Her first book, Bones: 7#8(9#0:$;(0)1<=$/$>1<# (2005), was widely acclaimed, winning the James Beard Award for single­ subject food writing. Jennifer’s second book, Fat: An Appreciation of a Misunderstood Ingredient with Recipes (2008) won the Gourmand World Cookbook Award for Best Cookbook Cover, the Silver Sprout Award, and both the IACP and James Beard Awards for Best Single Subject Cookbook in 2009. It was also named The Best Cookbook of the Year 2009 by the Beard Foundation. Jennifer divides her time between Toronto and Paris, she maintains a close friendly relationship with her butchers on both sides of the Atlantic, who put aside their best bones and fat for her.

CYNTHIA PETERS Passionate about food and well being, Cynthia is actively involved in a number of food related endeavors. A former communications executive from Toronto, she now leads a second career as a personal chef and owner of From the Farm Enterprises Inc. and From the Farm Cooking School, located in her restored heritage farmhouse in Prince Edward County. Cynthia is a food writer and community advisor for a number of provincial and regional Boards. An advocate for Food Security issues across the province, she enjoys connecting rural/urban businesses, government, community organizations and consumers to create sustainable solutions to today’s food issues.

MICHAEL PINKUS Michael Pinkus has had a 20­year love affair with wine. In early 2005, he decided to leave a career in radio (writing and broadcasting) and combined his love for writing with his passion for wine to become the head­writer and all around Grape Guy for Ontario Wine Review. His mission was to forge out and bring Ontario wines into a more positive light, not just for fellow Ontarians, but for Canadians and other wine lovers the world over. A quick survey of the major maritime traders of the last thousand years and their principal wine trade routes allows one to map the origins of the )?"@'f=( K&=%]G$?)$( ;?"%#-&'( )#$&=a( Seaports such as Marsala in Western Sicily, Porto in Portugal, Jerez (Sherry) '&(@+(."?$%&"+(#$(=?<%*&"$(/F+#$B(+$'( Islands like Madeira, Portugal’s supply stop on the way to the Americas and their African colonies, and Samos and Limnos in the Aegean Sea, to name but a few of the most famous. /&C&"+@( ;?"%#-&'( )#$&( =%A@&=( +"&( possible, based evidently on the grapes involved and the type of spirit used (neutral grain alcohol, grape or fruit­based distillates), but also of critical importance is the timing of ;?"%#-,+%#?$B(%*&(+,%(?;(+''#$>(+@,?*?@( to wine. If the spirit is added to fresh grape must, fermentation is prevented and the resulting beverage is both strong and very sweet and grapey. Technically this is known as a mistelle; some of the better­known mistelles are Pineau des Charentes from Cognac +$'( 8+%+-+( ;"?E( 0*+EF+>$&( #$( ."+$,&B( +$'( %*&( X<=,+%=( ?;( 1#E$?=( and Samos Vin Doux from Greece.

If alcohol is added part­way through the fermentation process, the resulting wine will have some of the complexity of fermented grape juice, while still retaining considerable residual sugar. This is the technique used to make E+$A( ?;( %*&( )?"@'f=( ,@+==#,( ;?"%#-&'( wines, called vins doux naturel, such as Port, sweet Madeira and Marsala. Adding alcohol after a wine has fully -$#=*&'( ;&"E&$%#$>( A#&@'=( +( =%"?$>B( dry wine. This is how dry Madeira and Marsala are made, as well as all sherries (sweet sherries are sweetened after the fact). Regardless of the degree of sweetness, mistelles and ;?"%#-&'()#$&=(,?$%+#$(K&%)&&$(+K?<%( 15% and 22% alcohol. Nowadays, a better grasp on the chemistry of wines allows winemakers to produce stable, round­the­world­ shipment­worthy wines without the addition of alcohol. The easy availability of sugar has also made the =)&&%(W+C?<"(?;(,@+==#,(;?"%#-&'()#$&=( much less prized and rarer than it once )+=H( I=( =<,*B( %*&( ;?"%<$&=( ?;( ;?"%#-&'( wines have waned on markets around the world in the last century: They’re down but not out.


