Fall in love A
utumn is one of my favourite times of the year. I love seeing the trees change colour, going for long walks and getting cosy on the sofa with a cup of hot chocolate and a great film. I must admit it feels like we haven’t really had a summer this year due to the poor weather, but hopefully, we’ll have a relatively dry season, so we can all enjoy the great outdoors. My fiancé, Dave, and I love Halloween and did consider a themed wedding at one point, but in the end, we decided against it. If you’re having a fun-filled celebration or incorporating autumnal colours into your day, make sure you get in touch to show us pictures! This issue is all about seasons. We’ve asked photographers to send in their favourite images, caterers for their top menu ideas and local experts for their advice. We also have three gorgeous real weddings, fairytale-themed dresses, and so much more! We’re always looking for weddings and styled shoots to feature in the magazine. You can submit your big day via email on melissab@kdmediapublishing.com or our website www.yourwestmidlands.wedding/get-involved-real-wedding

YOUR ESSENTIALS GRAND JEWELS Hiz Jewellery has launched a bespoke range of men’s wedding rings. “We felt men’s rings were somewhat overshadowed and didn’t have their own story, so we thought it was time to launch a new range. A collection that not only displays superb quality and exquisite workmanship but also reflects the wants and wishes of today’s modern man. We create a stunning, innovative and desirable range of men’s wedding and fashion rings. Working closely with skilled craftsmen, we have taken precious metals and expertly aligned them with the more functional metal zirconium to give each ring a contemporary look and feel. We want our customers to be able to choose and wear a ring that meets their expectations and reflects their personalities. We care just as much about the detail on the inside of your wedding ring as the outside. We have designed them with an inlay of contrasting metal that not only adds depth, promotes individuality and oozes class but also creates a ‘secret reveal’ as the inside is only seen when the ring leaves the owner’s finger. We’ve taken our time considering the arrangement of these metals and played with the colours and finishes to produce an exclusive and stylish range of men’s wedding rings that, we hope you’ll agree, are in a class of their own.” To see more products, visit www.hizjewellery.com

MONEY SAVER Helen Barley, a harpist based in Kinver, is offering our readers an exclusive 10 per cent discount on her services. “I’m a graduate of the Royal Manchester College of Music,” says Helen. “I later did my postgraduate studies at the Guildhall School of Music and Drama. My work with a group of autistic children led me to buy a small harp as an experiment. Both the children and I completely fell in love with the instrument, and so a period of intensive training followed, including lessons from some of the country’s top harpists. I now play with several local orchestras and enjoy singing at weddings and other functions. I sing and play covers in many different genres of music, offering a wide range of styles. I also teach harp and am a director of the successful 12 – Strong Dudley Harp Ensemble.” To claim the 10 per cent discount, email Helen at helenharp@mac.com and mention the magazine. REAL WEDDINGS
Childhood sweethearts Rachael and Joshua celebrated their love with a beautiful wedding at Park Hall Hotel & Spa Images courtesy of Shepherd Photography
R
achael and Joshua met through Facebook. “We started talking and realised we went to the same school,” says Rachael. “We went bowling for our first date and became official shortly after.” Joshua popped the question at their home in 2018. “It was a surprise, but it was even more surprising when we had to spend the night in A&E,” shares the bride. “The ring was one size too small, so it got stuck, and we had to have it cut off!” Here the bride shares some of her favourite moments from their big day... 25
The flowers were ivory and coral roses from Belle Fleurs. We had our high school prom at Park Hall Hotel & Spa and have very fond memories of the area. It’s local to us, and the grounds and facilities are lovely, so we knew we wanted to get married there.
Joshua and I chose a four-tier white cake decorated with roses from Cakes for Crumbs.
Our favours were boxes of sweets, including personalised love hearts and mints.
The table plan was coral themed with handwritten place names. 26
For the centrepieces, we chose mirrors and glass jars filled with fresh flowers.
REAL WEDDINGS
We hired a Rolls Royce and limousine from SV Limousines and Wedding Cars and decorated them with ribbons.
We had Polaroid pictures of us placed on the tables.
Joshua chose a three-piece grey suit with a coral tie and handkerchief from Dapper Dan. For the catering, we chose canapés, a three-course wedding breakfast and an evening buffet.
I tried on 12 different dresses at The Wedding Dress Bridal Gallery. I ended up going for a look that I never thought I would have chosen. I accessorised with a tiara, earrings, a necklace, bracelet and veil.
The bridesmaids chose coral floor-length dresses from The Wedding Dress Bridal Gallery. 27
DJ Dano played a good range of music that went down well with our guests. He left a card on all the tables with his mobile number on so our loved ones could send any requests via Whatsapp. We also had a magician called Colin, who was a hit with everyone. He kept people occupied whilst waiting for the photos.
Our photo booth from Krazy Entertainments kept our guests entertained with instant prints and funny props. Our friends and family kept a copy for themselves and put a copy in our guest book, so we have lots of funny images to look back on. There were lots of lovely moments, but I loved seeing the little ones dressed up, driving to the church with my dad and hearing Joshua’s speech.
We were very nervous in the build-up to the ceremony. It was beautiful, and we were relieved to finally be married after two postponed dates.
For our honeymoon, we went to Mottram Hall in Cheshire. It was a very relaxing two-day spa break that was much needed.
RACHAEL AND JOSHUA’S CONTACTS
After a year’s delay due to COVID-19, we were so happy to finally get married. It was so special to see all the families together after so long. We were very grateful for the love and support we had from both sets of parents, siblings and our nans. 28

