As Best Buy celebrates this mammoth milestone, Jo Caruana takes a look at what has made this publication the ultimate connection between advertisers and consumers.
F
or 100 months I have looked forward to my monthly Wednesday appointment with Best Buy. It always seems to contain the sort of news and articles I want to read about: the latest products for the home, ideas for recipes, interior design and fashion, and interviews with interesting people.
who took over the running of the publication in 2013. “Best Buy’s content is practical in its nature, which is why I think it is widely valued, balanced by a good dose of fun reads. Every issue we are inspired by day-to-day life and try to cover a range of topics that advise, inform and entertain people on anything from matters related to the home to health, cooking and travel.”
It is the sort of shopping guide that takes its role seriously, by connecting readers with advertisers, and shoppers with the products they want to buy. And I am clearly not alone in my love for this publication, as, 100 editions in, it seems to get stronger and more popular with each passing month.
Having enjoyed flipping through earlier issues to compare just how much the publication has changed, Martina notes that some segments have remained constant, while others have developed or been introduced to match readership and advertiser trends.
However, looking back, there’s no doubt that Best Buy, which is published by Content House, has evolved considerably since its first issue eight years ago.
“Certain elements, such as our trademark interview, have been around since the early days,” she explains. “However, it’s also clear that Best Buy has grown to become more aware of its audience, especially the reader.
“While it’s always been true to its nature as a shopping guide, it has advanced tremendously in terms of its design, appeal and most importantly its significance to its readers,” explains editor Martina Said,
“It has also evolved in line with the times in terms of its design; we’ve given more importance to visual imagery, which we know helps our readers better
relate to the topic at hand. In the end, the best part of a publication is its ability to be useful to a reader, and we think that Best Buy fulfils that perfectly.”
“The best part of a publication is its ability to be useful to a reader, and we think that Best Buy fulfils that perfectly.” Martina Said, Editor
The recipe for Best Buy’s success lies in its unique formula. It is newspaper size in full colour, and printed on highend quality paper that provides more opportunity for tailormade advertising campaigns. “We’ve also introduced innovative advertorials that have taken off, such as case studies, product reviews, recommended product placements linked to specific articles, and restaurant and shopping guides,” says Martina. Best Buy has certainly been part of the local publishing revolution, and has competed
Best Buy's very first issue published in 2007
against tens of magazines all targeting the same audience. “However, after all this time, it has emerged as one of the most successful products, backed by significant advertising and trusted by a range of big brands,” continues the editor. “I can also safely say that Best Buy is the only shopping lifestyle guide in Malta with fresh content and commercial exposure working in tandem, a formula that has created one of the most successful blueprints in publishing. Together, all of this has kept us going strong.” Agreeing, Best Buy’s publication sales manager Mark Barbara believes that its wide target market ensures there’s something for everyone.
“Each issue we spend time brainstorming about the sort of articles that our readers will love. Our aim is always to provide advertisers with the ultimate platform for them to advertise on, and which promises good return on their investment. As a result, we have many repeat clients in Best Buy, which makes us all the more confident that we’re selling a product that people want to be part of.” One person with a truly unique perspective of Best Buy is Nadine Bruno. She formed part of the publication’s founding team, and later edited and sold advertising in it for several years. Today, though, Nadine chooses to advertise in it herself.

This was only possible thanks to SMSMondial who succeeded to lure to Malta the cruise line company CDF Croisieres de France, a fully-owned subsidiary of cruise giant royal Caribbean Cruises Ltd. A wide range of departures to a number of destinations, most of which were novel for the Maltese, was offered. Maltese holiday makers were also spoilt for choice with two recently fully refurbished ships – the Horizon and the Zenith, each with a capacity of 1,440 passengers spread over 12 decks. besides the many attractions on board, including a disco, solarium deck, casino, gym, sauna and a variety of restaurants, the all-inclusive concept is surely the highlight of the cruise since one can choose from a wide range of free-flowing drinks from the menu practically 24 hours a day.
with such an unprecedented first successful year, SMSMondial, through orange Travel Group, are proud to offer these two ships again with different itineraries for 2015. while the Zenith will be deployed mostly in the Mediterranean, the Horizon will sail from Calais. There’s a choice of four and five-night cruises starting from Malta, eight-day Adriatic cruises visiting Dubrovnik, Kotor and Marseille, and nine and tennight cruises with an overnight in Ibiza. on the other hand, the Horizon will once again be sailing to the Norwegian Fjords, while a new 15-night itinerary to Iceland and the british Isles promises to be the flagship cruise for summer 2015. for further enquiries contact the agent on T: 2277 6000.

