Let’s Get Giving! As the Chief Executive of charity Inspire, and a very active sportsman, Nathan Farrugia is a wellknown and popular face. Here he chats to Jo Caruana about cluttered shoe racks, champagne celebrations and Christmas gifts that keep on giving.

T

here’s never a dull moment for Inspire Chief Executive Nathan Farrugia, especially as he’s also a physiotherapist, endurance athlete, husband to Deirdre and dad to two little girls, Robyn and Keira. “My aim in life is to make a difference to others around me in any way possible,” he tells me, “whether it’s through my work at Inspire, raising funds for other causes I believe in, inspiring people to challenge their limits, mentoring young leaders and business executives, or being a supportive husband and loving father.” Aside from all of that, and after a successful career as a national team basketball player, he has also found his talent for endurance and has set a number of ‘firsts’ for Malta, as well as a World Endurance Record for successfully completing 27 marathons in 27 days in 27 countries. Yes, definitely inspirational. How would you describe your relationship with money? Well let’s just say that our relationship is rather cold and distant. I moved to the NGO sector from a career in the corporate world, so finance was never a key driver to me when choosing what I wanted to do. Obviously a level of income is required for me to take care of my family, but it is secondary to many other more valuable things in my life.

What percentage of your life do you spend shopping? Hardly any, although I do love browsing online for recent gadgets or bike parts. In fact I do most of my shopping online or directly through a few friends who own shops that I buy regular stuff from. Do you think that because something is more expensive it is automatically better? Not necessarily but I would most likely agree. The brand equity added to the price of a product or service should reflect investment in research and development, quality assurance, after sales support and environmental consideration.

What’s a hobby you spend money on? Primarily sports and travel. I’d rather spend my money on a cycling training trip to Sicily, or an Ironman race, or on gear that supports my next challenge. Other than that I tend to spend money on books and family travel. How would you describe your style? I think that society is too judgmental on first appearance. We tend to make associations with brands when in reality this is rather superficial and immaterial. While I’m not too worried about what people think of my dress sense, I can understand

that my role at Inspire requires me to consider what I wear in the message it may portray. It’s also a sign of respect to dress well when you are in the presence of others who have also made an effort. As much as I dislike wearing a suit, for example, I will wear one in the heat of summer if I’m called for a meeting by His Excellency. Other than that, I’d rather dress down and be comfortable. If that, by coincidence or not, reflects my character, it is not a purposeful choice.

What’s the one fashion item you couldn’t live without? Probably my smartphone, but because it is a business tool, not a fashion statement. When you plan to shop – where do you tend to go? I tend to shop online but will happily join Deirdre on a trip to a mall, both here or abroad. What’s your biggest monthly extravagance? School fees.

interview. Do you collect anything? Not purposely. In fact you could just call it ‘stuff’. There are too many running shoes cluttering our shoe rack. Do you hoard things or regularly throw stuff out? I tend to be rather frugal and want to make good use of something before throwing it away. So I wouldn’t call it hoarding. Having said that, I do think I need to give some more stuff to the Inspire charity shop. What’s the best bargain you’ve ever made? I usually buy most of my stuff on sale, as rarely is anything pressing enough that ‘I need it now’. I recently built a bike myself out of parts I bought online from shops all around the world, and made sure that every piece was at least 50 per cent off. So you could sum up that the bike was a beautiful bargain. What is your favourite thing in your whole house? Lots of things: my bikes, my whiskey collection, the fireplace in winter, my books, the dishwasher, but the most important are our photo books and memories of our travels. If you won the million euro lottery what would you buy /do with the money? Pay off our loans, help out some friends and family with theirs, go on an adventure with Dee and the kids, and give some to charity. What three items would you take to your desert island? Deirdre, Robyn and Keira... oh sorry, did you say ‘items’? An internet connection, my laptop and my swimming goggles. What are you most looking forward to about the coming Christmas? Christmas is really busy for us charities, so taking some time off will be a treat. It’s also a rare opportunity to have friends and family all together. What would you recommend as a great gift to give this Christmas? I think that a gift has more value if it has meaning. I’d recommend finding a gift that is an ‘experience’ rather than a ‘thing’, unless that item in itself is a show of love or friendship. Children of a very busy parent will probably prefer a ‘day out with dad’ over a new toy any day. I’d also suggest a charitythemed gift, such as a donation to Inspire. Given the choice, would you drink champagne or beer? Tough call. I like both, so I’d probably go on the setting

and affordability. Bubbly at a celebration and a beer with friends after a bike ride. What would be your last meal? Something wholesome, preferably in good company. What’s the most money you’ve spent in one go? The down payment on our home. Other than Inspire, which charity/ies worldwide do you look up to and support?

