Big events take the headlines in July and August Plymouth’s fantastic line-up of summer events continues in July and August.

Thousands of music fans will flock to The Hoe on July 15 when the MTV Crash event arrives in the city. Some of the biggest names in British music will be on stage for the televised event, which will eventually be broadcast to dozens of countries around the world. It will help put Plymouth firmly on the map as Britain’s Ocean City and is a real coup. These type of events don’t happen by chance, so big credit to all those in the City Council and Destination Plymouth for attracting such a prestigious event. Plymouth Albion’s Brickfields Stadium will be hosting a spectacular celebration to mark the 350th anniversary of the formation of the Royal Marines. RM350 South West Proms is expected to attract 20,000 spectators during its three nights from July 16 to July 19. The celebration will feature fantastic music, displays, a flypast by the Royal Naval Historic Flight and a spectacular fireworks display. Tickets are selling fast...you can book them or find out more by visiting www.rm350.co.uk August promises to be another action-packed month in the city starting with the British Fireworks Championships on August 12 and 13, which as usual are expected to attract tens of thousands of visitors to The Hoe. Just a few days later the popular Flavour Fest returns to the city centre from August 15 to 17. One of the biggest and best events of its kind in the South West, Flavour Fest is expected to attract up to 50,000 people each day and will feature over 120 food and drink traders, plus some of the region’s top chefs. City College Plymouth staff have been recognised for their outstanding achievements throughout the year at the college’s inaugural staff awards ceremony. A total of 49 City College staff were treated to a twocourse lunch in the College’s PL1 restaurant, followed by the presentation of the awards by college principal, Phil Davies and vice chair of governors, William Woyka. Sam Abbott, vice principal at the college, said: “This has been a great opportunity for the college to celebrate the achievements of our staff and publicly recognise some of the fantastic work they do, helping all of our students in achieving success.” Winners announced were:

‘I could have danced all night Plymouth primary school teacher Jane Dowrick wanted to look her best for her son’s wedding. And being a keen dancer she was also looking forward to stepping out on the dance floor at the reception.

But there was a problem. Former Royal Navy petty officer Emma Scott has said farewell to her life on the ocean wave to embark on a new career - as a plumber. She spent 16 years in the Navy as an engineer on a number of Plymouth-based frigates looking after the plumbing and pipework on board. “I decided a couple of years ago that I wanted to come out of the Navy to work for myself. I trained as a plumber for a year while I was still serving on frigates and was also able to obtain qualifications in electrical installation,” said Emma. She left the Navy in April to launch her new business called Pink Plumbers, covering Plymouth, Saltash and Torpoint. She has invested in a new specially-liveried van and all the equipment necessary to operate as a plumber. “It’s very early days,” said Emma, “but I have already had some repeat business. I specialise in small to medium sized jobs at the moment, from repairing toilets, showers and taps to moving radiators and towel rails. I’m also available to deal with emergencies and can work in the evenings and weekends if it is more convenient for customers. “As I get more experienced I plan to take on bigger projects, such as heating and bathroom installations. I would also like to take on an apprentice as the work increases,” she said. Emma, who lives in Keyham, moved to Plymouth from Bolton when she was 16 to do her basic naval training at HMS Raleigh in Torpoint. “I love Plymouth because it’s such a great place to live and work,” she said. “While serving on Plymouth-based frigates I bought a house here and knew it was the place I wanted to be when I eventually left the Navy.” She encouraged other women to consider taking on a manual trade. “In my opinion everyone I have met has been positive about having a woman in a manual trade. I’m really overwhelmed by the great response I get from people when I am out and about from people driving past giving me thumbs up when they recognise the van.

Happy return to the Duke for head chef Kevin Experienced chef Kevin Scargill has returned to Plymouth after spending nearly three years in Afghanistan overseeing catering operations for thousands of military personnel. And now he is back in his home city he is relishing his latest challenge – having been appointed as head chef at the Duke of Cornwall Hotel. For Kevin it marks a return to his catering roots, as he joined the Duke of Cornwall as an apprentice at the age of 17 and spent 11 years there working his way through the ranks to become demi-sous chef - effectively third chef. “I learned so much in that first spell at the Duke of Cornwall, but I was keen to learn more about catering management,” said Kevin. “Through a chance discussion with a friend’s father who was attending a wedding at the Duke of Cornwall I heard about catering management opportunities overseas in Afghanistan. “It was with a global company which specialised in providing catering facilities for military bases and I joined them as chef manager in Afghanistan.