“As a team we’re thrilled with the results that Best Buy yields month after month, and this certainly inspires us to further improve this winning formula for another 100 issues and beyond.” Mark Barbara, Publication Sales Manager
“I believe there’s a lot that makes Best Buy stand out,” says Nadine, who is now marketing manager at J Calleja Ltd. “It's the whole concept really – the design, variety of content and
“As editor I used to love coming up with ideas for original content, even though the monthly deadlines were a challenge! I always tried to keep the articles short and straight-to-the-point, as I think our readers value that. “Simultaneously, as sales manager, I enjoyed watching the publication go from strength to strength as more advertisers came on board. It was always nice to receive advertisers’ positive feedback, and to hear that they wanted to be on board with the next edition too.”
Today, in her role as marketing manager, Nadine still chooses to work with Best Buy. “It’s ideal because it gives me the opportunity to write about the products I am marketing. I am a firm believer that consumers want information about products, and advertorials help to put a complete message across to my audience.” Now, looking to the future of the publication, Martina, Mark and the rest of the team are all excited about Best Buy’s ongoing evolution, and the many milestones still to come. “Best Buy has taken some gargantuan steps to become the publication it is today,” smiles Mark. “But, like all things in life, there is still room for development, and we want to keep the publication as current as possible. As a team we’re thrilled with the results that Best Buy yields month after month, and this certainly inspires us to further improve this winning formula for another 100 issues… and beyond.” BB
OUR ADVERTISERS HAVE THEIR SAY
Don’t take our word for it! Here’s what some of our repeat advertisers think about Best Buy. “We tried Best Buy for the first time a while back and liked the results, so we have since increased and repeated our exposure in it. The fact that it is distributed with the Times of Malta makes it very attractive. Plus I like its size, brilliantwhite paper and newspaper feel; it stands out, while being very informative and interesting. Best Buy enables us to give exposure to both aspects of our business – our household line, and our marine division – while giving our readers lots of information about our varied product range.” Charles Ellul, Director, CEF (Trading) Co Ltd “Eight years after being offered space in Best Buy, we can, without hesitation, state that we have found the right publication. The fact that it is distributed with the Times of Malta provides us with a great opportunity to showcase our products, while exposing ourselves to an unrivalled audience. We look forward to further opportunities to work with this publication.” Stephen Mifsud, Managing Director, R Living