NSPCC (UK), ASPIRE (UK), WWF and Facing Africa. What international sporting events do you hope will be in your future, and why? There are so many to choose from! Anything that, when I describe it to people, leaves them with a quizzical look and question: ‘You’re going to do… WHAT?!’ What would you never buy? Love and respect.

The quest for the ideal gift When it comes to choosing the perfect gift for a loved one, despite going in with the best intentions, many of us tend to get stuck. Sarah Micallef looks into what to keep in mind when present shopping, and how you can find that elusive ‘perfect present’, no matter who you’re shopping for.

he key to choosing the perfect gift, no matter what it is, may seem obvious but remains correct: knowing the recipient. Whereas the old cliché ‘it’s the thought that counts’ may be true, it’s also true on another level – actually doing a little homework beforehand and thinking about what the person you are buying the gift for needs, or likes. Simply paying a little attention to their tastes, needs and lifestyle, will help set you on the right track. If you’re not one to normally take notice of such things, it’s a good idea to make a little effort in the run up to Christmas time to pay particular attention to anything the receiver mentions that they need, or want. Is their favourite cologne running out? Are they complaining that they don’t have a proper winter coat? Did they comment about how much they like ‘those new statement necklaces’? If any of this sounds familiar, you’ve been given a golden ticket. If nothing is forthcom-

ing, noting things like personal style, their home décor, hobbies and interests will also likely provide you with a few gift ideas to suit the recipient. With this in mind, it’s time to zero in on the perfect gift. Here are a few tips to guide you along the process:

Set your budget Knowing exactly how much you are prepared to spend will help you narrow down your choice considerably, and avoid wasting precious time browsing and looking at items you are not prepared to shell out for. If you’re stuck on budget, try to think back to gifts you may have given each other in the past – this should set a benchmark as to what price range you should aim for.

Do they care about style or are they more laid back? Shopping with the recipient’s style in mind will make your choice easier, particularly if the person you’re shopping for has a favourite colour or a defined sense of style.

Bear their circumstances in mind If the person you’re buying a gift for has recently moved into a new house, they might appreciate home décor items; while if they’re having a tough time at work, a spa visit or some pampering products would make for a thoughtful and welcome gift. Considering the recipient’s situation and current circumstances can also be helpful in choosing an ideal present, and will show them you care by giving them something considerate.

Put a personal spin on it A custom or personalised item always brings that added something special. You could also add a personal touch to a gift by putting a photo they love in a pretty frame for example, or putting together a photo album with snaps of a recent holiday you both went on. The art of entertaining Inviting guests over for a seasonal get-together is a much anticipated part of the run-up to Christmas. With so many catering and decorating options to choose from, however, entertaining can be discouraging. Martina Said discusses a few handy tips for a smooth and seamless party at home.

T

here are plenty of guides and tips on how to entertain guests, but no real rules – which is great, in a way, because hosts have free reign to entertain guests as they wish. The prospect of entertaining, however, can be daunting, considering the length of an average to-do list ahead of a get-together. And after being invited over to a friend’s picture-perfect house for a deliciously lavish meal, you cannot help but feel that the pressure is really on. Entertaining, however, is all about having a good time, so it is important to not lose sight of the goal. With a little bit of thought and a lot less stress,

you can host a perfectly enjoyable get-together for you and your guests. Decorating your home for the festive season is as important as food preparation when it comes to entertaining at this time of year, as it helps put people into a cheerful yet tranquil mood. Lighting is, in fact, a key factor in setting the correct mood. Dim lights and candlelight are great for getting started, especially if the evening involves finger foods and drinks as against a sit-down meal. Avoiding dimming the lights too much, however, as you might witness guests snoozing on your sofa – especially if mulled wine is involved.

