016 has been a tumultuous year. From the deaths of so many world icons and artists (Victoria Wood will always be an inspiration to me and her comedy will be much missed) to the events that have caused many to question the very stability of our political systems, I feel quite ready to see the back of it. And so, with the end of one 12-month set comes the start of another, along with the excitement and celebration that that brings! This edition is very much a reflection of our love for the season. “Being a mum is a priority but it’s also important to have the choice to keep developing your career and abilities at the same time, should you want to.” – Sue years – from finding the perfect models to putting the finishing touches on a show like Miss World Malta. “It isn’t exactly
easy, but it certainly keeps me young and active,” she smiles. She’s also proud of how she has balanced her work and pri-
vate lives over the years, especially after becoming mum to Valentina and Dean. “I never stopped working, not even for a day,” she says. “In fact, the day after Valentina was born I went straight back into work to host a Valentino fashion show – it was scheduled so I couldn’t miss it! Valentina is actually his namesake.”

I
t was a cold, early morning when the Style team ventured into Valletta for this issue’s cover shoot. We may have been bleary-eyed and sluggish but our cover stars were not. On the contrary, Sue and Valentina Rossi were rearing to go – ever the fashion professionals and always camera-ready. Of course that’s no surprise. Sue has been in the industry for 30 years and Valentina literally grew up following in her mother’s footsteps. “I can barely remember my career before I got into fashion,” says Sue, who started out as a sales girl in a material shop, where she met the late designer Ray Ashley. “He started making dresses for me and encouraged me to get into modelling, so I took a course in Nottingham and fell for the business even more.” Sue spent two years in the UK working as a professional international model before returning to Malta. It was then that she decided to open her own agency, Modelle International, which she has run ever since. “There have been some wonderful moments,” she says. “But a definite highlight was obtaining the local licence for Miss World 20 years ago. It was so exciting! I had grown up watching Miss World and always dreamt of being involved, so to actually be able to bring it to Malta felt incredible.” And Miss World has certainly led to some exciting moments for Sue – including the opportunity to travel around the world with the winning participants. “My favourite memories include attending a huge show in South Africa, where I met stars including Jerry Springer, Ronan Keating and Errol Brown. It was out of this world to work among artists of that calibre.” Sue stresses that it’s the challenges of the industry that have kept her so engaged over the
In fact, Valentina was initiated into the business while still a baby, as Sue would take her and Dean with her to work in carrycots. “I felt very passionate about being a working mum,” she says. “Yes being a mum is a priority but it’s also important to have the choice to keep developing your career and abilities at the same time, should you want to.” Valentina, meanwhile, has fond memories of growing up backstage at various fashion shows. “I was my mum’s little helper!” she smiles. “I would always find a job to do of some sort and really enjoyed the atmosphere. In fact, it feels as though I’ve been working in the industry for my entire life.” That said, Valentina wasn’t always enroute to being a model; she actually grew up as quite a tomboy and it wasn’t until her teens that she started to consider stepping out from backstage to try her hand at modelling herself. “I was far too into video games and skating to think about the way I looked back then,” she smiles. “But, once I started experimenting with make-up and fashion when I was about 14, I was hooked. My first shoot was for the TV show Venere and I really enjoyed it, and things kind of spiralled from there. Throughout everything mum encouraged me but was never pushy – in fact while she had signed me up for all sorts of classes like drama and dancing, modelling was never on the agenda. That said, over time I guess the influences took hold and I now love the industry as much as she does.” In fact, even though only in her early 20s, Valentina has carved out a successful career in the media. Aside from modelling extensively, she is also well known on Maltese TV and, most recently, as one of the voices on Vibe FM. “I have always loved the wider media and known I wanted to

work in it, so it’s exciting to be able to dabble in different elements. From a modelling perspective it has been wonderful to win Photo Model of the Year three consecutive times at the Malta Fashion Awards, as that validated the hard work that I was putting into it and made me want to work harder. Now I am concentrating on radio because I am really en-
joying it and eager to make the best of it; I also recently returned to TV in a role on Strada Stretta, so it’s exciting to be doing quite a few different things at once. I believe in developing your abilities and in taking as many opportunities as you can, so long as they feel right and you can dedicate enough time to them to make sure they are done right.”

