A
chieving the impossible’ is something that comes to mind when I meet Joseph Calleja for our interview. Here is a Maltese tenor who has smashed through any glass ceiling that might have been assumed for his ambitions, and placed himself firmly at the top of the game – performing at the Metropolitan Opera in New York this month and releasing yet another album. Through it, he remains resolutely grounded – focused on raising his children and relishing the best, simple things about life in Malta. I thoroughly enjoyed chatting to him, and hope you too will enjoy going through the keyhole of his Mellieha home for our cover shoot, on page 12.

As his international career continues to go from strength to strength, tenor Joseph Calleja invites Style on Sunday into his stunning Mellieha home to talk about his family, his passions and his plans for the future. I
t’s seven years since Joseph Calleja last graced the cover of Style. Plenty has changed since then – not least his two children, Clara and Xandru, who were just small children when they had posed for us. Today, this confident, beautiful family continues to share so many things together, including a love for music, animals (their two dogs are central features), and the stunning Mellieha villa they call home. “Clara is 13 and Xandru is 11 now,” says Joseph, “and they’re both very grounded kids – I admit that I sometimes think I am too hard on them, but I want them to be the best they can be. I am certainly not interested in measuring them against anyone else but I know their potential and want to guide them towards fulfilling it. They’ve got very different personalities, but they share goodness, empathy and a sense of charity. So far there are certainly no plans for them
to follow in my footsteps, although they are both very musical. I’d rather they chose their own paths because being an opera singer is very demanding and a full-time vocation.” Speaking about how they spend their time together, Joseph says his family loves to entertain and have friends over. “But we have pretty simple tastes – I enjoy wine with friends, while the kids and I love going to the beach, travelling and taking the dogs for long walks. We’re a very regular family,” he says with a smile. Their home, though, is something very special – with sprawling views, a lovely garden and even a room dedicated to one of Joseph’s key passions: wine. “I had help from designer Andrew Alexander and architect Joe Cassar, both of whom brought my ideas for this house to life while I was travelling. Building anything nowadays can have its challenges, but all’s well that ends well!

“It’s been a long time coming, but I knew exactly what I wanted – a place where, first and foremost, I could raise Clara and Xandru in comfortable surroundings. It needed to be a home that would give them space to be themselves, whether they want to study, play or relax. I want to give them the best, just like any parent. “As for me, this house is where I recharge my batteries. While there are some incredible benefits to life as an opera singer, it is very stressful because
you are constantly on the spot. It’s like taking penalties in a World Cup final – you have to ace it every night!” That said, Joseph has certainly proved himself in the opera world and his career continues to go from strength to strength. This winter will see the release of his seventh album with Decca records, while he’s also evolving to sing a more mature repertoire that reflects his changing voice. “I hope to keep working at the same high level, at some of the best theatres
in the world,” Joseph continues. This October he is proud to be opening the season at the Metropolitan Opera in New York – a first for any Maltese artist in history – with Norma, which will also be broadcast around the world in live cinema HD transmissions. “Norma isn’t one of my favourite operas and Pollione isn’t one of my favourite roles, but it does have some wonderful music and I am looking forward to working with some of the best singers in the business.

I am actually more likely to focus on what went wrong instead of right, and I often go home livid at myself for making a mistake – however small! I like to strive for perfection.” On the plus side, however, Joseph has had the pleasure of meeting some truly incredible people – from world leaders like Barack Obama to royalty like Queen
Elizabeth II and Prince Charles. “It’s an exciting career,” he smiles, “but it does have its downsides, especially as travelling and hotel rooms can be so lonely. Thankfully, my girlfriend Emma travels with me most of the time, as she is my ‘right hand’ and a lawyer by profession, so she helps out in many aspects of my work.”