INTERVIEW

Creative character Following the release of his latest children’s book, ll-Professur Għasfur, writer and cartoonist Ġorġ Mallia chats to Jo Caruana about life behind his prolific pen.
W
riter, cartoonist and educator Ġorġ Mallia is the sort of person who can never quite achieve enough with his day. As a self-confessed workaholic, he moves expertly from project to project – a cartoon for the newspaper, an illustration for a children’s book or planning for his new role as the head of the Media and Communications Department at the University of Malta, for instance.
Ġorġ lives locally, but also spends a large portion of time in Sweden, where his partner, artist Marie Louise Kold, is from. He has always been a book lover, and he spent his childhood avidly devouring books and drawing, while taking the occasional pause to ‘write novels’. “I was a nerd in the making if ever there was one!” he grins. His love of books has certainly developed since he was little, and Ġorġ has gone on to write and illustrate several of his own, including Ktieb ixXwejjaħ, Avventura Taħt l-Art, the Pullu books and his latest, ll-Professur Għasfur. “I really, really like the result of this one,” he enthuses. “It's narrated by a young girl, Katrin, and is a fantasy involving a weird but wonderful inventor, his turtle and a machine that takes them to different dimensions. It also tells the story of environmental
destruction and where it can lead, but that's under-running. It's primarily an adventurous romp in which I could write (and draw) about all sorts of fantastic situations. It’s lots of fun!” How did you get into creating cartoons and what is your earliest memory of it? I've drawn all my life, and have always liked telling stories through pictures. Cartoons are accessible, scaled-down pictures that can also be very funny. So their impact is brilliant. I find it easy to think in cartoons, and quite easy to bring them ‘to life’. Is there anyone who inspired your career? We all have our mentors, whether intentional or incidental. My incidental mentor was the man who led the English department of the Upper Secondary School when I was a student there, David Cremona. He was an erudite lover of books, with a fantastic English accent and wacky sense of humour. He influenced me indirectly, tickling my love of books and my curiosity for learning. Away from the real world, writers such as Virginia Woolf and JRR Tolkien, and cartoonist Bill Watterson, are my drivers for emulation. There are also so many others I could not even begin to mention them here. I'm a sucker for brilliance in writing and the visual arts. [Note, not a single politician was mentioned (or harmed) in
the process of this answer]. What have been the highlights of your career so far? There were a few of those. Receiving my PhD result (by email). Chairing the National Book Council for nine years, and working with a great, creative bunch of people in the process. Every single year watching my students graduate. Editing and producing Sagħtar for 16 years. Doing One Family, the satirical comic strip in The Sunday Times, also for 16 years. Lecturing in Sweden. Receiving a copy of my latest academic book (a 570-page monster about Social Networks in Education)... and quite a few others! I think of each and every exciting project as a highlight, and there are lots of those. How do you spend your down time? I don't have any. Sorry. I'm a certified workaholic. What do you love most about creating cartoons and writing books? The heady feeling of creativity that knows no bounds and can take you anywhere. Creativity is a drug I cannot do without. Having an idea, and then just sitting down and letting my hands do the talking and my computer the refining, feel wonderful. I enjoy every moment, even though, at times, I don't really enjoy the results. That’s one of the banes of perfectionism!
If you could spend time at any arts venue in the world, where would it be? The Louisiana Museum of Modern Art in Humlebæk, Denmark. Not only does it curate world class-exhibitions, it has a brilliant collection of its own and the venue is breathtaking. I spend hours on end there at least twice a year. Do you collect anything? I'm a comic collector with a (close to) 20,000-copy collection that has eaten me out of house and home. What three things would you take with you to a desert island? My partner (that's not a thing,
I know... can I cheat?), my drawing materials and a book. What would be your last meal? A Danish dish I have grown to love called Hakkebøf Med Løg – made from (ecological, obviously) minced meat patties fried with onions and served with boiled potatoes in a brown sauce. It’s to die for! ll-Professur Għasfur is published by Merlin Publishers and available in bookstores now. Picking your first home Finding and buying your first property is no small undertaking, which is why it requires careful consideration. Martina Said discusses some fundamentals that will come in handy for first-time buyers.
T
he property industry in Malta has flourished in recent years – several reports and statistics have highlighted significant growth in the rental market while incentives for first-time buyers have continued to attract young buyers to make the investment of a lifetime. Malta is also gaining recognition as a desirable retirement destination, placing it in direct competition with other attractive European destinations such as France and Italy. But what’s the latest on property trends for first-time buyers? Omar Xuereb, San Gwann Branch Manager at Frank Salt, offers some insight. “There is a healthy
mix of property options spread across the island for first-time buyers, many of which offer good value for money,” he says. “Brand new apartments, maisonettes and penthouses continue to be all-time favourites, however many individuals are taking up older properties, particularly unconverted houses of character and farmhouses, and converting them into lovely homes complete will all modern amenities.” Given the current climate, Omar says the best types of properties to invest in are ones that are easy to resell, or rent out. “Look for good locations, even if they come at a premium, as this adds value in the long term, as

When viewing a property, it always helps to take someone with you with experience in buying a place, and that could simply be your parents or someone you trust. Discuss what you’re after with them so that they, as well as you, will ask the right questions and know exactly what you’re after. Also, keep an eye out for small things, which could easily become big nuisances later on – are the toilets and showers installed properly? Do you think there will be a problem with mould? Minor repairs cost money too, and you want to be sure that you’re starting off on the right note with your first property. estate agent. First off, buying a property is possibly the biggest financial investment you are likely to make at this stage in your life, which also means that you will be forking out a substantial amount of money. Be true to yourself about how much you can really afford to spend or borrow, with a good knowledge of what you are getting into. Visit different banks for quotations on home loans and see for yourself
which one is offering you the best deal, as well as the best conditions. If you had a hard time choosing your first car, you’re likely to take that much longer when buying your first home, and there is absolutely no harm in that. You may think you’re sure of what you want, but a good deal on a property type that you weren’t really looking into might sway you in the
opposite direction. This is why it is important to take your time and make sure that you can see yourself living in the house you have chosen as your home, especially if you’re not planning to move out of it within a few years. On the flip side, however, understand that you will never find the perfect home because every house has a flaw or two. What you should be looking at instead is a property that suits your needs first and foremost
Some people dread this part the most, others are terribly good at it, but either way, do not be afraid to negotiate the price of the property you’re interested in. The seller expects it, and every bit of money saved could be directed to other parts of doing up your home. Be fair though – you must be reasonable in your dealings and try make the situation a win-win for everybody involved. BB

