e’re constantly told that Christmas is the most magical time of the year and, for me, that magic comes from tradition. Tradition underpins several of our stories in Style this issue. We speak to two wonderful grandparents – Winston V. Zahra and Lilian Miceli Farrugia – who, together with their grandchildren – share their memories of Christmas past on pg 51. This edition of Style really embraces all there is to love about Christmas – wonderful people, such as our cover interviewee Roberta Lepre (pg 17); wonderful food, including the festive showstoppers made for us by Malta’s top pâtissiers (pg 72); and the glorious fashion that is set to turn heads in the coming weeks (pg 41). A well-known lawyer and equality activist, Roberta Lepre is also a devoted mum to two growing girls. Here she tells Jo Caruana about her dedication to both aspects of her life, and talks about what she is most looking forward to this festive season. R

oberta Lepre is one of those people who oozes charisma. Smart and sophisticated, she is also warm and friendly – an aura she has obviously developed through her unfailing desire to help people through her work. Roberta describes herself as a naturally shy and reserved person, but adds that she has always been a dreamer. This has led to her very varied and exciting career, and she enjoys getting involved in a multitude of things at the same time. “I don’t choose to go with the flow,” she says. “But I’m not your typical rebel either, and people are sometimes surprised at how I can be quite stubborn and hard-headed, despite their perception of me as somewhat quiet and docile.” Roberta puts this assertiveness down to the challenges of her career – she is a managing consultant at Weave Consulting, a director at Victim Support Malta, and a member on the Commission for Domestic Violence; plus there’s her growing family to think about. “I think I am much more assured now than I was, say, 10 years ago. Whereas, in my younger days, I would be more hesitant to act upon an idea, I am now

more confident about taking the plunge,” she says. Her life provides a steady balance between her responsibilities as a wife and mother (she is married to Kevin, and together they have two daughters, Leah, 11, and Sasha, 6) and her professional responsibilities as a lawyer and activist. That said, Roberta’s dedication to her work hasn’t waned one bit, and she steadfastly strives for justice across many of the projects that she is involved in. “Justice is the common thread that underpins most of what I do, and I want to make it ever more accessible for everyone,” she says. “I find that, in Malta, we now have a large spectrum of rights on paper; however these don’t necessarily translate into practical improvements in people’s lives. I want to keep working towards a better system in which people’s rights are genuinely respected and upheld.” Roberta is not your typical court lawyer, and she loves the fact her work allows her to be creative and versatile on a daily basis as she strives to solve problems. “I am also very lucky because I get to make a real difference in people’s lives through my involvement in the voluntary sector, and this gives me a lot of personal satisfaction.” Some of her greatest achievements in the past few years have included putting victims’ issues on the national agenda, strengthening Victim Support Malta as an organisation, setting up and running her own consultancy, being involved in the drafting of some very important laws, and chairing the Platform of Human Rights Organisations in Malta. “I was also very honoured to be nominated to be a member of the Guardian for Future Generations – a high-level body seeking to promote sustainable development,” she continues. “However I was also very disappointed when it became clear that this mandate could not be fulfilled due to insufficient political backing.” î Roberta wears: Pesavento DNA necklace, €360 Pesavento Pixel earrings, €260 Pesavento DNA bracelet, €190 Pesavento Pixel ring, €340 All available at Diamonds International. But, even with all of this going on, Roberta puts her family first. “I am married to a man who is my complete opposite, so we complement and balance each other,” she smiles. “The fact that we are so different also challenges me and helps me to keep growing as a person. “We have two beautiful daughters who are now growing into opinionated but caring individuals, and we are very proud of them. We have worked hard to face and overcome many obstacles, and to build the family and home that we always dreamt of. Nowadays we spend a lot of our free time outdoors, enjoying nature together.” Roberta also speaks very passionately about her extended family, which she cites as an amazing support system. “My parents gave me a very strong foundation and I have no words to express my gratitude for everything that they have done for me. I also have two siblings who, together with their better halves, are my best friends. On top of that I am also blessed with a good number of amazing, trustworthy friends whom I consider to be an extension of my family.” Christmas, similarly, will be all about her family and, particularly, the children. “We don’t do anything out of the ordinary, but it is a wonderful time and I am looking forward to lunch at my parents’ with all of us gathered together. “Although I am not too religious, I also make sure we attend mass and that the children understand the spiritual message behind Christmas, instead of just looking forward to their presents. Having said that, I can’t wait to see the excitement on their faces as they start unwrapping! Although my older daughter no longer believes in Santa, we still leave a glass of milk and some cookies under the tree on Christmas Eve.” î

