“Life is simple; just add water.” – Anonymous In the spirit of our glorious summer to come, we’ve added a lot of water to this edition. In our Group feature, we meet sportspeople whose lives have become intrinsically linked to the sea, and they love it. From windsurfing to water polo, the water has become their drive and their passion, and they hate staying on dry land for long. They share their stories on page 19. Those after some water of their own will enjoy reading our pool feature on page 59. In it, three homeowners share the inspiration behind their pool projects and explain how each one has become a beloved part of their home. And you’ll see that even our pretty cuisine pages (pg 75) have been given an aquatic touch, with our scrumptious plates of food floating on crystalclear waters. I can promise you that no special effects were used, and our photographer and chefs were literally knee-deep and splashing around so we could get the shots! It was great fun. Of course, we have stayed out of the water too. Our gorgeous cover star soprano Nicola Said is more at home on stage than anywhere else, and she shares her story of life as an up-and-coming opera star in London, while our fashion shoot this edition is whitewashed against the striking St Elmo renovation, which recently opened to the public. With her beautiful face, effortless elegance and angelic voice, Nicola Said has quickly become one of Malta’s most popular young opera stars. Although based in the UK, Nicola was recently appointed the new ambassador for the Malta Airport Foundation, and she will be showcasing Maltese talent internationally. Here she chats openly to JO CARUANA about her plans for the future, as well as her love for her island home. There are few young Maltese opera singers who have enjoyed as much early success as Nicola Said. Although still in her twenties, she has mastered several noteworthy roles, including as Olympia in Les Contes d’Hoffman and La Fée in Cendrillon, as well as performed at concerts such as the Commonwealth Youth Awards and Gala, and the Joseph Calleja BOV Christmas Concert. In light of this success, Nicola was
recently appointed the ambassador of the new Malta Airport Foundation, which will be highlighting Maltese talent and culture overseas. Nicola will be flying the flag for Malta at her international performances, including as Zerbinetta in Ariadne auf Naxos at West Green House in August, and as Lucia in the Rape of Lucretia early next year. This, in her words, is her story. “I have loved music and singing for as
long as I can remember. I first stepped on stage when I was 16 in Voices and was quickly hooked on the allure of performing in front of a large audience. “I had already been training with celebrated Maltese soprano Gillian Zammit for a while then and started to take it more seriously. She gave me my first opera aria – Despina’s aria in Cosi Fan Tutte – and I really enjoyed it; I found it more challenging than anything I had

done before, but have to admit that I didn’t even really know what opera was at the time! “Soon after that I watched my firstever opera at the Manoel Theatre – Rigoletto, with Gillian singing the role of Gilda. I was so moved! And that was that; quickly opera became a huge part of my life. From there Gillian put me forward for the Malta/Napier Ian Tomlin Scholarship, which I won, and I went off to Edinburgh to read for my undergraduate degree in music at Napier University.
“That was my first major step, followed by more training at the California State University Long Beach where I studied with Shigemi Matumoto, and the Guildhall School of Music and Drama. I also continued to study with Alice Horne and Juliette Bisazza in Malta. “Now, I am in the first year of my Advanced Certificate in Opera Studies at Guildhall, and plan to graduate next year. “So, at this stage in my life, what could possibly be better than being appointed an

ambassador for talent, culture and heritage in Malta? It’s really thrilling to be able to showcase everything that we have to be proud of here and to front the Malta Airport Foundation. “A huge part of the Foundation’s work lies in investing in cultural, environmental and tourist projects, and I certainly believe in the importance of doing exactly that. We have so many beautiful gems here that deserve to be restored to their former glory and brought into the limelight so that we can enjoy them. The Foundation has already started work on the restoration of the 17th century coastal tower, Torri Xutu, in Wied iz-Zurrieq; it is scheduled to be opened to the public in 2017. “I really relate to the Foundation’s work because I feel that, just like there is still so much to be appreciated and given priority to in our heritage, we also need this dedication to our music and theatre. The industry is growing, but there is still so much to be done. Personally, I feel that I myself am also slowly being discovered. “Internationally, I think that Maltese people are generally viewed as hard workers and that is fantastic; I know that quite a few of my singer colleagues are also moving forward in their work. There’s no doubt that Malta’s artistic industry has come a long way and I do hope that other younger, aspiring singers can look towards my peers and I, and see that we are following our dreams. They, of course can do the same – it is possible! Joseph Calleja has definitely raised the profile of opera in Malta and there is a growing appreciation for it. I think that other areas are still slightly lacking in attention, however. “When I think of my own career, I am proud of what I have achieved so far. I consider myself to be passionate, dedicated and hard-working; I believe in being true to my artistic nature, while trying to absorb all the wonderful advice from everyone around me. There are so many people I look up to, both in the opera world and everyday life. Naturally, Joseph Calleja is a huge inspiration, not just because he is Maltese but because he is a wonderful artist who has made a name for himself all over the world. Equally, I look up to my brilliant singing teacher Yvonne Kenny in the UK. She has had an incredible career as an international soprano and is such a beautiful person.

