The best is that it is a privilege to live in such a historic city, though there a few drawbacks for residents, including a lack of daily needs shops, parking issues, the uncontrollable tourism and a lack of respect towards residents. Given the choice, would you change? If yes or no, why? Despite the issues I mentioned, I wouldn’t, no. But if I did, it would be to move somewhere in the countryside, which I love.

YOU’VE GRADUATED… NOW WHAT? The end of an educational marathon is often met with a sigh of relief, followed by a bout of anxiety caused by the uncertainties that lie ahead. Martina Said discusses the realities of life after graduation.

A

s flocks of university students begin a new academic year – some starting out on their journey, others at the end of their studies – there’s no ignoring the fact that for those eagerly awaiting impending graduation, a dose of uncertainly lies ahead. Most times, the summer after one’s final year at university is filled with fun, travel and procrastination. The thought of job hunting is daunting and put on the back-burner for those few idyllic months, until reality informs you that you no longer belong to a university course and must begin to pave your own way, without the safety net

that is another year at uni. The indeterminate state between furthering one’s education and entering the world of employment could be a nerve-racking time for many but it’s also rather exciting – it is a time filled with choices and opportunities, and the challenge lies in choosing the best option for you. Ivana Tasic, Recruitment Manager at Global College Malta, says that education is a lifelong pursuit. “The difference between simple absorption learning and choosing to further your education is that, with the latter, you have an opportunity to specialise. This is important both personally and professionally, as it’s the moment that you begin to step out of a generally educated pack and also begin to work towards your own career goals with a clear path for the future. “The use of a graduate education wavers between industries. However, the individual has to assess whether a post graduate degree is a necessary step to employment – in most cases, the more knowledge you acquire the better your chances are of understanding your future profession. A thirst for knowledge can never be undervalued.” If a post-graduate education is something you are strongly considering, be sure to ask yourself what kind of course you are after and what you are expected to get out of it. Many masters courses will likely be linked to specific careers, while others might serve as entry

It would be best to thoroughly research the courses that are relevant to your needs and to seek out people who followed the course for their unbiased thoughts on it. Ivana says that postgraduate options in Malta are not as numerous as other countries, but are increasing, and so, it is still easy to be confused by the choice. “Remember that you’re working your way towards something. Ask questions such as, ‘what was my favourite area of my undergraduate study?’ People often fall out of postgraduate education because they didn’t let their interests fuel their decisions about their future, or because they’re trying to avoid entering the professional world, so make sure that you’re paying for something that will be engaging and profitable. When it comes to postgraduate study, the MBA is the most popular course available, so those looking to succeed in business would do well to research this area. Otherwise, look at key areas such as contact hours, the actual level and usability of the qualification given and, most importantly, your own motivations.” The variety of post-graduate course options might translate into greater confusion for you. In such an instance, it is best to avoid pursuing a course altogether, and wait until the time is right. “The worst thing you can do is opt to study a master’s degree to simply avoid the world of work,” says Ivana. “With a more specialised education, students will need that little bit more commitment than in undergraduate study, so it’s best to opt for a master’s degree if you have a vested interest in the area of study. It’s just about where you want to end up, and if you don’t know right now, then it is best not to set yourself up for a long-term commitment. You can study a postgraduate degree at any time and part-time options are available, meaning that evening classes are possible for those who are working full-time.” With that in mind, it is time to get working on your next move – be it towards furthering your education or into the world of work. Approaching this next phase of life with a healthy

dose of trepidation is a natural reaction to imminent change, but change in itself is a good thing, and might land you on the path to greater things in the not-so-distant future.

ave you ever walked into a room and gawked at how amazingly dim the light was? Highly likely – but if the lighting were simply perfect, you probably wouldn’t have even noticed. Carefully considered lighting around the house can completely transform your home’s look – taking it from dull and drab to inviting and warm with even just a few changes. Overly bright or severely dim light can be damaging in more ways than one – it could affect your mood and vision, your personal perception of your own home and even make guests feel uncomfortable. Striking the right balance is important, and that means finetuning the lighting needs of a particular room, making the most of its best features. Each room in a house needs a variety of lighting, including ambient or background lighting, task lighting for close-up work, for instance, in the kitchen, as well as accent lighting to highlight special features in that room.