However, away from the spotlight, both Sue and Valentina enjoy the simpler things too and they’re looking forward to Christmas. “It’s actually only the three of us at home, so we don’t have a big family Christmas do but we enjoy our time together,” continues Valentina. “My boyfriend Carlo and I will have lunch with his family and then drinks with mine after that. Plus, in the run-up to Christmas Day itself it will be nice to spend quality time with mum and Dean, as we’re all so busy throughout the rest of the year!” Both mother and daughter will also be eager to start work again come January – Valentina will be focusing on her radio show, while Sue will be celebrating Modelle International’s 30th anniversary in March. “These are exciting times for both of us. And, of course, mum and I will be side-by-side supporting each other through them,” Valentina adds with a smile. n

Amid the sumptuousness of one of Malta’s most opulent palazzos, at a time of year when classical music plays so close to our hearts, Iggy Fenech sits down with four of the Islands’ best-known sopranos to talk top notes and musical achievements. actually started out in musical theatre and it was only when Gillian Zammit heard me sing that I considered becoming a soprano. She encouraged me into classical music and, by the time I was 15, I knew that that was what I wanted to do. “Among the highlights so far there’s touring with the Welsh National Opera around the UK, where we performed an opera written specifically for us at multiple theatres, including the Bristol Hippodrome and the Welsh Millennium Centre. I’ve also twice taken part in the Manoel Theatre opera, and I’m looking forward to next year’s Le Nozze di Figaro, in which I will play the part of Barbarina. “My advice to anyone who wants to enjoy opera is actually quite simple: I believe that opera is like wine and coffee, in that you have to go easy on yourself at first but it will grow on you and, might possibly, become addictive… So find shorter operas, like La Bohème, that really speak to your heart and kick off your new-found passion from there!”

lthough I’ve been singing since the age of 13, my musical life actually started with the piano at the age of five. Since then, the musical landscape in Malta has changed completely and I’m proud to say that, over the years, I’ve trained many of the up-andcoming local singers. “In my career I would say that there are both musical and personal highlights. Working with people like Emma Kirkby, the grand dame of baroque singing, and Joseph Calleja were both personal highs. Musically, however, there are key pieces that you’d want to perform in this profession and, for me, that was performing the Four Last Songs by Richard Strauss with the Malta Philharmonic Orchestra under the baton of Mro Brian Schembri. “As performers, there are various things that affect us while singing. Our mood, our frame of mind, the audience... I find it a bit more stressful in Malta as people know me and I know them; but there’s something freeing about singing in front of strangers. “For those looking to travel for opera, I would recommend Germany for their avant-garde productions, Covent Garden in the UK for the top performers, and New York for the most fabulous and ambitious productions of them all!”

