Which is why, one afternoon in August, I found myself hosting a festive ‘do’ for my family, my co-founder Dale and some of the lovely people who work at COOK. We took loads of photos, some of which feature inside. No staged photo shoots for us. We’re the real thing: proper party with proper clearing up and proper headaches the next day. So I can say with absolute confidence that we’ve cooked some truly remarkable seasonal food - so you’ve got more time to enjoy yourself. We’ve also become the first national partner of One Feeds Two©. It’s a beautifully simple idea: each time you buy a portion of food, you also provide a meal for a child living in poverty. The meal happens at school, which makes it as much about education as it is about hunger. Most of our seasonal starters and main courses will be One Feeds Two. By the New Year it should mean that together we’ve provided more than 150,000 school meals in Malawi. It won’t change the world but it’s a beginning. And we hope plenty more food companies join us in backing One Feeds Two.

One afternoon in August, we dusted off our festive glad rags and descended on our founder Edward’s house for a very unseasonal Christmas party. Here’s what we learned about holding a festive shindig: All parties must twinkle. Be it fairy lights, tea lights or candles, twinkling is absolutely essential. Our new Mini Mac Cheese Canapés are amazing – a mouthful of cheesy, creamy bliss to soak up the booze. Why sip when you can lick? Our Ice Kitchen cocktailson-a-stick are not to be missed: Irish Bourbon Cream; Peach Bellini; Cosmopolitan and Mojito. A good cocktail sausage is hard to find… but find them we have – little UK porkers with a pinch of paprika to give them a lovely smoky flavour.
A warm, soft, savoury mini-muffin, straight from the oven, is to die for. Wow your guests with Goat’s Cheese & Caramelised Onion or Fig & Stilton. As a vessel for imbibing there is much to recommend the humble jam jar. A bit of Prohibition-era chic crossed with Worzel Gummidge. Little Quiche Lorraines mean a mouthful of loveliness. Our favourite quiche is now in a filo basket just for the festive season. Banishing the kids to bed is a bit bah humbug*. Yes, you’ll need to watch out for them mine-sweeping the cocktails but they’ll love mixing with the grown-ups and the opportunity for free waiting staff shouldn’t be overlooked. *surly teenagers / bawling babies excepted Hangovers are worse the older you get. OFFICIALLY BRITAIN’S BEST TURKEYS
Last November, a rather distinguished gentleman-farmer type sauntered into our Bishop’s Stortford shop and announced our turkeys were officially the best in Britain. It turned out to be William Grove Smith, who breeds all our Christmas turkeys on his family farm in Essex. William had just scooped the British Turkey Award for the Best Premium Christmas Turkey of 2013 (fingers crossed for this year). He follows a “plough-to-plate” philosophy, growing all his own wheat and barley to feed the birds, using his farm straw for their daily bedding and recycling their waste as fertilizer for his fields.

We use just the crown of William’s English Rose turkey, folded around our amazing, handmade stuffing of Cumberland sausage meat, apples, chestnuts and cranberries, and wrapped in a lattice of sweet-cured bacon to keep the meat lovely and juicy. Our Prep Team, led by Big Rob, prepare each and every one carefully by hand (you’ll find their team “signature” on the label). At home, it needs defrosting for 48 hours in the fridge before going in the oven. No complex cooking-time calculations are required – it’s done in just over two hours (not forgetting to add half an hour of resting time) – and there’s plenty for eight, because Christmas isn’t the same without a cold turkey sandwich. 11