HOMES
Creating your ideal home office Have you always wanted to work from home, but just don’t have the space to do it? As working remotely becomes a more popular option among today’s workforce, spreading your papers out on the sofa or kitchen table just won’t cut it anymore. Sarah Micallef looks into how to design your ideal home office.
A
s working from home becomes more commonplace, the dedicated home office is becoming increasingly popular. And one of the best things about it, besides the comfort of working from your own home, is that you get complete creative freedom when it comes to its design and décor. Here are some great tips to transform a room into a stimulating and
productive workspace that is separate from the rest of the house and encourages focus and creativity.
CREATE A DISTINCTION
One of the most important factors to keep in mind is ensuring that your workspace doesn’t blend with the rest of your personal space. Distractions like TVs and game consoles should be kept out of your office, and
a clear boundary should be maintained where work ends and personal life begins. Keeping your workspace distinct from the rest of the house will not just help you psychologically, but will also generate less clutter – your stacks of papers and files should not follow you around the house.
INVEST IN GOOD SEATING
Comfort and good seating
support make a big difference in productivity levels, as well as being beneficial to your overall well-being. If you’re going to be spending the majority of your working hours in your chair, make sure you invest in an ergonomically designed desk chair. While it’s true that these can be costly, your back will certainly thank you for it, and if your budget really can’t stretch that far, consider buying a seat support for your existing chair.
PAY ATTENTION TO LIGHTING It’s so easy to neglect lighting when it comes to putting together your home office, but having a desk lamp that is too bright or too dim, or not having sufficient natural light, can affect your mood and productivity more than you know. Exposure to sunlight is best, so ensure that your chosen workspace has sufficient windows to let the light in. Meanwhile, dull,

your décor, including favourite colours and patterns, plants, photographs and posters; and particularly when it comes to wall art, emphasise your sources of inspiration, such as your family, your goals or your favourite art pieces. If your work requires you to be creative, this should be reflected in your décor too, and finally, always make sure you have the tools you require at hand for when inspiration strikes! BB
wintery days or evenings call for artificial lighting, and the best way to go about it is to test out different intensities or light tones to figure out which works best for you.
KEEP IT SIMPLE
The key to working effectively from home is efficiency, so come up with an efficient storage and work process that suits you. Avoid the temptation to over-complicate matters and opt for a clean and simple way to keep things in order – remember, an overorganised office could be just as disorganised, leading you to procrastinate when it comes to keeping it neat and letting the clutter pile up.
UPDATE YOUR TECHNOLOGY
Your devices are there to facilitate your workflow, and
13
frequent faults or errors can be both frustrating and time consuming. Don’t shy away from an upgrade when older devices and gadgets start acting up – aside from putting you in a bad mood, system crashes and loss of data could be disastrous, particularly if deadlines are looming! Ensure that your tech remains reliable by updating your computer’s antivirus software
and OS when updates are available, as well as conducting regular maintenance checks and backing up important information.
PERSONALISE YOUR SPACE While prioritising keeping your work and personal life separate, you should still allow yourself some freedom when it comes to designing your
home office and giving it a personal touch. Particularly if you’re planning on spending a lot of time in there, having pleasant surroundings to work in can make all the difference. A stimulating design that you like will put you in a good mood and give you the drive and energy to get things done, so don’t neglect it! Opt for items that will put a smile on your face when it comes to
Experiment! Achieving your ideal home office will likely require a few tweaks along the way as you use your workspace and figure out what works and what can be improved. The trick is to experiment with new processes, designs and technology to find your perfect fit, and don’t shy away from changing something that isn’t working just because it’s comfortable – this will slowly but surely evolve your home office into your ideal place to work.