And there’s the charitable side of Joseph’s work too. The Joseph Calleja Foundation has grown year-on-year, and is now helping more than 35 individuals and young artists in Malta, from actors to dancers and pianists. “Our other remit is to help children in need, and we will shortly announce a project that will help 1,000 Maltese children who desperately need it,” he says. “Beyond that, we also help through the Calleja Drake Trust, which helps any artist residing and studying in the UK. It is associated with the best musical colleges and institutions in the UK, and we sponsor students that have incredible talent but need a financial push. Many of these students will end up becoming tomorrow’s stars in the classical music world.” Now, Joseph’s focus is very much on the next stage of his career – from the premiere of Norma to the release of his new album. “The next five years are booked and sorted, and I will be travelling to every corner of the globe including Asia, North America, Canada and Europe. This difficult vocational career is pretty much like being on a roller-coaster, with moments of excitement but also ones of extreme loneliness. This is where the love for my family keeps me going.” n

Now, having reached the 50,000-followers milestone, she is working on doubling it. “Instagram is invaluable for exposure and opportunities, both of which are important to help build my brand. It’s also easy to use, and it allows me to keep in touch with friends and followers throughout the day – in fact, I constantly update my Instagram Story. “My advice to anyone going down this route, particularly the young people reading this, is not to compare, compete or criticise yourself based on an image you see online: good angles, lighting and editing can make anyone and any picture look perfect… Learning and understanding that was one of my most liberating lessons so far!”

MADELEINE BALDACCHINO (@madeleinebaldacchino) is a Supernova model and a BSc Biology student at the University of Malta, who has been Instagramming since the app first launched. Her big break came in 2016, when a wellknown redhead shout-out page reposted her photo. “I feel a special kind of freedom when posting on Instagram… I don’t feel judged or criticised in any way, and this has helped me move forward and accept myself for who I am… It also feels great when I get more followers, and just a few weeks ago, while I was in Greece, the photo I put up at the beach went viral, resulting in loads of new followers which helped me reach 40k organic followers. “My advice for taking the perfect Instaphotos is to take them at around sunset and to include lots of blues and greens – at least that’s what worked for me! Also, I highly recommend using up to 30 hashtags underneath your photo, and tagging the appropriate accounts (for example, tagging the brand of the t-shirt you are wearing).”

Blogger ROMEA ADLER (@romeaadler) got Instagram in 2011 to be able to edit photos before posting them on Facebook. Since then, she has become a multinational Instagram sensation with over 39k followers. “I’m a perfectionist, but it’s impossible to keep everything perfect all the time. Instagram, however, is a place where you can have total control over things and create a little perfect world of your own. It’s a platform that also comes with numerous tools – including stories, live videos, messenger and, of course, the famous Feed – that help you keep in touch with followers. “My Instagram journey has had some incredibly happy moments and I am truly grateful for all of them – big or small. If I had to choose one, however, it would have to be when I was living in Dubai and I got to work with fashion brand, sauce. Nevertheless, looking back, my advice to anyone hoping to become a professional Instagrammer would be: be yourself, stay active and plan your content ahead.”

Her journey has been meticulously journaled on Instagram, where she currently has more than 22k followers. “Instagram is more than just a platform for me: it’s a community of people who have a passion for style, fashion and creativity; it’s where I get my daily style inspiration from and where I can share my life and adventures in my own voice. That said, my Instagram persona has evolved a lot over the years and I curate my profile meticulously. “My proudest Instagram moment so far has to be when I was hand-picked by Elisabetta Franchi herself (off Instagram!) to close her fashion show in Valletta. As for tips: natural lighting is your best friend, graffiti walls are a bonus, and stay true to who you are… Always.”

Although law student and personal trainer MONIQUE FARRUGIA (@moniquefarrugia) has only been Instagramming properly since June of this year, she has already reached a following of over 15,000. “My favourite thing about Instagram is that it’s visual, making it a great way of sharing your life through a series of photos and videos. It’s also a good platform to keep up with followers because it’s informal and yet personal. It allows you to share parts of your life with your followers, allowing them to get to know you on a more individual level. “When taking an Instagram photo, make sure you stand somewhere that’s well-lit – I never use Instagram filters, I just adjust the lighting and sharpen the image to allow the details to stand out. Also, while you should post regularly, make sure the content is quality-based.”

Juggling her full-time job as a financial controller and her successful career as a singer, CHRISTABELLE BORG (@christabelleofficial) finds Instagram the perfect platform to keep in touch with fans. In fact, by sharing pictures of her adventures on and off stage, she has become one of Malta’s most influential Instagrammers. “Whether it’s my outfits, food or beautiful locations, I get my daily inspiration from Instagram. In fact, I simply love how it connects people through photos, how it unleashes people’s creativity, and how it allows them to share it with others freely… It’s also thanks to Instagram that I became the Malta ambassador for one of the world’s most prestigious jewellery brands. “My advice to anyone using Instagram is to be yourself in your pictures. Everyone is unique and, yes, whether you’re a blonde or a brunette, a size six or a size 20, you are beautiful. Also, post often and visit swanky locations where you can take amazing pictures.”