Notebook I am very pleased to be wearing Caroline Hili’s designs today, as I really love her aesthetic. She would definitely be among my favourite designers, Maltese or otherwise. I adore London and it’s definitely my favourite shopping destination. If you know where to look, you will always find something wonderful – the little, vintage stores in Camden are brilliant. As a completely different alternative, I also loved Tianzifang in China – it’s an art district, and it has a mix of traditional and modern art. I loved picking up knick-knacks and accessories there.

“I am also honoured to have had some very special career highlights of my own. Among them I cherish the experience of singing alongside Joseph Calleja at his Christmas Concert in 2014, as well as being chosen to work on a week-long Samling programme with top professionals in the field. “I was also involved in the Commonwealth events earlier this year. I was chosen to be Malta’s flag bearer, and recently sang at their Youth Awards. As flag bearer I came within one foot of Her Majesty the Queen, met Prince Harry and was brushed by Prince William. “My very busy schedule means that I really relish my free time and I like to spend it with those closest to me. I also love finding the right outfit for my stage performances; wearing those gorgeous dresses is definitely one of the most glamorous parts of the
job. That said, getting those dresses to and from the theatre is the sheer opposite – they’re huge, so there’s lots of lugging that goes on between train stations and hotel rooms! London isn’t ideal on these occasions, but it is all worth it for the time spent on stage. Nothing can beat that. “And that’s exactly what I am looking forward to about my future. I hope to be an international opera singer with a life full of love, with a family, and content in the knowledge that I have achieved everything that I set out to. The next step in that journey is for me to audition for various Young Artist Programmes and opera companies around the world. I hope to join a fantastic programme that will help me develop into the best opera singer I can be, while always promoting the country that I am so proud to be from.” £
I’d describe my character as bubbly and outgoing. I’m quite an honest person and have to constantly remind myself to keep certain things to myself. It can be very confusing sometimes, as I’m not sure if I’m an introvert or an extrovert… perhaps I am somewhere in between? My style used to be very girly and I would choose a dress over trousers any day. Now I tend to be more elegant and smart due to the business I’m in. I also need to think about my rehearsals, so my clothes need to be comfortable. One of my most recent trips was to Croatia and it’s definitely become my favourite travel destination. It was calm and sunny, and very enjoyable. One thing people wouldn’t assume about me is that I get nervous on stage. People think I’m very confident, but right before a performance, I start to feel really sick and anxious. Thankfully, the audience doesn’t seem to notice, but those who know me realise that I’m actually quite frenzied and all over the place – just until things get going, of course.

still try to go diving as often as possible. “I’ve now done the dives here countless times, but I’ve never been bored – the feeling of being in the sea is amazing; it’s like submerging yourself into a whole new world. We’re lucky here in Malta, as we have some of the best diving sites in Europe and it is of little wonder that we make it to the top scuba destination lists on a yearly basis. “I guess my love for the sea stems from my father’s influence as he encouraged me into the water. Now I get to pass this love on to other people and, so far, no one’s ever come up from a first dive disappointed – although there was a woman who was afraid of fish but didn’t realise that she’d find fish below the surface!”
For super yacht captain AARON PODESTA the sea is his place of work, as well as the mutual passion that unites his whole family.
KAREN RYAN is a full-time physiotherapist whose love for the sea didn’t just inspire her to become a master scuba diver trainer but also propelled her into a three-anda-half-year underwater adventure.
“I took up diving when I was 17 and was instantly addicted. In fact, five years later I became a diving instructor and, at the age
of 23, travelled around South East Asia, Australia and other locations to explore the seas and work as an instructor. “That lasted for three-and-a-half years, and I will never forget some of the things I saw there: I dived with great white sharks, minke whales, manta rays and turtles – it was the stuff of dreams! “I returned to Malta last year, but the call of the sea is a powerful one, so even though I’m a full-time physiotherapist now, I
“I come from a boating family, so I started sailing at a very young age. Then, one day, my dad bought a sailing boat and we started racing. That’s kept us very close-knit and has also inspired a whole new generation of sailors in our family – my brother Christoph and sister Maya are very accomplished sailors. “Now I’m a super yacht captain and there’s not much sailing involved in my job per se, but I still take part in races and competitions. I wouldn’t have it any other way; the sea has been a part of my life for as long as I can remember. “Obviously, making time for sailing as a hobby is not always easy, particularly because I have to travel a lot due to my job. But whenever the Royal Malta Yacht Club organises an event, I try to free up my weekend to get as much racing done as possible. “Over the years, apart from competing in the Small Nations Games on a laser dinghy, I, along with my family, have regularly come first among the Maltese boats racing at the

