There may be some residents who are not here for some of the month as they take the opportunity to go away and explore somewhere new and exotic, or visit friends and family in their home countries. But there are a whole heap of us who are staying around, and the parents amongst us are looking at ways to keep the kids active, occupied, entertained and even educated away from tablets and games consoles. This month we help you by rounding up a list of different things to do with kids throughout the summer months, from some more summer camps to indoor attractions and edutainment centres and even a theme park and waterpark or two. Our dining focus this month takes a look at a cuisine that offers so much choice and diversity over here, Indian cuisine. Whether fine dining Indian restaurants in leading hotels or hidden gems in the side roads of different neighbourhoods, we cover some of the many options available and which region of India their menu is most associated with. We were in Mall of the Emirates over Eid weekend and were looking for somewhere relaxing to have something to eat and I remembered reading your review of the new look Brunswick restaurant in the Sheraton Hote. We went over to it and it was just perfect and exactly what we were looking for. It was so relaxed and the food was that good, we originally went for a short break and quick bite to eat and ended up staying a lot longer. Thomas

So, clearly it indicates two things: there is no dearth of Indian restaurants here and second, the restaurants offer different flavours thanks to the country’s culinary diversity much like its well-known diverse culture. From the mountains of Jammu & Kashmir (North) to the backwaters of Kerala (South) and from coastal areas of Goa (West) to rainforests of Assam ( East) Indian cuisines’ diversity is a great mishmash of different colonisation eras, and influence of neighbouring countries and of course its own vast rich food history. If in case, Indian cuisine only means curries, spices and fried food to you, let us take you on a gastronomic joyride breaking down the Indian restaurants in Dubai region wise- North, South, East & West to help you explore Indian cuisine beyond butter chicken, biryani and samosa. 20 JULY CONNECTOR
NORTH INDIA We know you love butter chicken made with lots of butter and effort , however Amritsari kulcha, chole bhature, Kashmiri rogan josh, Rajasthani dal-bati churma, and old Delhi mughlai kabab are a few other delectable dishes that North Indian cuisine has to offer. You have options of different stuffings, the most famous ones are gobhi (cauliflower), aloo (potato), onion and mixed stuffed kulchas. WEST INDIA The western region of India includes the states of Gujarat, Maharashtra, and Goa. Gujarat’s cuisine is famous for its vegetarian thaalis (a big plate) which consist of as many as 10 different vegetable dishes, farsan (snacks), rice, chapati (Indian bread) and sweets. In Maharashtra, the coastal areas are famous for malvani & saoji cuisine (fresh coconutbased hot and sour curries with fish and seafood) while the inland areas are famous for vidharba cuisine cooked with a lot of dry coconut. Goa is a haven for fresh fish and seafood. Famous dishes are vindaloo and xacuti. Peanuts and coconut are important ingredients as they are freely available. Rasoi Ghar Located in Karama, this popular Indian restaurant serves authentic flavours of Gujarat, Kathiyawad and Rajasthan. As we mentioned, the region is famous for its thali culture, Rasoi Ghar serves different thali seven days a week. The thali consists of starters, vegetables, curries served with rice and bread and a variety of sweets. And, the food is unlimited for Dhs 40/45. Peshwa A legacy of wholesome Maharashtrian food is the whole essence of Peshwa. This is the only restaurant in Dubai which serves authentic Maharashtrian cuisine. EAST INDIA The region of East India includes the states of Sikkim, Manipur, Nagaland, Mizoram, West Bengal, Assam, Arunachal Pradesh, Meghalaya, Tripura and Orissa. The vast region comprises of beaches, mountain ranges and ‘Chirranpunji, the city with the highest rainfall in the world. People eat lots of rice, fruit and vegetables as the weather allows ample production. Some popular dishes are momos (steamed, meat- or vegetable-filled wontons). machcher jhol (fish curry), and jhaal-muri (a spicy snack made with puffed rice and mustard oil), and kathi rolls. Famous for its sweet treats, the popular ones are sandesh (made of paneer and sugar) and rasgolla (dumplings in syrup). Yalla Momos Located in Karama, you can find momos (dumplings), inspired from China, at Yalla Momos. This tiny shop in Karama offers an array of flavours such as chicken, mushroom, spinach and more. The ambience is casual and the food is brimming with some authentic mouthwatering East Indian flavours. Hotel Cartagena