MARIECLAIRE PORTELLI (@mcportelli) has been on Instagram since 2012, but it was only in October 2016 that she took it on as a business venture. Today, she is a full-time social media influencer with a number of contracts with various brands and companies. “Instagram makes it much easier to go international than most other platforms – both in terms of getting a following and also when it comes to finding other Instagrammers to follow and get inspiration from… Having said that, it’s only when you reach that point when Instagram stops showing you the exact number of followers
and you actually need another app or your insights to show you the exact number, that it hits you and you start to realise that people really like your content. My ethos for my Instagram photos is threefold: keep them simple and clean, stick to one theme (such as a colour scheme), and follow Instagrammers that have similar likings to yourself, as there might be a better chance for them to follow you back.”

Nissan ups the game with the new

N
issan is this year celebrating the 10th anniversary of the launch of the Qashqai. You might be forgiven for taking SUVs for granted in an era when having an SUV is becoming as fashionable as sporting a Louis Vuitton bag or wearing a Ralph Lauren polo shirt. But it was Nissan that changed the notion of SUVs on many fronts – first and foremost it succeeded in making SUVs far more reachable and affordable to a much wider audience. Nissan managed this to an extent that thousands of drivers who were in need of replacing their hatchback or station wagon had the opportunity to consider buying an SUV that was within their budget and satisfied their pragmatic needs. Secondly, traditionally, SUVs were associated with large 4x4s, but the Qashqai also managed to challenge that notion; it’s ok to buy an SUV which is not a four-wheel drive, especially if you live in a city (or in a country like Malta), where you will hardly get to savour the benefits linked with a 4x4 vehicle. Whoever invented the Qashqai as a replacement of the unpopular and characterless Almera was simply spot on – Nissan gauged perfectly well what drivers wanted and desired. And here we are, 10 years later, test-driving the
Qashqai 2017 facelift model and marking the launch of the first iconic Qashqai. For test-driving purposes, we were given a fully-specced Qashqai Tekna + 1.6dCi Diesel and, we must say, we were truly impressed. Clearly, Nissan is subtly using every opportunity – either through a new generation of Qashqai or through a facelift – to raise the standard on various fronts. Nissan has, in fact, managed to improve Qashqai considerably and take the game to a new level. Externally, it’s sleeker, particularly as a result of the subtle changes around the front and rear lights, as well as of the modifications to the bumpers, while the new shark firm antenna and the 19 inch rims add to the bold look of the new Qashqai.
But the rather more substantial changes – and where the real investment by Nissan lies – were made to the interior of the Qashqai and it is here that we believe that the Qashqai has – through this intervention – gained an edge over its increasing number of SUV competitors. With a starting price of €23,000, Nissan is clearly leading the pack in the mainstream compact SUV segment, and the cabin of the refreshed Qashqai has certainly edged ahead of competition and has got a hint of SUVs normally associated with premium badges. The quality of the materials used for the interior certainly appears superior, the latticework feel of the new leather seats has made a great impact on the cabin and the sophisticated-yet-sporty leather steering gives the driver a good vibe and the feeling of sitting in a premium cabin. Back to the seats, another premiumfeel addition is the multiple tier of lumbar support that does make a big difference, especially to the driving position. The driving experience of the 2017 Qashqai is smooth and elegant, and it is clear that Nissan has done a remarkable job at ensuring that the driving experience of the Qashqai is as relaxing and comfortable as it can possibly be. Nissan has also been conducting research

