Singing her heart out
Singer Amber Bondin will proudly represent Malta at the upcoming Eurovision Song Contest. In fact, as she tells Jo Caruana, patriotism is a huge part of her life – as is chocolate.
S
inger Amber Bondin may only be 23 years old but already she’s a Eurovision veteran and a performer to be reckoned with. She has competed in the Malta Eurovision Song Contest five times, and even performed at the international version as a backing singer for Kurt Calleja, who was Malta’s entrant in 2012. Now, with just weeks to go until she takes centre stage in Austria along with all of 2015’s other Eurovision entrants, she’s eager to take the next step in her music career. However it isn’t just her passion for the Eurovision that defines Amber. As a youngster, she was actually a very keen judo student and she obtained her green belt before having to quit at the age of 15 due to an injury. It was at that point that she shifted her focus to music and began performing in local talent shows. As a natural talent, this has led to all sorts of exciting experiences, including performing with Joseph Calleja and hanging out with Ronan Keating and the members of Blur. But it isn’t just music that makes her tick; Amber is currently a third-year student at the University of Malta, reading for her Bachelor of Education in early childhood.
“I hope to become a primary school teacher one day,” she says with a warm smile. “My biggest worry at the moment is that my first exam is just two days after the Eurovision final. There is lots to juggle at the moment! But it is all so exciting and I literally can’t wait to be on stage performing Warrior to the world,” she adds with a grin. What is your earliest memory of performing? My earliest, and fondest, memory of singing goes back to when I was still a student at St Joseph School. I used to take part in all sorts of plays, shows and concerts, and I loved it. Can you remember the day you knew music would be the career path for you? I never thought of music as a career until I was 17. Before then it was just something I loved doing. It was then that I took my first singing lesson and immediately fell in love with music as a whole. Is there anyone who inspired your career? Yes – my wonderful grandparents, who I spent most of my childhood with. While I was at their house we would constantly listen to jazz, blues, swing and rock ‘n’ roll music. I guess it was there that my passion for music was ignited and I love thinking back on those times and the artists we listened to. Today my musical idols would be
Etta James, Ray Charles and Beyoncé. What has been the highlight of your career so far? Without a doubt, winning the Malta Eurovision Song Contest takes first place on my list of highlights, although there have been other wonderful moments, including sharing the stage with tenor Joseph Calleja during his annual summer concert in 2012. I also loved performing as a backing vocalist for Kurt Calleja at the Eurovision Song Contest in Baku, Azerbaijan, in 2012. That was an experience I will cherish forever. How do you spend your down time? Although my free time is very limited, I do try to make time for myself whenever possible. That time is spent listening to music, reading or catching up with friends. What sort of music do you enjoy? I like all kinds, but my all time favourite genres are definitely jazz and blues. What's your favourite thing in your whole house? My poster collection. It’s quite extensive and includes posters with pictures of people who have inspired my life and career. If you could perform at any venue in the world, and with any other artist, who would you pick?
It would be hard to beat performing in Madison Square Garden with Beyoncé! Madison Square Garden is an iconic venue in New York where many great artists have performed, and Beyoncé is one of them. Which cultural event do you love most? I find Carnival wonderful, as well as our village feasts. They are such a brilliant reflection of our traditions and show the true character of Maltese village life. I am very proud to be Maltese, so those sorts of events are very important to me. What are you most looking forward to about your time in Austria? Aside from the obvious draw of
the contest, Austria has always been a place I have wanted to visit, especially as it is a country known for its culture, music and art. I am looking forward to visiting Salzburg, in particular, so as to see the site where my all time favourite movie – The Sound of Music – was filmed. Aside from that, I am a huge chocaholic, so I will be very eager to try a hot chocolate in one of Vienna’s finest coffee houses. What would be your last meal? Definitely a double chocolate cake. What would you never buy? Anything made from real fur or real leather. BB