“It was a demanding, yet fantastic experience and I learned a lot about managing big teams of chefs and catering staff,” he said. “It meant 13 hour days, seven days a week with four months on duty and three weeks back in the UK. “Just a few months after I joined the company I headed a team that successfully opened a new dining facility in Afghanistan serving three meals a day to more than 4,000 US military personnel. I was also responsible for the co-ordination and management of up to 180 multi-national catering and front of house staff.” Working overseas meant he was away from his wife Amy – who he met when she was working at the Duke of Cornwall as a receptionist – and their four-year-old son Joshua for long periods. “We kept in touch by Skype as often as possible, but the three weeks back home each time seemed to flash past. “I was really missing my family and in the end decided to return to the UK in April this year. I had always kept in touch with my old colleagues at the Duke of Cornwall and was delighted when they offered me the post of head chef,” said Kevin.

This starts first with support and working closely with my deputy head chef Rachel Gould and getting the best out of the team at every leve. It’s not all about the chefs - my kitchen porters are vitally important and the front of house staff play a key role in ensuring dishes are served professionally. “I am reviewing all aspects of what we do at the Duke and will be contacting as many local producers and suppliers as possible to make the most of the fantastic seasonal produce available here in Devon and the rest of the South West. “I love fish and this will feature prominently on our menus. Put the rhubarb, pistachios and sugar in a bowl. Finely grate in the zest of half the orange. Mix together. Lay the filo out flat on your work surface. Dampen a clean tea towel and lay it on top, to stop the pastry drying out. Cut the pastry across the narrower width into 3 equal sections. Brush each layer of the first third with some of the melted butter, laying the sheets on top of each other in a small (approx 25 x 15cm) baking dish or tray as you go. Spread over half the rhubarb mixture. Repeat the brushing and layering of filo, then the rest of the rhubarb, then top with a final layer of filo. Use a very sharp knife to cut right through the baklava, across each way to make a small diagonal pattern. Bake at 180˚C for 40-45 mins, depending on your oven, until crispy and golden. Remove from the oven and leave to cool completely. Gently warm the honey and juice from half the orange in a small pan. Add a splash of orange flower water (add sparingly - it’s strong). Pour evenly over the baklava and leave to cool at room temperature, then chill in the fridge overnight. Serve cut in the small diagonal pieces.

Chef Craig is delighted with Fish2Fork rating The National Marine Aquarium’s head chef Craig Walker has received a coveted Blue Fish rating and a glowing report from Fish2Fork, the online sustainable dining guide. Noting Craig’s ‘exemplary approach to choosing its seafood’, the rating reflects the restaurant is acting sustainably in choosing its seafood and engaging customers with information about the credentials of the food served. Craig and his team at the Aquarium received a 3.5 Blue Fish rating (out of a possible 5) due to his outstanding approach to sustainable sourcing. Fish2fork recognises the efforts the Aquarium goes to ensure it is uses fish from sustainable sources and its other ethical sourcing methods. Craig has also been praised for championing local producers, using Fairtrade and organic products wherever possible, ensuring meat is

The National Marine Aquarium, along with Destination Plymouth and Plymouth University are working with restaurants across the city in order to showcase Plymouth’s world-leading seafood and the title is now within touching distance as restaurateurs are working to improve their ratings. The Fish2fork rating system is designed to inform customers whether a restaurant is doing all it can to serve sustainable seafood and reduce its impact on the world’s oceans. Overfishing is one of the biggest threats to marine life – the Aquarium’s responsible approach to fish and seafood sourcing goes hand-inhand with its primary purpose of driving marine conservation. Five restaurants have been nominated for the award, with the winner being decided by a public vote. FOOD MATTERS Award winning chef, author and restaurateur Mitch Tonks has unveiled plans to expand his successful seafood business in Plymouth. The popular Rockfish restaurant and take-away alongside the National Marine Aquarium in Sutton Harbour will have more outdoor seating available this summer and a new fishmonger’s outlet is being added to the venue. Mitch has also announced that he will be opening a Seafood Cookery School in Plymouth next year. The new developments will result in the creation of 10 more jobs and firmly establish his Plymouth operations at the heart of Mitch’s growing business ventures. Mitch opened Rockfish in Plymouth in June last year and is delighted with the success it has achieved. “Weve had a very positive year. Plymouth is a fabulous place with

