A new year brings new goals whether squeezing into an old pair of jeans or seeking out that dream job – we’ve asked five local experts for their advice on how you can keep your goals this year. If it is your New Year’s resolution to get fit, check out what former Gladiators star, Jenny Pacey, has to say about metabolism and eating smart. She’s got some really good suggestions for increasing your metabolism, thus burning more calories. And if you’re thinking about joining a sports team, we’ve got profiles of two very different sports this month: Stamford Town Cricket Club and the Borderland Brawlers roller derby. Community News Music at the Manor T

he Manor in West Deeping was the venue on 21 December for a rather prestigious charity event in aid of the Sue Ryder Thorpe Hall appeal.

A Handful of Harmonies is a community based ladies choir started up in 2011 by choirmaster, Andrew Clingo. One of its choir members, Suzy Grigson, donated the use of a marquee at The Manor in West Deeping so that they could host the glittering event for the hospice with guests greeted with canapés and proscecco on arrival. The choir sang in a programme ranging from the traditional to the contemporary, ably supported by other local musicians and entertainers, all who gave their time free of charge. Every penny raised through ticket sales and the grand raffle was donated to the Thorpe Hall Appeal, indeed the event committee have done their utmost to

organise the event from donations. The Hospice's appeal was launched by HRH The Duchess of Gloucester on Wednesday 27 March 2013 and aims to raise £6 million by March 2015 to build a modern state of the art in-patient hospice. Philip Ball, palliative care services manager at Sue Ryder explains on their website, “Thorpe Hall is a magnificent building but it is no longer fit for purpose. The new hospice will complement the existing building and provide 20 single en-suite bedrooms on the ground floor with direct access to the gardens. This will enable us to provide personalised care for more people, and offer the very best environment for people and their families during what can be an extremely difficult time.” The organisers would like to thank everyone who was generous enough to donate their time, wares, talent, and money to such a worthy cause.

totals for the Royal British Legion

T

he Royal British Legion branches across the area were overwhelmed with the money raised and handed over by schools, clubs, businesses and individuals this year.

In Stamford, the Legion has currently raised a total of £40,701, with more donations still being expected. Supermarket collections contributing a significant amount to this figure, with Morrisons, Waitrose and Sainsbury’s all raising money for the appeal. Help also came from volunteers in various locations, the Military Dog Unit, the Air Training Cadets, the Army Cadet Force and leaders from both cadet units. People have given more generously than ever before to this year’s Poppy Appeal on the 100th anniversary of the start of the First World War.

RECYCLE your Christmas cards I

t’s a busy time of the year for the SKDC waste and recycling teams. Cardboard boxes, glass bottles and jars, drink cans, Christmas cards, paper chains, foil, and toy and gift wrapping paper can all be recycled at home in silver bins or clear bags. The council will also collect unlimited recycling put out with silver bin and clear bag collections as long as it is visible to SKDC’s waste and recycling team and it is not in a black bin or pink bag.

SKDC’s executive manager for environment, Ian Yates, said: “We understand that lots of extra side waste is generated at Christmas. That's why we'll take away an unlimited amount of recyclable items in any clear bags or cardboard boxes, items that are visible to our recycling team that can be recycled - as long as they are not placed in black bags. Please flatten and crush cardboard for ease of transport to the recycling facilities we use and to fit more into your kerbside collection.” Real Christmas trees should be recycled in residents’ green bins or at household waste recycling centres (HWRC) in Grantham

5 Things to do Prune apple and pear trees If you haven’t already, now is a good time to prune apple and pear trees. Trees are best pruned every year to ensure good fruit production. The aim is to create an open goblet-shape with four or five main branches. If your tree has not been pruned for a while and is very over-crowded, spread the work over two or three winters as very hard pruning encourages even more vigorous regrowth.

See the Straw Bear The annual Whittlesey Straw Bear Festival takes place over 9 – 11 January. If you’ve never been, it is worth making the trek to Whittlesey. The town gets very busy as thousands flock to follow the Straw Bear and watch traditional Morris, Molly and Clog dancing. They call it

PUPPY LOVE S ilence is golden unless you have a puppy, and then silence is suspicious; deeply suspicious.

