Hello I’m rather fond of famous quotes because other people often express my feelings much better than I do myself. The quote we put up on opening our current kitchen in 2007 was from John Ruskin, eminent Victorian art critic and all-round wonderful human being. He said: “Quality is never an accident, it is always the result of intelligent effort.” It’s a bit of wisdom we keep in mind daily as we prepare your food. At Christmas, home-cooked quality comes into its own. Getting together with friends or family over a meal is often the best way to deepen the relationships that make a rich life. Of course, families can bring challenges. As writer, Harper Lee, said famously: “You can choose your friends but not your family.” Hopefully, we can relieve some of the stress that can accompany a family gathering. We gave our full Christmas Day spread a proper dry run back in August (photo evidence opposite). James, our brand director, did the “COOKing” and reported it to be as stress-free as we claim. I can confirm the result was delicious while a massive strop from my child number three merely added to the authentic Christmas feel. Enjoy the festivities - I hope we can give you a helping hand in the kitchen.

Our award-winning English Rose turkeys come from William Grove Smith’s family farm in Essex. He follows a “plough to plate” philosophy, growing all his own wheat and barley to feed the birds, using his farm straw for their daily bedding and recycling their waste as fertilizer for his fields. We use just the crown, folded

around our amazing, handmade stuffing of Cumberland sausage meat, apples, chestnuts and cranberries, and wrapped in a lattice of sweet-cured bacon to keep the meat lovely and juicy. At our Kitchen in Kent, the Prep Team prepares each and every one carefully by hand (you’ll find their team signature on the label).

Festive parties come in all shapes and sizes. The meticulously-planned, military operation; the impromptu get together with friends; the official gathering of the clan (yes, even mad Uncle Gerald); the New Year’s Eve blow-out; the annual invitation to the neighbours - just don’t mention the hedge / planned extension / early-morning lawn mowing… good will to all men and all that… However you do yours, we can give you a helping hand in the kitchen. 10

Hand-prepared Canapés If you’ve got lots of guests, serve a mix of hot and cold canapés. You can prepare all the cold ones in advance and it means you don’t have to be checking the oven constantly. See the canapé calculator (p14) to figure out how many you need.

Sweet Canapés Our NEW, handmade Mini Mince Pies are the perfect sweet canapés. Alternatively, cut up a selection of our traybakes (see p29) into neat little squares and arrange them prettily on platters.

Recruit your offspring This is age/behaviour dependent but your kids can make ideal (and very cheap) waiting staff. Just watch out for them minesweeping the cocktails.

Casseroles To Feed A Crowd

If you’re planning to feed a crowd with a proper meal, then our casseroles are ideal. Defrost them first overnight. Then heat in a big pan on the hob (add a splash of water at the start to prevent drying out). Cook over a low heat, stirring occasionally, for about 45 minutes or until piping hot. Rice or crusty bread are often the most straightforward accompaniments, with a few big puddings for dessert (see p26).

To make a simple crème fraîche dressing to go with the salmon: take 3 generous tablespoons of crème fraîche and stir in a handful of roughly chopped dill with a good squeeze of lemon. Add a chopped spring onion, chopped capers to taste and a pinch of salt. Stir well. Have a taste and add more lemon/capers/salt if you feel it needs it. The countdown to Christmas is a crazy time of year for our hard-working Pastry Team, led by Carol. On top of their usual menu of recipes there are lots of seasonal main courses and starters that need pastry. Then there are the canapés. The Duck & Hoisin Puffs have been a particular headache, with each one needing to be made carefully by hand. But they’ve persevered; kept (mostly) cheerful; and made some wonderful food. Get Christmas All Wrapped Up Early

Don’t forget: you need to have your turkey by December 23rd to allow 36hrs for it to defrost for Christmas Day.

If you’ve got freezer space, get your Christmas food shopping all wrapped up early so you can relax and enjoy yourself. We only make a limited number of turkeys, so make sure you don’t miss out. Not all of our products are available on this service (unfortunately puddings and canapés are limited, as they don’t travel well).