t was my church and school choir teachers, who suggested I start singing lessons and I did so when I was nine. I then met Gillian Zammit and she introduced me to Despina’s aria from Mozart’s Così Fan Tutte, which eventually led to me being put forward for a scholarship. Since then, I would say the highlights have been singing with Joseph Calleja on multiple occasions, and having lunch at Buckingham Palace before a performance at St James’s Palace. “Nowadays my base is between Malta and the UK for work, and also on behalf of the Malta Airport Foundation, for which I’m the ambassador. My role there is to help promote the Foundation’s projects and initiatives, which are aimed at enhancing awareness on what Malta has to offer, including its rich heritage, the environment, and local talent. “At the moment I’m studying various operatic roles from a number of operas with Juliette Bisazza in order to create a new repertoire for auditions, including those of Adina, Norina, Nanetta, Lucia, Gilda and Sophie. Yvonne Kenny, meanwhile, is my teacher in the UK and her help’s been invaluable. I also have a number of concerts coming up, including the Christmas Gala Concert with Barrandov Opera in Suffolk, UK, and New Year’s Eve Gala with the MPO at the MCC in Malta. “I believe opera is a lot like film: there are comedies, tragedies and romances, so choose a genre you like – or an opera that incorporates all three! Knowing the story and reading the Director’s Notes in the libretto help, too… Sometimes you can enjoy all moments in an opera, other times, you wait for those few transcendental ones that you will carry with you forever!”
I
started training on voice when I was 20, which is much older than most sopranos do, but I studied the piano before that. In fact, they will always remain my two loves and I still teach both. “Among my greatest achievements I would count directing and producing Journey (2007) and Journey Evolution (2008), through which I projected myself and my versatility as a pianist and soprano. These included a variety of dancers and musicians performing opera and classical, and fusing the old with the new. Another instance was premiering Metro de la Vie by Federico Gozzelino in Malta… It delves into such depth of emotion! “I think all four of us here are lucky to be performers and to have the ability to pass on what we love to others… In fact, I’ve always believed that when a performer is on stage, she or he has the solemn responsibility to inspire. In Malta and Gozo, the introduction of the Youth Opera and the growing number of young sopranos and tenors has changed the scene completely and I think it’s moving away from the idea that opera is elitist. “When it comes to enjoying opera, well, I’ll never forget watching a production of La Traviata when the whole cast was wearing jeans! It was an experience that opened my eyes to how versatile opera can actually be and how there is something for everyone in this world. So, whether you’re a connoisseur or a beginner, simply find something that you enjoy and go from there!”

“I remember as a kid sketching designs of clothes and shoes in my own way.”
t all started as a childhood dream: a strong desire and passion for fashion. “I remember as a kid sketching designs of clothes and shoes in my own way,” beams Nicholas Azzopardi, founder and owner of Nico Passini, the new premier shoe shop in Cathedral Street, Sliema. “My obsession in my teens was always to have an orderly room at home with my collection of shoes stacked uniformly in their original boxes, and my clothes neatly organised by genre and colour. High-end retail outlets were my inspiration.” After investing much of his time studying and working himself up to outlet manager status in leading household names in the fashion industry, last year Nick decided to embark on a journey of investing in his own dream. With the help of a business mentor, he progressed from designing a business plan on paper focusing on a niche market of premier shoes for kids and teens, to coining his house-brand ‘Nico Passini’, from identifying brands with culture and tradition, to finally carefully hand-picking the best craftsmanship and design. Nick
threw all his energy and the finance he managed to raise into this new venture. “I strongly believe, from my experience and instincts, that the niche market of affordable luxury shoes for children and teenagers had been somewhat missing in Malta,” he observes. “Like myself as a kid, there are young fashionistas out there and I want to give them what they desire at an affordable price.” Nico Passini had a soft opening this summer after painstakingly gutting, designing and building the shop in Cathedral Street, Sliema, to the highest specifications. Incidentally, Nico Passini is housed within the same shop that was originally ‘Kickers’ a few decades ago. Nick thought it was the right opportunity to bring back the much loved Kickers brand to where it started from in Sliema after such a long absence. Nico Passini is now also the outlet for the Italian high-end luxury fashion
shoes Liu-Jo for Girls, Morelli, and Alviero Martini, recognisable across the world thanks to the iconic Geo map. “I look for culture, tradition and quality of craftsmanship, design and materials,” Nick remarks. In the coming weeks, Nico Passini’s shoes will be catalogued and sold online from the fashion shop-in-shop, www.NIAZZO.com, which is a robust e-commerce platform. NIAZZO.com is a first in Malta, offering affordable managed services in Omni-Channel Retailing to fashion boutiques including all the services that are essential ingredients to go online – a robust optimised website, complete with an integrated central inventory, web sales, till sales, a payment gateway and logistics services. Joanna: “The older and the busier I get, the less adventurous I am with colour, which is why our tree is quite rustic. Both Henry and I love natural things and colours, and we like to add a flair by creating contrast: soft and hard, texture and shininess. We kept that in mind when we went to choose the stuff and, while we normally opt for a live tree, this one is spectacularly realistic! “Christmas is a very important holiday in our festive calendar and it infiltrates all our activities at this time of the year, from our social life (we love throwing open-house parties for friends) to our family life (we go for walks in the countryside and pick up fallen pinecones and branches to create our own wreathes). Living in Valletta is also really nice at Christmastime as we get to go to the theatre, send the children to Toi Toi sessions, do our shopping and go for strolls here. We are also big fans of the panto and of watching Home Alone.”