H otel Cartagena, unlike the name suggests is not a hotel and neither is it in the coastal Columbian town of the same name, but is however Dubai’s newest Latin American dining experience. Located on the 72nd floor of Dubai’s iconic JW Marriott Marquis, the restaurant and bar offers panoramic views of Dubai but the real eye catching view hits you as soon as you enter. Hotel Cartagena is decorated in a quirky and unique style that sets an impression straight away. The bar is decorated with tropical trees, model parrots and birds and a huge cage hanging from the centre of the upper floor running down to the lower floor dining area. The tropical theme continues on the furniture where each table has a multicoloured print of a southern American rain forest. The menu offers a sharing concept with good choices including mains of either seafood and meat, also designed to be shared. We opted for a variety of dishes from the starters and bites menu which included grilled flank steak tacos, shrimp chicharones, a duck confit salad and from mains we went for one seafood and one meat based dish, the www.connector.ae
octopus al la parrila and lamb shank asado. All dishes were generous portions, full of flavour and had accompaniments that paired well. The tacos had a nice chargrilled taste to the steak adding to the flavours and the pineapple and coconut dip that came with the shrimp chicharones was perfect. The octopus was meaty, with a smoky and slightly spicy aji panca sauce, however as good as they all were, the surprise was the duck confit salad. When it first arrived it looked as normal as a salad looks however the combination of the crispy duck with chipotle hoisin and chunks of watermelon underneath the chopped parsley, made this dish stand out the most. Continuing the quirkiness of the place, we were handed an envelope which inside was the dessert menu. Four dishes including churros and the must try smoked vanilla cigar, which when presented looked very much like a cigar, served in an ashtray and even included black chocolate ash. a great dessert to end an interesting meal. Chef Zayn Haggerty Head Chef of The Roost Rotisserie
C hef Zayn has come a long way since cooking fruit flans with his nan. He is now using his knowledge and experience to promote clean-eating as Head Chef of The Roost Rotisserie. Chef Zayn started his culinary career at 3 Rosette Alderly Edge Hotel in Manchester. “It was a massive shock to the system, all these amazing ingredients, strange but beautiful flavour combinations, a new world had opened up in front of me”. Here, the team served the likes of Sir Alex Ferguson and Premier League football players. However, he was more interested in learning from and enhancing his skills by working hands-on with fresh ingredients and how to transform them into magical dishes. 30 JULY CONNECTOR
Chef Zayn’s career then took him to Artisan Manchester a 300-plus cover restaurant, he was there right from the preopening stages responsible for managing a huge team of professional cooks. Happily married and after the birth of his first daughter, Chef Zayn decided to venture out into catering, to learn about a new part of the industry and have a more balanced lifestyle. He started working at the famous Lime Pictures in Liverpool, a huge TV drama studio. From here he started Luncheonette Kitchen Catering for small film studios, offices and formal events, including weddings. Soon after, Chef Zayn was asked to come out to the Middle East to work in a startup business in Oman which again focused on catering. Until he received a call from #connectordubai
RECIPE Omar Ghalib Bustami and Hadil Taisier Khatib, owners of The Roost Rotisserie, it was then that he realised that this concept would bring like-minded people together. The Chef and the owners of The Roost Rotisserie wanted the exact same thing - clean-cooking that did not compromise on flavour no matter how difficult the
challenge. “I am a big advocate of eating healthy and clean and we also want our children to eat the same food as us.� As a result, at The Roost we only use the freshest produce, our chicken is hormone and antibiotic free, we do not add any sugar or nasties to our food menu, even the sauces. Everything is hand crafted in our kitchen.
HONEY-MUSTARD CHICKEN SALAD Ingredients 240g rotisserie chicken 50g baby asparagus 120g frizzy lettuce 50g green beans 50g edamame beans 4 piece radish 1 green apple Croutons For the honey mustard dressing; 2 tbsp. English mustard 2 tbsp. honey 2 garlic cloves 2 tsp balsamic vinegar 2 tbsp. apple vinegar 12 tbsp. sunflower oil or olive oil if you prefer. Pinch of salt and pepper
Method For the honey mustard dressing place all ingredients (except the oil) in a blender and blend, then slowly add the oil to emulsify.