EDUCATION
Tech in the classroom Education has come a long way – blackboards have been replaced with interactive whiteboards and books placed at par with tablets. Martina Said looks into how technology is affecting the classroom as we knew it.
T
he bulk of my classroom memories revolve around symbols we associate with learning – the smell of new books, large leaver files on their last legs and IT lessons on nowantique monitors. All these are fast changing though, as the classroom as we knew it is evolving into an increasingly high-tech space. Last March, Prime Minister Joseph Muscat announced while on a visit at a local school that he would like Malta to be recognised as “a global lighthouse for the holistic transformation of learning,” following the signing of a memorandum of understanding with Microsoft to extend the use of IT in classrooms. Over time, ordinary whiteboards will be replaced entirely by interactive ones, and books will become secondary to tablets – is this really conducive to better learning? As with everything, there are pros and cons to the use of technology in the classroom. For instance, doing research up to a number of years ago was a tedious and lengthy process. The use of the internet as a research tool today gives students access to a wealth of information that also facilitates homework and assignments. The pitfall though is that not all information is accurate. In fact, the majority of internet sources are not credible, and students should be made aware that finding the right source is as important as finding the right information. One of the greatest aspects of this technological revolution in the classroom is the numerous tools that teachers now have at their disposal. This allows them to really broaden their lesson plans and take advantage of apps and programs that can make learning fun and interactive. Students are tech-savvy, and using such tools

is a good way of levelling with them. The fact that they might know how to navigate a tablet more than you, whether you are a teacher or a parent, however, could be a disadvantage, and they are very likely to make their way around educational apps and get caught up in the multitude of time-wasting apps available on the web. Putting up with note exchanges between friends was one thing, curbing their use of chatting platforms on social networks is a little harder.
A new Shoelane Sports Shop is now open a few doors up, stocking renowned brands such as Adidas, Reebok, Kappa and Skechers.
If you are a teacher, using social media to interact with your students outside of the classroom could be a fun way of engaging them in a lively discussion or conversation in an informal setting. This might encourage them to be more outspoken and confident with peers and teachers, and could possibly improve their behaviour towards others in the classroom too. While it’s positive to get to know your students informally though, it’s also difficult to draw a line between friend and educator, and difficult to control discussions if they turn ugly.

The presence of technology and social media has altered how educators teach, how students learn and how they communicate with each other. Rather than having teachers lecture to a class in a one-way model of communication, technological advancements could inspire educators to engage in discussion and foster communication, which is often altogether lacking in the classroom environment. The dynamics of the traditional classroom are certainly changing – although significant strides are yet to be made, it is a positive reflection of how our education system is evolving with the times. Take part in the European Week for Waste Reduction 2015 Have you experienced the problem of having items accumulate in your household that are no longer wanted and that end up being thrown away? There are many solutions to this problem and ways to reduce such wastage. As you read on take note of how you can be a smart shopper; this in turn will reduce waste and save you money. Even better, spread the word about how others can reduce waste too, and what better way to do so than during the European Week for Waste Reduction (EWWR), between 21st and 29th November this year? Malta will proudly be participating in the EWWR for the sixth consecutive year alongside 20 other European countries. This initiative is a highly successful European project coordinated by the international network ACR+ as lead partner and co-funded by the EU’s LIFE programme and the French public agency ADEME. The week is dedicated to awareness-raising actions on how to reduce waste. The EWWR bases itself on how one can think of an action to implement or communicate during the last week of November. It is open for all whether individual citizens, the public administration sector, NGOs, associations, schools, industry and SMEs. The project focuses on the reduction of solid waste, giving the flexibility for one to focus on Reduce, Reuse or Recycling. For 2015 the theme is Dematerialisation, doing more with less!
Past participants have raised awareness on the importance of planning meals and doing so with a weekly food planner, which helps tackle the issue of food waste and superfluous purchases. A group of students visited local supermarkets with the aim of giving tips to shoppers on smart shopping. So how exactly can you become a smart shopper? Firstly create a shopping list, and stick to it! Avoid falling into the marketing trap of a two-for-one offer, unless you are part of a larger household and will consume the products anyway. Keep away from items with excessive packaging such as plastic-wrapped fruit, individually-packed sugar or even biscuits. Choose products that offer refill options such as air fresheners, printing cartridges and washing liquids. Weekly tips are posted on Wasteserv’s social media to help citizens with ideas on reducing waste, so follow on Facebook and Twitter to stay updated. Applications for the European Week for Waste Reduction are now open till 2nd November 2015. Read more about the project at www.ewwr.eu and join in to raise awareness about the importance of waste reduction!