There’s also a lot for Roberta to look forward to in 2016, although she stresses that she’s keeping things simple this year. “In the past, when approaching a new year, my goals would focus on achieving something. Now I am more aware that achievements in themselves are not as important as enjoying the process. So, my resolution for the coming year and the next phase of my life is to be more mindful of things, and to really take the time to savour all of the simple, mundane blessings that have come my way. “Health and well-being, for both my family and I, are my main priority,” she adds with a smile.

à la mode As we enter the year’s most stylish season, Iggy Fenech interviews three Maltese men working on the international fashion scene.

MATTHEW ATTARD NAVARRO Two years ago, well-known editor and photographer MATTHEW ATTARD NAVARRO moved to London. Since then, he has become an associate art director at The Outnet, which forms part of the prestigious Yoox Net-a-Porter. “While studying I focused on graphic design before exploring photography and, back in the day, I worked with various creatives and clients on a number of projects, including on Charles&Ron’s fashion campaigns and lookbooks. I then launched Platinum Love, which was an experimental digital publication. It was 2007 then, and I was still 18. “I moved to London in 2013, freelancing for the first few months before I got the opportunity to join VICE Media as their art director in their UK head office. It was a great experience, particularly since they had just purchased i-D Magazine, an institution here in London. “I worked with a variety of clients during my time at VICE, including Burberry, Diesel and Carolina Herrera, as well as a number of high street brands. Then, the Net-A-Porter Group approached me for a role within their discount retailer The Outnet, and I couldn’t say no!

“I have been here for a year and a half now, and it’s a fantastic cult-like company. Yoox Net-a-Porter (YNAP) is a leader in, and pioneer of, online luxury retail, and their love for innovation is something I definitely aligned with from the start. Of course, retail is numbers based, and everything we create has to deliver sales; but there are many sides to the industry, and it’s definitely been an interesting experience and a learning curve to go from the publishing world at VICE to the retail world at YNAP.” î

“I’m currently attending the London College of Fashion and, over the past two years, I have been lucky enough to be taught by people who have worked for Alexander McQueen, Burberry, Karl Lagerfeld and Jean Paul Gaultier, as well as attended lectures by Christopher Raeburn and Nick Knight. “Last November, I started my first internship at the Giles studio in East London and stayed until London Fashion Week in February. In the meantime, an opportunity to work for Alexander Wang came along, and I was offered a position at the Wang Studio in New York. “I was thrilled to be involved in the development of special projects at Wang, such as assisting on some of Madonna’s outfits for her Rebel Heart Tour. I also observed a performance outfit for Beyoncé being created, and assisted in developing Taraji P. Henson’s (who most will know as ‘Cookie’ on the US TV series, EMPIRE) Emmy’s dress. “The one memory I’ll always

cherish from Wang will be the evening before the New York Fashion Week show, which coincidentally was 11 September. The company had just had dinner delivered and we sat there eating and staring at the collection we had just completed. In

that moment I felt part of something very important: something much bigger than me. “Four days after my time at Alexander Wang came to an end, I was on a plane to Milan. I’m now at the Nuova Accademia di Belle Art for five months before head-

ing back to London to start work on my final degree collection. “Working internationally has been vital in refining my design process and moving my career forward. I now think of myself as a developing designer, and no longer just a design student.” î

DUNCAN BONE

With a background in art and design, DUNCAN BONE is now the creative director and partner at Custom.cm, a search engine dedicated entirely to fashion.