It may surprise you to learn then that Canada ­­ with a modern wine history spanning barely three decades, no connection to ancient maritime trade routes nor tradition of '#=%#@@+%#?$( ]]( F"?'<,&=( =)&&%( ;?"%#-&'( )#$&=H( `*AD( nU&,+<=&( 2( @#G&( !?"%Bo( "&=F?$'=( 8#,*+"'( J+"@?B( %*&( +E+%&<"( ]%<"$&']F"?( )#$&E+G&"( K&*#$'( J+"@?( Estates in Prince Edward County, the -"=%B( +$'( ,<""&$%@A( ?$@AB( F"?'<,&"( ?;( ;?"%#-&'( )#$&( #$( %*&( 0?<$%AH( 7;( %*&( many reasons winemakers choose to &E<@+%&( ,@+==#,( ;?"%#-&'( )#$&=( #$( ;+"] W<$>( ,?"$&"=( ?;( %*&( >@?K&B( %*#=( ?$&( #=( unassailable. 4*&(M#$%$&"=f(T<+@#%A(I@@#+$,&(?;-,#+@@A( "&,?>$#[&=( %*&( ,+%&>?"A( ?;( ;?"%#-&'( wine. To qualify, the product must be obtained “by adding alcohol, grape brandy or fruit spirit to wine, or grape juice or grape must in fermentation.â€? In addition, it must be made from a list of VQA­approved grape varieties and 100% of the contents must be from Ontario, including the distilled spirit component, with an alcohol content between 15% and 20%. U<%( !?"%]=%A@&( ;?"%#-&'( )#$&=( +"&( =%#@@( a rarity in Canada. According to the VQA’s executive director, Laurie MacDonald, only six VQA­approved ;?"%#-&'()#$&=B(%?%+@@#$>(j<=%(bPYY(,+=&=B( were produced last year. Compare that to a total of 1.86 million cases of VQA­approved wine produced in Ontario in 2009, and you get the F#,%<"&a( 4*&( C?@<E&( ?;( ;?"%#-&'( )#$&( #=B( well, tiny, to say the least. Producers of ;?"%#-&'( )#$&( N$?%( #$,@<'#$>( ;"<#%( )#$&=Q( in Ontario include De Sousa, Lakeview, Stoney Ridge and Peninsula Ridge (their 8+%+-+( #=( +( E#=%&@@&B( %&,*$#,+@@AQH( U"#%#=*( Columbia also produces small amounts ?;( U0]MTI( ;?"%#-&'( )#$&H( /?E&( ?;( %*&( better­known producers include Quails’ Gate, CedarCreek, Sumac Ridge, Wild Goose and Gray Monk.

As with many great success stories, much is owed to fortune and circumstance and the ability to recognize an ?FF?"%<$#%AH((J+"@?('#'$f%('&@#K&"+%&@A( =&%( ?<%( %?( E+G&( ;?"%#-&'( )#$&=( )*&$( he purchased his property in 2005, though as an award­winning amateur winemaker, he had made Port­style wine in the past and thus had some experience with the technique of fortifying. In 2008, his PEC estate­ >"?)$( ."?$%&$+,( l?#"( N+( *AK"#'( variety) had reached a very high level of ripeness, 27º Brix, almost too much sugar to ferment into dry wine. At the same time, during one of his reconnaissance missions down to the Niagara Peninsula to look for grapes to F<",*+=&( N+K?<%( *+@;( ?;( J+"@?( 3=%+%&=( production comes from Niagara), he came across a vineyard of Merlot still hanging late in the season at an #$,"&'#K@&(Obp(U"#\H(n4*&"&()+=(+()#$&"A( #$('#=%"&==Bo("&C&+@=(J+"@?B(n%*+%(=%#@@(*+'( stocks of the 2006 and 2007 vintage in the cellar. They had no room in the winery to bring in the Merlot, and given the general oversupply of grapes in 2008, there were no buyers either. They were simply waiting to collect a rescue subsidy from the Ontario government for viable unused grapes. I thought, ‘Hmm, I can use those grapes to make a Port­style wine.’”