Whether the children have been pestering for a pooch or you have simply decided you would dearly love the companionship of a faithful canine, you’ve made the commitment to adopt a puppy. As you bring the newest family member home for the very first time, few people stop to consider what they are actually doing beyond the look of abject innocence in those big brown eyes. Puppies are adorable by design because even the most angelic of them is going to be incredibly hard work. Thinking about it logically, what sane person would voluntarily let into their home a creature with needle sharp teeth which can be used to shred everything it can get its paws on? You will spend most of your time removing said puppy from all the places it is most inconvenient, unhygienic or downright dangerous for a small furry chewing machine to be and you very soon develop eyes in the back of your head. The most common phrase uttered in the household soon becomes a trembling ‘where’s the puppy?’ In short… you think you are getting a pet…

when, in fact, you are potentially getting Armageddon in a fur coat. But, it is no easier for the new addition. This baby is away from its mother and siblings for the very first time. Strangers have bundled it up, taken it into alien surroundings and are now bombarding it with a barrage of new rules. You have to admire the creature’s resilience. Fortunately at the time of going to its new home, the first 7-16 weeks, are a period when the puppy is at its most impressionable. Socialisation with other friendly dogs, introductions to horses, livestock, bicycles and cars, all under careful, safe supervision, will build a basis for an adult dog that is well adjusted and better able to cope with the human world. It is also the period where bonding occurs with its family and boundaries are put into place. Consistency is key, if you have decided that your dog will not be allowed on the furniture, the law is diluted if others in the household are being more lenient. Don’t imagine for a moment your puppy won’t try and flout the rules or even attempt to train its humans to pander to its needs. It may be small but it is by no means stupid, and a weak link will be thoroughly exploited.

Crate training can be a boon for new puppy parents. This space can be made as inviting as possible with a comfortable bed, toys and even coverings to create a den. Overnight, and for short daytime periods when you physically cannot have all your attention on the puppy, a crate can give both parties respite from each other before the next round of training can begin. One of the hardest things can be those first nights when your puppy decides that it really does not want to be left on its own. For a tiny creature the amount of noise they can produce is truly astounding. Whether you need to furnish your neighbours and family with ear plugs or placate them with bribes, the very worst thing you can do is come running as your puppy calls. It is an incredibly hard thing to do, but those that succumb find the problem just escalates. Usually a couple of short daytime sessions, where the pup realises attention is only forthcoming when they are quiet, is sufficient to ensure you will be able to leave your dog comfortably at home for a little while from time to time and, enjoy nights filled with peace and quiet. And that silence is worth its weight in gold.

T

he Stamford Town Cricket Club caters for all ages and levels of players, starting at under 9s and fielding five teams at senior level. Seniors can play on Saturday, Sunday or midweek and junior teams play matches throughout the week with training sessions held on Friday evenings.

Senior cricket

The 2014 season was a very successful one for the club with Suneel Appan, club captain, saying: “With arguably our most successful season ever just passed, all of our players and supporters are now looking forward to another enjoyable and competitive year during 2015.” Last year the Saturday 1st XI won the Huntingdonshire Division 2 at the first attempt and the 2nd XI retained their place in the South Lincolnshire Premier Division following their promotion the previous year. These two sides were captained by Suneel Appan and Chris Birch during the 2014 season and both will continue next year, with

the skippers targeting another league title and a top-half finish respectively. On Sunday, the 1st XI finished runners-up in Rutland Division 2, securing promotion back to their rightful place in Division 1. The 2nd XI had a season of mixed fortune and in the end were relegated from Rutland Division 3. These two sides were led by Simon Prentice and Brett Bennett, the latter continues in 2015 with Andrew Hulme returning to the helm for the 1st XI. The Midweek XI once again performed brilliantly during the 2014 season and secured the Burrough League Division 1 title. They also reached the final of the Burrough League Cup but were beaten by Barkby United. This team was captained by Brett Bennett who stands down this year to concentrate on the Sunday 2nd XI and hands over the reins to another club veteran, Chris Bore. The jewel in the crown for the season however was winning the Burghley Park 6s Competition, led by the young Tom Williams the team performed consistently throughout

the week and were very well supported by other members at what was once again a fabulous event.

Junior cricket

The junior section at Stamford Town continues to grow and this season will enter mixed junior sides at U9, U11, U13, U15 and U17. All of the junior sessions are run by club coaches qualified to a UKCC Level 1 or Level 2 standard. Stamford Town are very proud to announce that one of their own, Zak Chappell, recently signed a professional contract with Leicestershire Country Cricket Club. This is a great recognition of Zak’s talent and application but also of the coaching and nurturing he has received from all of his coaches throughout his cricketing years to date. Once again all new young players, boys and girls, are welcome to the club to try out a new sport and hopefully rise through the ranks from junior to senior cricketer. The junior section is supported by Hindmarch Stamford with their contribution

enabling improved facilities and training equipment to enhance the training sessions that the club coaches can provide.