arly and Vlad met like most modern couples online. “We went for drinks and didn’t want the date to end,” says Carly. “I think we ended up drinking seven glasses of Diet Coke each! I loved how kind he was, that we wanted the same things in life, how handsome he was and that we both liked travelling.” Vlad popped the question during a trip to Disneyland Paris. “I’m a big Disney fan, so we decided to go for my birthday,” shares the bride. “We watched the fireworks, and Vlad asked someone to take a photo of us in front of the castle. We had a picture taken, and then he got down on one knee! It was a total surprise and shock! It felt like the world had stopped. The lady caught it on camera, which was lovely as we have it to look back on.”
SETTING THE SCENE “We chose to get married at Mythe Barn as we loved the beautiful countryside and the venue’s exclusive use,” explains Carly. “The rooms were all gorgeous with a rustic yet modern décor, which suited our tastes perfectly.” For their favours, the couple gave their guests miniature Russian dolls. “Vlad is originally from Russia, so we decided to place the dolls inside a laser-cut ivory box,” adds the bride. “We also had heart-shaped shortbread with the phrase ‘happily ever after’ printed on them.” “Our table plan was pieces of card placed onto a large mirror,” recalls Carly. “We named our tables after places we’d been on holiday together, luckily we had been to just enough to cover our tables. We placed photographs of us at each destination on the tables alongside wooden gold stands.” Carly and Vlad chose ivory trees for their centrepieces. “They made the room pop, and everyone commented on them,” says the bride. “We also had large matching canopy trees that towered over us during the ceremony.” “My bouquet was made up of white roses and gypsophila from No8 Studio Florists,” shares Carly. “We also had a mixture of green foliage, white hydrangeas, avalanche roses and larkspur placed around the venue. Make it Special Events and No8 Studio Florists were outstanding, and they turned our dream wedding into a reality.” The couple’s big-day bake was provided by Del-lites – Cakes by Adelle. “It was a three-tier design made up of lemon drizzle, raspberry, champagne and chocolate salted caramel,” the bride explains. “We wanted to incorporate the proposal into the cake, so we chose a Disney castle with a silhouette of a couple proposing as the topper. It was the softest cake I’ve ever eaten!” “We didn’t need any transport as we both got ready at the venue, but we hired a coach from Swift Valley Coaches that brought some of the day guests who had travelled down from Hull,” adds Carly. “The food was outstanding, and we had so many positive comments about it. We used Mythe Barn’s catering team called Galloping Gourmet. We chose canapés and cocktails for our drinks reception, followed by a three-course meal and a barbecue in the evening. We also provided some sweets with personalised bags, and because we purchased a certain drinks package, we also received the use of a popcorn machine.”
DRESSED TO IMPRESS “I wore a beautiful A-line gown by Morilee called Arabella,” recalls the bride. “I loved that it clinched in at the waist, had a detailed belt, and that the back was quite low and embellished with tiny decorative beads. I wanted something that was quite 31

bridal and classic. I purchased it from Lineys Brides and accessorised with a veil and small tiara.” Vlad chose a navy suit, grey waistcoat, blue tie and handkerchief from Suit the Occasion. “He had the same suit as my dad and his best man but with a slightly different buttonhole,” says Carly. “The bridesmaids had blue, sleeveless dresses from Quiz. I wanted them to feel comfortable and in something light in case it was warm.”
TIME TO CELEBRATE “For the ceremony and drinks reception, we hired the Highly Strung String Quartet,” shares the bride. “They played beautifully, and a few of our guests said it made them quite emotional. This was one of my favourite parts of the day as I had always wanted a string quartet. We picked all the songs from walking down the aisle to the drinks reception, with options ranging from Disney and Linkin Park to Frank Sinatra. In the evening, we hired a three-piece band called Hard to Handle. They were amazing, and everyone loved them! They played popular songs that people knew and could dance along to. We also had a magic mirror photo booth from Bevan Events. Our friends and family walked on a red carpet and had their pictures taken with props. It printed out two photos, one for the guests to keep and one to stick in the guest book for us to look back on, which our nearest and dearest loved.”
MEMORABLE MOMENTS “I’m quite an emotional person, so I was calm one minute and nervous the next,” Carly explains. “I was so excited to walk down the aisle. Vlad was calm the whole morning, but when it came to the ceremony, he also got quite emotional, which in a way was really nice and set off the whole room! We hadn’t seen much of our friends and family, so it was amazing having them all in one place celebrating with us. The day made us fall in love all over again. Our guests had to wear masks during the service, so we embraced this and asked if everyone could wear white or cream versions. The bridesmaids had specially made masks with lace, and the groomsmen had navy options to match.” Carly and Vlad had their dream wedding. “The speeches were all so brilliant, emotional and funny,” adds the bride. “They brought back a lot of memories and will always be remembered. To honour my two grandmothers, who unfortunately aren’t with us today, I had both their rings pinned to the inside of my dress, so I had them with me for the whole day.”
HONEYMOON “We’re planning to go to the West coast of America on a road trip if travelling is allowed,” says Carly. “During our tour, we’ll visit San Francisco, Los Angeles, the Grand Canyon and Las Vegas, which should take us just over two weeks.” 33