“The sea has been a part of my life for as long as I can remember.” Rolex Middle Sea Race, and even came third overall out of the 60 boats taking part. “All in all, I believe Malta provides fantastic sailing conditions that are envied the world-over and it remains one of my favourite sailing destinations.”
Freestyle swimmer NICOLA MUSCAT was five years old when she fell in love with swimming, but little did she know that 14 years later she would be representing Malta at the 2012 Summer Olympics in London.
“I started swimming because my parents wanted my brother Neil and I to take up sports. This was mostly due to a history of scoliosis in the family. In fact, I used to do gymnastics and ballet too,

but I never liked them very much. “I first represented Malta when I was 12 and started off with FISEC, which is an international competition for Catholic schools. I’ve also been to the Small Nations Games for which I qualified when I was 14, the Commonwealth Youth Games, the Short Course World Champions and the 2012 Summer Olympics in London.
“Going to the Olympics was a dream come true, but it didn’t hit me until I was at the Olympic Village. I had been longing to do something like that since I was a child and always knew that that was where I wanted to end up. In fact, I remember watching my own coach on TV at the previous Games... I plan to be at the Olympics again next year. “Currently, though, I’m still at university

reading for a nursing degree. Swimming is a huge part of my life and I train twice a day for two hours – often with my brother, who competes too. Despite reaching high standards there is little money in the sport in Malta; we still have to pay for our own equipment and don’t get paid. Thus, I don’t think that the swimming scene in Malta is professional yet, but it is moving up and is more supported than ever. I’m looking forward to seeing what will happen next!”
For SIMON AZZOPARDI windsurfing isn’t just a sport, but a method for leaving the world behind and focusing on what the waves deal him that day.
“All windsurfers say the same thing: when we see trees sway, we want to be on the water… in fact, the windier it is, the better! Thankfully, I get to be on the water most weeks as the wind here is pretty consistent. “During the week I focus on building and mentoring start-up companies; my weekends, however, are spent at the beach. In the summer months, though, the longer days sometimes enable me to steal a cheeky sunset sail, which is pure bliss. “With windsurfing, the focus is on the details, such as the shape of your sail or the trim of your board. It forces you to think about the now; the moment. There is mentally no room for anything else. “The first time the board lifts onto the plane and you get that thrilling sensation of speed, you’re hooked. So, realistically, it’s more than a hobby, as you have to be completely committed to it. “The other thing that makes windsurfing amazing is the great crowd that comes with it. It’s not easy to find people who understand why you would put on a damp wetsuit in the middle of January and get into the cold sea, but when you do, it’s hard not to go mad over this sport!”

JOHN SOLER has been in the Sliema water polo team, within the first division, since 1997, and, 18 years later, he’s still as in love with the sport as he was when he first took it up.
“I enjoy playing and watching all sports, but at the age of 15 I decided to focus on water polo. My father had played it before me too and, while I don’t remember him taking part, I guess it runs in our blood. “I’ve now been in the first division since 1997 and we’ve won eight National Championships together. I was also on the national team for 17 years, but retired as captain two years ago, and also
played with three international teams abroad while playing with Malta in the summer. “Water polo requires a gruelling schedule. We train six times a week in the pool and three times a week at the gym. It’s not always easy juggling that with family life and a full-time job, but if you really want to do it, you have to find time. “Nowadays, water polo is the second most popular sport in Malta after football and, as a national team, we manage to achieve a lot considering our country’s size and resources. Over the years, the sport has evolved, but, unfortunately, with only one heated pool in Tal-Qroqq there’s only so much we can do. We’re definitely going to need better facilities if we want to improve the sport further in the future.” £