The shopping hours debate It is an issue that has been hotly debated for some time now, but which has continued to garner attention following Government’s reference to revising shopping hours within the Budget 2015. Sarah Micallef looks into the implications of the liberalisation of shops’ opening hours in Malta.
W
ith more of us than ever opting to shop online rather than visiting shops in person for the sake of convenience, can extending shops’ opening hours make a difference to how we shop? Will it be the boost the local retail industry so clearly needs? And would being able to buy what we need (and want) after work on a weekday evening, or on a Sunday, make all the difference?
From a consumer perspective, it will certainly make things more convenient – in a society in which life is forever growing more fast-paced, the option of shopping whenever we have the time for it is undoubtedly attractive. In a report submitted to the Ministry for the Economy, Investment and Small Business regarding shop opening hours last October, the Consumers’ Association puts itself forward as being in favour of the liberalisation of opening hours, maintaining that when a shop is
open it is delivering a service, and restricting shop opening hours for consumers means restricting services: “shop owners should themselves decide when to open, no matter what day and what time it is.” Indeed, the Association states, “if anything, legislation should restrict the time that shops may remain closed.” Looking at it from a shoppers’ perspective, the Consumers’ Association outlines the main reason for the argument in favour of liberalising shops’ opening hours as being today’s
lifestyle. “Work patterns have changed and this changed both the shopping hours and patterns of consumers’ shopping behaviour. As most people are away at work from 9am to 5pm, most shopping nowadays takes place at previously considered odd hours. However, there are still pockets of people, especially our elderly, who still shop at the previously established hours. Thus flexibility in this area will ensure that the business would be able to adjust to the shopping hours of its clientele.”
This point is also relevant for shop owners: “matching shop opening hours with consumer preferred shopping hours will maximise the return.” Looking at it from the business owners’ perspective, how will the potential of extending shopping hours affect them? The General Retailers and Traders Union (GRTU) conducted a survey on the subject in 2014, which revealed that “62 per cent of members surveyed are in favour of more flexibility when it comes to opening hours.”

COVER STORY Expanding on this, the Union maintains, “one has to keep in mind the ever-changing needs that consumers are facing, mainly due to certain realities such as couples who both hold a full-time job, others working in the hospitality industry, shift workers, etc. These require a flexible approach and a fresh way of thinking for retailers to be better able to meet the needs of their customers.”

imposing particular beliefs on the population at large, the Consumers’ Association comments on the argument that retail workers’ conditions will deteriorate with workers having to work on Sundays: “conditions of work are not related to the entity’s operating hours but whether workers are organised or not. In those instances where workers are organised, the conditions are much better.” Retailers opposing extended opening hours have also expressed concerns related to extra costs by having to pay higher labour, energy and other costs which would not always result in an increase in sales levels. In relation to this argument, the GRTU maintains that “while any change that will be announced does give the needed flexibility, it will at the same time not impose extended opening hours on shops that choose not to open for longer hours because they do not see the viability or for other reasons.” BB

HOMES Top bedroom design trends Now that you’ve got the space planned out, how are you going to decorate it? While your bedroom should please your tastes first and foremost, the latest trends could provide some great inspiration when decorating, and point you in the right direction. Day to day cooking can be made a lot more straightforward if the right tools are at your disposal. One of the most basic and important of these tools is a good chef’s knife, or set of knives, and a number of chopping boards, which can slice, dice and chop anything from vegetables, fruit and herbs to boneless meats.

