Along with the rest of the Montblanc 1858 Collection, the contemporary chronograph is inspired by the spirit of mountaineering. Like the recently launched Montblanc 1858 Geosphere Limited Edition, the Montblanc 1858 Automatic Chronograph showcases key design elements influenced by the sport – apt, given that the maison takes its name from the highest peak in the Swiss Alps. The Champagne-coloured dial features the Montblanc logo bisected by an engraving of the snow-capped mountain top. The caseback boasts a relief engraving of the mountain itself, as well as a compass and two crossed ice-pickaxes, symbols of an adventurous spirit.

Montblanc 1858 Automatic Chronograph

Looking to the past for inspiration is a familiar concept when it comes to style reinvention. Designers often give a nostalgic nod to times gone by with a vintage-inspired aesthetic, and the world of luxury horology is no different. The Montblanc 1858 Automatic Chronograph has embraced this particular ethos with triumph. Part of the Montblanc 1858 Collection, which was created to mark the 160th anniversary of the legendary watch manufacturer Minerva, this striking timepiece is a modern reinterpretation of Minerva watches of the 1920s and 1930s. Available in two versions – steel with a black dial or bronze with a Champagne dial – the timepiece bears a remarkable resemblance to old Minerva chronographs. The large, sapphire crystal case, with its rugged crown hints at military watches of the early 20th century, while the robust, domed design recalls vintage Minerva pocket watches and chronographs. The 42mm case comes in both polished and satin finishes and is available with a chic, calfskin leather or NATO strap. Another nod to the past is in the bi-compax counters on the dial, positioned at three and nine o’ clock, a design feature often seen on Minerva’s historic chronographs. They’re perfectly complemented by the elegant, smoked Champagne colour and sunray finishing. The beige luminescent numerals and the domed, cathedral-shaped hands – both of which are enhanced with SuperLumiNova® – complete the retro-inspired aesthetic. One could easily imagine the timepiece on the arm of a 1930s gentleman as well as a modern-day style aficionado. The warm colour scheme incorporates ‘living materials’, with its bronze cases and calfskin leather straps. These materials are predisposed to ageing beautifully, and are therefore the perfect match for this vintage look, creating the impression of a modern-day heirloom.

To represent the collection, Montblanc selected a pioneer of the sport, Kenton Cool. The 44-year-old Briton has summited Everest 12 times and in 2013, became the first person to summit Nuptse, Everest and Lhotse in a single push without returning to base camp. Cool is inspired by the British mountaineering expeditions of the 20th century, often referred to as the sport’s golden age, when adventurers would push the boundaries of possibilities to reach great heights. Looking back at some of the classical music heavyweights who have played to sold-out concerts in Abu Dhabi – think Plácido Domingo, Katherine Jenkins and Andrea Bocelli – it’s clear the capital crowd has a deep appreciation for this musical genre. And this growing interest has def initely been bolstered by events such as Abu Dhabi Classics, now in its eighth season. Running until April 2019, visitors can expect a diverse lineup of western and Arabic classical music, including famed soloists, ballet and opera. The season kicks off on October 12 at Emirates Palace, with Mozart and Satie Violin Concertos by the prestigious Camerata Salzburg Orchestra and violin virtuoso Renaud Capuçon. Also in the capital, the NSO Symphony Orchestra recently announced they would withdraw their decision to disband, and will instead continue to delight fans with a special line-up of events, including this month’s Frank Sinatra tribute on October 5.

Formula 1 Etihad Airways Abu Dhabi Grand Prix is one of the emirates’ most eagerly anticipated annual events. Aside from all the guaranteed high-thrills sporting action, which brings the F1 season to an end, the event also promises some of the year’s hottest entertainment. Across three days, from November 23 to 25, this year’s Yasalam After-Race Concerts will see RnB sensation The Weeknd perform on Friday, followed by singer-songwriter Sam Smith on Saturday, while the event’s Sunday finale belongs to rock legends Guns ‘n Roses, who, judging by their previous performance in Dubai, will be poised to bring the show to a suitably explosive close. Elsewhere in the UAE, the multipurpose Dubai Opera is known for staging some of the city’s most diverse acts, with everything from modern ballet to rock and jazz. The venue has also been expanding its pop repertoire of late, and upcoming shows include British electro band Morcheeba on October 31 and Irish vocalist Imelda May on November 2.