Christmas Tip: The concept of ‘less is more’ applies to everything but chocolate, so pick a colour or a theme and keep it simple!
Steve: “The idea for a forest-themed tree came to us when Patty saw the matte, ceramic birds and stuffed animals in the shop. The theme may seem obvious – tree and forest – but we’re both allergic to things that are kitsch and too many decorations, so we went for a look that is as natural as possible; in fact, you’ll notice that the tree has no lights apart from a lantern to give it a warm glow… We’re also very averse to waste, so we used bits of scrap paper lying about to create baubles and give the tree more depth. “This house actually belongs to my brother, Kurt, and his wife, Caroline; the latter of whom jumped for joy when she heard that she’d have a tree up so early! I have to admit, however, that I’m not a big fan of Christmas and this is the first time Patty and I have decorated a Christmas tree together!”
Patty: I’m one of five children and Christmas is as important to me now as it was when I was still very young and when each of my siblings had a section of the tree to decorate. It didn’t flow and it looked messy, but it was absolutely wonderful, nonetheless. Nowadays, we spend Christmas with our families – usually a bit earlier in the month with mine as they like to travel at Christmastime – and, on Boxing Day or thereabouts, we host Christmas brunch for our friends. “I think this exercise has shown me that both Steve and I have the same taste in decorations… When we went to the shop to pick them out, we each went our separate ways and took snaps of the things we liked. We then met up and realised we had taken photos of the exact same things! It was hilarious and we enjoyed every second!” n

I
t’s been 20 years since the launch of the first revolutionary Renault Megane and the latest landmark model of the popular French car manufacturer is by far the classiest act to date. Sure, we always expect a new generation of any car model to be a marked improvement over its predecessor but, for starters, we all know that’s not always the case. Secondly, a new generation can either prove to be an improvement over the previous model or a catalyst for raising the bar across all fronts. The new Megane clearly falls in the latter category. Make no mistake; this is not a facelift disguised as a new generation. The Megane has made significant leaps forward on all fronts. Primarily, there are four major areas of improvement: exterior design, i.e. the looks department has been enhanced by several notches; technology- and equipment-wise the new Megane now competes with premium brands;
the interior is also remarkably superior in comparison with its predecessor and it is classier than most of Megane’s many competitors in its league; finally, but not least importantly, the drive is sublime and is certainly as smooth and refined as it can get in its class. Test-driving the Megane during the rush hour on a busy afternoon has confirmed the overall quality, comfort and resilience of the new generation of Megane, even if met by heavy traffic and bumpy roads. Exterior
The fourth generation of the Megane is certainly a milestone in the design department. Its appearance is perhaps slightly more sober than that of its predecessor but, quite frankly, that is what the Megane needed. This a model that appeals to a much wider audience than its predecessor. It can be sporty, but it is certainly classy; it can appeal to the young generation, but the new model does hit a chord too with the more mature consumer. It is also very appealing to drivers who are after a premium car but don’t want to spend the earth on it and are after a less flashy design. The front and rear of the car feature a very creative layout of LED light designs and both front and back LEDs are permanently on whilst the engine is running. Visually the LED adds a kind of softness and informal feel to it
that certainly makes the new Megane stand out in a crowd, and that’s for all the right reasons! Big leap forward in technology
One major improvement is the high level of technology and entry level equipment that comes with the new generation of Megane. The Dynamique Nav, which is the entry level, comes equipped with a high level of equipment that is truly second to none. There’s a seven-inch touch screen, navigation, Bluetooth, cruise control, hill start assist, gear shift indicator, dual zone climate controller, booster emergency breaking and much more. The icing on the cake is that the new Megane actually and physically empowers the driver to choose the ‘mood’ of the car. So at the touch of a button the car can either be set in ‘Eco’ mode or ‘Comfort’, ‘Neutral’, ‘Sport’ or ‘Personal’. The Multi-Sense system configures the vehicle to meet your current desires or to reflect your mood. It controls both technical configurations, like engine response, gear changes, variation in steering wheel effort, engine sound, etc. But it also changes the onboard environment, including the pitch of the interior lighting, information displayed as well as the colour of the instruments. So simply press a button and your Megane will mirror your mood!