azz and Mark met in 2013 and felt an instant connection. “We knew we had something special,” says Jazz. “Within a month we had booked our first holiday, where Mark asked me to be his girlfriend! Personality-wise, we are opposites but have lots in common, especially our love for adventure, sport and dogs. Although we lived a good hour apart while I was at university, we made time for each other and moved in together in 2016.” Mark popped the question on 7th September, 2018. “We were
overlooking Woolacombe Beach, which is where he had asked me to be his girlfriend five years before,” shares the bride. “I was completely oblivious to his plans, and it was a massive surprise when halfway through taking a photo, Mark got down on one knee! I kept asking if he was joking and took some convincing otherwise! Mark had been planning the surprise for six months and managed to keep it a secret with his mum until the big day.” Here she shares some of her favourite moments from their big day... 37 37

I didn’t know what style of dres s I wanted and kept changin g my mind between something fitted or floaty. Aft er COVID-19 struck and we had to postpone, I decided to treat myself to one of each. My day dress by Eli za & Ethan was floaty and detailed with a long train and my evening gown by Jas min e Bridal was more fitted with the mos t gorgeous diamanté straps. I came across both of these by chance, bypassing a shop or seeing a sample dres s for sale, and bought them outright before I changed my mind! Since both had lots of detail, I accessorised with a plain cath edral-length veil for the ceremon y and a sparkly necklace for the reception. To finish my look, Sarah Russell Ha ir & Makeup Artist styled my hair and Nic ola Honey Artistr y did my mak e-up.
My bridesmaids opted for multiway dresses from Lá Closet Dé Chánel. I wanted them to feel comfortable and confident on the day, so I let them choose how they styled their gown and how they wanted their hair and make-up done. The girls had some individuality to their look, but all fitted together with the colour of the dress, and the piece of gypsophila we added to their hair. I also gifted them all a delicate silver bracelet and white purse to wear on the day.
Mark and I love Spanish food, so we went with authentic cuisine by Las Tapitas. It consisted of canapés, tapas as starters and paella, served out of one giant bowl on each guest table, as a main. For dessert, we ordered our favourite brownies, doughnuts and Eton mess made by my mum.

Both my parents are musicians , so we went a little bit mad with the entertainment! In the church, we had performances from a stri ng qua rtet, singers and my dad played the organ. All our guests commented on how bea utiful the pieces were, and my personal favourite was Love Story by Taylor Swift, which played during the signing of the register. 39
In the evening, my mum and dad played the piano and cello for our first dance. The live band, Tommy and The Fuse, then started the night with a bang before moving on to a DJ set later in the night. We also provided garden games during the day, which were a massive hit with our friends and family.
Sitting down and enjoying the meal was definitely a highlight, followed by when our evening guests arrived, and the fairylights outside the tipi went on! The place just looked like a fairytale. Seeing everyone enjoying themselves in a setting that we felt we had decorated totally from scratch felt amazing!

ove is a powerful emotion that’s almost impossible to describe but is something we can all relate to. Photographs are a great way of capturing it in all its natural glory. To help give you some inspiration, we’ve asked some of the region’s finest photographers to showcase their favourite images from different parts of the day.
“As Rachel walked down the aisle, the groom burst into tears, and they both had a fit of giggles. Even I couldn’t keep a straight face!” – Julie Jackson from Alice and Grace Photography.