Facilities

In recent times there has been significant change at the club, with sincere thanks to support from the Influential Management Group Ltd. Thanks to this investment the ground is now home to the following; • An artificial playing surface that supports our development of both junior and senior players • A set of covers that enable the groundsman and his team to provide higher quality pitches (and protect the pitch from rain during matches) • An electronic scoreboard that supports the club ambition of becoming a modern cricket facility for the community More recently the club has secured sponsorship from Sowden Wallis Estate Agents and Stamford Plumbing, two local and independent companies with a passion for sport in the community. The support of sponsors is vital for the club with training nets and a clubhouse refurbishment next on the list.

Winter training

Starting from early 2015 the club will have both junior and senior training in preparation for the outdoor season. This is a great opportunity to meet many of the club’s

Then, chips & garden peas if you are really fortunate, you might have the chance to meet the winemaker and be tutored through a tasting. Such trips are not difficult to arrange but EAR BY POPULAR DEMAND they do take a little forward planning. If you regularly buy wine through a particular wine merchant, they will often be able to arrange a visit for you with one of the producers they buy from. I followed precisely this path to visit Chateau De Lemarque in Bordeaux. Chateau De Lemarque is an imposing fortress built originally to withstand the invading vikings approaching from the Gironde River. WINES ABROAD A

s Christmas passes and the New Year approaches, one of the things Leigh Johnson enjoys is planning his holidays for the year ahead. It’s a chance to forget England’s grey and dreary winter for a moment and dream of faraway sunshine.

the 10th century and a visit here will enthral history lovers as much as wine enthusiasts. We had a tour of the vineyards, an engaging talk in the winery and then were shown all around the castle, including the family chapel. The present owners can trace their family at the castle back to 1839 and were hugely knowledgeable and rightly proud of their past. The trip ended with a tasting of several back vintages of their wines, starting with the 1985 right up to the 2005. The highlight for me was the glorious 2000 vintage, so ripe, full of fruit but with plenty of structure to allow extending aging. These are not expensive wines and they can be had from around £20 per bottle but they certainly punch well above their weight. The other route to arranging a tour is to contact the winery direct. This I did in advance of a holiday to California. The Napa Valley and Sonoma are probably the best known wine areas of the USA and most visitors quite rightly head in that direction when looking for a wine trip. However, much further south, in a district called the Santa Cruz mountains, just north of Los Angles lies the hidden gem of Ridge Vineyards. In 1976 a competition was held between the best wines of Bordeaux and the best wines of the USA and amazingly, the USA came out on top. Ridge Vineyards

did particularly well and when the same competition was re-run thirty years later, Ridge’s flagship wine, Monte Bello, came first, beating all other wines. Ridge doesn’t tend to provide a full vineyard experience but they do have a wonderful tasting room, with knowledgeable staff where visitors can sample a wide variety of their wines in ideal conditions. Ridge Monte Bello will set you back £100 or more per bottle but when compared to the best of the first growth Bordeaux wines costing four or five times as much, they offer excellent relative, if not absolute, value. I would really encourage readers to try a vineyard tasting. Practically all countries make wine and most actually do so very well. These days most producers have websites and a brief email of enquiry can get the ball rolling on what should be a most wonderful diversion from simply lying on a beach.

uzy Simmons and Simone Herrick opened Blush Bridal Co in North Street, Bourne in December and since then they have helped many happy brides find their perfect wedding dress. Concept caught up with Suzy and Simone to find out what’s in store for the future. Suzy and Simone opened Blush Bridal Co after spending several years working together and discovering they both had an ambition to own a bridal shop. The past year has been a lot of hard work for them both, but also very satisfying, as Suzy says, “Shopping for a wedding dress is a very exciting time and we both enjoy making that moment as special as possible for the bride-to-be. We want to make the experience of trying on and choosing a dress fun and relaxing – as it should be!” They wanted to bring a relaxed and friendly feel to the shop where customers don’t feel rushed or under pressure. The ladies are both married so know how it feels shopping for the perfect dress.

“Customers don’t have to make an appointment, so if you’re walking past the window and see something you like, you can just pop in and try it on.”

