I was going to put money on it then I would say Mark.

with Amy Roberts, parent to Jude (3) and owner of Stamford Stars Childminding We were so excited at the prospect of The Yard opening and it definitely hasn’t disappointed. It is a wonderfully welcoming, enabling environment for children to explore. As a childminder it is important to me that the places we visit are clean and safe, and I can confidently take the children here. The growing community feel, with regular pop-up shops, various events, and childminder-friendly mornings make The Yard more than just an ordinary soft play centre. We love it!

This month Jo and the kids had a lovely autumnal afternoon in the play area at Barnwell near Oundle and really recommend it. Jude loved the zip wire! He was less impressed with the fireworks at Kings Cliffe - not sure he saw a single one from the safety of daddy’s chest and Flora slept through it. But the adults all thought it was great. Katie and the girls had a great time at The Yard for the Stamford Natural Parenting meet up and Annabel spent a fab couple of days on a drama workshop based on Room On The Broom which ended with a lovely show of the children’s work. We are all very excited about the month ahead and all the exciting Christmas activities available including a showing of The Snow Queen at the Arts Centre, and the Cosy Concert at The Yard. Have a very merry Christmas and we will see you in the New Year. Love Jo, Katie and the kids

Beauty secrets by Fiona Hood
Renaissance Health & Beauty
Glowing Skin
FOR THE HOLIDAY SEASON
T
As the party season approaches we all want to look and feel our best for socialising before Christmas and for the New Years Eve bash but more often than not we feel frazzled from running around after children, present and food shopping, work, and coping with the cold weather and the dark evenings.
Make up is a wonderful thing and can hide a multitude of sins as can a fake tan but sometimes we need a little help from the inside. Dr Nicholas Perricone is a leading American dermatologist and recommends his three day face lift. He recommends eating only what is on the menu for the three days and planning for it carefully when you can stick to it. No coffee is allowed, only herbal or green tea and always eat your protein first. Sounds hard? Not a bit and the results are amazing.
The 3 Day Face Lift Wake up...
• a glass of spring water
Breakfast...
• omelette made from three egg whites and one yolk and/or a 4-6oz piece of grilled or steamed salmon • 1/2 a cup of porridge (not instant) • 3 inch slice of cantaloupe melon and 1/4 cup of blueberries • at least one glass of spring water
Lunch...
Dinner...
• 4-6 oz grilled or steamed salmon • 2 cups romaine lettuce dressed as before • 1 cup of steamed asparagus, broccoli or spinach dressed with a little olive oil • at least one glass of spring water
Bedtime snack... • • • •
2oz chicken breast 1/2 pear or green apple 3 or 4 almonds or olives at least one glass of spring water
• 4-6oz grilled salmon or canned tuna in spring water or sardines in olive oil • 2 cups romaine lettuce dressed with 1 tablespoon extra virgin olive oil and freshly squeezed lemon juice • 3 inch slice of cantaloupe and 1/4 cup of fresh berries • at least one glass of spring water
The more closely you stick to this the better the results you will see and as a result your skin will glow and your energy soar and you never know you may lose a few pounds into the bargain. What a great way to see in 2015.
Mid afternoon...

ew Year’s Eve is a chance to get together with friends and family and have a bit of fun seeing out the old year and welcoming in the new one. Whether you’re at home or going out, here are our top tips to make it a night to enjoy.
A night in with the family
Lots of people choose to stay at home on New Year’s Eve instead of going out, especially if they have young children. Make your night special: Dress up Just because you’re not going out, doesn’t mean you can’t dress up! Pull out that little black dress out from the back of your closet. Dust off your sharpest suit. Let the kids wear their best party clothes. Be completely over the top – wear all your best jewellery, paint your nails and wear a hat. Make cocktails for everyone Get out the best glasses and make cocktails for everyone (obviously adding something a little alcoholic for the adults). Garnish with fruit, umbrellas and lots of straws.
Dance the night away Make a playlist that includes everyone’s favourite tracks. Have a dance contest with leftover Christmas sweets as prizes – if there are any left! Count down to midnight If the kids can’t actually make it to midnight, just celebrate midnight in another time zone. At 9pm it will be midnight in Moscow, at 10pm it will be midnight in Finland.
Throw a party
You don’t have to spend a fortune on throwing a party for New Year’s Eve. Here are some ideas: Use up Christmas food and drink You probably have some drinks and treats leftover from Christmas, so serve those up for your guests. Ask you friends to bring
whatever you are missing – like mixers for alcohol. Set the mood String up any extra Christmas light sets (everyone has those, right?) around the room and light any candles you can find. Place tealights in empty glass jars for a cheap and instant vintage look. DIY entertainment Don’t spend hours compiling a music playlist. Just google ‘ultimate new year’s eve playlist’ and see what takes your fancy. Or go completely old school and ask guests to bring their favourite CD. Make a photobooth Recycle some old Christmas paper as the backdrop for your ‘photobooth’. Raid your house for silly props or buy a pack of straws and cut out moustaches to glue or tape onto the straws.

A night out
The pressure is usually on to have a great New Year’s Eve, but the end result is often underwhelming. It is often the way that the more you put into New Year’s Eve, the less you seem to get out of it. The best New Year’s Eve, by contrast, seems to come about largely by accident. Here are a few tips to get the most of your night out: Plan, plan, plan It may not be very spontaneous, but this is the one night that is does pay to plan ahead on where you are going, who with, and, especially, your transport. If taking the train, check the time for the last one home. If you are relying on taxi, book ahead. Don’t drink too much This may be obvious advice, and one most people ignore, but it pays to pace yourself. You
don’t want to fall asleep before midnight. And you most definitely don’t want to end up in A&E – it’s the busiest night of the year. Remember to eat Again obvious advice, but eating something more than a few crisps will give you the legs to last past midnight. Book tickets Many bars and pubs are ticket-only on New Year’s Eve. So make sure you check ahead before heading out. If you fancy something a little special, have a look what’s on offer from: · The William Cecil Hotel Join fellow guests from 7pm for a welcome glass of fizz, before sitting down to a delicious three course dinner with wine at 7.30pm. Then dance the night away with our DJ before another glass of fizz to toast the New Year;
there will be bacon sandwiches for those that need a nibble at 12.30 too. Carriages at 1am. Tickets are £80 per person. To book your tickets or for further information, please contact Charley Stagg on 01780 750081. · Toft Country House Hotel Enjoy a seven course meal at Toft Country House Hotel starting at 7.30pm. Dance in 2015 with live band, Matt Stafford before toasting in the New Year with a complementary glass of bubbles. Tickets are £85 per person. Stay over night for New Year’s Eve and pay only £45 per person for accommodation, including English breakfast. See www.tofthotelgolf.co.uk for details of the menu. To book tickets, or for further information phone: 01778 590614. All event details are correct at time of going to print DECEMBER 14 CONCEPT MAGAZINE / 59