Function and purpose Whenever and wherever possible, it is always recommended to make the most of natural lighting, as its clarity is near-impossible to replicate. However, as this depends a lot on where you live and the architecture of your home, well-placed artificial lighting is equally important. When planning the installation of light around the house, you

Styles and trends In response to a growing trend in favour of green energy, LED (Light Emitting Diode) lights have become incredibly popular, replacing many low-voltage lighting fixtures. The output of LEDs and their ability to reflect a true colour has significantly improved, and the great thing about them is that they are virtually maintenance free as well as cool to the touch – so you wouldn’t get burned trying to change one if it broke down. Lighting a home with LEDs has almost become a necessity nowadays, as although good quality LEDs might cost more than a traditional lowvoltage spot, running costs and energy consumption are massively reduced. However, it is important to know exactly what you want to achieve with these lights for the best

possible design, as they work best as a direct light source and do not have the same ambient qualities as main and lowvoltage lights. Once the lighting scheme for your home is all clearly laid out, it is time to shop for the fixtures. New trends in this field are continuously emerging, and the hardest part will probably be choosing your favourite ones. Be sure to pick out a variety of fixtures – from modern chandeliers and wall-mounted ones to portable lamps and recessed lighting – all the while bearing in mind the style of the room they’ll be fitted in, and their appropriateness in shedding the right amount of light.

RENOVATING YOUR HOME Approaching your home renovation project is made easy with Sarah Micallef’s tips on how to go about it. From start to finish, be prepared and you’ll be sure to reap the results.

A

renovation project is a huge undertaking, and as with all big pieces of work, is far more manageable when paced out and approached intelligently. Avoid common mistakes that can cost you time and money by knowing all the necessary steps for your renovation to run smoothly, but also remember to be prepared for any eventuality. The chances are that you will spend more and take longer than you originally projected, and may even have to change some of your initial ideas, but be prepared, don’t panic, and it will certainly be worth it in the end. Here’s how it’s done.

Know what you’re working with Before making any renovation plans, get a really good feel of the condition of your home. Note how much you paid for it and how much you have left to pay, as well as the market price of the property before and after renovation. This will give you a preliminary idea of the possibilities. Inspect every room with a critical eye and think about how any renovation work will affect the aesthetics as well as basic systems including electricity and plumbing. Any issues you envision here will need to be factored into your plans and solved before work can begin.

Do your homework Once you’ve established your home’s good points and potential areas for improvement, it’s time to buckle down and do some research. Look into renovations on books, magazines and related websites, and find out more by talking to building suppliers and family or friends who have recently renovated their homes. If your home is likely to be a bespoke project which requires a tailor-made approach, it might be best to enlist the help of a professional in the form of a contractor, technician, engineer or architect. If you are planning a major renovation or are concerned about health issues like asthma which could be aggravated by proximity to construction work, you should consider an alternative place to stay while the renovation is underway. If moving out is not an option, try to section off construction zones using plastic sheeting or similar materials to minimise dust and noise, as well as to retain privacy.

f you’re unsure of splashing out on a statement piece of furniture for your living room, or investing in a new sofa because you’ve grown tired of the same one that’s been a centrepiece for countless years, then say it with sophisticated soft furnishings that could give an all-new look to any room in your home.

Switching soft furnishings at the turn of the season is possibly the simplest and most affordable way of giving a room an entirely different look. At the first signs of rain, we’re quick to trade in bright summer colours for mute wintery hues, but the

choice of colours for home furnishings for the cold season needn’t be restrained and limited to the usual greys, blues and reds. Bursts of colour and

pattern are not only pleasing to the eye – they make your home more liveable, and offer a distinct personality to every room.