EXPERT ADVICE
HOT TOPIC: wedding worries Our experts solve your problems
TREND SETTER Q – What are the latest wedding cake trends? Incorporating flowers into your cake is very popular at the moment whether it’s real, silk or sugar versions. I’ve also seen a rise in natural, eco-friendly blooms that are dried or pressed. It’s important to talk to your cake designer about what flowers will work in your design as they have to be edible and organic with no pesticides used. Good options would be roses, violas, calendulas, cornflowers, abutilons, fern leaves and rose leaves. If dried, non-pressed versions are used, like palm spears or grasses, these should be covered in florist
DRESSED TO IMPRESS Q – My hubby-to-be wants to wear something stylish. What styles, colours and materials are popular right now? Many grooms are opting for more expensive suits, and the colour palettes being chosen reflect that. This includes warm blue tones, rustic tweeds, earthy greens and fabrics that balance a sense of fun and a contemporary style. Suit cuts for 2021 are sharp, clean and simplistic. Many people
tape or flower picks. Certain blooms are seasonal and not available all year round, so check availability well in advance. Allergies need to be added to an allergen list as some flowers might come from the mustard, celery or onion family, and some guests may have severe pollen allergies. are deciding on British and Italian-cut jackets with tapered or slim-fit trousers. Accessories are also playing a large role. People are opting for pocket squares, ties and buttonholes with a pop of colour. We strongly suggest that the groom-to-be plays around with the key details before deciding on his accessories. Jess Hawkes Suit expert www.callaghantailor.co.uk 47
MUSIC TO MY EARS Q – What song choices would you suggest for a woodland wedding? What could be more enchanting than the sound of a harp in a leafy woodland glade? Gently wafting melodies will enhance the sights and sounds of nature and create the perfect atmosphere for your wedding. Many upbeat popular songs can easily be adapted on the harp to create a more relaxing sound. Here are some song ideas: s Take inspiration from songs used in movies such as A Million Dreams, A Thousand Years, Beauty and the Beast and Can You Feel The Love Tonight. s Classical tunes like Canon by Pachelbel and Four Seasons by Vivaldi would sound beautiful. s Wind Beneath My Wings, Can’t Help Falling in Love and From This Moment On are wonderful love songs. Similar options can be played on the harp to reflect your style and make the ceremony bespoke to you.
SEASONAL BLOOMS Q – I’m planning to tie the knot next autumn and want flowers that will wow our guests. Do you have any ideas?
www.sarahbartleetphotography.co.uk
Helen Barley Harpist www.helenbarley.co.uk
For flowers that look their best and have a real impact, see what’s currently in season. Autumn has some amazing options such as dahlias, gladioli, anemone crocosmia and cosmos, and you could also incorporate berries, seed heads and grasses. It’s the time for harvest, so you can go to town on edible elements within your floral designs. Another way to make a real impact is to embrace colour. Soft pastels are lovely but for the wow factor consider more vibrant shades. Don’t just think about the tables, work with your supplier to look at the venue and think about hanging clouds or garlands – your florist will relish the challenge to get creative!
Autumn provides a wide variety of rich tones from gold and bronze through to burnt orange and rich, vibrant reds. When combined with rustic elements, it creates a warm, welcoming feel for you and your guests. Surprise your friends and family with delicious seasonal flavours such as spiced chocolate, carrot, chocolate with a hint of ginger ganache buttercream filling or a warm cinnamon coffee and walnut cake. Use flowers such as garden roses, anemone and calla lilies in a deep plum and combine them with a mixture of red, bronze and gold berries or mini pumpkins and little crab apples. Cascades of autumn leaves also look stunning with the addition of berries and twigs. These can be natural or coloured in bronze or gold to add interest. Make the most of texture with wood and bark effects and combine them with smooth tiers painted in a shimmering bronze finished with buttercream. Display the cake on a log and surround it with a mixture of seasonal pumpkins, leaves, berries and woodland creatures. Jackie Diamond Cake expert www.facebook.com/jackiediamondcakes 48

THE WOW FACTOR Q – We’re looking for a magician for our wedding but are feeling overwhelmed by the amount of choice available. How can we narrow down our search? Performing at weddings is a special privilege, and I love to add that extra bit of magic to the big day by making memories that last a lifetime. Whether you’re planning an intimate affair or a large scale event, your supplier should be able to put together a bespoke package to suit your individual needs. Engaging a magician’s services at your wedding is guaranteed to appeal to all ages from three to 103! A magician is invaluable to help fill the gaps, to allow the happy couple to focus on the day, knowing their family and friends are entertained while they’re busy with the photographer. They mingle with the crowd, perform close-up magic before or during the wedding breakfast and/or before the evening proceedings. Angus Baskerville Magician www.angusbaskerville.com