Rubyanne and Matthew Cauchi, Managing Directors of CHI Consultants

An innovative and efficient solution to water leaks
F
ormed in 2012, CHI Consultants Ltd is the brainchild of couple Rubyanne and Matthew Cauchi, who brought together their expertise in engineering, psychology and marketing to focus on various local and EU based projects in the fields of energy efficiency, water conservation and research. “We have put together our expertise and have focused our attention on taking an innovative stance on the
services we offer,” says Rubyanne, explaining that the company’s aim is to provide the best service possible, both in terms of product quality and customer relations. The pair worked in their respective sectors for years (Rubyanne in psychology and market research, and Matthew in mechanical engineering) before deciding to join forces. Having both grown up in business environments, the couple gained insight from their respective family
businesses which provided the push they needed to take the plunge and start their own business. “Our secret,” Rubyanne reveals, “is our ambition, and our professional mentality which involves sacrifice and persistence.”
Since then, the pair are proud to have achieved customer loyalty through their professional consultancy and service in the water and building industry, and would like to continue to grow within the building consultancy field, “where homeowners and businesses alike can use our services to solve their building problems permanently, with the least destructive and intrusive manner.” Speaking of the products and services CHI Consultants Ltd offers, Rubyanne maintains that while working on projects with an involvement in water conservation, a niche in the market piqued their interest: “we realised that there were few services offered locally which solve water leak problems, and these services were rarely successful and carried out professionally,
so we shifted our attention towards finding a solution to this common problem.”
To this end, the company offers an efficient service which tackles the mundane problem of domestic and commercial water leaks. “The water leak detection service offered is a non-destructive testing of the plumbing system, so as to find the location of the leak, be it through wall tiles, floor tiles, parquet and so on,” Rubyanne explains, adding that nondestructive services for rain water ingress detection and leaky terraces or roofs are also offered. Subsequently, recommendations on leak repairs are given onsite, and professional plumbing services provided. According to Rubyanne, CHI Consultants Ltd’s strength comes from their experience and expertise, but also from the way in which the company finds solutions to clients’ problems. “We treat each case uniquely, taking the time to talk, listen and explain things to our clients. Our clients’ satisfaction and understanding of our services is very important
to us, and we have many repeat clients and business by referral,” she affirms. Other important aspects include investments in training, innovative equipment and technology.
Meanwhile, the couple have many plans in the pipeline for the future. For the short term, the plan is to continue to strengthen their water leak detection service, plumbing testing and certification, as well as solving problems related to stubborn water leak repairs, as well as introducing better standards. For the long term meanwhile, they are looking to invest in new projects related to building and piping problems. “We are very excited about the future, and aim to maintain the level of quality services we offer our clients, whilst continuing to go from strength to strength,” they conclude. Meager (gurbell) set on a chorizo risotto with a prawn bisque Ingredients SERVES 2 400g meager fillet For the risotto: 15g butter 1tbsp olive oil 30g chorizo, diced 1 shallot, chopped 30g Arborio rice 300ml hot chicken stock 30ml white wine For the prawn bisque: 10g butter 2 king prawns 100ml chicken or vegetable stock 30g onions 30g carrots 30g celery 1tsp tomato paste 20ml cream 1 bay leaf
Method For the risotto, heat the butter and oil in a pot, add the shallots and sauté, then add the rice and stir. While the rice is being stirred, add the white wine and reduce. Proceed to start adding the stock slowly, and continue to reduce and add the stock until the rice is cooked. When it is nearly ready, sauté the chorizo and combine slowly with the risotto. Add a dash of cream to the rice to finish, and leave aside. Meanwhile seal the fillet of fish in a pan and put in the oven for 15 minutes at 180C. Start preparing the prawn bisque sauce – you can use just the shell and head of the prawn. In a pan, melt the butter, add the onions, carrots, celery, shells and head of the prawn and cook. Add the tomato paste for both flavour and colour, together with the bay leaf and the stock. Leave to reduce a bit – once cooked, blend everything together and pass the liquid through a fine strainer to remove all the solids. Put the liquid back into the pan, reduce and add the cream. When everything is ready, you may begin plating, starting with the risotto, followed by the fillet on top and finished with a drizzle of bisque sauce.