Mitch unveils plans for new seafood cookery school wonderful people and we are delighted with how many regular customers we now have. “We see Rockfish in Plymouth as our flagship. It is our biggest restaurant and with the extra outside seating will have well over 200 covers. Our plans for the new fishmonger’s and cookery school underline our positive view of Plymouth,” said Mitch. “Rockfish’s location couldn’t be better for seafood lovers. We are overlooking the ocean and right next door to the National Marine Aquarium where you can see fish from all over the world and see the great work that they do in preserving and managing our marine environment, including sustainable fishing. “The famous Plymouth fish market is just feet from our front door and from Rockfish you can watch the boats land. This is the perfect destination for seafood lovers.” Mitch said that the recent closure of the footbridge between the Barbican and Rockfish had hit the business hard, but he was confident that the repairs will be finished in early July as planned. Rockfish didn’t let the closure of the lock bridge stop anyone getting to the fish and chip eaterie. The team came up with an innovative way to draw seafood lovers round to them with a little treasure hunt. The team hid Rockfish vouchers around Coxside near themselves and the National Marine Aquarium. Vouchers have different values and new ones were put out each day during the bridge closure period. Alistair Graham, general manager at Rockfish said: “We are being well supported by our loyal followers but we thought a little fun like this might tempt a few more people round to us, we’re looking forward to seeing the search take place everyday!” Meanwhile Mitch and the team are planning a big event in September to celebrate the rich source of crab in the area. The Plymouth Crab Day will not only feature fresh local crab but also a whole range of family activities on September 21 - as part of Plymouth’s Ocean City Festival. Despite all the activity coming up in Plymouth, Mitch and his business partner Mat Prowse will still have time to celebrate the opening of their latest restaurant in Torquay at the end of June. Rockfish restaurant and take-away in Plymouth is open seven days a week.

The Dance Festival will run from July 25 to 31 with Yasmin Taylor-Hazzard as the adjudicator and being held at The Muse Theatre, Lipson Co-operative Academy. The Music Festival takes place from November 10 to 16 with John Ware as the adjudicator and is being held at Plymouth Methodist Central Hall. The Speech and Drama Festival is also on between November 10 and 16 with Cally Foster as the adjudicator and being held at The Future Inn. The Festival is affiliated to The British & International Federation of Festivals of which Her Majesty the Queen is Patron. The City of Plymouth Festival is a registered charity and its patron is the Lord Mayor of Plymouth. The Festival is run by a committee of 10 volunteers, several of whom have been involved for over 30 years. Ages of competitors range from under six through to adults performing solos, duets, trios and groups. Admission is £3 per session with a concession £1.50; day tickets are £6 with a concession £3. Season ticket £25 with children and OAPs £12.50. Sessions run daily from 9.30 am until 9 pm.