“I started watching baking videos on YouTube and was hooked.”
Jeannette Tabone has harboured an interest in baking for as long as she can remember. Today, she juggles her role as a marketing executive with a love for baking and decorating, and channels her passion into her growing business, Bake My Day. “I remember helping my mother make figolli and other traditional desserts. She’d give me a piece of pastry to make biscuits in different shapes, although I now suspect she did this to keep me busy and out of the way,” says Jeannette, who developed a set of able hands in the kitchen as she grew older. “A few years back I started watching every YouTube video on cake decorating available and I was hooked. I followed this up with a short cake decorating course and loved it.”
Her interest in marketing developed after sitting for her A-level exams – Jeannette says she enrolled in a specialised part-time marketing course and was offered her first job in the field during her studies. “This was six years ago,” she says, “and I’ve been at that job ever since.” Jeannette says doing two things you love in equal measures disciplines you to try be more vigilant with your time and teaches you to be very good at multi-tasking. “I say ‘try’ because I don’t always manage, no matter how many times I say I’ll leave on time or stop early,” she says. “However, after a hectic day at the office, baking, decorating and getting lost in that world relax me. It all enables me to ‘switch off’.” Jeannette says what originally started as
a hobby became more than that, and she now spends the same amount of hours in a week, if not more, baking as she does at the office. “I’m pleasantly surprised at how many people ask and trust me to make cakes or desserts for their special events. I think if the right opportunity came along, I would consider turning it into a full-time career. Having said that, however, I’d definitely miss marketing – my current role, which is reasonably new, is challenging and has enabled me to learn and grow in a very short period. But I’m also enjoying baking with every passing day, so it’s hard for me to choose. How do you choose between two things you love?”

“I can’t imagine doing one and not the other.”
Sarah Micallef’s line of work and hobby are distinct but not dissimilar. Her role as head of content at Content House Group and owner of a personal craft business, The Secret Rose, both allow her to exercise her creative mind in two, different ways. “Ever since I was little, I loved to read and create things. It was out of those two loves that both my career as a writer and my setting up of The Secret Rose came about,” says Sarah, who spent her free time while studying English at the University of Malta making things, sewing and coming up with her own brand of custom hand embroidery. “Both interests grew in parallel and, nowadays, I can’t imagine myself doing
one and not the other.” Five years after kicking off her own business, Sarah says she has learned to manage her time and a constant stream of orders by becoming particularly organised. “I’m now a fan of spreadsheets,” she muses. “I work office hours during the week and work on embroidery at a relaxed pace most evenings while spending time with family, and leaving more focused work like putting items together and product photography for the weekend.” She adds that the setting up of her own studio in the not-so-distant future will doubtlessly help her stay organised and keep her tools and raw materials in order.
Sarah says the biggest challenge for her arises when she’s going through a busy period, such as the run up to Christmas, when she has to put her mind to it after a day at the office no matter how tired she is. On the other hand, however, “it’s great to feel excited about a new project and rush home after work to continue working on it – it gives me energy and keeps things fresh.” While both writing and crafting serve as creative outlets, they enable her to exercise different capabilities and different parts of her brain. “Working on one relaxes the other, and vice versa,” she says. “I’m the kind of person that needs to be doing a lot at any given time. Perhaps one day I’ll dedicate more time to The Secret Rose than I do now, but I’m quite sure I’ll always need to tap away at a keyboard too.”

“After a long day’s work, the challenge for any actor lies in the ability to switch from working to acting mode.” As the managing director of MF Group of Companies, Stefan Farrugia has more than a little on his plate. However, he finds the liberating energy he gets from taking to the stage as an actor is unique, and he is motivated by the thrill of being able to become someone else before an attentive audience. “As a child, discovering I had the ability to attract someone’s attention by the way I spoke made me feel rather significant. At secondary school, all sport enthusiasts would soon learn that my tall, slim and athletic physique was quite deceiving!
Instead, I found my niche in anything related to drama,” says Stefan. In 2001, as a married man and father to his first child, he made the leap into theatre, and, after an intensive 10-day theatrical experience with foreign tutors engaged by Masquerade Theatre Arts School, Stefan was hooked. His first appearance on stage was in the 2002 production of Amadeus at the Manoel Theatre, produced by Masquerade. “I was cast in the un-named role of the butler, with the responsibility of a one-liner; a line which tormented me throughout rehearsals and which I kept repeating naively to myself everywhere I went.” Stefan has had
to balance his love for the stage with work, however, and, as the second generation and managing director in the family business, MF Group of Companies, he is continuously involved in the running of the company. “After a long day’s work, complete with ups and possible downs, the challenge for any actor lies in the ability to switch from working to acting mode. A six to eight week intense rehearsal schedule before opening night requires a good amount of effort, dedication and, above all, discipline.” Stefan says that although it is at times overwhelming, managing time between family, business, rehearsals, and learning lines is surprisingly possible. “The motivation is derived from the thrill of being able to become someone else and the curiosity of discovering the unknown world of your new character, not to mention the kick from performing in front of an audience.” In the event that dates coincide with other important stuff, Stefan says his family always comes first and is an essential part of his life. “The role of being the husband to my wife Joanna and father to my two kids, Julia and Louie, is something I take very seriously,” he says. £