Dubai is revered for its incredible nightlife scene and, fortunately for music lovers, the live music scene is going from strength to strength. Popular with the city’s jazz aficionados Q’s Bar, nestled within Palazzo Versace Dubai, is a solid choice if you’re on the hunt for quality music. Set up by none other than musician and producer extraordinaire Quincy Jones, the slick venue presents a new resident act every few months. Currently on stage until December 1 is singer, dancer and actor Rogelio Douglas Jr who regularly plays to sold-out crowds at his Los Angeles Vibrato Jazz Club residency. Another fail-safe option for nightly performances is Hard Rock Café Dubai. The swan queen ——— Concierge meets Yuriko Kajiya, Houston Ballet’s principal ballerina, ahead of her performance in Swan Lake In the world of ballet, Swan Lake is one of the best known and most universally loved. Composed by the legendary Pyotr Ilyich Tchaikovsky in 1875 and first performed by the Bolshoi Ballet in 1877, it is based on an old folktale about a beautiful princess Odette, who is turned into a white swan by the evil sorcerer Rothbart. Only the love of the handsome Prince Siegfried can save her. Traditionally, the lead ballerina of the company plays two roles: Odette, the white swan maiden, and Odile, Rothbart’s treacherous daughter, who takes the form of the black swan maiden. This month, the production is being brought to Dubai Opera for the first time by the Houston Ballet. Taking the challenging lead role in Swan Lake is Yuriko Kajiya, a talented principal ballerina. “In most productions, if you are dancing the lead, you really only dance as the white swan and the black swan,” says Kajiya. “But with this production, I also dance the role of Odette as a maiden. She has a beautiful pas de deux with the prince in the first act and a dramatic one in the last act. “There are a few times during the ballet that I have to make a really fast change into another role. It’s not easy; you feel very rushed, and you don’t really have much time to calm down or rest between roles. I find that listening to the music definitely helps me to transform myself.” No stranger to starring roles, the ballerina has performed in everything from Madame Butterfly to Giselle to Manon, all ballets with captivating heroines at their hearts. “I love story ballets because I love to act and transform into these strong, interesting characters. Plus, I really enjoy the experience of interacting with the other dancers on stage, when we are all trying to tell a story together.” Kajiya began dancing at a young age, when she moved from her hometown of Nagoya, Japan to attend the Shanghai Dance School in China − a government-run school with its own set of challenges.

“It wasn’t easy to be a foreign student in China at that time. Most of the students were hand-picked because they had the classic ‘ballet body’, which I did not. I entered the school simply because my parents paid the fees. “I was always at the bottom of the class, but I worked extremely hard, always in the studio, always practising. I was a total ‘bun head’,” she laughs. “Those years were tough but they definitely helped shape the person I am today. I wouldn’t change a thing.” Eventually, her hard work was rewarded when she won a scholarship to Canada’s National Ballet School. And the rest is history. Being a ballerina involves a tremendous amount of discipline. A typical day for Kajiya starts with class at 10am, followed by seven hours of rehearsals (with an hour-long break for lunch). She’ll use any spare time to rehearse for a specific role, do some cardio at the gym or see her physiotherapist. The intensive rehearsal schedule is key to keeping nerves at bay. “I don’t usually get stage fright, because I spend enough time learning the steps and practising my own way for the role. By the time it’s opening night, I do get a little bit nervous, but once I’m on stage, I just can’t wait to dance.” Today, the principal ballerina is a role model to dancers everywhere, especially those from her home in Japan. “I’m very honoured to have young girls and women looking up to me,” says Kajiya. “It’s such a privilege and it motivates me to be the best I can be.” Swan Lake will be performed by the Houston Ballet from October 24 to 27 at Dubai Opera. It’s been nearly five years since Dubai won the right to host Expo 2020 and HH Sheikh Mohammed bin Rashid Al Maktoum, Vice President and Ruler of Dubai, promised that the emirate would “astonish the world” with its offering. While entertainment will be on offer in numerous locations across the vast site, the central Al Wasl Plaza (wasl means connection in Arabic) will be the place to enjoy the event’s biggest celebrations and cultural events from more than 180 participating countries. This 150-metre wide and 67.5-metre tall domed space will be able to accommodate 15,000 people and will feature a unique 360-degree to create an immersive experience for all visitors. This plaza will also act as a connecting hub between the three themed districts titled Opportunity, Mobility and Sustainability, which fall under the umbrella of the event’s main theme, ‘Connecting Minds, Creating the Future’. Here, those in attendance will have the chance to explore individual country pavilions, each featuring unique architecture and cultural exhibitions. Each district will also have performance spaces, galleries, art installations and outdoor gardens. A full events programme and a children’s park should prove enticing for families, while the gated area will include a variety of food and shopping options. In fact, there will be a wealth of opportunities to engage in some retail therapy, thanks to some 6,000 square metres of retail space throughout the expo site.