“I was a student at the Art and Design College when it was still based in Valletta, and decided to focus on graphic design, photography and film. A few years later, I moved to London and translated all I had learnt from my roles and education into online experiences for a number of clients, including Tony and Ridley Scott and Sleazenation magazine. “Following a number of design jobs in London, including a role within Wieden & Kennedy, where I worked on campaigns for clients like Nike, I set up my own design studio with a colleague. We focused mainly on art and fashion, and we did work for the Barbican, Christian Louboutin and Garage Magazine, ranging from a fashion film shown at the London Design Museum to creating and

managing an online radio station for Dasha Zukova during the New York Fashion Week and Paris Fashion Week, which had everyone from Iman to Olivier Zahm on air. “My new project is Custom.cm. With this project we want to challenge the overwhelming choice one has when shopping online. Custom is the only search engine built from the ground up exclusively for fashion, and it gives users personalised results and inspirational content featuring over half a million products from over 4,000 brands tailored to the gender, style and size of the user. “We aim to have the largest cross-section of fashion items on Custom.cm, so you can buy anything from your Nikes to the latest Maison Margiela handbag all from one place.”

3 Mums... 15 Kids! One child can be a handful on their own – but what about a handful of children? Marie-Claire Grima talks to three mothers who each have four or more children about the challenges and delights of being part of a big family – and what they love most about Christmas. I

t’s official – big families are no longer simply the subject of childhood anecdotes from parents and grandparents. The modern Maltese family is seeing an uptick in size from the standard 2.4 children model, and several women are having four or more children, often as a result of multiple births. “I’ve only actually been pregnant three times and my original aim was to have three children,” quips Mia Bonello Ghio, who gave birth to quadruplets in 1998. “I have twice that number now!” But while big families are on the rise, they’re still relatively rare, and mums with four or more children are often subjected to curious, nosy or even flat-out rude comments about the size of their family. Furthermore, with each child comes a new cluster of anxieties, fears and concerns at every stage of life. However, it’s clear that the mothers wouldn’t trade the experience for anything in the world. “Raising a big family means constantly worrying about your kids – and the financial aspect of it isn’t easy either,” says Tara Bannon, mother of five and grandmother of one. “But the full house,

the many friends, and the tons of love, laughter and madness make it all worthwhile.” The network of support and companionship that comes from having a large family is something that these women prize highly. “Your family is made up of those people who make you feel secure and loved at all times. For me, having a larger family means you are lucky enough to have more people who will love you, support you and always be there for you no matter what challenges are being faced,” says Jeannine Giglio, mother of four. “Whenever a member of the family is going through a rough patch, the others offer their help and support, bringing out their best qualities to assist the one in need – only then do you realise how lucky you are to be part of a loving family.” After bringing up a flock of children, these women have more or less seen it all, and they all share a sense of gratitude, resilience and unflappable good humour. As Mia says: “my advice to anyone raising children is the same that was given to me many years ago – trust in God and don’t sweat over the small stuff.” î

“Being an only child, I must admit that I always dreamed of having a big family but I never thought I would be so lucky! I have been very fortunate to have four wonderful children who are my life and inspiration. I treasure every moment I spend with them. “I love Christmas; it is a time to be thankful for all that we have and reflect on all we can give. As Catholics, Christmas for us is about celebrating the birth of Jesus Christ – He is what makes Christmas so special. We enjoy preparing for Christmas by decorating our house and putting up the Christmas tree with all its lights. After mass on Christmas Eve, we gather at my in-laws’, where we exchange family stories and presents. The children prepare milk and cookies for Santa and carrots for the reindeers by the fireplace. On Christmas Day, we have lunch at our home, and both sides of our family join in. We also try to visit family members who are house-bound, and make sure that they feel included and loved during this festive time. “It is such a wonderful gift to have a big family – so be thankful, enjoy every minute… and don’t stress about the mess!” î

“The children and I love Christmas: we decorate the house on the first weekend of December. We make a crib out of papier-mâché and put the tree up whilst listening to Christmas carols. Many of the tree decorations are bought from places we visited on holiday, so they all have some special meaning. When the children were younger we used to say the bedtime prayers in front of the crib and they would put their Christmas letters to Father Christmas in the fireplace. If they were good, the elves would come for them; otherwise they would remain there or be returned! “Early on Christmas morning, the children all come to our bedroom and open their presents, and then we have panettone for breakfast. They look forward to being on holiday from school, meeting up with all their cousins during occasions with the extended family and, of course, getting lots of presents! We usually celebrate Christmas with my side of the family and New Year’s with my husband’s. “The best part of having a big family is that there’s loads of love and never a dull moment – visit my house as everyone walks in after school and you’ll be hardpressed to get a word in edgeways!” î