Jonathan Bonnici, of One Two One Interiors, sheds some light on how to prepare a home for welcoming guests. “Many homes really come into their own with a mixture of cherished inherited decorations, newly bought ones and some treasured antique finds. While I always like to adopt the lessis-more approach, at Christmas time, sparkle and decadence help create the much-awaited Christmas spirit, so that little something out of the ordinary is called for,” he explains. “If one has a neutral colour scheme then this is a perfect foil for a sparkling collection of festive decorations. On the other hand, if your setting is one that already includes myriad colours, then pick a favourite and use it for your decorations throughout.” Jonathan says preparing a dining table is a Christmas highlight, of equal importance to decorating a Christmas tree, so it should be given its due time. “Create a beautiful space by choosing a table setting that enhances and does not compete with your décor,” he says. For homes with a more contemporary feel, Jonathan recommends a Scandinavian rustic theme, using earthy ornaments that bring the outdoors in as against lots of sparkle. “In more traditional settings, one can create a twist by substituting the traditional red and green colour with a mixture of silver and gold decorations. Photos supplied by One Two One Interiors on your tree and the candles on your table.” Jonathan adds that decorating your home should not cost a bomb – avoid buying new ornaments every year as they don’t go out of fashion, and accentuate what you’ve already got by adding touches of detail. “If you already have beautiful centrepieces on your dining and coffee tables, dress them up with candles, pine cones and inspiring baubles. Using scented items such as cinnamon scented candles further help enhance the Christmas spirit.” Great attention to detail given to the décor merits an equally delightful menu. There are various options available to ensure a culinary feast that satisfies the stomachs of your guests – from recruiting the help of a caterer or hiring a chef for an evening, to relying on recipe books for good old home cooking. In any case, bear in mind the various tastes of your guests in order to avoid an awkward moment at the dinner table if, for instance, someone detests fish, is vegetarian or allergic to peanuts. So long as recipes are not too specific, this shouldn’t be a problem. Tiziano Cassar, Marketing Director at Primavera Caterers, says the festive season is a busy time for caterers, and people especially tend to seek out home parties with close family and friends. “We’ve catered for private parties with many guests and others with as little as four people. We specialise in weddings and staff parties but cater for New Year’s Eve dinners too, with finger foods.” He adds that the more popular foods include warm bites such as hot pastries and canapés, and clients most often seek out artisan French pastries for dessert, created by in-house executive pastry chef Joseph Borg Bonaci. “People still enjoy ordering traditional home-made food such as cheese cakes and our well-known ice-cream, but

we also get a lot of requests for novelty foods such as Maltese sausage millefoglie and our arancini supplì, among others.” How is food calculated per person? “We calculate at least two items a head, and the minimum order for an event is 20 of every item, but we always calculate 5 extra items over and above the 20 just in case. Then we calculate the amount of items according to how many people are attending.”

The options for catering and decorating are pretty endless. If you are unsure as to whether to hire a caterer or cook yourself, ahead of organising an event, decide which option would best suit your circumstances, and be aware of your levels of endurance in order to avoid burnout, ensuring a smooth and enjoyable get-together with plenty of festive cheer to spare.

It’s the Season to Decorate no other time of year is as exciting as christmas time to decorate your home. Martina Said discovers easy-to-make home Christmas decorations for crafts lovers as well as ones to look out for on the shelves this month. 1. White Wonderland

Although we can only but dream of a white Christmas here, there is still plenty we can do to offer the illusion of winter whiteness. Add dainty white tablecloths, accessories, decorations and tableware with touches of white, creating a themed look that has a winter feel without being overly bright and linked with the standard red and green Christmas colours. It might simply be an illusion, but it’s pretty and effective.

2. Napkin art

This is a great idea that will surely surprise your guests – custom order or buy a readymade iron-on sticker with a graphic print, logo or place name of your choice and simply iron it on to a coloured or white serviette. You could make each one different to the other or keep them standard, either way making a serviette a memorable one that will most likely have guests wishing they could take it home with them.

3. Plants and baubles

Anything that’s DIY requires a bit of work and a lot of imagination – grab a defunct transparent bauble and transform it into a miniscule pot for a miniscule plant. Simply fill the bauble up with soil and put a herb, plant or flower inside it. Be sure to keep the bauble propped up on a little tray in order to avoid it rolling over.

4. Overhead extravagance There’s no need to restrict beautiful baubles to a Christmas tree when you can add a touch of elegance to a chandelier just by hanging some decorations from it. Hang some demure but shimmery baubles from overhead lighting in muted winter tones, keeping the colour scheme fresh and understated with such colours as silver, pale blue and white. Tie them all up with a pretty satin ribbon and voilà, you’ve got a creative and innovative home ornament that requires little effort.