Entertainment will be on offer in numerous locations across the vast site Thanks to the many attractions and packed events schedule, the expo is expected to attract as many as 25 million visitors over the course of six months. With such a high volume of attendees, much is being done to improve transport links to the site in the Dubai South district. The Dubai Metro Red Line is currently being expanded to include a station within the grounds of the expo site, while 14 new bus links are set to help serve visitors to the venue. The construction of the Expo 2020 Dubai site is also progressing rapidly, despite there being more than 700 days until proceedings get underway. So far, 42 million work hours have been completed on the site, while each week sees 6,100 cubic metres of concrete poured, and 500 tonnes of steel brought in as work continues on various structures. Vacheron Constantin’s Heritage department plays a vital role in shaping the Swiss watchmaker’s future. Here the maison’s style and heritage director, Christian Selmoni, tells us more

Enjoying the title of ‘the world’s oldest watch manufacture in continuous production’ (263 years and counting), Vacheron Constantin boasts a legacy that reflects the highest standards in fine watchmaking. And its core philosophy, “do better if possible, and that is always possible” perfectly encapsulates the very essence of the luxury maison. Over generations Vacheron Constantin has proved to be an industry pioneer, creating timepieces that raise the bar on exceptional craftsmanship, aesthetics and functionality. Through this commitment, the maison has developed a unique savoirfaire for respecting the rules of traditional watchmaking, while still holding dear the determination to bring about constant innovation. Style and heritage director, Christian Selmoni, explains: “Heritage is a key asset when considering product design. We are considered as a benchmark in the field of haute horlogerie, and the style of our watches – elegant, classic, sophisticated, refined – finds its roots in the maison’s tradition.” Born in Vallée de Joux, one of watchmaking’s historical birthplaces, into a family of Swiss watchmakers no less, Selmoni’s profession seems predestined. Part of the Vacheron Constantin team since 1990, when he joined as a sales administration manager, the watch aficionado worked his way up through various departments within the company, finally settling into his current role in 2017. “I have dedicated most of my time at Vacheron Constantin to the field of product concept, design and development. The Heritage department counts more than 400 linear metres of archives – letters, sketches, designs, technical files, pictures – and for us, it represents a unique source of inspiration for future creations.

“My role is to support, develop and promote the outstanding heritage of Vacheron Constantin through various forms of communication, such as digital. “In a nutshell, digital allows a closer link with our clients and supporters. As an example, we have created The Hour Lounge (@hourlounge) on Instagram, our dedicated account for vintage Vacheron Constantin watches and stories. It’s a dynamic way to communicate and interact. “I also work with the Les Collectionneurs team, providing an exclusive offering of selected, vintage watches. Furthermore, we also participate in the concept and design phases of future models by researching and extracting products and product elements sourced from the Vacheron Constantin archives. It’s an immensely interesting and fascinating job.” The Heritage department spans an exceptional timeline that dates back to 1755, and its research teams oversee this unique treasure trove of timepieces, each offering a boundless source of inspiration when it comes to creating new collections. The inventory currently comprises around 1,500 timepieces, some from as early as the 18th century, and it’s the team’s responsibility to search through the archives and highlight, or “bring to light” as Selmoni likes to say, those pieces that prove to be pivotal to Vacheron Constantin’s evolving legacy. He explains: “We are not only talking about re-editions of timepieces from the past, as we also extract product details from our archives and elements such as dial designs, hands, bracelets and so on, supporting the design teams with components from the past that are in line with Vacheron Constantin’s heritage and style.”