The GARDEN Pool Jewellery expert MARK VASSALLO and his family had been living in their converted farmhouse, on the limits of Burmarrad, for three years before they decided to build their pool. Today, its lagoon-style design brings the family and their friends together.
“We love the effect of the overflow, which is made of glass – it makes the pool area much more seamless. We can see people swimming from the outside dining area located a few metres away – which is great when you have children! “Although we don’t get to use the pool as often as we’d like to, this area feels like an extension of the house thanks to the outdoor furniture and the hammock. It’s so nice to sit out here and have a glass of wine, or entertain friends in the cool, summer breeze.” “There were a few reasons behind our decision to put in a pool. For starters, we knew the children would enjoy it and, secondly, this property is quite big so it makes sense for there to be a pool – even from an investment point of view. “So my wife, Angele, and I got architect Martin Xuereb on board to design it and
he came up with the idea to build it around the natural rock that was already here. I think he did a fantastic job. “The garden was also included in the final design of the pool and its surroundings, and the trees now offer shade to the whole decking area, meaning that we don’t need to have cumbersome
umbrellas in the way. “In fact, the trees and plants surrounding the pool serve two purposes: the first is to offer shelter from the sizzling sun and the wind, and the second is to give the pool a more natural look and feel – almost like having a natural pond rather than a man-made pool.

The FAMILY Pool This house of character in Attard is home to British expats ANNA ROSS and her husband John, who run Malta Yacht Surveys, and their young children Molly, 6, and Bertie, 3. After purchasing the house, Anna and John decided to redesign the pool to make it a really family-friendly space that they can all enjoy together.
“We use it a lot as a family. We entertain friends and have BBQs there during the day, so the dining area is really useful.”
“When we bought this house the pool was smaller and quite deep throughout, so it wasn’t ideal for what we had in mind. The children couldn’t stand up in it so it wasn’t practical at all. We were finally pushed to redesign it when the pool started leaking in 2013, and I’m actually really glad it did! “When we were deciding
on the design, we looked at other pools for inspiration. We quickly decided that we wanted a white pool because it seemed to really showcase the water clarity and looked more natural than a blue one. We also switched to liquid membrane, as it is easier to maintain than tiles. “I researched ideas for family
pools online and was drawn to the ‘beach effect’. This means that we have a very shallow bit, where the children can paddle and the grown-ups can sit with a glass of wine in the evenings. It’s brilliant! The kids feel safe there, and it’s also nice for us to be able to be in the water without actually swimming. “Now we use it all the time and the kids absolutely love it; they’re in it from April till November. We’re quite a non-techie family
so we avoid computer and TV time. Instead the children play outdoors, swimming or climbing their fort. “We also use it a lot as a family. We entertain friends and have BBQs there during the day, so the dining area is really useful. I opted for a Moroccan theme because I think Malta lends itself to that style really well, and the house seems to suit it too. “We recently added two awnings, which stretch out over the pool. This means we can use it during the day without the worry of getting sunburnt.”