Upstairs there are two large dressing rooms with mirrored walls, comfortable seating and plenty of space to relax with family and friends in complete privacy. Most of the bridal dresses in the shop have a six month lead time, but the ladies are always able to help with shorter timescales. They have their own seamstress on site who can make amendments and also customise dresses; adding detail or taking it off. And as far as trends in bridal dresses, Simone says, “Where strapless gowns used to be very popular, we are seeing a trend towards an illusion neckline – a lacy or transparent fabric bodice – which is just beautiful. Many dresses also have very intricate detailing on the back and a lot of brides love that. And as far as bridesmaid dresses, the nudes, soft colours and pastels are in, and again many dresses with the popular illusion neckline.” Over the past 12 months, Suzy and Simone have also introduced a selection of prom and occasion wear and they’ve just introduced their own range of occasion wear under their own label. As Simone explains, “We wanted to get the basics right first, that being our wedding dress service. We’ve always carried a selection of occasion wear, but our customers have been asking for more. It now feels like the time is right to expand into that area.” Blush Bridal Co will soon be stocking the very popular True Bridesmaids range of occasion wear. This is a beautiful range of dresses, many with lace bodices, which are very popular at the moment. “We see this range being perfect for bridesmaids, proms and eveningwear, but also for mother-of-the-bride,” says Simone. “Many of the dresses are inspired by the 1950s which is also very popular.” The ladies will also be introducing Gino Cerruti dresses in the new year, a well-known London company with a large collection of evening dresses, bridal gowns, prom dresses and mother-of-the-bride outfits. “It’s been a very exciting 12 months,” says Suzy, and Simone agrees. “We’d like to thank everyone for their custom and support. We can’t wait to have all our new dresses in the shop so customers can come down and try them on.”

our metabolic rate is the rate at which your body burns calories. It is effected by age, gender, weight, medical conditions and can be hereditary. A calorie is the amount of energy or heat it takes to raise the temperature of one gram of water by 1oC. Just how many calories your body needs to function will vary for every person; however, there is a standard daily diet value of 2000 calories for women and 2500 for men. There are three main factors involved in calculating your calories needs per day: basal metabolic rate (BMR), physical activity and thermic effects of food. BMR is the amount of calories or energy your body needs to function at rest, this can count for around

60% of calories burned in a day. Physical activity uses the next highest amount of calories and this can include anything from lifting, walking, jogging, pushing or just general exercise movement patterns. A thermic effect of food is the amount of energy your body needs to digest the food you eat. It takes energy to break your food down in order for it to be used by the body‌hence chew for longer when consuming your meals. Calories can be applied to anything containing energy. In nutrition we associate to calories with food, for instance a can of fizzy drink may contain

Eating five or six smaller meals a day will boost metabolism as well as drinking at least two litres of iced water a day, and green tea is also suggested to increase metabolic rate. Also try adding chilly and cinnamon to boost your body’s abilities to burn calories!

Alcohol is high in calories (1g= 7 calories), low in nourishments and will actually stimulate your appetite. Alcohol reduces your metabolism for a whole 24 hours, so make sure you do not drink for several days in a row, or your metabolism will become slower and slower! Be sensible and save the shandy for one night a week.

oller derby was big in America in the 1970s. Like wrestling it was a form of great entertainment that offered high adrenalin, strong contact but all done on wheels. It’s now going through a resurgence in popularity, with 90-120 – mainly women’s – teams in the UK; including our very own Borderland Brawlers in Stamford.

Roller derby is all done on roller skates. Two teams have to skate around an oval track in the same direction and points are scored when someone called the ‘jammer’ overtakes each member of the opposite team. The skaters in the pack are doing their utmost to stop the opposing jammer passing them and scoring points, while at the same time trying to help their own jammer pass opposing players. They do this by landing heavy shoulder or hip checks on opposing players, shoving them out of the way or knocking them to the ground. Skaters may only use specifics parts of their body and may only target specific parts of their opponents’ bodies. The Borderland Brawlers have been together since January 2014 and are trying to increase the profile of the sport around Stamford. The skaters meet twice a week

at New College Stamford’s Borderville Sport Complex. And although it is a sport that mainly attracts women, men are very welcome - in fact it is sport that suits former street skaters or ice hockey players. A big part of the fun of roller derby is inventing a skating name for yourself. Hurtin’ Prue is one of the skaters and says, “Roller derby is a really good way to get fit. It is a good alternative to going to the gym. It’s a great exercise and a great way to get out a lot of frustration.” It is a sport that appeals to a wide range of people, the youngest members of the Borderland Brawlers are 20 and the oldest over 40. “On the track everyone is equal,” says Prue. “It doesn’t matter your size or shape, once you’re on skates, it’s a very level playing field.” It is a contact sport, but there are very clear