Expanding on what the maison’s sense of style translates as, Selmoni says: “I think that “classic” fits well with Vacheron Constantin’s style. Often, this classicism is mixed with a little twist, such is the case with our Historique American 1921, with its crown at one o’clock and its inclined dial. Beyond this classic aesthetic, watch connoisseurs also consider the authenticity of our timepieces. “This authenticity is again rooted in the long history of the maison and its ability to maintain and transmit all its know-how and traditions, generation after generation.” It’s this point that brings us to the incredible passion and skill displayed by Vacheron Constantin’s many talented artisans, another element that Selmoni discusses with much pride. “Our artisans all have a solid academic background – art schools mostly – and are experienced specialists in their respective fields. In addition, they work together in the same workshop, which makes dialogue and emulation permanently possible. They are directly associated in the creation of our Métiers d’Art watches. “As Vacheron Constantin’s artistry covers a wide range – from the simplest to the most complicated watchmaking movements – young watchmakers therefore have the possibility to evolve within the different workshops, with the ‘holy grail’ being the Grand Complications workshop, where we manufacture rare timepieces such as minute-repeaters and other striking designs. To join the Grand Complications workshop usually requires prior professional experience of around 18 years in other workshops.” It’s thanks to this special talent that Vacheron Constantin continues to thrill watch connoisseurs each year with a new collection of awe-inspiring creations. Talking us through some of his favourite pieces, as well as this year’s most significant launches, Selmoni says: “I have been in charge of, or associated with, many exciting watchmaking projects over the last two decades. Firstly, the Patrimony model, created in 2003, really stands out as it combines Vacheron Constantin’s timeless design with contemporary dimensions and character. Now some 15 years later, this piece remains unchanged and a maison icon. “Secondly, I must mention the Tour de L’Ile, presented in 2005 for Vacheron Constantin’s 250th anniversary. Featuring 16 complications displayed across the watch’s two faces, at the time it was the world’s most complicated wristwatch.

Additionally, there were several other releases that caused much excitement at the 2018 Salon International de la Haute Horlogerie. “This year has been an important year at Vacheron Constantin, as we launched our new collection, Fiftysix, a cosmopolite, retro-contemporary collection of watches. Simple yet complicated, they are inspired by one of our heritage timepieces from 1956. In addition, we have presented Métiers d’Art Les Aérostiers, a truly magnificent collection of hand-engraved and enamelled complicated watches inspired by the story of early balloonists during the 18th century.” Both collections, although vastly different in their aesthetic and craftsmanship, showcase the maison’s ability to deftly balance the old with the new. Running the show at one of the world’s most renowned culinary brands is no easy feat, but Buddha-Bar Beach Abu Dhabi’s head chef Eko Ridwan Zulfikar makes it seem effortless It’s only been a few months since its opening, yet Buddha-Bar Beach Abu Dhabi is on track to become the hottest hangout destination among the capital’s chic crowd. Although, you wouldn’t expect anything less from the renowned Parisian export. One of the many talents behind this success story in the making is the venue’s head chef Eko Ridwan Zulfikar. Complementing the restaurant’s picture-perfect setting at The St. Regis Saadiyat Island Resort, Abu Dhabi is a gourmet experience championing pan-Asian, Japanese and Mediterranean flavours, all curated by the culinary expert himself.

Tell us about your journey as a chef. How did it all begin? “I discovered my passion for cooking when I had to take care of my siblings while my mother tended to my sick father. I would help prepare both lunch and dinner after school. This made me realise how much I loved spending time in the kitchen and that’s when I decided to become a chef. During my early days, I was eager to learn new things and this motivated me to participate in cooking competitions, some of which I’m proud to have won. Being born and raised in Indonesia, my culinary background revolves around Asian flavours. However, working across 11 different countries and experimenting with new culinary concepts and cuisines has helped me further develop these skills. In 2014, I was fortunate enough to see the fruition of my efforts when Buddha-Bar Dubai bagged an award for Best Bar Food.”