Yeovilton’s action-packed air show has high-flying appeal The intensity, drama and spectacle on offer at the RNAS Yeovilton International Air Day in Somerset on Saturday July 26 will be an experience not to be missed. The Royal Navy’s premier award winning airshow is an action-packed day out for families and enthusiasts alike. Over five hours of thrilling flying displays will include the Royal Navy Historic Flight’s rare collection of naval warbirds such as the Swordfish and Sea Fury whilst today’s Fleet Air Arm aircraft types will perform spectacular maritime and commando assault role demonstrations. Further participants include the military aerobatic teams from Jordan and Denmark and undoubtedly, the stars of the show for many will be the roaring fast jet displays by the Swiss Air Force F/A-18C Hornet and the Belgian Air Force F16. Among the helicopter displays will be the Royal Navy and Army’s latest aircraft - the Wildcat, as well as the amazing RAF Chinook. Aircraft linked to the D-Day 70 commemoration, both old and new, will take part in this year’s RNAS Yeovilton Air Day flying and static displays. While June 6 was the actual anniversary date, Air Day’s timely inclusions will help extend the tributes well into the summer as the nation reflects back on the Normandy landings of 70 years ago. The RAF will also be represented by the Battle of Britain Memorial Flight’s Dakota in D-Day colours accompanied by the iconic Spitfire and Hurricane. Another RAF contribution is a flypast by a Eurofighter Typhoon FGR4 from No 29(R) Squadron, based at RAF Coningsby. This aircraft is expected to be a specially-marked example, complete with D-Day stripes. The scheme mirrors that worn by a WW2-era Hawker Typhoon in June 1944. One of the nation’s favourite aircraft, the iconic Vulcan bomber XH558, will also be firing up her four mighty engines for another majestic performance over the Somerset skies. Other notable classic jets will be the world’s only airworthy examples of the Sea Vixen and Canberra. Throughout the day there will be plenty of entertainment for all the family including static aircraft, service demonstrations, military bands, helicopter pleasure flights, a fairground, vehicle exhibition, simulator rides, trade stands and much, much more.

Looe Music Festival is taking to the stage for the fourth year in a row, sporting a fresh new look and promising a weekend of top music and eclectic entertainment that is even bigger and better than ever. One of the best late summer festivals, Looe Music Festival will be in the spotlight from Friday September 19 to Sunday September 21. It promises high energy, back-to-back beats on the beach and the chance to discover new musical acts whilst exploring the picturesque fishing port of Looe in south east Cornwall. Born in New Jersey, he moved to Devon as a child and released his self-titled debut album aged nineteen. Cosmo Jarvis will be supporting pioneers of the London acid jazz scene and main stage headliners, The Brand New Heavies. A British music institution whose unique mix of jazz, funk and soul has lit up the UK music scene for well over two decades, The Brand New Heavies have been responsible for some of the UK’s biggest R & B/soul tracks. On Saturday, London-based band Tankus the Henge will be creating drama with their ‘apocalyptic carnival’ inspired brand of music. Named as one of 2011’s ‘Top Acts to See’ at Glastonbury, they draw influences from many sources, including rock ‘n roll, gypsy music, ragtime and ska. Also playing on the Saturday is world superbike champion and professional singer-songwriter and pianist James Toseland. After parting with his band Crash, the husband of famous jazz singer Katie Melua is now embarking on his own solo career, in a quintet known as ‘Toseland’. The internationally famous Red Hot Chilli Pipers will introduce the festival crowd to ‘bagrock’. The Red Hot Chilli Pipers have been rocking the world from New York to Beijing with musicianship of the highest order and a passion for bagpipes that leaves crowds breathless. To top off a truly international line-up this year, Hillbilly AC/DC tribute legends Hayseed Dixie will be flying in from America to add a ‘rockgrass’ finale at the harbour. Plymouth’s Stiltskin Arts & Theatre are celebrating their fifteenth anniversary with a host of activities for curious and creative children. Husband and wife team Iain and Jacqueline Slade will be familiar to many through their involvement in the Plymouth Lord Mayor’s Day Children’s Parade, Plymouth Festival of Lights and street theatre. They also take their performances into primary schools and manage the artistic programme for Clovelly Maritime Festival. The pair are celebrating fifteen years in business with an ambitious project to stage the city’s first-ever festival for children. The Wild Tribe Children’s Festival will take place between July 11 and 13 and aims to encourage children to create, explore and discover arts, science, history and the environment via a host of interactive workshops, performances and demonstrations. In the last year, they worked with over 7,000 children and launched two new theatre groups. Catering for little ones, Wild Things offers storytelling and theatre activities for 4-7 year olds while older children have come together to form The Shape Shifters – Stiltskin’s young company who create magical performances. In September, Stiltskin will be taking their new show ‘Once Upon A Time’ into Plymouth schools to support the curriculum in an entertaining, engaging and creative way. Business director Iain said: “Although Stiltskin has grown over the years, we remain an independent, grassroots company that aims to raise aspirations, build confidence and develop a sense of pride in the city. Have you seen your toddler try to wear a hat that is obviously too small? Or ride a toy horse? These are known as ‘scale errors’ and were first described in 2004 by Judy Deloache and her colleagues in the United States. As an adult you are never tempted to squeeze in through the doors of a model Porsche, no matter how much you want to drive it. This is because adults easily distinguish between an ordinary object and a smaller replica. The first studies to observe this interesting behaviour invited children between 18 and 30 months into the lab. Children played first with three child-size toys – an indoor slide that they could slide down and walk up, a child-sized chair that they could sit in, and a toy car that they could easily get inside and drive around the room. After a few minutes, the large toys were replaced with identical but tiny toys to play with. Some children tried to sit on the miniature chair, others tried to go down the slide, or tried to insert a foot into the car. Since this first study, other researchers have found children making scale errors in the lab and in everyday situations. In one study, parents of young children aged between 13 and 21 months watched their children over a six-month period. Almost every parent saw his or her child make at least one scale error, showing that these errors are very common in young children. But why do toddlers do this? At the moment nobody knows why toddlers make such errors. One idea is that when they see an object they know – for example chairs, clothes or cars – this activates everything they know about that object, including how it can be used. In some cases the fact that the object is smaller stops them from making a scale error. When this happens children will usually just play with the object as a toy or sometimes refuse to play with it at all. However, sometimes this doesn’t happen and we see children make these size errors and play with the small objects as they would the full size ones. Here, in the Babylab at Plymouth University we think that these scale errors may be linked with a child’s language development. We are specifically asking the question: does a child who knows more words make more scale errors than a child who knows fewer words? And then, if we find that there is a link, are there specific words or word types associated with making scale errors? For example, a child who has learned lots of descriptive words (big, small, blue, etc) might notice sooner the size information of the object than a child who knows more object words (chair, cup, shoe, etc). In this study we are looking at children around the age of 21 to 30 months, as this is where scale errors have been seen in other studies. We hope to observe children making these scale errors and find out if there is any relationship with their language skills.