rules about what is legal contact and what is not. As Prue says, “If you are looking for fastpaced sports, with the chance of getting bruised and giving out some bruises then this is the sport for you!” Physically it is a very demanding sport, but this does come with time and training. New players have to meet a minimum skill set before they are allowed to play, which includes being able to skate 27 laps of the track in under five minutes. “We do make sure that new players are ready before they can play. Our training nights are all about teaching skills and improving fitness levels,” says Prue. Roller derby teams play friendly matches (called scrimmages) and there are also local and national leagues. In 2015 the Borderland Brawlers will be playing in the British Championship third division for the first time. There are around 90-120 women’s teams in the UK and about 20 men’s teams. Worldwide, it is growing in popularity as well, with 30 teams meeting in the world cup in Dallas, USA in December 2014. Team England came second behind USA. But the Borderland Brawlers were actually supporting the West Indies, as one of their very own players, Ida Bomb, was in that team.

Wear suitable attire

There’s no need to break the bank, but have the kit that suits the exercise. You don’t need to go to a specialist sports shop. Most High Street retailers, like H&M and Next, have a very wellpriced range. And you don’t need lycra, the most important thing is to be comfortable.

A fast-paced life can make healthy eating challenging. However, it doesn’t need to be complicated and even small changes can make a big difference.

Dinner

Any diet that excludes meals or food groups put you at risk of being deficient in vital nutrients and may cause low energy levels and fatigue, hence achieving a balanced diet is the best way to optimal health. Here are some basic healthy food swaps that will improve the overall balance of your diet.

Breakfast

Swap sugar coated cereals with a wholegrain alternative such as porridge or a whole wheat brand (don’t add sugar). Change full fat milk with semi skimmed or skimmed milk. Try a topping of fresh or dried fruit on your cereal instead of sugar (this will also count towards 1 of your 5 a day).

Lunch

Swap white bread for wholegrain or seeded varieties. If you like cheese, change hard cheddar with a softer cheese such as Edam or low fat cheddar. Swap heavily filled packaged sandwiches for those with a lower fat filling such as egg, prawn or tuna and try to replace mayonnaise to fillings with salad. Swap your packet of crisps for plain popcorn, it’s lower in fat and still has a crunch.

Exchange cream-based sauces with tomato/ vegetable based ones. Exchange fattier meats for leaner cuts (streaky bacon for back bacon) and swap steak or mince for oily fish such as salmon. Change chips for homemade, oven cooked sweet potato wedges. Although it’s not a swap, ensure half your plate is full of vegetables or salad, the more colours the better.

Snacks

Replace sugary snacks with fruit or vegetable sticks. A morning or afternoon snack is a great time to achieve 2 of your 5 a day. If you do want something sweet, swap cake with a tea cake with low fat spread or try satisfying that biscuit craving with oatcakes and honey.

Changes you can make now 1. Meal plan - plan meals before you do your shopping, this will help you achieve a healthier balance and make meal prep quicker.

2. Bulk cook - prepare larger portions at weekends so you can freeze leftovers in portions having readymade meals ready to go if you are in a rush. 3. 5 a day - the more fruit and vegetables the better. It can be dried, frozen, canned or fresh and vary colours to ensure a full range of vitamins and minerals. 4. Take time to eat - if you have children, eat together as often as you can. If you are working, take time out to eat, move away from your computer and enjoy your food.

Bodrum, TURKEY Bodrum has experienced a renaissance in the last half century that has transformed this once-sleepy community into one of Turkey’s most popular tourist spots - now more than a million tourists flock to the beaches, hotels and clubs each summer. Sihanoukville, CAMBODIA Surrounded by the Gulf of Thailand, Sihanoukville (also known as Kompong Som) is a spectacular beach town that offers premier snorkelling and diving. Visitor numbers have risen steadily in recent years and will even more now that flights from Siem Reap are operating daily, with more routes planned. However travellers on TripAdvisor still say it remains laidback and relaxed. It has long been a town attractive to backpackers with parties and nightclubs at Serendipity Beach, but Otres Beach, south of town, is far more relaxed and offers visitors lively music, terrific food and a true taste of local culture. Ream National Park is a wonderful mangrove nature reserve about 30 minutes’ drive from Sihanoukville and is a must-see for any visitor.