With Asian cuisine, the competition in the capital is fierce. How does Buddha-Bar Beach Abu Dhabi stay ahead of the game? “Anybody can follow a recipe and plate a dish. But I believe that our passion and integrity sets us apart and pushes us to achieve the best. As culinary experts, we aim to provide great tasting food and an experience unlike any other. A restaurant is not only about the chefs, it’s also about the service, the facilities, the promotions and the individuality of each staff member a guest interacts with. We work together towards one goal – to make Buddha-Beach Bar Abu Dhabi the best it can be. We motivate our staff to make personal connections with our guests and treat everybody who walks through our doors as a VIP.”

What can make or break a dish? “Every great dish has three essential elements. Without these, there will be no taste at all. Time, passion and effort come before any other tangible ingredient and it’s the blend of these aspects that shines through in every dish. If a chef does not put his effort and passion into the dish and does not dedicate the time to better his craft, the results won’t be up to the mark.”

What is it like working in the Buddha-Bar Beach Abu Dhabi kitchen? “Every day is an adventure at the restaurant. With a team that feels like family, we are always laughing and joking with each other, but we still work like a well-oiled machine during service hours. It’s entertaining to interact with people from different nationalities and watch the team learn new languages and cultural practices. We are all very close and always willing to jump into other stations and help without being asked. And with new promotions and dining experiences always in the pipeline, it’s quite exciting to put our heads together while experimenting with new concepts.”

When it comes to taste versus presentation, how do you achieve the perfect balance between the two? “We eat with our eyes first, so the presentation of a dish is what makes the first impression and tells you how a meal is going to taste. Having said that, flavour is, undoubtedly, the most important aspect. A dish may not look appetising, but if the taste is amazing, it will leave a lasting impact and also keep guests coming back for more. But finding the perfect balance between the components and presentation of each dish takes practice as it relies heavily on a chef’s experience and creativity. It’s all about understanding portion sizes, colour and textures.”

When it comes to running a team, what values do you consider important? “Family, loyalty and integrity; these are the values that I aim to instil in my team, and this motivates them to always give their best. I also push my chefs to continuously learn and feed their passion. In order to keep things exciting, I make sure to often move them between stations so that they can get the most out of their time here.”

What is the best part about being a chef? “The thrill of living a different day every day. There is never a fixed routine and you never know what the day ahead is going to look like. The kitchen could be extremely busy, stressful and frustrating on one day, but it can also be fun, quiet and entertaining the next. However, I believe a chef’s greatest satisfaction comes from a happy guest. It’s a fantastic feeling when we see guests leaving with a smile.”

When you’re not behind the scenes at the Buddha-Bar Beach Abu Dhabi kitchen, what’s your go-to meal? “As an Indonesian, fish head curry is a dish I enjoy cooking. It reminds me of cold afternoons when my mother would have it ready for me upon returning home from school.” So would that be one of the best meals you’ve ever had? “Yes. I’ve eaten at some of the best restaurants around the world, but nothing beats a mother’s home-cooked meal.” If there’s one person in the world you’d love to cook for, who would that be? “I would really enjoy the experience of cooking for a president or leader of a country.” Any tips for up-and-coming chefs? “Always keep your passion alive, strive to learn as much as you can and push yourself to do better each day. Learning new recipes and cooking techniques is easy and will happen naturally as you work, but if you want to make it in this industry, you need to be mentally strong and focused.” For more information

Travel the globe with the international fare at Cez, Address Dubai Mall’s hot new eatery

There comes a point during every shopping spree when it becomes necessary to stop and refuel. Fortunately for shoppers in The Dubai Mall, a trendy new eatery has opened in Address Dubai Mall to provide a tasty dining option in between browsing, or at the end of a long day of retail therapy. Close to Bloomingdale’s, Cez is a sleek and spacious restaurant right in the heart of the action. With dramatic high ceilings, plenty of seating and an open kitchen, it takes up an impressive 10,000 square feet. It is divided into two distinctive sections: a main dining area and the smaller, more relaxed café, which feels like a laid-back living room with stylishly curated homeware and a library of books. One of the things that makes Cez an exception is the fact that it’s a homegrown concept. It’s also (soon to be) the only licensed outlet directly accessible from The Dubai Mall. While at the time of going to press only soft drinks were available on the menu, the talented mixologists know how to make a seriously impressive mocktail.