“Growing up as an only child, I loved the madness of large families and would always enjoy going to the houses of friends who had lots of brothers and sisters. I never thought that I would have a family quite as large, though! You really need to have a lot of patience when you’re raising a large family, and you must teach the children to be respectful. However, don’t forget to cherish every second – time flies by way too fast. “Christmas is great for family time – the children love putting on Christmas plays and listening to holy stories, decorating the tree and helping us put the lights up as they await Santa’s arrival. On Christmas Eve, we put the children to bed early, pop open a bottle of wine and start wrapping the presents and placing them under the tree. The next day, we are usually woken up at dawn with giggles and screams. We try to wait as long as possible before opening presents. All of us – my husband’s side of the family included – usually go to my mother’s house for Christmas lunch. But this year, they are all coming to ours… which should be fun!”

Christmas Past Have our Christmas traditions changed that much over the years? Here two grandparents share their festive memories from years ago, and explain the customs they cherish with their own families. Words by Jo Caruana and Iggy Fenech

Winston V. Zahra fondly remembers his Christmases as a child – shared with his parents and five brothers. It was made with lots of sponge, lathered with yellow and chocolate custard, and topped with icing.

Kari, Mr Zahra’s oldest granddaughter, explains that the family always gets together on Christmas Eve to open them. “Granddad lights the fire, we have punch and mince pieces, and we all open our stockings. It’s great fun,” she smiles, adding that it’s nice to imagine her grandfather on Christmas Day opening his presents by the fire all those years ago. “It seems that, in some ways, Christmas has changed a lot, but in others it is just the same,” she smiles. î

Lilian Miceli Farrugia and granddaughter Luisa Hogg take a trip down memory lane as they reminisce about their famed Christmas meals, family traditions and many a champagne bottle. “When I was younger we didn’t decorate much, but when I had children, Christmas became a great and festive occasion,” says Lilian Miceli Farrugia, whose home has been the set for some incredibly elaborate Christmas lunches and parties. “My nanna is a perfectionist,” exclaims Luisa, as Lilian tells us how much she loves organising parties. “On Christmas Day, everyone would have a job to do and there was a very clear timetable to it. We’ve kept many of our traditions from my own childhood,” says Lilian. “My grandchildren and, subsequently, my great-grandchildren would come down the staircase with lighted candles and place these by the Baby Jesus decorated with vetch and candles. We always encouraged them to sing carols to remind them that it was the birthday of Jesus that we were celebrating on that day. “Following that, it was the traditional lunch

and the whole table would be decorated to the nines. We are not chefs but the meal would include a soup, pasta dish, turkey and gammon. Plum pudding, mince pies, chocolate pudding and an assortment of other sweets would follow. “My children would serve, and there was a list of who was responsible for what, with a man normally in charge of pouring the wine…” “We take drinking very seriously in this family, you see,” interjects Luisa. “Indeed we do!” adds Lilian, who explains how, during Christmas lunch, they still open a few bottles from their stock of 1946 port. “My late husband bought them when we got married 70 years ago, and we’ve been opening a couple every Christmas since then. It’s a very merry Christmas! “After lunch, we’d then open the presents, and while the person in charge of clearing the wrapping paper would be doing just that – we’re a family of 36, so you can imagine just how many gifts there’d be – the rest of us would head to the drawing room where we’d have a fire blazing, and it was my sonin-law’s duty to keep it alight. This was one of my favourite parts, as we’d all be somewhat î

merry from the champagne, wine and port – thankfully, no one’s ever fallen into the fire! “It was at this time that we would play games, and one of my favourites was the one in which the men would hide behind a sheet and leave their feet showing while the women would have to guess whose feet they were. Luisa and her older sister Emma.