People have a strange relationship with colour – much as both men and women are keen to sport bright outfits from head to toe, particularly in summer, their colour choices

for the home are often tame and reserved in comparison. Understandably, domestic items are pricey and only changed once every number of years, but colours, prints and patterns are what help bring a home to life at any time of year. A short way away Boasting still mild weather and off-peak prices, October is a perfect month for planning a short holiday. Sarah Micallef explores the benefits of short holidays, as well as the top holiday destinations nearby for a quick getaway from the daily grind.

S

ome psychologists believe that taking more frequent, shorter holidays actually makes you happier than one blowout holiday once a year does, and well, it makes a lot of sense. Think about it – you get more frequent holiday build-ups, in which you’re excited and looking forward to your holiday, and get to take more breaks from the daily grind than just the once. Besides, it’s scientifically proven that you don’t quite

beautiful and closely located destinations around Europe, meaning we’re spoiled for choice in terms of a holiday destination. The relatively mild climate throughout the majority of Europe is also a draw at this time of year, making closer destinations particularly attractive. If you’re after a little road trip in your own car, the catamaran to Sicily is a great option. The Italian island is just a few

hours away by sea, and is often underappreciated in its diverse landscape (there’s everything from mountains, the famous volcanic Etna, vineyards and countryside to quaint seaside villages and medieval towns). Mainland Italy, on the other hand, provides a large number of potential holiday escapes, such as the beautiful and historical cities of Rome and Florence, the romantic Venice, the Tuscan wine, villages, the shopping capital Milan, and so much more besides. Greece is also a great option for a short getaway, to visit great locations like Athens, Mykonos and Santorini, depending on whether you’re after seascapes, history or a quaint village stay. Another country that’s full of Mediterranean charm is Spain, with cities like Madrid, Barcelona and Valencia well worth a visit, be it with your significant other or a group of friends. Moving further up north, France and Belgium are also beautiful and really come into their own at this time of year. Feast on fine French cuisine, walk the streets of cities like Paris or Brussels, or fall in love with the

What’s more, we’re also surrounded by a wealth of

countryside – you’ll be spoiled for choice. Slightly further afield, the United Kingdom is also worthy of consideration, although most destinations require a bit more than a few days to explore. Still, if you’re a fan of city life, a few days of living it up in London or another big city like Leeds or Manchester always go down well, or if you’re more of an outdoorsy sort, the great British countryside is at your disposal – though it’s bound to get a little muddy! Other fantastic and less explored European destinations

include Croatia (which is so much more than its picturesque beaches), Slovenia (don’t miss the breath-taking Lake Bled), and Lithuania (the main cities of Vilnius and Kaunas are a joy to explore), among so many others – it’s truly impossible to name them all. So take my advice, if you’re thinking of getting away for a few days, just do it – remember, it’s good for you! And, being inbetween major seasons, you’re likely to get some good deals on travel and accommodation… as if you needed any more excuses.

Blue-eyed boy From the small screen to the big screen, Davide Tucci’s performance abilities are fast making him a favourite on the Maltese acting scene. Here he chats to Jo Caruana about his career so far, as well as his exciting plans for the future.

A

ctor Davide Tucci was born in Italy and moved to Malta a few years later. His first official role in the entertainment business was in the musical Spring Awakening, which was produced by the MADC in 2009. From there he was quickly recruited for other jobs, both as an actor and a model. “Modelling is great but I missed acting,” he says, “so I decided to make time for it – this time on Maltese drama La Famiglia, as well as a few other theatre shows.” After that, Davide moved to

Australia, where he also worked in the entertainment industry as an actor and model. Work opportunities brought him back to Malta a year or so later and he’s been based here ever since. He is now renowned for his role as the visually-impaired Clyde Montaldo in Katrina; it is a part that has earned him a lot of praise and he is currently wrapping up filming on the show’s second season. He is also proud of his recent role in the production of Jiena Nhobb, Inti Thobb, which marked his return to the theatre after four years.