on a number of significant technological features for its growing fleet and it is worth noting that Nissan has in fact enhanced or in some cases introduced some technological features that continue to add value and a premium feel to the Qashqai. Just to mention a few, a feature included in this generation of Qashqai is the Rear Cross Traffic Alert, which gives visual and audible warnings when a driver is attempting to reverse and detects an approaching vehicle. The Three Palaces Festival The Three Palaces Festival is a week-long cultural celebration, with performances in historically important and magnificent buildings.
Taking place from 3rd to 12th November, the fifth edition of this festival will once again feature artists of exceptional talent from around the world. These renowned artists will perform within three of Malta’s historical Baroque palaces – San Anton Palace, Verdala Palace and the Grandmaster’s Palace – together with the National Museum of Archaeology in Valletta. Built during the time of the Knights of St John, these magnificent buildings have hosted many dignitaries and have played host to important functions across the centuries. Today, they will continue to play another important role – that of bringing people together to experience music of excellent quality as a community. experience begging to be tried
Sarah Micallef heads over to the capital for an evening of fine dining al fresco at the newly-restored Phoenix Restaurant within the renowned Hotel Phoenicia. Several courses later and with no room left for another bite, she shares her experience.
T
he evening I was set to dine at the Phoenix Restaurant in Valletta, situated within the luxurious fivestar Hotel Phoenicia, turned out to be a beautiful one. It was one of those rare late summer evenings between bouts of stormy weather, in which the breeze was so slight you’d barely notice it, and the temperature just right for dining under the stars. The interior of the newly-restored Phoenix is as impressive as you’d expect. Reminiscent of the grand cafés of Europe, the beautiful restaurant has not only been given a new lease on life, but, having retained a number of its magnificent original features, has risen back to its former glory – a feat that’s worthy of its name. The veranda, however, (the main reason I was hoping for the weather to co-operate), is the pièce de résistance. Featuring a spectacular panoramic view of the scenic Marsamxett harbour and illuminated Valletta bastions beyond, it makes for a stylish backdrop for an unforgettable dining experience.
The elegant ambience finds a perfect match in the attentive and friendly service here, and my dining companion and I were instantly made to feel welcome upon our arrival. Making our way to our table at the edge of the terrace, we started with a celebratory glass of prosecco to mark the start of what would evidently be a lovely evening. Executive Chef Daniel Debattista has crafted an exceptional menu drawing on French, Maltese and Mediterranean culinary techniques, and while the options are as select as you’d expect within a fine dining setting, the choice is still a tough one to make. After much deliberation, my partner and I settled on a platter of Gillardeau oysters to begin, followed by risotto Milanese for me and pork cheek croquant for him. Despite a very tempting seabass fish du jour which nearly had our vote for mains, we opted for classic steak fritte and lamb rump, with the excuse of trying as many different menu options as possible. As we sat back and took in the peaceful
setting, we were served an amuse-bouche of mini arancini filled with moreish tomato, ham and cheese to whet the appetite before commencing our meal – a fine indication of things to come. The oysters were up next, and they didn’t disappoint. Served with Hendricks gin and cucumber atop a platter of crushed ice and lemon, they were truly exquisite, and transported our minds instantly to the sea. We enjoyed them with a glass of champagne – our knowledgeable server’s recommendation – and couldn’t have been happier. The starters followed a little while later, and we were pleased with our choice, making for a pair of entirely different plates in both presentation and taste. Mine, the carnaroli risotto Milanese with parmesan and Iranian saffron was incredibly flavourful, and paired spectacularly well with the suggested fruity Melqart wine – a local variety I had the pleasure of trying for the first time. The pig’s cheek croquant on the other side of the table received an equally

warm reception. Paired with a full-bodied Merlot, it was declared incredibly tender with a superb balance of flavour. The stage was thus set for mains, and what a treat they were! My choice of steak fritte with shallot butter was tender and a true feast for the senses, and went nicely with our selection of side dishes, my favourite being a delicious courgette fritte. As I sipped happily away at the paired wine – a light Syrah – my partner professed his love for his chosen main, lamb rump served with piperade, anchovies and kalamata olives. It didn’t hurt of course that his own wine pairing was a much-loved Sasseo Primitivo. At this point in the evening we considered ending it there. Suitably full and equally satisfied, the evening was already a success. Still, as anyone that’s ever dined with me will tell you, I do like to end things on a sweet note, so a sneaky peek at the dessert menu was enough to seal our fate. Tempted by a few different options, I let our server decide for me, and went for the ‘very popular’ vanilla soufflé with summer berries, while my partner opted for a poached meringue with rose and raspberry. When they arrived, they were both showstoppers. Mine, admittedly a generous portion which I struggled to finish, had that pleasing rise
and soft pillowy texture which the French classic is celebrated for, and was a wicked delight to end the evening. Over on the other side of the table, the meringue was served enshrined in an artful caramel nest, and was declared as delicious as it was pretty. As we swallowed the last dregs of dessert, the satisfaction of an evening well-enjoyed was marred only slightly by the realisation that it was at an end – well, until next time that is. Our verdict? The Phoenix Restaurant makes for an experience, not just a meal, which is begging to be tried. A delightful option within the Valletta icon that is the Hotel Phoenicia, but without any correlation with the hotel restaurants we have come to know. Rather, an option on a par with some of the very best eateries the capital has to offer, and a definitive destination in its own right. n