“Finally, at the end of the day, friends and relatives who couldn’t make it to lunch would visit for tea,” Lilian reminisces fondly. “Nanna always makes sure we all enjoy ourselves,” says Luisa, “but she does insist that we keep the religious element in mind, too.” “Of course! Before we eat and make merry, we always go to midnight mass,” adds Lilian. “I’m a very family-oriented person, and it’s important to remember what we are meant to be celebrating in the first place.” This year, Lilian will be celebrating her 91st Christmas and it will be the first in 23 years without her beloved grand-

daughter, who will be visiting her brother and his family in Greece. “I always tell my family that I’m still alive to keep them all together,” says Lilian. “My recollection of Christmas from my youth wasn’t as boisterous as this, but it was always a time for family nonetheless.” “I also think that nanna and nannu’s traditions have given our Christmas a very unique feel, and I am sure these traditions will continue for many years to come,” concludes Luisa. “These events have always brought us together and the memories are so precious… I’ll never forget watching my uncles and father can-canning in the drawing room, that’s for sure!”

Cosmetic Surgery Here Linda Briggs tells STYLE ON SUNDAY why she believes Malta can become the cosmetic surgery capital of the Mediterranean.

L

inda Briggs is a woman on a mission. She is a successful entrepreneur, a charismatic talker and a firm believer that medical tourism is the future – and that Malta has a lot to benefit from this. Linda Briggs is the brains behind the UKbased brand of the same name, which is a premium provider of personal cosmetic and surgical advice and services. Linda is considered to be an expert on the topic of medical tourism and her company has helped thousands of people to find the right doctor and destination for their medical procedure. man for a face lift and an 86-year-old lady for an eye lift. Age is just a number and we do our best to make everyone happy.” Finally, Linda believes that the secret of good cosmetic surgery is to make subtle changes. “Little and often is better than a face lift every 10 years, for instance,” she says. “No one wants to end up looking like an American woman standing in a wind tunnel! “While studying at ITS, chefs get general training and can then decide which area they’d like to focus on. For me, that area was pastry and I’ve been a professional in this industry for 17 years now. “I love playing with different ingredients and seeing what I can come up with. I recently found a Bacio cake recipe, which I’m quite fond of, and changed the main ingredient, which is hazelnut, to coconut… It’s a matter of trial and error, but when you create something delicious it makes it all worthwhile. “I love creating cakes and adding sugar crafts to them. Sugar flowers have to be my favourite pastry accessory ever. Today’s creations, however, are two cakes with a jelly filling and brightly-coloured glaçage that gives them that pop Christmas is so renowned for. “My top tip would be to never overheat chocolate. Make sure it never goes beyond 45°C and the results will look great and be delicious.” î

“I’ve always been into art, but I became interested in pastries thanks to my mother and grandmother, who I used to watch making cakes, logs and homemade sweets throughout the year. “I later decided to become a pastry chef. My first major step forward was during my first-ever appraisal, with my then-executive sous chef, John Hornsby, at the Savoy in London. I’ll never forget his approval as he told me I would be a chef one day. I’ve now been a pastry chef for 13 years and I absolutely love it. “Throughout my career, I’ve made pastries for Her Majesty Queen Elizabeth II and for Juventus. So, I guess, another milestone to hit would be creating sweets for the US President – the world’s most powerful man! “The inspiration behind today’s creation is the hotel’s running theme this Christmas: Sparkle – and I have gone to town! We started to dream up ideas in July and wanted to incorporate jewellery and baubles in the desserts, using shimmer, glitter and bright colours to achieve a luxurious and festive feel. “I think I would have to list chocolate as my favourite ingredient. As a pastry chef, chocolate gives me the ability to experiment and go further, and it’s so versatile taste-wise, you can add pepper or chilli, tea, alcohol or fruit and it always tastes good.” Robert’s Showstopper: A shiny bauble made from chocolate, and replicas of jewellery in sugar paste.

“One of my highlights was baking cakes for Prince Charles, just a couple of weeks ago.”

“I started off cooking at home to appease the hunger pangs when I was younger. Then, one day, I asked someone for advice and next thing I knew I was helping in their shop. I never studied pastry as a subject, but experience has proven to be my best teacher and I’ve gone on to enter competitions in the UK, Germany, Norway and Luxemburg, winning around 14 gold medals, including in local competitions. “The colours for today’s creation remind me of Christmas, and I think gold looks fantastic for the season – be it on cakes or on decorative items. The flavours are also important, and they were chosen because they complement each other. “Pastry-making is something you learn though trial and error and, following 27 years in this industry, I hope I finally got the hang of it! Joking apart, it’s been a fantastic run, and one of the highlights was definitely making cakes for Prince Charles just a couple of weeks ago. The spread was quite typical, just scones, carrot cakes, chocolate fudges and red velvet cakes – but the heat was on to get it absolutely perfect. “I think the most important thing when creating pastries is to enjoy the process and, when cooking for family and friends, to put the focus on taste rather than looks.” î Mario’s Showstopper: Chocolate fudge cake coated in gold powder with a milk chocolate mousse, cremeux of citrus and ginger ice-cream.