County Wedding Magazines editor Melissa Barker shares her wedding planning journey
I
can’t quite believe that my wedding is only 10 months away! The time is going by so fast, and it still feels like we have so much left to plan! As some of you may know, within the first few months of being engaged we’d booked our venue, photographer and caterer and were on the lookout for the rest of our suppliers. With the pandemic pushing most weddings back in to 2022, we found that a lot of companies we were interested in booking weren’t available. Not to be defeated, we carried on searching knowing it was best to get everything sorted as early as possible. My fiancé, Dave, and I are enjoying the process, but it can feel slightly overwhelming at times. With such a big family and many coming from abroad, we’ve found it difficult trying to keep everyone happy while also maintaining our original budget, but we’re still super excited to see what the day will look like.
FLORAL WONDERS I love flowers and fully believe they can transform any venue into a beautiful space, so choosing the perfect florist was really important to me. I wanted something to tie in with our blush and sage green colour scheme but also complement our barn venue. Despite working in the wedding industry for more than five years, I’m ashamed to admit my knowledge of flowers isn’t great, g , so I needed a supplier pp who w would w
50
be able to make suggestions and help us bring our vision to life. Whilst looking through social media, I happened to come across a stunning, oversized bouquet that was exactly what I wanted. I looked up the company and found they were based just five minutes from our wedding venue – I thought it was fate! The florist had a range of pre-made packages that suited our needs perfectly. We checked the company’s reviews online, confirmed availability for our day and discussed our needs. The team were fantastic and even suggested ways of helping us save money, which we really appreciated. We booked bouquets, buttonholes, pew ends, centrepieces and an arrangement for the top table, which we’re excited to see. As we were in lockdown at the time, we were unable to meet our florist in person, so when restrictions lifted slightly we travelled to meet them at a wedding fair. Being able to discuss our vision in person made us feel confident about our decision, and I’d definitely recommend meeting face-to-face if possible.
DRESSED TO IMPRESS After being engaged for a few months, I decided to give in to my mum’s nagging and go dress shopping. I’m short, curvy and very selfconscious, so I was dreading trying on gowns! W We visited our local boutique, and since I had nno idea of what style I wanted, I must admit I felt quite overwhelmed. I started with a fishtail, fe which I liked the look of, but it just didn’t feel w lilike me; I also felt like I couldn’t sit down without bursting out of it! I quickly moved onto an A-line b ssilhouette. The second gown I tried on was one II’d seen online and loved. It had three-quarterlength sleeves, a detailed bodice, a plunging le nneckline and lots of lace. On paper, this sounds lilike everything I didn’t want in a dress, but sstrangely enough, it turned out to be the one. I tried on a few different options afterwards ((mainly for fun), but I found fault in all of them
and always came back to my dress. It needs some alterations as it’s slightly too big, but I purchased it there and then. I would share a picture with you all, but Dave reads this and is (annoyingly) traditional so is against seeing the dress before the big day! One thing I didn’t anticipate was how I would feel after purchasing it. I always thought I’d feel over the moon, but instead, I felt quite panicked. Not because I didn’t love the dress, but after years of writing about weddings, I felt so much pressure to have this overcome-withemotion moment when wearing the one for the first time, that I started to question if I’d made the right decision. I’ve since come to realise that everyone is different, and I absolutely adore my dress whether I cried or not. I’ve spoken to a few of my married friends, and some had similar experiences, which was reassuring to hear! My advice to any bride-to-be is to go with your gut, don’t panic about how you should be feeling or what you should be wearing, do what makes you happy! Make sure you check in next issue to hear all about our engagement shoot and my search for a hair and make-up artist.

Here’s my moodboard to help give you heaps of inspiration.
BRIDE’S DIARY
We haven’t decided on a table plan yet, but we like the idea of names hanging from string surrounded by gorgeous flowers.
I love confetti pictures, and it’s something I really want our photographer to capture on the big day. We’re currently looking into eco-friendly options and trying to decide which colour to use.
Our photographer has suggested taking pictures of my dress in different parts of the venue, and I’m excited to see what he comes up with.
Seeing as this July it rained, a lot, we’ve purchased some white umbrellas just in case the weather turns bad for our July wedding next year.
How stunning is this flower arch?! I’d love to incorporate something like this into our day.
Our colour scheme is blush and sage green, so we’re going to incorporate both hues into our table decorations.
The chalkboard signage trend is here to stay! I, for one, adore it and am thinking of using one as our welcome sign.
To decorate our wedding chairs, we’re thinking of acquiring wooden bride and groom signs.
To keep the rings safe, we’re planning to buy an engraved box that we can keep for years to come. 51