Using a ready-cooked rotisserie chicken, shred the chicken, roughly chop asparagus, green beans and slice the apple. In a bowl combine the remaining ingredients and dress with honey mustard. a nursery
N urseries are the first wobbly steps your little ones will take in to a new world, where there will be no mums, dads or grandparents but teachers and a bunch of similar age children who they will call friends in a matter of days. Choosing the right nursery should be a decision well thought out and considerations should involve points beyond fees and basic infrastructure. It is going to be the foundation of your child's formal education. Hence, it becomes important to ask the right questions before you make a final call. While basics remain the same for all parents, there are certain things working parents need to pay more attention to for obvious reasons. Staff to child ratio This is one of the most important aspects to choosing a nursery. It is important to know staff to child ratio as your child will need more personal attention as they leave the comfort of their own home. Additionally, babies (45 days - 1 year) would need more attention than toddlers (1-2 years) and toddlers need more personal attention than children aged 3 years or more. Therefore, parents should ask for respective staff to child ratio in a nursery before taking a final call. When we are on field trips or have children with additional needs we reduce the ratio of children per staff.” Development focus areas by age group It is obvious that you want your child to learn new things at nursery (in a fun setting, though) and want them to develop physical, social, communication and emotional skills. However, it is important to check out activity plans in detail as activities should differ for every age group. Babies a few months to a year old would only need some interactive sensory classes and basic art & craft classes. Children aged between 2-3 years old should be involved in various activities including art & craft, basic maths & science, storytelling, role play, physical activities and more. Bear in mind the extra cost you may need to pay for a nursery that operates all year. Affiliation with schools Some nurseries have affiliations with schools, which may be beneficial to you. Getting your child ready for good toileting habits is always an area of concern, but we all know that children learn good habits faster when they see their friends maintaining some good habits too. S ummer at its peak brings a plethora of health concerns and issues, such as sunstroke and skin rashes. It becomes important to adopt mindful lifestyle changes to keep yourself healthy while able to remain active. We spoke with a few experts to advise our readers on the most common illnesses, their treatments and some of the best summer healthcare tips. Common Illness And Treatments Heat cramps, heat exhaustion and heat stroke The common summer illnesses encountered in the UAE are directly related to the summer temperatures which can reach up to 48°C. There are 3 types of heat-related illnesses: heat cramps, heat exhaustion and heat stroke. 50 JULY CONNECTOR
Dr. Azhar Ali , General Practitioner, Medoer 24x7 International Hospital Al Ain said, “Heat cramps result from excessive sweating that depletes your body from salts and water. It may manifest as muscular pains in the arms and legs including the abdomen. Extreme heat exposure might also result in heat exhaustion. The warning signs include dizziness, rapid and shallow pulse, clammy skin, heavy sweating and nauseated sensations. Heat stroke is a medical emergency which if not managed urgently can result in brain damage. The symptoms and signs include hot red skin, raised body temperature, absence of sweating, confusion, decreased alertness and may progress to coma.” #connectordubai
HEALTH & WELLBEING Dr. Arshad Bhat Specialist Internal Medicine Mediclinic Al Sufouh said, “Heat stroke is a life-threatening emergency in which inherent cooling mechanisms fail. The two main organ systems affected are the brain, and the liver. Patient complains of vertigo, confusion, ataxia and eventually, coma. Treatment emphasis should be on rapid identification and prompt transfer. Once identification has been made, and while transfer is being arranged, any measure that can be taken to begin cooling the patient and possibly rehydrating them (with oral rehydration solution) should be taken. Once in hospital, initial management of the patient with heat stroke is aimed at stabilisation of the airway, breathing, circulation and cooling (A, B, Cs).” Dr. Uchil Lalit Mohan, Specialist Internal Medicine from Emirates Specialty Hospital said, “The first step in treatment consists of moving the patient to a cool area to reduce the temperature. Plenty of oral fluids to combat dehydration. Patients showing signs of heat stroke should be moved to a hospital urgently.” Gastrointestinal disorders Gastrointestinal disorders like vomiting and diarrhoea are more common during www.connector.ae
summer. Due to the high temperature, bacteria multiply rapidly in food which is left outside (unrefrigerated). During summer, it is wise to avoid uncooked food like salads, dips and chutneys. These cannot be heat sterilised and hence bacterial growth cannot be prevented. Skin rashes Skin complaints such as heat rashes are also common because of the hot and humid weather. Fungal infections of the skin especially athlete’s foot are another common skin problem due to heat. Dr. Azhar Ali of Medoer 24x7 International Hospital Al Ain said, “Sun-radiations have a negative effect on human skin. It may cause the onset of a new rash, and at the same time, could aggravate the existing skin pathologies. Individuals with fair skin complexion having less skin melanin (skin pigment material) are pretty more susceptible.” Dr. Arshad Bhat of Mediclinic Al Sufouh said, “Prolonged exposure to ultraviolet radiation (UVR) from the sun results in sunburn. In general, the severity of sunburn is related to the intensity of the UVR and the duration of the exposure. Sunburns are CONNECTOR JULY 51