The tragic speedboat accident in Padstow two years ago and other high profile water based incidents is a stark reminder to all owners and users of powerboats, according to Kevin Baskott of Plymouth Powerboat School. “We want people who go out on the water in Plymouth to be safe and to be aware of the safety procedures they need to follow,” he said. “You wouldn’t drive a car without a licence, so why drive a powerful boat without undergoing the appropriate training? Some people spend thousands of pounds on powerboats, but are reluctant to pay a small proportion of that on training and learning how to use them safely. “Plymouth is a fantastic location for the sort of training we undertake. We help people to have confidence in their ability to drive boats and enjoy their time on the water,” added Kevin. Plymouth Powerboat School is an RYA motor boat and powerboat training centre dedicated to providing the highest standards of tuition, safety and equipment.‚ Located at Queen Anne’s Battery Marina, the School offers a wide range of shore-based and water-based training courses.‚ The company was restructured in January this year and has seen the number of people undertaking courses increase dramatically. Kevin and his team of instructors now attract students not only from Plymouth, but all over the South West and beyond. The courses are very popular and many are fully booked at present, with places later in the year filling rapidly. From New York to Rio....

Tipping has always been a very awkward topic of discussion, not only when we are on holiday, but throughout the service industry as a whole. I have never quite understood fully why it is customary to tip a taxi driver, a hairdresser or in a restaurant when we would never consider tipping a bus driver, a shop assistant or even in a coffee shop.

I am sure these habits will continue but the dilemma of who and how much to tip seems to become even more confusing when we travel abroad. I have visited the USA on many occasions and I have always been amazed at the amount you are expected to pay by way of a service charge, which is usually just added to your bill automatically. For example, in two of my favourite US destinations – New York and Miami – several restaurants added a whopping 20 By Travel per cent service charge as part of their normal procedure. But this can be very difficult with some staff almost embarrassing you in to paying it. This is extremely frustrating and particularly annoying when you have experienced poor value for money or poor service and in any event where you feel that the staff don’t deserve a tip at all. I feel that tips should be discretionary and dependant on these factors, not simply taken for granted and added to the bill in such an arrogant manner! I have decided therefore that this month I would give some advice on tipping and what is expected abroad. I hope you will find this helpful. In both the UK and overseas, I generally tip at around 10 per cent of a restaurant bill, but I always find it difficult to know how much to tip porters and for room service etc. It is always good advice to carry small denominations of currency, i.e., $1 dollar bills or €1 coins, as you may well need to tip taxi drivers or luggage porters before you have had chance to get any change. Holding lots of $1 bills, especially in countries outside Europe, can often be a very useful way to avoid having to give too big a tip or embarrassingly, not being able to give a tip at all. So, what do various countries expect in the way of tips or service charges? A particularly topical destination for many at the moment is Brazil, where no tip is required as a service charge is automatically added to your bill. Taxi drivers here just expect you to round-up the trip cost to save the need for change.