5. Sweet tidings

Some sweets are there to be devoured, others to be admired. Add a simple decoration on a mantelpiece that is inexpensive and quite literally eye-candy. Fill a few glass vases, trays or goblets with white and red striped candy canes, marshmallows, peppermint balls and an assortment of colourful sweets to suit your tastes. It is a fussfree arrangement but a pretty one that is sure to attract sets of eyes to it for its aesthetic and tasty appeal.

Stockings are a staple Christmas decoration and add warmth to a house whether they’re filled with gifts or empty. Creating your own stocking is easy and you can make it that much easier by buying a plain sock and decorating it your own way. Print and cut a few Christmas shapes to use as a template for cutting out the same shapes in felt fabric. All you have to do is stick them on with glue and have fun experimenting with gold trims, jewels and beads. This is another DIY activity that children can have fun with, ultimately creating something they will be using too at Christmas time.

7. Christmas tree creativity There are plenty of ways to spruce up a Christmas tree if you’re getting tired of your old one, and that includes anything from buying a whole new selection of tree decorations to adding artificial snow or even just buying a brand new tree altogether. Although it might seem non-traditional, don’t be weary of choosing a tree with a hint of colour such as gold or red, and if you think it looks too fancy, then perhaps consider taking it easy on the decorations to let your brand new Christmas tree get all the attention.

If you’ve got a frail old Christmas wreath that you are eager to throw out, hold onto it for a little longer and transform it into a non-traditional but fun and colourful wreath, or buy a Styrofoam one from a crafts shop. You can either make your own felt balls in different bright colours or buy them ready (there are plenty of tutorials online showing how to make them) and simply stick them all over the wreath with hot glue. You could also engage your children to help you stick the felt balls on for a bit of family fun.

9. Table centrepiece

Christmas lunch tables are generally already packed with cutlery and tableware so avoid

placing a large and obtrusive ornament at the centre which takes up valuable space and blocks a person’s vision, such as a large candlestick holder or potted plant. An ideal table decoration is a centrepiece which comes in a variety of sizes and is both effective and a space saver. You can choose from differently decorated centrepieces, ornate with poinsettia or berries and adorned with ribbon, acorns and frosted branches.

Decorating your table for Christmas lunch or dinner is equally as exciting as doing up the Christmas tree. There’s a lot of thought and preparation involved and, most times, you want to ensure it looks simply perfect. You can only add to the fun by coming up with a DIY table ornament or, better

still place names. For those who bake and love making biscuits, then this task should be a breeze. Grab a selection of different cookie cutters in Christmas-inspiring shapes, such as a snowman, house, stocking and star, and tie a ribbon through it. Write the names of guests on small name tags and tie the tag to the string. The cutter could also double up as a napkin ring.

Festive Food Delight Christmas cuisine need not always revolve around traditional recipes. The chefs of the Pegasus at Hotel Phoenicia put together some easy-to-follow but delightful recipes that would embellish any table this festive season.

Risotto with Cream of Scampi INGREDIENTS Partly cooked risotto 2 scampi ½ ladle bisque ½ ladle tomato sauce ½ ladle fish stock ½ ladle vegetable stock 1 onion 1 shot cognac 1 tsp mustard 2 tbsp fresh cream Salt Pepper Brown sugar Parsley Olive oil

Method 1. Shred the onion and fry it in some olive oil. Next, remove the head and shell of the scampi, leaving the tail. Split one of the scampi in two along the tail. Place the scampi in the serving bowl. Remove the onion from the pan and discard it. Fry the heads of the scampi in the same pan for a few minutes. Add the cognac and flambé. 2. Add the bisque, tomato sauce, stock, cream and mustard to the pan. Mix in

the risotto and cook for a few minutes. Add the other scampi and cook for 2 minutes. Season with salt, pepper and a pinch of brown sugar. Remove the scampi from the rice and rinse with boiling water. 3. Leave the risotto to rest for 1 minute. Pour into the serving bowl over the raw scampi. Place the cooked scampi over the rice and garnish with parsley. Drizzle some olive oil over the dish.