Your kitchen will be incomplete without a trusty set of food scales. Old-fashioned tipping scales are cool to own and look at, but modern digital scales are far more practical, small, lightweight and accurate. Equally important is an instantread thermometer, which you can prick into food to check that it’s cooked to the correct temperature. A thermometer is especially used for meats, but could also be tried and tested on delicate desserts that need precision cooking. Measuring jugs and spoons are as important for baking as they are for cooking. In some instances, baking measures may be used for savoury preparation, but you might
need to add a few others to your shopping cart, such as liquid measuring jugs in a range of sizes that are available in clear glass or plastic, enabling you to see the level of liquid being poured. A potato peeler and cheese grater must also be on your list of basic items – both help save on time and can be used for a range of things, namely to peel vegetables and shave hard cheeses, and to grate a range of cheeses and vegetables, as well as chocolate, respectively. Whisks in assorted sizes will prove incredibly useful for beating eggs, dissolving solids in liquids and for blending salad dressings. Large colanders or strainers, in either metal or plastic, work well for draining pasta and rinsing vegetables, while the mesh strainers ensure nothing gets through the holes except for liquid. Lastly, you should invest in a good pepper mill, which you’re bound to use for seasoning with many meals.
The essential accessories
The accessories and details with which you decorate your dining table are as important as the food you place on it.
Quality table linens, which include a coordinated tablecloth, placemats and napkins help create a desired ambience. If you own good linens already, think of how additional sets could complement them, and if you’re starting a collection, start with the basics in colours that match your kitchen set-up or in classic neutral colours that you can use and re-use for years. Owning a cool and quirky apron will add a little flair to your cooking process, and also a dose of fun. It will also help prevent unpleasant spatters of food on your clothes, especially if you’re stirring pots while entertaining. Basic dish towels are likely to be replaced every now and then, so stock up on a variety of inexpensive sets, as well as oven mitts and pot holders that can withstand high heat. If there’s a little bit of budget left to spare, spend it on a set of napkin rings or coasters to add on to your decked out dining table – although the basics are fundamentally important, a touch of detail never goes unnoticed. Salmon gravlax with sparkling rosé wine INGREDIENTS 1kg centre-cut piece of salmon, skin on, pin-bones removed 400g coarse Himalayan rock salt 100g sugar 150g granulated sugar 150g fresh mint 1tbsp coriander seeds 1tbsp pink peppercorns 2 lemons, zest only 100ml sparkling rosé wine 150g fresh dill, chopped
Method Run your fingers across the top of the salmon fillets, removing any bones you find. In a large bowl, mix salt, sugar and granulated sugar until well combined. Grind the coriander seeds and peppercorns to powder. Sprinkle the powder over the salt mixture, then stir in the lemon zest, mint, rosé wine and chopped fresh dill until well combined. Rub this seasoning all over the salmon. Wrap the fillets tightly in foil and then pierce a few holes in each using a cocktail stick (this allows excess liquid to drain from the fish). Place the fish on a baking tray and place another baking tray on top. Weigh the top tray with heavy material and refrigerate for two to three days, turning every six to eight hours, when possible. To serve, unwrap the salmon and scrape off any excess salt mixture. Using a sharp knife, slice the fillets diagonally in a thin manner and serve with fresh garnish.

Ingredients 1 duck breast Rock salt Black peppercorns 2 cloves garlic Rosemary Sage Thyme 1tbsp honey 2tbsp balsamic vinegar
to cook the rest of the breast without the necessity of adding fat. Once the skin is golden brown, flip the breast over. Add two unpeeled garlic cloves, as well as the sage, thyme and rosemary. Transfer the pan to a 175ËšC pre-heated oven and roast for six minutes. Once the breast is cooked to medium, wrap it in aluminium foil to keep it warm, and you can prepare the sauce while it rests.
Ingredients 100g fine chocolate wafer crumbs 6tbsp melted butter 75g fresh raspberries 1tbsp sugar ½tbsp corn flour 225g quality dark chocolate (70%) 70ml heavy cream 1tbsp vanilla essence 6 muffin cups
Method With the tip of a sharp knife, make a diagonal incision on the skin of the duck breast, then season both sides with rock salt and fresh pepper. Place an ovenproof pan on high heat and once hot, sear the duck breast, skin-side down. This will melt the fat in the skin and helps
To make a balsamic jus, place another pan on the heat and add the honey, balsamic vinegar and fresh herbs. Reduce for one minute, then remove the pan from the heat and pass the sauce through a strainer. Cut the duck into slices and serve with balsamic jus.
Method Put the sugar and corn flour in a pan and mix with a little bit of water. Add the raspberries and cook for a further two minutes or until the sauce is thick, then set aside to cool. In a separate bowl, mix the chocolate wafer crumbs and butter together.
Spray the cups with vegetable oil spray and line them with strips of baking paper. Press the crumbs over the bottom and sides of the muffin cups. In a pan, heat the cream over low heat and after 10 minutes, add the chocolate and keep stirring until smooth. Finish off the mixture with the vanilla essence. Pour the chocolate mixture into the muffin cup, filling only half of it, top it up with the raspberry mixture, and continue filling the cup with the rest of the chocolate mix. Refrigerate overnight or until set.