When it reached what he describes as the “right level of sweetness,” neutral spirit was added to stop the fermentation. “I had heard so many people say that Port and sherry are too sweet; it’s hard to drink more than a small glass. I wanted to make something much drier and more versatile than a typical Port, and people love it.” J+"@?f=(#$#%#+@(#$%&$%#?$()+=(%?(E+G&(+( tawny style of Port, aged for several years in­barrel, though he couldn’t resist showing it to visitors while it was aging. The reactions were so positive, and the barrel samplings so frequent as word got out, that eventually he was forced to bottle it. “I only had two barrels,” he confesses, “ and nothing to top­up with. So as the level in the barrel dwindled, I had to bottle it to avoid too much oxidation.” 4*&( $&\%( =%&F( )+=( %?( -$'( +( $+E&( ;?"( %*&($&)(,"&+%#?$B(+$'(%*"?<>*(+;-$#%A( and history, he hit upon the idea of naming the wine after Peter Van I@=%#$&B( +( E+C&"#,G( -><"&( #$( !"#$,&( Edward County history. Born in New York State of Dutch descent, Van Alstine participated in the American 8&C?@<%#?$+"A( `+"( +=( +$( ?;-,&"( ?;( %*&( U"#%#=*( 1?A+@#=%( I"EAH( :&( W&'( to Canada in 1784 and landed in Adolphustown. He would later build %*&(-"=%(E#@@(+%(V@&$?"+B(+=()&@@(+=(%*&( .&""AB(,"&+%#$>(%*&(K+=&(;?"(+(*&+@%*A( economy in Prince Edward County. On his own on the F"+#"#&=B(*&(*+'(+(@?%(?;(%#E&(%?("&W&,%( on his future as he sat on a tractor, =&&'#$>( %*&( -&@'=( ;?"( )*&+%B( ,+$?@+( and barley. He reasoned, “I like wine. You work with nature; you’re a farmer basically, except that there is chemis­ try involved.” `*&$( *&( "&%<"$&'( %?( ."+$,&B( *&( %?@'( his mother (his father having passed away) that he wanted to study wine. He went to Beaune at the age of 27 and spent four years there, and sub­ sequently he took a further degree in oenology at Dijon. Concurrently he found a job in Vougeot at Do­ maine Christian Clerget working with the owner and his wife for almost 18 E?$%*=B( =%<'A#$>( &C&"A( ."#'+A( +$'( working the rest of the week at the winery. And then he began to travel, spending another four years tour­ ing the world “to learn how to make wine.” His travels took him to Califor­ nia, Chile, Italy and South Africa. “I was trying to do two harvests a year,” he recalls. 4*&(;+"E&"()*?(*+'(*#"&'(."s's"#,(#$( Saskatchewan, a family friend, want­ &'( %?( -$'( +( C+,+%#?$( *?E&( #$( %*&( =?<%*( ?;( ."+$,&H( ."s's"#,( =<>>&=%&'( to him that, since he was heading for the wine industry, why not buy a vine­ yard which he would look after and his former employer could vacation %*&"&H( 8&%<"$#$>( %?( ."+$,&( +;%&"( *#=( global experience, he was ready to get involved in the vineyard project. Since the woman in question, Jennifer Hard­ enne, who used to work at The Globe and Mail as assistant editor on Report on Business magazine, was returning to Toronto and he had no job, he de­ cided to follow her to Canada. ."s's"#,f=( -"=%( j?K( #$( %*&( )#$&( #$'<=%"A( in Canada was with Peninsula Ridge in Niagara, working under a compatriot, Jean­Pierre Colas. He did the harvest with Jean­Pierre in 2002, and when that was done, he was ready to return %?(."+$,&(=#$,&(%*&"&()&"&(;&)()#$&"A( jobs available in Niagara. “Then Lanny Huff (the proprietor of Huff Estates) came to Peninsula Ridge,” he recalls, “and Norman Beal %?@'( *#E( )&fC&( >?%( +( ."&$,*( )#$&­ maker here who’s looking for a job. That’s how I met Lanny. A few months later I came to the County after Christ­ mas. Lanny showed me where he wanted to build his winery. I was not really keen at the beginning. When I came here there were three metres of snow, minus 20º Celsius and nothing to do here with wine. So I was not super­ sold on the idea, but I liked Lanny’s enthusiasm. Lanny is a visionary and he has the tools to be a visionary. And after working in countries where wine has been made for so long I thought, at my age, this could be an exciting challenge. So I said to Lanny, I’ll give #%(-C&(A&+"=(%?(%"A(%?(K<#@'(%*&("&F<%+­ tion, the quality, the winery. And here we go, I’m starting my eighth harvest.”