Manaus, BRAZIL Manaus recently hosted FIFA World Cup games, so has had a lot of development over the past few years. It sits in the middle of the Amazon rainforest, so is a perfect spot for exploring this amazing place on a guided backpacking or river tour. There is plenty to see in the city itself; TripAdvisor recommends touring the Teatro Amazonas – the Amazonas opera house, which is a copy of the Grand Opera House of Paris. Also inspired by French architecture is the Mercado Municipal (market hall) modelled on the Les Halles market in Paris. But the main reason most people come to Manaus is to explore the rainforest. There are plenty of tour operators, not all reputable, so pick and choose wisely.

Naha, JAPAN Located on the southern coast of Okinawa Island, Naha is known for its historic monuments and majestic gardens. The city was flattened in WW2 and has been rebuilt from scratch. The highlight for anyone coming to Naha is a visit to Shuri-jō, a wonderfully restored castle that was once the home of Ryūkyū royalty. TripAdvisor reviewers mention Kokusai-dori (International Boulevard), a colourful and energetic 1.2 mile main drag of hotels, restaurants, bars, clubs where the pace never lets up as locals and tourists hop from restaurants to bars to nightclubs. The Okinawa Peace Park has a beautiful view overlooking the ocean, and features several open-air memorials as well as beautiful gardens. For foodies, the Makishi market, known as ‘the kitchen of Okinawa’, is well worth a visit. You can buy any of Okinawa’s traditional foods like dried sea snake, pork and edible seaweed. There are many restaurants upstairs, serving traditional Okinawan home cooking.

Eilat, ISRAEL Eilat, Israel’s southernmost city, boasts sunshine nearly every day of the year. Eilat’s beaches and warm, clear waters are a draw card for most people, but TripAdvisor advises visitors not to miss the Timna National Park with magnificent views or red and pink rock formations. The Eilat Mountains Nature Reserve in the Negev desert is also worth a visit, with wonderful views of Eilat and the Gulf of Aqaba. The reefs of Coral Beach Nature Reserve are perfect for snorkelling. There is plenty to do in the city and outside, with 4x4 jeep tours and camel treks into the Negev desert being popular with visitors.

Ao Nang, THAILAND Originally a backpacker hotspot, Ao Nang is moving upmarket with good restaurants, hotels and easy transport links. The beaches are definitely the highlight here with TripAdvisor reviewers commenting on the beautiful, clean and pristine beaches. The town itself is not very pretty thanks to unchecked development, but the beaches, snorkelling and scuba diving make up for this. There’s plenty to do locally with many visitors hiring long-tail boats to cruise around the neighbouring islands. Beautiful Rai Leh beach is only 10 minutes away by long-tail boat. It is actually part of the mainland, but is cut-off by the limestone hills. The beach is cleaner than the ones at Ao Nang and Nopparat Thara, and there are limestone caves worth exploring.

Limassol, CYPRUS Offering sun, sand, and culture, this Mediterranean spot has something for visitors of all ages. It’s the hub for international business in Cyprus, which gives Limassol a more cosmopolitan feel compared to other destinations. Recent renovation projects in the old town and old port area are trying to rejuvenate the historic centre, making it more accessible and interesting for sightseeing. The old town is a maze of lanes where old shuttered houses and modern boutiques live side-by-side. It’s an area buzzing with cafes, bars and restaurants that are as popular with locals as they are with visitors. TripAdvisor travellers rave about the lively nightlife and popular festivals. Along the Volga River, Kazan sits between Europe and Asia and peacefully blends Muslim and Christian cultures. It is 150 years older than Moscow and celebrated its 1000-year anniversary in 2005. It’s a city rich in history and TripAdvisor suggests that no matter your spiritual inclination, you should visit the Temple of All Religions, a technicolor cultural centre. Another must-see is the Kazan Kremlin. It was largely destroyed by Ivan the Terrible and reconstructed during the 16th and 17th centuries, and many of the features of the Kremlin reflect Russian influences of that era. There are plenty of restaurants serving authentic Tartar food to be found away from the main tourist areas. Reviewers on TripAdvisor also recommend a river cruise on the Volga.