Driving it…
As they say, the proof of the pudding is in the eating and there is no point for a car to look great or have a high degree of technological equipment if it disappoints on what really matters. And what really matters is the driving experience as well as the interior look-and-feel. On both fronts, the car scores very highly. If Renault has managed to raise the bar on the exterior, the feeling you get as soon as you step inside it is that the revolution is greater in the internal aspect of the car. Internally the Megane is sleek, soft and clinical, the latter usually intrinsically linked with premium brands. The dashboard’s primary focus point is its touchscreen that handles almost all functions of the car and is very easy to navigate and use. The fabric and leather feel is very much on the refined side of things and the leather steering wheel – which comes as standard – has a very good feel and grip.
The driving experience is equally impressive. It delivers a comfortable and relaxed ride, ideal for our city-styled driving where you don’t have to put much effort into navigating or driving the car. The new Megane comes with two engine options – a 1.2 Turbo petrol engine that delivers 130BHP and a diesel 1.5DCI that outputs 110BHP. We drove the latter and the torque, handling and noise levels of the diesel engine were excellent. n
Verdict
At a starting price of ¤21,500 for a highlyequipped entry level model, the new Megane is a very strong option in the mid-range hatchback tier. The new Megane emerges as certainly one of the leaders in its class. It is undoubtedly more upmarket than most of its competitors and ticks all the right boxes as far as value-return is concerned.