CATERING
Delectable DELIGHTS How to create the perfect seasonal menu
C
hoosing your big-day catering can be a difficult task, there’s a lot you need to take into consideration – from guests with food allergies to finding a cuisine everyone will like. To help you decide, we’ve rounded up top tips from head chef, Mike Scott from Caviar & Chips to help you create the perfect seasonal menu.
Winter “A fresh, vibrant, zesty salmon dish is a different take on a classic Christmas starter. Lightly bound with a little dill mayonnaise, this is topped with acidic but light pickled cucumber and crisp, wafer-thin shards of rye bread.”
www.caviarandchips.co.uk
“For me, Christmas is a time for cheese and the more, the merrier! A disc of smooth, creamy, salty goat’s cheese crusted in chopped toasted walnuts, finished with a luxurious drizzle of truffle-infused honey. I can assure you that when your guests try this for the first time, they will be singing your praises!”
“Minced turkey and chopped chestnuts make a delightfully seasonal mixture to wrap around a soft-boiled quail egg. Coated in breadcrumbs, crispy smoked bacon, parmesan and herbs and deep-fried until crisp and golden brown. You’ll feel the Christmas festivities starting with a bang!”
“The turkey dinner has been done every which way but that doesn’t mean it has to be your typical roast. Poached ballotine of breast rolled in prosciutto before being roasted adds a lovely saltiness to the turkey, and poaching means a gentler cooking process so that meat doesn’t dry out. You could even taken the leg meat and turned it into a sausage roll.”
“For the potato, go for goose fat, thyme, garlic and salt. I’m a big fan of keeping things simple with roast potatoes – leave the exterior crispy and let the fluffy potato inside do the talking!”
“Food doesn’t get much more indulgent than lobster. Poach the lobster in champagne and a little butter, then use the shells and some of the meat to create a glorious lobster mayonnaise. The meat is bound with the mayonnaise before being set atop the brioche, and, just for good measure, try adding a little lobster meat on top.”
www.caviarandchips.co.uk
“Bouche de Noël, yule log, Swiss Roll, Christmas log – regardless of the name, we can all agree that it’s a showstopper!”
“A cocoa genoise sponge, lightly sprayed with Brandy and rolled around a sweet and nutty praline cream is just the kind of start we want. We generously spread a rich chocolate ganache over the top, then use this as a platform to build some texture and some playfulness into the dish. Chunks of honeycomb provide a sweet, caramel crunch, while the candied pecans and hazelnuts add texture and some warming, roasted flavours. Fresh cranberries provide some acidity (after all, it can’t all be rich!), before the whole thing is decorated with large shards of chocolate.” 53
www.caviarandchips.co.uk
Spring and summer “Partridge is a beautiful bird to cook with, but incredibly delicate. Basted in plenty of thyme-infused butter, it should be carved once rested, keeping in as much flavour as possible. The leg, once falling off the bone, is then stripped of its meat. Finish with some baby leeks, charred for a smokey note, providing yet another dimension to the garnish.” “Scallops are my favourite seafood – they taste delicious on their own but are also incredibly versatile. To begin with, I like to add diced celeriac to foaming butter, infused with shallots, and allowed the celeriac to toast and caramelise. Coax out a slightly nutty flavour that is incredibly savoury.”
www.caviarandchips.co.uk
“I like to use pork belly for my ribs, making sure there is a good two inches of meat above the bone. I rub them with a barbecue rub and allow them to permeate for at least six hours before smoking over wood chips for another six hours.”
“Barbecue brisket is another classic. This gets roughly the same treatment as the pork shoulder but is cooked for less time so that it doesn’t fall apart.” “Rhubarb is a staple British ingredient, but it doesn’t just have to go alongside custard. It works for sweet and savoury dishes, pairing well with duck, salmon and pork, as well as herbs and spices. Try pairing it with another ingredient that is wonderful in spring; blood orange.”
“Summer sparks the season of barbecues across the nation. We’ve catered for many weddings with barbecues that have ranged from classic menus with delicious burgers, sausages and kebabs to themed versions with the influence of Greek, Asian or Caribbean cuisine.”
www.caviarandchips.co.uk
54
“The list of possibilities for slaw is endless. I like a pickled slaw as it cuts through all that richness from the rest of the food and provides some much-needed levity at a barbecue. I like to make my liquor with palm sugar and rice wine vinegar to give a startlingly fresh, zingy, intense liquor.”
“Game in Britain is second to none, boasting a variety of flavours and textures that, as a chef, is a gift to work with. Venison loin has a soft, buttery texture that melts in the mouth. It’s similar to a fillet steak if you’ve not tried it before. However, the flavour has much more depth and allows it to stand up to bolder flavours. I roast baby carrots and piccolo parsnips with a little maple syrup, then add a little garlic, rosemary and thyme to give some sweetness to the dish. Finally, the blackberry jus is formed from a base of deep, rich meat stock. I infuse the blackberries to provide some acidity to help cut through the richness of all that venison.”
CATERING
Autumn “I absolutely love cooking and eating duck. Firstly, we have a breast roasted, with crispy skin, rendered fat and lovely pink meat on the inside. Secondly, I braise the leg, pull down the meat and make a spring roll, with chilli, cucumber, spring onion, carrot, mooli and a barbecue sauce to bind.”
www.caviarandchips.co.uk
“Autumn lends itself to warmer and more comforting dishes such as game, root vegetables and fruit and nut desserts like apple and hazelnuts.”
“A Mille Feuille is traditionally a dessert, literally meaning ‘a thousand layers’, romantically describing the many thin layers of pastry that steam apart from the butter that melts as the puff pastry cooks. This dish is a savoury take, using pressed squares of the pastry, layered with sautéed wild mushrooms, and shaved pickled mushrooms. There is an addition of blue cheese, for the salty, highly savoury flavour that goes so well with mushroom. A pickled radish and herb dressing helps to balance the other flavours, and a finish of bitter leaves, such as raddichio, frissee and rocket, complete the flavour profiles.”
“A sweet potato fondant provides a lighter alternative to a typical potato element. To this, I add a sweetcorn purée, charred corn and corn florets, to add a delicate touch that contrasts with rich duck. The dish is finished with barbecue sauce and some crispy duck skin, which, if you haven’t tried before, is the best ‘crackling’ you’ll find.”
“A good chocolate mousse is loved by almost everyone. One thing a mousse does not possess on its own is texture, and so I like to add both raspberry and pistachio crumble and honeycomb. The raspberries in the crumble are freeze-dried and crispy, adding an intense zing to the dish, while the honeycomb provides the sharp snap in texture, along with its signature deep caramel flavour. To reinforce the touch of raspberry, go for a Chambord cream – after all, an addition of booze never hurt a pudding! Finally, ruby chocolate shards provide some texture as well as a fruity after-taste that helps to balance both the chocolate and the raspberry.”