“I got into the catering business when I was very young. There was a restaurant across the road from my parents’ house where my siblings, who are now also chefs, used to work and I took on a couple of odd jobs there during the holidays. I’ve now been a pastry chef for 27 years. “Throughout this time I’ve worked in various hotels and even owned my own business, but the highlight of my career remains catering for The Queen’s Heads of State Dinner, for which I created a chocolate marquise with a mandarin sorbet, almond twill and strawberry compote. “Today’s showpiece is hand carved out of a 10-kilo block of chocolate, and it took 96 hours to create. I think it embodies the flamboyance of the festive season, while the shimmer adds that sparkle that’s so synonymous with Christmas. “To create this, one would need a lot of experience but good baking and pastry making doesn’t. All you need to do is follow a good recipe step-by-step.” î

“It was an honour to create pastries for the President of Ghana, John Dramani Mahama, during CHOGM.”

“I started in the industry when I was 15. My cousin has a small cake shop and I used to work there. But, really and truly, I only discovered my passion for pastry when I moved to the hospitality industry. “Since then I’ve worked at various five-star hotels, and attended courses in Italy, Switzerland, London, the Netherlands, Egypt, and in Scotland, where I trained with Ruth Hinx. It’s been 16 years now, and so much has happened. One of my favourite moments remains creating pastries for the President of Ghana, John Dramani Mahama, during CHOGM. We fashioned flowerpots out of different types of chocolate and filled them with pansies. I love playing with chocolate and blending flavours, and my two favourite addons are coffee and salt. “Imagination is a vital part of this job and, thankfully, I get inspired by many things. Even so, pastry making remains an art, so do read the recipe over twice or three times and follow it to the letter. Also, don’t forget to decorate your piece in a way that showcases your creativity – that’s the fun of it!” Byron’s Showstopper: The Eclipse is a chestnut cake with drunken rum mousse and cinnamon pannacotta, covered in lavender-derived icing and garnished with pansies and chocolate feathers.

ewind ten years or so and it was a Sunday treat to see premium cars cruising along Tower Road and the Coast Road. The naked truth is that fewer people could afford to buy a premium car back then. Fast-forward to 2015 and while driving in any part of Malta you cannot help but notice the quantum leap that has been made in the quality of cars on our streets. What the better-car manufacturers have done over the past years was to study in great detail what people want and as a result have today expanded their line-up dramatically to cater for everyone’s needs. The car we test-drove today – the three-door Audi A3, launched only a few months ago, is in fact a classic example of how Audi – one of the world’s top manufacturers in the premium segment – has evolved its line-up drastically. Originally, the A3 was launched into the market as a three-door hatchback. Although today’s three-door hatchback remains the crowd-puller and the best-seller within the A3 family, consumers now have the luxury of opting for the classic A3 three-door hatchback or the increasingly popular five-door sportback, or the three-door convertible, or – the latest

edition to the family, widely considered as a wise move by Audi – the practical compact four-door saloon. One can safely say that the three-door Audi A3 was a pioneer in the premium hatchback segment. The first generation of the Audi A3 was launched in 1996, at a time when competitive brands were totally consumed by the production of the stereotypical large fourdoor saloons or station-wagons. By creating the first fully-fledged luxury premium hatchback, Audi opened up the brand to many people who would have never been able to own an Audi before – thousands of people who work in a city, who would only consider buying a relatively small car, older wealthy people who are after a premium badge but want to scale down to a smaller vehicle, young trendy professionals who can afford a premium brand but would not dream of being seen in an executive car. And, notwithstanding the fact that the premium hatchback market today is a hotly contested one by top car manufacturers, the new generation of the Audi A3 has further consolidated its position as a market leader in this segment. The Audi A3 we test-drove had an overall striking feel-good factor about it.