Apple and blueberry pie with vanilla ice-cream Ingredients SERVES 2 (depending on the size of the moulds)
1 egg, beaten Vanilla ice-cream For the pastry (makes 300g): 200g plain flour ¼ tsp salt 2 tbsp icing sugar 100g unsalted butter, cubed 1 egg, beaten 1tsp lemon juice 2tbsp iced water For the filling: 180g apples 30g castor sugar ¼ of a lemon zest and juice 50g blueberries 10g butter
Method Start with the pastry – mix the flour, salt and icing sugar together. Add half the cubed butter to the flour and rub it in. Add the rest of the butter and mix until the pastry is crumbly. In a separate bowl, mix the egg with the lemon juice and water, and add gradually to the dry ingredients until it forms a dough. You may not need all the liquid. Shape the pastry into a ball, wrap in cling film and refrigerate for at least 30 minutes. For the filling, start by peeling, quartering and slicing the apples. Place in a bowl with the sugar, lemon juice and zest, and set aside. Heat a pan, add the butter and once it melts add the apple mix and leave to cook for three to four minutes. Then add the blueberries, allow to cook for a few minutes until they release colour into the mixture and set aside to cool. To assemble, line the baking moulds with the pastry, fill them with the apple mix, cover with pastry again, glaze with the beaten egg and cook in the oven at around 200C. After 10 minutes, check the pastry to see if it cooked through. Remove from the oven and leave them to rest. You may serve with vanilla ice-cream.

TRAVEL
The best of off-season travel
Travelling in the months that are not the most popular among tourists has its benefits – apart from being able to enjoy the sights and experiences without having to battle a throng of people to do so, you can get great deals on flights and accommodation. Sarah Micallef looks into some of the best destinations to visit in the low season. nightmare. Drawing hordes of tourists into its narrow streets, it’s hot, sticky and way too busy. Visiting the popular destination off-season however, is quite a different story. While you may risk encountering a little flooding while you’re there, it’s certainly worth putting on your wellies for a chance to glimpse the misty canals, quiet cobbled alleys and the famed St Mark’s Square without the crowds. Of course you can also time your visit to coincide with the celebration of Carnival, when Venice is transformed into one large playground for adults and children alike.
BRIGHTON BOTSWANA
Going on safari is generally known to be prohibitively expensive, and in Botswana, it’s no different. However, you can fulfil your wish without parting with quite as much cash if you’re willing to don a rain jacket and visit in the green season, from November to April. At this time of year, you’re likely to encounter a few rainy days, which result in lush landscapes and thick vegetation that attracts several bird species. It’s also the season in which many animals give birth, so you could also spot some adorable babies!
LAKE BAIKAL
If you’re not one to shy away from cold weather, Lake Baikal, in Siberia, makes for a
splendid winter destination. With temperatures plummeting to -20°C, the lake freezes over, making it perfect for activities like husky-sledding, skiing or zipping around in a snowmobile. The surface, albeit comprising about two metres of ice, is impressively clear and translucent, allowing an amazing glimpse into the watery world below.
VENICE
Visiting Venice in Italy during the peak tourist months can be adequately described as a
Known as a summer destination for Londoners seeking some sun, this British seaside town
is mostly associated with its pebbly beaches and greasy fish and chips served in rolled up newspaper. In the low season however, from December to February, it takes on a different feel entirely. Instead of the people, Brighton becomes home to numerous starlings from across the South Downs, making it a sight to behold if you’re into bird-watching.
HAWAII
With year-round warm weather, the volcanic outcrop of Hawaii is an ideal destination regardless of the season. If you’re looking to extend your summer a little further and soak up some sun on the beautiful beaches of Hawaii, temperatures here average between 25°C and 30°C all
year, so it’s certainly worth a visit outside of the high summer season, when it will be packed with vacationing families keen on hitting the beaches.
PORTUGAL
If you’re a fan of surfing, Portugal’s 950km stretch of coast becomes a surfer’s paradise during the winter months, during which the Atlantic swells are at their biggest. The quiet beaches will also make for a fantastic surfing experience, and the mild weather (sea temperatures average about 17°C at this time of year) means that you’ll be perfectly comfortable in a good wetsuit, so hitting the waves is certainly tempting!