If tipping at all in Brazil, they prefer the transaction to be discreet so verbally thanking them with a handshake whilst handing the tip over folded in the palm of your hand is the usual procedure. In Thailand, waiters would only ever expect to receive a tip of $1 per diner, which equates to approximately 40 baht in their currency. When staying in hotels of a three star standard or higher, your concierge, chamber maid or housekeeper will not expect a tip as the service charge is already included in the room rate. A common feature in Thailand is for a public bathroom attendant to be always ready and waiting for you as you exit with hand towels and perfumes and aftershaves available for use. A tip of 20 baht or 50 cents is sufficient in these circumstances. Another increasingly popular Asian destination with tourists is Cambodia where the ‘policy’ regarding tipping is very similar to that of neighbouring Thailand. However, they prefer you without question to tip in US dollars rather than their local currency. You will find a similar situation in many other poorer or less stable countries where there is a strong preference to receive tips in a ‘harder’ currency such as the Pound, Euro or Dollar as these either generally hold their value or increase in value over a period of time. Another good example of this at the moment is Egypt, where their local currency is particularly volatile due to ongoing political unrest. In the popular Red Sea resorts, they undoubtedly prefer tips in Euros or Pounds, but please remember that it can be extremely difficult for them to exchange coins so a £5 or €5 note will always be better received. China really is an exception to the rule as far as tipping is concerned, where it is the ‘law of the land’ that no tipping whatsoever is allowed. Top hotels in China add a compulsory service fee of between 10 per cent and 20 per cent to your invoice but nothing else is expected or permitted beyond this. Japan and South Korea are also countries where tipping is not expected, although in these areas it is not exactly against the law but more of a non-tipping culture. Of course, if you’re feeling generous and you wish to reward excellent service, I am sure that on occasions a tip will be gratefully accepted but only if given very discreetly. more commonly referred to) are another bone of contention with many clients as the different cruise lines have such varying policies. For example, if you are travelling with Royal Caribbean, you can pre-pay the gratuities when booking your holiday; they amount to approximately £7.50 per person per day and this will be added to your bill at the end of your cruise if not prepaid. If you have reason to feel that the tip is not appropriate, you can, of course, have these charges removed from your bill by contacting the concierge at the end of the cruise but a tip is expected. With P&O and Princess Cruise Lines, tips can not be prepaid but again, are expected and added to your final bill unless you specifically ask for them to be deducted for a reason. By contrast, if you cruise with Silversea, Regent Cruises or Sea Dream, no gratuities are expected and any tips will be entirely at the customers’ discretion. To conclude, I would also suggest that it is a good idea to research the tipping culture of the country you are visiting. Always try to keep small denominations of the preferred currency to avoid having to give a larger tip than necessary and if you are in a restaurant and feel unsure, give 10 per cent as I do. Just recently a tour operator called ‘Villa Parade’ went into administration highlighting once again the importance of ensuring that your holiday is ‘Fully Bonded’ and your money is protected in the event of such a failure. Villa Parade were bonded by ATOL, which is a scheme established by the Civil Aviation Authority to protect travellers from losing money or becoming stranded abroad if their travel company collapses. Therefore, in this instance, clients who booked accommodation and flights together as a package with them will receive a refund for all monies paid. If Villa Parade had not been ATOL bonded, the opposite situation could have applied for clients who had booked with them; all money paid out could potentially have been lost. It is important to remember that if you book flights direct with an airline and then book your accommodation separately; your money would not be covered under the ATOL scheme so making both purchases by credit card is essential for protection. When booking an ATOL protected holiday, you will always be given an ‘ATOL Certificate’, which you must take on holiday with you. This will protect you if the Operator goes out of business when you are abroad and will cover the cost of getting you home. When booking either with a travel agent or online, if your holiday is not ATOL protected my advice would simply be – don’t book it! Look for the ATOL logo on the company’s website or paper work. If you are still not sure if you’re fully covered, go to the Civil Aviation Authority’s website www.caa. co.uk - where you can check the legitimacy of their bonding. Happy Holidays!