you have to work with numbers, you have to work with your Brix and your acidity to ensure the balance of your product. But we also know that the grapes show us the direction.”

What is it about the County that keeps ."s's"#,(!#,+"'(*&"&D(n2(%*#$G(%*&()+A( of life here is extremely attractive. Not only because it’s a good location. We’re between the triangle of the three big cities in Canada: Montreal, Toronto and Ottawa. It’s a beautiful place, especially in the summer with beaches. And it’s an island. The is­ land thing makes it something special. If you don’t live here, you don’t feel that. Secondly, the people here have been very welcoming. And third, my j?KH(2;(2()+=($?%(*+FFA(*&"&(+%(-"=%(2f'( probably be gone.”

`*+%( )?<@'( *&( @#G&( %?( +,,?EF@#=*D( “Like all of us, I’d like to make our vine­ yards easier to manage and able to produce a certain amount of grapes that would allow us to produce 100% 0?<$%A(;"<#%H(U<%(#%f=(=?('#;-,<@%(%?(>"?)( grapes here, I think we’ll have to for­ get that. In Niagara a good vineyard can crop two, three, four tonnes per acre, here if you reach one tonne per acre you’re lucky. I’m talking about ripe grapes. Some people produce two or three tonnes per acre but it’s not always very ripe.”

When he arrived eight years ago, there were two wineries in the County +$'( bY( C#$&A+"'=H( l?)( %*&"&( +"&( OS( wineries and 60 vineyards. “We’re the second largest vineyard area in On­ %+"#?(+;%&"(l#+>+"+H(/?(%*&"&f=('&-$#%&­ ly something happening here. Recipes incorporating even oysters )&"&(<=&'(;?"(=%<;-$>(+(%<"G&AB(+@?$>( with lemon peel, parsley and rice. Combinations of various cheeses and vegetables can be one of the more #$%&"&=%#$>("?<%&=(;?"(=%<;-$>B(&=F&,#+@­ ly when the vegetables are colorful and contrast nicely with the protein. .?"( &\+EF@&B( =?E&%*#$>( +=( =#EF@&( +=( a homemade pesto can look and taste amazing if it is rolled into a but­ %&"W#&'( F#&,&( ?;( ,*#,G&$( ?"( F?"G( @?#$H(( 4*&(+''&'(K&$&-%(?;(<=#$>(K<%%&"W#&'( meats is that there are no bones for your guests to deal with, and it pro­ vides an opportunity to do some im­ pressive plating. Use odd numbers like