The Rooftop Pool As the project manager and co-director of turnkey and design company Nine Yards, PAUL HYZLER regularly works to quirky property projects. This inspired him to add an unusual rooftop pool to his own property in Lija, which he shares with his partner Janis.
“Although this isn’t a particularly large house, I am very happy with the way the space has been utilised. The pool is another useful and interesting space within it. “The fact that the pool is small makes it easier to take care of, but we still get a lot of use out of it. It has also added value to the property, which will be useful in the long run.
“My idea was to use the width of the house’s façade for the pool area. That left me with plenty of other space on the length of the house for our sunbeds, dining table and BBQ area. The glass railings and open views mean it doesn’t feel caged in at all. “Structurally there were a few challenges to consider when we designed it. The base needed

to be reinforced to ensure the building could withstand the weight. As a result, we demolished that section of the house and rebuilt it with the pool in mind. “Roof pools are definitely becoming more popular and
more affordable. After all, they make great use of all the roof space that Maltese homes tend to have. “Now that the project is complete we’re looking forward to enjoying our front-row seat at the Lija fireworks display!” £

Summer in Capri Bright, fresh hues are one of the intrinsic elements of our Mediterranean summer. Inspired by that, Loft’s designer Josette Schembri Vella chose ‘summer in Capri’ as her favourite trend of the season. “It’s all about evoking the colours of the sea, images of seaside villages, raw and natural materials, and the greens of the citrus trees,” she explains.

The woven bamboo tea jar on the left of this picture harks back to the woven traps made by fishermen in Capri, as well as the cane outdoor furniture that lined the terrace cafés and bars. So, when using antiques in contemporary spaces (whether that is furniture or art) it is important to select the right piece for its design, dimension, patina and functionality. Crudo with Bitter Salad & Citrus Ingredients: 4 prawns, peeled and deveined; 180g tuna; 140g grouper; 1 pink grapefruit, half juiced and half segmented; 1 lime, segmented; 25ml olive oil; 5 cherry tomatoes; 1 pomegranate; 1 cucumber, blanched; assorted bitter leaves and herbs, for decoration. Method: Arrange the raw fish and prawns on the plate and lightly brush them with the grapefruit juice and olive oil before seasoning with salt and pepper. Dress the plate with the bitter leaves and herbs, the grapefruit and lime segments, the pomegranate, the cherry tomatoes and the cucumber.
Fritto Misto Ingredients: A selection of fish, calamari and prawns; 100g fine semolina; 120g plain flour; 60g corn flour; 1 lemon; vegetable oil; basil; cress; 1 grilled red pepper. Method: Pat the fish dry and season with salt and pepper, dust with a mix of flour, semolina and corn flour, and deep fry until crisp. Drain on absorbent paper and serve with lemon wedges. Decorate with the basil leaves, roasted pepper and mixed cress.

Spice-Marinated Striploin Ingredients: ½ tsp chilli paste; 2 350gr striploin steaks; salt and pepper; 4 tbsp olive oil; 1 garlic clove, peeled and crushed; ¼ tsp chilli flakes; ¼ tsp paprika; 1 tbsp beldi lemons in pickling liquid, chopped; 2 tbsp chopped parsley. Method: Mix the chilli paste, half the olive oil, salt and pepper, chilli flakes and paprika, and rub the mixture into the steaks. Leave to marinate in the fridge overnight. In a pan, heat the remaining olive oil and fry the garlic and the lemons, remove from the heat and moisten with the pickling liquid. Heat a ribbed griddle pan (or BBQ) and, when very hot, add the steaks and cook for a minute on each side. Transfer to a baking tray and cook for eight minutes in an oven set at 195°C. Remove from the oven and allow to rest for 10 minutes. Carve, sprinkle with the chopped parsley and add another drizzle of olive oil. Serve with the garlic and beldi lemon.
New Potato & Radish Salad Ingredients: 200g new potatoes; 75g radishes; a pinch of saffron; 25ml olive oil; 100g samphire (sea asparagus, optional), blanched; the juice of half a lemon; salt and pepper; fresh mixed herbs. Method: Boil the potatoes and, when cooked, cut them into quarters. In a pan infuse the saffron with half the olive oil. In a separate pan, add the rest of the olive oil, sauté the radishes, add the potatoes and the samphire, season with the salt and pepper. Remove from heat and add the lemon juice and saffron oil. Dress the plate and sprinkle with the mixed herbs.

Peaches & Cream Ingredients: a 200g sponge sheet; 2 fresh peaches, halved and poached in sugar and water; 400g ricotta; 180g honey; 10g bee pollen; 24 amaretto biscuits; 4 tbsp amaretto syrup. Method: In a bowl, mix the ricotta and honey. Place a sponge disc at the bottom of a glass, drizzle it with amaretto syrup and layer it with the ricottahoney mix, biscuits and the poached peaches until the glass is three-quarters full. Decorate with peach wedges and, before serving, dust with bee pollen.