Let them make cake!

This month’s recipe is for cake – two cake recipes in fact. They are for cupcakes and Victoria Sandwich, both of which are quite similar, but produce quite different looking cakes. Cupcakes are great for lunch boxes and picnics whilst the Victoria Sandwich makes the basis of a great birthday or special occasion cake.

The basic recipes are: √√ Cupcakes (makes 10) √√ 150 g self-raising flour √√ 100g margarine √√ 100g sugar √√ 1 large egg √√ 1 tablespoon water √√ To decorate: Icing sugar mixed with water and sweets √√ Victoria Sandwich √√ 225g self-raising flour √√ 225g butter Liz Crudgington of the √√ 225g sugar Roundabout Day Nursery √√ 4 large eggs with her latest recipes for √√ 1 teaspoon baking cooking with children powder √√ To decorate: Whipped cream, strawberries and grated chocolate The method for both is the same: Cream the butter and sugar (ideally using an electric mixer) Add the eggs (and water) and mix again Add the flour (and baking powder) and mix again Put into 10 cake cases or two lined round tins Cook on Gas Mark 4 until a knife comes out clean (about 20 minutes for cup-cakes, 35 minutes for Victoria Sandwich) Take out of tins and leave on a cooling rack to completely cool before decorating These are great recipes to do with any age child or for older children to make independently. Children love to help weigh and mix the ingredients, crack the eggs and lick the bowl! You can easily vary these basic recipes too. You could change the colour with food colouring or add different ingredients: chocolate chips, cherries, sultanas, small bits of apple. If you’re making these for a child’s party you can order rice paper cup cake decorations that are printed with the theme of the party – whether it’s a Disney princess or a football party – there are plenty to choose from. You can even get large ones for your Victoria Sandwich and you can have these personalised so that they say your child’s name and age. Happy baking!