Da Nang is Vietnam’s third largest city halfway between Hanoi and Ho Chi Minh City. The city is often overlooked by tourists but this is what makes it such a great destination according to TripAdvisor. It is well-known for its cuisine and culinary tours are very popular. It also has some of the most beautiful and isolated beaches in Vietnam. There have been big changes in Da Nang, with new hotels, apartments and restaurants emerging. Many travellers on TripAdvisor rate the Dragon Bridge spanning the river Han which breathes fire over the river at night time. The Marble Mountains, just south of Da Nang, are a well-known pilgrimage site with peaks, caves, tunnels and temples all just waiting to be discovered. Named after the elements metal, wood, water, fire and earth, the Marble Mountains exist in a coastal area that is renowned for stone-cutting and sculpture.

Hurghada, EGYPT Hurghada has seen enormous amounts of development in the past decade, and TripAdvisor does admit it does seem overrun with tourists at times. But it’s a relatively easy beach escape for Europeans, and some of the world’s best diving and snorkelling sites are just offshore. Rampant development means there are a lot of half-finished building sites, but new developments are attempting to clean these up to bring back Hurghada’s sheen. Many visitors choose to combine a stay in Hurghada with a visit to the Nile Valley, including the nearby city of Luxor. Hurghada offers many activities: quad-biking hundreds of miles into the Sahara desert, camel-riding, diving and snorkelling, boat trips, swimming in the warm sea, good shopping and excellent cuisine.

Swimming at Calmababy S

wimming with a baby can be lots of fun and good exercise for both of you. Michelle Board shares her top tips for a splashing good time.

I took Little Miss swimming for the first time when she was 12 weeks old. And we’ve probably been most weeks since then. I’d like to say that she was a real water baby and took to it straight away, but she didn’t. I think it would be fair to say she hated it to start with. But I stuck with it, as it was getting me out of the house and socialising with other adults. I’m a confident swimmer, but the thought of taking Little Miss to a public pool by myself was a bit too much in those early days, so we went to Calmababy in Peterborough. And it was one of the best things I did. The sessions themselves were great at building up both mine and Little Miss’s confidence, but I also met some wonderful mums, who have become some of my best friends. Calmababy is a custom-built pool, designed with babies and young children in mind. The water is chlorine-free and much warmer than a normal public pool, which you don’t appreciate until you take a baby swimming in a public pool. Even the changing rooms and corridors are heated, so you don’t get cold getting in and out of the pool. It’s not a public pool, so you can’t just turn up and swim. Most classes are booked in 10-week blocks. The 30-minute sessions were loosely structured, with lots of singing, movement and splashing about. But you never felt bad if your little one was having an off-day and just wanted to chew on the seal sticks (this would happen to me, especially when new teeth came through). There are lots of classes each day for different ages, so you have plenty of choice to when you want to swim. We always swam in the morning after nap-time, and then stayed afterwards to have lunch in Selena’s Tea Room. It was a complete day out! And Little Miss would always fall asleep on the way home – bliss.

Babies can start swimming at Calmababy from birth, as long as they are 7lb. There’s no need for them to have had their injections. Policies at other pools can differ, so it pays to check before you go. We started in the 3 – 6 month class, where I did spend a good portion of each session sitting on the steps of the pool feeding Little Miss! But by the end of our first 10-week block, she was enjoying it, so I signed on for another, then another, then another! We swam at Calmababy until just after Little Miss’s first birthday when I went back to work. By the time we finished, she was very confident in the water. She enjoyed going under water, jumping off the side, floating on woggles and generally just being in the pool. • You will need a swim nappy, such as Huggies Little Swimmers, or reusable ones, like the Bambino Mio. Then a swimming costume over top. At Calmababy you will need a Happy Nappy before you can go in the pool. • Don’t put your baby’s swim nappy on until you get to the pool – they are not as absorbent as normal nappies (I found this out the hard way – wet car seat!) • Take plenty of towels - at least two for your baby and one for yourself. Take the towels to the poolside so you can wrap your baby up as soon as you get out. • If you find the pool cold, your baby or toddler will as well - invest in a baby wetsuit. • Relax! Or try to. I think that was my problem initially. I wasn’t very relaxed, as Little Miss was so upset. And the more upset she got, the less relaxed I was. Once I got my confidence up and relaxed, she did as well.