The BOV Joseph Calleja Foundation The BOV Joseph Calleja Foundation was set up in 2013 by the Maltese tenor Joseph Calleja and the Maltese bank, Bank of Valletta p.l.c.
T
he Foundation supports talented young people and helps them to realise their full potential in the field of performing arts. It also helps underprivileged children whose situations are not catered for by existing social support programmes. Joseph Calleja, who this summer celebrated 20 years since his debut at the Astra Theatre in Gozo in 1997, has made a name for himself and for Malta, performing on world-leading opera stages including New York’s Metropolitan Opera and London’s Opera House. One of his long-cherished dreams was the set-up of the BOV Joseph Calleja Foundation. As he himself says, the Foundation seeks to give a ‘much-needed push’ to underprivileged children and children with innovative, distinctive and unique artistic or musical talents, who are, in any way, unable to develop those talents. Calleja said that he had been fortunate to find people who gave him a push in the right direction during his career. Through the Foundation, Calleja and Bank of Valletta seek to be there for others. Pursuing a career in the world of performing arts is no easy feat. It demands sacrifice and endless training, and is a financial burden. In most instances, the student needs to pack up and move overseas. This is where the Foundation comes in. The main fundraising event of the Foundation is the annual concert, the fifth edition of which will be held on Friday 27 October this year. Calleja himself is the protagonist of this concert, and the proceeds are entirely applied in the implementation of the Foundation’s Gifted Youth and Vulnerable Child Programmes. These concerts are also a unique opportunity to showcase the talents of some of the scholars the Foundation has taken under its wing. Here we introduce some of the 22 scholars who are currently being supported by the Foundation.
Laetitia Amodio is a 16-year old pianist. She started studying at the age of five under the tutorship of her mother. Laetitia is a prize winner in 11 international piano competitions and has performed in several prestigious halls overseas, including the Royal Albert Hall in the UK and Severance Hall in Cleveland, USA. She is currently studying at the Wells Cathedral Music College, one of only four specialist music schools in England.

Laetitia Amodio Twenty-five year old Marvic Monreal and her mezzosoprano voice have had a remarkable year. She graduated with distinction in MA (dipRAM) from the Royal Academy of Music. Marvic landed an important role making her debut in I Due Foscari opposite Mro Placido Domingo and Joseph Calleja himself. Meanwhile she is in her second year of the Royal Academy Opera Course.

Based in London, Euchar Gravina is a composer and artistic director, and his music is now performed internationally. Euchar is currently showing interest in the relationships between the fields of architecture and music, and their broader interdisciplinarity. Alongside intricate and research-driven works, Euchar’s compositional output includes functional and liturgical pieces for choirs and instrumentalists. He is currently under commission through Teatru Manoel, composing pieces for the Malta Philharmonic Orchestra and Valletta 2018. Following his stay as organist with Coro Bel Canto, Euchar studied music at the University of Malta and is currently completing a Masters degree in Music Composition at the Royal Academy of Music (London). Soprano Marvic Baldacchino is a versatile performer with great potential. With the Foundation’s support, she is continuing her studies at Edinburgh Napier University. She is currently reading for a BMUS (Hons.) degree at the University of Malta.
Born in 1989, Glen Zammit started playing the horn at the age of 10 at the Johann Strauss School of Music. Glen was principal horn of the Malta Youth Orchestra and BISYOC Youth Orchestra, UK, and also reserve horn with the European Union Youth Orchestra for three seasons. He also plays regularly with the Malta Philharmonic Orchestra. The BOV Joseph Calleja Foundation is supporting Glen during his two-year postgraduate diploma in horn performance at the Royal Conservatoire of Scotland. Charles Buttigieg is an 18-year-old with a baritone voice. He started singing at a very early age and joined the Chorus Urbanus
Glen Zammit under Mro John Galea in 2011. Charles has been studying voice since then, with Juliette Bisazza. Charles has already sung as soloist in various concerts, and twice for the President of Malta. He has also performed in the BOV Joseph Calleja Foundation concert twice. n