Despite its large size, the restaurant staff are extremely attentive and knowledgeable about the menu, which is extensive. Cez is the perfect choice if you’re not sure what you fancy – there’s something on the menu for everyone, no matter what your taste. In fact, the menu at Cez touches on just about every corner of the globe, with Asian, Arabic and European cuisine all making an appearance. For breakfast, you could have savoury French crepes or foul medames, a Middle Eastern morning staple made of fava beans, lemon, olive oil, garlic and herbs. However, you might prefer to opt for the impressive spread of breakfast pastries, which are baked fresh in-house every day. Add a cup of freshly brewed coffee and it’s the perfect way to start the day before hitting the shops. The à la carte lunch menu also offers plenty of international choices. The crispy pop shrimp tempura is an indulgent Asian appetiser served with a spicy wasabi sauce, while the salt and pepper calamari is a typically Mediterranean start to the meal. The lime and buffalo sauce that the calamari comes with then offers a nice, spicy kick.

Classic dessert options include a creamy cheesecake, Italian gelato and a chocolate fondant Seafood lovers are sure to be spoilt for choice, thanks to the extensive raw bar menu, which has a range of sushi dishes from California rolls to fresh tuna and salmon sashimi. There are plenty of cooked options too, including a baked miso salmon served with fluffy mashed potatoes on a bed of minted edamame and an Indian-inspired tandoor salmon, served with saffron rice and a creamy mint dressing. Classic Italian dishes are plentiful, including pastas and pizzas, while Mexican fans are sure to be impressed by the array of Tex Mex; think chilli fries, nachos and quesadillas. Fortunately, there’s a dedicated kids’ menu that will keep even the fussiest little eaters happy. During our visit, we opted for classic European dishes: a baked chicken schnitzel with a side salad and buttery mashed potatoes as well as the steak frites, a rib-eye steak served with sauteed broccoli and a serving of crispy French fries. The desserts are, as you’d expect, wonderfully indulgent. Classic options include a creamy cheesecake, Italian gelato and a chocolate fondant served with vanilla ice cream. You can’t go wrong choosing a perfect ending to your meal at Cez.

Having grown up in Dubai, I’m proud to call this city my home. Right from my childhood through to my early career days in the world of advertising and now as an established wedding planner, I have always loved everything this emirate has to offer. And it’s Dubai’s dynamic vibe that continues to inspire me to bring dream weddings to life. When I’m not busy planning an event, you’ll find me making the most of my time in and around the city with my husband and children. We spend almost every weekend soaking up the sun at The Westin Dubai Mina Seyahi Beach Resort & Marina. We also love escaping together to the other emirates over the weekends, especially to Waldorf Astoria Ras Al Khaimah for its serene setting and DoubleTree by Hilton Hotel Resort & Spa Marjan Island as it is a great spot for the kids. Everything about this city is simply magical. I simply adore the Emirati lifestyle and the customs practised by locals. When friends and family visit, I always suggest taking a trip to Al Fahidi Historical Neighbourhood for its old-world charm. When I’m seeking solitude, this is also where you’ll find me. It’s one of the best places in Dubai to soak up the rich culture. I can walk around here doing nothing for hours. A desert safari with Platinum Heritage is also a must on my list of recommendations for its tranquil setting among the dunes, cultural activities and local delicacies served in traditional style. Sometimes, I drive to Hatta, listening to music and enjoying the beautiful scenery along the way. I also enjoy visiting The Hamptons Café in Jumeirah for a refreshing cup of coffee. And at the risk of sounding crazy, Motiongate Dubai is one of my go-to spots on days I need a pick-me-up after I’ve dropped the kids off to school. aghareed.com