Made from a naturally antimicrobial performance fabric it allows the hair to dry without force or heat and eliminates the frizz, damage and breakage caused by harsh terry towels. SILKY SMOOTH Silk is by far the best material to use in a cleansing routine as the natural amino acids leave skin noticeably radiant and delay the ageing process. Cotton is, in fact, abrasive on a cellular level so, cleansing with a flannel causes friction leading to fine lines. This Is Silk’s 100 per cent silk face cloths boast a weave that gently exfoliates, conditions and smooths skin, leaving it glowing. Emolyne Ramlov, founder of the eponymous make-up brand, talks inclusivity and bringing a colour boost to your bridal beauty
Tim McBaj
It’s our first anniversary soon and there’s been so much to learn over that time. Covid made things difficult as we actually went into lockdown around two weeks before launch. But we’d worked so hard for two-and-a-half years and I didn’t want to delay. It was a risk, but luckily it went crazy. Black Lives Matter came along and as an inclusive brand headed up by a black woman there was a lot of interest in what we had to offer. Everything happens for a reason.
B
orn in Uganda and raised in Denmark Emolyne Ramlov discovered a passion for make-up upon entering her teenage years. Until the age of 13 when she moved to Europe she hadn’t been permitted to wear make-up, which in Africa was seen as a distraction from studying and an unwelcome beginning to a flirtation with the opposite sex. So, it was a complete culture shock for her as she sat alongside her new classmates to find them in full beat and looking glam. “I went home and said to my mum: ‘We need to talk!’ She took me shopping and I filled my basket with as much make-up as I could. I needed to catch up and I haven’t stopped since,” she tells us. County Wedding Magazines’ beauty editor, Kelly Andrews, met up with Emolyne to discover more about her journey from passionate teenager to creating her very own make-up brand. What was the inspiration behind Emolyne? As my love for make-up grew I visited plenty of big stores looking for products to suit my skin tone, but couldn’t find the right ones. They had two to three reds perhaps, but none that I 78
liked or were complementary. As I grew older I realised that this was a problem across a lot of different product ranges. There was no single brand offering a matching lipstick, liner and nail polish, so I thought: “Well, I’m just going to do this then!” I use a lot of reds and nudes myself, so it made sense to start there, making sure that no matter the skin tone someone would be able to get at least one of each. I created 15 reds and 15 nude shades and even then I wasn’t sure if I should stop! The range has five colours for light, five for medium and five for dark skin tones. It allows people to pick a different colour for different seasons, as our skin tone changes throughout the year. I also created a kit to save my customers time, meaning once they discover their perfect shade they can easily find the matching products. When it came to naming this huge range of shades I wanted to be able to tell a story while keeping the brand personal, so I immediately thought of Africa. It was a way of honouring my place of birth and bringing the whole story together. Plus, I knew I could never run out of names if I looked there for inspiration!
Tell us more about the ideas, ethics and beliefs the company is founded on. I wanted this brand to be for everyone, no matter their gender or race – if you’re into make-up this is the place for you. The selection is big enough that everyone can feel included, which was the key. How do we achieve that perfect marriage between skin tone and make-up shades? The easiest way for us was to put models on our website covering as many different skin tones as
BEAUTY INTERVIEW
we could. That way customers can see whose is the closest to their own and how each shade looks on her. Tell us about your own beauty regime. I keep it simple. I wash my face every morning and evening, as well as steaming to open the pores, which allows serums to absorb more effectively. I use serum everywhere – hands, face, neck. These are the areas that start to show signs of age once you reach 40, so it’s important to look after them. A dermatologist once told me to use serum on my dry hands, and up to then I’d always thought it was just for the face, but I’ve never looked back. Ole Henriksen’s Truth Serum is my favourite, and not just because he’s a fellow Dane! What are your make-up bag must-haves? Uganda, Casablanca and Abuja are my favourite Emolyne shades. But it’s like being asked about my favourite child – they’re all my babies! I mainly wear a nude during the day for meetings, and in the evening I prefer reds. I’m particularly into red oranges at the moment. I always carry a nail polish with me too – Cameroon is versatile and works for all skin tones. And tissues... a mum can’t work without a tissue! What’s your top wedding-day make-up look? I’d go for something light depending on hair colour and skin tone. Keep it simple, elegant
and clean to keep focus on the eyes. You want your new spouse to see you sparkle. For light skin tones I’d recommend Luxor, Eritrea or Ciaro. For medium tones Tanzania, Kampala or Uganda work beautifully. And for darker tones Nairobi, Asmara or Marrakech are all perfect. Begin by using your favourite moisturiser, I’m a fan of a thick formulation in the winter. That serves as a base for the foundation and concealer. Then, keep building the look until you’re happy. Don’t start too strong as it’s hard to take anything back once you’ve gone too far.
“Enjoy and play with colour. Rule your shade and don’t be afraid to try something you haven’t tried before, they’re there to be explored.” What advice would you offer a bride who might not be used to wearing make-up but who wants to step it up for the wedding? I’d tone it down, don’t use too much. A little colour makes the lips pop, and match that to the eyeshadow for an on trend monochromatic look. What’s the one make-up secret you wish everyone knew? Moisturise properly before you do anything else. That’ll give you that all-important glow and
sets your make-up for long-lasting perfection. It was essential to me that our lipsticks last so you don’t have to keep topping it up throughout the day and that’s particularly important for a bride. What’s your proudest achievement so far? Definitely having the brand recognised for inclusivity. I love to see people go on the website and realise just how much choice there is, and hearing them say they just don’t know which to choose. The other thing for me was being able to make the products vegan and cruelty-free. I wanted to educate people to care about what they put on their skin, so this makes me really happy. Is there anything you’d still like to achieve? So much! Every day we listen to our consumers and what they want. So, the next phase for Emolyne Cosmetics is incorporating more skin tones for them, as well as including more models they can identify with. I also want to grow the product categories while staying within the 15 reds and 15 nudes concept. Look out for our pop ups too. Our original plans for these had to be cancelled due to Covid, but I still want somewhere for people to experience the range in real life, so they’ll be coming soon.