The Rolling Pin girls – Martina Beck and Michela Lattughi – love to bake! Here they present their recipe for a delicious Christmas log and Christmas cookie duo that will thrill your guests every time.
“Cooking at Christmas brings everybody together. It’s such fun to gather family and friends round the table for lunch or dinner, so everyone can eat, drink, chat and laugh. We also love that ‘Christmas aroma’ that rises through the house when you’re baking at this time of year – it’s extra special!”
The Rolling Pin Christmas Log and Christmas Cookies
For the log, ingredients 100g crushed almonds; 100g crushed walnuts; 50g crushed hazelnuts; 50g hazelnut halves; 1 tin condensed milk; 2 pkts morning coffee biscuits (crushed); 2 tbsp Cadbury cocoa powder; 50g chocolate drops; 2 tbsp Vermouth; milk chocolate and white chocolate for covering Method Mix all the ingredients in one bowl until they stick together. Shape into the form of a log, put on grease-proof paper and refrigerate overnight. Melt the chocolate and cover. For the cookies, ingredients 500g flour; 250g margarine; 125g sugar; 2 eggs; 1 egg yolk; 2 tsp cinnamon; 2 tsp ginger; 1 tsp nutmeg; jam Method: Mix the flour and margarine in a food processor. When the texture resembles breadcrumbs, add the sugar, spices and 2 eggs; keep mixing until all the pastry forms into a ball. Refrigerate in clingfilm for 30 minutes. Flour a table top and roll out the pastry. Using pastry cutters, cut out an even number of circles (half will be used as the base, the rest for the top). Set half the circles on a greased oven tray and spread with jam. Using a shaped cookie cutter (such as a tree or star), cut a shape from the other half of the circles. Place that shape over one of the bases and top with more jam. Poke a hole in the top and brush with the beaten egg yolk. Place in a pre-heated oven at 220°C for 20 minutes until the pastry looks golden. Once the cookies are cooled, pass a ribbon through the hole and use as a Christmas tree decoration. Store in an airtight container.
“I grew up baking and decorating cakes with my godmother, Jane, who was always entrusted with the celebration cakes for our circle of family and friends, and has the greatest collection of traditional recipes passed down through generations. As I went through sixth form and university I found myself craving a creative outlet. I turned to baking as the perfect marriage between creativity and my immense love for food. While I’ve come a long way and developed my own style now, I always make sure to send her photos of what I create; she will always be my mentor. This cake is an alternative to fruit cake. It still incorporates the traditional spices and touch of booze, and the result is a delicious cake that will be enjoyed by all.”
Katya’s Apple & Walnut Spiced Cake with Rum & Cinnamon Buttercream Ingredients 150g unsalted butter, at room temperature; 2 eggs; 300g sugar; 240g all-purpose flour; pinch of salt; 1 tsp baking soda (bicarbonate of soda); 2 tsp cinnamon; ½ tsp ground cloves; ¼ tsp ground nutmeg; ¼ tsp all-spice; 2 tsp vanilla essence; 2 large red apples, peeled, cored, and finely diced; 80g walnuts, roughly chopped Method: Preheat the oven to 175°C. Butter two 7 or 8-inch round springform/removable bottom pans, and line them with parchment paper. In a stand mixer fitted with the paddle attachment, cream together the butter and sugar. Add the eggs, one at a time. In a large bowl sift together the flour, salt, baking soda and all the spices. Slowly mix the dry ingredients with the wet ingredients. Mix in the vanilla essence, apples and walnuts. Divide the mixture into the prepared pans and bake until a toothpick inserted in the middle comes out clean, around 35-40 minutes. To finish the cake, add vanilla essence, rum and cinnamon according to your taste to your favourite buttercream recipe and assemble once the cake is completely cool.

Fran Farrugia is the woman behind Baked, which specialises in bespoke cakes and bakes. She is constantly inspired by cooking, and relentlessly tries out new recipes and methods to keep her ideas fresh and innovative – including this champagneinspired beauty.
“My love for cooking was definitely inspired by my mother and grandparents, as well as my endless Food Network viewing during late night baking sessions. When I was younger my mother always baked my birthday cakes and my grandfather would decorate them, so there was always that sense of working together to create something fantastic. I chose this cake because Christmas gatherings are all about food and booze, so this cake is the perfect balance of both!”
Fran’s Cranberry Cake with Champagne Frosting and White Chocolate Dhards Ingredients 350g margarine; 350g sugar; 6 eggs; 350g self-raising flour; ½ cup fresh or frozen cranberries; 1 tbsp baking powder; 150g white chocolate; 250g sweetened butter; 500g icing sugar; 10 tbsp champagne; 5 tbsp milk Method Beat the margarine and sugar, and, when the mixture is fluffy, add the eggs. Keep beating on a medium speed. Sieve in the flour and baking powder, and fold into the wet mixture. Add the cranberries (at this stage Fran recommends lightly coating them in flour before adding then to the mixture, to stop them sinking to the bottom). Divide the batter between two 9-inch baking pans and bake at 160°C for around 45-50 minutes. While the cake is baking, prepare the white chocolate shards by melting the white chocolate and then spreading it onto a sheet of baking paper on a flat baking tray, topped with a few cranberries. Pop it in the freezer. For the champagne frosting beat together the sweetened butter, icing sugar, champagne and milk. To assemble, add a layer of frosting between the two cakes, frost the outside evenly, break up the shards and place on top.