Plymouth has become the first city in the world to secure a Fish2fork Blue City Award. The National Marine Aquarium, Destination Plymouth and Plymouth University Marine Institute joined forces last year to initiate the Plymouth Blue City project to demonstrate the sustainable seafood credentials of the city’s restaurants. Over the last year, restaurateurs across the city have been working hard to qualify for a Fish2fork Blue Fish rating which reflects the restaurant is acting sustainably in choosing its seafood and engaging customers with information about the credentials of the food served. With the majority of the city’s restaurants now demonstrating excellent sustainable seafood practices, Plymouth has been successful in its bid to become the first city in the world to achieve the Fish2fork Blue City award. Paul Cox, director of conservation and communication at the National Marine Aquarium made the announcement and presented the award to Plymouth City Council Leader, Tudor Evans. spearheading Plymouth’s bid to become a Sustainable Fish City, as it continues to drive sustainable fish sourcing in the city. The Aquarium will be looking for other caterers to follow the restaurants’ lead as Plymouth bids to become one of the UK’s first Sustainable Fish Cities. The campaign, which is supported by top star chef, Raymond Blanc and run by a team of food and conservation groups, has so far succeeded in signing up towns and cities feeding over 13 million people to take up the challenge. They include Belfast, Bristol, Cardiff, Newcastle, Hull, Liverpool, London, and Plymouth. The Plymouth bid is already off to a strong start as the Fish2fork Blue City award qualifies for one of the five stars, Sustainable fish innovation. The Aquarium, along with Food Plymouth, will be driving the project to obtain pledges from local schools, colleges, universities, hospitals and businesses to achieve the five gold-star standard. Paul Cox said: “The Blue City award is an excellent achievement for the city and credit must go to the restaurants that are demonstrating such good practice. This is a real feather in the cap for the city and hopefully we can build on this to lead the country in the Sustainable Fish City campaign. “Through these projects we hope we can start to reconnect the City with the seafood that it eats and with the local fishing industry that supplies excellent, responsibly caught seafood.” Tim Glover, co-founder and managing director of Fish2fork, said: “This is a marvellous achievement by Plymouth. The city is to be congratulated for its attitude to marine sustainability. “In particular, we are delighted at the way in which Plymouth’s restaurants have risen to the challenge of seafood sustainability. Many of them have made changes to menus and provided more information to customers about the origins of their seafood in order for the city to win the award.” Tudor Evans, said: “This is fantastic! We are the very first city in the UK to have won this award. We are Britain’s Ocean City and have many fishermen operating from our harbour, so it’s very fitting to say that we have lots of fish and it’s sustainably sourced! Working with the National Marine Aquarium and Destination Plymouth we are proud to say we are a Blue City and will work hard to push forward to the Sustainable Fish Campaign.” Chief executive of Destination Plymouth, Amanda Lumley, added: “With many high profile restaurants in the city it is important to showcase the fact that the fish they serve is sourced sustainably. “River Cottage is renowned for sourcing sustainable fish, we also have the Mitch Tonks Rockfish Restaurant. Carbon Monoxide Poisoning – “The Silent Killer” Carbon monoxide (CO) is a poisonous gas which has no smell or taste, making it very difficult to detect. With summer approaching, it is important to bear in mind some simple safety tips. Whilst camping never take a barbeque into a tent, awning or caravan. A barbeque in enclosed spaces is lethal. Even a cooling barbeque can give off poisonous CO which can kill. Never run a gas, petrol or diesel-powered generator inside a caravan, tent or awning. It is always sensible to consider using a CO alarm. Although most people do recover from low level CO exposure, it can sometimes lead to long lasting neurological problems and even brain injury.

Bedding down with a blaze Now that summer is well and truly under way and our tubs, baskets and borders are all bursting with colourful bedding plants, it’s time for herbaceous perennials to shine.

The mild winter has caused an explosion of slugs, snails and fungal diseases in our gardens and has been a total nightmare for many plants. A great plant which the slugs and snails hate and has good disease resistance is Geums. Echinaceas are now available in a variety of magnificent colours

and evergreen Agapanthus The deciduous come from colder regions and are generally hardier, and the evergreen species are from milder parts of South Africa which have higher rainfall. These varieties tend to be less hardy and may not remain evergreen if the winter is very cold. Agapanthus are great plants for coastal areas as they are drought tolerant and cope well with wind and salty air. They like well drained soil in full sun, but will tolerate some slight dappled shade. They are various different varieties ranging in size from 30cm (12 ins) to 1.5m (5 ins), so there is one for any situation. A plant that adds drama to a border with its foliage as well has flowers is Lobelia Cardinalis ‘Queen Victoria’. Unlike the traditional bedding Lobelia, this is a hardy, tall variety that likes to grow in damp, rich soil in full sun to partial shade. The foliage is a deep burgundy colour and it helps break up the tapestry of green in a border before plants start to flower, then when it does flower, it fills the border with spikes of bright red starry flowers. It heats up any border it’s in and is a real eye catcher. It grows to a height of 90cm (3 ft) with a spread of 30cm (1 ft). Have a bit of fun in the garden this summer, and celebrate the world cup in style. Bring a touch of Brazil to your garden by creating a tropical border or pot. We have a great selection of plants that will look great grown together and give the effect of a lush, colourful, exotic oasis. Group together Bananas plants (Musa Asjoo or Ensete Maurelli) with exotic looking flowers such as Cannas, Calla lilies, Celosia and New Guinea Impatiens with striking foliage plants such as Coleus, Ipomoea ‘Black Tone’ and Fatsia japonica ‘Spider’s Web’. Finally clothe bare walls and fenced with Passion flowers and Abutilons and you will feel like you are on holiday. All of these plants are easy to grow and just need a rich moist soil and a sunny position to thrive in. All are hardy and will return year after year with a good mulch in the autumn except the Coleus, Celosia, Ipomoea, Ensete Maurelli and New Guinea Impatiens.