?$&( =#>$#-,+$%( =@#,&( ?"( %*"&&( =E+@@&"( ones when you are creating your indi­ vidual plates for serving. Or if you pre­ fer family style, a platter of slices can also impress. A whole chicken is one of my favou­ "#%&( =%<;-$>( ,+C#%#&=B( +=( A?<( <=&( K?%*( the white and dark meat. While I do prefer roasting to poaching (as it gives E?"&( W+C?<"QB( +( F?+,*&'( K+@@?%#$&( of chicken served room temperature can be quite colourful and perfect for a buffet lunch. By pre­blanching the vegetables before you assemble the ballotine, it creates a vivid pinwheel of colour. In the spring, the combina­ tion of asparagus and carrots can be quite impressive. M&>&%+K@&=( +@=?( G&&F( A?<"( =%<;-$>( lighter and won’t compete with your other sides, should you choose a rice

or potato compliment. My Roasted Stuffed Chicken Roll is actually based on an old Tuscan recipe. The original recipe was used for important ban­ quets, and the chicken was wrapped in prosciutto. The entire roll was boiled in spiced water and then left over­ night with a weight on it. My version *+=( K&&$( =#EF@#-&'( +$'( %*&( "?@@=( +"&( roasted with the skin on to provide ex­ %"+(W+C?<"(+$'(E?#=%<"&H The Italians served Pollo Ripieno alla Lunigiana with a salsa verde and a sweet and hot preserved fruit sauce. Instead, try a local wine or current jel­ ly. It adds a bit of sweetness but does not compete with the amazing taste of the dish. It also pairs nicely with a new bold 2009 Pinot Gris from Stanners Vineyard. Happy Holidays. Cynthia

INGREDIENTS: 1/2 cup/125 ml pine nuts 1 tbsp/15 ml olive oil O(](P(@K9bH_(](S(G>()*?@&(,*#,G&$ b(?$#?$B(-$&@A(=@#,&' 1 clove garlic, minced 2 lbs/1 kg Swiss chard, or spinach, stems removed 1/2 454g container ricotta, well drained 1 cup /250 ml freshly grated Parmigiano Reggiano cheese 1 egg Salt and pepper PREPARATION: !"&*&+%(?C&$(%?(O_Y.9bkY0H

Place deboned half of chicken on a piece of parchment paper. Try to create a consistent thickness across %*&(&$%#"&(=<";+,&(KA(K<%%&"WA#$>( E&+%(+=($&&'&'(+$'(-@@#$>(#$(+$A( open areas. Cover with another layer of paper and pound with a mallet until about a ¼ inch (0.5 cm) thick. Repeat on other half of chicken. You should now have two @+">&(W+%(F#&,&=(?;(,*#,G&$H(N5?<( can ask your butcher to do the whole deboning if you wish!) Starting with one piece of chicken, at its widest side, mound a long row ?;(*+@;(?;(=%<;-$>H(/F"#$G@&(*+@;(?;( F#$&($<%=(?$(%?F(?;(=%<;-$>H(

Toast pine nuts in a pan over medium­low until lightly golden, about 5 minutes. (Watch closely as they can burn quickly). Set aside. In a large sauté pan, heat oil over medium heat cook onion until golden brown, about 10 minutes. X&+$)*#@&B(-$&@A(,*?F(/)#==(,*+"'H( When onions are golden, add garlic and Swiss chard. Cook until limp, about 5 minutes. Cool slightly. In a bowl, mix cheeses and egg. Season with salt and pepper. Stir in vegetable mixture until well incorporated. Place in fridge until ready to use. Wash chicken and pat dry with paper towels. Cut chicken in half. Cut out and remove its back. Cut off wings and remove. Starting with the breastbone, using a sharp knife, cut along bone and remove meat from bone. Move along to leg and thigh and remove that bone as well. You should now have one W+%(F#&,&(?;(E&+%H(8&F&+%()#%*(%*&( other side. (You can freeze and save these bones, back and wings for making stock). Carefully remove skin and set aside for later.

There will be some liquid extracted from rolls. Remove from oven. Cover and let rest for at least 15 minutes before you slice. Serve with your favorite wine jelly, if desired.