ndrew Vassallo General Trading opened its doors in 1986 through a small workshop in a residential garage in Qormi, specialising in the production of steel works such as doors, security grills and trolleys. The company has since gone from strength to strength and today boasts an impressive portfolio of projects. Among its long list of prestigious projects, the company has provided the steel works at St James Cavalier, including the arches in all the vaults, a large
tube handrail in the main area including the bridge, decorative frames or stellari in the central area, as well as a large number of walkways and frames. The company was also commissioned to install aluminium apertures at St Angelo Mansions in Birgu, as well as a walkway and fibre structure around the surrounding area of Ggantija temples, together with real wood decking. Moreover, the company was entrusted with the supply and installation of all skylights, wood decking and other construction products for the whole project of Palm City in Libya.

Identifying intolerance: food diaries
Intolerance, allergy and sensitivity are terms frequently used interchangeably to refer to an adverse reaction to food when, in fact, their meanings differ widely from each other. Martina Said delves into the most common food intolerances and how to live with them.
I
dentifying food intolerance isn’t easy, and shouldn’t be considered as such – when it seems to you that everything you eat causes some kind of backlash, it’s normal to feel frustrated and overall upset at the prospect of being unable to eat a big chunk of foods that you love.
It is important to distinguish between intolerance and allergy – while intolerance elicits a response from the body’s metabolism, an allergy involves the body’s immune system. Lactose intolerance results when individuals lack the digestive enzyme lactase that is responsible for breaking down milk sugar.
Understanding what food your body is intolerant towards, however, and learning how best to avoid them can make the experience a whole lot more bearable. And, more than ever before, there are supplement foods which, although admittedly not the real deal, make for a very viable substitute. Lactose intolerance and gluten intolerance, also known as coeliac disease, are the most commonly diagnosed intolerances, which albeit both linked to the body rejecting specific foods or derivatives, are caused by very different body responses that are often confused.
Lactose, a sugar found in milk, is normally broken down into simpler sugars by the enzyme lactase present in the small intestine. When enzyme activity is low, the lactose remains undigested and is transported to the large intestine, where it is fermented by bacteria in the gut, giving rise to abdominal pain, bloating and flatulence among other symptoms. The quantity of milk and dairy products that lead to symptoms of intolerance varies widely between individuals – some can drink a glass of milk without experiencing discomfort, others can barely tolerate a spoonful of yoghurt or cream.
No dairy
Lactose intolerance is a relatively common occurrence, and is especially more common among specific ethnic groups.
Knowing how much milk you can tolerate would help avoid unpleasant symptoms. However, it is generally recommended to avoid milk,
and foods made with milkderived ingredients (dairy products) altogether, which includes food items made with cow’s milk, as well as sheep, goat and buffalo milk. Thanks to improved food labelling due to changes in European Food Labelling law, it is now easier to identify which packaged and manufactured foods contain milk-derived ingredients, and which do not. Among a list of milk-derived ingredients to look out for and avoid when shopping are milk powder, milk drinks, cheese, butter, margarine, yoghurt, cream, whey and milk solids. Nowadays, a number of such products are made without the use of lactose, so potential alternatives to some of your favourite dairy products do exist – simply be sure to check the labels of most foods that you buy to play it safe, as some food items that you wouldn’t think contain milk would have it listed in fine print in the list of ingredients.
Keep clear of grains
Coeliac disease and wheat intolerance differ from each other – coeliac is a lifelong
intolerance to part of the gluten proteins that are a main component of the wheat, rye and barely grain, while those with wheat intolerance may still experience adverse symptoms from gluten-free products, as the remaining components of the wheat also affect them. A sufferer’s ability to eat rye, barley and oats differs from one individual to another, and as with other kinds of intolerance, wheat may be introduced back into the diet after a period of elimination. Coeliac disease has also become rather common, and is an intestinal disorder that occurs when the body can no longer tolerate gluten. The condition is permanent and often underestimated – if a sufferer consumes a gluten-containing food, the lining of the small intestine becomes damaged and less able to absorb other essential nutrients. Symptoms include weight loss, weakness, irritability and abdominal cramps, and a general withdrawal of gluten based foods alleviates symptoms and improves the state of the intestine.
As with lactose intolerance, it is important to carefully read the list of ingredients on most packaged items from supermarkets, and you’d be surprised to find out just how many items we consume on a day-to-day basis contain gluten, such as chocolate, ice-cream, burgers, sausages, processed dips or pastes and whisky, besides the more obvious pastry, biscuit and pasta-based items. Since a body reaction to lactose and gluten intolerance tends to be more delayed than an allergy, it is harder to identify exactly what is causing the problem. One of the most common and effective tests is the elimination diet, whereby a single or combination of suspect foods are removed from one’s diet for around two weeks to monitor whether or not symptoms improve or disappear, after which the suspect foods are re-introduced in small and gradual amounts, until a normal consumption pattern is achieved. If symptoms re-occur, then it is easier to identify which foods should be eliminated. BB