Berivan Serin, who’s known as ‘Beri’, is originally from Istanbul. She moved to Malta six years ago and has been painting on stones ever since. The results are pretty and full of character, and would certainly add a pop of fun to any dining table or festive set-up.
“I was first inspired by the colour of the local limestone – I loved the honey hues, and the fact I could find little stones wherever I went. They really caught my attention and drew me away from the art I was making at the time, which was painting on canvas. I started making the stones to decorate my own home but got so many lovely compliments that I started making them as gifts. I now make custom-designed stones to sell at craft fairs and online, and they have become my main material. I absolutely love working with them.”
Beri’s Painted Stones What you’ll need Stones (of all shapes and sizes, but the smoother the better); acrylic paint in a variety of colours; thin paintbrushes; varnish Method Start by washing your stone to remove any dust or dirt. Then, start painting! You can be as creative or precise as you like, using the stone as you would any other canvas. You could simply write a name on the stone, to use as your place settings on Christmas Day. Once you’ve painted your desired design, allow it to dry. The next day, top with a coat of varnish and you’re done.

“I’ve felt drawn to different creative fields since my childhood but I never gave myself a chance to explore them further. I tend to be a very nervous and anxious person but, even though it took me a very long time, I realised that art was my method for releasing stress and channelling my energy towards creating something beautiful. This craft is a perfect combination of two media I love the most, clay and paint.”
Jelena’s Clay Christmas Tree Place Settings What you’ll need Air-dry clay; small nail scissors; a knife; a small piece of paper; acrylic paints Method Take a piece of clay and create a ball with your hands. Craft a cone shape by rolling the clay ball in your hands and applying more pressure on one side of the ball until you get a slightly pointed tip. Afterwards, flatten the other side of the ball by tapping it gently on a table. Take the scissors and position them with the curved tip pointing upwards. Starting from the top of the tree, cut into the clay to create a small pointy tip. Repeat this adjacent to the first cut and continue cutting in a circular direction working your way to the bottom of the tree. With your fingers, roll several tiny balls of clay that will serve as baubles. Once the little balls are ready, moisten them so they become slightly sticky. Press the balls onto the tree and flatten them gently to make sure they stick well. Using the knife, create a small incision in the middle of the top of the tree. The incision should be around 1.5cm deep. In the incision, place a little piece of paper in order to prevent the two sides from sticking back together while drying. Put the tree in an airy place to dry – this usually takes about a day. Once fully dried, the tree can be painted with acrylics in any colours of your choice.

I chose to do a creative gift wrapping tutorial to provide some ideas on how to present gifts in a beautiful and unique way, using natural materials and distinctive accessories that celebrate the spirit of Christmas – and no gaudy wrapping paper in sight!”
Sarah’s Traditional Gift-Wrapping Tutorial What you’ll need No fuss fabric or paper (such as simple brown paper, burlap or wrapping paper with a subtle print or fun texture); tape; fabric ribbon or twine; your choice of embellishments Method Once you’ve chosen what you’d like to wrap your gift in, wrap it as neatly as possible and secure with tape – it helps to cut any excess paper or fabric away, rather than folding it in, to avoid bulkiness. Next, choose a coordinating ribbon or string – I love using fabric ribbon or twine rather than paper ribbon, as it really keeps within the natural feel. Tie with a simple bow, or a more complex one, if you’re skilled in the bow-tying arts! Finally, it’s time for embellishment. I like to incorporate a beautiful label (you can choose to cut these yourself out of luxurious paper), and thread through a sprig of dried herbs or flowers – these give it a rustic, elegant feel, and smell wonderful too. n

GOAT’S CHEESE CUSTARD WITH GOAT’S CHEESE CREAM AND WHITE ASPARAGUS Ingredients: 100g semidried local goat’s cheese; 2 garlic cloves; 500ml cream; 1 sprig thyme; 6 egg yolks; 2 eggs; salt & pepper. For the Goat’s Cheese Cream: 1 shallot, finely chopped; 1 tbsp olive oil; 1g sage; 100ml milk; 50ml cream; 40g butter.
Method: Bring the cream to a boil with the garlic and thyme, add the cheese and let simmer; stir continuously. Allow to cool, remove the thyme and place in a blender. Add the eggs and egg yolks, and pulse, and season with salt and pepper. Pass through a fine sieve. Steam the custard in a mould for 12-14 minutes until just set. Allow to cool slightly before unmoulding. For the goat’s cheese cream, heat the oil and sauté the shallot. Add the sage, milk and cream; bring to the boil and simmer for 10 minutes. Strain through a sieve. Before serving, whisk in butter over a low flame. Serve with steamed and buttered white asparagus, sliced truffles, and pickled yellow beets.