Happy New Year from The Meeting Tree! We’ve both had a lovely Christmas with our families and hope you have too. In the run up to Christmas Jo and family had a weekend at the new Woburn Centre Parcs, which is just an hour away from Stamford. They cut down their own tree in Bourne and went to see Father Christmas Needs a Wee to get in the festive spirit. Katie and family had a lovely afternoon at the Homestart Christmas Party hosted by Stamford Post Office and were visited by the man in red. They also had a theatre trip to see The Snow Queen and a trip to Digby Farm for their tree. In January we have trips to the panto in Stamford and will be heading to the Dinky Dancers drop-in at The Yard. We have big plans for January at The Meeting Tree – we will be launching a fortnightly blog with posts by people/businesses/ charities of interest to local families, so keep an eye on our Facebook page and website. MAGICAL MARMALADE

eville oranges are in season, so Rosemary Jameson is busy in the kitchen making marmalade for the year ahead. Make yours now to spread on toast, bread and scones, and Rosemary also has some ideas for gammon, pancakes and ice cream.

Rosemary Jameson runs her own business ‘Rosie Makes’, supplying shops, cafes and hotels with delicious artisan preserves. She also runs classes in preserving techniques from her base in Rutland. She’s active with the Women’s Institute and runs The Guild of Jam and Preserve Makers, a central focus for all preservers and authorities such as Trading Standards and Environmental Health.

Nothing beats the warm, tangy smell that fills the whole house at marmalade making time. I think it is the best part of the preserving year - it’s hectic and a race against the clock getting enough marmalade made for the whole year from the short season of Seville oranges. I think some people part process the oranges and freeze the resulting pulp to make throughout the year, but I have never done this myself. I just freeze the Seville oranges whole, but as I also make marmalade to sell I can’t make enough in just the sort season of oranges. However, if I’m making for just our own use at home, I like the fact that the clock is ticking, it’s a short, sharp session when the whole kitchen gets sticky and every surface is covered with jars. Marmalade has been known in some form since well before Tudor times, originally the Portuguese word marmalada denoted a sticky paste made from fruit, usually

quince, and sugar. The word, or a form of it, still exists in most of Europe today, and we will know from our holidays abroad that when ordering marmalada we will actually be served what we know as ‘jam’, as it still describes the type of confection not a particular preserve. We need to add the name of the fruit to be sure of receiving exactly what we are expecting. It is interesting that the preserves company, Tracklements, took on Trading Standards and successfully won their case to continue making red onion marmalade. Trading Standards maintained that this popular preserve had to be re-named as it did not contain any citrus fruit and was therefore not a ‘marmalade’. But Tracklements pointed out the historical origins of the word and the traditions surrounding it, and were successful in winning their case to keep the familiar description.

GLAZE for Gammon Make a brilliant glaze for a cooked gammon or bacon joint:

 3-4 tablespoons chunky marmalade  2 tablespoons soft brown sugar  1 teaspoon mustard (any type is fine) Remove the rind from the cooked joint and spread the mixture over the surface, pressing down as well as you can. Stand it on a wire grill over a roasting tin and bake for about 20-30 minutes in a medium oven, basting frequently. My son sometimes uses plum jam instead of marmalade. . . yummy!

Making marmalade I’ve only once made marmalade from ‘raw’ oranges - when I was 15. It was enough to put me off for life. Since that first batch I have always cooked the fruit first which makes it much easier to cut the peel into the size you prefer and gives a beautifully rich, intense flavour. The peel is firm, but tender from the double cooking - none of those nasty rubbery bits!  6 fl oz marmalade  6 fl oz water  2 tablespoons butter Combine the marmalade and water over a low heat stirring until smooth. Add the butter and stir again until evenly combined. Serve warm with a stack of pancakes.

There are so many delicious variations as well - we find that we get asked for ginger marmalade all of the time - but you can add a little of what you fancy, whisky or brandy, black treacle to make Dundee marmalade or try making it from limes or tangerines. While talking of marmalade don’t forget our ‘jampaign’ to get real jams and marmalades back onto the menus of tearooms, hotels and B&B’s. It is only by demanding the best that these preserves will enjoy the same attention to detail afforded to teas, coffees and locally produced bread and other produce.

Other ideas If you love lemon curd, try using the zest and juice from a Seville orange instead of lemon - the taste is amazing and all the better for only being available for a very short time, it just heightens the pleasure. Try adding two or three tablespoons of your marmalade to a favourite tea-loaf recipe - it’s absolutely delicious or layer through a bread and butter pudding. If you have an ice cream maker stir some of your marmalade through a beautiful silky vanilla - or soften a good quality bought one and ripple away! Serve in a brandy snap basket or with shortbread biscuits and a shot of orange liqueur.

Top tip When your marmalade has reached setting point let it cool in the pan for 20 minutes or so to prevent the peel all rising to the top of the jar.