Now, though, Davide is making his first steps into the world of lifestyle TV, having been approached by the team behind Ilsien In-Nisa – Clare and Pauline Agius, and Claire Agius Ordway – to host a separate section of this popular show. “My involvement is simple and I’ll be meeting three different people each week to discuss topics unrelated to the show’s ongoing theme. It’s a bit daunting to be working without a script but you never stop learning and this is a great opportunity for that! I believe in constantly pushing myself outside my comfort zone!” With that in mind, Davide will also be filming the feature film Limestone Cowboy later in the year. “It’s an amazing project and I am very proud to be part of it,” he adds. “But that’s all I can say so far!” What is your earliest memory of TV or theatre? Watching Bim Bum Bam on Italian TV while still living in Italy. I believe Paolo Bonolis was hosting it at the time – I have always had a certain respect for him. Can you remember the day you knew performing would be the career path for you?

Yes, clearly. I remember being an extra on a film about 10 years ago, back before I got my first theatre gig. We were on top of a stranded submarine in the sea for 18-plus hours a day for a number of days, and I was wearing long johns, woollen trousers, chunky boots, a t-shirt, cardigan and cotton jacket, topped with a chunky leather coat and a sailor’s hat! And all this while doing heavy physical work in the sun over and over again. But I loved every second of it! I instantly got the gist of how a set works and was suddenly transported into 1945 and onto this Russian submarine. Since, although the roles and their complexities have changed, my attitude hasn’t. I am constantly thankful

for the opportunity to do what I love most. Is there anyone who has inspired your career? My sources of inspiration vary so much that it’s hard to pin-point a pattern. I do like watching films to inspire my work, especially when they have a similar mood to the one I need to be in to play a part. For instance, to create the character of Clyde in Katrina, I was inspired by Al Pacino’s Scent of a Woman. I am also a fan of Leonardo DiCaprio, both on-screen for his incredible skills and off-screen for his efforts to save our environment. How do you spend your down time? A very popular quote I love states: ‘travel is the only thing you buy that makes you richer’. I love travelling! From surfing on Australia's southern coasts or eating my way through the amazing dishes my grandma prepares back in Italy, to spending time with family and friends on the Maltese beaches or kayaking in the crystal clear waters of Fiji, I look forward to one amazing experience after another. When I can afford it, both with regards to time and money, travelling helps to recharge my batteries. As for more time-effective ways of kicking back, I enjoy reading fantasy books, watching movies, going to the gym (although I consider that to be a cross between something I have to and want to do), and doing any sort of physical activity. What sort of TV and theatre do you like to watch? I don’t tend to appreciate anything too abstract, but that’s just a personal choice. Other

I love food and I love cooking, so it would definitely be something food-related. If you could perform at any venue in the world, and with any other artist, who would you pick and why? I’d choose to go anywhere it was summer and with sandy beaches (wait, that’s Malta!). I’m not too bothered about where but there are so many actors I would love to work with! Obviously the idols are up there – Al Pacino, Leonardo DiCaprio, Brad Pitt, Eva Green, Robert Downey Jr, Bryan Cranston, Hugh Jackman, Benedict Cumberbatch – there are so many excellent artists in this world and they all inspire me in their own way. In keeping with the latest cult of bushy beards for men, Martina Said peeks into the neat world of grooming for men. been grooming men’s beards for a while now, and says that, in keeping with the trend, men who have previously never sported a beard are now trying it out as well. “Men are interested in keeping themselves groomed more than ever before, whether growing a beard or not. For many men, looking their best is important, and I do what is needed for a man to achieve that,” says Antonio.