Unfortunately I don’t have much time to cook at home but, when I do, I like to make something light and seasonal like this fish dish – panfried dorado (lampuki)
Victor Borg VICTOR BORG is the well-known chef behind the popular Adesso restaurant in Valletta. Here he welcomes us into his modern St Paul’s Bay kitchen to whip up a fresh lampuki dish.
We cook on gas burners at Adesso, but induction hobs are becoming more popular across the industry. They distribute heat evenly and are more eco-friendly, which is something today’s chefs need to consider.
The perfect home kitchen has to be comfortable, and you have to make it yours. The set-up is very important, with lots of workspace, and close proximity between the oven, burners and fridge. I love this kitchen because it’s compact, bright and has beautiful open views of the sea.
A griddle pan is the most important accessory in my home kitchen – I cook eggs on it daily for breakfast. I like the fact that it adds a bit of smokiness to the taste. I have hundreds of cookbooks but these are my favourite, and I revisit them regularly. I guess my absolute favourite would have to be Gordon Ramsay’s, as I have a personal history with him. I worked for him in Chelsea for six months around 23 years ago, and l look back on it as a very defining career experience.
with black olive tapenade, grilled baby gem lettuce with chevre (goat’s) cheese, and grilled oyster mushrooms with black quinoa. To make it, dust the fish fillets with some flour and pan-fry them skin-side down, seasoned with salt, pepper and lemon juice. Grill the oyster mushrooms and baby gem lettuce, and place some chevre cheese in the folds of the lettuce. Boil the quinoa, then add a bit of butter, some soft herbs, soya sauce and parmesan. Make a classic beurre noisette of burnt butter, lemon juice, parsley and caper berries. Finally, top the fish with an olive tapenade made from a blend of garlic, extra virgin olive oil, black olives, capers and anchovies.

Stefan Hogan STEFAN HOGAN is the executive chef at the Corinthia Palace Hotel & Spa. Here, he takes us inside the kitchen at his Ibragg home and cooks one of his signature dishes: a deliciously rich beef bourguignon. I’ve always had a passion for cooking and, while I wouldn’t say that anyone in particular inspired me to cook, it does run in my family. My grandmother, who owned Jessie’s Bar, was an avid cook and she cooked for countless British servicemen in the 50s and 60s.
These two statues were gifted to me by David Woodward, the Corinthia Palace general manager, who I’ve worked with – on and off – for almost 20 years... They were souvenirs from Prague and Budapest (although I can’t remember which is which!). I like substituting pepper with chilli as I find that it lifts the taste of food, particularly in Mediterranean dishes. It also goes with a multitude of sweet and
savoury ingredients, and it’s great for infusing into drinks, including vodka.
My favourite cookery books include The Ivy by AA Gills, which is about the iconic London restaurant of the 80s and 90s; Le Gavroche Cookbook by Michel Roux Jr, who is the second generation at the Mayfair restaurant; and Blanc Vite by Raymond Blanc at the iconic Belmond Le Manoir aux Quat’Saisons in Oxford, which I visited recently for a traineeship.
beef bourguignon To make a beef bourguignon, start by sweating a mirepoix (diced carrots, celery, onions and leeks) in oil and butter. In a separate pan, brown the cubes of beef in very hot oil. Add the drained beef to the vegetables, deglaze the beef pan with good red wine, and add it to the beef. Throw in fresh thyme, beef jus or stock, cover it and stick it in the oven for a couple of hours. In some classic recipes mushrooms and pancetta go straight into the dish at the beginning but, by adding them at the end, you retain their texture and flavour. Here I served it with new potatoes, and glazed carrots and courgettes.