To groom or not to groom? Sarah Micallef looks into the various benefits of grooming your dog, and finds out why looking after your furry friend’s coat isn’t purely cosmetic.

et grooming services have been experiencing a surge in popularity lately, but are they just the latest fad, following wacky outfits and dog handbags, when it comes to pampering your pet? The short answer is no. Here’s why.
Health benefits
Far from being purely cosmetic, grooming is good for your pet’s health. Apart from aerating your dog’s coat and promoting healthy hair growth, brushing aids good blood circulation. Grooming also works toward keeping grease levels down, which could lead to blocked pores and sebaceous cysts if left to build up. You’ve probably seen what happens to dogs with longer coats that are left ungroomed – their fur becomes matted, sometimes leading to heavy wads or knots similar to dreadlocks. Aside from simply looking unkempt however, these can get very uncomfortable for your pet and lead to skin problems – weighing
it down and causing soreness. Sections of matted fur between your dog’s paw pads can also cause discomfort as they become hard with dirt and grease. Grooming your dog will also provide the perfect opportunity to give your pet a once-over to check for any health concerns. As you’re grooming your pet, check for any unusual lumps or bumps, as well as cuts, grazes, or any noticeable skin issues. While you’re at it, be on the lookout for any fleas or ticks, blocked anal glands, long claws and dirty ears, while paying attention to the condition of the eyes too.
Emotional benefits
Grooming at home can serve as a great stress reliever for both you and your pet. If you introduce regular grooming sessions from when your dog is just a pup, it will help develop a close bond and build trust between you. Choose a time when your dog is relaxed, and help the process along with treats and praise. Getting your pet used to the grooming process from an early age will also be
beneficial should they need to visit a professional groomer later on. If you take care of your dog’s grooming yourself at home, put together a basic grooming kit comprising a detangling spray, fine comb or wide-toothed, coarse metal comb (depending on your dog’s coat), ear drops, ear and eye wipes, small scissors, soft slicker brush, dog-friendly toothbrush and toothpaste, and a grooming rug or non-slip rubber mat for your furry friend.
Do you need a professional?
Short-haired dogs like Staffordshire Bull Terriers, Jack Russells or Whippets can generally be groomed at home relatively easily, but if your dog is a long-haired breed or leads a very active lifestyle, chances are you’re going to need to call in the professionals to keep your pet groomed and healthy. A professional groomer will have the knowhow to treat your dog’s coat in the best possible way, using grooming
products, shampoos and conditioners that will enhance your pet’s coat. The groomer moreover will be able to notice any area of concern you might have missed, such as fleas or other parasites, as well as any lumps, rashes or skin lesions that are concealed beneath its coat. Dogs also need their nails trimmed about once a month, and needless to say, most don’t take kindly to the process. A dog groomer can make this hassle-free, and will know the best way to go about it. And when it’s all over? Many professional groomers finish off with a healthy massage that is pleasurable for your dog while stimulating the circulatory system. Lastly, a good professional groomer will also be able to give you tips and advice in relation to dietary requirements for your pet, based on the condition of its skin. Your canine companion’s skin and coat is reflective of diet, so if it is too oily or too dry, the groomer can recommend any suitable dietary adjustments to improve your dog’s well-being. BB