ROASTED VEAL CUTLET WITH OXTAIL PIE Ingredients: 3kg oxtail; 500ml red wine; 1 carrot, 1 onion, 1 celery stick, diced; 1 litre beef stock; 6 sprigs fresh thyme; 1 bay leaf; 3 garlic cloves; 100g mushrooms, sliced; 150g shallots, sliced; 25g grain mustard; 10ml Worchestershire sauce; olive oil; butter; shortcrust pastry; salt & pepper.
Method: Seal the oxtail in a pan before placing aside. In the same pan, pour red wine and strain onto the oxtail. In a clean pan, heat some oil, add the carrot, onion and celery, and cook over a low flame until soft; add the beef stock, thyme, bay leaf and garlic. Bring to the boil and pour over the oxtail. Cover the dish with greaseproof paper and lid, and place in a pre-heated oven at 160°C for three hours. Remove the oxtail pieces and strain the cooking liquid into a clean pot; reduce by half. Heat some oil and sauté the mushrooms before seasoning with salt and pepper. In the same pan, cook the shallots in butter. Mix the picked oxtail, mushrooms, shallots and enough beef stock to bind; add the grain mustard and Worchestershire sauce, and place in a fridge. Roll out the pastry and line the rings; fill with the mixture and cover with a pastry lid. Brush with egg yolk and bake at 180°C. Serve with a roasted veal cutlet, assorted vegetables, and the remaining stock.

THAT’S AMORE TRIO Ingredients for the Crostata di Albicocca: 200g plain flour, sifted; 100g butter, at room temperature; 85g castor sugar; the zest of half an orange; 1 egg yolk; 80g apricot jam; 30g fresh apricots & 20g dried apricots, diced. For the Crema al Pistacchio: 450ml whole milk; 120g castor sugar; 4 egg yolks; 60g plain flour, sifted; 15g pistachio paste; 15g ground pistachios. For the Gelato di Fragoline: 100ml whole milk; 100ml fresh cream; 50g castor sugar; pinch of salt; the juice of half a lemon; 120g fresh, wild strawberries; 20g glucose; 2 egg yolks.
Method: For the crostata, use a K-beater to combine the butter and sugar. Add the egg yolk, and fold in the sifted flour and orange zest. Once the mix has turned into a dough, transfer to a lightly-floured bowl. Cover and let rest in the fridge for one hour. Combine the rest of the ingredients to make the filling. Roll out the pastry, spoon in the filling, and grate the remaining pastry over the top. Bake at 180°C until golden brown. Garnish with whipped fresh cream, apricot gelee and candied orange peel. For the crema, whisk the egg yolks and sugar, add the flour, and whisk again until a smooth paste is formed. Gently bring the milk to a boil, allow to cool slightly, and add to the egg mixture. Place in a clean pan, and bring back slowly to the boil, stirring continuously. Add in the pistachio paste and ground pistachios, pour into a bowl, and cover with greaseproof paper to avoid a skin forming on top. Garnish with flaked isomalt, sliced pistachio and micro greens. For the gelato, cook the strawberries in a pan along with the lemon juice, salt and half the sugar. Once cooked, let cool slightly and process in a blender. In a bowl, combine the yolks with the rest of the sugar. On a medium heat, bring the milk, cream and glucose to a boil. Allow to cool before adding to the egg mixture. Once combined, add the strawberry puree and return to a low heat. Stir continuously. Leave mixture to cool, then churn. Garnish with fresh raspberries, freeze dried crushed strawberries and white chocolate. n