o say that men have become noticeably more conscious about their appearance is a somewhat accurate statement. One cannot generalise, of course, but the last decade has witnessed a significant shift in male pampering. Whereas in the past many a man’s toiletries cabinet typically consisted of shampoo, deodorant, shaving cream and perfume, it has now grown to include a variety of beauty products, such as cleanser, moisturiser, anti-ageing cream, eye serum and even a face mask. Among the notable list of trends currently taking the world of men’s fashion by storm – although it is now believed to be reaching a peak and will therefore likely begin its decline within a few years – is that of bushy beards. For some men, growing a nest of facial hair might be a result of pure laziness to shave; for others, it might be a fashion statement. Antonio Camilleri of Antonio’s Barber Shop, who trained as an old school barber in the UK, has

Keeping a beard neatly groomed requires more than the quick wave of a blade. “There's a difference between a guy with a groomed beard and a guy who just hasn't bothered to shave,” says Antonio. “Beards require professional

grooming, and the amount of grooming required depends on the style of beard you have. To maintain a neat beard, you need to keep it trimmed and use a razor daily for a clean line at the top and on the neck.” Antonio recalls that his experience with barber shops while growing up was far from pleasant: “they were incredibly low-end and smelled of sadness. Nowadays, barbering has elevated its status – a good barber thinks of his work as an art and not a service. At Antonio's Barber Shop, we start by trimming the beard, and apply a hot towel to the face to open the pores. Next, we apply a pre-shave oil to prevent razor burns, apply the shaving cream and create a clean line at the top and on the neck. We finish off by applying after shave balm and a cold towel to close the pores, and beard oil for a healthy beard. If needed, we also trim the eyebrows, ears and nose hair for a full grooming service.” A neat beard does not require excessive maintenance, and minimum effort as well as a

Not all men have the same potential to grow a certain length of hair or beard, but all can transform their look with the right style that suits their face shape, and facial hair can both add definition to a soft face, or ruggedness to a childish one. Facial hair trimming can be taken a step further still – when unwanted hairs in the nasal and ear regions start to sprout, it is time to take notice of them. You’d think that that sort of grooming was only required ‘at a certain age’, but young people with excessive hair growth on the face should not ignore it simply because they are young. Simple tools such as a nasal and ear hair trimmer, and tweezers to banish a unibrow, are effective and easy to use, and their value in maintaining a groomed look will almost surely make the purchases worthwhile.

ver the summer months, the media has been rife with news of a spike in robberies from households in Malta, particularly within the areas of Sliema and St Julian’s. Indeed, according to reported police figures, theft cases from Sliema houses this year have almost equalled the number of break-ins for the whole of 2013 – there were 29 cases of reported burglaries from occupied households in Sliema between January and June, contrasting with 33 cases last year. Whether or not you reside in Sliema and its surroundings however, the increase in robberies has led to a greater awareness of the importance of securing our homes – after all, the possibility of a break in is present no matter where you live. Moreover, having your home burgled can not only affect you financially as a result of stolen items, but also psychologically, affecting your ability to feel safe. Burglars’ increased propensity to get in and out without being detected means that how you secure your home is also called into question, with a locked door no longer necessarily being enough to keep intruders out. As Ray Xuereb, Security Consultant and Security Operations Manager at G4S Malta explains, “burglars are becoming more apt and professional in the way they access people’s homes and property. They are capable of opening up locks without leaving any signs of forced entry.” However, this is not to say that shelling out lots of money

A foodie’s delight Sven Cepon, Executive Chef of Le Méridien St Julians Hotel & Spa prepares three mouth-watering dishes fit for a king, with easy-to-follow recipes for you to recreate and indulge in. Maltese rabbit stew Serves 4 Ingredients 1.5kg-2kg rabbit 400ml red wine 9 fresh bay leaves 6 garlic cloves, peeled 1 brown onion, finely chopped 3tbsp tomato paste

1.5 litres tomato purée 1 cup water 80ml extra virgin oil Peeled potatoes, cut into chunks Salt and pepper

Method Prepare the marinade first by putting 350ml red wine, 3 fresh bay leaves and 4 garlic cloves in a large bowl. Next, remove the rabbit kidneys, livers and front and back legs, cutting each in half and cut the saddle into 5 pieces. Place the rabbit pieces, kidneys and liver in the marinade and refrigerate overnight. Mix several times. Strain the rabbit from the marinade and put the liquid aside. Remove the garlic and bay leaves, and pre-heat the oven to 150˚C. Heat the olive oil in a casserole over medium heat, put in the rabbit meat gently and add some salt and pepper. Cook until golden, then set it aside. Fry the onions and two garlic cloves (finely chopped) in a saucepan until they are golden brown.