HEALTH & WELLBEING characterised by the appearance of intense redness, the sensation of burning and pain 4-6 hours after sun exposure.” Dr. Arshad Bhat further said, “Treatment for sunburn is almost always symptomatic. Blisters should be left intact. Topical creams and anaesthetics may be helpful, especially those containing vitamin E or aloe vera. Prevention of sunburn remains the best course of action. This is achieved by ensuring adequate protection from UVR through remaining indoors when the sun is strongest, generous and frequent application of sunscreens and use of UVR protective clothing.” Headache, fainting and heat related ankle swelling Dr. Nazia Salam, Family Medicine Consultant at Health Shield Medical Centre said, “Extended summer activities and strenuous exercise in the hot sun can lead to more headaches. One should avoid prolonged exposure in the sun and drink plenty of fluids. Swelling of the lower legs, most commonly ankle swelling is also very common during summers however it usually subsides without any treatment. People do encounter brief loss of consciousness or feeling dizzy when standing. In such a case one should rest in a cool place positioning your head low and 52 JULY CONNECTOR
legs elevated.” Fungal infections Dr. Omar Ibrahim from Shamma Clinic said, “The cutaneous mycosis of the fingers and toes is a fungal infection caused by two agents of the genus Trichophyton: T. rubrum and T. interdigitalis. It is rather contagious and is favoured by direct contact and frequentation of public places and by poor compliance with good hygiene standards. The mycoses are characterised by erythematosquamous patches located mainly under the soles of the feet or the palms of the hands and at the interdigital level, they are often itchy and very annoying.” He further said, “The treatment is local with the use of creams based on anti-fungal substances to be applied 2 times a day for at least 14 days. Systemic therapy should be reserved for those cases where there is resistance to local therapy, in which lesions are more extensive or plurifocal or in case of hair involvement (because the hair follicle is not reachable by topical drugs). It is essential to prevent such infections by wearing rubber slippers at the poolside, in the shower, and the changing room, as well as strictly using personal towels and brushes.” #connectordubai

Stay hydrated Dr. Azhar Ali of Medoer 24x7 International Hospital Al Ain said, “Most important is to stay hydrated when going outdoors. Frequent intake of water or fruit juices is advisable if the person has to stay out for long hours. Stay away from caffeine or other soda drinks (that are way more sugary).” Avoid sun Sun should be avoided especially from 11am to 3pm, when the temperatures are at their peak. Elderly people are more prone to get dehydrated, therefore, it’s better to schedule their activities to morning and evening hours. Apply sunblock Sunblock (SPF 15 or higher) should be applied to prevent skin pathologies. It is preferrable to wear light clothing and sun-glasses too. should avoid acrylic and other synthetic materials.” Eat fresh Dr. Uchil Lalit Mohan added, “Food should be consumed immediately after being prepared. Food bought from restaurants and fast food outlets should not be kept unrefrigerated and should be consumed as soon as possible.” Priyanka Mittal, Director, KRBL, makers of India Gate health food range said, “During summers it is best to avoid oily and fried food that is heavy on the stomach. A thorough explanation about the surgery is the corner stone of every successful cosmetic surgeon. Next, is the general health evaluation and most important assessing the expectation of the patient. Once the patient fully understands the procedures, including the advantages and disadvantages, a consent form is to be signed with all being said in a written form. On the day of the surgery, pre operative planning and photography are mandatory, explaining the surgery plan to the patient again. After the surgery is done, patient is discharged home, with written instruction. Followup on a certain dates are also a must.” What are the most popular procedures? As human beings, many of us share the same concerns. Whether we are younger or more mature, we tend to view our bodies as requiring the same things. We usually want to make sure we’re always putting our best face forward, so it makes sense that that is our main concern. Dr. Mohamad Sabet Salahia, Plastic, Cosmetic and Aesthetic Surgeon from Emirates Specialty Hospital said: “For sure the concern of the patients coming to our clinics, first of all, starts from the face. Usually, the face is the common concern of the patients because it’s on show and it cannot be covered, other problems in the body can be covered.” What procedures do you recommend for these concerns? It is important that as a surgeon you are able to understand whether the technical ability to do these procedures are in fact available.” What are the top tips to consider before getting cosmetic surgery? Cosmetic surgery is something that you should be completely sure of before you decide to take the plunge. Dr. Jaffer Khan said, “The first thing to do is to educate yourself, and do your research, and also seek several opinions as well as a word of mouth referrals for surgeons before actively deciding to do a procedure. It is also important for those who will get better results by losing weight, to go ahead and lose that weight, and again to earn the operation such as that they can achieve a better result by bringing themselves down to a particular body weight which is suitable for them. If there’s an area of your body that you are unhappy with and you’ve been considering cosmetic surgery, make sure you do your research and follow these tips from Dr Frank Conroy: • Seek a number of opinions from different surgeons • Ask to see before and after pictures • Ask where the surgery will be performed - it may not be in the glitzy clinic where you had your consultation • Choose a facility with a good reputation and safety record. • Be wary of ‘visiting doctors’ (they fly in for short periods then fly out).