Chocolate Fudge Brownie Cake Ingredients Cake 180g butter 180g plain flour 190g caster sugar 50g ground almonds 60g cocoa powder 5 tbsp golden syrup 4 eggs 4 tbsp baking powder Coating 250g butter 250g dark chocolate 60g dark brown sugar 4 tbsp milk ½ tsp vanilla essence Method 1. Mix the eggs and sugar. Add the butter and mix until it is light and fluffy. Mix in the cocoa powder, ground almonds and golden syrup. Gradually add the baking powder and flour, and mix until the batter combines. 2. Place the batter in 2 trays (20cm tin trays). Cook at 180ËšC for 30-35 minutes. Once cooked, leave the cakes to cool on a wire rack. 3. In the meantime, melt the butter in a thick bottomed pan. Add the chocolate and stir until it melts. Mix in the brown sugar, vanilla essence and milk. Pour into a bowl and leave to cool in the fridge. 4. Take one of the cakes as the base. Spread a layer of the mixture over this cake. Cover with the other cake. Spread the remaining mixture to cover the cake completely. Leave to set in the fridge.

Pair dessert with wine Who doesn’t like the idea of washing down a divine dessert with a great glass of wine? Nobody, most likely, even though pairing chocolate with wine is never easy. The flavours of each are not always compatible, and most often chocolate is to blame because of its very intense flavours, ranging from sweet to bitter and acidic to fruity. A light wine will have no taste after a chocolate dessert, which is why it is best that the wine chosen to complement a rich dessert is one that is similarly intense. This includes a dry wine or a fruity and zesty one as opposed to a sweet dessert wine. An old-time favourite which is always a good option for decadent desserts is a port wine, because it is sweet and brimming with flavour, but also firm and lasting.

THE OVER-THE-KNEE BOOT The ideal footwear choice to beat the chill this winter is undoubtedly the over-the-knee boot. Whether it’s a peep-toe or open-back, this boot is ultramodern, and should be worn with equally chic separates, edgy leather and sizeable jewels.

FOR THE MEN Whereas men’s shoes are generally not as varied as women’s, there’s certainly a lot to choose from this season. High men’s boots such as those showcased by Maison Martin Margiela, Rick Owens, John Varvatos, Salvatore Ferragamo and 3.1 Phillip Lim are certainly having a moment, and are perfect for those rainy days. Lace-up styles also remain popular, such as oxfords and derbies, as are slip on loafers and slippers.

For the sporty man, a wide variety of sneakers also share the spotlight, as was the case at Lanvin, Frankie Morello, Raf Simons and Missoni. In terms of colour, this season sees mustard and beige colours, chocolate, red, burgundy and emerald green as well as cobalt blue, dark ink and metallic varieties along with the classic black.

All in a Basket gone are the days when we had no option but to buy ordinary and boring hampers filled with unpalatable items. Martina Said traces the maturity of the Christmas hamper.

T

he Christmas hamper is widely regarded as a gift most appropriate for friends and clients in business. Those on the receiving end generally expect to be given a basket filled with wines, maybe spirits, a couple of seasonal sweets – almost certainly a panettone and a box of chocolates – and perhaps a savoury pre-packed item or two. Although we often know what to expect to find in them, hampers can be as versatile as it gets, especially ones which offer the option of personalisation.

The gift hamper goes back a while – several centuries in fact, inspired by the spirit of giving, although not just during Christmas time. Durable wicker baskets of food were prepared and used as traveller’s baskets for cross country journeys during the 1700s in England, long before picnics became a fashionable activity. It wasn’t until the Victorian era that hampers started being distributed as gifts at this time of year. In large estates, the lady of the house would typically coordi-

nate and distribute hampers, stuffed with consumables and sometimes even clothes, either to favour staff or to the occupant of the estate, introducing a commercial element to the idea of hampers. Christmas hampers also became popular gifts for the wealthy to give to their servants filled with useful items during the festive season. It was after the Great War that Christmas hampers began to gain serious popularity, as less people were disposed to baking their own goods. In time, the contents of traditional Christmas hampers became somewhat staple foods – tea leaves in a tin, Christmas cake or pudding, brandy, jams, dried fruits and preserved cheese. Tim French, former head of wine and hampers at Fortnum & Mason – a UK company considered to be the pioneers of hampers as we know them today – says “the allure of a hamper begins with the eye; it isn’t meant to contain a meal. Instead, it comprises lots of treats to tuck into over the 12 days of Christmas that will add spice and flavour and colour. We aim to include tried-and-tested favourites but also interesting, unusual items, such as Christmas spiced tea, laced with cocoa nibs and orange peel.” Modern-day Christmas hampers are still considered to be valuable gifts appropriate for employees, business clients and friends, although it often depends on the kind of hamper delivered.