Ryan Gialanze I love this kitchen because it’s full of memories, and many wonderful meals have been cooked here over the years. It’s been a very busy kitchen! I enjoy looking through recipe books and am especially inspired by Marco Pierre White – I admire his dedication to discipline and drive for perfection. That’s exactly what I strive for in my own kitchen, whether I am cooking at home or at LVB.
RYAN GIALANZE is the head chef of one of the most talked-about restaurants of the moment, LVB in Valletta. He invites us into the family kitchen in Zabbar where he learnt to cook as a child. My mum Pauline says I was always interested in cooking and even got involved when I could barely walk. I have a curious spirit, which encourages my love for experimentation. Pastry is one of my favourite elements, as I find it more challenging to master and requires precision.
One of my favourite accessories is this retro mixer, which we have had for years. It’s one of the best tools for perfecting the texture of sauces and soups, and essential for any home chef.

Vegetarian food is something we give importance to at LVB in the form of a dedicated tasting menu – which is why I’ve chosen a vegetarian dish today. To make these gnocchi in a butternut squash sauce, I started by whole-roasting a butternut squash in a hot oven for two hours. Meanwhile, I made the choux paste for the gnocchi by blending flour, water and butter over a pan. Once the dough was cool, I added eggs and porcini powder for flavour, and then piped the mixture into boiling water – they’re done once they float to the top. To make the sauce, I sweated shallots and garlic in some butter, and added the roasted butternut squash, as well as tomatoes, a bay leaf and fresh oregano, and then puréed the mixture. Finally, I topped the gnocchi and sauce with some lightlyfried ‘chicken of the woods mushroom’ – a very rare mushroom that we foraged locally, and which is only in season for one week of the year.

PUMPKIN & SHALLOT TERRINE WITH SHALLOT CONFIT
Ingredients: Pumpkin; 8 shallots; rosemary leaves, finely chopped; salt and pepper; 20g butter; 8g brown sugar. Method: Peel the pumpkin and cut into blocks before slicing on a mandolin to get even slices. In a mould measuring approximately the same as the pumpkin block, place seven layers of pumpkin seasoned with salt, pepper and rosemary. Wrap the mould tightly in foil and cook in a low oven for 10 minutes. Remove from oven and place a weight on top. Allow to cool and then refrigerate overnight to set. For the shallot confit, slice eight shallots and, in a non-stick pan, melt the butter. Cook with a pinch of salt and brown sugar over a low flame until caramelised. Drain off excess butter. Plate the elements together, and serve. In the picture, the chefs also prepared a Marmite and cashew purĂŠe, and a beluga lentil and wild rice granola.

ROASTED SQUAB PIGEON
Ingredients: 4 squab pigeons, on the bone; thyme; rosemary; 2 garlic cloves, halved; 60g butter; 45ml vegetable oil; salt and pepper. Method: Season the cavity of the pigeons before placing in a sprig of thyme, the rosemary, and half a garlic clove. In a hot pan, heat the oil until smoking and sear the pigeons. Add the butter and allow to foam, baste the pigeons and place in an oven pre-heated to 210°C for seven-to-eight minutes. Remove from oven, cover with foil and allow to rest for 10 minutes. When ready to serve, remove the legs and carve the breast off the bone. In the picture, the chefs also prepared butternut squash and beetroot gnocchi, as well as salt-baked beets and thyme-roasted baby heritage carrots with pigeon granola and beetroot ketchup.

FROZEN PUMPKIN SOUFFLÉ
Ingredients: 1 egg, separated; 25g granulated sugar; 45ml dark corn syrup; 45g pumpkin purée; 2g cinnamon; pinch of clove; pinch of nutmeg; 45ml cream; 45ml crème fraîche. Method: In an electric mixer, combine the egg yolk with half the granulated sugar and whisk until pale and fluffy. In a separate mixing bowl, combine the corn syrup, pumpkin purée and spices; mix until smooth, then fold in the whipped egg yolk mixture. In another bowl, whisk the egg white until it can hold stiff peaks, add the remaining granulated sugar and whisk for a further minute. Remove from the machine and fold into the pumpkin mix. Combine the cream and crème fraîche, and whip till the mixture can hold stiff peaks, fold into the mixture and place into individual moulds. Freeze overnight. In the picture, the chefs also prepared beetroot sorbet and a carrot cake.