Q&A
Local experts offer advice on how to look your big-day best
FALL IN LOVE Q – What styles and fabrics would you suggest for an autumn wedding?
www.redlockphotography.com
I recommend speaking with your local boutique about your venue, theme, body shape and then try on styles that make you feel amazing. Choosing a dress is unlike anything else you’ve done before, so it’s hard to generalise all autumn-themed weddings. Consider the weather and choose a slightly heavier fabric. A favourite of mine is Mikado, which is a blend of silk that feels incredibly soft! Alternatively, heavy crepe is a popular look. GAIA Bridal is one of our favourite designers, and her crepe gowns teamed with beaded lace are beautiful. Do you want sleeves, or have you considered detachable versions? This would create two looks in one, and you can choose which one you wear based on the weather. Consider a train. Although these can be beautiful and are a real showstopper, if you’re outside, it may get dirty quite quickly! When it comes to your shape, the choice is completely personal, and you’ll know when you try a style if it’s the one. There are many factors to consider when choosing a gown, but I truly believe if you try a dress and you love it, then all practicalities go out of the window. Georgina Thompson Wedding dress expert www.ginaloubridal.com
Our recommendation for a shorter bride who wants to give the illusion of height is to opt for a sheath or a fit and flare style gown. We would advise against a ballgown or a fishtail as these styles can make you appear shorter, adding width rather than height. Bronagh Power Wedding dress expert www.tdr-bridal.co.uk 84
Style 66096 by Justin Alexander
FIT TO PERFECTION Q – My fiancé is much taller than me – what dress style would you recommend for a shorter bride to give the illusion of height?
BEAUTY QUEEN Q – I have very dry skin, and I’m worried my make-up won’t look good on my wedding day. What advice can you share with me? I strongly recommend all my brides create a good skincare routine as soon as possible. For dry skin, I would use an exfoliating mask every seven to 10 days. CeraVe does a lovely cleansing foam wash that would be fantastic to use morning and night. Invest in a good moisturiser and night cream. Serums are very good for dry skin, and there are a lot of affordable options on the market as well as high-end brands. Have a chat with your make-up artist as I’m sure they would be more than happy to give you some recommendations. My personal go-to is Boot’s eye cream, CeraVe Cleansing Wash, and if I was looking for a high-end brand, I would use Elemis. Get into a habit of using these twice a day, and you’ll see a difference in your skin in no time. Amy Coyne Make-up artist www.amyburns2006.wixsite.com/amycoynemua