BEHIND THE WHEEL We test-drove the 1.4 TFSI S-Tronic version and found it to be incredibly agile and fast. Because Audi has managed to reduce the overall weight of the new A3, the car is now more lively and nimble, and surprised us with its torque and acceleration. For the record, this engine delivers an impressive 125bhp which gives the new A3 an air of sportiness that you would struggle to find in other hatchbacks. Overall, the car handles our roads perfectly: strong grip, agile on the corners, comfortable ride and super-responsive. î

OYSTERS WITH BEETROOT & HORSERADISH FOAM

Ingredients: 12 oysters, shucked and strained; juices reserved. For the pickled beetroot: 15ml sherry vinegar; 10ml Merlot; 175ml water; 1 tsp sugar; 1 tsp salt; a sprinkle of white peppercorns; a sprinkle of coriander seeds; ½ a garlic clove; 1 thyme sprig; 4 beetroots, boiled, peeled and cut into cubes. Method: Put the oysters and beetroot cubes aside and bring all the other ingredients to the boil; remove from the heat and drop in the beetroot cubes. Allow them to cool in the pickling liquor. Serve with horseradish foam, warm oyster juices, pickled beetroot, raw beetroot slices, pickled cucumber, celery leaves, beetroot puree and beetroot crisps. î

ROAST STRIPLOIN WITH OXTAIL & SHALLOT FAGGOT, MUSHROOM PUREE & ROASTED HERITAGE CARROTS

Ingredients: 650g beef striploin, trimmed, top fat removed; salt & pepper; vegetable oil; butter; a pinch of dried thyme. For the mushroom puree: 400g mushrooms, sliced; 2 shallots, finely chopped; 50ml cream; 15ml vegetable oil; 50g butter. For the faggot: 2 oxtails, braised, cleaned and chopped; 150g minced beef; 4 shallots, finely chopped; 1 garlic clove, minced; ½ tsp thyme leaves, chopped; ½ tsp rosemary, chopped; breadcrumbs; 200ml beer; 150ml chicken stock; a splash of Worcestershire sauce; 100ml braising liquid from oxtails; caul fat. Method: Season the striploin and seal in a hot pan. Cook until medium and allow to rest before carving. To make the mushroom puree, heat the oil and lightly sauté the shallots; add the mushrooms and cream, and cook over a low heat. Add the butter, puree the mixture and pass through a fine sieve. To make the faggot, sauté the onions, garlic, thyme and rosemary; add half the beer and reduce. Allow to cool, and mix with the minced beef, oxtail meat, and Worcestershire sauce. Add breadcrumbs if the mixture feels too wet, divide into balls and wrap in the caul fat. Place in a pan with the remaining beer and chicken stock, and

braising liquid, cook in the oven at 180°C for 30 minutes, remove from the liquid and strain. Place the cooking liquid in a clean pan and reduce until a syrup consistency is achieved. Place the faggots back in the pan to coat.

Reserve and keep warm. Serve with a red wine and beet juice gastrique, roasted and glazed purple heritage carrots, buttered spring onion, dried squid ink powder and mushroom puree. î

“A classic goldrimmed set is always a sophisticated and elegant choice of dinnerware. Pair it with distinctive stainless steel or silver cutlery and dinner is served!” Mara Camilleri, CamilleriParisMode BLUEBERRY NOUGAT, LAVENDER PAVLOVA AND BLUEBERRY SORBET

Ingredients for the pavlova: 300g egg whites; 500g castor sugar; blackberry coulis; fresh lavender. For the nougat: 400g granulated sugar; 100g honey; 50g glucose; 30g egg whites; a pinch of salt; 75g dried blueberries.

Method: To make the pavlova, whisk the egg whites and sugar, fold in the lavender flowers and a few drops of blackberry coulis. Pipe onto baking parchment, and dry in an oven set at 70°C overnight.

To make the nougat, boil the honey, glucose and the granulated sugar until the mixture reaches 150°C. In a bowl, whisk the egg whites and pour the liquid sugar mix onto it with the beater on a low speed. Add the salt and blueberries, and continue beating for five to eight minutes.

Continue mixing until cool. Turn out onto a baking paper, allow to cool and crumble. Serve with blueberry powder, blueberry shards, crystalised violets and rose petals, red amaranth and blueberry ganache, blackcurrant reduction and a scoop of sorbet.