Sushi rice with teriyaki grilled salmon, rolled eggs, avocado and wasabi mayonnaise Serves 4 Ingredients 250g sushi rice 250ml water 100ml Japanese mirin wine 150ml rice vinegar 250ml teriyaki soya sauce 25g spring onion

10g young ginger 1 salmon fillet 1 whole egg 100g mayonnaise 10g wasabi powder 100g avocado

Method Put the sushi rice, 50ml Japanese mirin wine, rice vinegar and water in a rice cooker and cook for about 30 minutes. Meanwhile, pre-heat the grill on medium heat, then grill the fillet of salmon for about 7 minutes. For the salmon dressing, put the teriyaki sauce, 50ml Japanese mirin wine, spring onion and young ginger in a saucepan. Bring this mixture to a boil and simmer for 15 minutes, then strain it and place it in the refrigerator. In a separate bowl, prepare the wasabi mayonnaise by adding the mayonnaise to the wasabi powder, and mixing well. Once all the preparations and cooking are ready, place the sushi rice in a salad bowl, top with the grilled salmon and drizzle the teriyaki mixture over them. Add the wasabi mayonnaise on top and garnish with boiled eggs and avocado.

Add the tomato paste and 50ml red wine to the saucepan and cook for a minute to let the ingredients’ flavours fuse. Add the rabbit marinade you kept aside, the tomato purée and water, and mix well. Once all the liquids are well mixed, put into the casserole together with the rabbit meat. Add the remaining bay leaves and potatoes, cover with a lid and bake for around 2.5 hours.

Chocolate tart Serves 4 Ingredients For pastry: 250g plain flour, plus some extra for dusting Salt 125g cold butter 3 egg yolks 125g caster sugar

For sauce: 250ml single cream 1 vanilla pod, split lengthwise 100g white chocolate, chopped Raspberries and fresh mint sprigs, to serve

For filling: 400ml double cream Vanilla extract 100g caster sugar 400g dark chocolate 50g butter Method Place the flour and butter in a food processor. Add a pinch of salt and mix until the mixture resembles breadcrumbs. Then add the egg yolks and sugar, and pulse the mixture until it comes together to form a dough. You may also need to add a splash of ice cold water if the pastry is too dry. Place the mixture in a bowl, cover the bowl with cling film and chill in the refrigerator for about 30 minutes. Pre-heat the oven to 200ËšC. Then roll the dough out on a lightly floured surface until large enough to line a 25cm fluted tart tin. Place the dough in the tin, then place a piece of greaseproof paper and weigh it down with baking beans or rice. Bake the dough in the oven for 15 minutes. Remove the paper and beans, and return to the oven for another 5 minutes or until lightly browned. Meanwhile for the filling, bring the cream, a few drops of vanilla extract and sugar slowly to the boil in a saucepan. Break the chocolate and butter into pieces, and place

in a large bowl. Pour over the cream mixture and whisk slowly until the chocolate has melted and the mixture is smooth. Pour the chocolate mixture into the tart case and leave it to cool. Place it in the refrigerator to set for 2 hours. For the white chocolate sauce, place half of the cream and the vanilla pod in a saucepan, and heat until the mixture is warm but not too hot when touched with a finger. Take it off the heat and remove the vanilla pod. Add the white chocolate and stir until melted, then stir in the remaining cream. To serve, cut the tart into wedges and drizzle with white chocolate sauce. Serve with raspberries and a sprig of mint.
